Zum Einen Sternekoch Roland Trettl, der aus Oberbozen auf dem Ritten stammt und heute zu der Garde der renommiertesten Köche Europas gehört, und zum Anderen Sylvia Pichler, eine junge Taschendesignerin aus Bozen, deren aus Industriematerialen gefertigte Taschen international für Furore sorgen.

Da questo territorio, dove lo spirito alpino si combina con il flair mediterraneo, proviene, infatti, un mix variopinto di lingue, tradizioni, specialità culinarie e culture. Che tale fusione sia anche un terreno fertile per menti creative desideriamo mostrarvelo con questa edizione del Welcome Guest Magazine. Conoscerete due giovani personalità che rappresentano il nuovo Alto Adige: fresche, piene di idee e internazionali. Da un lato il cuoco stellato Roland Trettl, che proviene da Soprabolzano sul Renon e che oggi è uno degli chef più rinomati d’Europa, e dall’altro Sylvia Pichler, una giovane designer di Bolzano, le cui borse, realizzate con materiali industriali, hanno fatto scalpore a livello internazionale. Roland Trettl, Jahrgang 1971, ist Südtirols Aushängeschild der Kochkunst. Seit 2003 ist er Executive Chef im Restaurant Ikarus, Hangar-7 in Salzburg, und hier setzte er das extrem riskante Gastkochkonzept durch. Riskant deshalb, weil jeden Monat ein anderer Spitzenkoch hier seine Kunst inszeniert und das gesamte Team auf die neue Karte eingestellt werden muss. Wenn es jemand schaffen konnte, ein neues Konzept umzusetzen, dann war es der sympathische Rittner, der in der internationalen Kochszene als Enfant Terrible gilt, weil er immer genau das tut, was man am wenigsten von ihm erwartet. Er stellt alles in

Frage, und zieht daraus seine Schlüsse, die meist erfolgreich sind. Der Grund dafür: Er geht keine Kompromisse ein und legt bei allem, was er tut, Wert auf höchste Qualität, Präzision und Perfektion. Seine Kochkarriere begann der heute 41 jährige 1987 im Parkhotel Holzner in Oberbozen. Nach drei Jahren wechselte er ins Restaurant Amade nach Bozen, bevor es ihn nach München zog. Er stellte sich beim Jahrhundertkoch Eckart Witzigmann vor und bekam dessen Vertrauen: zwei Jahre arbeitete er im Restaurant Aubergine in München, zwei weitere Jahre im Restaurant Tantris. Trettl war begierig zu lernen und wurde zum Musterschüler des Meisters – und bekam dessen Vertrauen: mit 26 Jahren ging er für vier Jahre nach Mallorca ins Restaurant Ca’s Puers, wo er als Küchenchef das Restaurant schnell in den Ruf brachte, das beste auf der gesamten Insel zu sein. Mit 30 bekam Roland Trettl die Chance, für ein halbes Jahr in Tokio zu arbeiten und im „Restaurant Marine Terrace“ sein Wissen als Food and Beverage Trainer weiter zu geben. 2003 dann der wichtige Schritt nach Salzburg, wo er im Hangar-7 ein vollkommen neue Konzept umsetzte – und erfolgreich machte. Welcome hat während des Sommerurlaubes 2012 ein Gespräch mit Roland Trettl geführt. Und viel über den Menschen, seine Kochkunst und seine Einstellungen erfahren.

Südtirol ist meiner Meinung nach der beste Ort, um das Kochen zu erlernen. Hier treffen zwei Kulturen aufeinander, was auch in der Küche Spuren hinterlässt. Außerdem muss ich sagen, dass bei meiner Ausbildung das Schulsystem in Südtirol sehr gut war: In der Berufsschule in Brixen hatte ich ausgezeichnete Lehrer, im Betrieb hatte ich einen harten aber guten Lehrmeister. Es bringt meiner Meinung nach nichts, wenn man Lehrlinge in Watte packt. Sie sollen auf den Job vorbereitet werden. Und das können sie nur dadurch, dass sie sofort im Tagesgeschäft eingebunden werden. Je mehr ein Lehrling arbeitet, desto mehr lernt er. Die Südtiroler Küche ist sensationell gut und hier gibt es eine Menge sehr gute Restaurants, auch wenn die Speisekarte einfach ist. Die Köche bringen aber das einfache in einer sehr guten Qualität auf die Teller und das ist die Voraussetzung, dass ein Koch sein Handwerk lernen kann. Sagen wir so: Die Basis in Südtirol ist perfekt!

Aber ich würde doch jedem Jungkoch empfehlen, den Sprung ins Ausland zu wagen. Denn im Ausland hat man die Möglichkeit, sich persönlich weiter zu entwickeln. Und man lernt zu schätzen, was man daheim hat. Das Ausland sehe ich als Chance für junge Menschen, sich sowohl fachlich als auch persönlich weiter zu entwickeln. Ich zum Beispiel bin im Ausland selbstständig geworden und das hat meiner Persönlichkeit gut getan. Man ist fern der Heimat auf sich alleine gestellt und die auftretenden Probleme muss man selber lösen. Und wenn es einem jungen Koch im Ausland nicht gefällt, dann hat er immer noch die Möglichkeit, nach Hause zurück zu kehren. Diese Option bleibt immer offen. Mit dem Vorteil, dass er dann zu schätzen weiß, was er zu Hause hat.

Ich kann nur für mich reden. Und die Eigenschaften, die mich weiter gebracht haben waren Geduld, Gelassenheit und Fleiß. Man darf nichts erzwingen wollen.

Viele meiner Kollegen in München sind nach einem harten Tag im Restaurant spät am Abend noch ins Zimmer gegangen, und haben Kochbücher studiert.

Das habe ich nie gemacht. Ich bin lieber auf einen Drink in eine Bar gegangen, um ein bisschen herunter zu kommen. Man darf nichts erzwingen wollen, darf nicht überpushen.

Grundvoraussetzung ist das Gefühl für das Produkt, das Wissen kommt später dazu, das kann man lernen. Als Koch sollte man ein Gefühl für den Geschmack mitbringen, sollte offen für Neues sein. Doch nur gut kochen zu können allein bringt nicht viel: Als Koch muss man ein Gespür für sein Team und seine Mitarbeiter haben. Es nützt nichts, wenn ich perfekt koche, aber mein Team nicht motivieren kann. Der Job in der Küche ist ein Mannschaftssport. Und als Koch sollte man sich regelmäßig in Frage stellen – was gestern gut war, muss morgen nicht immer noch gut sein. Man muss Mut zur Veränderung haben – und wenn eine Veränderung nicht gut war, der Schritt zurück zum Traditionellen steht immer noch offen. Doch wer sich nicht traut, Neues zu versuchen, der wird nie wissen, ob es funktioniert hätte.

Visionen und Entwicklungen sind wichtig. Aber es bringt nichts, am Gast vorbei zu kochen. Der Gast ist das Wichtigste in unserem Geschäft. Es ist ok etwas neues zu probieren und den Gast überzeugen zu wollen. Aber als Koch bin ich kein Missionar. Mein Job ist es, dass der Gast nach dem Besuch in meinem Restaurant glücklich und zufrieden ist.

Sie sind ein Südtiroler Koch, der in der Welt für Furore sorgt. Sie haben in Südtirol ihre Wurzeln und haben hier ihr Handwerk gelernt. Ist Südtirol ein guter Ort, um in eine Kochlehre zu gehen?

Welche Eigenschaften sind notwendig, um den internationalen Durchbruch zu schaffen?

Was zeichnet einen guten Koch aus? Ist es das Gefühl für die Gerichte oder das Fachwissen?

Ein Spitzenkoch zeichnet sich also durch Veränderungen aus. Wie wichtig ist es, den Geschmack der Massen zu erreichen?

Was bedeutet für Sie Heimat?

Mein Förderer war für mich sehr wichtig. Er hat mir die Augen geöffnet, was Produktvielfalt und Qualität betrifft. Er hat mir die Möglichkeiten eröffnet in Mallorca und Tokio zu arbeiten. Letzten Endes war er es, der mich in den Hangar-7 gebracht hat. Ich hatte viel Glück. Aber auch die notwendige Geduld. Viele junge Kollegen haben einfach die Geduld nicht, die notwendig ist, um sich fertig zu entwickeln. Man muss halt in Kauf nehmen, eine gewisse Zeit im Schatten des Meisters zu stehen. Ich hatte damit beispielsweise kein Problem: Denn ich durfte im Schatten des Allerbesten stehen. Die fehlende Geduld sehe ich auch bei vielen meiner Jungköche: Ich betreibe im Hangar-7 fünf gastronomische Outlets (Gourmetrestaurant, Bars, Café, Lounge), und jeder muss bereit sein, in jedem der fünf Bereiche sein Bestes zu geben. Es gibt nicht nur das Flaggschiff Restaurant IKARUS – die anderen Teilbereiche sind mir ebenso wichtig. Und wenn ein Koch nicht die Geduld aufbringt, ein Frühstück ebenso liebevoll und mit vollem Einsatz zuzubereiten wir ein Galadinner, dann ist er bei mir falsch.

Das ist eine Frage, die ich mir nie gestellt habe. Eines ist sicher: ich würde ganz sicher nicht mehr kochen. Als ich aus Südtirol weg gegangen bin, war es mir im Land einfach zu eng – und ich musste weg. Heute ist es so, dass ich Südtirol wieder mehr zu schätzen weiß. Das, was mich vertrieben hat, das ist es, was ich heute so charmant am Land finde und was mich glücklich macht: Es ist so, dass in Südtirol alles gleich bleibt, und Veränderungen nur sehr langsam vor sich gehen. Es sind die Kleinigkeiten, die man zu schätzen lernt, wenn man länger nicht hier war: Die Sicherheit, oder die Schönheit. Oder die Besonderheiten. Wenn ich beispielsweise über den Bozner Obstmarkt spaziere, dann begeistert mich diese Produktvielfalt immer wieder.

Es gibt zwei Szenarien, die ich mir vorstellen kann, dass sie mich irgendwann nach Südtirol zurück bringen. Einmal wäre es ein Projekt, etwas total Neues zu machen. Ich träume von einem Restaurant im Siegesdenkmal, als einen Ort der Begegnung und als Beweis, dass die Aussöhnung zwischen den Volksgruppen stattgefunden hat. Es müsste also ein Projekt sein, an das heute noch niemand glaubt und das ich zum Laufen bringen würde. Das könnte ein Anreiz sein, um zurück zu kommen. Das zweite Szenario könnte sein, dass ich zurück komme, um ein kleines und einfaches Gasthaus zu übernehmen und zu führen. Das könnte soweit sein, wenn ich der Meinung bin, dass ich alles schon gesehen und erreicht habe, und dass ich zurück zu den Wurzeln möchte.

Ich komme immer wieder gerne nach Südtirol – auf Urlaub. Hier sind die Leute, die mich von klein auf kennen und die mir unverblümt sagen, was sie von mir halten. Das sind die Leute, die mir direkt sagen, wenn ich mich zum Negativen verändert habe, wenn ich zu abgehoben bin. Und es hat immer wieder Phasen gegeben, wo das notwendig war. Ich möchte nicht als arrogant und unerreichbar gelten. Ich möchte den Bodenkontakt halten und ein ganz normaler Mensch sein und als solcher wahrgenommen werden.

Das gibt es mehrere. Es gibt viele schöne Orte auf der Welt. Spontan fällt mir Vancouver ein, mit seinen vielen Nationalitäten, die friedlich zusammen leben.

Oder Hawaii. Oder der Ritten. Oder New York. Ich finde auch die elegante Arroganz der Pariser schön.

Ich hatte nie große Ziele, sondern habe immer eine Stufe nach der anderen genommen. Und mit Geduld und Fleiß ist alles dann so gekommen, wie es gekommen ist. Ich möchte einfach nur eines: Glücklich bleiben.

