Ingredients

Asian Chicken

½ lb. chicken strips 1 Tbsp. fresh ginger, grated 2 Tbsp. soy sauce 1 cup fennel ½ cup carrot Salt and pepper 1 Tbsp. sesame seeds

Directions 1. Marinate the chicken strips with the chopped ginger, soy sauce and pepper for 5 – 10 minutes. 2. Slice the fennel and carrots thinly. 3. Place carrots and fennel with 1½ tablespoons water in the Micro Healthy Delight. Cover and microwave at 600 watts for 5 minutes. Allow to stand for 2 minutes. 4. Season with salt and pepper, stir and place the marinated chicken strips on top of the veggies. Cover and microwave at 600 watts for 3 minutes. 5. Sprinkle with sesame seeds before serving.

Asian Cod & Zucchini

2 cup zucchini, cubed or thick slices 2 Tbsp. water 2 (6 oz.) cod fillet Salt and freshly ground pepper 2 Tbsp. soy sauce ½ lemon, juiced 2 cloves garlic, minced 1 Tbsp. olive oil ½ tsp. sesame oil 2 scallions thinly sliced on the bias Directions 1. Place zucchini and water in the Micro Healthy Delight, microwave for 1-2 minutes. 2. Drain if necessary, place the cod fillet on zucchini. Season with salt and pepper, cover and cook about 4-5 minutes. Let stand 1 minute. Transfer to a plate. 3. Mix remaining ingredients, pour over fish and zucchini.

Breakfast Nachos

1 lb. pork sausage, cooked 3 large eggs 1 (12 oz.) bag tortilla chips ½ cup bacon bits ½ cup cheddar cheese, shredded ¼ cup nacho cheese sauce ¼ cup red onion, chopped 2 Tbsp. scallions, chopped 3 Tbsp. sour cream, optional Hot sauce, optional Directions 1. Add 3 eggs to Quick Shake Container, cover and shake vigorously until well combined. Pour inthe Micro Healthy Delight and cook on 50% power 2 minutes. Mix everything together with spatula. 2. Arrange tortilla chips on plate and top with cooked sausage, scrambled eggs, bacon bits and remaining ingredients. Serve immediately.

1 tortilla ½ tsp. taco seasoning ½ cup pinto or black beans, drained ½ cup broccoli florets, ¼ cup corn, drained ½ cup cooked rice

Directions 1. Fold tortilla and place in the Micro Healthy Delight. Add beans, broccoli and rice. Place cover on and microwave for 2-3 until broccoli is tender. 2. Remove from the microwave and add optional toppings, as desired.

1 tomato, cut into chunks 1 bell pepper, cut into strips ½ Tbsp. Herbs de Provence 1 chicken breast, cut into strips ½ tsp. olive oil Kosher Salt to taste Fresh ground black pepper to taste

Directions 1. Add vegetables to the Micro Healthy Delight, sprinkles with Herbs de Provence. 2. Cover and microwave for 3-4 minutes, at 50% power, let stand one minute. 3. Add Chicken, stir, cover and microwave for 6-7 minutes at 50% power, let stand one minute. 4. Open cover, add oil salt and pepper. 5. Serve warm Serve over rice

Cod Fish

1 small yellow zucchini 1 small green zucchini 2 medium tomatoes 2 (7 oz./200 g) codfish Pinch salt and pepper to taste 1 sprig of fresh thyme 1 lemon, cut in wedges

Directions 1. Set Mandoline circular knob to #3 thickness, and set triangle to locked position. 2. Slice zucchini and tomatoes and arrange them in the center of the Micro Healthy Delight. Place the codfish pieces on opposite sides of the veggies. Sprinkle with salt, pepper, and fresh thyme. 3. Cover and microwave for 5 minutes at 70% power or until fish is fully cooked. Let cool slightly and serve with lemon wedges.

Directions 1. In a small bowl mix together corn muffin mix, egg and milk, stir to combine. 2. Pour the batter in the Micro Healthy Delight and microwave at 50% for 7 minutes. Then Microwave at 100% for 1 minute.

