There’s a good chance you ’ ve visited one of these “unique” fusion restaurants if you ’ ve ever eaten sushi, kebab, wok foods, or even pizza for that matter Did you know that these “fusion” restaurants, which combine more than one food cuisine served together, are mostly only found in Sweden and other nearby European countries? So why isn’t this a more widespread practice around the world? Of course, fusion restaurants which mash and combine different cuisines into one innovative combination menu are very common and increasing in popularity worldwide I’m mostly referring to the restaurants that have two, three, or four different cuisines on the same menu, making it feel like four restaurants in one as the food is often cooked by separate people in different sections of the kitchen These “combination” restaurants are a great thing of course, they provide many food choices and there is always something for someone especially if you ’ re eating out with a big group of people or family With so many dietary needs and preferences, whether someone is looking for a vegan option, chicken, spicy, or even lactose-free like me, there is always something for everyone However, there is a sacrifice to this magical and convenient combination restaurant concept That cost is the simplification, alteration, and minimization of different cuisines and entire cultures All at the cost of authenticity in exchange for convenience and accessibility

A phenomenon that usually goes unnoticed is the lifelong negative impact people may have from eating at combination restaurants Unsurprisingly, combination restaurants usually have lower quality and authenticity for the different cuisine offerings, compared to a restaurant that specializes in a single cuisine This can have detrimental effects as it taints and ruins the experience and perception of an entire cuisine and food culture for someone. Speaking to many people, I’ve learned that they refuse to ever try sushi again because of a horrible first experience from trying grocery store sushi at ICA, or at a combination restaurant It’s just too bad this happens because there are countless people out there who may really love food from a particular cuisine, but they’ll never know as their perception has been altered and tainted.

It’s the equivalent of people overseas who tried Swedish köttbullar or fika overseas at their local combination restaurant, and because of the lack of authenticity or quality, they now won’t even go close to any food from the region Simply put, one does not go to a combination restaurant if they are looking for authentic sushi or Mexican tacos. If you ’ re looking to have a nice fika with good quality cakes and coffee, you wouldn’t go to ICA or COOP, you’d probably go to a nice local authentic café with traditional offerings at Gamla

These restaurants offer a multicultural experience, with dishes that fuse together flavors from different parts of the world Although there is the concern that this may be diminishing the authenticity of other cultures, the main difference of fusion restaurants is that it doesn’t claim to be offering and representing foods from a specific culture As a metaphor, combination restaurants can almost be likened to plagiarism or paraphrasing in writing, where potential diners have no reason to think that they are not getting Thai food or sushi which is authentic to a certain degree when they walk in Whereas fusion restaurants could be seen as properly citing the quote or idea you are borrowing from, as they market and communicate which cultures and culinary cuisines inspired their menus.

However, fusion restaurants in Sweden offer a unique experience that can cater to a variety of dietary needs and preferences With a diverse menu, diners can choose from a wide range of options, ensuring that everyone in a group can find something they enjoy.
