Will Rogers Stam Celebrating 75 Y

eehaw, Y’all! Dust off your boots and grab your hats, because the Will Rogers Stampede is back and bigger than ever, on Memorial Day weekend 2021, celebrating their 75th anniversary!

Stampede Rodeo Week promises to be filled with fun for the whole family! The events kick-off Friday, May 21, with the inaugural Cowboys 4Kids Golf Tournament, which will be held at Heritage Hills Golf Course. An amazing day of 18-hole golf will be held in partnership with Rogers County Youth Services, with proceeds from the tournament will benefiting their programs, as well as the Will Rogers Stampede. Teams may enter the tournament by calling Visit Claremore offices. The Rodeo

events begin Thursday, May 27, with Food Truck Thursday taking place from 6-9 p.m. in downtown Claremore. Commemorative posters, T-shirts, and rodeo tickets will be for sale at the event. At 7 p.m., the Clem McSpadden Tub-Handle Classic Steer Roping will be held at the Stampede Park, and tickets are general admission for $5 each.

On Friday, May 28, Rodeo Slack starts at 8 a.m. at Stampede Park, and Rodeo performance at 7 p.m., gates open at 6 p.m. On Saturday and Sunday, May 29-30, the Rodeo performance will begin at 7 p.m. at the Park, gates open at 6 p.m.

Concessions will be available during the rodeo on Stampede grounds at the Pendleton Saloon, and there will be vendors with items for sale, such

On Friday and Saturday nights after the rodeo ends, a concert will begin. At around 10 p.m. each night, guests can gather at the concert stage to hear Pumpkin Hollow Friday night, and Wyatt Baker & JR Carroll Saturday night. The concerts are free with a rodeo ticket.

Wild West Kids Camp Reservations Due

ill’s Wild West Kids Camp will take on a new format this year with three days of activities at the Will Rogers Memorial June 2123. Hands-on projects will help children, ages 5-12, how to relate life on the western frontier in the time of Will Rogers, born in 1879.

Registrations are being taken now for the programs 8:30 a.m.12:30 p.m., ending with a chuck wagon lunch. The cost is $45 per child ($30 for members) which includes a cowboy hat, shirt, rope and crafts. For registration information see Will Rogers Memorial Museums and click on Wild West Kids Camp under Education/Kids. Space is limited with a registration deadline of June 13.

Days are packed with memorable events including 19th century activities, crafts, nature programs, storytelling, cowboy magician, period dancing, Pony Express and train rides and more, said Stephanie Hunter, education and activities manager.

Dr. James R. Webb Offers Free Bone Density Scans May is National Osteoporosis Month and Dr. James Webb, M.D., a local bone health expert, is offering free bone density scans to qualified patients to improve access to care as well as raise awareness of the disease.

steoporosis can be as deadly as heart disease. In the 1980s, the disease was naturally considered a normal process of aging. As medicine evolved, it became evident that Osteoporosis was connected to fractures. Today, medicine shows that not everyone with Osteoporosis has low bone density and people can have ‘fragility fractures’ as a result of the disease’s progression.

“There are thousands of doctors who do kyphoplasty in the U.S. and very few actually treat the underlying osteoporosis. As an interventional musculoskeletal radiologist, there are very few of us who actually focus on treating osteoporosis and not just fixing fractures. I was the first in Oklahoma to have a free standing clinic focused on treating osteoporosis, not just the fractures with kyphoplasty, but medically treating the underlying osteoporosis.

There is probably somewhere around 20 people around the country that I know that do this to the high degree that we do,” explained Dr. Webb.

Though the majority of Osteoporosis patients are 40 and older, he has treated patients as young as 18, and many in their 30s. He is helping drive research for vertebral fractures.

A bone density scan compares bone density to the bones of an average healthy young adult.

The test results can help determine if you have osteoporosis, are at risk for it, and can be used to determine the overall risk for having a fracture.

Osteoporosis occurs when the body’s bones become weak from low bone density, low bone quality, or both.

As a result, bones become weak and may break from a fall or, in serious cases, from something as slight as sneezing or minor bumps. Most often, osteoporosis is a silent killer until a fracture occurs.

“There is hope for slowing down and even reversing the effects of bad bone

health,” said Webb.

“The key is to catch it as early as possible and then treat it medically to reduce the risk of future fractures.”

Osteoporosis is often underdiagnosed. At least once a month he sees a patient who has been told they don’t have osteoporosis when in fact they do have the disease.

One of the ways doctors screen is by using a DEXA bone density scan. This test does two things: Screens for risk in asymptomatic people; and helps determine if a person’s bone density is low enough to be put on medication.

Screening is good if you have a family history or any concern about Osteoporosis.

