'hiver touche presque à sa fin, mais il se passe encore plein de choses ce mois-ci. L'Xtreme de Verbier, le Carlsberg High Five, la Patrouille des Glaciers, Haute Cuisine, les combats de vache, ainsi que de nombreuses soirées et festivités de fin de saison, font d'avril un mois de rêve à Verbier !

he end of the winter is almost here, but there’s still plenty happening this month. The Verbier Xtreme, the Carlsberg High Five, Patrouille des Glaciers, Haute Cuisine, the cow fights, along with numerous parties and end-of-season festivities, make April the perfect month in Verbier!

La première semaine accueille les meilleurs skieurs et snowboardeurs du monde, qui viennent s'affronter sur la face du Bec des Rosses. Le snowboardeur et quatre fois vainqueur de l'épreuve, Xavier De Le Rue, partage son savoir sur la façon dont les rideurs s'y prennent pour « scoping a line / choisir la bonne ligne » : découvrez son article à la page 28.

The first week is host to the world’s best skiers and snowboarders, coming to take on the face of the Bec des Rosses. Snowboarder and four-time winner of the event, Xavier De Le Rue, shares his knowledge on how riders can ‘scope a line’— read his article on page 28.

One ending is always a new beginning, that is certainly the case in Verbier. Things might slow down for a few weeks, but fun still continues in Verbier once the lifts close with plenty of activities to keep everyone happy—climbing is just one of them. Mountain Air offers some information on where to go and how to get started, we ask some ‘Verbier People’ what their plans are now the season is coming to an end and Eileen Gent makes a delicious seasonal asparagus soup.

VERBIER HIGH FIVE BY CARLSBERG 7 AVRIL • Le Verbier High Five by Carlsberg est l'un des meilleurs événements du calendrier d'hiver. Et cette 19e édition ne fait pas exception. Chaque année, une sélection des plus grandes étoiles du ski alpin se réunit pour cette manifestation conviviale qui regroupe quatre disciplines. Cette année, Tina Weirather, Beat Feuz, double médaillé olympique, Justin Murisier, Daniel Yule et Loïc Meillard participeront tous à l'événement.

Il s'agit d'un véritable festival de ski ayant lieu à 2'500 m sur les pistes, sous le soleil printanier. Le public est également invité à participer aux côtés d'une sélection des meilleurs skieurs dans quatre disciplines : le slalom géant, le kilomètre lancé, le ski-cross et la trépidante nouveauté de cette année, le waterslide. Les huit meilleurs compétiteurs de chaque catégorie (homme/femme) se qualifieront pour la finale en ski-cross. Les deux finalistes de chaque catégorie pourront ensuite affronter les meilleurs pros lors d'une Super finale.

L'après-ski démarre ensuite par un concert live suivi d'une démonstration de vélo de descente sur neige organisée par le Verbier Bikepark. • The Verbier High Five by Carlsberg is one of the best events of the winter calendar. This 19th edition of the event is no exception. Each year, some of Alpine skiing’s biggest stars come together for this friendly event of four disciplines. This year Tina Weirather, two-time Olympic medalist Beat Feuz, Justin Murisier, Daniel Yule and Loïc Meillard will all be attending the event.

This event is a true ski festival on the slopes in the spring sunshine at 2,500m. The public are also invited to compete alongside some of skiing’s best athletes in four disciplines: Giant slalom, mini KL (flying kilometre), ski cross and an exciting new edition this year will be the waterslide. The eight best participants in each category (male/female) will qualify for the finals which take place in ski cross. The two finalists in each category will then have the opportunity to face the best pros in a Super Final. The après-ski then kicks off with some live music following a bike demonstration organised by Verbier Bikepark. In order to establish the hierarchy within the herd, the robust breed is a natural born ‘fighter’. Their combats take place without any provocation and are a harmless natural activity. The local community will come together to watch which cow will become queen and go on to compete in the cantonal events.

