Maisha Oliver Muhammad is the founder and chef behind Kabob-It, a concept created to bring the flavors of home into the dining experience. Her journey began in 2015 as a supervisor at Hutchinson Dining Commons on the University of Chicago campus, where she developed a vision of opening her own business rooted in nourishing, healthy food and community connection. Through years of experience in multiple dining and culinary roles, Maisha refined her skills, leadership, and purpose-driven approach to foodservice.
In 2021, she partnered with Chartwells Higher Education to bring Kabob-It to life. Her vision centers on creating a welcoming, family-friendly environment where community members gather to enjoy authentic, healthy cuisine made with care. As Maisha often shares, good food does more than satisfy hunger—it nourishes the body, uplifts the spirit, and brings people together.
Through Kabob-It, she continues to honor her roots while creating a space where fresh flavors and warm connections make every meal feel like home.
