OME Assessore al Turismo della Città di Bolzano accolgo con piacere l’estensione della redazione della rivista BM Bolzano Bozen Magazine ad alcune delle più amate e accoglienti località dei comuni limitrofi. L’altopiano del Renon, San Genesio e Appiano costituiscono un’offerta complementare al turismo cittadino: le passeggiate, i luoghi per rigenerarsi immersi nel verde o in sella ai caratteristici cavalli avelignesi, in bicicletta lungo i frutteti e i laghi dei dintorni, a tavola con le stelle e nei masi gustando le specialità e i pregiati vini altoatesini.

Renon, San Genesio and Appiano are all wonderful complements to what the city has to offer. There are trails and paths for walking, places to find refuge from the daily hustle and bustle, surrounded by greenery, or on the saddle of the Haflinger Horses. Or you could perhaps cycle through the orchards or beside the lakes of the surrounding area, stopping to dine under the stars at one of the many farmsteads, to savour unique South Tyrolean specialities and our fine wines. A celebration of variety, of experiences united through the quality of what is on offer. The tourist cards available make enjoying all this so much easier, providing outstanding value for mobility, as well as allowing entrance to the many wonderful museums and castles in and around Bolzano. In addition to these permanent attractions, there is a calendar bursting with events that share everything good about our extraordinarily special province.

Fruizione dell’arte e speciali taccuini di viaggio: perché proporre ogni anno un percorso nei sentimenti, fatto di tappe inconsuete, a Bolzano? Il successo del progetto culturale, nato per festeggiare San Valentino, alla scoperta del tessuto cittadino, sta non solo nella scelta degli insoliti luoghi, ma anche dei suoi “cantastorie”, guide esperte - storici dell’arte, restauratrici, architette, artisti, giornaliste - e della cornice musicale offerta dal Conservatorio di Bolzano.

La formula, quindi, utilizza forme di rievocazione del passato, l’immaginario presente e la forza dell’immaginazione per il futuro.

Ideatrice e curatrice del progetto de “I luoghi dell’Amore” è Roberta Benatti. La bolzanina condivide la sua “passione per l’arte nelle sue varie forme di espressione con la conoscenza del territorio e con l’attenzione verso le piccole cose: i dettagli di affreschi, pitture, costruzioni che vanno dritti al cuore o che suscitano la fantasia”. L’iniziativa punta insomma su storie di emozioni, sentimenti, affetti, amori, anche drammi, che fanno conoscere lati di Bolzano poco conosciuti attraverso la scoperta di residenze, palazzi, chiostri, vecchie fabbriche o depositi, vicoli e angoli nascosti, normalmente poco accessibili al pubblico, il tutto camminando o percorrendo le strade di Bolzano nel ValentineBusbz, con guide davvero speciali. Per chi ama passeggiare in montagna, ci sono novità: questa primavera verrà inaugurato “AVIA – Il sentiero del legnaiolo”. Si snoda dal centro di S. Genesio alla frazione di Avigna e poi fino a Mezzavia in Val Sarentino. Sono nove le stazioni interattive dedicate all’abbattimento e alla lavorazione del legno – risorsa vitale per la zona–, così come alla preistoria dell’area. A invitare grandi e piccoli escursionisti a intraprendere un emozionante viaggio esplorativo ci sarà presto anche un altro sentiero escursionistico, con partenza presso il maso Tschaufen nel comune di Meltina e arrivo in paese a S. Genesio: un sentiero per famiglie, costellato d’indicazioni, aree gioco, soste per i cavalli avelignesi, punti di osservazione e i magnifici boschi di larici, tipici dell’altipiano.

Südtirol ist ein kulinarischer Hotspot (mit 25 Sternen) und Herbert Hintner eines seiner „Urgesteine“. Seit 1995 ist sein Restaurant „Zur Rose“ in Eppan mit einem Michelin-Stern ausgezeichnet, so lange wie kein anderes Haus der Gegend, das schreibt das österreichische Wein- und Gourmetmagazin Falstaff kürzlich von ihm. Was den Pionier aus dem Gsiesertal auszeichnet? Hintner verwendete saisonale und lokale Zutaten lange bevor „Regionalität“ und „Nachhaltigkeit“ trendig wurden. Er hat sich schon früh an heimische Bauern gewandt und sie angeleitet, hohe Qualität für die Spitzengastronomie zu liefern. Selbst bezeichnet er sich als „Produktfanatiker, der sich selbst treu geblieben ist“. Sein Weg von der Pflege der traditionellen heimischen Küche zum KulinarikSternenhimmel lief von einer Kochlehre im Gadertal über Erfahrungen in der 5-Sterne-Hotel-Küche in Tirol bis zur Kreativküche großer Meister.

Seit 1985 führt er gemeinsam mit seiner Frau Margot Rabensteiner „Zur Rose“. Das Michelin-Jubiläum, flankiert von weiteren Auszeichnungen wie Gault Millau, Gambero Rosso, Espresso, Veronelli, bedeutet dem 62-Jährigen viel, weil der Stern seinem Haus eine internationale Strahlkraft verleiht. Welche Gratwanderung durchgehende Leistung aber mit sich bringt, ist dem Charakterkopf bewusst, ebenso dass sich Trends in der Gourmetküche, Geschmack und Anforderungen rasch verändern. Damit setzt er sich auch als Buchautor auseinander.

370 Rittner Bauernfamilien bewirtschaften seit dem Mittelalter die 1.310 Hektar große Alm. Der Weg erzählt von alten Bräuchen und Weisheiten der „Saltner“-Hirten, die zum Beispiel das Wetter am Verhalten der Tiere vorhersagen konnten.

Aber warum wird das Vieh überhaupt auf die Alm gebracht? Wenn es statt im Stall Trockenfutter zu fressen auf der Alm grast, haben die Bauersleute nicht nur weniger Arbeit, das Vieh kann sich in der Höhe im Freien erholen und sich durch die frischen Almgräser und Kräuter gesünder ernähren, außerdem bleibt die Alm Weideland und wird nicht zum Wald.

BIKE-SHARING Neulich eingeführt als Dienst des städtischen Fahrradverleihs: ein sogenanntes wanderndes Fahrrad.

Ein Rad eben, das an Fahrradstation x geborgt und an Station y zurückgegeben wird. Die Gemeinde Bozen setzt damit klar auf umweltfreundliche Fortbewegung, die sich jeder leisten kann (1 Euro die Stunde) und die rasch ans Ziel bringt. Von der zentralen Bahnhofsallee über die Bozner Messe in Bozen Süd bis hin zum Krankenhaus in der Peripherie – neun Stationen erleichtern die Mobilität im städtischen Raum, die darüber hinaus mit einem verzweigtes Fahrradwegenetz punktet. Three itineraries, a 20 km long scenic trail, that take in five castles and the historical-cultural heritage of Bolzano’s surroundings. The Castelronda Castle Trail connects Bolzano, San Genesio and Terlano, with castles and ruins along the way, as it winds its way across the hilly slopes above the South Tyrolean capital. Ideal for a spring walk, the trail offers views Roncolo Castle (Bolzano’s “illustrated” castle – definitely worth stopping at), Rafenstein Castle, the Greifenstein and Helfenberg ruins, not forgetting Neuhaus Castle (Maultasch). Although you don’t have to walk the full 20 km (approx. 6 1/2 hrs), it’s worth knowing that some stretches are for families with children, while others need sturdy footing and are recommended for trained excursionists.

n Begleitung eines Vogelkundlers zeigt sich Bozen aus ungewohntem Blick: Das Urban Birding feiert Einzug in unseren Städten. Und tatsächlich: Diese behutsame Annäherung an die Vogelwelt gibt ungeheuer viele Details zu Lebensraum und ökologischem Gleichgewicht der Gegend preis. Der Frühling ist nicht nur die Zeit der Bemühungen der männlichen Vögel um eine Partnerin, sondern auch der Rückkehr der Zugvögel wie Schwalbe, Blaukehlchen, Kranich, bzw. des langsamen Verschwindens der Wintergäste wie Kormorane, Enten und Mäusebussarde.

Hochbetrieb am Himmel: Alle Gefiederten rufen und singen, um auf sich aufmerksam zu machen.

Wir treffen den passionierten Ornithologen Erich Gasser in den Morgenstunden mitten im Stadtzentrum am Flussufer der Talfer. Sein Blick und Ohr sind geschärft von wöchentlichen Streifzügen durch Südtirols Kulturlandschaft und Gebirge. Einen Feldstecher trägt er aus Gewohnheit immer mit sich. Bei seinen Beobachtungen und stichprobenartigen Erhebungen des Vogelbestands für das italienweite MITO-Projekt nimmt er auch die Kamera mit.

Mit sieben Jahren hat der heute 69-Jährige seine Liebe zu den Vögeln entdeckt, im Garten seiner Großeltern und in der Begegnung mit einem Vogelpräparator in der Nachbarschaft. Schon als Oberschüler und später als Student hat er in seiner Freizeit Biotope aufgesucht, um Vögel zu beobachten. 1974 hat er gemeinsam mit Gleichgesinnten die Südtiroler Arbeitsgemeinschaft für Vogelkunde und Vogelschutz gegründet, deren aktives Mitglied er bis heute ist. Diese älteste Naturschutzorganisation des Landes kümmert sich um das Wohlergeben der heimischen Vogelwelt. Als Grundschullehrer hat Erich jahrzehntelang Generationen von Kindern für die Natur begeistert.

Vogelkundler Erich Gasser Bozens Vogelwelt Diese Begeisterung gibt er auch heute gern weiter. Trotz Verkehr und geschlossener Siedlung hat die Stadt durch die Umgebung mit Busch- und Mischwald, Weinbergen und Obstwiesen, und durch die Durchquerung von drei Flüssen recht intakte Lebensräume für Vögel bewahrt, weil die Flüsse nicht verbaut oder später renaturiert wurden. Ornithologisch sind die Kiesinseln und Schlickflächen in der Flusslandschaft interessant, besonders für die Durchzügler im Frühjahr. Die Mittelmeermöwe hat sich in der Umgebung der großen Flüsse auf den Flachdächern der Stadt ganzjährig eingerichtet. Sogar die Lachmöwe und der Schwarzmilan sind gelegentlich anzutreffen. Im Bozner Siedlungsraum finden sich an den Gebäuden vor allem Schwalben, Mauersegler, Fahlsegler, Dohlen (nisten am Kirchturm des Bozner Doms) und Bachstelzen. In Gärten und Parkanlagen hingegen allerlei Meisen und Finken, der Italiensperling (Spatz), das Rotkehlchen, Amseln, Kleiber und Sperber.