Roland Trettl, nato nel 1971, è il fiore all’occhiello dell’arte culinaria in Alto Adige. Dal 2003 è executive chef presso il Ristorante Ikarus, Hangar-7, a Salisburgo, e qui ha affermato un concetto culinario molto azzardato, in quanto ogni mese uno chef diverso mette in scena la sua arte e tutto il team deve essere preparato sul nuovo menu. Se c'è qualcuno in grado di creare un concetto radicalmente nuovo, allora questo è il simpatico Trettl, che nello scenario internazionale della cucina vale quanto un “enfant terrible”, perché fa esattamente sempre quello che ci aspetteremmo da lui. Mette tutto in discussione e giunge alle sue con-

clusioni, di solito di successo. Il perché? Non scende a compromessi e in tutto ciò che fa punta alla massima qualità, precisione e perfezione.Questo cuoco, oggi di 41 anni, ha iniziato la sua carriera nel 1987 presso il Parkotel Holzner a Soprabolzano. Dopo tre anni si è spostato al Ristorante Amade di Bolzano, prima di trasferirsi a Monaco di Baviera. Qui si presentò al rinomato chef Eckart Witzigmann e ottenne la sua fiducia: per due anni lavorò al Ristorante Aubergine di Monaco e per altri due anni al Ristorante Tantris. Trettl, ansioso di imparare, divenne lo scolaro modello del maestro, ottenendo la sua fiducia.

A 26 anni andò per quattro anni a Maiorca al Ristorante Ca’s Puers, dove, in qualità di chef di cucina, portò rapidamente il ristorante alla fama, riuscendo a farlo diventare il migliore sull’intera isola. A 30 anni, Roland Trettl ebbe la possibilità di lavorare per un anno e mezzo a Tokyo e al Ristorante Marina Terrace mise a disposizione le sue conoscenze in qualità di “Food and Beverage Trainer”. Nel 2003 arrivò il passo importante a Salisburgo, dove, all’Hangar-7, ha implementato un concetto completamente nuovo, che ha riscosso un grande successo. Durante le vacanze estive 2012, Welcome ha condotto un’intervista con Roland Trettl, scoprendo molto sulla sua persona, sulla sua arte culinaria e sulle sue basi.

L’Alto Adige è, a mio parere, il luogo migliore per imparare a cucinare. Qui si incontrano due culture, che lasciano la loro impronta anche nella cucina. Inoltre, devo dire che, per la mia formazione, il sistema scolastico dell’Alto Adige è stato molto buono: presso la scuola professionale di Bressanone ho avuto ottimi maestri, in servizio ho avuto un insegnante duro, ma buono. Secondo me non porta a niente tenere nella bambagia gli allievi, che dovrebbero essere preparati al lavoro. E questo è possibile solo se sono direttamente coinvolti nell’attività quotidiana. Quanto più un allievo lavora, tanto più impara. La cucina dell’Alto Adige è sensazionale e qui ci sono molteplici ristoranti di qualità anche se hanno un menu semplice. Gli chef trasformano ciò che è semplice in un prodotto di alta qualità e questa è la condizione per cui un cuoco può imparare il suo mestiere. Noi diciamo così: la base in Alto Adige è perfetta! Ma vorrei suggerire ad ogni giovane cuoco di fare il grande passo all’estero, perché all’estero si ha la possibilità di svilupparsi personalmente e si impara ad apprezzare ciò che si ha nel proprio paese. Concepisco l’estero come un’opportunità per i giovani di crescere sia professionalmente che personalmente. Io, per esempio, all’estero sono diventato indipendente ed è stato un bene per la mia personalità. Si è lontani da casa da soli e si devono risolvere i problemi per conto proprio. E se ad un giovane cuoco non piace l’estero, ha sempre la possibilità di tornare in Alto Adige. Questa opzione è sempre aperta. Con il vantaggio che sa apprezzare quello che ha in casa.

Io posso parlare solo per me stesso. E le qualità che mi hanno portato avanti sono state pazienza, calma e diligenza. Niente si può conseguire per forza. Molti dei miei colleghi di Monaco di Baviera, dopo una dura giornata al ristorante, la sera tardi andavano in camera e studiavano libri di cucina. Questo io non l’ho mai fatto. Preferivo andare a bere un drink in un bar per andare un po’ in giro.

Niente può essere forzato.

Il requisito fondamentale è la sensibilità verso la materia prima, la conoscenza viene dopo e si può imparare. Come cuoco si dovrebbe avere il senso del gusto ed essere aperti alle novità. Nondimeno saper cucinare bene da soli non porta a molto: come cuoco si deve avere uno spirito di squadra con il proprio team e i propri collaboratori. Non serve a niente se io cucino alla perfezione, ma se il mio team non è motivato. Il lavoro in cucina è uno sport di squadra. E come cuoco ci si deve regolarmente mettere in discussione – ciò che ieri è stato buono, domani potrebbe non esserlo. Si deve avere il coraggio di cambiare – e se un cambiamento non è stato positivo, è sempre aperta la possibilità di fare un passo indietro ritornando al tradizionale. Ma chi non ha il coraggio di provare cose nuove, non saprà mai se queste avrebbero funzionato.

Trend e tendenze sono importanti. Ma non serve a niente cucinare all’ospite se questo non accetta le novità. L’ospite è la cosa più importante nella nostra attività. Va bene provare qualcosa di nuovo e volerlo stupire. Ma, come cuoco, non sono un missionario. Il mio lavoro consiste nel rendere l’ospite felice e soddisfatto dopo la sua visita al mio ristorante.

Lei è uno chef altoatesino, che nel mondo fa furore.

In Alto Adige ha le Sue radici e qui ha imparato il Suo mestiere. L’Alto Adige è una buona location per diventare chef?

Quali qualità sono necessarie per avere successo a livello internazionale?

Che cos’è che rende bravo un cuoco? È il giudizio o l’esperienza?

Un top chef, quindi, si distingue anche per la sua capacità di cambiare. Quanto è importante capire il gusto delle persone?

È stato molto importante per me. Mi ha aperto gli occhi in merito alla varietà e alla qualità dei prodotti. Mi ha dato la possibilità di lavorare a Maiorca e a Tokyo.

Alla fine è stato lui che mi ha portato all’Hangar-7. Ho avuto molta fortuna. Ma anche la pazienza necessaria. Molti giovani colleghi non hanno semplicemente pazienza, elemento indispensabile per andare avanti. Si deve prendere in considerazione di stare per un certo periodo all’ombra del maestro. Per esempio, io non ho mai avuto alcun problema a rapportarmi con questa realtà: infatti, sono stato all’ombra dei migliori. Vedo la mancanza di passione anche in molti dei miei giovani cuochi: all’Hangar-7 gestisco cinque outlet gastronomici (ristorante gourmet, bar, café, lounge) ed ognuno deve essere pronto a dare il meglio di sé in ciascuno di questi cinque campi. Non c’è soltanto il Ristorante IKARUS – gli altri settori sono importanti allo stesso modo. E se un cuoco non ha la pazienza di preparare una colazione con lo stesso amore con cui prepara una cena di gala, per me non va bene.

Questa è una domanda che non mi sono mai posto. Una cosa è certa: non cucinerei sicuramente più. Quando sono venuto via dall’Alto Adige, mi sentivo come in gabbia nella mia terra – e sono dovuto andare via. Oggi sono in grado di apprezzare maggiormente l’Alto Adige. Questo è ciò che mi ha spinto, questo è ciò che oggi trovo così affascinante della mia regione e che mi rende felice: in Alto Adige tutto rimane identico e i cambiamenti si verificano solo lentamente. Sono le piccole cose che si impara ad apprezzare quando da lungo tempo non si è più qui: la sicurezza o la bellezza. Oppure la particolarità. Per esempio, quando passeggio per il mercato della frutta di Bolzano, mi emoziono sempre di nuovo di fronte a questa varietà di prodotti.

Ci sono due scenari che mi potrebbero portare a ritornare in Alto Adige. Il primo potrebbe essere un progetto completamente nuovo. Sogno un ristorante presso il Monumento alla Vittoria quale luogo di incontro e come prova di un’avvenuta riconciliazione tra i gruppi etnici. Quindi, sarebbe un progetto a cui oggi nessuno crede ancora e a cui vorrei iniziare a lavorare. Questo potrebbe essere un incentivo a tornare. Il secondo scenario, per cui potrei tornare, potrebbe essere una piccola e semplice trattoria da prendere e gestire. Penso che questo potrebbe avvenire quando avrò già visto e raggiunto tutto e quando desidererò ritornare alle mie radici.

Vengo sempre volentieri in Alto Adige – in vacanza. Qui ci sono le persone che mi conoscono da quando ero piccolo e dicono senza mezzi termini quello che pensano di me. Queste, infatti, sono le persone che mi dicono subito se sono cambiato in peggio, se ho spiccato il volo. E ci sono sempre stati momenti in cui questo è stato necessario. Non vorrei essere considerato arrogante e inarrivabile. Desidero tenere i piedi per terra, essere una persona normale ed essere considerato come tale.

Ce ne sono diversi. Ci sono molti bei posti in giro per il mondo. Mi verrebbe da dire Vancouver, con le sue numerose nazionalità che convivono serenamente insieme, oppure Hawaii, il Renon o New York. Trovo bella anche l’elegante arroganza parigina.

Non ho mai avuto grandi obiettivi, ma ho sempre cercato di fare un passo alla volta. E con pazienza e diligenza viene tutto, come in effetti è successo. Desidero semplicemente una cosa: rimanere felice.

Roland Trettl, born in 1971, is the star of culinary arts in South Tyrol. He is executive chef since 2003 at Restaurant Ikarus Hangar-7 in Salzburg, and here he conceived a very audacious culinary concept, because each month a different chef puts on his art and the whole team must be briefed on the new menu. If anyone was able to create a radically new concept, then it’s the affable Trettl, known on the international culinary scene as the "enfant terrible", because it's exactly what we would expect from him. He throws everything into question and comes to his own conclusions, usu-

ally successful. Why? Because of his uncompromising nature, doing everything with the highest quality, precision and perfection uppermost in mind. This cook, now 41, began his career in 1987 at the Parkotel Holzner in Soprabolzano. After three years he moved to the Amade Restaurant in Bolzano, before moving to Munich. Here he met the famous chef Eckart Witzigmann and gained his confidence: for two years he worked at the Aubergine restaurant in Munich and for another two years at Tantris. Trettl, eager to learn, became the pupil of the master, earning his trust. At 26 years old he went to Majorca for four years to the Ca's Puers Restaurant, where, as a chef, the restaurant quickly gained fame, becoming the best on the entire island. At 30, Roland Trettl had the opportunity to work for a year and a half in Tokyo and at the Marina Terrace Restaurant he utilised his know-how as a food and beverage trainer. In 2003 came the important step in Salzburg, where, at Hangar-7, he implemented a completely new concept, which has been a great success. During the summer holidays of 2012, Welcome conducted an interview with Roland Trettl, revealing much about him as a person, of his culinary art and its origins.

You are a chef in South Tyrol, which is a top culinary destination today.

You have your roots in South Tyrol and have learned your craft here. Is South Tyrol a good location to become a chef?

South Tyrol is, in my opinion, the best place to learn to cook. Here you can encounter two cultures that leave their mark on the cuisine. I also have to say that the educational system in South Tyrol was very good: at the vocational school in Bressanone I had excellent teachers; my in-service teacher was tough, but fair.

In my opinion it's pointless to shelter students who should be prepared to work.

This is only possible if they are directly involved in day-to-day work. The more a student works, the more he learns. The South Tyrolean cuisine here is outstanding and there are many quality restaurants even if they have a simple menu. The chefs transform a simple, high quality product and this is the best way for a cook to learn his craft. We say: a base in South Tyrol is the perfect training ground! Yet I would suggest to any young chef to take the plunge abroad, abroad because you have the chance to develop personally and learn to appreciate what you have in your own country. I visualise other countries as a prime opportunity for young people to grow both professionally and personally. In my case, I became independent abroad and it was good for my personality. You are away from home on your own and you have to solve problems by yourself. If a young chef doesn't like foreign countries, he always has the option to return to South Tyrol.

This option is always open... with the added advantage of knowing how to appreciate what he has at home.

What qualities are needed to succeed at an international level?

I can only speak for myself. The qualities that led me forward were patience, calm and diligence. Nothing can be achieved by force. Many of my colleagues in Munich, after a hard day at the restaurant, went to their rooms late at night to study cookbooks. I have never done this. I'd rather go for a drink in a bar or do some exploring. Nothing can be forced.

What makes a good cook? It is it judgment or experience?

