THE 1919 MAGAZINE | SUMMER 2022 5

From Our Desks To You: Dear Members, Summer at the Club has always been one of my favorite times of the year. This year, however, is unlike any other I’ve seen here to date. What an incredible lineup of events and activities awaits us! There truly is something for everyone on the calendar these coming months. I am so impressed with Sarah, her team, and all of you – my fellow members – who have been working so hard to bring our Club to life these past few years. On that note, a special thank you to Anne Luther and Cynthia McClelland. As we transitioned to our new member-focused and member-driven club model coming out of the pandemic, Anne and Cynthia graciously stepped up to help lead and shape the way forward. Their direction and guidance, as well as their tireless work in finding the right speakers and more, has been instrumental in laying down the solid foundations for Sarah and her team to continue to move forward with. Thank you, ladies, for your time, resources, and hard work, and the service you provided. Thank you also to all of you who are stepping up now to lead our many social clubs within the club and societies: Cynthia McClelland heading up Mah Jongg Club, Joe Allen leading Chess Club, Helene Glassman running Photography Club, Frank Peters guiding Book Club, Donna Will and Leslie Thomas making

the magic happen with our Wine & Spirits Society, Judy Sturgeon starting up Bridge Club, Pam Johnston kicking off French Club, and Bruce Stark, Erin Graffy, George Konstantinow, and Kostis Protopapas who have teamed up to bring us the new UClub Performing Arts Society. Thank you for your efforts, for brining your fellow members together over shared interests, and for helping to make our Club so vibrant and connected. I am so proud to be a member of the UClub during these exciting times. I am also so proud of Sarah and her team for working so hard on our behalf. Their willingness to take this Club in the directions that we, the members, ask for is unparalleled. They are continually looking to make ever more improvements and I know they are always grateful for our input and feedback. I hope you will all join me this summer at our beloved Club for one of the many exciting opportunities on the calendar, or for a rejuvenating drink or meal with friends and family. There is no place I would rather be this summer. See you here!

Lacy Taylor UClub President

Dear Members, In the words of F. Scott Fitzgerald’s Nick Carraway, “And so with the sunshine and the great bursts of leaves growing on the trees, just as things grow in fast movies, I had that familiar conviction that life was beginning over again with the summer.” Indeed, summer is upon us and with it our enviable and luxurious Santa Barbara summer days and perfect sunsetkissed evenings. This summer’s calendar here at the UClub is also full of excitement and possibility. From Distinguished Speakers to classes and workshops, social member activities, private tours, promotions for local performances, member events, 6 THE 1919 MAGAZINE | SUMMER 2022

special meals and gatherings, and more, the UClub is the place to be this summer. There are truly too many to list, but a few of my favorite summer highlights to look forward to include Chef’s Bastille Day French menu, the return of the junior dancers for our beloved Fiesta! Celebration this year, Diane Raab’s writing workshop, the private tours of the Mission Archive Library and the Fine Arts Conservation Laboratory, Takako Wakita’s presentation of her private Kimono collection, and the kickoff event for our new Performing Arts Society. Be sure to take a look at the full lineup in this magazine and online. It also warms my heart to see so many of you engaged and involved in making the UClub your club. Our list of

member-led and member-driven clubs and societies continues to grow, with the addition this quarter of Bridge Club, French Club, and the UClub Performing Arts Society (see pages 14-19 for their offerings). Mah Jongg, Chess, Photography, Book Club, and the Wine & Spirits Society continue to grow and bring together more members. Many of you have also helped connect us to wonderful speakers and made many of the private tours and promotions for UClub members possible. To all of you for truly living the UClub spirit of connecting, celebrating, and growing together – a heartfelt thank you. Thank you also to everyone who completed the Food & Service Survey. An email was sent outlining the findings and out next steps, so I won’t go into detail here. Rather, I would like to thank you all for helping us to do our best for you and your guests always. As noted, you will notice some

changes to our food and service over the next few months. Please do continue to keep us accountable and please do not hesitate to let us know straight away if anything is amiss or needs improvement. This is YOUR Club, and your place to feel at home. I am very excited to share this wonderful summer ahead with all of you. As American poet William Carlos Williams so aptly wrote, “In summer, the song sings itself.” Together, our song continues to write itself and grow.