Eine intakte Biodiversität Vögel und ihre Nahrung, die Insekten, sind die sichtbarsten Indikatoren für eine intakte Biodiversität. Bleiben Insekten weg, nimmt auch die Vogelpopulation ab. Die ökologische Kette ist gestört, das erkennt man besonders eklatant an deren Ende,

bei den Raubvögeln - einem Uhu, Wanderfalken oder Steinadler zum Beispiel. Vögel sind darüber hinaus auch Nützlinge in der Schädlingsbekämpfung. Der Artenvielfalt kann jeder von uns nachhelfen, gerade in der Stadt. Da heißt es Gärten naturnah gestalten: standortgerechte Pflanzenarten setzen, die Vogelbeeren bieten, alte Obstbäume stehen lassen, nicht zu fleißig Laub wegkehren, Nistmöglichkeiten nicht entfernen. Der menschliche Ordnungssinn steht Vögeln im Weg. Die (Vogel)Welt verändert sich Mit unserer Lebensweise und der entsprechenden Veränderung der tierischen Lebensräume, haben sich auch die Vogelarten geändert, die in Bozen

die seit Mitte der 1980er Jahre im Stadtgebiet umherstreifen. Brutnachweise wurden mehrfach erbracht.

Im Winter sind sie allerdings auf die Winterfütterung durch Menschen angewiesen. Eine weitere PapageienPopulation im Alpenraum war vor Jahren in Innsbruck heimisch geworden, doch scheint sie nach einer Krankheit ausgestorben, somit ist die Papageiengruppe in Bozen die einzig verbliebene im Alpenraum und die nördlichste Italiens.

Die Papageienkolonien Bozens In der Bozner Altstadt, rund um Schloss Maretsch, begegnen wir den auffälligen Vögeln mit ihrem knallgrünen Gefieder und auffälligem Krächzen. Sie sind meist in Gruppen unterwegs. Es sind indische Halsbandsittiche (Psittacula, alexandri manillensis), ursprünglich aus einem Käfig entwichen. Ihr Bozner Bestand schwankt um die 30 Tiere,

GERADEZU BETÖREND IST DIE BLÜTE IN BOZEN, auch dank Stadtgärtnerei: Auf 130 Hektar öffentlicher Grünfläche, d.h. längs der zwei historischen Promenaden Guntschna und St. Oswald, in den 52 öffentlichen Gärten und in den 2.500 m2 Blumenbeeten auf Stadtplätzen und Verkehrsinseln öffnen sich die Knospen beinahe zeitgleich.

Die Stadt verwandelt sich in eine Gartenschau und zieht Besucher*innen in den Bann ihrer Duftwolken.

Rarität in Bozens Umgebung: Am Völklhof in Lengstein am Ritten befindet sich eines der größten privaten Tiermuseen Europas. Betrieben wird es von Hermann Lang, Tierpräparator in dritter Generation. Der Jäger und „Vogelausstopfer“ ist mit Werkstatt und Museum weitum bekannt. Allein Singvögel finden sich hier über 1.000 Exemplare, denn mit dem Handwerk des Ausstopfens hat bereits sein Vater angefangen, und das Tiermuseum wurde 1910 von Hermanns Großvater gegründet.

Sein Wissen über die Pflanzen- und Tierwelt, v.a. über die Vögel, gibt Lang seit über 40 Jahren an angehende Jäger weiter. Gelernt wird nicht aus dem Buch, sondern in und aus der Natur. Besichtigungen nach Anmeldung täglich unter Tel. 0471 349094.

Geführte Stadtrundgänge im Frühling Mit April beginnt auch das abwechslungsreiche Programm der thematischen Stadtführungen. Der Beginn der Saison gehört in Bozen dem Frühlingsmarkt, heuer am Waltherplatz.

Die zweite Ausgabe bietet neben dem Verkauf von regionalen Köstlichkeiten, heimischen Handwerksprodukten auch Glas, Holz, Leder, Keramik und Pflanzen. An den rund zwanzig Verkaufshütten auch ein dichtes Rahmenprogramm mit live-Musik, Bastelwerkstätten und Kinderanimation.

Verweilen, sich vom Blütenmeer vitalisieren lassen - eine Tradition, die in Bozen über 130 Jahre alt ist. Die Südtiroler Gärtner*innen gestalten den Waltherplatz zum paradiesisch blühenden Stadtgarten. Geboten wird fachkundige Unterstützung, Verkauf, Tipps zu Pflege von Balkon- und Gartenpflanzen. Junggärtner und Jungfloristinnen zeigen das Erlernte, Kinder dürfen hie und da mitmachen. Und die Menüs von „Food & Flower“ mit leichten Frühlingsgerichten, die in den Restaurants von Bozen mit Blüten und frischen Kräutern zubereitet werden, locken in die Gaststätten rund um den Blumenmarkt.

Grün & nachhaltig ist schön: „Bicinfiore“ prämiert am 1. Mai die schönste Blumendeko am Fahrrad – ein Schönheitswettbewerb und Fahrrad-Treff, den die Südtiroler Gärtner, die Handelsorganisationen, das Verkehrsamt und die Stadt Bozen austragen.

Die Teilnahme ist kostenlos (12-18.30 Uhr), Einzelne und Gruppen sind zugelassen.

C’è un gran fermento nei cieli di Bolzano, in primavera. Non solo è tempo di schermaglie e di corteggiamenti fra gli uccelli nidificanti, ma anche del ritorno delle specie migratorie, come rondini, pettazzurri, gru, mentre gli ospiti svernanti, cormorani, anatre e poiane, lasciano poco a poco la città.

Incontriamo l'appassionato ornitologo Erich Gasser sui prati del fiume Talvera, in pieno centro della città. Il 69enne ha scoperto il suo amore per gli uccelli già a sette anni, nel giardino dei nonni e osservando un vicino di casa tassidermista.

Nel 1974, insieme ad altri appassionati, ha fondato il Gruppo di lavoro per l'ornitologia e la protezione degli uccelli in Alto Adige, di cui è ancora oggi membro attivo.

La rigogliosa avifauna di Bolzano, dunque: nonostante il traffico e i fitti insediamenti, la città ha conservato un habitat abbastanza intatto per molte specie di uccelli, grazie ai suoi dintorni caratterizzati da boschi misti, vigneti e frutteti, e ai tre fiumi che attraversano il capoluogo altoatesino, i cui alvei non sono stati distrutti o rinaturalizzati. Il gabbiano reale è ormai di casa sui tetti piatti della città tutto l'anno. Anche il gabbiano comune e il nibbio bruno sono avvistabili occasionalmente. Negli abitati di Bolzano, le specie principali che s’incontrano fra gli edifici sono rondini, rondoni, rondoni pallidi, taccole (nidificanti sul campanile del Duomo di Bolzano) e ballerine bianche. Nei giardini e nei parchi, invece, ci sono tutti i tipi di passeriformi e di fringuelli, il passero italiano, il pettirosso, il merlo, il picchio muratore e lo sparviere.

La colonia di pappagalli di Bolzano: intorno a Castel Mareccio incontriamo l'uccello più sorprendente, il parrocchetto dal collare indiano (Psittacula, alexandri manillensis). La popolazione di Bolzano fluttua intorno a 30 esemplari che si aggirano nella zona della città, a partire dalla metà degli anni '80, quando almeno due esemplari sono scappati da una gabbia. Questa popolazione di pappagalli è oggi l'unica rimasta nell'area alpina e la più settentrionale d'Italia.

Birdwatching in città e nei dintorni Solo sul Lago di Caldaro sono state registrate fino a 200 specie diverse di uccelli nidificanti e di uccelli migratori. Una tradizione da oltre 130 anni: in primavera i Floricoltori dell’Alto Adige trasformano Piazza Walther in un giardino in fiore. Consulenze di esperti, vendite, spettacolo: i giovani giardinieri e floricoltori mettono in mostra la loro passione e abilità, i bambini sono invitati a partecipare. E i menù di “Food & Flower”, con leggeri e profumati piatti primaverili, preparati dai ristoratori di Bolzano con l’utilizzo di fiori ed erbe fresche, attirano i visitatori nei movimentati locali del centro storico.

BOLZANO BIRD LIFE AT NO OTHER TIME OF THE YEAR IS THE BIRD

LIFE AS PRESENT AS IN THE SPRING, WHEN THEIR JOYOUS SONG DRAWS OUR EYES UPWARDS.

Urban Birding experts are enthusiastic about spring. Not only is it the season when our resident feathered males put on their displays to find their mate; it’s also the time when migratory visitors such as swallows, bluethroats and cranes arrive, as our winter visitors, the cormorants, ducks and buzzards, slowly depart for their summer climes.

We meet the passionate ornithologist Erich Gasser in the city centre, on the banks of the river Talvera. Now 69 years old, Erich discovered his love for birds at the age of seven, in his grandparents' garden and with a neighbourhood bird trainer. In 1974, together with other like-minded enthusiasts, he founded the Südtiroler Arbeitsgemeinschaft für Vogelkunde und Vogelschutz – the South Tyrolean Working Group for Ornithology and Bird Protection – of which he is still an active member.

Despite the traffic and dense conurbation, Bolzano has a lush bird life. The city’s bird habitats have remained, thanks to the surrounding bushlands, mixed forest, vineyards and orchards. The fact that the three rivers that crisscross the city have not been obstructed or redirected has also been a great help. Mediterranean gulls have established themselves on the flat roofs of the town, all year round. Even black-head18

ed gulls and black kites can be seen occasionally. In residential areas, the main species found on the buildings are swallows, swifts, jackdaws (nesting on the tower of Bolzano Cathedral) and wagtails. In our gardens and parks, on the other hand, there are all kinds of tits and finches, Italian sparrows, robins, blackbirds, nuthatches and sparrow hawks.

