From Our Desks To You: Dear Members, As it turns out, I wrote to you about my leave from the position of UClub President a bit prematurely. In fact, I will be staying on as your President for another two years, in the hope that this time around most of my tenure will be pandemic free! In all honesty, I was both honored and a bit apprehensive when the board suggested that I continue in this role. Persuasive arguments were made, however, and I am honored to be given the opportunity to experience what it will be like to serve as Club President when the Club is actually open and fully operational! (My previous tenure was overshadowed by the pandemic, the months-long mandated closure, and limited service due to Covid restrictions). While we are not completely out of the woods yet – Covid is sadly still with us – we certainly are firing on all cylinders again here at the Club, and the tasks and
Dear Members, I love our beautiful Club all year around, but if I’m being honest, winter has to be my absolute favorite time of the year here. If you have never seen the inside of our Club all decked out for the holidays, then you are in for a real treat! I am particularly pleased this year as the gorgeous holiday décor will be the picture-perfect backdrop for all of the incredible events and activities we have for you. Please do RSVP soon for our holiday lineup. Space is limited. A reminder to use promo code UCLUB15 for discounted tickets to the Ensemble Theatre Company’s holiday production of The Wickhams: Christmas at Pemberley. A special thank you also to Opera Santa Barbara and The Santa Barbara Symphony for similar offers before. If you missed any of these, be sure to keep reading your emails as we do have more promo collaborations planned. (Take a look at page 22, and online, for the exclusive behind the scenes event with the ETC at the UClub as well! Space is limited so reserve soon!) Another shout out to our indefatigable Activities Committee co-Chairs, Anne Luther and Cynthia McClelland, who 8 THE 1919 MAGAZINE | WINTER 2021-2022
responsibilities now coming my way as Club President are indeed vastly different and significantly more pleasant. Like you, I am thrilled to see our Club so vibrant and alive with activity – people connecting, celebrating, and so much growth, learning, and sharing. From special member meals and events to exclusive lectures, promotions, field trips, social club meetings, classes, and more, our Club calendar is truly starting to reflect our vision of member-centricity. Together, we weathered the most ‘unprecedented’ and ‘challenging’ times in our Club’s history. I could not be more honored for the opportunity to serve you now in these much more uplifting and invigorating times instead!

continue to spearhead so many top-tier opportunities for our members and your guests. Special thank you also to Leslie Thomas and Donna Will for all your hard work turning our new Adult Beverage Club (ABC) into such a vibrant and exciting part of our Club social scene. I can’t wait to attend all the fun activities ABC Club has planned! You can find a listing of all of our winter activities and offerings on pages 21-23. Thank you also to all of our members who are stepping up to take point on so many of our social clubs, activities, and more. We are thrilled to see the UClub becoming a truly member-driven and member-focused club! Please, if you have any interests or more suggestions for us on things you would like to see here, do not hesitate to let us know. Finally, I would like to thank you all for the incredible birthday surprise party and generous gift you pulled off for me. What a wonderful gesture! I am truly touched and appreciate all of you as always.

Important Member Update *Copy of 11/29 Letter to Membership Regarding Dues Increase:
Dear Members, I am writing to let you know that all UClub membership monthly dues, across all memberships, will increase by $10, effective on December 1, 2021 for all new incoming members, and deferred to February 1, 2022 for all current members. As you all know, annual increases in club dues are part of private member club life, necessary to ensure that we keep up with ever increasing costs of goods, labor, and more; and necessary in order to continue to maintain our Club standards while also continuing to build our future as a truly member-focused club. This past year we have seen a particularly steep rise in costs – an average of 18% in fact, with some of our staples going up as much as 35%. This is quite honestly an unprecedented increase in the costs of goods and services and this dues increase is higher than usual as a result as well. This past year we made the very welcome shift from being predominantly a wedding and private event space to being a fully member-driven and member-focused club. This involved moving away from prioritizing private events to increasing our hours and offerings for members, as well as increasing our membership. Along with announcing this new direction at the Annual Meeting in 2020, we also let members know to expect periodic dues increases over the next several years. While this is a departure from our private-event focused days, it certainly is not at all outside of the norm for private member clubs. If you have any questions about this dues increase or any of our Club offerings, please do join us on January 5th at 5pm for a UClub“Town Hall Meeting”. As always, we thank you for your being valued members of the University Club of Santa Barbara and are excited to continue to serve you and to offer you ever more member opportunities, exclusive activities and promotions, social clubs, holiday meals, music, partnerships with local institutions, connections, celebrations, and more.
Lacy Taylor UClub President

The name of the Club you wish to visit, and the country/state/city it is in. 2. The exact dates you wish to visit. (If you plan to visit sometime within a range of dates but do not know exactly when, give us the entire range. You will then be able to visit the Reciprocal Club any time within that range.) 3. Your full name and the names of anyone traveling with you (spouse, partner, children, etc.) 4. Your email address and phone number for the Reciprocal Club to use.
* UClub members are responsible for contacting Reciprocal Clubs themselves to make any and all reservations and/or to procure accommodations. * UClub members must settle any and all bills before leaving the Club they are visiting. The UClub is not responsible for any outstanding member bills with Reciprocal Clubs. * Each of our Reciprocal Club partners has their own rules, regulations, pricing, and amenities for visiting reciprocal members. COOKING WITH CHEF DAVID
Coq Au Vin
UClub Chef David Rosner
INGREDIENTS: 4 cups red wine 1 yellow onion thinly sliced 1 bouquet garni (12 sprigs thyme, 5 sprigs parsley, and 3 bay leaves tied together with kitchen twine) 2 tbsp. olive oil 10 oz. peeled pearl onions
12 oz. white button mushrooms, quartered 10 oz. bacon, cut into 1/2” pieces 3 tbsp. unsalted butter 1 (3-4-lb.) chicken, cut into 8 pieces 1 cup chicken stock salt and ground black pepper, to taste
DIRECTIONS: 1. Combine wine, chicken, yellow onion, and bouquet garni in a bowl; cover with plastic wrap, and let marinate in the refrigerator at least 4 hours or overnight. Drain chicken, onions, and bouquet garni, reserving wine, and set aside. Dry chicken thoroughly with paper towels. 2. Heat oil in a 6-qt. Dutch oven over medium-high heat. Add pearl onions, and cook, stirring often, until lightly browned and tender, about 8 minutes. Using a slotted spoon, transfer to a bowl and set aside. Add mushrooms to pot, and cook, stirring, until they release all their moisture and brown lightly, about 8 minutes. Transfer to bowl with pearl onions; set aside. Add bacon to pot, and cook, stirring, until it renders its fat and is crisp, about 10 minutes. Using a slotted spoon, transfer to paper towels to drain; set aside. Add 1 tbsp. butter to pot, and then season chicken with salt and pepper, and add to pot; cook, turning once, until browned on both sides, about 10 minutes. Transfer to a plate, and set aside. Add drained yellow onions to pot, and cook, stirring, until soft, about 10 minutes. Stir in reserved wine and stock, and then return chicken to pot along with bouquet garni; bring to a boil. Reduce heat to medium-low, and cook, covered and stirring occasionally, until chicken is tender, about 15 minutes. 3. Remove from heat, and stir in pearl onions and mushrooms. Divide among serving bowls, and garnish with rendered bacon.
