From time to time, my supermarket runs a special on a cut of beef it labels “London Broil.”

It’s a lean piece of meat, about 1 1/2 inches thick and tough as shoe leather. ®

You may wonder why I load up my freezby Mary Hunt er when it goes on sale for $3.97 a pound. That’s because I have a secret weapon that turns flank steak or any other tough cut of beef into filet mignon. Well, not exactly, because it does not have all the fat of a filet, but it’s so flavorful and so tender some say it’s even better than filet.

But first, let’s clear something up: Apparently, my store is unaware that there is no cut of beef called “London Broil.” That refers to a cooking method that involves marinade and seasonings.

So what I am buying is flank steak. It comes with no seasonings or marinade, just plain tough beef. And that’s OK because I know how to fix that problem.

How Marinades Work to Tenderize:

A marinade is a combination of three basic components: acid (vinegar, wine, citrus, soy sauce, coffee) spices and oil. The acid is the key ingredient, as it helps to break down tough connective tissue in meats and poultry, making them tender. The combination of acid, oil and herbs/ spices enhances the flavor. But it takes time. And the longer the meat or poultry sits in that marinade, the more tender it will be.

One word of caution: Once you’ve used the marinade to tenderize and flavor meat or poultry, do not reuse it. Once it’s been in contact with raw meat, it will harbor bacteria. Unused marinade can be kept in a sealed container in the refrigerator for later use.

Other Marinades:

Here are some general recipes for other marinades. Use them with meat or poultry. While the proportions are important, you can multiply these recipes to accommodate how much meat or poultry you need to prepare.

ALL-PURPOSE MARINADE

Online matchmaking giant eHarmony has made millions fine-tuning the science of compatibility so that men and women can have an easier go at true love.

Well, I have a method to help you find a little dHarmony -- your perfect dog, assuming perfect for you means well-adjusted, playful, affectionate and responsive.

Recently, I got a new puppy: Frankie, a Cardigan Welsh Corgi and the cutest little thing you ever saw.

But I didn’t bite based on cute. What pooch isn’t cute? No, here’s how you do it so you don’t end up with the cutest little nightmare you ever laid eyes on:

In our case, we had four puppies to choose from, and the first thing we did was watch the four of them interact with one another to see whether they would peacefully romp and play. They did.

Next, we added toys to the mix to determine whether they would play with the toys and share. That, too, went well -- no fighting, no guarding, no growling or bullying. That’s what you want to see: dHarmony.

After they played for a while, we tossed a handful of car keys into their play space to startle them and gauge their reaction to the noise. What you want at this stage is dogs showing curiosity rather than standoffishness, nervousness or reluctance. Two of the pups backed away from the keys while the other two approached, sniffing around and nudging the strange, shiny objects with their tiny paws. Frankie even picked the keys up with his mouth -- a great sign!

Now narrowed to two, we administered a quick physical sensitivity test. This test is done in three parts:

One: Grab the pup’s tail and pull gently. Observe his reaction. If he looks at you quizzically or becomes playful, you’re onto something. If he begins howling like a banshee, keep looking.

Two: Using finger and thumb, press lightly between the pup’s toes expanding them outward.

Gradually increase the pressure for several seconds until he shows signs of discomfort. If he licks

Which Flu Shot Is Right for You?

It’s that time again ... flu season is on the way. Vaccines already are available in most locations, so we have no excuse not to get a flu shot soon.

Sometimes the dilemma can be deciding which shot to get. Most flu vaccines contain protection from three strains of influenza, called trivalent vaccines. Those contain two A strains and one B strain of influenza.

Some of them add coverage for a fourth strain. Those shots are called quadrivalent and contain two A and two B strains. With two Bs, the Centers for Disease Control and Prevention doesn’t have to flip a coin to decide between two equal B vaccines; it can just include both.

In addition, there are high-dose flu shots especially for seniors age 65 and older. As we age, our immune systems don’t respond the same way, and a regular flu shot might not get us the strong immune response we need to avoid the flu.