The basic requirement is the sensitivity to the raw ingredients, knowledge comes later and you can learn that. To cook, you should have a good sense of taste and be open to new ideas. Nevertheless, just knowing how to cook well does not lead too much: as a chef you have to have a team spirit with your squad. It's no use if I cook to perfection, but my team is not motivated. Working in the kitchen is a team sport.

And as a chef you have to regularly question - what was good yesterday, tomorrow might not be. You must have the courage to change - and if a change has not been positive, there is always the opportunity to take a step back and return to the traditional. But if you don't have the courage to try new things, you will never know if they'll work.

Trends and tendencies are important. But there's no point in cooking anything if the guest does not accept it. The guest is the most important thing in our business. It's okay to try something new and want to impress. But, my role is a cook, not a missionary. My job is to make the guest happy and satisfied after his visit to my restaurant.

It was very important to me. It opened my eyes about the variety and quality of products. It gave me the opportunity to work in Majorca and Tokyo. In the end it was he who brought me to Hangar-7. I was very lucky. But also patient. Many young colleagues simply do not have patience, which is essential to move forward. You must take into consideration that you will have to stay in the shadow of the master for a while. For example, I have never had any problems relating to this reality: in fact, I was in the shadow of the best. I see the lack of passion in many of my young cooks: Hangar-7 manages five food outlets (gourmet restaurant, bars, cafe, lounge) and everyone should be ready to give the best of themselves in each of these five fields. There is not only the IKARUS restaurant - other areas are equally important. And if a cook does not have the patience to prepare a breakfast with the same love with which he prepares a gala dinner, then it's no good for me.

This is a question that I never asked myself. One thing is certain: I would not still be a chef. When I left from South Tyrol, I felt like I was in a cage in my country - and I had to leave. Today I am able to better appreciate South Tyrol. This is what grounds me, and what I find so fascinating today in my region and that makes me happy: in South Tyrol everything remains the same and changes occur slowly. It's the little things that you learn to appreciate when you are gone for a long time: the safety and beauty. For example, when I walk through the market of Bolzano, I still get excited about the great variety of products here.

There are two scenarios that could lead me to return to South Tyrol. The first could be a completely new design. I dream of a restaurant at the Victory Monument as a meeting place and as a proof of a true reconciliation between ethnic groups. It is a project that even today no one really believes in and I would like to start working on it. This could be an incentive to return. The second scenario might be a small and simple restaurant to own and run. I think this could happen when I have already seen and achieved everything and when I want to return to my roots.

A top chef, therefore, stands out for his ability to change. How important is it to understand the client's tastes?

I'm always happy in South Tyrol - on vacation. Here I can find the people who know me since I was little and tell me what they think of me in no uncertain terms. These are the people who immediately let me know if I have changed for the worse, or if I have gotten to be too high and mighty. And there have always been times when it was needed. I wouldn't like to be considered arrogant and unreachable. I'd like to keep my feet on the ground, to be a normal person and be treated as such.

There are several. There are so many beautiful places around the world. I would say Vancouver, with its many nationalities living together in harmony, or Hawaii, New York or Renon. I also like the elegant Parisian arrogance.

I've never had big goals, but I've always tried to take one step at a time. Everything comes with patience and diligence, and it has always worked for me.

I simply want one thing: to stay happy.

Qui fiori, foglie, arbusti e boccioli non sono semplicemente utilizzati per creare un mazzo da regalare, ma sono i veri protagonisti. Innovativa e ispirante, individuale e originale, tradizionale e moderna. Nessuna composizione è uguale ad altre. “Quando 9 anni fa abbiamo fondato il nostro laboratorio, abbiamo voluto creare qualcosa che andasse al di là dei soliti fioristi.

Con le nostre creazioni volevamo suscitare emozioni”, racconta Thomas Mair mentre, dietro un tavolo di legno, lega abilmente rami di melo. Ai clienti piacciono le loro idee, le loro composizioni floreali si trovano oggi nei migliori hotel dell’arco alpino, dal Vigilius Mountain Resort sul Monte San Vigilio, alle Terme di Merano, fino al Lagació Mountain Residence a San Cassiano e all’Aro-

sea Life Balance in Val d’Ultimo. Che si tratti della hall, delle suite o dell’area wellness, i due altoatesini rendono ogni singolo spazio pieno di vitalità e di armonia. Sanno, infatti, che ogni spazio è vivo come chi lo abita. “Le nostre idee non nascono sulla scrivania o al computer, ma in loco nel corso di un colloquio con i nostri clienti.

Lo scopo consiste nel regalare una sensazione di comfort non solo negli hotel, ma anche negli uffici aziendali e nella propria casa. “Ci avvaliamo di una combinazione di cuoio e colore, legno e pietra. With their bespoke decorations for homes, hotels, offices and unforgettable events, Florale Werkstatt raised the bar nine years ago in y the field of decoration. Since then, they have been creating everything that makes life more beautiful.

The creative laboratory of Thomas Mair and Theo Lesina Debiasi is tucked away on a small street in the town of Lana. Even the courtyard, a loggia with a Mediterranean flavor surrounded by old fruit trees, communicates the immense joy of living. But what lies behind the white wooden door is a real feast for the eyes. The woodwork of long ago has been transformed into a stage dedicated to the florist's art. Here, flowers, leaves, twigs and buds are not simply used to create a bunch as gifts, but they are the real key players. Innovative and inspiring, individual and original, traditional and modern. No composition is equal to other. "When we founded our laboratory nine years ago, we wanted to create something that goes beyond the usual florists. With our creations we wanted to evoke emotions, "says Thomas Mair while, behind a wooden table, he nimbly bundles the branches of apple trees. Customers have taken to their ideas: their flower arrangements are now in the best hotels of the Alps from Vigilius Mountain Resort on Mount St. Vigilio, the Baths of Merano, as well as Lagació Mountain Residence in San Cassiano and Arosea Life Balance in Val d'Ultimo. Whether in the lobby, suites or in the wellness area, the two South Tyroleans fill every single space of vitality and harmony. They know that every space is alive as those living there. "Our ideas are not born on the desk or the computer, but on the spot during an interview with our customers. Together we identify what type of decoration is best suited to their personality and their business, "says Mair. At Florale Werkstatt creativity is unpredictable. The aim is to give a feeling of comfort not only in hotels, but also in offices and at home. "We use a combination of leather and colour, wood and stone.

Oktober 2013 Seit Jahren großer Beliebtheit erfreuen sich Bauernmärkte, wie z.B. der Schenner Bauernmarkt, welcher auch dieses Jahr wieder am 14. April im Ferienparadies Schenna im Burggrafenamt stattfindet. Neben Köstlichkeiten aus Garten, Feld und Keller und Südtiroler Handwerkskunst erwarten den Besucher selbstgemachte Gaumenfreuden zum Verkosten sowie ein buntes Rahmenprogramm mit Musik und einer Kinderanimation. Dass die Schenner große Liebhaber der guten Küche sind, beweisen unter anderem zwei weitere kulinarische Highlights: Einmal die in diesem Jahr am 29. Mai stattfindende Schenner Dorfkuchl, wo an verschiedenen gastronomischen Ständen von örtlichen Gastwirten italienische und internationale Gerichte serviert werden sowie die Schenner Bauernkuchl am 24. Oktober.

Bei letzterem verwandelt sich der Schenner Dorfkern in eine große Bauernküche mit typischen Spezialitäten wie Tiroler Knödeln, Rippchen mit Kraut oder den typischen Krapfen, zubereitet von hiesigen Bäuerinnen.

sich der Feinschmeckermarkt (16.05. bis 20.05.2013) auf der Passerpromenade in der wunderschönen Meraner Altstadt bei Gästen wie Einheimischen immer größerer Beliebtheit. Hier präsentieren Kleinproduzenten und Direktvermarkter aus Südtirol und Italien gastronomische Spezialitäten und landwirtschaftliche Produkte höchster Qualität. Ein Muss für alle, die gerne ein Stück hochwertiges Südtirol oder Italien kosten und mit nach Hause nehmen möchten. Bummeln, einkaufen und genießen heißt es in den Monaten Juli und August jeden Dienstagabend bis 22.00 Uhr. Dabei steht jeder „lange Dienstag“ unter einem anderen Motto mit entsprechendem Rahmen- und Unterhaltungsprogramm für Groß und Klein.

Dort sind vor allem 2 Veranstaltungen zu nennen: Das Genussfestival Südtirol einerseits, bei welchem sich die Bozner Altstadt in einen Festplatz der Extraklasse verwandelt: Traditionelle Südtiroler Lebensmittel und landwirtschaftliche Produkte höchster Qualität wie Wein, Speck, Äpfel, Milch, Brot und Backspezialitäten, Beeren, Kirschen, Gemüse, aber auch Kräuter und Gewürzpflanzen sowie Südtiroler Rindfleisch und vieles mehr laden die Besucher ein, sich von der Vielfalt und Qualität der regionalen Produkte zu überzeugen.

Namhafte Sterne- und Spitzenköche bereiten köstliche Speisen zu und begeistern mit ihrer kreativen und individuellen Küche. Ganz im Zeichen des Weins steht hingegen die Lorenzinacht in Bozen am 09. August: Unter den mittelalterlichen Bozner Lauben in der Altstadt werden die besten Weine der Bozner Kellereien und Weinerzeuger, darunter natürlich der St. Magdalener und der Lagrein – zwei Spitzenweine aus dem Bozner Weinbaugebiet, zum Verkosten angeboten. GASTLICHE TAFEL IN DEN GASSEN VON ST. PAULS, 30. Juli 2013 Ein äußerst elegantes öno-gastronomisches Event ist die gastliche Tafel in den Gassen von St. Pauls am 30. Juli unter der Regie des Sternekochs Herbert Hintner mit Sektempfang, Weinpräsentation und musikalischer Umrahmung, wo an einer schier unendlich erscheinend langen Tafel kulinarische Delikatessen und exklusive Weine serviert werden. Darüber hinaus finden in zahlreichen Ortschaften Südtirols den ganzen Sommer über an einem bestimmten Tag in der Woche lange Shoppingabende mit Festcharakter statt. MERCATO CONTADINO, 14 aprile 2013 “DORFKUCHL”, 29 maggio 2013 “BAUERNKUCHL”, 24 ottobre 2013 Da anni i mercati contadini godono di grande popolarità, come ad esempio il mercato di Scena, che anche quest’anno si svolge il 14 aprile nel paradiso delle vacanze del Burgraviato. Oltre alle prelibatezze provenienti dagli orti, dai campi e dalle cantine e all’artigianato altoatesino, ad attendere il visitatore anche delizie fatte in casa da degustare e un ricco programma con musica e animazione per bambini. Che gli abitanti di Scena siano dei grandi amanti della buona cucina lo dimostrano altri due eventi culinari: il primo, che quest’anno si svolgerà il 29 maggio, lo “Schenner Dorfkuchl”, dove sono serviti in diversi stand gastronomici di ristoratori locali piatti della cucina italiana e internazionale, e il secondo, lo “Schenner Bauernkuchl” il 24 ottobre, durante il quale il paesino di Scena si trasforma in una grande cucina contadina con specialità tipiche, quali i canederli, le costolette con crauti oppure i tradizionali krapfen, preparati dalle contadine locali.

Merano:

PASSEGGIATA DEI SAPORI, dal 16 al 20 maggio 2013 Il viaggio continua nella vicina Merano. Oltre alle manifestazioni di rilevanza internazionale, come la Festa dell’uva e il Merano Wine Festival e Culinaria, sta diventando sempre più popolare tra i turisti e i meranesi la Passeggiata dei sapori (dal 16.05 al 20.05.2013) lungo Passirio, nel meraviglioso centro storico di Merano. I piccoli produttori e i venditori diretti locali e del resto d’Italia presentano spe-

cialità gastronomiche e prodotti agricoli di alta qualità. Un “must” per tutti coloro che desiderano assaporare il meglio dell’Alto Adige o dell’Italia e portarlo con sé a casa. Inoltre, nei mesi di luglio e agosto, ogni martedì sera fino alle ore 22, è possibile passeggiare e fare shopping per le vie di Merano. Ogni “martedì lungo” presenta un motto sempre diverso con un programma di contorno e di intrattenimento dedicato a grandi e piccini.