One group of winged residents that always surprises visitors is the city’s parrot colony.

Yes, that’s right – wild parrots, in the Alps! If you’re lucky, around Mareccio Castle you’ll see Bolzano’s most striking bird: the Indian ringnecked parakeet (Psittacula, alexandri manillensis). The Bolzano population fluctuates around 30 birds, which have been roaming the city area since the mid-1980s, when at least two escaped from their cage. This group of parrots is today the only remaining one in the Alps and the most northern in Italy.

Urban birding and bird watching At Lake Kaltern alone, up to 200 different species of nesting and migratory birds have been recorded. “La base è ancora oggi costituita dalle originali ricette contadine locali. A Bolzano però abbiamo questa grande fortuna di vivere a cavallo tra culture – anche culinarie – diverse, da cui attingere liberamente per proporre sempre il meglio.

Questa è in fondo la particolare gastronomia bolzanina, un mix di sapori e di tradizioni che si sposano alla perfezione.”

Lo conferma uno sguardo al menu, dove per esempio a fianco di Speck, canederli, testina di vitello e strudel di mele, troviamo bruschette mediterranee, spaghettini Vögele, insalata di polipo alle olive, e tiramisù. Ce n’è davvero per tutti i gusti.

Willy, la vostra è considerata la locanda più antica di Bolzano, se non di tutto l’Alto Adige. Chi sono i vostri clienti?

“Il nostro locale – che in origine si chiamava Roter Adler (aquila rossa) - esiste dal 1870: è già da allora che tutti i giorni un gruppo di commensali – per lo più cittadini dell’alta società bolzanina – si riunisce per chiacchierare e discutere di temi più o meno rilevanti presso la nostra Goethe Stube. Un “salotto buono” frequentatissimo ancora

oggi. La tradizione non si è fermata nemmeno nel periodo fascista, quando gli incontri erano segreti e per non farsi capire si iniziò a parlare di Vögele, “uccellino”, invece che di “Roter Adler”.

E così il Vögele ha cinguettato fino ai nostri giorni, dove continua ad essere uno dei ritrovi più amati dai bolzanini, ma anche da turisti e uomini e donne d’affari che apprezzano la cucina e l’atmosfera genuina della Stube.”

a tavola che da sempre le persone si incontrano, la convivialità annulla le differenze o, come accade nel capoluogo altoatesino e nelle località circostanti, le esalta. Così gli aromi e la leggerezza della cucina mediterranea si incontrano con i sapori intensi della tradizione alpina; se poi ci mette lo zampino la creatività tipica degli chef altoatesini, ecco che la magia è perfetta. Ne parliamo con Willy Alber che, con la sua famiglia, gestisce il noto ristorante Vögele – che in dialetto sudtirolese significa uccellino – di Bolzano, uno dei tanti esercizi aderenti alle iniziative Food & Wine e Food & Flower (vedi riquadro a pag. 23) con le quali Bolzano onora la bella stagione.

Come cambiano i vostri piatti in primavera?

“In primavera erbe e fiori colorano e profumano di fresco il nostro menu. Tra le piante ed erbe primaverili più usate nella nostra cucina ci sono l’ortica, l’aglio orsino - con cui per esempio prepariamo gustosi gnocchetti - il basilico, il tarassaco (foglie e fiori), il rabarbaro. E poi naturalmente gli asparagi, in tutte le variazioni: sono loro i veri principi della gastronomia bolzanina di primavera.

Accompagnati da un bel vino bianco, fresco e aromatico, come il Sauvignon tipico dei nostri territori.”

Svolazzando da una tavola all’altra, proprio come gli sfacciati passerotti bolzanini, sempre pronti a rubare qualche briciola dai tavolini all’aperto di bar e ristoranti, ci spostiamo al Fink, che significa fringuello, altro ristorante tradizionale del centro bolzanino e parliamo con il giovane gestore Valentin von Klebelsberg.

Valentin, cosa proponi tu ai tuoi clienti in primavera, durante le due manifestazioni Food & Wine e Food & Flower?

La nostra cucina è di tipo nutrizionale, ma in primavera ci piace giocare con gli ortaggi e le erbe di stagione. Così i classici Schlutzkrapfen (ravioli sudtirolesi) li prepariamo con un ripieno di aglio orsino al posto degli spinaci, ma soprattutto gli asparagi la fanno da padrone tra le nostre pietanze: in cremose zuppe, classici, con patate, prosciutto artigianale e salsa bolzanina, nel ripieno dei nostri tortelli con l’impasto di patate, con le pappardelle fatte in casa…

Piatti più primaverili e freschi anche durante la Mostra dei Vini Bolzano, con una particolare attenzione ai vini locali da abbinare. A proposito di vini locali: una specialità gastronomica che offriremo è il risotto al Lagrein, buono in realtà tutto l’anno.

FOOD & WINE E FOOD & FLOWER In primavera, la variegata gastronomia bolzanina sboccia e “ruba” alla natura l’intensità dei colori e degli aromi

In fatto di ristoranti, a Bolzano e dintorni non c’è che l’imbarazzo della scelta: oltre 150 locali, dalla locanda a conduzione familiare fino al ristorante stellato Michelin, dalla cucina tipica sudtirolese, a quella italiana regionale, alle pizzerie, alla cucina etnica, a quella naturale, vegetariana, senza glutine, ai ristoranti ricavati nei castelli, nei birrifici, nei palazzi storici… Questa ricchezza di offerta gastronomica trova la sua massima espressione nella bella stagione, quando bolzanini e turisti amano sedersi all’aperto, ai tavolini di bar e ristoranti, per un aperitivo, uno spuntino veloce o per pranzare o cenare in compagnia. È in questo contesto che si inseriscono due amatissime iniziative eno-gastronomiche che accompagnano due altrettanto seguite manifestazioni. Si tratta di Food & Wine, 15 – 29. 3. 2020, dove, in occasione della Mostra dei Vini Bolzano, gli esercizi aderenti propongono alla clientela almeno tre piatti, abbinati ai vini autoctoni Lagrein e Santa Maddalena.

Segue - cronologicamente - Food & Flowers, 26. 4 – 2. 5. 2020: durante la Festa dei Fiori, i ristoranti partecipanti offrono almeno tre diversi piatti con fiori, abbinati a tre diversi vini Santa Maddalena.

Che spettacolo!

A pochi chilometri da Bolzano, facilmente raggiungibile anche in funivia, San Genesio offre una vista spettacolare sulle Dolomiti e sulla conca bolzanina. In primavera ed estate un’amatissima meta vacanziera e di escursioni naturalistiche, ma anche gastronomiche, come conferma il successo, oltre trentennale, delle Settimane culinarie a San Genesio, cui partecipano i ristoranti di San Genesio e delle frazioni che propongono i loro piatti preferiti a base di ingredienti locali e stagionali. Quest’anno avranno luogo dal dal 17 aprile al 3 maggio.

NEN KÜCHE PAAREN SICH MIT DEN INTENSIVEN GESCHMACKSNOTEN DER ALPINEN TRADITION. WENN DANN NOCH DIE KREATIVITÄT EINIGER KÜCHENCHEFS DIE FINGER MIT IM SPIEL HAT, IST DER ZAUBER PERFEKT. Willy Alber vom Restaurant „Vögele“ und der junge Valentin von Klebelsberg vom Gasthaus “Fink” (siehe Box) gehören zu diesen Kreativen am Kochherd. Und – welch Zufall – ihre Häuser tragen den Frühling auf Vogelschwingen, um beim Thema Vögel in Bozen zu bleiben. Beide erzählen von der alten Liebe der Bozner*innen zum Essen und von den Eigenheiten der Bozner Gastronomie.

Willy nimmt alte Bauernrezepte als Grundlage für seine edlen Kreationen oder schwingt den Kochlöffel im italienischen Vögele-Rezeptbuch, um auch Fisch oder Tiramisù aufs Menü zu zaubern. Brennessel, Bärlauch, Basilikum, Löwenzahn und Rhabarber inspirieren zu eigenen Rezepten. Valentin liebt die Abwechslung und sucht für den Frühling Kombinationen mit zartem Gemüse und Wildkräutern. Spargeln kommen bei ihm in allen Variationen vor, als cremige Suppen, als Klassiker mit Kartoffeln, Hausschinken und Bozner Sauce, als Teigtaschen-Fülle oder zu Nudelgerichten. Und wer die Bozner Weine liebt, sollte seinen Lagreinrisotto ausprobieren.

Das „Vögele“ erhält übrigens seinen Namen von seinen eifrigsten Besuchern in der Faschistenzeit: ein Geheimcode, um nicht zu verraten, wo man sich traf. Sein damaliger Name war nämlich seit Eröffnung des Lokals 1870 „̦Roter Adler“ und seine Stube von jeher angesagter Treffpunkt zahlreicher Bozner Bürger. Das hat sich kaum geändert …

Willy takes old farmhouse recipes as the basis for his noble creations and stirs in a little of the Italian, adding perhaps fish or tiramisu to the Vögele menu. Nettles, wild garlic, basil, dandelions and rhubarb inspire Willy’s own recipes. Valentin hunts out variety, combining the tenderest of vegetables and wild herbs found only in spring. Asparagus appears in many guises: as creamy soups; as a classic with potatoes, local ham and Bozner sauce (Salsa Bolzanina); as a filling for dumplings or in pasta dishes. ater is life: we know it’s one of the base elements on our planet: whether in agriculture or for our own bodies. Each Bolzano resident consumes around 152 litres of drinking water per day: literally a bathtub full! Responsible for the supply of this precious public resource is SEAB AG, a company serving the citizens of Bolzano that celebrates its 20th birthday in June. It not only supplies the city with among the highest quality drinking water in Italy, but it’s also responsible for the gas and sewage networks, waste management and the manicured cityscape. Clearly however, the greatest responsibility is the municipal drinking water network, with its 14 deep wells and ten reservoirs. It’s an investment in the health of Bolzano folk and Bolzano visitors.

