MESSAGES FROM OUR PRESIDENT: Dear Members, Spring is in the air for sure now and May is shaping up to be lots of fun here at the UClub.

I for one am looking forward to Cinco de Mayo and Mother’s Day, as well as Movie Night and the return of Bar Hours! Yay! I am also so appreciative to have my own private oasis to bring family, friends, and guests for lunches and dinners now that more of us are able to get out and about.

I also want to take a moment to thank all of you for your incredible and steadfast support of the Club throughout this past year plus of the pandemic. Without all of you ordering to go meals from the Club early on (we’re still offering to gos by the way), bringing your family and guests to the Club for meals, joining us online for events and lectures, and helping us to create such a warm, inviting space, we would not be here today, welcoming in spring, orange tier, and a slow but steady return to fewer and fewer restrictions together.

A reminder as well that our Social Membership offer is set to expire May 31st (see page 9). If you have any friends, colleagues, family, or acquaintances who would like more information about joining our amazing UClub family, please let Ammanjah know at memberservices@uclubsb.org. offer, as well as comprehensive membership information, to anyone you recommend.

This is YOUR Club, and we would LOVE more members like you to join us!

A reminder also that we are still raising funds for our pizza oven, which we hope to add to our repertoire as soon as the funds are in place. In addition to having piping hot pizzas fresh out of the oven for you and your guests, the pizza oven will also help us scale up our event offerings and generate valuable income for the Club for years to come. Head over to page 9 to see the details and learn more about how you can help make this happen.

Finally, as we look ahead to more normal times, I would like to put out a call for ideas.

If there are activities, events, clubs within the club, etc. that you would like to see here at our Club, please do not hesitate to let Sarah and her team know. Now is the perfect time for us to focus on getting set up for the summer and the year ahead, so do reach out with your wish lists and ideas.

On that note, I hope to see you all here soon at our very own private UClub!

MESSAGES FROM OUR GM: Dear Members, I am so thrilled to be seeing orange! It means we can increase our indoor capacity for meals to 50%, allowing more of you to come in and enjoy Chef’s delicious menus and our special culinary offerings. It also means we are able to start planning for an eventual return to our pre-pandemic Club events and gatherings, hopefully in the not too distant future.

As always, we are doing everything we can to help keep us all safe. As more and more things around us return to some semblance of normalcy, and more and more of us are vaccinated, I have found that there are even some moments where it is almost possible to forget that we actually are still in an ongoing pandemic. Unfortunately, I then need to remind myself that we are not quite there yet. Close, but not yet. I also remind our staff of this every day, and we continue to take all Covid-19 regulations and precautions very seriously. We are committed to helping to keep you safe while you are here. I cannot thank all of you enough for doing the same.

Together you have made, and continue to make, our beloved UClub a truly safe, trusted place to be for all of us.

On that note, I am really excited for our May line-up. As you can see in the calendar,

there really is so much to celebrate. From Cinco de Mayo, to our monthly Wine Maker’s Dinner, Mother’s Day Brunch, the return of bar hours!, Movie Night, and Burgers and Bingo, there is something for everyone, and lots of opportunities to get out and pamper yourselves and your guests.

It has been wonderful as well to see so many of you enjoying springtime at the Club over lunch and Wednesday and Friday night dinners.

I am confident that things will only continue to improve here in California, and our county and city in particular, and here at the Club we will continue to add more and more to our calendar for your enjoyment as things progress.

Stay tuned to our emails for updates, and please do come in and raise a glass or have a bite to eat with us this coming month. This is your Club, and we are here to serve you.

TOGETHER APART With the continuing move back to ever more in-person possibilities, this past month included only two online Zoom gatherings for UClub members - our beloved monthly Book Club meeting, and a special artist’s talk with artist Meg Ricks, whose work adorns the walls in our Flag Room at the Club. Book Club is back at the Club starting in May (see pg. 17).

Thank you to Meg Ricks for the informative evening.

Ms. Ricks will be taking part in the Mesa Artists Studio Tour taking place on November 6-7, 2021 from 11am-4pm.

Mother’s Day Scones INGREDIENTS: 4 cups plus ¼ cup all-purpose flour 1/4 cup sugar, plus extra for sprinkling 2 tablespoons baking powder 2 teaspoons salt 2 teaspoons grated orange zest 3/4 pound (3 sticks) cold unsalted butter, diced 4 extra-large eggs

1 cup heavy cream 1 cup dried cherries 1/4 toasted hazelnuts chopped 1 egg beaten with 2 tablespoons water, for egg wash 1/2 cup plus 2 tablespoons confectioners’ sugar 1 tsp spoon lavender chopped 4 teaspoons freshly squeezed orange juice

DIRECTIONS: Preheat the oven to 400 degrees. Line a sheet pan with parchment paper.

In the bowl of an electric mixer fitted with the paddle attachment, mix 4 cups of flour, ¼ cup of granulated sugar, the baking powder, salt, and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly add to the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries, nuts and ¼ cup of flour, add to the dough, and mix on low speed until blended.

Dump the dough onto a well-floured board and knead it into a ball. Flour your hands and a rolling pin and roll the dough just under 1-inch thick. You should see small bits of butter in the dough. Keep moving the dough on the floured board so it doesn’t stick. Flour a 3-inch round plain or fluted cutter and cut circles of dough. Place the scones on the prepared sheet pan.

Collect the scraps neatly, roll them out, and cut more circles.

Brush the tops of the scones with the egg wash, sprinkle with granulated sugar, and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked. The scones will be firm to the touch. Allow the scones to cool for 15 minutes and then whisk together the confectioners’ sugar and orange juice, lavender and drizzle over the scones.

We loved seeing so many of you and your friends, families, and guests enjoying lunches and dinners at the Club. Our monthly Wine Maker’s Dinner once again sold out quickly and Easter Brunch combined great weather with an exquisite menu and fun for everyone. We rounded out the month with Burgers and Bingo. We can’t wait to see you all again in May!
