Welcome to !e Birdie From 1840 to 1940, Scotland was renowned for its hydropathic hotels.

A!ectionately known as hydros, these properties were built around the concept of hydrotherapy, which in those days meant ice baths and loch swims. Often situated in rural locations with picturesque views, they promised both physical cure and mental calm. A century later, hydrotherapy is back in vogue – and that suits us down to the ground.

We like to think of the Old Course Hotel as a shining example of a modern-day hydro, and in this, the third issue of The Birdie, we look at some of the things substantiating that claim. First up, we’re delighted to announce that the refurbishments on our already award-winning Kohler Waters Spa are now complete, and I can vouch for the therapeutic e!ects of our new snow and sauna cabin (page 3). Our ever-expanding wellness o!ering now includes seasonal retreats – find out more in our interview with wild swimmer and photographer Anna Deacon (page 6).

For those with more epicurean tastes, we’ve a new ritual at the Road Hole Bar that involves theatrical cocktail-making (page 12), and we’re looking forward to welcoming two wonderful guest chefs to host elegant dinners in our Road Hole Restaurant. First up is Michelin-starred Alex Dilling of Hotel Café Royal, followed by Ballymaloe Cookery School’s Rachel Allen – meet them on page 18. On page 22, Old Course Hotel board member Peter Dawson reflects on his 16 years heading up the R&A and makes the case for St Andrews being the best place on Earth. Plus, we look forward to the festive season (page 28) and the year beyond.

Did you know ...

Bridge of champions Built 700 years ago so that shepherds could take livestock across the burn, Swilcan Bridge is now a famous photo spot, from which Jack Nicklaus bid goodbye to the professional game at the Open Championship in 2005. Admire its Roman-style arch from Swilcan Loft restaurant, which was named after it.

Raisiní chaos

Every October, students at the university play pranks, dress up in garish costumes and congregate on Lower College Lawn for a shaving-foam fight. It’s all part of Raisin Weekend, when first-year students (known as “children”) say thank you to their older mentors (“parents”) – traditionally, they would give them a pound of raisins.

Taking their name from the Old Norse word venda, St Andrews’s wynds are atmospheric old alleyways that connect the town’s main streets.

Butts Wynd once led to the mound, or butt, where archers honed their skills – these days, it’s the butt of light-hearted selfies.

Epic jail

St Andrews Castle once served as a bishop’s palace, a fortress and a notoriously grim prison.

Visitors can still see the “bottle dungeon”, a 22ft-deep pit dug out of the rock below the Sea Tower, with no natural light or ventilation.

It was accessible only via a trapdoor over the narrow neck opening – and therefore impossible to escape from.

“For optimum results, we suggest you spend 10 to 20 minutes in the sauna, followed by three to five minutes in the snow room, with rest periods in between,” Phyllis advises. “However, it’s important to listen to your body and adjust the duration based on your individual tolerance and comfort.”

Comfort is one thing there is no shortage of in the new spa. “One of my favourite spaces now is the refurbished lounge,” says Phyllis.

“With cloud-like seating and the warmth of the fire, it’s the perfect place to relax into your spa experience.”

“I was burnt out,” she recalls. “I’d been juggling commercial photography jobs between London and Edinburgh, raising a family and just trying to keep everything going. I reached a point where I needed to stop.”

08 Mindful photography plays a crucial part in Anna Deaconí s wellness retreat

To reignite her creativity, Anna began photographing local sea swimmers, capturing portraits and collecting their personal stories.

“There weren’t many of us back then, and I found that nearly everyone I spoke to had a deep-seated reason for being there – chronic pain, grief, anxiety. They were all coming to the water to heal.”

This personal project led to a chance meeting with journalist Vicky Allan, and the two went on to co-author Taking the Plunge, a bestselling book that launched Anna into the heart of the wild swimming movement. Now, with eight books under her belt, she has become a passionate advocate for the healing power of nature – not just cold water, but the wider world of grounding, forest bathing and what she calls “nature’s version of biohacking”.