FESTIVAL DEL GUSTO ALTO ADIGE, dal 24 al 26 maggio 2013 CALICI DI STELLE, 9 agosto 2013 Continuiamo il nostro viaggio verso Bolzano. Qui si svolgono soprattutto due eventi: il primo è il Festival del gusto Alto Adige, nel corso del quale il centro storico di Bolzano si trasforma in una festa di piazza di gran classe. Le specialità tipiche altoatesine e i prodotti agricoli di elevata qualità, come vino, speck, mele, latte, pane e prodotti da forno, frutti di bosco, ciliegie, verdure, ma anche erbette e spezie, carne di manzo dell’Alto Adige e molto altro ancora, persuadono i visitatori della varietà e della qualità dei prodotti regionali. Rinomati cuochi stellati e chef preparano piatti gustosi e deliziano i palati con la loro cucina creativa e unica. Il 9 agosto si svolge a Bolzano, inoltre, l’evento Calici di stelle all’insegna del vino: sotto i portici medievali di Bolzano, nel centro storico, è possibile degustare i migliori vini delle cantine di Bolzano e dei produttori di vino, tra i quali naturalmente il Santa Maddalena e il Lagrein, due vini di punta della zona vitivinicola di Bolzano. Passeggiare, chiacchierare e gustare è il motto di Calici di stelle. CORSE SERALI GASTRONOMICHE CON IL TRENINO DEL RENON, SEMPRE IL MERCOLEDÌ NEI MESI DI LUGLIO E AGOSTO Un evento imperdibile nell’ambito del panorama gastronomico altoatesino è sicuramente rappresentato dalle corse serali gastronomiche con il trenino del Renon, che si svolgono nel corso di diversi mercoledì nei mesi di luglio e agosto. Questo viaggio unico nella musica e nel gusto invita a romantiche corse con lo storico trenino in stile liberty.

FARMERS MARKET, 14 April 2013 “DORFKUCHL”, 29 May 2013 “BAUERNKUCHL”, 24 October 2013 For years, the local farmers markets bring great popularity, for example the market in Scena that again this year is held on 14th April in the holiday paradise of Burgraviato. Apart from the delicacies brought straight from allotments, fields and wine cellars, and the craftsmen of South Tyrol, awaiting the visitors are homemade delights to taste and a rich programme with music and childrens entertainment. The inhabitants of Scena are great lovers of good cooking which is demonstrated by two other culinary events; the first, which this year is held on 29th May, is “Schenner Dorfkuchl”, where Italian and International dishes are served from the many gastronomic stands of local restaurateurs, and the second being the “Schenner Bauernkuchl” which takes place on 24th October during which the village of Scena transforms itself into one big farmers kitchen with typical specialities, such as canederli (bread dumplings), ribs with sauercraut and the traditional krapfen (donuts), prepared by the local people.

Merano:

PROMENADE OF FLAVOURS, from 16th to 20th May 2013 The journey continues in nearby Merano. Apart from the events of International relevance, such as the Festival of Grapes and the Merano Wine Festival, becoming more and more popular, with both tourists and the people of Merano, is the Promenade of Flavours (from 16th to 20th May) along the Passirio river, in the marvellous historical centre of Merano. The smaller producers and direct market sellers from locally and throughout Italy, present gastronomic specialities and agricultural products of the highest quality. A MUST for all those wanting to savour the best of South Tyrol and of Italy itself, and to take it home with them. Besides this, during the months of July and August, every Tuesday evening until 10 pm, it is possible to shop amongst the streets of Merano. Each “Long Tuesday” as it is known, presents a different motto with a side programme including dedicated entertainment to both big and small alike.

Bolzano:

FESTIVAL OF TASTE ALTO ADIGE, from 24th to 26th May 2013 CALICI DI STELLE, 9th August 2013 We continue our journey towards Bolzano. Here two main events take place: the first is the Festival of Taste of South Tyrol, in which the historical centre of Bolzano transforms itself in a high class Piazza festival; the typical South Tyrol specialities and the farmed produce of high quality, such as wine, speck, apples, milk, bread and oven baked produce, forest fruits, cherries and vegetables but also herbs, spices, beef from South Tyrol and many more besides, tempt and persuade the visitors with their varieties and quality of the regional products. Renowned star acclaimed cooks and chefs prepare tasty dishes and delight the palette with their unique and creative cooking. On 9th August in Bolzano, taking

place is the event known as the “Calice di Stelle” a wine learning occasion. Beneath the medieval porches of Bolzano, in the historical city centre, it is possible to taste the best wines from the wine cellars of Bolzano and the producers of wine, amongst which are naturally “Santa Maddalena” and “Lagrein”, two main wines from the wine producing areas of Bolzano. Walk, chat and taste is the motto of "Calice di stelle". Die Gourmetveranstaltung „Sterne Schlösser Almen“ vereint die charakteristisch gegensätzlichen herrschaftlichen Ansitze und Schlösser des Burggrafenamtes mit den bescheidenen, meist hoch gelegenen Almen, welche früher rein der Sommerwirtschaft dienten und heute meist zu Almgasthöfen umfunktioniert und beliebte Ausflugsziele sind.

An ausgewählten Abenden kommen bei diesem GourmetEvent von Mai bis Oktober Feinschmecker auf ihre Kosten.

Höhepunkt der Veranstaltungsreihe sind Galaabende in zwei historischen Schlössern: Einmal Schloss Schenna (22. Mai) und zum Zweiten Schloss Kastelbell (11. August). Die 5 Sterneköche der Region – Anna Matscher, Gerhard Wieser, Jörg Trafoier, Andrea Fenoglio und Alois Haller – verzaubern dabei ihre Gäste mit innovativen Gerichten, hergestellt aus traditionellen Südtiroler Produkten kombiniert mit internationalen Einflüssen. Neu in diesem Sommer ist ein eleganter Abend in den Gärten von Schloss Trauttmansdorff, wo die Gäste bei dieser Gelegenheit nicht nur verschiedene Plätze der weitläufigen Gartenanlage kennenlernen, sondern während der moderierten Zubereitung eines Gerichts den Köchen über die Schultern schauen dürfen.

Mit einem Sternekoch auf die Alm Liebhaber der Südtiroler Bergnatur erwandern gemeinsam mit einem Sternekoch und einem Fachmann, z.B. einem Kräuterexperten oder einem fachkundigen Weinbauer einen Almgasthof. Auf den Wanderungen kann je ein Gericht versucht werden, das nach den Vorgaben des Sternekochs zubereitet wird. The International Festival of Choir Music in Alta Pusteria is an event which is held every year in Alta Pusteria. The visitors, during the course of the 60 or so performances, can assist in an ample repertoire of diverse musical kinds and eras, performed by choirs coming from the whole world.

This year the toughest mountain bike race of the Dolomites reaches its 19th edition. Approximately 4.000 mountain bike enthusiasts and professionals coming from around 30 nations challenge one another every year in the heart of the natural patrimony of UNESCO. Die Steige und schmalen Kanäle wurden vor Jahrhunderten angelegt, um den Menschen die Bewässerung ihrer Felder zu garantieren. Noch heute ziehen sich dutzende Waalwege durch den Vinschgau. Sie sind zu allen Jahreszeiten begehbar und bieten grandiose Fernblicke auf die mächtigen Gebirgsketten und über das Tal. Wer gerne den Fahrtwind im Gesicht spürt, ist auf der „Via Claudia Augusta“ mit seinem Fahrrad richtig. Die 80 Kilometer lange, vorwiegend flache Tour entlang der Etsch führt vorbei am versunkenen Turm im Reschensee, am Kloster Marienberg, durch eine Kulturlandschaft mit Schlössern, Burgen, Feldern und Wiesen.

La regione dei laghi nel sud dell’Alto Adige // The lake district in the southern part of South Tyrol Drei herrliche Badeseen nur wenige Kilometer voneinander entfernt. Drei Seen, die sich für besonders reines Wassers auszeichnen, zu den saubersten des gesamten Alpenraums gehören und dabei trotzdem mit angenehm milden Temperaturen locken. Das Überetsch südlich von Bozen gehört nicht nur zu den renommiertesten Weinanbaugebieten des Landes, sondern wird darüber hinaus heimlich als Seenregion Südtirols gefeiert. Der Große und der Kleine Montiggler See befinden sich im Gemeindegebiet von Eppan. Sie liegen eingebettet in einem idyllischen Wald und zeichnen sich für ihre inspirierende Atmosphäre im Einklang mit der Natur aus. Im Jahre 2012 erhielten die Montiggler Seen erneut die Auszeichnung „Cinque Vele“ der italienischen Umweltschutzorganisation Legambiente und führen somit die Rangliste der saubersten Badeseen Italiens an. Familien mit Kindern werden am Großen Montiggler See mit Erlebnisbad fündig, während Ruhesuchende am Kleinen Montiggler See ihr persönliches Naturparadies genießen. Nur wenige Kilometer südlich befindet sich der Kalterer See in der gleichnamigen Marktgemeinde. Er ist wohl nicht nur der bekannteste, sondern auch der größte Badesee Südtirols und sogar der wärmste der Alpen. Hier wird bereits ab Mitte Mai bis in den Oktober hinein gebadet. Im Sommer erreicht das Wasser bis zu 28°C. Vom kürzlich eröffneten „Lido“, von einem Stararchitekten entworfen, bis hin zu mehreren malerischen Strandbädern und zahlreichen Restaurants, Kiosken und Cafés mit Seeblick – das Freizeitangebot ist vielschichtig und facettenreich. Besonders beliebt ist der Kalterer See bei Surfern, Seglern und neuerdings auch Kitesurfern, die vom am späten Nachmittag einsetzenden Südwind „Ora“ profitieren.

I due Laghi di Monticolo, Grande e Piccolo, si trovano nel comune di Appiano. Sono immersi in un bosco idilliaco e si caratterizzano per la loro ispirante atmosfera in armonia con la natura. Nel 2012 i Laghi di Monticolo hanno ricevuto ancora una volta il riconoscimento “Cinque Vele” da Legambiente, che li ha portati a capitanare la classifica dei laghi più puliti d’Italia. Le famiglie con bambini troveranno al Lago Grande di Monticolo un parco acquatico, mentre coloro che sono alla ricerca della pace e delle tranquillità potranno godere al Lago Piccolo di Monticolo di un paradiso naturale tutto da assaporare. Solo a pochi chilometri più a sud si trova il Lago di Caldaro nell’omonimo comune. Non è soltanto il lago più noto, ma anche quello più grande dell’Alto Adige e anche il più caldo delle Alpi. Three beautiful lakes just a few kilometers away from each other, famous for their particularly pure water, in fact among the cleanest in the Alps and hold a strong appeal for their mild temperatures. Che l’Alto Adige produca fantastici vini bianchi e rossi non è un segreto. Tuttavia è sempre ancora un piccolo segreto che nelle cantine dell’Alto Adige si trovino anche fantastici spumanti. 22 Jahre Südtiroler Sektvereinigung ergeben sechs Persönlichkeiten, mit eigenem Charakter, persönlichem Stil und einem gemeinsamen Ziel: Qualitativ hochwertige Sekte zu produzieren. Jeder von ihnen ist ein Idealist. Jeder von ihnen hat eine Passion für die edlen Perlen. Ihre Sekte sind Ausdruck von Frische und Jugendlichkeit. Nur des Geldes wegen rechnet sich der Aufwand kaum, denn für eine Flasche Südtiroler Sekt bezahlt der Kunde kaum mehr als für eine gute Flasche Südtiroler Stillwein. Wobei das Verfahren für die Sektproduktion weitaus komplizierter ist als jenes der Weinherstellung. Die Gärung erfolgt nicht im Tank, sondern in der Originalflasche. Südtirols Sekte werden also ausschließlich nach der klassischen Flaschengärung hergestellt, sie lagern für mindestens zwei Jahre in der Flasche. Damit der Wein aber seine prickelnde Eleganz gewinnt, ist Handarbeit gefragt. Jede Flasche wird vom Kellermeister mindestens 40 bis 50 Mal händisch aus dem Rüttelpult genommen und gerüttelt, also gedreht.

