It’s All About thE

Foam B.C. breweries have fallen in love with Czech-style side-pour taps by Joe Wiebe 6

A

sk Brent Mills about his “first time” and you’ll see his eyes light up as he recalls this highly pleasurable experience, one that he has spent a considerable amount of time, effort and money to recreate again and again—especially at the new Beach House & Brewery that Four Winds opened in Tsawwassen last year. I am referring to beer poured through a Czechstyle side-pour tap, of course. What did you think I was talking about? Mills’ “first time” occurred in 2016 when he visited the Czech Republic on a beer and cycling trip. After arriving in Plzeň and checking into a hotel, he headed out to the nearest bar. “We ordered Pilsner Urquell and they asked, ‘Do you want unfiltered or the regular?’” Of course, he ordered the unfiltered version. It turns out they’d picked one of the only bars in the world that serves unfiltered Pilsner Urquell lager direct from the source—the city’s famous brewery that created the Pilsner style back in 1842. “They poured it with a side-pour and I was like, ‘Wow!’ I may have seen a picture of it before, but that was the first time I’d had a beer poured that way.” As his trip continued, Mills noticed that the side-pour taps were nearly ubiquitous in the Czech Republic. “Anywhere that cares about beer. I mean they all care about beer, so almost everywhere.” That first encounter led Four Winds’ brewmaster down a long path of investigation and discovery that resulted in not only installing a dozen Czech side-pour taps, custom built at the Lukr factory in Plzeň, but even designing the brewhouse at the Beach House specifically to suit Czech-style

FINDING FOAM Lots of B.C. breweries and tap houses serve beer through Lukr taps, including: Beere, Beva, Brassneck, Category 12, Gladstone, Land & Sea, Luppolo, Shaketown, Steel & Oak, the Magnet, and the Drake. In February, Nigel Springthorpe (Brassneck and the Magnet) launched a new lager-focused event series called Fōm with more dates planned in the future. Check fomworldwide.com for updates.

brewing. Clearly, this isn’t just a pet project or an obsessive hobby. As far as beer trends go, this is the biggest one since the arrival of the Hazy IPA. Lukr side-pour (also called side-pull) taps have been showing up in breweries all over North America over the past few years. In her 2023 article, “Less Beer, More Foam,” beer writer Ruvani da Silva states that sales of these taps have topped 5,000 in the US. As she succinctly puts it, “The Lukr has landed.” Lukr was founded in Plzeň in 1991, just a couple of years after the Velvet Revolution, which is the name given to the peaceful movement that marked the end of the Communist era in Czechoslovakia in November, 1989. The Czech brewing industry and associated technology had not changed much over the previous 50 years, so Lukr saw an opportunity to adapt and update traditional Czech beer taps for the modern market. Compared to a traditional beer tap with a plunger valve that is either open or closed, Lukr side-pour taps employ a ball valve, compensator and strainer. The system gives the tapster much more control over the mix of beer and “wet foam” going into the glass.

7

Four Winds installed its first Lukr tap during the pandemic, and Mills admits now there was a bit of a learning curve in terms of getting the pours right. However, when he returned to Plzeň in 2024 as an invited member of a beer-themed trade mission, part of the tour included a visit to the Lukr factory and a proper training session. “I’m actually a certified tapster from the Czech Republic, which is pretty cool,” Mills enthuses. The resulting pours, featuring dollops of creamlike foam floating atop amber lager, are gorgeous and photogenic, but according to Mills, it’s not just about appearance, it’s also about flavour. “It definitely makes a difference. First, the foam that sits on top is a controlled foam with really tight bubbles. It’s kind of similar to the foam of a latté. It’s really silky and soft. Once you get that foam cap there you fill the beer underneath, and with that foam on top you’re not allowing as much CO2 to dissipate. And then under that silky, smooth foam is really bright, vibrant, carbonated beer that’s protected from oxygen as well. So you can sip the foam which is really lovely, you can go through the foam and get some really crisp beer, or you can mix the two and it’s another unique experience.” As part of the Lukr tour, Mills says they visited the brass tower manufacturing area where the guide said, “Here’s a unique product we’re making for a brewery in Canada. It’s a tower with eight

