Misty's Infused Lemon Bars

These will pucker your lips. Using real fresh squeezed lemon juice makes all the difference. Pucker up.

Recipe

Ingredients: Crust1/2 cup sugar 1 cup infused butter room temperature 2 cups flour 1 tbsp vanilla extract 1 tsp almond extract Pinch of salt for love, luck and happiness

Filing6 eggs room temperature 3 cups sugar 3 Tbsp lemon zest 1 cup fresh squeezed lemon juice

Directions: Heat oven to 350°. Line a 8x8 baking pan with parchment paper (spray pan first to help keep parchment on it.) Beat infused butter, sugar and extracts using a hand held mixer. Add flour and salt. Mix until dough forms a crumbly ball. Dump into baking dish pressing dough down flat and even. Bake 15-20 minutes until crust is golden, remove and let cool.

Filling - whisk together all ingredients pour over cooked crust and bake for 30 minutes or until filling is set (doesn’t jiggle) . Remove and cool to room temperature then cut into squares and dust with powdered sugar. Store in fridge for up to 2 weeks.