Doch die Methode allein reicht nicht: Am Ende entscheidet der Gaumen. Die Harmonie zwischen Frische, Frucht und Perlage. Doch bis dahin heißt es für die Südtiroler Sekthersteller Ruhe und Geduld bewahren. Denn erst nach vier bis fünf Jahren können sie ihre Kreationen verkosten. Dann erst zeigt sich, ob sich die Mühe gelohnt hat. Und gelohnt hat sie sich sowieso nur, wenn die Qualität des Grundweins stimmt. In Südtirols Sekten finden sich die drei klassischen Burgundersorten wider: Weißburgunder sorgt für die Frucht, Chardonnay für die Finesse und Blauburgunder für die Struktur. Wobei jeder Winzer seine eigene Vorstellung hat, wie hoch der Anteil der drei Rebsorten in ihren Kreationen sein soll. Hauptsache, die Eigenschaften der einzelnen Rebsorten gehen nicht verloren. Am Ende trägt also jeder Sekt das Prädikat Eigenwille. Klasse statt Masse, so lautet die Devise. Gerademal 280.000 Flaschen Sekt werden in Südtirol pro Jahr produziert, ein verschwindend kleiner Anteil gegenüber den 8 Millionen Flaschen, die ihre Kollegen im Franciacorta-Gebiet produzieren. Dabei wissen die sechs Südtiroler Sekthersteller genau, dass ihre Perlen immer ein Nischenprodukt bleiben werden, zu klein sind allein die Rebanbauflächen. Entmutigen lassen sie sich davon nicht, denn sie wissen: Ihre Sekte können sich im nationalen und internationalen Verlgeich sehen lassen, sie sind fein, sie sind edel, sie sind Südtirol.

I 22 anni dell’Associazione Produttori Spumanti Metodo Classico Alto Adige hanno dato come risultato sei personalità con un proprio carattere, uno stile personale e un obiettivo comune: produrre spumanti qualitativamente eccellenti. Ognuno di loro è un idealista. Ognuno di loro ha una passione per queste perle preziose. I loro spumanti sono espressione di freschezza e giovinezza. A stento si calcola il dispendio di denaro, in quanto per una bottiglia di spumante dell’Alto Adige il cliente paga appena di più di una buona bottiglia di vino regionale. Fermo restando che il metodo per la produzione di spumante è di gran lunga più complicato di quello di vinificazione. La fermentazione non ha luogo in un serbatoio, ma nella bottiglia originale. Quindi, gli spumanti altoatesini sono ottenuti esclusivamente secondo il metodo classico e invecchiano in bottiglia per almeno due anni. Affinché il vino ottenga la sua frizzante eleganza, è necessario il lavoro manuale. Ogni bottiglia viene rimossa manualmente dal capo cantiniere dalle pupitres almeno 40-50 volte, scossa e ruotata. Tuttavia, il metodo da solo non basta: alla fine è il palato a decidere.

L’armonia tra freschezza, gusto fruttato ed effervescenza è fondamentale. Fino ad allora, a quanto si dice, per i produttori altoatesini di spumante serve calma e pazienza, in

quanto solo dopo quattro o cinque anni possono gustare le loro creazioni. In quel momento si vede se l’impegno profuso ne è valso la pena. E ha dato i suoi frutti in ogni caso se la qualità del vino base va bene. Negli spumanti dell’Alto Adige sono presenti tre varietà di vino classico Pinot: Pinot bianco per il sapore fruttato, Chardonnay per la finesse e Pinot nero per la struttura. Ogni produttore di vino ha una propria concezione in merito alla proporzione dei tre vitigni da utilizzare nelle proprie creazioni. La cosa più importante è che le caratteristiche delle singole varietà non vadano perse. Alla fine, quindi, ogni spumante è arbitro della propria certificazione. La qualità invece della quantità, così suona il motto. In Alto Adige sono prodotte ogni anno solo 280.000 bottiglie di spumante, una piccola parte rispetto agli 8 milioni di bottiglie che i loro colleghi producono nella zona della Franciacorta. Eppure, i sei produttori di spumante dell’Alto Adige sanno che le loro perle rimarranno sempre un prodotto di nicchia, data la ristrettezza delle superfici destinate alla viticoltura. Nonostante ciò non si scoraggiano, in quanto sono consapevoli che i loro spumanti possono fare mostra di sé in un confronto a livello nazionale e internazionale, sono squisiti, sono nobili, sono l’Alto Adige.

In the 22 years of the South Tyrolean Classic Method Sparkling Winemakers Association, six personalities have emerged, each with its own character, a unique style and a common goal: to produce excellent quality sparkling wine.

Each of them is an idealist. Each of them has a passion for these precious pearls. Their sparkling wines are an expression of freshness and youth. It's hard to calculate the expense, because a bottle of South Tyrol sparkling wine costs just a bit more than a good bottle of regional wine, even though the method for the production of sparkling wine is far more complex than that of winemaking. Fermentation does not take place in a tank, but in the original bottle. Sparkling wines from South Tyrol are made exclusively according to the classic method and they age in their bottle for at least two years. To ensure that the wine gets its sparkling elegance, manual labour is key. Each bottle is manually removed by the cellar master from the riddling racks at least 40-50 times, to be shaken and rotated.

However, the method alone is not enough: the taste buds must decide. The harmony between freshness, fruitiness and effervescence is crucial. Until then, the South Tyrolean sparkling wine producers say, calm and patience are what is needed, because they can finally enjoy their creations only after four or five years. At that moment, you can see whether it was worth the effort. It pays off if the quality of the base wine is good. In South Tyrol sparkling wines there are three varieties of classic Pinot: Pinot blanc for its fruity flavor, Chardonnay for finesse and Pinot Noir for structure.

All winemakers have their own idea about the proportion of the three grape varieties to use in their creations. The most important thing is to capture the characteristics of each variety. In the end, therefore, every sparkling wine proves its own certification. Quality instead of quantity, so goes the saying. In South Tyrol each year only 280,000 bottles of sparkling wine are produced, a fraction of the 8 million bottles that their colleagues make in the Franciacorta area.

Yet, the six producers of sparkling wine in South Tyrol know that their pearls will always remain a niche product, given the narrowness of the areas intended for wine-growing. Despite this, they are not discouraged, because they are aware that their sparkling wines can show themselves in a national and international level comparison, as they are exquisite, they are noble, they are South Tyrolean.

DER VISIONÄR Seine Sektkellerei Arunda ist die höchst gelegene Europas. Sie liegt auf 1200 Metern Meereshöhe, im kleinen Dorf Mölten. Seit über 30 Jahren produziert Josef Reiterer hier Sekte mit Weltformat. Wobei er selbst ganz bodenständig geblieben ist. Er lässt seine perlenden Juwelen sprechen. 50 Meter lang, so lang ist das Rüttelpult, hier lagern 10.000 Flaschen. Jede von ihnen Kopf voran in schräger Lage, jede von ihnen für mindestens 50 Tage. Jeden Tag, außer Sonntags, kommt Josef Reiterer hierher, in sein Reich. In seinen kühlen aber nicht kalten Keller. Dann nimmt er jede einzelne Flasche in die Hand und dreht sie. Zuerst nach links dann nach rechts. Alles verläuft nach einem klaren Konzept. In der Fachsprache nennt man diesen Prozess „Rütteln“, es ist die Zeit in der sich die Hefe zusammenzieht, bis sich der Hefesatz vollständig im Flaschenhals abgesetzt hat und der Rohsekt degorgiert werden kann. Längst gibt es hierfür Maschinen, die den Winzern diese Handarbeit abnimmt. Josef Reiterer von der Sektkellerei Arunda in Mölten hält dennoch am Rütteln fest. Wir befinden uns in Mölten, einem kleinen beschaulichen Dorf hoch über Terlan, auf 1200 Metern Meereshöhe gelegen. Zusammen mit seiner Ehefrau Marianne und seinem Sohn Michael betreibt Josef Reiterer hier die höchst gelegene Sektkellerei Europas. Weinreben sucht man hier vergebens, zu hoch ist der Hof gelegen. Die Trauben für seine Grundweine bezieht Josef Reiterer vom Tal. Von den besten Lagen, von den besten Böden. Verarbeitet und versektet werden sie aber hier auf dem Hochplateu des Tschöggelbergs. Seine Passion für die prickelnden Juwelen hat der gelernte Weinbau-Ingenieur vor 35 Jahren gefunden. Als einer der ersten in Südtirol hat er den Schritt in die Sektproduktion gewagt.

Damals noch als Spinner abgetan, sind seine edlen Sektsorten heute von Brasilien über Japan bis hin nach Singapur in den besten Restaurants zu finden. 90.000 Flaschen verlassen jedes Jahr den Keller, raus in die Welt, raus auf die besten Weinkarten der Gastronomie. Neun Sektsorten hat der Visionär Reiterer mittlerweile in seinem Sortiment, darunter auch einen Bio-Sekt. In jeder Kreation finden sich unterschiedliche Anteile der drei klassischen Rebsorten Weißburgunder, Chardonnay und Blauburgunder. Der Rosé Excellor etwa besteht zu 100 Prozent aus Blauburgunder, während sich der Extra Brut aus 80 Prozent Chardonnay und 20 Prozent Blauburgunder zusammensetzt. Sein heimlicher Favorit ist der Cuvee Marianne, kreiert für und benannt nach seiner Ehefrau. Neben 80 Prozent Chardonnay finden sich darin 20 Prozent Blauburgunder. Im Gaumen ein Sekt, der mit einer herrlich lebhaften Perlage beeindruckt, gleichzeitig aber auch mit einem sehr komplexen Bukett, in dem blumige Noten, Akzente von weißer Schokolade und exotischen Früchten wie Ananas und Mango zusammenfinden.

Trotz des Erfolges ist der Möltner keiner, der sich auf den Lorbeeren ausruht. „Unsere Aufgabe ist es, dem Stillwein Leben einzuhauchen. Darin sind wir Südtiroler Sekterzeuger bereits sehr gut, unsere Aufgabe für die Zukunft wird es nun sein, uns auch entsprechend zu vermarkten“, so Reiterer, während er in seiner blauen Schürze vor dem Rüttelpult steht und mit Liebe jede einzelne Flasche in die Hand nimmt und dreht.

IL VISIONARIO La sua cantina di spumanti Arunda è la più alta d’Europa, in quanto si trova a 1.200 metri s.l.m. nel piccolo paese di Meltina. Da oltre 30 anni Josef Reiterer produce il suo spumante con un appeal internazionale. Nonostante ciò è rimasto sempre con i piedi per terra e lascia parlare i suoi “gioielli frizzanti”. 50 metri di lunghezza, così è lungo il pupitre, dove giacciono 10.000 bottiglie. Ciascuna di esse è a testa in giù, in posizione obliqua per almeno 50 giorni. Ogni giorno, tranne la domenica, Josef Reiterer viene qui, nel suo regno, nella sua cantina fresca, ma non fredda. Poi prende in mano ogni singola bottiglia e la gira. Prima a sinistra e poi a destra. Tutto si svolge secondo un piano ben delineato. Nel linguaggio tecnico questo processo prende il nome di “scuotimento”. Si tratta del momento in cui il lievito si contrae fino a che è completamente depositato nel collo della bottiglia e lo spumante grezzo può essere sboccato. Per questo esiste da tempo un macchinario, che sostituisce il lavoro a mano dei produttori di vino. Josef Reiterer della cantina di spumanti Arunda di Meltina continua comunque con lo scuotimento. Ci troviamo a Meltina, un piccolo paese tranquillo sopra Terlano situato a 1.200 metri s.l.m. Insieme a sua moglie Marianne e a suo figlio Michael, Josef Reiterer gestisce la cantina di spumanti più alta d’Europa. Qui si trovano a stento le viti a causa dell’altitudine. Josef Reiterer, infatti, attinge dalla valle le uve per i suoi vini, dalle migliori posizioni e dai migliori terreni. Ma qui, sull’altopiano del Montezoccolo, vengono trasformate in spumante. L’esperto ingegnere di viticoltura ha scoperto la sua passione per gli spumanti 35 anni fa. In Alto Adige è stato uno dei primi che si è avventurato nella produzione di spumanti. Liquidato al tempo come “testa matta”, oggi le sue pregiate varietà di spumante si trovano nei migliori ristoranti, dal Brasile al Giappone, fino a Singapore. Ogni anno 90.000 bottiglie lasciano la cantina con destinazione mondo e, in particolare, le migliori carte di vini della gastronomia. Il visionario Reiterer ha ormai nel suo assortimento nove varietà di spumante, di cui uno anche biologico. In ogni creazione sono presenti diverse proporzioni dei tre vitigni Pinot bianco, Chardonnay e Pinot nero. Il Rosé Excellor è realizzato con circa il 100% di Pinto nero, mentre l’Extra Brut con l’80% di Chardonnay e il 20% di Pinot nero. In segreto, il suo favorito è il Cuvée Marianne, creato per e chiamato come sua moglie. Oltre all’80% di Chardonnay, vi si trova il 20% di Pinto nero. Al palato, uno spumante che conquista con un perlage meravigliosamente vivace, ma allo stesso tempo anche con un bouquet molto complesso in cui si uniscono note floreali, accenti di cioccolato bianco e frutti esotici, come ananas e mango. Nonostante il successo, il meltinese non riposa sugli allori. “Il nostro compito consiste nel dare vita al vino. In ciò noi, produttori altoatesini di spumante, siamo già molto bravi. Il nostro obiettivo per il futuro sarà di promuoverci in modo opportuno”, afferma Reiterer mentre con il grembiule blu, davanti al pupitre, prende con amore ogni singola bottiglia e la ruota.