taps on it.” It looked familiar. Sure enough: the clipboard read “Four Winds Brewing.” “That’s mine!” he exclaimed. This was in April. A few months later, he was installing the tower at Four Winds’ new Beach House & Brewery ahead of its opening that summer. The beer menu is split between traditional and modern beer styles, and all of the traditional beers are poured on that burnished brass Lukr tap tower. Mills’ appreciation for traditional Czech brewing extends to the Beach House’s production area, too, where the brewhouse was designed to have decoction capability along with some open-top fermenters and horizontal lagering tanks. “We’re pretty proud of the beers we’ve been making so far. We’ve made a few batches of Czech pale lager. It’s very good, but I think we have lots of room to improve. We’re excited to progress there.” j

How to Order Czech-Style Pours Hladinka (“standard”): Two to three fingers of foam on top of gorgeous golden lager. Šnyt (“cut”): Two parts beer, three parts foam, and one part empty space at the top of the glass. Mlíko (“milk”): a mug of mostly wet foam that tastes sweet and smooth. Drink it in one go!

The emperor Maximilian brought brewers with him from Vienna and they sort of stayed on afterwards. It’s amazing what people will put up with if you make a good beer. In Europe, Pilsner sort of replaced Vienna Lager by 1900, but in Mexico they made Dos Equis and Modelo Especial because of its influence.

BREWEr vs. BREWEr THE COUPLES EDITION

T

by Sandra Thomas o say that Emily Kokonas and Justin Larter live and breathe brewing would be an understatement.

The couple, who met in 2018 while attending the brewing program at Kwantlen Polytechnic University (KPU) in Langley, work at different breweries, but also live together and are raising two cats, a pair of bonded brothers named, “Mac” and “Archie.” KPU’s Brewing & Brewery Operations diploma program, which was developed in consultation with the BC Craft Brewers Guild and an advisory committee consisting of brewery owners, local brewmasters, and industry experts, offers the only brewery diploma of its kind in British Columbia. Today, Kokonas is an instructor at KPU and works her brewing magic as lead brewer at Four Winds Beach House & Brewing in Delta.

2015 from UBC with a major in biology then from KPUs Brewing & Brewery Operations program in 2020. The Growler: How did you meet? Justin: The very first day of class at KPU. I was feeling like a fish out of water and saw her from across the brewery. Emily: We met in the brewing program at KPU in 2018. First day of brewing class you’re asked to choose your brewing partner. I felt this tap on my shoulder and I look up and this guy says, “I’m Justin. Wanna be my brewing partner?” We work(ed) really well together and our friendship developed during those years. We got together as a couple months after we graduated.

Meanwhile, Larter is head brewer at Barnside Brewing Co., also in Delta. The Growler recently checked in with the couple to gain a glimpse of how life as successful brewers and romantic partners is going. I started by asking these talented brewers to introduce themselves. Emily Kokonas: I’m a lover of all things fermentation. I love working with my hands and growing and creating things, especially delicious ones.   I grew up in Edmonton, Alberta and moved to B.C. in 2018 for the Brewing & Brewery Operations Diploma program at KPU. I graduated in 2020. Peak Covid! Justin Larter: I’m officially from Winnipeg, Manitoba, but I grew up in Kelowna. I graduated in

