Brine Turkey: Put salt and 2 cups very hot water in a tall 8-qt pot. Stir until salt dissolves. Add 2 cups ice cubes; stir until water is cold. Place turkey in pot, skin side down, and add enough cold water to cover. Stir brine around turkey, cover pot and refrigerate at least 12 hours, or overnight.

Baby-Back Ribs with Texas Blackjack Sauce and Peach Coleslaw Tips & Techniques Total Time: 1:00 Prep: 0:10 Level: Moderate Serves: 4 Ingredients Ribs: 3 lb. baby-back ribs 1 bottle barbecue sauce (1 1⁄2 cups; we used Cattleman’s Classic) 3 tbsp. brown sugar 2 tbsp. instant coffee 2 tbsp. Worcestershire sauce Coleslaw: 0.25 c. slaw dressing 1 tbsp. Dijon mustard 4 c. coleslaw mix 2 ripe medium peaches 0.50 c. chopped red pepper Good with: grilled corn on the cob Make Ribs: Put ribs in large pot with just enough water to cover.

Bring to a boil, reduce heat, cover

1 tbsp. granulated sugar 1 tbsp. brown sugar 1 tsp. salt 1 tsp. Freshly ground pepper 2 tbsp. oil Cranberry-Orange Barbecue Sauce (recipe follows)

and simmer 45 minutes, or until meat is fork-tender.

Brined Barbecue Turkey Breast

Meanwhile, mix barbecue sauce, sugar, coffee and Worcestershire sauce in a small saucepan. Heat over medium heat, stirring until sugar and coffee dissolve. Remove from heat.

Make Coleslaw: Stir dressing and mustard in a large bowl; add coleslaw mix, peaches and red pepper; toss to mix. Refrigerate until serving.

Brined Turkey: 0.75 c. salt 1 bone-in turkey breast (about 6 lb)

Coat outdoor grill rack with nonstick spray. Heat grill. Place ribs,

Make Rub: Mix ingredients, except oil, in a bowl. Stir in oil.

Prepare a charcoal or gas grill for covered indirect grilling over medium heat. Have ready a disposable foil roasting pan.

Remove turkey from brine; pat dry with paper towels. Rub spice mixture over breast, working some under skin. Place in foil pan.

Place pan on grill rack as grill manufacturer directs for indirect cooking. Cover grill and cook 1 1⁄2 to 2 hours, or until an instant read thermometer inserted in thickest part of breast, not touching bone, registers 165°F. Remove turkey to cutting board; let rest 30 minutes before slicing.

Serve with Cranberry-Orange Barbecue sauce.

One Hundred and fifty years ago, our African American ancestors in Galveston Texas celebrated the first Juneteenth festival in the nation. General Gordon Granger read official order #3 to the African American captives of Galveston Texas June 19, 1865. Two and a half years earlier President Lincoln signed the Emancipation Proclamation January 1, 1863 freeing all African American captives in the rebellious south.

This is the event our ancestors recognize as African American Freedom Day for all. The first act of freedom, African Americans cherished as the opportunity to reunite with family members and to be self-determined as a people. The first celebration of Juneteenth included soul food cook offs, drinking ice cold red pop, singing spiritual hymns, dancing to the rhythms of the drum, sharing tales of bravery, and courage of the Buffalo Soldiers, Harriet Tubman, John Brown, Denmark Vessy, and many other heroes and sheroes of their time.

Early bird tickets are still available until then, with general admission tickets currently on sale for $49.00 for a single-day pass and