4 slices of your favorite bread 4 eggs, beaten ½ tsp. cinnamon ¼ tsp. vanilla extract

Directions 1. Mix 4 eggs, cinnamon and vanilla extract in a shallow bowl and dip bread one by one, coating for 30 seconds total and place in the Micro Healthy Delight. 2. Microwave on high for 3 minutes until egg is cooked, flipping halfway through. 3. Top French toast with butter, fresh blueberries, syrup

½ small onion 1 tsp. garlic 1 tsp. Italian herb seasoning ½ cup of mushrooms, sliced ½ cup asparagus cut in ½” slices 1 Tbsp. fresh basil, chopped ½ cup spinach, shredded 4 whole eggs ½ cup egg whites 2 Tbsp. water

¼ tsp. kosher salt ¼tsp. ground black pepper 4 Tbsp. shredded mozzarella cheese Optional toppings Halved grape tomatoes small fresh mozzarella cheese balls thinly sliced fresh basil

Directions 1. Combine onion, garlic and Italian herb seasoning in the SuperSonic Chopper Extra with the blade attachment. Process by pulling cord until ingredients are diced. Set aside in bowl. 2. Add sliced vegetables to bowl, toss to season and mix. 3. Combine basil, spinach, eggs, egg whites and water in base of SuperSonic Chopper Extra fitted with paddle whisk attachment. Cover and pull cord until well blended. 4. In the Micro Healthy Delight, place seasoned sliced vegetables. Add the egg mixture and the cheese. stir. Season with salt and pepper. 5. Place the covered Micro Healthy Delight in the microwave and cook on high power 3-4 minutes. 6. Top with tomatoes and mozzarella cheese balls.

6-8 asparagus stalks, trimmed 2 Tbsp. water 1 Tbsp. butter ¼ tsp. minced garlic Dash of lemon juice, to taste 1-2 Tbsp. parmesan cheese

Directions 1. Add asparagus in the Micro Healthy Delight, add water. 2. Cover and microwave for 4-5 minutes, let stand for 1-2 minutes. 3. Uncover and add butter, garlic, lemon and parmesan, toss to coat.

One Pot Green Energy Meal

½ cup broccoli florets ¾ cup zucchini, diced ½ cup celery stalks, thinly sliced 1 garlic clove, chopped ½ cup bulgur Salt and pepper, to taste 1 cup water 1 Tbsp. olive oil ⅓ cup cashews Directions 1. Add bulgur, garlic, salt and water in the Micro Healthy Delight. 2. Place vegetables on top. Cover and microwave for 9-10 at 600 watts, allow to stand for 3 minutes after cooking. 3. Drizzle olive oil over vegetable and sprinkle with pepper and cashews

¼ cup green onions 2 tbsp water ¼ cup heavy cream ¼ cup milk 2 Tbsp. all-purpose flour 2 eggs 2 Tbsp. grated cheese 5-6 basil leaves, chopped Salt and pepper Directions 1. Slice the spring onions thinly. Place in the Micro Healthy Delight, add the water, cover, and microwave for 6 minutes at 50% power, stirring halfway through. Allow to stand for 1 minute, then drain. 2. Mix the remaining ingredients in the Quick Shake Container. Pour onto the onions inside the Micro Healthy Delight. 3. Cover and microwave for 4-5 minutes at 50% power. Allow to stand for 2 minutes. 4. Unmold and serve with a salad.

Parmesan Zucchini

1 medium zucchini, sliced into coins 2 Tbsp. water 1 Tbsp. butter, cut into chunks 1-2 Tbsp. grated Parmesan cheese Kosher salt and freshly ground black pepper

Directions 1. Place zucchini in the Micro Healthy Delight, add the water, cover, and microwave for 4-5 minutes, stirring halfway through. Allow to stand for 1 minute, then drain. 2. Add the butter, tossing to melt. Season with the kosher salt and freshly ground black pepper and sprinkle with Parmesan.

Quinoa Bowl

¾ cup quinoa, mixed or white, rinsed thoroughly 1¾ cup water ⅓ cup frozen peas or edamame 1 small zucchini, thinly sliced or spiralized ½ avocado, cut into wedges 2 Tbsp. feta cheese, crumbled ¼ lemon, juiced Extra virgin olive oil Toasted seeds, chopped chives, mint, coriander or parsley Directions 1. Combine rinsed quinoa with water in the Micro Healthy Delight, cover and microwave on high for 10 minutes, halfway through add the peas or edamame. After cooking, allow to stand covered for 5 minutes. Remove cover, fluff with a fork. 2. Add the zucchini, avocado wedges, feta and lemon juice. Drizzle with olive oil and season with salt and pepper.

Salmon

Carrots àA L'orange

½ cup grated carrots ¼ tsp. ground cumin 1 salmon filet, skinless 1½ oz. orange juice ½ tsp. olive oil ¼ tsp. chopped coriander Kosher salt to taste Fresh ground black pepper to taste

Directions 1. Add grated carrots to the Micro Healthy Delight, sprinkle with cumin and 3 Tbsp. orange juice. 2. Place salmon filet on top of carrots 3. Cover and microwave for 4 minutes at 50% power, let stand for 3 minutes. 4. Mix remaining orange juice with oil, coriander, salt and pepper. 5. Open cover and pour over salmon and carrots. 6. Serve warm.