Despite this, he has always remained down to earth and allows his "sparkling jewels" to do the talking. The pupitre, or riddling rack where 10,000 bottles lie, is 50 meters long. Each bottle is upside down, at an angle, for 50 days at least. Every day, except Sundays, Josef Reiterer comes here, in his reign, in his cool but not cold cellar. Then, he picks up each bottle and turns it. First to the left and then to the right. Everything happens according to a well-defined plan. In technical language, this process is called the "riddling". This is the time when the yeast contracts until it is completely deposited into the neck of the bottle and the crude sparkling wine can be expelled. For some time now, a machine has been invented to replace the handiwork of wine producers. Josef Reiterer of the spumante winery Arunda in Meltina however, continues with his hand-riddling. We are here in Meltina, a quiet little village located above Terlano, at 1,200 meters above sea level. With his wife, Marianne, and his son, Michael, Josef Reiterer manages the highest spumante winery in Europe. Here you will hardly find vineyards because of the altitude. Josef Reiterer, in fact, goes to the valley to collect grapes for his wine, in the best locations and on the

best lands. But here, high on the beautiful Montezoccolo plateau, grapes are transformed into sparkling wine. This expert viticulture engineer discovered his passion for sparkling wine 35 years ago. In South Tyrol, he was one of the first who ventured into the production of sparkling wine.

Dismissed at the time as a "madman", today his prized varieties of sparkling wine can be found in the best restaurants, from Brazil to Japan, all the way to Singapore.

Every year 90,000 bottles leave the winery and go around the world, to reach the best wine lists of the gourmet tradition. The visionary Josef Reiterer now has nine varieties of sparkling wine in his range, one of which is also organic.

In each wine there are different proportions of the Pinot Blanc, Chardonnay and Pinot Noir varieties. The Excellor Rosé is made with approximately 100% of Pinot Noir, while the Extra Brut has 80% Chardonnay and 20% Pinot Noir.

Secretly, his favourite is the Cuvée Marianne, created for and named after his wife. In addition to 80% Chardonnay, there is 20% Pinot Noir. On the palate, it is a sparkling wine that captivates with a wonderfully lively perlage, but at the same time with a very complex bouquet that unites floral notes, hints of white chocolate and exotic fruits, such as pineapple and mango. Despite the success, this Meltina native does not rest on his laurels. "Our job is to give life to wine. We, South Tyrolean producers of sparkling wine, are already very good at this. Our goal for the future will be to promote our work in the most appropriate way," says Reiterer while, clad in his blue apron, he picks up each bottle lovingly and gives it a turn.

DER INNOVATIVE In einem alten Militärbunker mitten im Südtiroler Überetsch lagert Wolfgang Tratter seine Sekt-Schätze. Er ist Kellermeister der Kellerei St. Pauls und tüftelt gerade an seinem neuen Juwel: Dem Praeclarus Brut, ein Sekt voller Rasse und Eleganz.Wir befinden uns mitten im Dorf St. Pauls in Eppan im Überetsch. Im Hintergrund thront das Mendelgebirge und auf den sanften Hügeln unterhalb gedeihen unter besten Voraussetzungen die Weinberge der Kellerei St. Pauls. Wie ein Bauernhaus getarnt steht er da: Der zweigeschossige Bunker, ein Übrigbleibsel aus dem zweiten Weltkrieg, erbaut zwischen 1937 und 1938 als 4. Verteidigungslinie. Auf den ersten Blick lässt sich nicht erahnen was sich hinter diesen Mauern verbirgt. Es ist das Reich von Wolfgang Tratter, ehrfürchtig betritt er den Bunker, über sein Gesicht macht sich ein Lächeln breit. Die Anordnung der einzelnen Sektflaschen gleicht einem Kunstwerk. Tausende an Sektflaschen lagern hier, Glas an Glas bei natürlich konstanter Temperatur von ca. 12°C. Die einen schräg mit dem Kopf nach unten auf dem Rüttelpult, die anderen gestapelt in den verschiedenen Kammern, die wieder anderen abgepackt auf dem Weg in die große weite Welt. Euphorisch erzählt er von den Anfängen, von den Pionieren Ebner, Dona und Kleon. Sie waren es, die vor mehr als 30 Jahren den ersten Praeclarus versektet haben. Noch heute werden jährlich 20.000 Flaschen als Praeclarus Brut produziert. Als Wolfgang Tratter nach Jahren im Schweizer Tessin 2006 nach Südtirol zurückkehrte und Kellermeister in St. Pauls wurde, wusste er genau, was er wollte: Er wollte sich nur noch auf eine Linie konzentrieren, er wollte etwas ganz Besonderes produzieren. Seit 2008 arbeitet er nun am neuen Praeclarus Brut. Der hohe Anteil an Chardonnay soll dem neuen Sekt Cremigkeit schenken, der Blauburgunder Anteil hingegen verleiht ihm die nötige Struktur. Beide Komponenten ergeben zusammen Rasse und Eleganz. Nach der Abfüllung und der traditionellen Vergärung in der Flasche reift der Praeclarus für 48 Monate auf der Feinhefe. „Diese lange Lagerung auf der Feinhefe ermöglicht die natürliche Entfaltung eines viel komplexeren Aromas und einer viel feineren Perlage. Ich bin schon gespannt, im Frühjahr 2013 kommen die ersten Flaschen in den Handel, dann sehen wir das Ergebnis“, so der Kellermeister, der ganze fünf Jahre auf sein neues Produkt warten musste. Da braucht es eine ordentliche Portion Geduld, Passion und Überzeugung. Er weiß genau, sein Sekt wird nur dann ein Erfolg, wenn das Ausgangsmaterial von bester Qualität ist. Bei der Kellerei St. Pauls stammen alle Trauben für den Grundwein ausschließlich von ausgewählten Lagen, die die besten Voraussetzungen dafür erfüllen. Auf tiefgründigen Kalkschotterböden und in einer Meereshöhe zwischen 450 und 550 Meter findet die Chardonnay Traube ideale Bedingungen für die Erzeugung unseres Sekt-Grundweines. „Nur durch das perfekte Zusammenspiel all dieser Voraussetzungen ermöglicht es uns diesen einzigartigen Praeclarus Brut zu produzieren“, erzählt Tratter voller Leidenschaft.

Questa si erge là con la sua veste di casa contadina: il bunker su due piani, una testimonianza risalente alla seconda guerra mondiale, fu costruito tra il 1937 e il 1938 come 4a linea di difesa. A prima vista non lascia intravedere ciò che si nasconde dietro queste mura. È il regno di Wolfgang Tratter, che in modo ossequioso entra nel bunker e sul suo volto splende un sorriso. La collocazione di ogni singola bottiglia di spumante sembra un’opera d’arte. Qui si trovano migliaia di bottiglie di spumante, vetro a vetro ad una temperatura costante di ca. 12°C. Alcune sono a testa in giù sul pupitre, altre sovrapposte in diversi locali, altre ancora imballate e pronte per essere destinate in tutto il mondo.

Euforico racconta degli inizi, dai pionieri Ebner, Dona e Kleon. Furono loro che, più di 30 anni fa, hanno prodotto il primo Praeclarus. Quando, dopo anni, Wolfgang Tratter tornò nel 2006 dal canton Ticino in Alto Adige e diventò capo cantiniere a San Paolo, egli

sapeva ciò che voleva: voleva concentrarsi solo su una linea, voleva produrre qualcosa di molto speciale. Dal 2008 egli lavora solo sul nuovo Praeclarus Brut. L’elevata percentuale di Chardonnay deve donare cremosità al nuovo spumante mentre la percentuale di Pinot nero la struttura necessaria. Entrambi i componenti danno come risultato un prodotto di razza e di gran classe. Dopo l’imbottigliamento e la tradizionale fermentazione in bottiglia, il Praeclarus matura per 48 mesi sui lieviti. “Questo lungo affinamento sui lieviti permette il naturale sviluppo di un gran numero di complessi aromi e di numerosi eleganti perlage.

Sono curioso quando a primavera 2013 le prime bottiglie saranno in commercio. Allora vedremo il risultato”, dice il capo cantiniere, che ha dovuto aspettare ben cinque anni per il suo nuovo prodotto. Non a caso, infatti, è necessaria una buona dose di pazienza, passione e convinzione.

Egli sa che il suo spumante sarà solo un successo se il materiale di base è della migliore qualità. Alla Cantina San Paolo, tutte le uve per il vino base provengono esclusivamente da località selezionate, che soddisfano le migliori condizioni. Su profondi terreni di pietra calcarea e ad un’altitudine compresa tra i 450 e i 500 metri, l’uva Chardonnay trova le condizioni ideali per la produzione del vino spumante base.“Solo la perfetta combinazione di tutte queste condizioni ci consente di produrre questo unico Praeclarus Brut”, dice appassionatamente Tratter.

THE INNOVATOR In an old military bunker, surrounded by the Oltradige, Wolfgang Tratter preserves his precious spumante. He is chief winemaker at the San Paolo winery and is working on his new jewel: Praeclarus Brut, a spumante setting its sights on a world-class rating. We are here in the heart of the village of San Paolo/ Appiano, in Oltradige. The backdrop is the imposing Mount Mendel, and the vineyards of Cantina San Paolo thrive in optimum conditions on the rolling hills. Here we see a humble dwelling: a bunker on two floors, with a heritage dating back to World War II, built between 1937 and 1938 as the fourth line of defence. At first glance, there is not a clue of what lies behind these walls. It is the realm of Wolfgang Tratter, who reverently enters the bunker and his face breaks into a bright smile. The placement of each bottle of sparkling wine looks like an art installation. Here you will find thousands of bottles of sparkling wine, stacked one upon the other a constant temperature of 12 ° C. Some are upside down on riddling racks, others stocked in different rooms, still others packed and ready to be shipped all over the world. The beginnings were exciting times, Tratter recounts. The pioneers were Ebner, Dona e Kleon who produced the first Praeclarus here 30 years ago: to date, 20,000 bottles of Praeclarus Brut produced yearly. In 2006, when he returned to South Tyrol from Switzerland, Wolfgang Tratter became the head winemaker at San Paolo, and he knew what he wanted: to focus on one line only, and to produce something very special. Since 2008 he is solely concentrated on the new Praeclarus Brut. A high percentage of Chardonnay gives creaminess to the new sparkling wine while the percentage of Pinot Noir offers the necessary structure. The combination of these components results in a product of extreme elegance.

After bottling, and the traditional bottle fermentation, Praeclarus matures for 48 months on fine lees. "This long aging on the lees allows the natural development of a large number of complex aromas and abundant perlage. I'm curious when the first bottles go on sale in spring 2013, we will see the results, "says the cellar master, who had to wait five years for his new product. In this profession, you need a good dose of passion, conviction… and patience.Tratter knows that his sparkling wine will only be a success if the base material is of superb quality. At San Paolo winery, all the grapes for the wine base come exclusively from selected locations with the best growing conditions. On deep limestone soil and at an altitude of between 450 and 500 meters, the Chardonnay grows under ideal conditions for the production of the sparkling wine base. "The perfect combination of all of these conditions allows us to produce this unique Praeclarus Brut," Tratter says passionately.