Where does the drinking water in Bolzano come from?

Bolzano's water is groundwater. It’s fed from the rivers Isarco and Talvera, pumped to the surface from a depth of 30-80 metres and distributed via nearly 200 km of pipes. Excess water is fed into the storage reservoirs, mostly on the rocky slopes around Bolzano (with a total capacity of some 13,000 cubic metres). When demand is at its highest – in the morning, the evening and in dry summers – these huge reserves provide the city’s water.

Eleven technicians are responsible for the maintenance of this sophisticated system. They monitor all strategic infrastructure, including the numerous municipal wells, once a week.

They maintain, clean, search for leaks, regulate the water pressure, read water meters and carry out 150 drinking water checks per year (results at www.seab.bz.it).

The result shows in our water’s balanced content of dissolved minerals with a neutral pH value. So, if you choose to drink Bolzano tap water, you’re not only protecting the environment (and your own pocket!), but you’re also drinking very healthy water.

What makes the water in Bolzano so good?

The fact that it is naturally purified and enriched by minerals on its way to the depths, meaning it doesn’t require any chemical treatment. Above the groundwater of Bolzano, there is a top layer of gravel and sand, filtering out impurities. In fact, the quality of drinking water is so special that the entire valley basin has been designated as "Water Protection Area III", which provides a number of statutory protections. What does that mean in particular?

The strictest of regulations for any new building projects.

The Talferlagrein The modern water system in Bolzano was not built until the late 19th century. Until then, the inhabitants of Bolzano took their water for domestic use, as well as for irrigation, mostly from open channels (wooden guttering in the Renaissance, later cast-iron pipes) directly from the Talfer-Talvera river. This is why the water was called, tongue in cheek, “Talferlagrein” – with a nod to the famous Lagrein red wine, grown in the Bolzano basin.

Our water culture Water and waterways have always been of strategic importance in the province. The history of the rivers of Bolzano thus becomes the history of the city itself. The Isarco, Talvera and Adige rivers have not only marked out Bolzano's appearance. They have always played a fundamental role in the life of the city:

The first deep well was built in 1896, at the entrance to the Sarentino Valley. Every building boom since then has opened up new water supplies from these depths. The city continues to grow, and so it will be necessary to develop other drinking water supplies in the future.

Bolzano's relationship with water is an important key to understanding the city. For visitors, two "water routes", paths along the rivers – one to walk and one to bike – offer the opportunity to explore this cultural-historical dimension independently, overly a couple of leisurely hours. Zuständig für die Versorgung mit diesem kostbaren „Bürgermeister-Wasser“ ist die SEAB AG. Das Unternehmen versorgt die Stadt nicht nur mit einem der besten Trinkwasser Italiens, sondern ist auch für die Gas- und Abwassernetze, die Abfallbewirtschaftung und das gepflegte Stadtbild zuständig. Eindeutig der größte Teil aller Investitionen fließt aber seit Jahren in das städtische Trinkwassernetz mit seinen 14 Tiefbrunnen und zehn Reservespeichern.

Woher kommt das Bozner Trinkwasser?

Beim Bozner Wasser handelt es sich um Grundwasser, gespeist aus den Flüssen Eisack und Talfer. Es wird aus einer Tiefe von 3080 Meter an die Erdoberfläche gepumpt und in das fast 200 km lange Leitungsnetz gespeist. Überschüssiges Wasser kommt in die Speicherbecken. Diese riesigen Becken sorgen für den Wasserbedarf zu Spitzenzeiten - morgens, abends und im trockenen Sommer. Elf Techniker sind für die Wartung des ausgeklügelten Systems zuständig, kontrollieren wöchentlich alle strategischen Infrastrukturen, warten und reinigen, suchen Lecks, regulieren den Wasserdruck, lesen Wasserzähler ab und führen jährlich 150 Trinkwasseranalysen durch (Ergebnisse unter www.seab.bz.it).

Was macht das Bozner Wasser so gut?

Es kommt ohne chemische Aufbereitung aus. Über dem Grundwasser von Bozen liegt nämlich eine Kies- und Sandschicht, die Verunreinigungen zurückhält und Mineralstoffe liefert. So wurde 32

die besondere Trinkwasserqualität auch gesetzlich geschützt, indem man den gesamten Talkessel als „Wasserschutzgebiet III“ ausgewiesen hat. Wer also Bozner Leitungswasser trinkt, schont nicht nur die Umwelt und seine eigene Brieftasche, sondern trinkt gesund.

Unsere Wasserkultur Die Geschichte der Flüsse Bozens wird zur Geschichte der Stadt selbst. Die Flüsse Eisack, Talfer und Etsch haben nicht nur Bozens Erscheinungsbild abgesteckt, sie spielten eine grundlegende Rolle für den Warentransport und waren ab der Römerzeit städtebaulich entscheidend. Das Verhältnis Bozens zum Wasser ist ein wichtiger Schlüssel zum Verständnis der Stadt. Und so bieten zwei mehrstündige „Wasserrouten“, eine zu Fuß und eine mit dem Fahrrad, die Möglichkeit, diese kulturgeschichtliche Dimension selbstständig zu erkunden. Cosa rende l'acqua di Bolzano così buona?

Innanzitutto non necessita di trattamenti chimici. Sopra la falda freatica di Bolzano si trova uno strato di ghiaia e sabbia che trattiene le impurità e rilascia minerali. La particolare qualità dell'acqua potabile è stata protetta giuridicamente: quasi l’intera conca bolzanina è stata designata “Area di tutela

La nostra cultura dell'acqua La storia dei fiumi di Bolzano è la storia della città stessa. I corsi d’acqua Isarco, Talvera e Adige non solo hanno caratterizzato morfologicamente la città di Bolzano, ma hanno anche svolto un ruolo fondamentale per il trasporto delle merci e determinato lo sviluppo e la pianificazione urbanistica fin dall'epoca romana. Da dove viene l'acqua potabile di Bolzano?

L'acqua di Bolzano è perlopiù acqua di falda, alimentata dai fiumi Isarco e Talvera. Viene pompata in superficie da una profondità di 30-80 metri e immessa nella rete di tubazioni che è lunga quasi 200 km. L'acqua eccedente il fabbisogno confluisce nei serbatoi da cui si attinge nelle ore di punta - al mattino, alla sera e nelle estati calde e asciutte. DIE SUPERKRAFT DER BIENE INTERVIEW MIT PAUL RINNER „Gesundheit aus dem Bienenstock“ ist sein Lebensthema. Dafür brennt er und lebt es auch konsequent, am Rittner Hochplateau hoch über Bozen. Der 56-jährige Bioimker und Apitherapeut ist kaum zu bremsen, wenn es um Bienen geht.

ie Naturwerkstatt und Api-Wellness-Oase liegt im Weiler Wolfsgruben in Oberbozen. Hier besuchen wir den Bienenzüchter und Wanderimker in dritter Generation. Er setzt auf nachhaltige Bienenhaltung und nutzt seine langjährige Erfahrung in der Apitherapie auch in seinem Familienhotel (www.hotel-rinner.it). Seit 2014 bietet es seinen Urlaubs- und Tagesgästen u.a. die Api-Wellness-Bienenstockluft Inhalation an.

Was kann man sich unter dieser Inhalationsform vorstellen?

Mit dem Beecura-System vom deutschen Apitherapieimker Jürgen Schmiedgen arbeite ich erst seit zwei Jahren, vorher habe ich aber schon mit Bienenstockluft-Inhalation experimentiert. Das zertifizierte System bietet den Vorteil, dass es medizinisch zugelassen und durch eine wissenschaftliche Studie am Klinikum im sächsischen Wiesenbad flankiert wird.

Was machen wir? Wir lassen Menschen mit Atemproblemen, v.a. Allergiker und Asthmatiker, jeweils eine halbe Stunde lang Bienenstockluft inhalieren. Diese Luft enthält ätherische Öle, Flavonoide, Aromastoffe, duftet zart nach Bienenwachs, wirkt antibakteriell und wohltuend für die Atemwege. Sinnvoll ist eine Anwendung von mindestens sechs bis max. 24 Behandlungen. Ich bin der einzige im Alpenraum, ach was, weit darüber hinaus, der damit arbeitet.

Und die Bienen leiden nicht darunter, dass du ihnen ”die Luft nimmst“?

Durch das Gerät wird die Bienenluft sanft aus dem Stock gesaugt. Aber klar merken sie das und kompensieren diesen Verlust, der automatisch ein Absenken der Lufttemperatur im Stock bedeutet. Sie gleichen ihn mit einer erhöhten Bewegung, also Luftzirkulation im Stock, aus. Ich nehme den Bienen Energie weg, also muss ich ihnen ausreichend Futter, bis zu 40 kg Honig die Saison, liefern, damit sie weniger ausfliegen müssen. Hier im Apiair-Stand arbeitet meine Familie mit 13 Völkern, die abwechselnd angezapft werden. Jedes ist anders.

Was fasziniert dich an der Biene?

Das Bienenvolk ist ein lebender Organismus, der sich stark an die Umgebung angepasst hat und nun seit Millionen von Jahren in dieser Form lebt und arbeitet. Die Harmonie im Stock ist uns heute noch ein Rätsel: Ein Bienenvolk ist wie eine 100.000-Seelen-Stadt (Bienen plus Brut), vergleichbar mit einer gut funktionierenden Stadt wie Bozen.

Wir profitieren ungemein von der Lebensform der Bienen und lernen nie aus. Allein schon das Wissen, dass alles, was vom Bienenstock herauskommt, unbegrenzt haltbar ist ... Sicher ein Grund, warum das Bienenvolk so widerstandsfähig ist.

Wie kommst du auf diese Art von Gesundheit aus dem ” Bienenstock“?