The Growler: Do you talk about beer a lot at home? Emily: Definitely, but we never get upset with each other if one person says, “OK, no more beer talk today.” We have really great discussions that I think make us both better brewers, but you also need to disconnect once in a while so you don’t go crazy! Justin: While we’re both passionate about high-quality beer, we’re both careful to separate work from home and pursue passions outside of our work. Emily is extremely passionate about food, gardening and spending time in nature, And, I’m a musician who’s always learning and growing my skills on stringed instruments.    The Growler: What inspired you to get into brewing? Emily: I was a bit lost in early 2017, when I moved to Australia on a working holiday visa. I had just dropped out of the General Science program at the University of Alberta and was looking for direction. I had just started to develop a taste for beer and I looked for a brewing course for fun. I enrolled in what I thought was an intro to brewing course, that actually turned out to be a draught-system maintenance course. Even though it wasn’t the most interesting part of brewing, I actually loved it and I realised how much science (and later, art) was involved in brewing. I immediately became super interested. I got a job at a really great bottle shop where I worked with an amazing team of what I’ll generally call alcohol

connoisseurs and I was hooked. Cue studying for the Cicerone certification program and drinking copious amounts of gueuze and imperial stout. Nine months or so later, I was reluctantly planning my return to Canada and I stumbled across the KPU Brewing Program. I enrolled and here we are eight-years later. Justin: After graduating with my Bachelor of Science degree, I grew interested in food and beverage fermentation. Living in Kelowna naturally lead to working a season in the local wine industry. While I enjoyed the viticulture side of wine making, I’d always preferred drinking beer over wine and I became intrigued by the then growing craft-beer industry. The rest is history! The Growler: Did the Covid years have any effect on your work? Emily: Absolutely. We were just graduating from the program and I was excited to find my way in the industry when Covid hit. We both already worked in breweries during the program, but it’s a bit different when you’re a student. I got a job brewing at Bakery Brewing in Port Moody (RIP), and was really looking forward to getting to work alongside the other breweries on Brewer’s Row. My first day was March 17, 2020, and I got laid off at the end of the day. Thankfully after a week they hired me back and I gained a lot of great experience there working with Roxanne. I learned a lot during that time, but not being able to meet other brewers and attend conferences, etc. meant I was stuck in a bit of a bubble of brewing knowledge during those years.

13

flavourful and refreshing. Archetype is one of my favourite beers at Beach House, it’s an 11° Czech pale lager inspired by Pilsner Urquell. Justin: Lagerbier. From pilsners to doppelbocks, I love them all. It’s the delicacy, drinkability and depth that always leave me coming back for more. Long live decoction and the coldest of fermentations. The Growler: What trends are you loving right now? Justin: The resurgence of Old-World lagers and pilsners are gaining popularity again. It helps me sleep easy at night.

Justin Larter is head brewer at Barnside Brewing Co., also in Delta. Supplied photo

Justin: We were lucky to be able to continuously produce canned product at Barnside while bars were closed, so it mostly impacted how we did things internally. The Growler: How is the brewing scene in Delta? Justin: Fun! With the addition of Four Winds Beach House, Delta is quickly becoming a hub of high-quality craft beers. Emily: I think the Delta brewing scene is awesome! But I’m slightly biased. I was excited for Four Winds Beach House & Brewery to open — even if I didn’t get to work here. I’m lucky to get to work on a dedicated decoction brewhouse, brewing traditional and modern styles destined to be poured from one of twenty-four Lukr taps. It’s been really exciting working with the team at Four Winds. And Barnside has been putting out some insanely delicious lagers in their premium lager series. There’s no shortage of delicious beers between the three breweries in Delta. The Growler: What’s your favourite beer style and why? Emily: I have a few and if I had to only drink one style for the rest of my life, I’d be sad, but I’m going to generally say pilsner. I love them because their “clean” fermentation profile showcases their ingredients and to me their hop flavour and bitterness are more balanced. Well done, they can be super

