1. In a large bowl, sift together flour, baking powder, baking soda, salt, and sugar. Using a cheese grater, grate butter into dry ingredients and mix lightly with fingers until crumbly. 2. Add buttermilk and quickly work into flour mixture with a pastry cutter, wooden spoon, or by hand. Knead with a few quick strokes into a rounded mound and let rest 20 to 30 minutes in the refrigerator. 3. Heat oven to 400ºF. Lightly grease or line a baking sheet with parchment paper and set aside.

TOMATO GAZPACHO Makes 4-6 servings

2 pounds fresh tomatoes 1 small sweet onion, roughly chopped 1 cucumber, peeled, seeded, and roughly chopped 1 to 2 garlic cloves 1 cup cubed bread (sourdough is good) 1 teaspoon sherry vinegar salt and pepper 1 cup ice 2 tablespoons extra virgin olive oil

4. Roll dough on a floured surface to a thickness of ½ inch. Cut with a 2-inch biscuit cutter and transfer to a prepared baking sheet. Bake 10 to 12 minutes or until lightly browned and baked through.

1. Cut an “×” on the bottom of each tomato. Then blanch the tomatoes in a large pot of boiling water for 15 seconds and immediately submerge tomatoes in an ice bath. After they’ve cooled, gently peel away the skin starting from the “×.” Slice the tomatoes and remove the seeds.

restaurants over the years. Never has that request become as pronounced as it has been since the opening of Blue Gill. Perhaps it’s because the food is more homey and comforting and less about flair— more accessible to the home cook. We live in a culture now filled with people who are more aware of what they are eating and that they have more choices than ever. And to be sure, families are busier now than they have ever been before. Fast food is readily available, but fresh food is too.
