Southwest Chicken Salad 5 servings

Base: 1 rotisserie chicken, shredded ¾ cup frozen corn 1 cup canned black beans, rinsed and drained 1 red bell pepper, finely diced ¼ cup red onion, finely diced ¼ cup fresh cilantro, chopped Juice of 1 lime 5 whole grain tortillas (if making meal into a wrap) Dressing: 1 cup plain non-fat Greek yogurt 4 Tbsp light Mayonnaise ½ packet of taco seasoning mix
DIRECTIONS 1.In a large bowl, combine the chicken, corn, black beans, red bell pepper, taco seasoning mix, and lime juice. In a small bowl combine the Greek yogurt and mayonnaise. Add the Greek yogurt-mayonnaise mix to the large bowl and combine. Give everything a good stir until it's all well mixed and coated. 2.If you’ve got the time, pop it in the fridge for 15 minutes or so – it helps the flavors come together nicely. Totally optional, but worth it. 3.Serve it up however you like! You can make it into a wrap, eat it with tortilla chips as a dip, or eat it as a salad. Per serving (not including tortillas): 375 calories, 32g protein, 24g carbohydrates, 14g fat, 10g fiber