MEMBER REMINDERS & ANNOUNCEMENTS: Walk-Ins For Regular Lunch & Dinner Service

Several members have been asking about walk-ins for lunch and dinner. While we do strongly encourage reservations (help us better serve you and your guests by letting us know to expect you!), walk-ins are also ok for regular meals! *RSVPs are, however, always needed for special meals and events. Be sure to check the online members’ calendar to ensure there is not a special meal on the date you want to come in. You cannot walk-in when there is a 1st Thursday Wine Dinner or sold-out themed dinner, for example. There are no walk-ins for special events and meals requiring reservations.

Don’t Forget - You May Bring Guests!

We keep getting asked, “May I bring a guest to this?” The answer is YES! UClub members have guest privileges and may invite guests to join them for meals and member functions (including most member events, activities, lectures, demos, and member social clubs and societies). The number of guests each member may bring varies depending on the parameters of each event or activity. • Non-member guests must be invited and accompanied by a member at all times to dine or attend member functions at the Club. Members must register themselves and their guests for meals, events, and activities ahead of time. • For regular meals - you are welcome to add your guests to your member account for payment, or you can have each guest pay for themselves at the conclusion of your meal. Our servers can ring them up with cash or credit card. • For member events and activities - your guests will be added to your account for billing.

Cancellation Policies

A reminder that we do have a 72-hour cancellation policy. For special events and meals, including but not limited to Wine Dinners, Club events, activities, socials, single-seating meals, and more, cancellations can be made up to 72 hours before the event only. Cancellations less than 72 hours before will be charged in full for you and all guests. A reminder also that changes to reservations after reservation deadlines have passed must be emailed to memberservices@uclubsb.org. Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

Lunch or Dinner After Events - Not Included

Unless explicitly stated, lunch or dinner after an event or activity at the Club is not usually included with your event/ activity reservation. If you plan to stay for lunch or dinner after an event/activity, you will need to make a separate lunch/dinner reservation. We do, however, often have communal tables set up for those who attended an event or activity and wish to dine together afterward. If you would like a lunch or dinner reservation after an event or activity and would like to sit at a communal table with others who attended, please indicate this in your reservation or let Member Services know.

Meet Our Executive Chef: UClub Executive Chef David Rosner’s culinary path started in classic fashion, directly after high school with an apprenticeship under the world-renowned Chef Daniel Boulud. “Growing up in Long Island I had a vision of the career path I wanted for myself and knew I had to be in Manhattan,” says Chef Rosner. “I clearly remember buying the Wine Spectator issue featuring the ‘Top 20 Restaurants in NYC’ as a teenager and thinking this is it, my starting point– at Boulud’s 4-star Restaurant Daniel!” David also believed in the value of classic culinary schooling, so he enrolled in the world-famous Culinary Institute of America – Hyde Park, graduating with a degree in Culinary Arts. After graduating, he was invited back to Restaurant Daniel to work full time on the line. It was there he learned about food integrity, developed an eye for detail, and learned organization both inside and out of a kitchen. “Everyone called me the Kid, but I was very fortunate to land in such a professional environment. Opportunities like this – working for an incredible chef in an amazing kitchen— can greatly contribute to a young person’s development. For me the confidence that I gained is what led me to believe I, too, could one day become a great Chef.” David later joined the crew at Balthazar located in SoHo, Manhattan. He quickly moved up the ranks and was asked to become part of the management team as Sous Chef at their newly-opened restaurant, Pastis. His first experience being a part of an opening team was “like winning an award and becoming sous chef at the same time” explains Rosner. After 3 years at Pastis, David took a break to explore the culinary traditions of Europe, on a culinary internship to Paris and the South of France. Traveling in Europe also allowed him to work in storied kitchens, learn basic European cultural approaches to food, and witness the day-to-day traditions he has been building upon since his time as an apprentice. Once back in the States, David was ready to helm the kitchen at Balthazar, taking over as Chef de Cuisine upon his return. David’s next journey would land him in Los Angeles at The Standard hotel as Executive Chef. “It was a new city, entirely new breed of customers and the opportunity to delve into the world of hotel restaurants while simultaneously refining my business acumen,” recalls Chef Rosner. From there he would return to NYC to be part of the opening team at Gordon Ramsey’s London Hotel, which ultimately led to being hand-picked to be the Executive Chef and Director of Operations for Café Luck in Santa Barbara. He later also served as Executive Chef at Wine Cask and Monarch. “My time in Santa Barbara was a dream for any chef. The bounty of the coast region just minutes from the restaurant allows for the most direct sourcing of the highest quality product you can find.” David’s passion for sustainable, organic produce allows him to employ a unique, modern approach with classic techniques to each plate. Today, his time spent in the south of France melds beautifully with the Santa Barbara palette, allowing for a style that is bright and vibrant and speaks of the ingredients provided by the land and sea around him.