The strains change every year, which is why most people need to “renew” their flu vaccine each year. The CDC tracks which influenza hits, and when, in making its calculations for

Do You Really Want a Shrunken SSA?

I sure am glad President Trump isn’t considering me to be the new head of the Social Security Administration. What a thankless job! As about 10,000 people retire every day, and as thousands more file for disability and survivor benefits, the agency’s workforce keeps dwindling. And it’s going to get worse.

Trump considers it his mandate to shrink the size of government. Of course, almost every Republican legislator thinks the same. And since they are now running the country, the federal government, including SSA, is going to shrink.

I’ve made this following point many times in this column. So many Americans claim they want smaller government. But if my emails are any indication, what they really mean is they want smaller government for everyone else -- but not for themselves.

Here is an excerpt from an email I got yesterday. “I cannot believe that Obama changed a law that would deny me the right to claim Social Security benefits off of my wife’s account while letting my own retirement continue to grow. I just hope Trump corrects this travesty while he’s also kicking all those deadbeats off of the disability, welfare and food stamp rolls!”

See what I mean? “More for me, but less for all those other people” is the mantra for so many Americans.

President Obama didn’t change a law. But his administration did appropriately close a loophole that allowed mostly wealthy senior citizens to claim dependent spousal benefits on their husband’s or wife’s Social Security record while they delayed taking their own benefits until age 70, at which point they would get a 32 percent bonus added to their retirement checks.

I have written many times how allowing someone who had a job and qualifies for a Social Security pension to claim benefits as a “dependent” husband or wife on a spouse’s Social Security account was a mockery of the basic tenets of Social Security. And it was costing the federal government tens of billions of dollars per year in extra payouts.

If this guy really thinks that Trump is going to reopen that loophole while he’s “kicking all those deadbeats” off the government dole -- well, I’ve got a wall across the southern border of this country that I’d like to sell him!

OK, enough smarminess on my part. But my point still holds. So many people (oftentimes hypocritically) think the government is too big and needs to be shrunk in size. Well, it’s happening.

The Trump administration has ordered the Social Security Administration (and almost all other government agencies) to downsize. At SSA, early retirement incentives have been offered to about 15,000 employees. That’s one-fourth of the agency’s total workforce of 62,000.

That’s going to mean the closure of more local Social Security offices, which means fewer people available to answer the thousands of calls the agency gets every day. By far, the No. 1 complaint I hear from my readers is the overly long wait times when they call SSA’s 800 number. Well, all I can say

Dear Aching: Many people who have arthritis believe that exercise will worsen their condition, but that’s not true. Exercise is actually one of the best treatments for osteoarthritis.

Proper and careful exercises can help reduce joint pain and stiffness, strengthen muscles around the joints and increase flexibility. It also helps manage other chronic conditions that are common among seniors with arthritis, such as diabetes, heart disease and obesity. Here are some tips to help you get started:

Inscribed on each piece are the letter “T” and the words “Sterling Pat. 1932.” The set is in the original chest, and there is a label with the name “M. L. Naken Co. -- Chicago -- Il.” My research shows Towle Silversmiths was founded in Newbur yport, Massachusetts, in 1857 by Anthony F. Towle. I have been told the pattern is “King Richard.”

I believe the set was purchased in the 1950s or 1960s.

Towle Silversmiths Company introduced the “King Richard” pattern in 1932. The silver chest was designed and patented by Morris I. Naken Company in Chicago in 1954. It was made of wood and intended to keep the sterling flatware from tarnishing.

Your sterling flatware is circa 1954 and should be insured for $2,500 to $3,500.

Many porcelain factories were drawn to the nearby area of Teplitz that was rich with deposits of a white clay called kaolin. Porcelain is a mixture of quartz, feldspar and fine-grained kaolin that is fired at a high temperature. The name Teplitz is based on the Czech word for “hot” because there are natural hot springs in the area. Not only was the area rich in natural resources; it was on a heavily traveled route, which generated opportunities for the success of porcelain factories. Robert Hanke Porcelain Factory is well-known for its high-quality porcelain vases, dishes and decorative pieces. The business closed in 1945.