“Advanced CT scans and X-ray’s can miss half the fractures; and two-thirds of the unfound vertebral fractures heal before they receive medical treatment,” explained Dr. Webb. “A physical exam is the most technical way to detect a fracture. We treat the patient and not the imaging because we know that even a small fragility fracture can take up to two weeks to collapse.”

by a doctor, get an MRI, figure out what’s wrong and derailed several times due to insurance circumstances and ‘medical judgment.’ From the beginning of her fall from a ladder, November 2014, she had been to several doctors who said that she would have to live with and manage the pain because there was nothing that could be done. The experience of losing height and managing her chronic pain from vertebral fractures from her fall were agonizing for nearly six years until late February 2020 when she found Dr. James Webb and his expertise in Kyphoplasty.

Dr. Webb’s staff arranged for Dorothy to be seen within a week of her call. They expeditiously scheduled her for an MRI March 3, and she had her first procedure

ast month I made my third visit to Mexico this year, in my attempt to learn all I could about the Mexican food culture, and the ingredients that make Mexican cuisine so unique. I never dreamed I would meet so many interesting people who were eager to share their recipes and stories! Last month I traveled to Mexico City where I met my chef friend Alondra, who had lived in Mexico City for 12 years, and was excited to show me her city. Along the way, she introduced me to other chefs and friends who were happy to join us in our quest for the best experience in Mexico City, and we managed to fill six days with more food and adventures than most people can do in two weeks!

Like nearly every other country in the world, the cuisine is dependent on the region where the food is grown, the traditions of the area, and the recipes of the people who live there. The Mexican food most Americans are accustomed to is just a very small taste of all the varieties Mexico has to offer. Mexico City has so many restaurants that offer food from chefs who cook from all over the country, using recipes passed down from generations. Alondra and her friends took me to the village of San Pedro Actopan where we cooked

and ate in the home of a grandmother who had prepared 3 different mole sauces that were traditional from her childhood. We went to a barbacoa, where lamb had been cooking in a fire pit underground all night. When we arrived, they were removing the covering of agave leaves that kept the heat inside, and soon we were eating smoky lamb stuffed in corn tortillas with salsas in every color. One cannot visit Mexico City without eating street tacos made from soft corn tortillas with local cheese and chiles.

After exploring Mexico City I traveled south to the southernmost state of Mexico, Oaxaca. It was there that I learned all about mezcal, the distilled spirit made from the agave plants. I took cooking lessons on how to make mole sauces and visited the market where there were tables piled with dried chiles I had never seen before. Oaxaca is also known for the use of dried insects, including grasshoppers and ants in their cuisine.

At first, one might hesitate to try a crispy grasshopper in guacamole, but once you’ve tasted it, you’ll likely be eager to eat them like the locals, in paper bags just like we eat popcorn!

Although Oaxaca has a very dry climate, they grow an abundance of

food, including tomatoes, mushrooms, greens and chiles. There is no end to the number of mole sauces that are made, some with as many as 25 ingredients, and others with as few as 5. Every chef and home cook has their own recipes, and I was fortunate that several shared them with me.

Now is a great time to visit Mexico, where the people are eager to show you their country and cook for you. The restaurants are open, and the artisans are showing their wares on the streets with music playing and smiles on their faces. I’m working on compiling my recipes from Mexico, which will soon appear on my website, chefshannon. com. Meanwhile, try my Grilled Mushroom and Cheese Quesadillas, and if you can get Oaxaca cheese in the market, you’ll be in for a treat.

Grilled Mushroom and Cheese Quesadillas Makes 3 quesadillas - So much can be cooked on the grill besides steaks and hotdogs! For these grilled quesadillas I sauté mushrooms and onions in a cast iron pan directly over the coals on my grill. The tortillas are filled with the mushrooms and cheese, then folded as they crisp up over the fire, absorbing the wonderful smoky flavors. I love to serve them with Mexican crema mixed with salt and chile powder for the perfect snack!

1/4 cup olive oil 1/2 small red onion, finely diced 2 cloves garlic, finely diced 1 1/2 pounds assorted mushrooms, such as cremini, shiitake, and portobello, chopped

1 teaspoon kosher salt 1/2 teaspoon ground black pepper 1/2 teaspoon ancho chili powder 2 cups shredded Monterey Jack cheese 3 large flour tortillas

Preheat grill with charcoal pushed to one side of grill. If using gas grill, heat only one side.

When coals are hot, place a large skillet on hot side of grill and add 4 tablespoons of olive oil. Add the onions and cook until soft. Add the garlic and cook for 30 seconds more. Stir in mushrooms, salt, pepper, and chili powder. Cook until mushrooms are softened, and all liquid has evaporated, 8-10 minutes. Remove skillet from grill and set aside.