Das ganzheitliche Bienenwissen ist in den letzten 100 Jahren mit dem Durchsetzen der konventionellen westlichen Medizin und dem Aufkommen der Pharmaindustrie verloren gegangen. Übrig geblieben ist uns der Honig, als wirtschaftlicher Teil der Bienenhaltung. Alle Nebenprodukte des Bienenvolks – Propolis, Rohpollen und fermentierter Pollen, Wachs, Gelée royal (Futtersaft der Bienenkönigin), Bienengift - sind lange Zeit in Vergessenheit geraten. In Asien weniger als bei uns. Früher haben wir viel mehr mit der Natur gearbeitet, aus ihr geschöpft und gelernt. Mein Großvater und Vater haben schon vor den Weltkriegen Apitherapie betrieben, ohne sie bewusst als solche zu kennen.

Und wie kommst du überhaupt auf die Biene?

Ich bin in Bozen mit den Bienen aufgewachsen, meine Vorfahren waren schon Wanderimker und hatten Hunderte von Bienenvölkern. Ich bin 1963 geboren, 1968 sind wir auf den Ritten gezogen. Ich habe mit neun Jahren meine ersten Bienenvölker geschenkt bekommen, als mein Großvater starb und die Oma seine Völker aufgeteilt hat. Damit hatte ich schon als Kind Verantwortung für diese Lebewesen und hab sehr früh in der Konkurrenz zu meinem Imker-Vater mit den Bienen gearbeitet und so meinen ganz eigenen Weg in der Bienenhaltung gefunden. Mit 12 Jahren war ich schon Wanderimker, mit 18 hatte ich bereits 100 Völker.

2000 bin ich in die Bioimkerei eingestiegen und damit auch in die Apitherapie. Heute arbeite ich mit 200 Bienenvölkern, bringe sie zur Zeit der jeweiligen Blüte an verschiedene Orte in ganz Südtirol bis hinauf ins Hochgebirge für die Alpenrosenblüte.

Und wie suchst du aus deinen 200 Bienenvölkern die „Bienenluft-Völker“ aus?

Ich suche sie nach der Luftkonzentration im Stock aus, es sind gesunde und sehr aktive Völker.

5. APITHERAPIE-TAGUNG „HEILKRAFT AUS DEM BIENENSTOCK“ Am Wochenende 4. und 5. April 2020 findet die jährliche Tagung der Südtiroler Apitherapiefreunde im Bozner Kolpinghaus statt.

Ein Treffen mit Lern- und Austauschcharakter - am Samstag Vorträge über Honig, Bienenwachskompressen, Krankheitsbilder und ihre Behandlung mit Apitherapie, am Sonntag Workshops (Oxymel Apotheke und Honigentgiftungsmassage).

Anschluss geht es zum nahegelegenen, über 600 Jahre alten Plattner Bienenhof, heute ein Imkereimuseum mit großem Außengelände und Lehrpfad Lehrpfad - siehe Bild oben rechts (www.museo-plattner.com). Anschließend können die Teilnehmer entweder zu Fuß über die Freud-Promenade zurückkehren (ca. 1 Stunde) oder mit der Rittner Bahn nach Klobenstein zurückfahren.

È qui che incontriamo il 56enne Paul Rinner, apicoltore di terza generazione. Di cosa si tratta?

Facciamo inalare a persone con problemi di respirazione, soprattutto i soggetti allergici, il flusso d’aria proveniente dall’interno dell’alveare, per una mezz'ora. Quest'aria contiene oli eterici, flavonoidi e aromi, ha un delicato profumo di cera d'api, è antibatterica e benefica per le vie respiratorie. Si consiglia di fare almeno sei trattamenti.

Cosa ti affascina delle api?

L'armonia che regna nell'alveare è ancora oggi un mistero: una colonia di api è come una città di 100.000 anime (api più covata), paragonabile a una città ben funzionante, come Bolzano. Traiamo immenso beneficio dallo stile di vita delle api e non smettiamo mai di imparare.

Come sei arrivato a questa passione?

Sono cresciuto a Bolzano con le api, i miei avi erano apicoltori itineranti e avevano centinaia di colonie di api. Ho avuto in regalo le mie prime colonie di api a nove anni, quando mio nonno morì. All'età di 12 anni ero già un apicoltore itinerante, a 18 anni avevo già 100 colonie. Nel 2000 ho iniziato con l'apicoltura biologica e quindi anche con l'apiterapia.

Oggi lavoro con 200 colonie di api, portandole in diversi luoghi dell'Alto Adige al momento della fioritura, dalle vallate fino in alta montagna per la fioritura della rosa alpina.

56-YEAR-OLD ORGANIC BEEKEEPER AND APITHERAPIST, FROM THE RENON PLATEAU HIGH ABOVE BOLZANO, IS A PASSIONATE EXPONENT OF “HEALTH FROM THE BEEHIVE”.

The Api-Wellness-Oasis is located in the village of Costalovara, Soprabolzano. It’s also where we come to talk to Paul, a third-generation beekeeper. He focuses on sustainable beekeeping and makes his long experience in apitherapy available at his family’s hotel (www.hotel-rinner.it). Since 2014, he has offered residential and day guests a number of bee-based therapies, including Api-Wellness beehive air inhalation.

colonies. In 2000, I began organic beekeeping and then apitherapy. Today I work with 200 bee colonies, taking them to different places throughout South Tyrol at the time of their flowering, or up to the high mountains when the Alpine rose blossoms.

Can you explain the benefits of beehive air inhalation?

We treat people with breathing problems, especially allergy sufferers, by having them inhale beehive air for half an hour at a time. This beehive air is full of essential oils, flavonoids and aromatic substances. It also has a delicate beeswax scent and is antibacterial, which is beneficial for the respiratory tract. I always advise at least six treatments. I am certainly the only apitherapist in the Alpine region who provides this therapy – and I’m pretty sure far beyond that.

The healing power of honey and bee air The Renon Tourist Office organizes visits to Paul Rinner's organic apiary every Monday in May and June. Afterwards, you can go to the nearby 600 years old Plattner Bienenhof, which is today a beekeeping museum with a large outdoor area and an educational trail (www.museo-plattner.com). Returning, you can either go by foot, via the Freud Promenade (approx. 1 hour), or take the Renon Railway back to Collalbo.

So, what is it that fascinates you about bees?

The harmony in the hive is still a mystery to us, even today. A colony of bees is like a city of 100,000 souls (bees plus larvae), making it like a well-functioning city such as our own Bolzano.

I quite literally grew up with bees – my ancestors were migratory beekeepers, who kept hundreds of bee colonies. I got my first colonies of bees when I was nine years old, after my grandfather died, so I learned to take responsibility for these creatures when I was a child. At the age of 12, I was already a migratory beekeeper and by the time I was 18, I had 100

tiamo parlando di Palazzo Menz, all’inizio della bella e ampia Via della Mostra, rinnovata nel Settecento in stile barocco e neoclassico, distinguendosi dalle strette vie medievali che si snodano intorno ai vicinissimi Portici. Costruito nel 1670, Palazzo Menz fu nel 18° secolo la residenza di rappresentanza della famiglia Menz, una delle più prestigiose dinastie mercantili di Bolzano. In occasione del suo matrimonio con Clara Amorth, nel 1776 Georg Paul von Menz fece rinnovare il palazzo e incaricò quello che era considerato all’epoca il miglior pittore di Bolzano, Carl Henrici, di decorare con grandi affreschi lo sfarzoso salone dell’ultimo piano e della sala adiacente, rimasti pressoché intatti fino ai giorni nostri.

Sul soffitto a volta del piano nobile del grande salone da ballo è rappresentato il trionfo di Amore con gli dei dell’Olimpo (1776), mentre gli affreschi in stile rococò di ispirazione tiepolesca riproducono un ballo in maschera, ambientato in un parco (1783-1784), secondo una tradizione figurativa all’epoca particolarmente in voga, soprattutto in ambito veneto. Adiacente al salone si trova la sala cinese, con affreschi che riproducono figure e paesaggi esotici, fra tanti effetti trompe-d'oeil tipici di questo pittore.

Per tantissimi anni l’accesso alle sale è possibile solo in casi eccezionali. Dopo aver ospitato gli uffici di una banca per molto tempo, Palazzo Menz è stato acquistato dal gruppo SIGNA di René Benko, che ha fatto rivivere l’edificio organizzando al suo interno diversi eventi di carattere sociale e culturale. Dopo una delicata e dettagliata ristrutturazione, da ottobre 2019 il palazzo è stato affittato da SIGNA Italia a COS, il marchio di abbigliamento uomo-donna premium del gruppo svedese H&M, dando vita ad un affascinante connubio tra alta moda e mura ricche di storia. Palais Menz, con le sue meravigliose sale affrescate, è ora aperto al pubblico.

“Restituire il palazzo alla cittadinanza, rendendo queste meravigliose sale accessibili a tutti”: questo l’obiettivo principale raggiunto da SIGNA Italia, come ci racconta il dott. Heinz Peter Hager vedi foto a pag. 50, che parla di “un intervento non semplice, nel quale si doveva coniugare una nuova funzionalità dell’edificio con il valore architettonico di un immobile posto sotto stretta tutela storico-artistica. Abbiamo vagliato vari progetti di diversi architetti internazionali, per poi optare per un’operazione di ristrutturazione delicata che ha lasciato intatta la struttura storica, FR

Questa scelta non poteva che intrigare un marchio internazionale come COS che ama proporre i propri punti vendita in location molto particolari ed esclusive. E intrigante è anche il contrasto che si è creato tra i primi due piani, attualmente dedicati alla vendita, dagli ambienti minimalisti e metropolitani come lo stile proposto dal marchio, e l’ultimo piano, raggiungibile anche tramite un ampio ascensore, con le due sale rococò affrescate da Henrici, la cui valorizzazione è stata al centro dell’intera operazione. “Una valorizzazione che verrà intensificata già dai prossimi mesi” ribadisce Hager. È infatti allo studio un modo per utilizzare commercialmente anche l’ultimo piano dell’edificio, in modo da portare un numero ancora maggiore di persone a visitare le sale affrescate, senza minimamente intaccarne bellezza e atmosfera.