14

Emily: Traditionally focused, but modern, well-done lagers. I’m also stoked on the push towards lower alcohol beers in the 3.5-4 per cent range. The Growler: What are your thoughts on low or non-alcohol beers? Emily: I love low-alcohol beers because I can have more. Non-alcoholic beer can be a bit of a struggle, especially when it comes to small scale where you don’t have the expensive equipment needed to simply remove the alcohol from a finished beer. You have to use arrested fermentation with alternative yeasts, which doesn’t have the same flavour profile as beer. With that said, I’m up for the challenge and I enjoy experimenting in this realm. Justin: I’m here for it when producers take the time or spend the money to do it properly. Don’t cut corners. The Growler: What’s next for you and your breweries? Emily: Four Winds Beach House has a winery license, so expect to see some cider and wine products coming your way! We just released a cider and some wine spritzes this spring. These have been really exciting projects for me as I’ve always been interested in wine/cider production, but never had the opportunity to work with these products outside homebrewing. The Beach House is a bit of a pilot brewery for Four Winds, so we hope to keep pushing the envelope as we grow. I’m stoked to keep learning, experimenting and tasting more. Justin: More terroir-focused beers using our farm-grown ingredients! j

Three's not a crowd Meet Threefold, Vancouver’s first collective brewery by Noëlle Phillips

A

ccording to a Kenyan proverb, sticks in a bundle are unbreakable. The Biblical book of Ecclesiastes advises that a cord of three strands is not easily broken. And American author John C. Maxwell coined the famous phrase “Teamwork makes the dream work” to describe the importance of collaboration. These words of wisdom came to mind when I heard of the new craft brewery Threefold. In a time of economic hardship for B.C. craft beer, three breweries working together can be stronger and more sustainable than three working

separately. Threefold, comprised of Boombox Brewing, Temporal Artisan Ales, and Slow Hand Beer Company, has found an innovative way to survive a painful time for the B.C. craft beer industry.

Why a collective brewery, and why now? Skyrocketing costs for rent, supplies, and ingredients have combined with market inflation to make small businesses scramble for survival. Consumers are reducing spending across the board. There’s also the overall trend toward drinking less alcohol.

15

Tristan Stewart of Temporal, Jessica Sharpe of Slow Hand, and Phil Spurgeon and Matt Kump of Boombox have combined forces to create Threefold Brewery Collective. Noëlle Phillips photo

These issues all pose significant challenges to craft breweries. History shows us that during rough times, struggling breweries will either be acquired by larger corporations or consolidate with other breweries in order to survive. In the early 1900s, Vancouver Breweries joined with other breweries under the larger company, BC Breweries. In the 1990s, Granville Island Brewing was acquired by International Potter’s Distilling because they didn’t have enough capital to be profitable. Last year, Container Brewing consolidated with Fuggles Beer Co. under a larger parent company to save costs while maintaining their brand. Brewers who can’t afford to open a physical space often brew under the license (and use the equipment) of an established brewery. This was how Callister helped so many brewers get a foothold in the industry. There are many more examples of brewery survival strategies from over the years. But Threefold is doing something new, as I discovered when I met up with Tristan Stewart of Temporal, Phil Spurgeon and Matt Kump of Boombox, and Jessica Sharpe of Slow Hand, to hear about their plans for a collective brewery. Unlike other acquisitions and consolidations,

16

there’s no hierarchy involved and no big parent company – the breweries are all on equal footing. And unlike the Callister model of collaborative or shared brewing, none of the breweries own the license or the space themselves. So, what, exactly, is Threefold?

Defining Threefold

Threefold is a collective of three breweries, all of which are co-owners of the business and will brew under the Threefold brewing license. Threefold owns the license as well as the taproom and brewhouse at 1507 Powell Street, the facility that housed Andina Brewing. As co-owners of Threefold, the owners of Boombox, Temporal, and Slow Hand all have equal control over the company. However, Threefold isn’t a mash-up of these three breweries. Instead, it’s a model that allows all three to build their individual brands and brew the beer they love. “We all have different areas of expertise,” says Matt of Boombox. “We all complement each other. Slow Hand makes these great crisp, easy-drinking beers that you don’t have to think too hard about. Boombox loves making really hop-forward beers. Temporal is about long-term beers and barrel-aging.”