DER FEINSINNIGE Meditteranes Klima, hohe Lagen, kalkhaltige Böden: Das sind die Ingredienzien für die edlen Perlen der Kellerei Kettmeir in Kaltern. Sekte, die unverkennbar nach Südtirol duften, die Frische, Frucht und Eleganz ausstrahlen. Ein Verdienst nicht zuletzt von Josef Romen. Einfach nur malerisch ist der Blick runter zum türkisfarbenen Kalterer See. In der Mitte nichts als Weinberge, die meisten von ihnen auf Pergeln gezogen. Josef Romen kennt die Geschichte der Kellerei Kettmeir bis ins kleinste Detail. Er ist damit groß geworden. Ist am Hof nebenan aufgewachsen. Ist direkt nach seinem Weinbaustudium dort eingestiegen. Seither sind knapp 30 Jahre vergangen. Josef Romen ist mittlerweile zum Betriebsleiter aufgestiegen, hat die Wende von der Massenproduktion hin zum edlen Qualitätsprodukt miterlebt und vor allem mitgepflegt. Sekt wird in der Kellerei Kettmeir bereits seit 50 Jahren produziert, damals noch in schneller Tankgärung, bis zu 120.000 Flaschen im Jahr verließen den Keller. Und wäre Ende der 80er nicht der Markt eingebrochen und der Preis verfallen, hätte man den Qualitätssprung hin zur Flaschengärung vielleicht bis heute nicht geschafft. Wenn Josef Romen in seinem Keller vor dem Rüttelpult steht, weiß er, dass er keinen herkömmlichen Schaumwein herstellt. Sondern einen Sekt, der die Aromen gerade durch die lange Reifung bekommt. Seine Kunden wissen diese hohe Qualität zu schätzen. Es ist vor allem die gehobene Gastronomie, die seine Sekte auf die Weinkarte setzt, selbst in Japan sind die Sekte aus Kaltern präsent. Es sind Restaurants und Vinotheken, die ganz bewusst nach Finesse suchen. Nach Sekten, wie Kettmeirs Rosé Brut etwa. Ein eleganter zartrosa Sekt mit pfirsischfarbenen Nuancen, der zum einen frisch und vibrierend am Gaumen und zugleich weich und tiefgründig ist. Mindestens 20-22 Monate liegt er auf der Feinhefe, entfaltet dort ein unverkennbares Aroma und eine feine Perlage. Die drei Grundweine Weißburgunder, Chardonnay und Blauburgunder stammen aus den besten Lagen des Überetsch und Unterland. Es sind vor allem hohe Lagen, die eine ideale Basis bilden für Kettmeirs edle Perlen. In Altenburg oberhalb des Kalterer Sees etwa, dort gedeihen Reben auf 600 bis 700 Metern Meereshöhe. „Es ist extrem wichtig mit Winzern zusammenzuarbeiten, die Sinn für die Sektverarbeitung haben. Die ihre Trauben genau dann lesen, wenn die Trauben ein optimales Verhältnis von Zucker und Säure aufweisen“, erzählt der Kellermeister euphorisch. Die Nachfrage nach Bollicine, also nach Schaumweinen, steigt weltweit. Das lässt sich auch bei der Kellerei Kettmeir erkennen, allein in den vergangenen fünf Jahren hat sich die Produktion auf 50.000 Flaschen fast verdreifacht. Damit macht Sekt heute 25 Prozent der Gesamtproduktion aus.

Das freut nicht zuletzt die Gruppe Santa Margherita. Seit 1986 ist Kettmeir an den italienischen Weinplayer angeschlossen. Die Südtiroler Sekte mit ihrer unverkennbaren Authenzität sind ein Aushängeschild der Gruppe. Und Josef Romen genießt die Freiheit, die regionale Typizität seiner Sekte betonen zu dürfen.

IL RAFFINATO Clima mediterraneo, elevate altitudini, terreni calcarei: questi sono gli ingredienti per le perle preziose della Cantina Kettmeir di Caldaro. Spumanti, che profumano in modo inconfondibile di Alto Adige, che emanano freschezza, sapore fruttato ed eleganza. Non da ultimo un merito di Josef Romen. La vista sul Lago di Caldaro, con le sue acque turchesi, è semplicemente idilliaca. Al centro nient’altro che vigneti, la maggior parte dei quali ricavati su pergolati. Joseph Romen conosce la storia della Cantina Kettmeir fin nei minimi dettagli. Così è diventato grande, in quanto è cresciuto al maso vicino. È lì che direttamente apprende l’arte della viticoltura. Da allora sono trascorsi quasi 30 anni. Joseph Romen è ormai diventato un manager, ha vissuto da vicino e soprattutto curato la svolta dalla produzione di massa ad un nobile prodotto di qualità. Nella cantina Kettmeir lo spumante è prodotto già da 50 anni, all’epoca ancora con il metodo Martinotti più rapido, e ogni anno fino a 120.000 bottiglie lasciano la cantina. E se alla fine degli anni 80 il mercato non fosse crollato e i prezzi caduti in picchiata, il salto di qualità al metodo champenoise forse non ci sarebbe stato fino ad oggi. Quando nella sua cantina Josef Romen è al pupitre sa di non produrre spumante tradizionale, ma uno spumante i cui aromi derivano proprio dalla lunga maturazione. I suoi clienti apprezzano questa elevata qualità. È soprattutto la cucina raffinata che prepone i suoi spumanti sulla carta dei vini. Anche in Giappone sono presenti gli spumanti di Caldaro. Si tratta di ristoranti e vinoteche che ricercano volutamente la finesse. Basti pensare al Kettmeir Brut Rosé, un elegante spumante rosa frizzante con note di pesca, fresco e vivace al palato e allo stesso tempo morbido e profondo. L’affinamento sui lieviti dura almeno 20-22 mesi, sviluppando un aroma caratteristico e un raffinato perlage. I tre vini base, Pinot bianco, Chardonnay e Pinot nero, provengono dai migliori siti dell’Oltradige e della Bassa Atesina. Si tratta soprattutto di altitudini elevate, che costituiscono una base ideale per gli spumanti di Kettmeir. A Castelvecchio, sopra il Lago di Caldaro, prosperano viti da 600 a 700 metri s.l.m. “È estremamente importante collaborare con i produttori di vino, che hanno senso per la lavorazione dello spumante, che sanno leggere le loro uve, quando queste presentano un contenuto ottimale di zuccheri e acidi”, racconta il capo cantiniere in modo euforico. La domanda di bollicine, quindi di spumanti, è in continuo aumento in tutto il mondo. Questo si riscontra anche nella Cantina Kettmeir, che solo negli ultimi cinque anni ha quasi triplicato la produzione a 50.000 bottiglie. Così, oggi, lo spumante rappresenta il 25% dell’intera produzione. Questo non può altro che far piacere al Gruppo Santa Margherita. Dal 1986 Kettmeir è affiliata a questo gruppo vinicolo italiano. Gli spumanti altoatesini, con la loro inconfondibile autenticità, sono il fiore all’occhiello del gruppo. E Josef Romen gode della libertà di sottolineare la tipicità regionale dei suoi spumanti.

The view of Lake Caldaro, with its turquoise waters, is simply idyllic. There are nothing but vineyards as far as the eye can see, most of which grow on trellises. Joseph Romen knows the history of the winery Kettmeir down to the smallest details, because he grew up on a farm nearby.

He learned the art of viticulture here. Since then 30 years have gone by and Romen has become a manager, under his tutelage the winery implemented the transition from a mass-produced product to a splendid premium wine.

Kettmeir sparkling wine has been produced in this cellar for 50 years, back then with the rapid, Martinotti method, and every year up to 120,000 bottles were shipped.

At the end of the '80s, the market collapsed and prices fell sharply, leading to the courageous leap to adopt the Champenoise method. When Josef Romen is in his cellar at the riddling racks, he knows he is not producing a traditional sparkling wine, but a spumante whose aromas derives from long maturation. And his clients appreciate this high quality. What’s more, this wine has found a place

on some of the best wine lists in restaurants everywhere, even in Japan you can find the sparkling Caldaro. Wine shops also appreciate the finesse of this spumante. One perfect example: Kettmeir Brut Rosé, an elegant sparkling pink bubbly with notes of peach, fresh and lively on the palate and at the same time soft and deep. Aging on the lees lasts at least 20-22 months, developing a distinctive aroma and a fine perlage. The three base wines, Pinot Blanc, Chardonnay and Pinot Noir come from the best sites of Oltradige and Lower Adige. These are mainly in high altitudes, an ideal base for sparkling Kettmeir. At Castelvecchio, above Lake Caldaro vines thrive from 600 to 700 meters above sea level "It is extremely important to work with wine producers that are best adapted for the processing of sparkling wine, they know their grapes and when they reach their optimal content of sugars and acids," says the cellar master enthusiastically. The request for sparkling wines is steadily increasing throughout the world. This is also reflected in the Kettmeir Winery, who in the last five years has nearly tripled their production to reach 50,000 bottles. So, today, their sparkling wine represents 25% of the total market. This is very encouraging news to the Santa Margherita Group - since 1986 Kettmeir is affiliated with this Italian wine group. „Mobile home for mobile woman“ - das ist der Slogan von Zilla. Und Zilla, das ist Sylvia Pichler. Die Boznerin, die aus Aluminium, Silikon oder Schwämmen ausgefallene Taschenunikate entwirft. Die Modewelt ist verrückt nach ihren Kreationen. Das Porträt einer jungen Designerin, die aus Industriematerialien einen Modehype kreiert hat. Taschen aus natürlichen Korkschichten, glänzenden Aluminiumfolien, synthetischen Schwämmen oder gestrickten Bastfasern – in Reih und Glied stehen sie hier. Hier in der Bozner Industriezone, in einem vom Glas umgebenen Studio. Von hier gehen sie raus in die Welt. Die Taschenkollektionen von Zilla. In der Mitte ein strahlendes Baby im Kinderwagen.

Lina, ihr Name, sieben Monate alt ist sie. Es ist die Tochter von Sylvia Pichler, Südtirols wohl coolster Designerin.

Weltweit sorgt sie mit ihren ausgefallenen Taschenkreationen für Furore. Von Japan über Korea bis hin nach Abu Dhabi, Beirut und Paris und New York – Frauen sind verrückt nach ihren Taschen. Eben weil sie anders sind, weil sie nicht nur praktisch und handlich sind, sondern weil es stylische Unikate sind, hergestellt aus Haushaltsmaterialien oder Industrie- und Bauprodukten. Dass die Boznerin ausgerechnet mit so untypischen Materialien Handtaschen kreiert, kommt daher, dass Sylvia Pichler eigentlich Architektin werden sollte. „Für mich kam nie ein anderer Beruf in Frage. Es klingt vielleicht blöd, aber ich habe nie etwas anderes gekannt. Mein Vater ist Architekt und ich habe es geliebt ihm bei der Arbeit zuzusehen“, erzählt die Designerin. Architektur-Modelle zu bauen, das war ihre Leidenschaft. Mit ihren Händen etwas zu krieren, das war ihr Ziel. „Doch kaum habe ich in Wien und London zu studieren begonnen, hat sich alles nur noch am Computer abgespielt. Ein Gebäude virtuell zu entwerfen, das war nicht mein Ding. Ich wollte mit außergewöhnlichen Industriematerialien etwas konstruieren. Am Ende sind es Taschen geworden“, erzählt die Südtirolerin. Es war 2005, als sie ein befreundeter Künstler mit auf die Mailänder Modemesse Pitti nahm. Er wusste, Pichlers Taschenkreationen haben das Zeug fürs internationale Parkett. „Es ging alles so schnell und ohne konkrete Absichten. Plötzlich stand ich mit meinen wenigen Kreationen auf der Mailänder Modemesse und ausgerechnet Asiaten kamen an meinem Stand vorbei und wollten meine Taschen haben“, erzählt die 37-Jährige. Dann musste alles ganz schnell gehen, Sylvia Pichler gründete ihre eigene Firma. Zilla wurde geboren. „Nacht für Nacht habe ich genäht um diesen ersten Auftrag für die Asiaten fertigzustellen. Auch wenn ich mein Architekturstudium am Ende abgeschlossen habe, ich