Cooking with Chef David: Bouillabaisse INGREDIENTS: For Croutons: 12 to 16 (½-inch-thick) baguette slices 3 tablespoons extra-virgin olive oil 1 garlic clove, halved For Soup: 1 (1- to 1¼ -lb) live lobster 2 large tomatoes, peeled and coarsely chopped 1 large onion, chopped 4 garlic cloves, chopped ½ cup extra-virgin olive oil 1 lb boiling potatoes 1/3 cup finely chopped fennel fronds (sometimes called anise) 1 Turkish or ½ California bay leaf

¼ teaspoon crumbled saffron threads 1½ tablespoons coarse sea salt ½ teaspoon black pepper 9 cups white fish stock (or store-bought) 3 pounds white fish fillets (such as monkfish, turbot, red snapper, striped bass, porgy, grouper, and/or cod), cut into 2-inch pieces ½ pound cockles or small hard-shelled clams, scrubbed ½ pound cultivated mussels, scrubbed and any beards removed ½ pound large shrimp in shells Rouille Pepper

Bouillabaisse is a traditional Provençal fish stew originating in the port city of Marseille. Recipes for bouillabaisse abound, but the Marseille formulation is generally acknowledged as being the most authentic. True bouillabaisse must be made with Mediterranean fish, including the essential racasse, or rockfish. It is said that bouillabaisse was first ‘invented’ by Marseille fishermen who made stew using the bony rockfish they were unable to sell to restaurants or markets. Spiny lobsters and crabs are used in bouillabaisse, as are mussels in the Parisian version of the dish. All the ingredients must be quickly boiled together. Rouille, a paste of garlic, red pepper, bread crumbs, and fish stock, is added at the table as a condiment to heighten the flavor.

12 THE 1919 MAGAZINE | SUMMER 2022

DIRECTIONS:

UClub Chef David Rosner

Make Croutons: Step 1 Put oven rack in middle position and preheat oven to 250°F. Step 2 Arrange bread slices in 1 layer in a shallow baking pan and brush both sides with oil. Bake until crisp, about 30 minutes. Rub 1 side of each toast with a cut side of garlic. Make Soup: Step 3 Plunge lobster headfirst into a 6- to 8-quart pot of boiling water, then cook, covered, 2 minutes from time lobster enters water. Transfer lobster with tongs to a colander and let stand until cool enough to handle. Discard hot water in pot. Put lobster in a shallow baking pan. Twist off claws with knuckles from body, then crack claws with a mallet or rolling pin and separate claws from knuckles. Halve body and tail lengthwise through shell with kitchen shears, then cut crosswise through shell into 2-inch pieces. Reserve lobster juices that accumulate in baking pan. Step 4 Cook tomatoes, onion, and garlic in oil in cleaned 6- to 8-quart pot over moderate heat, stirring occasionally, until onion is softened, 5 to 7 minutes. Meanwhile, peel potatoes and cut into ½-inch cubes. Stir potatoes into tomatoes with fennel fronds, bay leaf, saffron, sea salt, and pepper. Add stock and bring to a boil, then reduce heat and simmer, covered, until potatoes are almost tender, 8 to 10 minutes. Step 5 Add thicker pieces of fish and cockles to soup and simmer, covered, 2 minutes. Stir in mussels, shrimp, lobster, including juices, and remaining fish and simmer, covered, until they are just cooked through and mussels open wide, about 5 minutes. Step 6 Stir 3 tablespoons broth from soup into rouille until blended. Step 7 Arrange 2 croutons in each of 6 to 8 deep soup bowls. Carefully transfer fish and shellfish from soup to croutons with a slotted spoon, then ladle some broth with vegetables over seafood. Step 8 Top each serving with 1 teaspoon rouille and serve remainder on the side. THE 1919 MAGAZINE | SUMMER 2022 13