PATROUILLE DES GLACIERS • La Patrouille des Glaciers (PDG) est une course internationale de ski-alpinisme

organisée tous les deux ans par l'Armée suisse. Cette année, l'épreuve ambitieuse aura lieu du 17 au 21 avril. La course est ouverte aux équipes civiles et militaires composées de trois skieurs. • The Glacier Patrol (PDG) is an international ski mountaineering race organised every two years by the Swiss Army. This year the challenging event will take place from April 17 to 21. The race is open to military and civil teams of three skiers. There are two itineraries: the long stage from Zermatt - Arolla - Verbier (53km) and the “short” one from Arolla to Verbier (27km).

VERBIER GRAVEL CHALLENGE • L'hiver est presque terminé, certes, mais ce n'est que le début de la saison chaude. Nouveau cette année : découvrez le Verbier Gravel Challenge, qui aura lieu les 16 et 17 juin. Avec Verbier comme ligne de départ et d'arrivée, l'événement couvrira une distance de 83 km et 3'600 m de dénivelé positif. Le parcours empruntera des chemins (« gravel roads ») lors des montées et des routes goudronnées lors des descentes, et sera jalonné de différentes sections chronométrées. Si vous êtes intéressé, vous pouvez participer en solo ou par équipe.

Une épreuve contre-la-montre aura lieu la veille de l'événement principal. « Avec l'émergence du cyclisme sur chemin, nous nous sommes dit que c'était l'occasion rêvée de promouvoir la richesse du cyclisme dans la région de Verbier et du val de Bagnes, en permettant au public d'en explorer l'extraordinaire réseau de chemins et de routes goudronnées. • Winter may almost be over, but it’s only the start of the summer season. New for this year is the Verbier Gravel Challenge June 16 to 17. The event will start and finish in Verbier, and cover a distance of 83km with a 3600m vertical ascent. The course will use gravel ascents and paved road descents with various timed sections on the course. If you want to enter, you can do so as a team or as an individual. There will be a time trial course the day before the main event.

“With the emergence of gravel riding, we thought it would be a great opportunity to showcase the wide diversity of riding in the Val de Bagnes and Verbier area by exploring using the fantastic network of paved and gravel roads available. AVRIL @ LES ELFES APRIL @ LES ELFES • Depuis 30 ans, Les Elfes organisent de formidables excursions

pour les écoles et les particuliers en Suisse, au cours de la saison printanière. Alors que les choses se calment à Verbier, Les Elfes accueillent d'importants groupes d'élèves venant d'Inde pour skier durant la dernière semaine d'ouverture des remontées.

Après une semaine de ski à Verbier, les groupes partent à Zermatt pour continuer à profiter de la montagne. As the season starts to wind down in Verbier, Les Elfes welcomes large groups of students from India to ski during the final week of the lifts being open. The trips, organised by Les Elfes India Director Bibi Rani, sends students on the experience of a lifetime to see Switzerland during (arguably) its most beautiful time of year. After a week of skiing in Verbier, the groups move to Zermatt to continue the fun on the mountain. A week skiing and relaxing under the gaze of the Matterhorn sees a return to Verbier to soak in the local culture and experience some of the fantastic adventures that can be had in this part of Switzerland. Visits to local farms, taking on the mighty ropes course of Aigle, rock climbing in St Triphon, via ferata in Nax, the thrills of the Aqua Parc in Bouveret, hiking in the Verbier forest and many, many more… Les Elfes also takes the chance during the off season to welcome fieldtrips from schools around Europe. These trips are based around the many sports that Verbier has to offer once the lifts close but also take on an educational element. The students learn about the local environment and also partake in multiple activities that promote team work, creativity and mental and physical challenges. INFOS AVRIL AU PUB MONT FORT APRIL AT THE PUB MONT FORT • Avec encore un très bon manteau neigeux et de belles journées ensoleillées, le mois d'avril promet d'être riche en divertissements.

Les horloges ont déjà avancé et les joies de l'heure d'été prévalent.