“The biggest trends in the wellness industry – red light therapy, sound baths, cold plunges – you can get them all in nature. Morning light, birdsong, a campfire ... they all have profound e!ects on the body.”

For Anna, the Old Course Hotel’s retreats are an extension of that philosophy: a way to reconnect with the natural world, switch o! from digital life and rediscover calm through small, accessible practices.

A key feature of the retreat is mindful photography, something Anna describes as a doorway into a deeper connection with the world. “It’s not about taking perfect pictures – it’s about looking closely, engaging your senses.

Feel the bark of a tree. Notice where the light falls. Smell the air. It’s about presence.”

Her sessions are designed for anyone, regardless of experience. “Every photo I take to demonstrate will be taken on my phone – which is not even a good one! I want to show guests

that this is achievable for anyone. I might say, ‘Look for shadows today’, and that becomes a way into creativity. When you’re in that creative state, it’s difficult to feel anxious.”

The fusion of mindfulness and movement is a key part of Anna’s approach. “I’ve always struggled with traditional meditation,” she says.

“But put me in nature – walking, swimming, taking photos – and I can be completely in the moment. Cold water especially forces you into the now. You can’t be in a freezing loch thinking about your shopping list.”

The retreats will also include journalling prompts to encourage reflection, and access to the hotel’s award-winning Kohler Waters Spa, which specialises in contrast therapy – moving between hot and cold to stimulate circulation, boost immunity and reduce stress. “There’s something really empowering about getting into cold water, especially for the first time,” Anna says. “You come out feeling stronger, more capable, thinking, ‘If I can do that, I can do anything.’”

One of her most memorable swims was right here in St Andrews during the Global Wellness Summit, hosted by the Old Course Hotel in 2024. “I was in the tidal pool at Castle Sands at sunrise. The sky was on fire, the ruined castle was glowing and the birds were swirling overhead. Everyone there – people from all over the world – was in awe. It was magic.”

Anna hopes that each retreat will o!er the same blend of adventure, introspection and joy.

“Yes, you’re staying in a five-star hotel, with amazing food and a beautiful spa. But what you’ll take away is something you can carry with you: moments of mindfulness, glimmers of joy and a deeper connection to yourself and the world around you.”

I do, I DO, I DO WHETHER YOU WANT TO SAY YOUR VOWS ON THE BEACH, IN A CHAPEL OR OVERLOOKING THE GREENS, THE OLD COURSE HOTEL IS THE PERFECT PLACE TO CELEBRATE YOUR SPECIAL DAY

“ONE OF THE GREAT THINGS about Scotland is that you can get married anywhere as long as you have the legal celebrant,” says Laura Russell, senior events manager at the Old Course Hotel. “We’ve seen people tie the knot on West Sands Beach, up in the Highlands, down by the harbour – heck, you could get married on the train station platform if you wished!”

Or, indeed, on the legendary Swilcan Bridge, where one of our guests recently proposed.

“That couple are hoping to get married there, too,” says Laura, who is helping to arrange their ceremony. “We still need approval from St Andrews Links Trust, but they’re planning to wed on a Sunday – so, of course, the Old Course would be closed anyway. We see a lot

of couples choosing venues or locations that speak to their passions in some way.”

Laura has helped to arrange more than 1,000 ceremonies, so she’s well equipped to point couples in the right direction for their perfect wedding venue. “St Andrews University alumni love getting married at St Salvator’s Chapel,” she says. “It’s great for larger weddings, and with those epic stainedglass windows, you can get some really beautiful wedding photography. To get married there, at least one of the couple needs to have studied at or have a strong connection to the university, so there’s an element of exclusivity to ceremonies there.”