Brush the 3 tortillas on one side with olive oil and place them on hot side of grill, oiled side down. On half of each tortilla, top with mushrooms mixture and shredded Monterey Jack cheese. Fold the tortilla in half, pressing down with back of a spatula.

When bottoms of quesadillas are lightly browned flip to cook other side. When browned, slide quesadillas to the cool side of grill and close the lid to let cheese melt inside (unless cheese has already melted). After five minutes, remove quesadillas from grill to a cutting board. Slice into quarters and serve.

2021 Grand Lake Summer Festival Season Starts in June

rand Lake Festivals, Inc. and the Grove Area Chamber of Commerce again partner for a great kick-off to a safe and festive 2021 summer festival series. The American Heritage Music Festival and Grand Lake National Fiddle Contest will be held June 10, 11 and 12, joining the Chamber for the Toes in the Grand weekend at Wolf Creek Park in Grove, OK. Fiddlers, musicians, and music enthusiasts from across the U.S. gather for this exciting Festival celebrating our nation’s musical heritage. This will be the second year for the two events to be combined into a large family-friendly event. The American Heritage Music Festival starts with a delicious lakeside dinner, entertainment, and plenty of jamming at Snider’s Camp Thursday evening, June 10 at 6:30 p.m. Bring

your lawn chairs and enjoy a lakeside dinner and free entertainment.

The Grand Lake National Fiddle Contest will begin at 9 a.m. Friday, June 11, at Wolf Creek Park, with 4 divisions for all ages including the Open Division competing for the top prize of $1000. Register online for the contests at www. grandlakefestivals.com. The Early Bird registration deadline is May 15. Contests, jamming, and entertainment continue throughout the day. You never know who you will find within the groups of talented musicians enjoying playing and jamming with the best of the best. Featured bands Friday evening are Cliff Top and the award-winning Baker Family Band plus Jana Jae & World Champion Barry “Bones” Patton, followed by the Junior Marriott Western Swing Dance

Band closing out an evening of great music, fun and dancing. Spectators are asked to bring their lawn chairs to Wolf Creek Park and enjoy a full day and evening of entertainment, vendor booths, and delicious food by several local and area food trucks serving up their most delicious cuisine.

ave’s RV in Claremore is hosting a Pet Adoption and Pet Food Drive! Dave’s RV will be collecting bags of dog and cat food the entire month of May 2021.

The bags must be new and unopened.

Everyone that brings in a 30 lb. bag or more of dog or cat food will receive their choice of $500 off the purchase of an RV, or 15 percent off parts.

Dave’s has partnered with Oklahoma Alliance for Animals, Skiatook Paws & Claws, and Zoi’s Animal Rescue for this event. Come out and help the dogs and cats find their forever homes. All food collected will be evenly distributed between the three organizations. Last fall they collected over 4,000 pounds of food!

Oklahoma Alliance for Animals is a Tulsa-based 501c3 nonprofit collaborative organization established in 2004. OAA’s primary purpose is to bring together the people and resources needed to overcome pet homelessness, abuse and neglect. Oklahoma Alliance for Animals is dedicated to reducing pet overpopulation, encouraging responsible pet ownership and promoting the humane treatment of animals through community collaboration and education.

Zoi’s Animal Rescue although founded in 2005, the seed was planted several years before when

Mike and Debbie Stellas rescued two lab puppies from being euthanized.

They both had severe mange and the female had a birth defect, which made her left front leg deformed. They were named Zeke and Zoi (Zoi in Greek means “life.”) Because of Zeke and Zoi, Debbie and Mike decided to start Zoi’s Animal Rescue. Since 2005, ZAR has rescued and adopted out over 1000 dogs and cats. Zoi’s is a 501(c) (3) nonprofit all-breed animal rescue group that is based in Claremore, OK. Skiatook Paws & Claws was formed in October 2013 by a young lady who had a dream to make her local animal control facility a “no-kill” shelter by pulling every deemed adoptable dog and cat and adopting them out to loving forever homes. She teamed up with two of her friends and together, they formed what SPACAR is today. We have found homes for over 2,000

animals in our surrounding area and have successfully kept the Skiatook animal control facility no-kill for four years. They are currently in the process of becoming an official 501c3 organization.

Food can be dropped off at Dave’s RV throughout the entire month of May 2021. To wrap up the Pet Food Drive, Oklahoma Animal Alliance, Zoi’s and Skiatook Paws & Claws will be on-site from 9 a.m. to 3 p.m. Saturday, May 15, 2021 with adoptable cats and dogs.