Nato a Schweidnitz, nella Slesia asburgica, Henrici, all’età di 18 anni, lasciò la sua patria e, dopo un soggiorno di studi a Venezia, giunse a Bolzano, dove lavorò presso bottega di un pittore locale. Studiò altri due anni a Verona, presso l’Accademia privata di Giambettino Cignaroli. Intraprese un’intensa attività di affreschista e diventò uno degli artisti più richiesti, sia da committenti privati, sia dal clero per affrescare volte di chiese, eseguire pale per altari, ritratti, dipinti ad olio con temi biblici, mitologici e orientali secondo il gusto dell’epoca.

Il capolavoro di Henrici sono proprio gli affreschi eseguiti a Palazzo Menz di Bolzano, sua città d’adozione, che testimoniano le ambizioni culturali della ricca borghesia bolzanina della seconda metà del Settecento, ma ricordano anche le feste e le rappresentazioni di opera e di teatro che venivano allora allestite per la cittadinanza.

TERNATIONALE BEKLEIDUNGSMARKE UND ÖFFNET ALLEN SEINE TORE. BEWUNDERN SIE MIT UNS DIE FRESKEN VON CARL HENRICI. Der Prachtbau aus dem 17. Jahrhundert (1670 erbaut) befindet sich in der stattlichen Mustergasse, deren Erscheinungsbild im 18. Jahrhundert im barocken und klassizistischen Stil renoviert wurde und sich deutlich abhebt von den engen mittelalterlichen Gassen der nahen Lauben. Er wurde von einer der prestigeträchtigsten Dynastien des Bozner Handels bewohnt. Im obersten Stock ließ Georg Paul von Menz 1776 anlässlich seiner Hochzeit mit Clara Amorth das repräsentative Gebäude renovieren und gab große Wandmalereien in Auftrag, und zwar dem damals angesagtesten Bozner Maler Carl Henrici. Dieser interpretierte im Ballsalon den Sieg des Amor im Olymp und stellte später auch einen Faschingsball im Rokoko-Stil dar. Exotische Figuren und Landschaften fanden Eingang in seine Fresken im chinesischen Saal nebenan. Über viele Jahre war der Zugang zu diesen beachtlichen Wandmalereien nur selten und auf Anfrage möglich.

Doch nun wurde Palais Menz von der SIGNA Gruppe Italien des René Benko erworben, der dem Gebäude nach dessen Dornröschen-Schlaf neues Leben eingehaucht hat, mit einer behutsamen Renovierung und der anschließenden Vermietung des Gebäudes an COS, Premium-Marke der schwedischen Bekleidungsket52

te H&M. Seitdem ist das wunderbare Innere dieser historischen Gemäuer zum öffentlichen Kulturgut geworden, denn die Fresken sind öffentlich zugänglich. Derzeit in Ausarbeitung ist eine Informationsbroschüre für die Besucher*innen des Palais Menz’ und ein Buch aus der Feder des Journalisten und Kunstkenners Giovanni Pellinghelli.

WER WAR DER MALER CARL HENRICI? Ein gebürtiger Schlesier aus dem Städtchen Schweidnitz – heute im polnischen Niederschlesien, damals Teil des Habsburgerreichs.

Mit 18 Jahren verließ er seine Heimat, ging nach Venedig, um malen zu lernen und kam darauf nach Bozen, wo er sich in der Werkstatt eines Bozner Malers seine ersten Sporen verdiente.

Es zog ihn weiter nach Verona zum Studium an einer Privatakademie, wo er zu einem der gefragtesten Freskenmaler im sakralen und profanen Bereich ausgebildet wurde. Als sein Meisterwerk gelten die Wandmalereien im Palais Menz in Bozen, seiner Zweitheimat.

He was a native of the small town of Schweidnitz, which is today in Poland’s Lower Silesia, but which was then part of the Habsburg Empire. At the age of 18, he left his home country and went to Venice, to learn to paint. He then found his way to Bolzano, where he began to come into his own, in the workshop of a Bolzano painter. He then moved to Verona, to train further at a private academy, going on to become one of the most sought-after fresco painters of both sacred and secular themes of his time. His masterpieces are the wall paintings in Palazzo Menz in Bolzano, his second home.

In recent years, access to these remarkable wall paintings was only possible on request. But now Palazzo Menz has been acquired by René Benko’s SIGNA Group, who have breathed new life into the building. After the meticulous renovation, the palazzo was commercially leased and it’s today home to the stylish Swedish clothing chain COS. Since then, the wonderful interior of these historic walls has become a public cultural treasure, with access to the frescoes open to the public. An information brochure for visitors to Palazzo Menz, together with a book by journalist and art connoisseur Giovanni Pellinghelli, are currently being prepared.

WHO WAS THE PAINTER CARL HENRICI?

The magnificent 17th century palazzo, built in 1670, is located in the stately via della Mostra. Its exterior was renovated in the 18th century, in Baroque and Classicist style, and it clearly stands out in the narrow medieval alleys of the nearby arcades. It was once home to one of the most prestigious dynasties of Bolzano commerce. In 1776, Georg Paul von Menz had the top floor renovated, in celebration of his marriage to Clara Amorth. Menz commissioned large mural paintings

by Carl Henrici, the most popular painter in Bolzano at the time. In the ballroom, Henrici painted the victory of Amor on Mount Olympus and later he also depicted a carnival ball, in rococo style. In the Chinese room next door, exotic figures and landscapes found their way into Henrici’s frescoes.

er Aufstieg in den Wein-Olymp für Eppan führte über den Ausbau der Weine nach Lagen, über die drastische Reduktion der Erträge und über die Einführung moderner Techniken in der Kelterung. Das geschah während der „Weinrevolution“ in Südtirol, die in den 1980er Jahren begann und bei der Eppan eine entscheidende Rolle spielte. Warum? Aufgrund der alten Tradition des Weinbaus in der Gegend zwischen den Montiggler Seen und dem Mendelkamm, der privilegierten geographischen Lage, geschützt vor rauen Winden, aufgrund des klimatischen Glücks, mit 300 Sonnentagen im Jahr rechnen zu können und letztlich aufgrund des einzigartigen Terroirs mit kalkhaltigen, gut durchlüfteten Schotterböden, entstanden durch die Abtragung der Gletscher und die darauf folgenden Erosionen. Es ist also nicht verwunderlich, dass die positive Entwicklung in der Wein-Veredelung hier ihren Anfang nahm.

Ein paar Zahlen: Mit seinen knapp 15.000 Bewohner*innen und den rund 4.000 Betten im Tourismus liegt Eppan nur einen Katzensprung von Bozen, 10 Kilometer südwestlich der Landeshauptstadt, und direkt an der Südtiroler Weinstraße, die bei Nals, Andrian und Terlan beginnt, über Bozen nach Eppan verläuft und dann über Kaltern, Tramin, Auer, Montan, Neumarkt, Kurtatsch, Kurtinig und Margreid bis Salurn führt.

Alte Wurzeln, neue Dachmarke Bereits vor über 2000 Jahren wurde in Eppan Wein angebaut. Besonderen Aufschwung erfuhr der Weinbau unter der k. u. k. Monarchie, als Riesling- und Burgundersorten hier eine neue Heimat fanden. Eine zentrale Rolle in der Eppaner Weinproduktion spielte bis vor 40 Jahren die Rebe des Weißburgunders. Trotz dieser langen Tradition hatte Eppan bis vor wenigen Wochen kein einheitliches Auftreten in puncto Wein. Das hat sich mit der Dachmarke „Eppan Wein“, dem Zusammenschluss aller Weinproduzenten der Gegend, geändert. Vinophile - Südtirol-Reisende und Bewohner*innen der Weingemeinde Eppan - kommen damit erst recht auf ihre Kosten.

Eppan ist heute die größte Weinbaugemeinde Südtirols mit 941 Hektar Rebfläche; das ist ein Sechstel seiner Gesamtfläche. Das Dorf ist auch Mittelpunkt der größten Weinanbauregion Südtirols mit den Weinbergen im Überetsch und Unterland. Rund 100.000 Hektoliter Wein werden in den 17 Eppaner Verarbeitungsbetrieben (Weinproduzenten, Sektherstellern und Brennereien) erzeugt. Über ein Dutzend ihrer Sorten gehören zu den

Spitzenweinen Südtirols. Vor allem die weißen Rebsorten finden hier den idealen Nährboden und profitieren von der Vielfalt der Lagen und vom milden Klima. An die 20 Sorten werden angebaut: Weißburgunder, Chardonnay, Riesling, Sauvignon, Pinot Grigio, Gewürztraminer und Müller-Thurgau reifen auf den fruchtbaren Lagen ebenso wie die Rotweine Blauburgunder, Cabernet, Merlot, Lagrein und verschiedenste Spielarten des Vernatsch.

DER WEISSWEIN IN EPPAN: VOM STIEFKIND ZUM PRINZEN

Welche Weine tragen am entschiedensten die Handschrift des Hans Terzer?

Im Weißweinbereich sicherlich Weißburgunder und Sauvignon, bei den roten Rebsorten hat es mir der Blauburgunder angetan. Damit kann unser Gebiet und zugleich unsere Kellerei am meisten punkten. Sie sind das Spiegelbild unseres einmaligen Terroirs.

Welches ist Ihnen die liebste Auszeichnung?

Nach 40 Jahren Arbeit als Kellermeister freut mich am allermeisten, dass der Stellenwert und das internationale Ansehen des Weinbaus in Südtirol gewachsen sind und dass heute zahlreiche junge Leute mit Stolz ihre Weinberge hegen und pflegen. Vielleicht konnte ich mit meinem Einsatz und meinen Bemühungen dazu beitragen.

Worin waren Sie Ihrer Zeit voraus?

Anfang der 1980er Jahre musste sich in Südtirol erst der Qualitätsgedanken entwickeln. Ich hatte das Glück, ins Weinbusiness einzusteigen als der Bedarf an Veränderung enorm war. Die hiesige Weinwirtschaft hatte mit großen Problemen zu kämpfen. 85% unserer Rebfläche war mit Vernatsch bestockt – sehr oft in zu hohen Lagen, mit viel zu hohen Erträgen und geringer Qualität.