L'occasion de vous faire plaisir sur les skis en tenue légère et de profiter de plus longues après-midi sur la terrasse en sirotant une boisson fraîche. Vous pouvez encore voir la fin de l'Xtreme, dont le lancement officiel était prévu le 31 mars, mais qui a pu commencer plus tard vu qu’il dépend des conditions météorologiques.

Sur le calendrier du Pub Mont Fort vient ensuite le Carlsberg High Five le 7 avril avec une sélection des meilleurs athlètes FIS. Beat Feuz, le descendeur suisse présent à PyeongChang, fait partie de l'équipe aux côtés d'autres skieurs renommés qui participeront à l'après-ski au Pub Mont Fort à partir de 17h.

Puis il y a « THE BIG ONE » : la 9e édition de la descente en combinaison One Piece Descent mercredi 11 avril. Il s'agit d'une manifestation incontournable, avec journée de folie garantie !

Pour fêter officiellement la fin de l'hiver, une « soirée de fin de saison » aura lieu samedi 14 avril.

• A very good snow pack and base still in existence, April with some sunny days, promises to be a fun-filled month. The clocks have already moved forward, and the delights of daylight saving are prevalent. It makes for some good spring skiing in some light gear and longer afternoons on the terrace with a cold beverage. One might still be able to catch the tail end of the Xtreme with official event day scheduled on March 31. This is always weather permitting and could take place after that date.

Next on the calendar at the Pub Mont Fort is the Carlsberg High Five on April 7 with some of the top FIS athletes in attendance. Beat Feuz, the Swiss skier who featured in Pyeongchang is in the line-up with other renowned skiers, who will be participating in the after-ski at the Pub Mont Fort from 5pm.

Then the “BIG ONE” … the ninth edition of the One Piece Descent on Wednesday April 11. This is a must and always turns out to be a massive day.

Later this month, the world’s best freeriders head to Verbier for the 21st Xtreme Verbier. One of the biggest challenges for the FWT riders charging down the face of the Bec des Rosses, is choosing the right line. Three time winner of the event and four time World title holder, Xavier De Le Rue, draws on his years of experience as a big mountain competitor and freerider, to tell us how he scopes his line…

avier De Le Rue recently shared a video on ‘How to scope a line’, so who better to ask what riders are thinking when choosing their line before they take on the face of the Bec des Rosses with thousands of spectators watching their every turn.

“Being able to watch a face and spot the potential dangers and figure out what it will look like when riding, is the most challenging part of freeriding,” comments Xavier, who won the event for the first time in 2007.

« Lorsque je découvre une face pour la première fois, je suis toujours attiré par une ligne en particulier. J’essaie ensuite d’évaluer trois facteurs importants : l’exposition générale, les pièges potentiels et le facteur esthétique/plaisir.

“When seeing a face for the first time, I’m always drawn to one line.

Then I try to evaluate three important factors. The general exposure, the potential traps and the aesthetics/pleasure factor, or the interesting features.

Il faut faire spécialement attention dans les zones où la chute est interdite, c'est-à-dire les zones où la moindre erreur aura de lourdes conséquences ; vous devez donc ajuster votre manière de skier en conséquence. Il peut s'agir de falaises, d’un passage particulièrement raide, de rochers qui dépassent ou d'autres éléments de ce genre.

Extra care needs to be taken in the ‘no fall zones” on the face, that means the areas where there will be big consequences if you make any mistakes – you need to adjust your riding accordingly. This can be cliffs, general steepness, rocks sticking out or anything like that.

There are zones on the Bec where you absolutely cannot fall, so you have to take that into account and be a bit more cautious when riding. On other parts of the face, you know you can press the throttle down and start charging.”

Il y a des zones sur le Bec où vous n’avez absolument pas le droit de tomber, il faut donc en tenir compte et être un peu plus prudent une fois en piste. Sur d'autres parties de la face, vous savez que vous pouvez appuyer sur l'accélérateur et commencer à attaquer. »

“When you’re scoping you need to figure out all of the potential dangers everywhere, so you have them in your head. A rider needs to be aware of slabs, cornices, underlying ice or in some cases even crevasses.

