LETTER FROM OUR PRESIDENT: Dear Fellow Members, An Outstanding Summer at the Club. What a fantastic summer we had at the University Club! We kicked off June with a truly memorable historical Centennial Celebration. This was followed by the classic annual Father’s Day BBQ. The month ended with our festive family Summer Solstice Party on the patio. In July we celebrated our nation’s freedom with the Independence Day mixer. Later in the month we experienced an exquisite “Fine Art & Wine Tasting” featuring local wines and showcasing local artists. The summer season was culminated with our traditional annual August Fiesta Celebration which was truly Santa Barbara at its best. I invite each of you to view the photos from this past month, including the Book Club and the Empowered Aging lecture series, in the photo spread on pages 12-13 of this month’s newsletter.

Reminder of New Hours for the Bar and Breakfast Service. In July the Club introduced our new bar hours, Tuesday-Friday from 4:30pm-8pm, featuring specially crafted signature cocktails and a delicious bar bites menu prepared by our beloved Chef David Rosner. We are pleased to further upgrade this service with a new ‘Happy Hour & A Half’. Every Tuesday to Friday from 4:30pm-6pm all signature cocktails at the bar will be $2 off. I am pleased to remind members we have now introduced a new expanded breakfast service from Monday-Friday from 7:30am-10:00am. I know our members will appreciate the variety and quality of our food. It is perfect for early morning meetings, catching up with a friend, or just relaxing by the fireplace with a cup of coffee and a newspaper. A truly great way to start your day at the UClub.

I encourage you all to join us on September 5th for our 1st Thursday Wine Tasting from 5:00pm6:00pm, followed by Chef David’s special Lobster Boil Dinner from 6:00pm-8:00pm. Our Oktoberfest Celebration is set for September 20th. I look forward to sampling with you the Chef’s special German-inspired menu. Be sure to RSVP early to reserve a spot as this is one our most popular events and seating is limited. On September 30th, Priya Kapoor will kick off our University Club Members Lecture Series by presenting the timely topic, “Reducing the Stress of the College Decision-Making Process: Helping your child look BEYOND college BEFORE college.” If this may be of help to you or members of your family please take advantage. The Lectures are free for members and $10 for non-members. The lecture will be from 6:30pm-8:30pm. We hope you can attend and encourage you to invite your friends. At the Club there is a wide range of knowledge and experience held by our members. Any member who wants to share their expertise with our community, I wholeheartedly encourage you to contribute to our lecture series. To do so please contact Ammanjah at memberservices@uclubsb.org or 805 966 0853, Ext. 140. Our full September schedule is located on pages 1819. It includes our ongoing Taco Tuesday and the ‘5Star’ experience at our Bistro Dinners each Friday.

Please Come and Enjoy Yourselves. You can see the University Club has and is continuing to provide a full calendar of events for your entertainment. This is your Club. The staff is dedicated to providing you a place to enjoy yourselves, relax, and make new connections and friends. I personally look forward to seeing each one of you and catching up as we prepare for our next 100 years. My warmest regards and best wishes,

Upcoming Events. I know many of you love the changes of season with the coming of fall as I do. For the fall season we have planned a series of events which we know you will enjoy.

MESSAGES FROM OUR GM: Dear Members, What a month we’ve had! From Bar Hours to our new breakfast service, inspiring lectures, members meeting over lunch and dinners, and of course our fabulous Fiesta Celebration, our Club has been buzzing with excitement and great memories in the making. Speaking of memories, take a look at Our Month In Photos on pages 12-13. What a dapper bunch you all are! I can’t wait to see what you all bring to our Lobster Boil (September 5th) and especially Oktoberfest (September 20th)! Who knows – we may even put the best dressed club member(s) on the cover of next month’s magazine! I was also very proud of our staff, who took part in a team-building day playing soccer against other clubs from around town. While we may not have won the tournament, we certainly did show off our UClub spirit and had a great time. Thank you to everyone who cheered our players on as well. I am very excited for our first UClub Member Lecture! Come join fellow member Priya Kapoor as she gives a comprehensive presentation on “Reducing the Stress of the College Decision-Making Process: Helping your child look BEYOND college BEFORE college,” on September 30th from 6:30-8:30pm. These lectures are free for members and $10 for non-members. Even though my own girls are still young, I will be there to learn what I can. I hope to see you all there as well. We would also love to hear from you if you have a topic you’re interested in sharing with us. This is an excellent forum to reach fellow members as well as the general public. The advertising and ticket management is on us!

