Tomato and Avocado Salad By Chef Thia, from Taste the Islands I’ve always loved a good Haitian tomato and avocado salad. The sweetness and acidity from the tomato complements the creaminess and special flavor of the avocado. I’ve added a little more seasoning to the traditional version to make it my own. In the islands we use the large green avocados, which are creamier and have a different texture than the small, black ones. I recommend this kind if you can find them. Do be sure to use avocados that are ripe but not too soft, and tomatoes that are a touch underripe as well. The tomatoes should be pink and firm, not watery. Serves 4 ½ large avocado

3 tablespoons fresh lemon juice

½ cup cherry tomatoes

¼ teaspoon salt

2/3 cup finely chopped red onion

¼ teaspoon black pepper

2 tablespoons chopped fresh flat-leaf parsley 1. Cut the avocado into quarters lengthwise. Make a small cut on one end of each slice and peel off the skin. Cut each slice into ½-inch chunks and place in a large salad bowl. 2. Cut the tomatoes into quarters. Add to the bowl with the avocado. 3. Add the onion and parsley, drizzle the lemon juice over the mixture, and season with salt and pepper. Gently toss and serve. Chef Thia’s tip: Acidity from the lemon juice will help to prevent oxidation of the avocado.