For measuring cliffs, you can look at cliffs in the face, evaluate what you think the size is e.g. a 3m cliff and then find a reference rock at the top that you can check before dropping in e.g. a 1m rock. When you arrive at the top you check the height of your ‘reference rock’ if it is smaller than you thought, your cliff is smaller as well, if it is bigger, then your cliff is bigger too.

Before the Xtreme, you will often see riders scoping the face, taking photos so they can check their line and hopefully avoid any mistakes.”

Pour mesurer les barres rocheuses, vous pouvez les observer sur la face, estimer leur taille, par exemple une barre de 3 m, puis trouver un rocher de référence au sommet que vous pourrez vérifier avant de vous élancer, par exemple un rocher d’un mètre. Lorsque vous arrivez au sommet, vous vérifiez la hauteur de votre "rocher de référence". S’il est plus petit que vous le pensiez, la barre rocheuse sera aussi plus petite, et inversement.

Verbier ne déroge pas à la règle, et le nouveau mur d'escalade intérieur rend cette activité d'autant plus accessible. Mais la vraie question est : par où commencer ?

Climbing has been around for decades but has recently been increasing in popularity as shown by its acceptance into the 2020 Olympics. Verbier is no exception to this and with the new indoor climbing wall it’s becoming even more accessible. The question is though – where do you start?

irst things first – do you need a lesson? Now unless you have a very experienced friend who’s willing to take the time to show you the ‘ropes’ I’d advise getting a lesson from a professional. You can get an introductory lesson from Les Guides de Verbier.

What equipment do you need? For first-time climbers I’d advise renting some equipment so you can decide if you like climbing. Once you’ve (inevitably) decided that you want to take up climbing as a hobby you’ll then need to get the basics which include:

- Harness: Go for fit over style here, and make sure you get the correct harness for the type of climbing you’re doing – ask for help in the shop if you’re not sure.

- Un baudrier : privilégiez la taille plutôt que le style, et assurez-vous d'acheter un baudrier adapté au type d'escalade que vous pratiquez ; demandez l'aide d'un vendeur en cas de doute.

- Shoes: They’ll feel tight but this is good- you want your toes curled so when you climb your foot will be in a strong position. Top tip: get a Velcro pair – it makes putting them on and taking them off after each climb a lot easier, which you’ll want to do!

- Une paire de chaussons : ils sont serrés et c'est tant mieux ! Il faut que vos orteils soient recourbés de manière à ce que votre pied soit en bonne position lorsque vous grimpez. Conseil : prenez des chaussons à scratch – ils sont beaucoup plus faciles à mettre et à enlever après chaque ascension, ce que vous serez content de faire !

- Belay device: This is what you’ll use when you’re belaying your climbing buddy. There’s a range of belayers out there but it’s good to start with the basics and learn correctly. You’ll also need a screw-lock carabiner to accompany this and they’re often sold together in a pack.

- Un système d'assurage : c'est ce qui vous permettra d'assurer votre ami lorsqu'il grimpe. Il existe tout un éventail d'assureurs et il convient de commencer par les basiques et d'apprendre à s'en servir correctement.

How fit do you need to be? Climbing is a physically and mentally demanding sport, one that often tests someone’s strength, endurance, agility and balance along with mental control – so a certain level of fitness is beneficial. That saying you can always climb within your level and build up to longer, harder routes.

Quelle condition physique faut-il avoir ? L'escalade est un sport exigeant sur les plans physique et mental ; elle met souvent à l'épreuve la force, l'endurance, la souplesse et l'équilibre du pratiquant, ainsi que son mental, c'est pourquoi il est utile d'avoir une certaine condition physique. Cela dit, vous pouvez toujours commencer par des ascensions à votre niveau, puis vous entraîner afin de vous attaquer à des voies plus longues et plus difficiles.