Also a reminder that the holidays are coming up fast! Believe it or not, we are already taking bookings for December and January. Whether you’re hosting family, friends, your favorite charity, or your company’s holiday or postholiday get-together, the UClub is the perfect venue. Natalie, our on-site Events Coordinator, is standing by to help you plan every detail. Let us help you take the stress out of the holidays with exceptional service and personal attention. Book your event here right away! We are still looking to get more member activities up and running for this fall. If you are interested in any of the following, please let Ammanjah know at memberservices@uclubsb. org, or at 805 966 0853, Ext. 140: Cooking Classes with Chef David Rosner; MahJong Lessons/Club; Bridge Club; Billiards League; Anything else you would like to see happening at the Club. All ideas welcome! A quick note that there will be no Bistro Dinner on Friday, September 6th. Please join us instead for a special, authentic end of summer Lobster Boil on Thursday, September 5th. See page 17 for details. Space is limited so be sure to RSVP soon. Also, we have now added a Happy Hour (and a half!) to our Bar Hours. Join us for $2 off all signature cocktails at the bar, Tuesday-Friday, 4:30-6pm. Bar Hours go until 8pm on those days. Don’t miss the delicious bar bites Chef prepares as well. Wishing everyone a nice end of summer and best regards,

IF THESE WALLS COULD TALK: OUR UCLUB STORIES

By: Robert Monk

As

many of our members are aware, one of the many benefits of our membership is our reciprocity with other clubs around the world. My wife Janet and I have enjoyed staying at the University Club of San Francisco many times, but one of our more memorable stays was at the Oxford and Cambridge Club in London. It is mostly for graduates of those universities and is located on Pall Mall near St. James Palace, within ear-splitting distance of Big Ben. In 2001 we were on a week-long trip to Scotland and wanted to do four days in London at the end of the trip. We were recommended to the Oxford and Cambridge Club by fellow UClub member Christopher Carroll, originally from the UK, who accompanied us on our trip. Upon checking into the Club we were informed that since women were not allowed in the main entrance we would have to enter through a side door to check in. At dinner time we learned that although women were allowed in the dining room on the second level, they were not allowed to use the main staircase to get there. We had to use a side stairway to get up to the dining room. When dinner was over, we went to the bar area, but were told that women were not allowed in the bar either. By this time Janet had had enough. She went into the bar anyway. The fine British gentlemen who were there were aghast and looked at her as if the world was coming to an end. We soon left, but Janet had a big smile on her face. I am informed by an Oxford and Cambridge Club member who often uses his reciprocity to come to our Club here in Santa Barbara that the rules at the Oxford and Cambridge Club have since changed, and women are not only members but are allowed to use all the facilities now. I urge our members to use our reciprocity to visit other clubs.

MEET THE UCLUB TEAM: If you’ve stopped by or called to check on your bill or membership dues, chances are that you have spoken with Lucy Hamlin, our Accounting Assistant extraordinaire. In fact, if you joined the Club any time in the last three years, you will have had the pleasure of interacting with Lucy to set that membership up. Not only does Lucy help with payroll, collections, pay all of our bills, and deposit our income, but she is also front and center with members, helping you to settle your bills, and even taking minutes for committee and board meetings.

Lucy Hamlin

It’s one of the things Lucy loves about working here: “We all pitch in wherever we can. I’ve even helped move tables around and all sorts of things. We’re a real team.” Her absolute favorite part of the job, however, is interacting with members. So far, her favorite Club events have been the black-tie Centennial Celebration, and the Opera Dinner, where opera was sung between dinner courses. “This club has the best events. So many different fun and creative ideas,” she says. Lucy’s path to the University Club of Santa Barbara has passed through Wall Street, included owning her own boutique, and more. Her first job right out of college was as an Underwriter on Wall Street. While living in Manhattan she dealt in such high-stakes fields as Director’s and Officer’s Liability, Kidnap And Ransom Insurance, Employee Theft and Embezzlement, and more for a host of Fortune 500 companies. Three years ago, when her job at the time in retail came to an end, an advertisement for the accounting department at the University Club of Santa Barbara caught Lucy’s eye. Perhaps, she tells, she noticed the ad more because she had actually just recently been at the Club as someone’s date for a Christmas party! (We like to think of it as a very happy coincidence and are all very glad indeed that she noticed that ad.) When she’s not at work, Lucy loves the outdoors, and especially taking her dog for walks, going for hikes, and watching good movies. She also enjoys spending time with her two grown children – her 18-year-old daughter and 21-year-old son – and her fiancé Brooks (they’ve been together for five years now).