wusste: ich werde in meinem Leben keine Häuser sondern Taschen bauen.“ Heute, acht Jahre später, ist ihr Name ein Begriff in der Modewelt. Im Pariser Luxuskaufhaus Lafayette hängen ihre Kreationen im Schaufenster, kleine Clutches aus Phytonleder, geräumige Shopper aus Schaumstoff, biegbare Abendtaschen aus laminierter Baumwolle oder aber auch modern interpretierte Jagdrucksäcke. Pro Kollektion entwirft Sylvia Pichler rund 30 Modelle. Die Zeiten, in denen sie nachts noch selbst an der Nähmaschine saß, sind mittlerweile vorbei. „Fünf Jahre lang habe ich jede Tasche selbst per Hand genäht. Dann habe ich einen kleinen Produzenten in der Nähe von Venedig gefunden, der heute meine Entwürfe umsetzt“, erzählt die Designerin. Ihre Kunden sind über den ganzen Globus verteilt, vor allem im Mittleren Osten und in Japan und Korea finden ihre Taschen reißenden Absatz. Von Krise ist bei Zilla keine Spur. „Ich bin immer nur in kleinen Schritten gewachsen, einen großartigen Rückfall habe ich also nie miterlebt, vielleicht auch weil ich noch immer ein winziges Unternehmen bin“, so die Boznerin. Seit ihre Tochter zur Welt gekommen ist, beschäftigt Sylvia Pichler eine Mitarbeiterin. Ansonsten bleibt Zilla eine One-Women-Show mit immer demselben Ziel: Neue, zeitgenössische Materialien mit alter Handwerkskunst zu verbinden. Dafür steht auch der Name des Labels: Zilla. Die Abkürzung für den alten Südtiroler Name Cäcilia. Sylvia Pichler sieht sich als “moderne” Zilla. Als eine, die sich von Südtirol inspirieren lässt, draußen auf der Welt aber zu Hause ist. Die keine Berührungsängste hat neue unkonventionelle Materialien anzufassen, sich an ihnen auszuprobieren. Feinstes Leder kombiniert sie mit groben Karabinern, verbindet Kunststoffschwämme mit bunten Lederborten, verpasst Baumwolle eine glänzende Aluminiumbeschichtung. „Es sind Alltagsmaterialien, die ich oft zufällig entdecke. Ich liebe es, Materialien zu transformieren und sie ihrer ursprünglichen Nutzung zu entziehen.“ In Mailand hat Sylvia Pichler mittlerweile einen Showroom, der sie vertritt, das Zentrum ihres Schaffen bleibt aber Bozen. Eine Stadt, die sie gerade wegen der idealen Lage liebt. „Ich genieße den Luxus inmitten der Weinberge zu leben und dennoch in zehn Minuten in der Altstadt zu sein. Auf dem Obstmarkt einzukaufen ist für mich Genuss pur“, erzählt die Designerin euphorisch und verweist noch auf ihr Lieblingsrestaurant im Herzen Bozens: „Ich mag die Weiße Gans, das einfache Lokal am Obstmarkt mit seiner ehrlichen Küche. Vielleicht auch weil es anders ist als all die anderen Lokale.“ Vielleicht aber auch, da es Pichlers eigene Einfachheit widerspiegelt. Die Einfachheit, die hinter all den unkonventionellen Taschenkreationen steckt.

“Mobile home for mobile woman”: questo è lo slogan di Zilla. E Zilla è Sylvia Pichler, la bolzanina che ha realizzato pezzi unici di borse facendo uso di materiali, quali alluminio, silicone o spugna.

Il mondo della moda è pazzo per le sue creazioni. Il ritratto di una giovane designer, che ha creato una moda con materiali industriali. Borse costituite da strati di sughero naturale, fogli lucidi di alluminio, spugne sintetiche o grana di rafia lavorata a maglia - sono tutte in fila qui, nella zona industriale di Bolzano, in uno studio circondato da vetro. Da qui partono per il mondo. Le colle-

zioni di borse di Zilla. Al centro una neonata radiosa nella carrozzina. Lina, il suo nome, ha sette mesi. Lei è la figlia di Sylvia Pichler, la designer più cool dell’Alto Adige. In tutto il mondo, le sue creazioni fanno furore. Dal Giappone alla Corea, fino ad Abu Dhabi, Beirut, Parigi e New York: le donne vanno pazze per le sue borse. Proprio perché sono diverse, non solo perché pratiche e maneggevoli, ma anche perché eleganti pezzi unici, realizzati a partire da materiali per la casa oppure da prodotti industriali ed edili. Che la bolzanina crei proprio borse con materiali così atipici viene dal fatto che Sylvia Pichler è architetto.

“Per me non era possibile nessun’altra professione. Può sembrare sciocco, ma non ho mai conosciuto altro. Mio papà è architetto e io amavo vederlo in opera”, racconta la designer. Costruire modelli architettonici: questa era la sua passione. Creare qualcosa con le sue mani: questo era l’obiettivo. “Ma una volta che ho iniziato a studiare a Vienna e a Londra, tutto girava intorno al computer.

Progettare un edificio virtualmente non faceva per me.

Desideravo costruire qualcosa con materiali industriali d’eccezione. Alla fine questo qualcosa sono diventate le borse”, continua l’altoatesina. Era il 2005 quando andò

con un amico artista alla fiera della moda Pitti a Milano.

Egli sapeva che le borse di Pichler avevano la stoffa per lo scenario internazionale. “È andato tutto così in fretta e senza specifiche intenzioni. All’improvviso stavo con le mie poche creazioni alla fiera della moda di Milano e proprio gli asiatici passavano al mio stand e volevano avere le mie borse”, racconta la trentasettenne. Poi, tutto è andato in modo molto veloce: Sylvia Pichler ha fondato la sua società ed è nata Zilla. “Ho cucito notte dopo notte per consegnare questo primo ordine agli asiatici. Anche se alla fine mi sono laureata in architettura, sapevo che nella mia vita avrei creato borse e non case”. Oggi, otto anni più tardi, il suo nome è molto noto nel mondo della moda. Nei lussuosi grandi magazzini di Parigi Lafayette, le sue creazioni sono appese in una vetrina: piccole clutch in pitone, capienti shopper in spugna, borse da sera pieghevoli in cotone laminato e anche moderne interpretazioni di zaini da caccia. Sylvia Pichler crea circa 30 modelli a collezione. I tempi in cui le notti lavorava con la sua macchina da cucire sono ormai finiti. “Per cinque anni ho cucito a mano ogni borsa. Poi ho trovato un piccolo produttore nelle vicinanze di Venezia, che oggi realizza le mie bozze”, racconta la designer. I suoi clienti sono sparsi in tutto il mondo.

Soprattutto in Medio Oriente, in Giappone e in Corea le sue borse vanno a ruba. Da Zilla della crisi non c’è traccia.

“Sono sempre cresciuta a piccoli passi, non ho mai vissuto grandi ricadute, forse anche perché sono ancora una piccola azienda”, afferma la bolzanina. Da quando sua figlia è venuta al mondo, Sylvia Pichler si avvale di una collaboratrice. Nonostante ciò, Zilla rimane un One Woman Show con sempre lo stesso obiettivo: materiali nuovi e contemporanei da unire con il tradizionale artigianato fatto a mano. Questo concetto si rispecchia anche nel nome del marchio: Zilla. L’abbreviazione per l’antico nome altoatesino “Cäcilia”. Sylvia Pichler si considera come una “moderna” Zilla, come una che si lascia ispirare dall’Alto Adige, che è proiettata nel mondo, ma pur sempre a casa.

Nessuna fobia del contatto ha riguardato i nuovi materiali non convenzionali, quanto piuttosto la volontà di provarli.

La pelle più raffinata combinata con moschettoni grezzi, spugne sintetiche unite con rifiniture in pelle colorata, cotone rifilato con un rivestimento in alluminio lucido. “Ci sono materiali di uso quotidiano che spesso si scoprono per caso. Mi piace trasformare i materiali e spogliarli del loro utilizzo originario”. A Milano, Sylvia Pichler ha ormai uno showroom che la rappresenta, ma il centro operativo rimane Bolzano, una città che ama proprio per la sua posizione ideale. “Mi piace il lusso di vivere in mezzo ai vigneti e di essere in dieci minuti nel centro storico della città. Fare acquisti alle bancarelle di Piazza Erbe per me è un grande piacere”, racconta euforica la designer e si riferisce ancora al suo ristorante preferito nel cuore di Bolzano: “Adoro l’Oca Bianca, un ristorante tranquillo nei pressi di Piazza Erbe con la sua cucina genuina. Forse anche perché è diverso da tutti gli altri ristoranti”. Ma forse perché riflette la semplicità della Pichler. Semplicità che è dietro le sue creazioni davvero originali.

Bags consisting of layers of natural cork, shiny leaves of aluminium, synthetic sponges or cords of handcrafted raffia - are all lined up here, in the industrial park of Bolzano, in a glass surrounded office. From here they leave for the whole world. The collection of bags by Zilla. At the centre, a beaming newborn in her pram. Lina, that’s her name, is seven months old. She is the daughter of Sylvia Pichler, the coolest designer in Alto Adige. In the whole world, her creations cause frenzy. From Japan to Korea, as far away as Abu Dhabi, Beirut, Paris and New York: women are going mad for her bags. Exactly because they are different, not simply because they are practical and easy to handle, but also because they are elegant unique pieces, created from household materials or from industrial and building products. That this Bolzanina creates bags using such untypical materials comes from the fact that Sylvia Pichler was an architect. “For me, no other profession was possible. It may seem silly, but I have never known anything else. My father was an architect and I loved seeing him at work” says the designer. To build architectonic models: this was her passion. To create something with her hands: this was the objective. “However once I had started to study in Vienna and London, everything revolved around the computer. To project a virtual building was not for me.

I wanted to build something with exceptional industrial materials. At the end this something became bags”, continues this woman from South Tyrol. It was 2005 when I went with an artist friend to the Pitti fashion exhibition in Milan. He knew that Pichler’s bags had the stuff for the International market. “It all happened so fast and without any specific intentions. All of a sudden I was with my few creations at the fashion exhibition in Milan and the Asians were stopping at my stand wanting to have my bags”, relates this thirty seven years old. Then, everything went in a very fast way: Sylvia Picher founded her company and Zilla was born. “I sewed night after night to deliver the first order to the Asians. Even though at the end I obtained a degree in architecture, I knew that in my life I would create bags and not houses.”

Today, eight years later, her name is well known in the fashion world. In the luxurious big stores of Paris Lafayette, her creations are displayed in a window, small clutch bags in imitation leather, spacious shoppers in expansive material, folding evening bags in laminated cotton along with modern interpretations of hunting backpacks. Sylvia Pichler creates around 30 models per collection. The times when I spent nights at my sewing machine have gone now. “For five years I sewed every bag by hand. Then I found a small producer nearby Venice, that today creates my bags”, explains the designer. Her clients are scattered worldwide.

Most of all, in the Middle East, In Japan and in Korea, her bags are a steal. At Zilla, there is no trace of the crisis. “I have always grown in small steps, I have never seen big relapses, maybe because I am still a small company”, confirms the Bolzanina. Since her daughter came into the world, Sylvia Pichler relies on a collaborator. Nevertheless,

Zilla remains a One Woman Show still with the same objective: new and contemporary materials to unite with the traditional hand craftsmanship. This concept mirrors itself even in the name Zilla. The abbreviation for the antique name from South Tyrol “Cäcilia”. Sylvia Pichler considers herself to be a “modern” Zilla, just like someone who lets themselves be inspired by South Tyrol, who is projected into the world, but remains at home. No fear of contact regarding the new non-conventional materials, but rather

the willingness to try them out. The most elegant leather combined with a raw fastener, synthetic sponges unite with last touches in coloured leather, re-spun cotton with a lining in shiny aluminium. “There are materials for everyday use that often are discovered by chance. I enjoy transforming the materials and stripping them of their original purpose”. In Milan, Sylvia Pichler already has a showroom that presents, but the operative core remains in Bolzano, a town that she loves simply for its ideal position. “I like the

luxury of living amid the vines and being ten minutes from the historical town centre. To shop at the fruit market is a great pleasure for me”, tells us euphorically the designer and she refers still to her favourite restaurant in the heart of Bolzano: “I adore l’Oca Bianca, a calm restaurant near the fruit marker with its’ genuine cooking. Maybe also because it is different from all the other restaurants”. But maybe because it reflects the simplicity of Pichler. Simplicity that is behind her so very original creations.