Where to climb? To start of there’s a couple of options in and around Verbier. Firstly, you can go to the new climbing wall at the sports centre, this is great as it has a number of beginner routes, 6 auto-belays and a bouldering area and you can go all year-round! If it’s sunny and you’d still like to climb on a man-made wall then there’s a wall next to the library. If you’d like to get outdoors and on rock you can head to La Barme (the big rock that sticks out below Pierre Avoi). If you’d like to go further afield and explore the surrounding areas of Verbier you can download “Les Carnets Escalade” app or get your hands on the book “Entremont Escalades” for guidance on routes. You can find “Entremont Escalades” and other climbing books at Mountain Air.

Où pratiquer l'escalade ? Pour débuter, Verbier et ses alentours vous offrent plusieurs options. Tout d'abord, vous pouvez vous rendre au nouveau mur d'escalade intérieur du Centre sportif ; c'est vraiment l'idéal car il offre de nombreux parcours pour débutant, 6 parcours en auto-assurage, du bloc, et vous pouvez y aller toute l'année. S'il fait soleil et que vous voulez quand même grimper du mur artificiel, alors vous en trouverez un à côté de la bibliothèque. Si vous souhaitez faire de la falaise en extérieur, rendez-vous à La Barme (le gros rocher qui dépasse sous Pierre Avoi). Si vous souhaitez vous éloigner davantage et explorer les environs de Verbier, vous pouvez télécharger l'application « Les carnets d'escalade » ou vous procurer le livre « Entremont Escalades », qui vous informeront sur les différents parcours.

our moi, le freeride consiste à s'exprimer en ridant une montagne.

Il existe probablement un nombre infini de manières de le pratiquer à la perfection. En principe, plus c'est agréable et plus on s'amuse, plus on gère...

reeriding, for me, is about expressing oneself by riding a mountain.

There are probably unlimited amounts of ways to do this to perfection. Basically, the better it feels and the more fun you’re having, the better you’re doing…

Il n'est pas possible de conserver l'essence profonde du freeride dans la compétition. Néanmoins, cela offre une bonne représentation de ce qu'est réellement le freeride.

It’s not possible to keep the full essence of freeriding when turning it into a competition. But nevertheless, it is a close representation of what freeskiing really is.

Pour ceux d'entre vous qui n'ont aucune idée de ce à quoi ressemble une compétition de freeride, voici comment ça se passe. Les organisateurs et les guides choisissent une face rocheuse en fonction des conditions. La veille, ou bien souvent le matin avant la compétition, les rideurs inspectent la face. À l'aide de jumelles, ils recherchent les pièges éventuels et les endroits où marquer des points. On appelle cela « repérer une ligne ». Sans s'aventurer sur la face, le but est d'analyser la montagne afin de choisir où skier et les barres rocheuses à franchir pour faire des sauts. Concrètement, les freerideurs dévalent la montagne en essayant de marquer des points selon les cinq critères suivants : sauts et style, technique, choix de la ligne, contrôle et fluidité.

For those of you whom have no idea what a freeride competition looks like—the organisers and guides choose a rocky mountain face depending on conditions. A day before or often on the morning, before the competition, the riders will inspect the face. With the help of binoculars they look for potential traps and where to score points. We call this ‘scoping a line’. Without going into the face, we analyse the mountain in order to choose where to ski and what cliffs to jump or airs to hit. In fact, we ride down the mountain trying to score points among these five criteria: air and style, technique, line choice, control and fluidity.

If we ski to impress judges and stop skiing for what feels good, in my opinion, we are not truly freeriding anymore. In real life, freeskiing is about a lot more than those five criteria. One of my favorite things about this crazy sport, which you don’t experience in competitions, is the exploring part. To go out into the unknown shapes our ability to make our own judgments and decisions. In turn, this allows us to discover and shred sick terrain—always making the best out of the place and time.

Si l'on skie pour impressionner les juges et non pour se faire plaisir, selon moi, on ne peut plus vraiment parler de freeride. En réalité, le freeride s'étend bien au-delà de ces cinq critères. L'une des choses que je préfère dans ce sport de dingues, et qui fait défaut en compétition, c'est l'exploration. S'aventurer dans l'inconnu forge la capacité à juger par soi-même et à prendre ses propres décisions. Par ailleurs, cela permet de découvrir et shredder (Ndt : utiliser le relief de façon créative en faisant des figures) des reliefs de tarés, et de toujours profiter du lieu et de l'instant.