Temporal’s Tristan adds, “Lots of breweries make every kind of beer. That’s what people want when they go to a tasting room. But there’s value in being very specialized, and all three of our breweries are specialized. We come together to form one complete brewery but we keep our own brands. There’s no stepping on toes.” The mutual respect among these three breweries made the prospect of a collaboration even more attractive. Boombox’s Spurgeon recalls how he and his colleagues had long admired the unusual historical styles that Tristan produced under the Temporal brand. Meanwhile, Tristan was also brewing Slow Hand’s beer and had a positive relationship with owners Chris Carron and Jessica Sharpe. As our group sat in Slow Hand’s small tasting room, sipping on their pilsner and chatting, Jessica explained why Slow Hand – the only one in the trio with a physical location – needed a change. She gestured back to the brewhouse: “We’ve already crammed as many tanks in back as possible. We need more brewing space so we can make more beer. Going in with others on the cost seemed that the best option.”

A new way of doing business: the Threefold taproom

The cost of building a brewhouse and tasting room is prohibitive to each brewery individually, but feasible if the three pooled their resources. At 1507 Powell, there’s plenty of room for all the tanks plus a spacious tasting lounge. Tanks as well as taps will be allocated at an approximate 40/40/20 ratio among the three breweries. A kitchen is already on-site, so food will be available once renovations are complete. Phil, Tristan, and Matt took me through the half-dismantled and half-rebuilt tasting room and then the brewhouse, where tanks were already bubbling away and stacks of barrels were conditioning beer, waiting for their time to

All three of our breweries are specialized. We come together to form one complete brewery but we keep our own brands.

shine. We sampled Boombox’s newest double IPA straight from the tank—it provided a beautiful explosion of tropical hop flavours like pineapple, coconut, and mango. Having their own taps in the tasting room means each brewery can keep their own profits—no need to give a cut to another owner. Having a space to call their own is also a huge benefit, Matt emphasizes: “It’s a great space for us to interact with customers. Customers want to see the people behind the brand, especially in craft brewing. We don’t want to be mixed up with shadow brands.” Tristan adds that being able to direct customers to a specific place to buy their beer will no-doubt boost sales and help all three grow their brands. “There have been periods of time where I can’t sell any beer because people don’t know where to find it,” he says. Threefold is aiming for a soft-launch opening in early March 2025. When you visit the tasting room, decide what beer mood you are in, because there will be options for everyone! When I asked Threefold’s owners to describe their respective beers’ essence in a few words, they quickly obliged. Boombox is hop forward, juicy and hoppy Slow Hand is crisp and refreshing, easy drinking, and balanced Temporal is deep and complex, funky, and intense Which of the three will you want to try when you walk through Threefold’s doors this spring? j

Sipping cider along Summerland's Bottleneck Drive

J

by Cassandra Anderton

ust off Highway 97, on the drive between Kelowna and Penticton, you’ll find Summerland’s Bottleneck Drive, a worthy stop for wine fans and cider lovers. Four cideries are now situated among the orchards here, each crafting unique cider styles: Dominion, Nomad, Millionaires Row and Summerland Heritage. In 2024, frosts damaged grape vines and soft fruit trees, and apple and pear trees also suffered. Orchardists who had younger trees, or who pruned earlier, saw diminished crops of thirty per cent or more. Additional farming challenges in Summerland include fire blight, a bacterial disease that kills blossoms and shoots and can cause death in branches and entire trees, and extreme summer heat. However, these cideries all do have cider made with their own and local fruit and look forward to introducing you to their new releases this season.

Dominion Cider Co.

10216 Gould Avenue, Summerland DominionCider.com Dominion Cider Co., founded in 2015, is known for small-batch craft ciders. Dominion uses a selection of crab, dessert and heritage apples grown onsite and from nearby farms, along with other fruits and spices. Cidermaker Mike Harris and assistant cidermaker Alyssa Hollis embrace low-intervention cider making, encouraging spontaneous fermentation using wild yeast found naturally on the apples, and finish their ciders without fining or filtering. The tasting bar is open in the warmer months from 11 a.m. to 5 p.m. Bring your own picnic and grab your favourite cider after your tasting and settle down in the picnic area. Don’t miss Pretty to Think So, a cider crafted with apples and raspberries, that is dry and tart with distinctive apple skin and dried plum notes.