Außerdem glaubte ich damals schon an die Stärke der Weißweine in Eppan und überzeugte die Weinbauern diese Anlagen zu roden und je nach Standort mit verschiedenen weißen Rebsorten neu zu bepflanzen. Neben Weißburgunder und Pinot Grigio setzten wir vor allem auf Chardonnay und Sauvignon. Auch in der Weißweinbereitung wurden neue Akzente gesetzt: kontrollierte Gärführung und/oder biologischer Säureabbau bei Burgundersorten waren einige davon. Die große Erkenntnis war aber, dass der Grundstein für Qualität vor allem im Weinberg gelegt wird.

Standort und reduzierte Ertragsmengen sind Garanten dafür.

Parallel dazu sind sowohl das Konsumverhalten als auch das Weinverständnis unserer Kunden gestiegen, aber auch die Bereitschaft mehr Geld für gute Weine auszugeben.

Welche Idee wird die Zukunft des Weins in Eppan prägen?

Auf lange Sicht wird man von unserer großen Sortenvielfalt Abstand nehmen und sich auf die standortbezogen besten Rebsorten konzentrieren müssen, mit den abgestimmten Erntemengen.

Diese Maßnahme wird uns erlauben, die Qualität weiter zu steigern und vor allem konstante Ergebnisse zu erzielen.

Winemaker der Kellerei St. Michael-Eppan, Präsident der Südtiroler Kellermeister und einer der Weinpioniere Südtirols der letzten vier Jahrzehnte geboren 1956, aufgewachsen in Entiklar bei Kurtatsch. Ausbildung in der Obst- und Weinbauschule Laimburg, dort gleich nach dem Abschluss für kurze Zeit verantwortlicher Kellermeister. 1977 wechselt er zur Kellerei St. Michael, Eppan, wo er heute noch wirkt. 1997 gehört er für Gambero Rosso zu den „Top Ten Winemaker of the World“, 2000 erhält seine Kellerei den Titel „beste italienische Kellerei des Jahres“.

Per Appiano, l'ascesa all'Olimpo dei vini è passata attraverso la diversificazione delle colture a seconda della posizione dei vigneti, la drastica riduzione delle loro rese produttive e l'introduzione di moderne tecniche di vinificazione. Tutto questo è avvenuto durante la "rivoluzione del vino" in Alto Adige, iniziata negli anni '80, nella quale Appiano ha avuto un ruolo decisivo. E questo per varie ragioni: l’antica tradizione vitivinicola nella zona compresa tra i laghi di Monticolo e la Costiera della Mendola, la posizione geografica privilegiata, protetta dai forti venti, il beneficio climatico di poter contare su 300 giorni di sole l'anno e infine la peculiarità dei terreni ghiaiosi, calcarei e ben aerati, formatisi attraverso l'azione dei ghiacciai e la successiva erosione. Non sorprende quindi che il salto di qualità nell’affinamento del vino abbia avuto inizio proprio da qui.

Qualche numero: con i suoi quasi 15.000 abitanti e circa 4.000 posti letto in strutture ricettive, Appiano si trova a due passi da Bolzano, a 10 chilometri a sud-ovest del capoluogo altoatesino, e direttamente sulla Strada del Vino dell'Alto Adige che parte da Nalles, Andriano e Terlano, attraversa Bolzano fino ad Appiano e quindi si snoda attraverso Caldaro, Termeno, Ora, Montagna, Egna, Cortaccia, Cortina e Margrè per arrivare fino a Salorno.

Radici antiche, marchio nuovo Ad Appiano si coltiva il vino già da oltre 2000 anni. La viticoltura ha vissuto un momento di massimo sviluppo sotto l’impero austro-ungarico, quando furono importate le varietà Riesling e Borgogna. Fino a 40 anni fa, un ruolo centrale nella produzione di vino ad Appiano l’aveva il Pinot bianco. Nonostante

questa lunga tradizione, fino a poche settimane fa Appiano non si proponeva sul mercato del vino con un’immagine unica e ben definita. La situazione è cambiata con l’adozione di un unico marchio ombrello "Eppan Wein" da parte dell’associazione dei produttori di vino della zona.

Oggi Appiano è il più grande comune vitivinicolo dell'Alto Adige con 941 ettari di vigneti che rappresentano un sesto della loro superficie provinciale totale. Il paese si trova anche al centro della più grande regione vinicola dell'Alto Adige che comprende i vigneti dell’Oltradige e della Bassa Atesina. Nei 17 impianti di lavorazione di Appiano (fra produttori di vino, di spumanti e distillerie) si producono annualmente 100.000 ettolitri di vino.

Oltre una dozzina delle loro varietà figurano tra i migliori vini dell'Alto Adige. Soprattutto i vitigni a bacca bianca trovano qui il terreno di coltura ideale e beneficiano della diversità dei siti e del clima mite. In tutto, sui fertili terreni di questa zona maturano circa 20 varietà: Pinot Bianco, Chardonnay, Riesling, Sauvignon, Pinot Grigio, Gewürztraminer e Müller-Thurgau, così come i vini rossi Pinot Nero, Cabernet, Merlot, Lagrein e diverse varietà di Vernaccia.

Old roots, new brand Wine has been cultivated in Appiano for more than 2,000 years, experiencing a special boom under the Habsburgs, when Riesling and Burgundy varieties found a new home here.

Until 40 years ago, the Pinot Blanc vines were central to Appiano’s wine production. Despite this long tradition, until a few weeks ago, Appiano had no uniform geographical branding.

Now, the umbrella brand "Eppan Wein" represents the association of all wine producers in the area, ensuring quality and value for local and visiting wine-lovers alike.

With its almost 15,000 inhabitants and around 4,000 beds for visitors, Appiano is just 10 km south-west of Bolzano and a key stop on the South Tyrolean Wine Route.

With 941 hectares of vineyards, Appiano is the largest wine-growing municipality in South Tyrol. The village itself is also the centre of South Tyrol's largest wine-growing area, with vineyards in Alto Adige and Bassa Atesina. A staggering ten million litres of wine are produced in the 17 Appiano processing plants alone, which are viewed as among the top wines of South Tyrol. The white grape varieties in particular find their ideal home here, benefitting from the terroir and the mild climate. ie bäuerliche Zucht hat Jenesien und den Tschögglberg im vorigen Jahrhundert zur „Wiege des Haflingers“ gemacht. Noch bis zur Mitte des 20. Jahrhunderts waren die Hochwiesen und Wälder auf diesem Bergkamm unzugänglich, die Arbeit auf den Höfen mehr als streng. Und es brauchte dringend eine besonders kräftige, aber auch geschickte und leichtfüßige Pferderasse als Arbeitstier - Trag- und Zugtier auf Feld und Hof, aber auch im Wald. Zum Einsatz war die Pferderasse im Raum Tirol zwar bereits vorher gekommen, nämlich im Ersten Weltkrieg. Was wenige wissen: Diesem militärischen Zweck diente die erste Zucht sogar, denn sie war eine späte Schöpfung des Habsburgerreichs und seiner alpinen Kriegsführung.

Auftraggeber waren das k. u. k. Ackerbauministerium gemeinsam mit dem für Pferdezucht zuständigen Militärinspektorat gewesen. Die Truppen brauchten Pferde vor Ort und die Monarchie wollte gleichzeitig den relativ armen Bergbauern zu einem Nebenverdienst verhelfen.

Aus der Paarung eines orientalischen Hengstes mit einer Landstute galizischer Herkunft wurde 1874 im Vinschgau ein prächtiges Exemplar Goldfuchs geboren. Es erhielt den Namen „249 Folie“ vom Züchter Josef Folie aus Schlanders. Die Rassenbezeichnung „Haflinger“ kam später durch den Volksmund, der den Ausdruck Haflinger (Dorf am Tschögglberg) zur Benennung von Saum- und Tragpferden verwendete. 19 Jahre lang vererbte Goldfuchs Folie, der erste Haflinger, seine Eigenschaften weiter. Die Zuchtbemühungen waren erfolgreich und verlagerten sich auf den Tschögglberg, mit der Gründung der ersten Haflingerzuchtgenossenschaft 1904. Hier kristallisierte sich die wichtigste Stammlinie der heute weltweiten Haflingerzucht heraus. Als nach dem Ersten Weltkrieg Südtirol zu Italien kam und das

Habsburgerreich zerbröselte, griff der italienische Staat regelnd in die Zucht ein und bemühte sich um die größtenteils in Österreich verbliebenen Hengste zur Deckung der wiederum in Südtirol befindlichen Mutterstuten. Die Zucht lief weiter, so dass nach den Kriegswirren 1947 der Südtiroler Haflinger Pferdezuchtverband gegründet wurde und sich die Haflingerzucht in ganz Europa und auch in den USA ausbreiten konnte. Höhepunkt dieser Entwicklung war die Gründung der Haflinger Welt-, Zucht- und Sportvereinigung 2013.

Als die Mechanisierung der Landwirtschaft ihren Lauf nahm, fand der Haflinger in Südtirol jedenfalls Eingang in Brauchtum, Freizeit- und Festkultur. Zum Gefährten der Bauernfamilie war er schon lang geworden.

Sein umgängliches Wesen macht ihn heute zum idealen Sport- und Freizeitpferd. So ist es auch auf Turnieren anzutreffen und mischt kräftig mit in der Dressur, beim Springen genauso wie in den Fahrsportwettbewerben.

ACANZA CON I CAVALLI "HAFLINGER" (AVELIGNESI) A SAN GENESIO Il paese dei cavalli sull'altipiano del Salto non è solo la patria dei famosi cavalli dalla criniera bionda, ma offre anche le più belle possibilità di effettuare cavalcate o escursioni a piedi sul prato di larici più esteso d'Europa. Con vista spettacolare sulle Dolomiti.

Fino alla metà del XX secolo i prati e i boschi d'alta quota su questa cresta montuosa del Montezoccolo (Tschögglberg in tedesco) erano erano inaccessibili, il lavoro nei masi di montagna era molto duro. C'era urgente bisogno di un cavallo particolarmente forte, ma anche agile e leggero, adatto al lavoro nei campi, al maso, ma anche nei boschi. Dall'accoppiamento di uno stallone orientale con una giumenta di campagna di origine galiziana, nel 1874, in Val Venosta, nacque un magnifico esemplare di un bel colore castano dorato. Venne chiamato “249 Folie”, dal nome dell’allevatore Josef Folie, di Silandro. Il nome Haflinger arrivò più tardi, e deriva dal paese di Avelengo, un comune di Monte Tschögglberg. È qui che ebbe origine l’allevamento ad uso rurale del docile e robusto cavallo, dalla bionda criniera.