A close friend, Hank Bilous, coming all the way from New Zealand, is currently battling it out in first position on the Freeride World Qualifier.

He is famous for keeping the vibe up and having fun no matter what. I asked him a couple questions.

Carl: What is your best competition experience?

Hank: The MOFO (Mount Olympus Freeride Open). The entire experience of the MOFO was one I’ll never forget, from leaving home in Wanaka to returning with one outrageous trip under our belt. I won’t divulge too many incriminating details but hands down best competition experience.

Carl: Quelle est ta meilleure expérience en compétition ?

Hank: Le MOFO (Mount Olympus Freeride Open). Je n'oublierai jamais tout ce que j'ai vécu lors du MOFO, du départ de la maison à Wanaka jusqu'au retour avec un voyage insensé à notre actif. Je ne divulguerai pas plus de détails compromettants, mais c'est de loin ma meilleure expérience en compétition.

Hank: 2008 NZ Junior Nationals, crashed and peed my pants!

« C'est ma troisième saison ici à Verbier, au Farinet Lounge Bar au poste de barman à cocktail. Avec notre formidable équipe, nous avons lancé la première compétition « Disco Cocktail Competition », que j'ai eu la chance de gagner. Faire une saison à Verbier est un travail exigeant, mais on s'amuse toujours beaucoup et cela permet de faire de superbes rencontres.

Les conditions de neige ont été excellentes cette année, du coup j'ai pu m'améliorer en snowboard et me faire plaisir un max en ski. Après la saison, je vais passer du temps en famille puis voyager autour du monde comme avant. À l'année prochaine ! »

"This is my third season here in Verbier, working for Farinet Lounge Bar as a cocktail bartender. With our awesome team, we launched the first Disco Cocktail Competition, which I was lucky enough to win. Doing a season in Verbier is hard work but always good fun and a good opportunity to meet great people. The snow conditions have been pretty good this year so I managed to improve my snowboarding and enjoy my skiing as much as possible.

After the season, I'm going to spend some time with my family and travel around the world like I used to do. See you next year!"

The winter season has gone too fast, as usual, I have not had time to ski as I would have liked. Indeed, I started the adventure Chateau Swiss: a private concierge service with Philipp in order to facilitate the daily life of our customers (hotel services, catering, recruitment, housing, activities, management) we had a great season! We are already on the home stretch to welcoming the world’s best riders for the Xtreme Finals and for the PDG. Once the snow melts, it will allow us to get out the bikes and see the cows back up on the mountains. From a professional point of view, I will be able to focus on my other parts of the business, while Philipp organises everything for the next season while responding to the various demands of our current customers."

« Notre première saison ici à Üna Lodge a dépassé toutes nos attentes. Non seulement nous avons bénéficié de conditions de neige incroyables, mais nous nous sentons aussi très privilégiés d'être soutenus par une communauté si formidable, ici à Verbier.

"This season has been the best since my first one! I don’t get to ski every day, but I do get quite a bit of freedom to choose which days I do. This winter I think it was 5 or 6 days of powder skiing before I spent more than a few minutes on a piste…. and that was all before Christmas! Now that it is coming to an end? I’m hoping it’s not another ten years before we get a season like this again. Loads of snow, longer days and fewer people. These next couple of months are going to be great – it’ll be a spring to remember and hopefully a great summer too."

Soupe aux asperges du printemps

Springtime Asparagus Soup

Pour 4 personnes

Serves 4

25g de beurre

25g butter

Un peu d'huile d'olive de cuisson

A little cooking olive oil

400g de pointes d'asperges, tiges hachées, extrémités ligneuses jetées et pointes réservées.