Salmon & Zoodles

with Dijon Dil l Sauce

Ingredients ½ of a medium zucchini or 1 cup zucchini noodles 4 oz. salmon 1 Tbsp. water Salt and pepper, to taste

Dijon Dill Sauce 1 garlic clove, minced 2 Tbsp. chopped fresh dill 1½ Tbsp. mayonnaise 1½ Tbsp. Dion mustard 2 tsp. fresh lemon juice ½ tsp. kosher salt ¼ tsp. freshly ground black pepper

Directions 1. In the SuperSonic Chopper Compact add garlic and dill, cover and pull cord until finely minced. Add the remaining sauce ingredients, cover and pull cord until well combined; set aside. 2. Peel and trim ends from zucchini. 3. Assemble Spiralizer with Thick Cut Blade Cone. Place a medium bowl under Blade Cone. 4. Place zucchini into Spiralizer and secure in place. 5. Turn handle until screw unlocks. Remove remaining nib, reload Spiralizer with the other half of squash and repeat. 6. Transfer squash to the base of the Micro Healthy Delight and add water, place salmon on top of the zucchini, season with salt and pepper. 7. Microwave uncovered on 80% power for 5 minutes. 8. Drain any water in the Micro Healthy Delight, pour sauce over salmon and serve 19

Spring Egg Flower

1 small yellow squash 1 small zucchini 1 small carrot 1 Tbsp. water + 2 Tbsp. water 3 eggs 1 spring of fresh thyme

Directions 1. Rinse the vegetables. Cut the tips of both ends. By using the Click Series wide head, make some vegetable strips and arrange the slices in the Micro Healthy Delight. Pour 1 Tbsp / 15 ml water, cover and cook in the microwave oven 5 minutes at 900 watts. 2. Add the eggs and the remaining water in the Quick Shake Container, cover and shake until well combined. 3. Pour the egg mixture over the precooked vegetables, from the outside up to the center. 4. Cover and cook in the microwave 5 minutes at 360 watts. 5. Let stand 5 minutes before eating or serving.

1 medium zucchini 1 Tbsp. water 1 salmon fillet Salt and pepper, to taste 2-3 Tbsp. teriyaki sauce or paste 2 tsp. sesame seeds, optional

Directions 1. Peel and trim ends from zucchini. 2. Assemble Spiralizer with Thick Cut Blade Cone. Place a medium bowl under Blade Cone. 3. Place zucchini into Spiralizer and secure in place. 4. Turn handle until screw unlocks. Remove remaining nib, reload Spiralizer with the other half of squash and repeat. 5. Transfer zucchini to the Micro Healthy Delight and add water, place salmon on top of the zucchini, season with salt and pepper. 6. Microwave uncovered on 80% power for 5 minutes. 7. Drain any water in the Micro Healthy Delight, pour teriyaki sauce over salmon and serve with sesame seeds, if desired.

Vegetable couscous

1 yellow squash, diced 1 red bell pepper, diced ¾ cup cherry tomatoes, halved ⅓ cup water ½ cup cooked chickpeas ⅔ cup couscous Salt and pepper Tabasco 1 Tbsp. olive oil Chopped parsley for serving Directions 1. Place yellow squash, pepper, and tomato in the Micro Healthy Delight. 2. Add water, cover and microwave at 70% for 3 minutes. Allow to stand for 1 minute. 3. Rinse the chickpeas. Add the chickpeas and the couscous to the Micro Healthy Delight. 4. Season with salt, pepper and tabasco, then stir. Cover and microwave for 1 minute. 5. Stir, add olive oil and allow to stand for 2 minutes before serving

Zoodle Nest

with Eggs

1 medium zucchini 2 Tbsp. water 4 large eggs Pinch salt and pepper 2 tsp. Olive oil for serving, optional

Directions 1. Using the Handy Spiralizer, spiralize the zucchini into spaghetti. Make 4 round nest with the zucchini noodles in the Micro Healthy Delight. Pour 1 tsp. water on each nest, cover and microwave at 50% power for 90 seconds. 2. Crack an egg into each nest and prick the egg yolk with a toothpick. Cover the Micro Healthy Delight and microwave at 50% power for 2-3 mins., depending on the desired doneness of the egg yolk. 3. Allow to rest, covered, for 2 mins. Gently transfer the nests onto serving plates, season to taste and serve.
