PREPARATION

Pad Thai Sauce • In a mixing bowl, mix everything together.

Garnish and Condiments • Prepare ingredients as mention above.

Before serving • Heat up wok with oil, stir fry shallot and radish till fragrant.

• Stir fry egg till foamy, stir fry rice noodles, add water and dark soya sauce occasionally till noodles are soften.

• Add in pad thai sauce while stir frying.

• Fold in tofu, dried shrimps, bean sprouts, chives and stir fry till well mixed.

• Garnish and serve.

PREPARATION

Nonya Spice Blend • In a blender, blend all ingredients till smooth.

Nonya Paste • In a pot, sweat Nonya spice paste, Knorr South East Asian Spice Paste and lime leaves till fragrant.

• Fold in pineapple puree, sugar, tamarind sauce and bring to boil.

Nonya Sauce • In a pot, boil Nonya paste and water.

Garnish and Condiments • Prepare ingredients as mention above.

• Fold in tomatoes into Nonya sauce.

娘惹拌酱材料 • 用搅拌机将所有材料打成均匀的糊状。 娘惹酱 • 起油锅，爆香娘惹拌酱、家乐东南亚风味 香料酱和酸柑叶。 • 加入黄梨泥、白糖和罗望子酱，煮至沸腾。 娘惹酱汁 • 将娘惹酱及清水放入锅中煮沸。 装饰及调味料 • 根据上述准备好食材。 • 娘惹酱加入番茄。 上菜前 • 预热蒸锅，清蒸墨鱼3分钟。 • 将墨鱼摆盘，淋上酱汁。 • 点缀后即可享用。

PREPARATION

Assam Spice Blend • In a blender, blend all ingredients till smooth.

Assam Pedas Paste • In a pot, sweat assam spice paste and fish curry powder till fragrant.

• Add in Knorr Concentrated Tamarind Sauce, Knorr Chicken Seasoning Powder, Knorr Lime Seasoning Powder powder and sugar and bring to boil.

Assam Sauce • In a pot, boil assam pedas paste and water.

Garnish and Condiments • Prepare ingredients as mention above.

• Fold in tomato, eggplant and puff bean curd into the sauce.

Before serving • Preheat steamer and steam snapper for 10 mins.

• Plate snapper and pour sauce over.

• Garnish and serve.

Pajeris Sauce 30ml Corn Oil 50gm Onion, diced 10ml Knorr South East Asian Spice Paste 10gm Knorr Rendang Paste 20gm Chili Paste 40gm Gula Melaka, melted 10gm Coriander Powder 4gm Fish Curry Power 200ml Water 60ml Knorr Concentrated Tamarind Sauce 400gm Pineapple, rings and fried 150gm Tomato, wedges Garnish and Condiments 5gm Coriander, curls 5gm Red Chilli, curls 10gm Shallots Rings, soaked in ice water

PREPARATION

Prawn • Mix all the ingredients in the mixing bowl and marinate prawns overnight.

• Grill the prawns till cooked.

Pajeris Sauce • In a pot, stir fry onion, fish curry powder, coriander powder, chili paste, Knorr South East Asian Spice Paste and Knorr Rendang Paste till fragrant.

• Add in water and bring to boil.

• Fold in pineapple, gula melaka and Knorr Concentrated Tamarind Sauce let it simmer for 8 mins.

PREPARATION

Thai Chili Tamarind Dip • In a pot, add all the ingredients, bring to boil.

Batter Mixture • In a mixing bowl, mix all the ingredients together.

Assorted Mushrooms • Prepare ingredients as mention.

• Coat mushroom with corn flour.

Garnish and Condiments • Prepare ingredients as mention above.

Before serving • Preheat deep fryer to 180 degree Celsius.

• Coat mushrooms with batter mixture.

• Deep fry mushrooms till cooked and golden brown.

• Portion sauce into ramekins.

PREPARATION

做法

Fruity Tamarind Dressing • In a mixing bowl, mix well all ingredients.

Lobster • Prepare ingredients as mention above.

Pickled Solution • In a pot, add in all ingredients and bring to boil.

• Set aside and cool down.

腌渍酱 • 将全部的食材放入锅中，煮至沸腾。 • 静置一旁，放凉备用。

Pickled Vegetables • In a mixing bowl, put all the vegetables and pour in pickle solution.

Fig and Tamarind Compote 100gm Dried Fig, diced 100gm Dried Prune, diced 100gm Granny Smith Apple, peeled and diced 75gm Sugar 100ml Water 100ml Knorr Concentrated Tamarind Sauce 100gm Butter 10gm Corn Flour 10ml Water Phyllo Pastry Roll 12pcs Phyllo Pastry 50ml Clarified Butter 50gm Grounded Almonds 50gm Caster Sugar

PREPARATION

Fig and Tamarind Compote • Mix well corn flour and 10ml of water.

• In a pot melt and caramelise sugar, add in fruits and stir fry till soft.

• Add in water, bring to boil and let it simmer for 5 mins.

• Whisk in Knorr Concentrated Tamarind Sauce and add in corn flour mixture.

• Bring to boil.

• Fold in butter and set aside.

Phyllo Pastry Roll • Preheat oven to 175 degree Celsius.

• Mix well flour and egg white.

• Lay phyllo pastry, brush clarified butter and sprinkle ground almonds. Repeat process till you had gotten 6 layers.

• Lay 200gm of fig compote and wrap with phyllo pastry.

• Apply flour mixture to seal the corners.

• Bake in oven for 20 mins till pastries is cook and golden brown.

做法

糖煮无花果罗望子 • 将粟粉及10毫升的水充分混合，勾成芡。 • 将白糖放入锅中加热使至焦糖化，再放入 水果翻炒至变软。 • 加入清水，煮沸后转小火，煨煮5分钟。 • 缓缓加入家乐浓缩罗望子酱，再加入芡汁， 煮至沸腾。 • 加入牛油后，关火放置一旁备用。 千层油酥皮卷 • 预热烤箱至175度。 • 充分混合面粉和蛋白。 • 将千层油酥皮铺平，刷上一层澄清牛油， 并撒上杏仁粉。重复动作，直到叠上了 6层酥皮。 • 用叠好的酥皮包裹200克的糖煮无花果。 • 再用调好的面糊封口。 • 放入烤箱烤20分钟，直至金黄色。 上菜前 • 切成适当的分量后即可享用。