400g asparagus spears, stalks chopped, woody ends discarded and tips reserved

3 échalotes, hachées finement

3 shallots, finely sliced

1 petit poireau, haché finement

1 small leek, finely sliced

3 gousses d’ail, écrasées

3 garlic cloves, crushed

20g de persil plat, rincé et tiges dures enlevées

20g flat leaf parsley, rinsed and tough stems removed

20g de ciboulette, rincée

20g chives, rinsed

fter a long cold winter, there’s nothing quite like the smell of spring and the beauty of the budding landscape. Everything is slowly turning green again and so to celebrate this, some green soup is on the menu. Really quick to prepare and a delicious way to devour the stunning asparagus, I hope you enjoy this bowl of goodness!

près un long hiver froid, il n'y a rien de mieux que l'odeur du printemps et la beauté du paysage bourgeonnant. Tout redevient lentement vert et pour fêter ça, il y a de la soupe verte au menu. Vraiment rapide à préparer et une façon délicieuse de dévorer les magnifiques asperges, j'espère que vous apprécierez ce bol de bonté !

750 ml d'eau ou de bouillon de légumes (de préférence fait maison)

750ml water or vegetable stock (homemade preferably)

Sel de mer et poivre noir pour assaisonner

Sea salt & black pepper to season

4 tranches de Jambon Cru local (facultatif)

4 slices of local jambon cru (optional)

8 éclats de Parmesan (facultatif)

8 shards of parmesan cheese (optional)

De l’huile d’olive de haute qualité pour arroser (facultatif)

High quality olive oil, for drizzling (optional)

Slice the asparagus tips in half. Heat half the butter and a little olive oil in a large saucepan until foaming. Fry the asparagus tips for a few minutes to soften. Remove, season and set aside.

Couper les pointes d'asperges en deux. Chauffer la moitié du beurre et un peu d'huile d'olive dans une grande casserole jusqu'à ce qu'il devienne mousseux.

Faire frire les pointes d'asperges pendant quelques minutes pour les ramollir.

Retirer, assaisonner et réserver.

Add the remaining butter and a touch more olive oil if necessary to the pan and sauté the shallots, leeks, asparagus stalks and garlic.

Cook for 5-10 minutes until softened but still bright. Pour over the water, bring to the boil. Throw in the parsley and chives and give it 30 seconds to soften, then blitz with a hand blender for a few minutes until smooth. You could also ladle the mixture into a drinks blender or Vitamix for a super silky smooth finish.

Ajouter le reste du beurre et un peu plus d'huile d'olive au fond de la poêle si nécessaire et faire revenir les échalotes, les poireaux, les asperges, les tiges d'asperges et l'ail. Cuire pendant 5-10 minutes jusqu'à ce que les légumes soient ramollis mais toujours brillants. Ajouter l’eau et porter à ébullition.

Ajouter le persil et la ciboulette et laisser ramollir 30 secondes, puis battre à l'aide d'un mixeur manuel pendant quelques minutes jusqu'à l'obtention d'un mélange lisse. Vous pouvez également verser le mélange dans un mixeur à boissons ou dans un Vita-mix pour une finition super soyeuse.

Meanwhile, heat your oven to 180°C and slice the jambon cru pieces in half. Place them on a baking tray lined with parchment paper. Bake until crispy, about six minutes. Set aside.

Pendant ce temps, chauffez votre four à 180°C et coupez les morceaux de Jambon Cru en deux. Placez-les sur une plaque à pâtisserie tapissée de papier parchemin. Cuire au four jusqu'à ce qu'ils soient croustillants, pendant environ 6 minutes. Réserver.

Season the soup to taste and add hot water to loosen if needed.

Ladle into bowls and scatter the asparagus tips, jambon cru chips and the parmesan shards to garnish. Drizzle with olive oil and serve. Delicious!