The same goes for St Leonard’s Chapel, which is also owned by the university, although

this venue is perhaps better suited to more intimate celebrations. For unlimited space, Laura often recommends the St Andrews Botanic Garden, where 18 acres of meadows, woodland and prized horticulture provide dozens of memorable backdrops. She argues that weddings here are a more sustainable option, given that you don’t need to spend anything on wedding flowers – you’re already surrounded by them!

GRAND DESIGN AS A HOTEL, IT HOSTED MONARCHS, CELEBRITIES AND COUNTLESS GOLFERS. NOW THE ICONIC HAMILTON GRAND OFFERS SPLENDID APARTMENTS FOR VISITORS LOOKING FOR A LONGER STAY

ACCORDING TO LOCAL legend,Hamilton Grand, one of St Andrews’s most iconic edifices, was built to settle a score. The Royal & Ancient Golf Club had apparently refused membership to the Scottish businessman Thomas Hamilton, so, in an attempt to quite literally overshadow it, he decided to erect a bigger, more imposing building next door to the R&A’s clubhouse.

The Grand Hotel, as it was originally known, opened in 1895, at a time when St Andrews was fast becoming a popular tourist destination. It was built on the site of the Union Parlour, the world’s first known golfers’ club, and was the first property in Scotland to have a pneumatic elevator, as well as hot and cold water in every bathroom. Built of distinctive red sandstone,

the Grand Hotel was an architectural sensation, bringing a great splash of colour to the Auld Grey Toon. Its glittering clientele included King Edward VIII, King George VI, Bing Crosby and Rudyard Kipling (who is believed to have invented “snow golf” while living in Vermont).

During the Second World War, the Air Ministry requisitioned the hotel, transforming it into a training headquarters for the Royal Air Force. The University of St Andrews acquired the building in 1949 and used it as a student residence until it was sold in 2004. A period of uncertainty followed before Kohler Co. purchased it in 2009, stripping it back to its outer shell as part of a painstaking four-year renovation.

privately owned apartments, which, according to Savills estate agency, have generated the highest price per square foot of any residential property in Scotland. Country Life magazine described them as the finest flats in St Andrews.

“We’re lucky enough to manage some of the apartments as part of our rental programme,” says Orsolya Baranyai, front-of-house manager at Hamilton Grand. “It’s a different experience, perfect for guests who want to be in town, but still enjoy everything the hotel has to offer. They’re all two-bedroom apartments, so we get lots of golf buddies, people on business and parents helping their kids settle in at the university. It’s great for people looking to stay for a slightly extended period.”

In addition to the considerable home comforts, guests at Hamilton Grand can use the facilities at the Kohler Fitness Centre, including the 20-metre pool. They also have access to a helipad (two miles away), 24-hour butler service and our seven restaurants and bars. We can even arrange a private chef and sommelier.

Hamilton Grand is a stone’s throw from the 18th hole of the Old Course, so all the apartments offer stunning views – either out to West Sands Beach or towards the castle ruins.

SYNONYMOUS WITH ONE of the most iconic holes in golf, the Road Hole Bar has a delicious history, having fed and watered some of the biggest names in the sport. It’s become a place to celebrate, to raise a glass and enjoy the moment – and suddenly it feels more glamorous than ever.

“It feels like a totally di!erent place,” says the bar’s manager, Matthew Wilkie, of the recent refurbishments there. “There’s a whole new atmosphere, and one that really lends itself to evening entertainment.”

With that in mind, every day at 6pm, the Road Hole Bar assumes a spirited new ambience; the lights come down, the bartenders roll up their sleeves and the evening ritual begins. To set the tempo for the next few hours, one of the team performs a theatrical cocktail demonstration. “Some days there’s fire, some days there’s flair,” grins Matthew, “but either way, we’re showcasing some seriously impressive cocktails.”

Take the Smoked Old Fashioned, smoked in situ by burning oak woodchips and infusing Scotch whisky and bitters under a cloche. Or the French Martini, beloved of the team here.