IF THESE WALLS COULD TALK: OUR UCLUB STORIES

Remembering our benefactor, Eleanor Van Cott: Born in 1923 in New York, Eleanor Van Cott is remembered by those who knew her as a “charming and gracious presence.” She left an indelible mark on her longtime hometown Santa Barbara. Eleanor’s first job, around the time of World War II, was in the Manhattan Trust Department of Bankers Trust Company (now Deutsche Bank). While in New York, Eleanor worked nearly seven years for Joseph Trachman, a nationally known estate tax attorney. During this time she met her future husband Walter Van Cott. After a brief time in San Antonio, Texas, Eleanor and Walter moved to Santa Barbara. Eleanor continued her work in law firms beginning with Schramm, Raddue & Seed until 1977and later with Seed, MacKall & Cole. Eleanor also served as the Executive Vice President and as a Board member of the Alice Tweed Tuohy Foundation for over three decades, helping to provide grants to nonprofit organizations in Santa Barbara County serving young people, educational institutions, selected healthcare and medical organizations, and community projects. On top of the demands and achievements of her career, Eleanor found time to contribute much to the town of Santa Barbara. She founded and served as the first President of the Santa Barbara Associates – a networking group of women in top-level professional or entrepreneurial positions. She was also a founder and first President of GALS (Gather at Lunch and Study) and a member of RITA (Research Issues and Take Action). Eleanor was a longtime trustee and former president of the Santa Barbara Historical Museum and served on the Board of the University Club of Santa Barbara. Together with other women from the Santa Barbara Associates, she was instrumental in working to integrate women into the University Club in 1983. She was the recipient of the Woman of the Year Award from the Women’s Economic Ventures organization as well as receiving other awards and tributes. Eleanor Van Cott passed peacefully at her home on April 3, 2022. She will be dearly missed. 20 THE 1919 MAGAZINE | SUMMER 2022

CARMEN JONES

Music by Georges Bizet | Book and Lyrics by Oscar Hammerstein II Oscar Hammerstein adapted the beloved opera into a rarelyperformed African-American Broadway musical. The classic story of the bewitching Carmen is set in the 1940’s in a parachute factory, with all of Bizet’s famous music.

A CHRISTMAS CAROL

By Patrick Barlow Patrick Barlow, writer of the Broadway and West End hit The 39 Steps, has retold Charles Dickens’ holiday classic, A Christmas Carol. This inventively comic adaptation uses only five actors to bring some of Dickens’ most beloved characters to life.

SELLING KABUL By Sylvia Khoury An Off-Broadway hit, this nail-biting story centers on an Afghan man who was an interpreter for the U.S. Army and is now in hiding from the Taliban at his sister’s apartment in Kabul. Tension mounts as he tries to get his wife and infant child out of the country.

THE CHILDREN by Lucy Kirkwood Two retired nuclear physicists, a married couple holed up in a remote cottage on the British coast, are visited by a long-ago colleague who mysteriously arrives as the world outside is dealing with a major climate disaster. In this gripping story, we are asked what one generation owes to the next.

SEARED by Theresa Rebeck A brilliant, hot-headed chef scores a mention in a food magazine with his signature scallops, and his business partner finally sees profits within reach. The only problem, recreating masterpieces for the masses. This hilarious and insightful new play that asks us to consider where art ends and commerce begins.