Assaisonner la soupe selon votre goût et ajouter de l'eau chaude pour la diluer si nécessaire. Verser dans des bols et disperser les pointes d'asperges, les copeaux de Jambon Cru et les éclats de Parmesan pour garnir. Arroser d'huile d'olive et servir. Un régal !

his month, I have been searching for inspiration on how to liven up my wine tasting experiences. After noting that wines tend to taste different at 2,200m than at sea level, I decided to take the tasting experience one step further. At first I thought to ride the lift to the summit of Mont Fort, after all 3,330m must make a difference. But then, as I sat on the terrace at Mouton Noir, Ruinettes observing the paragliders sail by and sipping on my rosé, I suddenly felt the urge to experience the combination of an adrenaline-charged paraglider takeoff with tasting champagne.

e mois-ci, j'ai cherché l'inspiration sur la façon d'animer mes expériences de dégustation de vin. Après avoir constaté que les vins ont tendance à avoir un goût différent à 2200m plutôt qu'au niveau de la mer, j'ai décidé d'aller plus loin dans l'expérience de dégustation. J'ai d'abord pensé à prendre le téléphérique jusqu'au sommet du Mont Fort, après tout 3330m doit faire une différence. Mais alors que j'étais assis sur la terrasse du Mouton Noir aux Ruinettes, observant les parapentistes et sirotant mon rosé, j'ai soudain ressenti l'envie d'expérimenter la combinaison d'un décollage en parapente chargé d'adrénaline et d'une dégustation de champagne.

This must be the ultimate challenge in tasting. So, a few days later, I found myself strapped into the tandem harness of a paraglider and literally, taking the next step in my tasting career. The idea: to assess the impact of adrenaline, altitude and fresh alpine air on the taste of a favourite tipple of mine. Open bottle in one hand, glass in the other, we ran down the slope and took to the air with as much ease as sabring a bottle of bubbly on New Year’s Eve.

Ça doit être le défi ultime de la dégustation. Quelques jours plus tard, je me suis retrouvé attaché dans la sellette tandem d'un parapente et j'ai littéralement fait le prochain pas dans ma carrière de dégustateur.

L'idée : évaluer l'impact de l'adrénaline, de l'altitude et de l'air frais des Alpes sur le goût d'une de mes bouteilles préférées. La bouteille ouverte dans une main, un verre dans l'autre, nous avons pris notre élan dans la pente et nous avons décollé avec autant d'aisance que lorsque nous sablons le champagne le soir du Nouvel An.

Challenge number one: don’t drop the bottle. My pilot thoughtfully tied a string to the neck so no skier was in danger. Challenge number two: pouring - no problem airing the wine here but bottle-to-glass did lead to some spillage. Challenge number three: well, no spitting out. And the outcome? I can firstly say that all that fresh air makes it hard to detect any nuances, so choose a wine with a big powerful nose and yes, the adrenaline enhances your ability to smell and taste but with so much distraction it is difficult to concentrate on the wine and not on the view.

Défi numéro un : ne pas laisser tomber la bouteille. Mon pilote a soigneusement attaché une corde au goulot pour qu'aucun skieur ne soit en danger. Défi numéro deux : servir - pas de problème pour aérer le vin ici, mais le passage de bouteille à verre a provoqué quelques déversements. Troisième défi : ne pas recracher. Et le résultat ? Je peux d'abord dire que tout cet air frais rend difficile la détection des nuances, choisissez donc un vin avec un grand nez puissant et oui, l'adrénaline augmente votre capacité à sentir et à goûter, mais avec tant de distraction, il est difficile de se concentrer sur le vin et non sur la vue.

Champagne probably wasn’t the perfect choice for the experiment, as pouring while bouncing around in the thermals did lead to a lot of bubbles and waste. However, I can confidently state that the excitement of the take-off and flight did enhance my tasting ability and the lush, smooth Pinot Noir and Chardonnay blend of the Veuve sent wonderful signals of happiness to my head.

Le champagne n'était probablement pas le meilleur choix pour l'expérience, car le fait de verser tout en rebondissant dans les thermiques a provoqué beaucoup de bulles et de gaspillage. Cependant, je peux affirmer en toute confiance que l'excitation du décollage et du vol m'a permis d'améliorer ma capacité de dégustation et le délicieux assemblage de Pinot Noir et de Chardonnay de la Veuve m'a envoyé de merveilleux signaux de bonheur à la tête.