Millionaires’ Row is a family-run cidery with apple orchards more than 100 years old, although they didn’t turn to cidermaking until 2016. The tasting room will open at the beginning of May this year, and there’s a picnic area in amongst the trees where you can bring your own lunch.

Their ciders are made with a blend of dessert and heritage apples and are fully estate-grown. The team crafts consistent ciders year-after-year with controlled ferments. Millionaires’ Row has some unique ciders, including Making a Mint, with mint, hibiscus and lemon. We particularly enjoyed High and Dry, a blend of estate orchard and traditional apples with floral, spice and apple, with a dry finish and noticeable bubbles.

Nomad Cider

8011 Simpson Road, Summerland NomadCider.ca Nomad Cider’s team, Mike Petkau and Brad Klammer, are intrepid travellers, so naturally their cidermaking showcases various styles enjoyed in cider-making regions around the world. Nomad employs natural cider-making techniques and crafts cider in the tradition of England, France, Spain, Germany, and even one in the style of Quebec’s ice cider. They’re open all week, but during the summer weekends plan on spending time at Nomad to enjoy the views of Giant’s Head Mountain, along with an onsite BBQ. The spread includes 12-hour smoked pork butts, ribs, pork belly, and burnt ends along with coleslaw and beans. For those looking for something quick, smokies are available.

Try Nomad’s Estate Keeved Cider. Keeving is the traditional French process of making an effervescent cider by removing nutrients from the juice to ensure a long, slow fermentation resulting in a cider with some natural fruity sweetness and less alcohol. The Nomad Keeved is fruity with a luscious palate and noticeable tannins on the finish.

Summerland Heritage Cider Co. is the oldest cidery on Bottleneck Drive, having crafted cider here for more than twenty years. Ted and Lauren Vollo are the current generation of famers working this land and cider press. The team is known for their traditional and modern ciders made with European cider-specific apples they grow in their orchard. They have recently expanded their tasting room and there’s a covered patio where you can enjoy a panini and light snacks, including a snack flight for kids. Try the Summerland Heritage Mango Passionfruit Cider, bursting with tropical fruit without being overly sweet, or try their hopped or wine barrel-aged cider. j

FLAVOURS IN BEER:

& THE

ops. These little green cones are the spice rack of the beer world, capable of transforming a simple brew into a symphony of flavour. But just like any ingredient, hops can be a double-edged sword. They can bestow glorious aromas and tastes, or they can unleash a torrent of off-flavours that make you question your life choices. So, let's dive into the wonderful, weird, and downright wicked world of hop-derived flavours.

THE GOOD: HOP HEAVEN

When hops are used correctly, they can contribute a dazzling array of desirable flavours. Think of these as the hop heroes, the flavours that make you crave another sip. Citrus: Imagine biting into a juicy grapefruit or zesty lemon. Many hop varieties, especially those from the "C" hops (Cascade, Centennial, Chinook, Columbus), deliver bright citrus notes.

20

These flavours are refreshing and invigorating, perfect for a sunny afternoon or cutting through the richness of a hearty meal. Fruity/Tropical: From mango and passionfruit to berries and stone fruit, hops can create a veritable fruit salad in your glass. These flavours are often associated with newer hop varieties and contribute a juicy, sometimes sweet, character to the beer. Think hazy IPAs bursting with tropical goodness. Floral: Picture a blooming meadow with delicate aromas of roses, lavender, or even honeysuckle. Floral hops add a touch of elegance and complexity, lending a sophisticated air to the beer. They can be subtle and nuanced or bold and fragrant. Herbal/Spicy: Hops aren't just about fruit and flowers. They can also contribute herbal notes like pine, mint, or even black pepper. These flavours can add a refreshing, almost medicinal quality to the beer, or a warming, spicy kick.