“They always go down a storm,” says Matthew, who taught himself the art of mixology while

managing the bars at Hams Hame and Swilcan Loft. “It involves what we call in bartending the ‘throwing technique’, which sees the liquid literally thrown between two shakers. It’s a really tricky skill to master.”

Everybody is welcome, of course, and the same goes for Friday evenings, when we invite a jazz pianist to perform on the Road Hole Bar’s baby grand. That piano has been with the hotel for more than 25 years and was Frenchpolished back to its original rosewood glory as part of the refurbishments. “The space is now perfect for some laid-back jazz,” says Matthew.

“We’re booking a mix of local musicians and a few bigger names.”

Music-wise, there’s something for everyone: expect a heady mix of nostalgic standards and contemporary reworkings. Singing along is optional, but very much encouraged!

It’s the perfect way to ease into the weekend, surrounded by golfers celebrating a round to remember, couples relaxing by the fire and old friends drinking to good health. And let’s not forget the enormous views of the Old Course and beyond. Our pianists are booked to play until midnight, but, given the Road Hole Bar’s relaxed approach to last orders, there could always be a bit of wiggle room.

SCOTTISH DEER CENTRE Encountering the monarch of the glens in its natural habitat is a highlight of any visit to Scotland – but at this wildlife park 13 miles west of St Andrews, red deer are only part of the animal magic. Reindeer, elk and wapiti are among the other members of the Cervidae family to call the 55-acre centre home, and they’re joined by brown bears, lynx, otters, Scottish wildcats and the only pack of wolves in Fife. You’ll find Nemo, Dory and a host of their pals at this family-owned aquarium on the cli!s above St Andrews Bay. Star billing among the 120 species on display goes to sharks and rays found in British waters, adorable Humboldt penguins, dazzling tropical fish, dwarf caimans, piranhas and snapping turtles. Green iguanas, bird-eating tarantulas, pythons and meerkats are less aquatic, but no less intriguing. CRAIGTOUN COUNTRY PARK

A slice of rural Scotland just outside St Andrews, Craigtoun Country Park is ideal for active families, with an adventure playground, trim trail obstacle courses, trampolines and a 30ft zip wire. The Fairy Glen has been enchanting families for decades, and tranquil parkland and picturesque ponds make this prime strolling territory.

Wardlaw Museum Established in 1413, the University of St Andrews is the oldest in Scotland, with a roll call of distinguished alumni that includes the Prince and Princess of Wales. suppliers right here on our doorstep in Fife,” says Craig. “It was a real pleasure to introduce Alex and Rachel to places like Blacketyside Farm, where we source incredible strawberries, raspberries and blackberries, and our fish merchant in St Monans, where the catch comes straight o! the boat. The quality of the ingredients here really sets the tone for what we do.”

First to take the stage in the Road Hole Restaurant is Alex Dilling, the chef behind the two-Michelin-starred restaurant at the Hotel Café Royal in London. The American-born chef trained under some of the world’s most

respected culinary figures – including Alain Ducasse – and his passion for haute cuisine, combined with a modern sensibility, has earned him widespread acclaim.

Known for his precise, elegant take on French dishes, Alex was inspired by the relaxed luxury of the Old Course Hotel’s setting – and by the active, golf-loving guests who dine with us. “I wanted to create something that suits the space and the people,” he says. “Refined comfort food felt like the right fit – elevated dishes that are elegant, but also generous and satisfying.”

While Alex’s menu will include signature French techniques such as salmon rillettes made

with smoked and fresh salmon, paired with caviar, Rachel Allen’s o!erings will draw on the heritage cooking she learnt from Myrtle Allen, her husband’s grandmother and the founder of Ireland’s iconic Ballymaloe House.

Rachel is one of Ireland’s best-loved culinary personalities, renowned for her warm approach to cooking and entertaining. She has 16 cookbooks to her name, teaches at Ballymaloe Cookery School and has introduced Irish home cooking to TV audiences worldwide.