COOKING WITH CHEF DAVID The Legend Of The ¡Crema!

UClub Chef David Rosner

Many people believe that crema catalana – also affectionately known as crema cremada (burnt or torched cream) - is Catalunya’s version of creme brûlée. Catalans, however, correctly argue that creme brûlée is in fact France’s version of crema catalana! Despite which came first, they generally differ in that crema catalana is made with milk versus cream, and often incorporates lemon peel and cinnamon. It is also not made using a bain-marie (a water bath, or baño maría in Spanish), which means it is arguably much easier to make than its French cousin. Legend has it that a bishop was due to arrive at a convent, and the nuns (or monks at a monastery, depending on the storyteller) were preparing a flan in his honor. Unfortunately, the flan came out too runny and there wasn’t any time to make a new one. A particularly resourceful nun (or monk) decided to try to pour burnt sugar on top to salvage their special guest’s dessert. When they served their creation to the bishop, however, the sugar on top was still hot. As the unsuspecting clergyman took a scorching hot bite, he apparently yelped ‘¡Crema!’ (¡quema! in Catalan, meaning ‘it burns!’). This is where the name ‘crema cremada’ came from. The French then translated it into ‘crême brûlée’ in the nineteenth century. In Spain, this delicious dish is also often referred to as Crema de Sant Josep. It was traditionally served on March 19th for Saint Joseph’s Day, although nowadays it is enjoyed year-round.

CREMA CATALANA Serves 6

INGREDIENTS: 500 ml whole organic milk 1/2 a lemon 1 cinnamon stick 7 large free-range egg yolks 95 g sugar, plus extra to serve 1 tsp corn starch

DIRECTIONS: 1. In a saucepan pour the milk, and add lemon zest and cinnamon, then gently bring to boil. Remove from the heat and allow to infuse for around 15 minutes. 2. Whisk the egg yolks with the sugar and corn starch until the mix becomes pale and creamy. 3. Pass the milk through a sieve and remove what’s left. Bring the milk back to the saucepan and place it over a medium heat. 4. Add the egg mixture gently, just before the milk reaches the boiling point, whisking continuously for around 6 to 7 minutes until it begins to thicken. 5. Turn off the heat. 6. Pour the mix into individual ramekins. 7. Once cooled at room temperature place them in the fridge for at least 2 hours. 8. When serving, sprinkle 1 tablespoon of sugar on top of each crema catalana and caramelize by using a blowtorch, or place them under a preheated broiler for less than a minute or until the sugar turns brown, and then serve.

• The first known recipes for crema catalana appear in the Catalan cookbooks Llibre de Sent Soví (14th century) and Llibre del Coch (16th century), three centuries before the French came up with crême brûlée. • The earliest known recorded recipe for crême brûlée appears in François Massialot’s 1691 cookbook Cuisinier royal et bourgeois.

WHY IS ‘OKTOBERFEST’ IN SEPTEMBER? Since announcing the date for our Oktoberfest celebration, a number of you have called in and emailed to ask why ‘Oktoberfest’ will be in September. Excellent question, to which the short answer is, quite simply, scheduling. There is, however, a bit more to it: The official Oktoberfest in Germany actually always starts in September! This year the main Oktoberfest in Munich kicks off at 1:45 AM on Saturday, September 21st. Interestingly, Oktoberfest always starts in September because its final day has a fixed spot on the calendar, always on the first Sunday of October. Unfortunately, unlike Munich, where the festivities go on for 16-18 days, ending on October 6th this year, our more humble UClub Oktoberfest will only last the one evening. Be sure to join us!