Resinous/Piney: Think of the smell of a forest after a rain shower. Resinous and piney hops bring a distinctive, almost earthy character to the beer. These flavours are often associated with classic American IPAs and can provide a pleasant bitterness that balances the sweetness of the malt.

THE BAD: HOP HICCUPS

These are the hop flavours that aren't exactly desirable, but they're not deal-breakers either. Think of them as the hop hiccups—annoying, but you can usually get past them. Grassy/Hay-like: Imagine the smell of freshly cut grass or a barn full of hay. While not always unpleasant, these flavours can indicate oxidation or improper hop storage. In small amounts, they might even add a rustic touch, but too much can be distracting. DMS (Dimethyl Sulfide): This flavour is often experienced as creamed corn or cooked cabbage. While it's not strictly a hop-derived flavour (it's typically related to malt), some hop varieties can contribute to its formation. In low concentrations, it might not be noticeable, but in higher concentrations, it can be quite off-putting. Spicy/Peppery (in excess): A little spice can be nice, but too much can be overwhelming. Some hop varieties can contribute a peppery or spicy character that, while enjoyable in moderation, can become harsh and astringent if overdone. Metallic: This flavour can be reminiscent of tin or aluminum. It can be caused by various factors, including certain hop varieties or issues with the brewing equipment. Metallic flavours are often considered undesirable and can detract from the overall drinking experience.

THE UGLY: HOP HORRORS

These are the hop flavours that make you want to pour the beer down the drain (or, you know, politely hand it back to the bartender). They're the hop horrors, the flavours that haunt your nightmares. Cheesy/Rancid: Imagine the smell of old cheese or rancid butter. This flavour is often caused by the oxidation of hop oils and is a sign of old or poorly stored hops. It's a definite red flag and a sign that the beer should be avoided. Hop Burn: This harsh, lingering bitterness can feel like you've licked an ashtray. It's often asso-

Think of hops as the spice rack of the beer world. A little spice is nice, but too much can reult in harsh or astringent flavours. Petar – stock.adobe.com photo

ciated with aggressive dry-hopping, particularly with certain hop varieties. While some degree of bitterness is desirable in many beers, hop burn is a different beast altogether, leaving a rough, almost medicinal aftertaste. Vegetal: This can manifest as flavours like celery, green beans, or even cooked cabbage. It can be caused by various factors, including the use of certain hop varieties or issues with the brewing process. While some subtle vegetal notes might be acceptable in certain styles, strong vegetal flavours are generally undesirable. Light Struck: Also known as "skunking," this aroma is reminiscent of skunk spray. It occurs when beer is exposed to light, particularly UV light, which reacts with hop compounds. Lightstruck beer is easily recognizable by its distinctive and unpleasant aroma. So, there you have it—a whirlwind tour of hop flavours, from the heavenly to the hideous. Understanding these flavours can help you appreciate the complexity of hops and make informed choices about what you drink. Cheers to the good hops, and may you never encounter the ugly ones! j

SHELTER'S

FISH TACOS paired with Hoyne Brewing's Pilsner

hef Matheus Cunha says living and working in Tofino is all of the inspiration he and the culinary team at Shelter Restaurant need when it comes to creating innovative menus. “I'm a big runner and big surfer and it's just such a beautiful place to live,” said Cunha. “I love it. I’ve gotten pretty healthy these last eight years and living in Tofino has a lot to do with it.” Shelter Restaurant first opened in 2003, quickly becoming a staple in Tofino’s dining scene. Built on a commitment to fresh, locally sourced ingredients and warm, West Coast hospitality, the concept was to create a space where locals and visitors could gather over thoughtfully prepared food and good company. After a fire at the restaurant’s original location in 2022 , Shelter moved to a stunning waterfront home with views of Tofino Inlet, which offered an opportunity to create an open-concept design with a patio overlooking the ocean where guests can enjoy a casual drink or full meal. Cunha says that view, teamed with Shelter’s commitment to serving only the freshest, seasonal ingredients available, is a winning combina-