Her dishes blend comfort, tradition and seasonal freshness, reflecting the best of Irish food culture.

20 “A lot of Irish country-house cooking is quite French in style,” Rachel says. “Back in the day, everyone trained in France, and that influence has stayed with us. For this menu, we’re going back to the classics I learnt from Myrtle when I was just 18 – simple, elegant food that lets the ingredients sing.”

Among the standout dishes from these exclusive menus, according to Chef Craig, are Rachel’s classic Ballymaloe bacon chop with colcannon and Irish whiskey sauce, and Alex’s take on Balmoral chicken – prepared in traditional Scottish fashion with haggis under the skin, wrapped in bacon and carved tableside, accompanied by a whisky jus.

Following each dinner, a selection of the chefs’ signature dishes will be featured on the Road Hole Restaurant’s menu for the rest of the month – giving more guests the chance to experience these special collaborations.

“Events like this bring such great energy into the kitchen,” says Craig. “It’s a chance to learn, share ideas and o!er something really memorable to our guests.”

FOR SERVICES to ST ANDREWS AS CEO OF THE ROYAL AND ANCIENT, PETER DAWSON CBE WAS ONE OF GOLF ADMINISTRATIONíS MOST INFLUENTIAL FIGURES. HERE HE EXPLAINS WHAT MAKES THE OLD COURSE  AND THE AULD GREY TOON  SO SPECIAL

WHEN PETER DAWSON first visited St Andrews in the late 1970s, he stayed at the Old Course Hotel. “I wasn’t working in golf in those days, but a friend and I came up to play the Old Course,” recalls the Scotsman, who was living in England at the time, working for Grove Worldwide, a Pennsylvania-based manufacturer of cranes and construction equipment. “Well, the hotel was much smaller than it is today, but I did have a room overlooking the fairway of the 17th. I remember visualising how I was going to play that famous hole and, funnily enough, it actually came o!. We were just incredibly captivated by the place.”

Little did he know, but Peter’s world would come to revolve around the Old Course. In 1999, after 30 years in business, he became secretary of the Royal and Ancient Golf Club.

He served in the role for 16 years and, as CEO of the R&A, presided over one of the most important eras in the club’s history. His accomplishments include spearheading golf ’s return to the Olympic Games, overseeing the 250th anniversary celebrations of the Club, the rewriting of the Rules of Golf, the commercial growth of the Open Championship and welcoming lady members into the R&A. In 2020, he received a CBE for his services to golf.

Still, despite having played the Old Course more times than, well, almost anyone we know – which is what happens when your office overlooks the 1st tee – he reckons that his first round was probably his best.

“I think that was partly because I didn’t realise where all of the hazards were,” he admits.

“Then again, that was back in the days of

persimmon drivers, so in a way, it was a much harder game.”

Indeed, much has changed in St Andrews since then. “Over the years, the Old Course Hotel has really become part of the fabric of the town, and it now plays a fabulous host to St Andreans and visitors from around the world,” says Peter, who has been a hotel board member since 1999. “The town is busier and more vibrant, too. The university is one of

the best in the world, and you can still feel it getting better and better. The sheer number of overseas students gives St Andrews a really cosmopolitan feel.”

Now that he’s embracing retirement, Peter says he’s starting to really appreciate the town’s history: “I’ve been living in St Andrews for 26 years, and it’s only recently that I’ve had time to properly explore the castle and the cathedral, the grave of Tom Morris and some of the lovely little wynds in the centre of town – it’s an incredible place to be a part of.”

Still, in his mind, what brought him to St Andrews in the first place remains its biggest draw. “It’s holy ground for golfers,” he says reverentially. “People have been playing golf here for over 600 years, and the atmosphere is better than ever. Events such as the Open Championship and the Alfred Dunhill Links Championship are particularly special.”

