Don’t forget the reindeer this Christmas Eve

Every Christmas Eve, my kids and I look towards the sky in hopes of catching a glimpse of Rudolph leading Santa’s sleigh.

To make sure the highly important reindeer are not forgotten on this special night, we make a magical mixture of reindeer food with ingre dients already in the pantry.

INGREDIENTS:

-Raw uncooked oats (can also use popcorn)

-Sugar cookie sprinkles or glitter

-Plastic sand wich or snack baggie

-Ribbon in fes tive holiday colors

DIRECTIONS

-Pour 3-4 tablespoons of oats into each plastic bag.

-Add a tablespoon or two of sprin kles. Iridescent sprinkles or red and green sprinkles are good choices; but use what you have on hand. (You can

even use the fine sanding sugar used for sand tarts. Just beware: If you mix red and green sugar, the resulting color will be a less festive shade of brown.)

-Close the baggie with a piece of ribbon and shake, shake, shake!

-If using a zipper top bag, punch a small hole in the corner and thread a piece of ribbon through the hole.

After you put out the milk and cookies for Santa, head outside to sprinkle this magic reindeer food on the snow or your lawn and be sure to say this poem. Sprinkle this reindeer food out side tonight

The moonlight will make it spar kle bright

As the reindeer fly and roam This will guide them to your home

Apple Oat Crumble and Citrus Caramel Topping

3 tablespoons sugar

1/2 teaspoon ground cinnamon

2 Envy Apples, diced into large cubes

1 tablespoon lemon juice

1/2 cup brown sugar

1/2 cup all-purpose flour

1/2 cup old-fashioned oats

1/2 cup cold butter, diced small 1/2 cup caramel

1/4 teaspoon salt 1/2 orange, zest only

1 tablespoon orange juice vanilla ice cream

Preheat oven to 350 F.

In bowl, stir together sugar and ground cinnamon.

Toss apples in lemon juice then in cinnamon sugar mixture. Spread in 9-inch pie dish.

In another bowl, stir together brown sugar, flour and oats. Using hands or fork, cut in butter until pea size crumbs form. Sprinkle evenly over apples.

Bake 40-45 minutes until mixture is

bubbling and golden brown. Remove from oven and let cool 15 minutes.

In small pot, whisk caramel, salt, orange zest and orange juice until warm.

Spoon apple oat crumble over large scoop vanilla ice cream and top with salted citrus caramel.