Cavalcare a San Genesio Tutti i maneggi dell’altipiano del Salto offrono un ricco programma per gli amanti dei cavalli: per le famiglie con bambini, ma anche per piccoli gruppi o singoli, per principianti o per esperti cavallerizzi. In primavera-estate si possono prenotare anche bellissime gite in carrozza attraverso i radi boschi di larici e scoprire questa docile e particolare razza equina.

Da Bolzano, San Genesio è raggiungibile in soli otto minuti con la funivia, oppure con l’auto fino in centro del paese, in 10 minuti, lungo la bella strada panoramica.

Ogni anno, a San Genesio, si tengono tre seguitissimi eventi equestri: il torneo western a giugno, il torneo di dressage e salto degli ostacoli l'ultimo fine settimana di agosto e il divertente torneo goliardico di fine anno. Ma anche lo Skijöring e le gare di slitta trainata dai cavalli Haflinger appartengono alla tradizione invernale. Il mercato dei cavalli si svolge invece ogni anno a marzo a San Genesio/Paese di Sopra.

San Genesio and the Mount Tschögglberg are the birthplace of the flaxen-maned Haflinger. Coming from a time when life in the Alps was hard and places inaccessible, a horse was needed that could thrive here. So, in 1874 the first Haflinger was bred, by mating an oriental stallion with a Galician mare. The name is from the village of Haflinger (Avelengo, in Italian) on the Mount Tschögglberg. A BOLZANO REGNANO DUE PRINCIPI ROSSI SANTA MADDALENA E LAGREIN: LE ECCELLENZE DELLA CONCA BOLZANINA Cosa sarebbe Bolzano senza i vigneti che ne incorniciano l’inconfondibile panorama?

E cosa sarebbe la rinomata enogastronomia bolzanina, senza i due pregiati vini coltivati principalmente in questi vigneti, ovvero il Santa Maddalena e il Lagrein?

er conoscere meglio questi due eccellenze, ci siamo rivolti alla sommelier altoatesina Brunhilde Marginter.

Cominciamo dal Santa Maddalena, il tipico vino “del contadino” ll Santa Maddalena si produce principalmente dall’uva Schiava, un vitigno autoctono molto antico, la cui zona di produzione classica si sviluppa sui soleggiati pendii a nord di Bolzano, dalla collina di Santa Maddalena, da cui prende il nome, a Santa Giustina, Rencio, Coste e San Pietro. È il tipico vino dei contadini, ha una lunga tradizione nei masi locali che hanno mantenuta la tradizione, ogni piccolo maso il suo, ancora oggi. La differenza dagli altri tipi di Schiava è però sostanziale e sta proprio in quella percentuale di Lagrein (dal 5 al 15% a seconda del produttore) che lo rende più pieno, più intenso di un normale vino Schiava. È un vino elegante e raffinato, dagli aromi fruttati di mandorla e ciliegia, ottimo per accompagnare una merenda, ma anche antipasti leggeri, piatti di carne bianca, di pesce o formaggi. Da servire a una temperatura di 12-14 gradi.

Molto di moda negli ultimi anni è il Lagrein, l’altro “rosso” importante di Bolzano Il Lagrein è anch’esso un vitigno autoctono dell’Alto Adige, arrivato già nel 17esimo secolo probabilmente dalla Val Lagarina, in Trentino.

Dalle sue rosse bacche si produce un eccellente vino rosato (che qui si chiama Lagrein Kretzer ed è molto apprezzato, per esempio d’estate come aperitivo) ed un vino rosso dal colore più intenso, il Lagrein, ricco di tannini, strutturato, dall’aroma più deciso, con note di prugna e violetta, liquirizia, a seconda del produttore. Si coltiva tipicamente a sud della conca bolzanina, nella zona dei masi di Gries e negli antichi vigneti del Convento Benedettini Muri-Gries. È un vino da servire a una temperatura di 16-18 gradi, accompagnandolo per esempio a carni e salumi di selvaggina.

Come si sceglie una buona bottiglia?

Diciamo che comunque i vini altoatesini in commercio sono tutti di ottima qualità. In ogni caso, consiglio di controllare che il vino provenga dalla sua zona tipica di produzione. Di grande aiuto è la guida VITAE dell’Associazione Italiana Sommelier. Nel dubbio, farsi consigliare in enoteca, dove ci sono persone preparate e competenti che, sulla base di quanto si desidera spendere, sono in grado di proporre il vino più adatto.

MOSTRA VINI DI BOLZANO 26 – 29 MARZO 2020 La Mostra Vini di Bolzano è un piccolo ma eccellente evento, momento d'incontro per gli ospiti e la gente del posto e nel frattempo un punto fisso tra le manifestazioni vinicole della città di Bolzano e della Strada del Vino dell'Alto Adige. Giunta quest’anno alla sua 97esima edizione, è ospitata nel suggestivo Castel Mareccio, nel cuore della città.

Tra il 26 e il 29 marzo saranno presenti una quarantina tra le più note cantine della provincia, così come piccoli produttori, cuochi famosi, intenditori e sommelier e molto altro.

Enologi appassionati, intenditori esperti e meno esperti possono, durante i diversi seminari, scoprire l’Alto Adige, sperimentare la degustazione professionale e conoscere oltre 180 etichette di una quarantina di aziende vinicole di Bolzano e dintorni, Oltradige e Bassa Atesina, della Valle Isarco e di Merano e del Burgraviato.

Vogliamo comunque mantenere il Classico nella nostra gamma di prodotti: fruttato, fresco e bevibile. I "nuovi" vini di S. Maddalena (Selezioni), sono vini più eleganti, complessi e più pregiati. Di solito arrivano sul mercato 1,5 anni dopo.

Nel gruppo degustiamo continuamente il processo d’invecchiamento dei vini. Sempre alla cieca.

Quindi a volte può capitare di criticare il proprio vino. L’occasione di reagire per mantenere o, se possibile, aumentare la qualità.

Was wäre Bozen ohne seine Weinhügel? Und was die renommierte Weingastronomie ohne ihre zwei hauseigenen Weinsorten?

Die Bozner Sommelière Brunhilde Marginter verrät, was die zwei Bozner Roten ausmacht: Der ehemalige “Bauernwein” St. Magdalener hat seine Grundlage im Vernatsch, einer autochthonen Rebsorte, die vor allem im Norden der Stadt anzutreffen ist.

Er wurde früher gern zu Bauernkost getrunken - es gibt noch viele kleine Winzer und Bauern, die ihren eigenen Magdalener keltern. Um aus dem Vernatsch einen St. Magdalener zu machen, wird 5-15% Lagrein hinzugegeben. Das macht ihn rund und raffinierter.

Er eignet sich hervorragend, um Merenden zu begleiten, aber auch zu Antipasti, zu Geflügel, Fisch und Käse. Am besten schmeckt er gekühlt auf 12-14°C. Der Lagrein hingegen ist ein intensiverer dunkelroter Wein, tanninreich, charaktervoll, mit Aromen, die an Pflaumen, Veilchen und Lakritze erinnern, je nach Hersteller. Besonders bekannt sind die Lagen des Trendweins um den Bozner Stadtteil Gries im Süden der Stadt. Als Begleiter von Fleisch- und Wildgerichten sehr geschätzt, sollte er bei Temperaturen um die 1618°C serviert werden. Auch er stammt von einer heimischen Rebsorte. Sie wurde bereits im 17. Jahrhundert in Bozen gezogen, vermutlich ursprünglich aus dem Trentino eingewandert.

Lagrein, on the other hand, is a far more intense experience. Sumptuously dark, rich in tannins and full of character, it can have plum, violet and liquorice aromas, depending on the producer. The centre for production is the Gries district of Bolzano, south of the city centre.

Lagrein is another local grape variety that was already being grown in Bolzano in the 17th century, most likely having emigrated from Trentino. Very much appreciated as an accompaniment to meat and game dishes,

What would Bolzano be without its vineyards, or our renowned wine industry, without our two homegrown wine varieties? The Bolzano sommelière Brunhilde Marginter reveals what makes the two Bolzano reds so very special. The former “farm wine”, St. Magdalener, has as its foundation the Vernatsch grape variety – a native to the province, found mainly in the north of the city. In the past, it was most often the accompaniment to rustic farmhouse fare. Even today, there are still many local farmers who grow their own vines and press their own Magdalener. It’s excellent with finger food, but especially hors d’oeuvres, poultry, fish and cheese. It’s best served somewhere around 12-14°C.

The main event in the Bolzano wine calendar, this year’s Bolzano Wine Tasting will be the 97th such event. As always, it will be held in the heart of the historical centre of Bolzano, with Mareccio Castle as its elegantly picturesque backdrop. You can expect to sample wines from around forty of the most famous South Tyrolean wineries, including small, independent winemakers.

There will also be events with famous chefs, wine connoisseurs and sommeliers: including seminars and workshops, demonstrations and tastings.

This year, a sales stand will also be set up in the castle wine cellar. You can also book dinner at the castle on Friday and Saturday, with chefs Anna Matscher and Florian Patauner preparing delights for the palate.

QUIZ: Quiz: Solution from page 9 c) Leopoldine Hofmann was a successful opera singer from a lower middle-class background, before she met Archduke Heinrich. She gave up her career in Austria for the son of Austria’s viceroy to Italy and the sister of King Charles Albert of Sardinia-Piedmont. Their love story has gone down in history because of the “scandalous” differences in status and the obstacles that were put in their way.

The two fled to Bolzano and married in secret, leading to the Archduke losing all court privileges at the time. Later, the couple was rehabilitated and they lived in Bolzano for two decades. In 1891, both died of pneumonia in Vienna, but were buried, side by side, in the crypt of Bolzano Cathedral.