And as Peter will attest, two rounds on the Old Course are never remotely similar. “Even the slightest change in wind direction or wind strength makes it an entirely di!erent sort of course,” he says. “If you ask me, it’s better in the cooler months, as it’s not quite as busy. Even after a wet spell, the course is in great shape, and you never come home with muddy shoes.

“If anyone asks what’s my favourite course in the world, the Old Course is always up there.

It should be on every golfer’s bucket list.”

As a rule, throughout the Old Course, if you play it left off the tee, youíll be safe. But if you take the ì Tiger lineî down the right, youíll have a better chance of making birdies. And, at all costs, stay out of the bunkers. My predecessor, Sir Michael Bonallack, used to call them ì places of penanceî . You can be in there for a long time if youíre not careful.

In 2024, Kohler Co. hosted the Global Wellness Summit at the Old Course Hotel. It was a huge success and I think it really put us on the map as a serious wellness brand. We also learnt a thing or two while we were there. But even before that, we’d been doing a lot of research into what other wellness resorts around the world are doing and what’s trending, and we’d noticed a bigger focus on “health span” – living better for longer – as opposed to just lifespan. I think this struck a chord.

How is Kohler, Wisconsin tapping into that?

To be honest, Kohler is already pretty established in this space. Golf has long been associated with wellness, longevity, mindfulness, getting into the outdoors and slowing down.

Our Forbes five-star-rated spa in Wisconsin has just undergone a major renovation and we

feel there’s still room for growth there. We’ve brought internationally renowned instructors to teach at our state-of-the-art yoga studio, which, again, we plan to expand next year.

We’re building dedicated pickleball courts at the Sports Core Health & Racquet Club, and all the while we’re constantly looking to open up new wellness opportunities. It suddenly feels like the sky’s the limit. We could have everything that a major metropolitan city has here in the village.

And, as is always the case with Kohler, the community aspect is very important to us. We’re o!ering teacher training at our yoga studios and we’ve recently started bringing our mindfulness practice, meditation and breathwork classes to schools in six districts across the state of Wisconsin. Whatever we do, we’re always trying to inspire the next generation.

Why do you think this is happening now?

I think it’s all part of this broader movement.

We’re seeing people really changing their daily habits. They’re more aware, they want to take care of themselves and they want to incorporate wellness in all aspects of their life.

There’s a new demographic of wellness traveller seeking places where they can go and have

these amazing restorative experiences, spend time with their family, spouse or loved ones, then come away feeling rejuvenated and rebooted. We hope that when they go home, they can continue putting some of those things into practice.

Is ì active wellbeingî here to stay?

We’re seeing a lot of younger people jumping on the trend. They come here hoping to feel calm and grounded and supported, and that’s exactly what happens. We’re expecting to see the wellness travel trend continue to move the needle, and in doing so make it easier for people to live better and healthier lives, no matter what age they are. I think it goes back to Kohler Co.’s mission statement: to help people live gracious, healthy, sustainable lives. That goes for our associates, our guests and the people we interact with every day. It’s incredibly important.

GREEN SHORES AT THE University of St Andrews is the longest-running coastal habitat restoration project in Scotland – for more than 25 years, it has focused on the research and regeneration of the region’s saltmarshes.

“Saltmarshes are a treasure trove of rich and unique wildlife,” says Dr Clare Maynard, a saltmarsh specialist who devised the initiative following her PhD at the University of St Andrews. “From ospreys diving into the waters at high tide to colourful salt-tolerant flora clinging to the margins, wildlife abounds in the natural heritage of Scotland’s low-lying muddy shores.”

Saltmarshes provide a wealth of important functions, she points out – they play a leading role in combating climate change, storing 40 times more carbon than an equivalent area of temperate woodland. And, along with sand dunes, saltmarshes protect more than £13 billion of Scottish land assets (buildings and infrastructure) from coastal flooding and erosion.