22

tion. Ingredients are sourced from as close to Tofino as possible. He adds Shelter owner Jay Guildenhuys, who also owns Shed restaurant in Tofino, is so dedicated to the eat-local movement, he helped found the Tofino Ucluelet Culinary Guild as a way to make locally produced food both accessible and affordable, while ensuring fair compensation for the hardworking individuals who supply it. “So, they gather a list of farms on Vancouver Island and the mainland of BC, and then we can order directly from them and they can deliver local products to us all year-round,” says Cunha. “It's not just for Shelter, but for everyone in town. So, we try to shape our menu based on whatever we have available in terms of produce and shellfish or seafood in general.” For example, he says, salmon typically comes from Tofino, while mussels are sourced from Salt Spring Island. He notes, while the Shelter menu does change with the seasons, there are some favourites that remain year-round. “Shelter has been around for a long time, so there are some classic dishes that are always on the

menu,” says Cunha. “Of course, we do change some items based on the season and whatever we have available, but there are some classics that are just untouchable and the salmon is part of that.” Cunha adds, a rotating food menu also means rotating beer and cocktail offerings. “We have two taps that are rotating, and then all the others are fixed pints,” said Cunha. “And then we have two rotating pints that change according to the season and to the menu.” Fish and chips and fish tacos are also popular dishes, with ingredients sourced as locally as possible. Cunha recommends pairing the fish tacos with Hoyne’s Brewing Pilsner.

A classic IPA with a resinous, hop-forward character. Pine, grapefruit, and citrus zest dominate. Firm bitterness, crisp malt backbone, and a dry finish.

Get in the Spirit at the Four Mile The Four Mile has a trio of ghosts. The White Lady is forever pining for her Scottish sea captain who was lost at sea. The old man with a bowler hat is occasionally spotted sitting at a table before vanishing. And Jake was a mischievous kid who drowned in a well out front. 40

DID YOU KNOW? THREE FUN B.C. BEER FACTS TO IMPRESS YOUR FRIENDS by Joe Wiebe

COLOURFUL BREWERIES

Did you know that 13 different B.C. breweries have a colour in their name? The most commonly used is red/rouge (5) with white coming in second (3). Black Kettle, Buffalo Rouge, Copper, Grey Fox, Red Arrow, Red Bird, Red Collar, Red Truck, SilverStar, White Rock Beach Beer, White Sails, Whitetooth, Yellow Dog. Honourable Mention: Changing Colours Brewing Project. Closed: Green Leaf.

Frank Appleton & Sean Hoyne in 2019.

BEER & LITERATURE: SEAN HOYNE’S CAREER IN BREWING

Back in 1989, Sean Hoyne was a grad student in English Lit at UVic and an avid home brewer. Swans Brewpub was about to open, and Sean’s wife Chantal encouraged him to apply for the brewer’s job. Sean showed up for the interview with Frank Appleton with a 6-pack of his homebrew, and Frank said, “There’s no time like the present.” They

sampled his beer and talked about literature and by the time Sean left, a friendship had bloomed and the job was his. After several years at Swans, Hoyne moved on to build and brew at Canoe Brewpub just down the street. Then, in 2011, he finally opened his own brewery, Hoyne Brewing, which is still going strong today.

THE GREAT PORTER FLOOD OF 1814

The dark, hearty ale that came to be called Porter was first blended by the publican of the Blue Last, a working-class watering hole on Shoreditch’s Great Eastern Street. His customers were the strong workers who carried goods unloaded from ships at the docks to markets, shops and warehouses in the heart of London, and the hit beer was named after them. The style became so popular in London that some porter breweries built enormous aging vats that would dwarf even the biggest fermentation tanks used today. The largest on record held about 32,500 hL (over three million litres). Sadly, in October 1814, one of these giant tanks burst, resulting in a flood of porter that killed eight people. More than 1.2 million litres of beer gushed out of the brewery, which was located in a densely populated slum of cheap housing and tenements. At least eight people were killed, including some who drowned in nearby basements. j