The Green Shores team propagates plants, conducts research and monitoring, and installs storm fencing to protect newly planted marshes during their early stages. The success of the initiative, which remains unique to Scotland, has garnered significant recognition: Green Shores played a key role in Royal Dornoch Golf Club’s work in tackling coastal erosion, which in 2024 won the Sustainable Project of the Year prize at the Golf Environment Awards.

“The project also o!ers welcome opportunities to engage with coastal communities,” says Maynard. “Whether young people learning new skills, military personnel lending team strength, students seeking conservation opportunities or chief executives taking a break from the office, we find that muddy work and a worthy cause can unite people to do ever more to support coastal habitats.”

managed by NatureScot. Established in 2021, this pioneering fund has invested more than £65 million in projects across Scotland, helping to put indigenous species, woodlands, rivers and seas on the path to recovery.

Another scheme initiated by the university, again in association with NatureScot, went by the informative, if slightly unromantic, name Restoring the St Andrews Coastal Habitat Network. A concerted e!ort involving multiple landowners, students and volunteers, it has resulted in the restoration of 27 sites along a 10mile stretch of the coastline around St Andrews, from Guardbridge to Kingsbarns, improving the quality of the habitats and creating “nature networks” between villages. Interventions have included cattle grazing, woodland, scrub and hedge planting, wetland and meadow creation, and dune restoration. The improved habitats now support pollinators, amphibians, small mammals, birds and overall biodiversity.

“The project shows that with the right support, we can achieve great things for nature in a relatively short space of time,” says Dr Katherine Leys, NatureScot’s head of biodiversity and geodiversity. “In only 15 months, the team has created and enhanced woodland, meadow, wetland and saltmarsh habitats, providing biodiversity benefits for wildlife as well as natural flood management. We’re proud to be able to support this kind of positive action through the Nature Restoration Fund.”

Still, when it comes to protecting habitats, the goalposts seem always to be moving. “It’s as long as a bit of string, isn’t it?” says Alistair Macleod, project manager at Transition St Andrews, a non-profit organisation that aims to create a more sustainable community and has been heavily involved in both initiatives.

“Next, we’ll be looking at East Neuk, which is really denuded of trees,” Macleod says. “The region has approximately seven per cent tree cover, which is as low as anywhere in Scotland, so that is worrying. At the same time, there are huge opportunities to work with local landowners who have the vision to integrate nature into their services.”

These initiatives make up a “tapestry of naturebased projects” known as the St Andrews Forest, which is a core part of the university’s vision to be net-zero by 2035 – a vision that continues to inspire us here at the Old Course Hotel.

Wake up to a Scottish breakfast before tucking into Christmas dinner with all the trimmings.

31st DECEMBER Hogmanay Ring in the new year and bid farewell to the old with a magical Hogmanay Feast at the Old Course Hotel. After dinner, head to Swilcan Loft, where a DJ will be playing until midnight. Then itís over to the St Andrews Piper, whose rendition of Auld Lang Syne will be the perfect soundtrack to the fire works over West Sands Beach.

ì She brought back from France the custom of having her golf clubs carried by military cadetsî Queen of Scotland at six days old, married at 15, queen of France at 16 and a widow at 17 – the most flamboyant female member of the Stuart dynasty lived a turbulent existence long before her incarceration and eventual execution by the English. To get away from the political intrigue that shaped her life, Mary, Queen of Scots took to the golf course: she had learnt the sport as a child in France, growing up alongside her princely future husband.

Thought to be one of the first women to play golf, Mary had a pivotal role in its development – St Andrews Links was commissioned during her reign over Scotland (1542-1567). She also brought back from France the custom of having her golf clubs carried by military cadets, giving rise to the modern-day “caddie”. Mary’s love of golf appears to have exceeded her love for her second husband, Lord Darnley: she caused a scandal in 1567 when she was rumoured to have played a round just a few days after his murder, then compounded this by marrying the main suspect a few months later. Forced to abdicate and imprisoned by her former subjects, she escaped and sought sanctuary in England, where a very di!erent kind of stroke awaited her – that of an axe.
