Every summer, I get excited to dream of the trips I’ll take throughout our region and beyond, and this time, I’ll be letting you in on my personal secret favorite spots. If you’re a wine lover, you’ll definitely want to make sure you plan a trip to Walla Walla during crush season - it is a delicious education for the novice to the most sophisticated of aficionados.

If you’re up for a drive, you can also head to Seattle for some beautiful hikes that will take your breath away. If getting out on the ocean is more your style, Orcas Island is a destination in the Puget Sound that you won’t soon forget. From the majestic wildlife to the exceptional restaurants and dynamic activities on the water and off, this is one little corner of the Northwest you’ll be sure to fall in love with just like I did.

Staying home and focusing on self-care? We have some delicious recipes that will help you feel nourished from the inside out, focusing on fresh summertime salads that help you keep the kitchen cool and your body full.

Looking for a little luxury and fun right here in Spokane? CHEERS TO SHARING

WHILE EVERY ISSUE OF TRENDING NORTHWEST magazine has held a special place in my heart, I have to say the one you’re holding right now, the Summer Travel issue, might be one of my favorites.

Travel is my not-so-low-key passion, and when Erin and I were coming up with our content calendar last year, I knew we had to have a Travel issue. It happily coincided with our Summer quarterly publication, and I’m thrilled to have it out in stands now. One part of Trending Northwest magazine is to highlight the “people, places, and things to do” that make the Northwest great, and I feel this issue highlights that. I can’t wait for you to read about wine road trips in Washington, hiking throughout Seattle’s mountains, or relaxing at indulgent luxury spas in the Inland Northwest.

Plus, we’ve heard you! Many of our readers like to get away in the fall and winter for a little sun/pool/golf time to our neighboring lower states, so when contributor Krista had the opportunity to visit Greater Palm Springs, we couldn’t wait to showcase her adventures! While the Northwest is great, sometimes you just need to hop on a plane for a little getaway to return more refreshed.

Finally, you’ll notice more QR codes throughout this issue than ever before. Our contributors have so many things to say about our region that fitting it all into our magazine can be tough, but why leave it out? CAPTURING THE EXTRAORDINARY AND ETHEREAL

Soft-spoken and observant, Amanda Keeley of Dreamily Portraits and I meet at the brightly colored Wake Up Call coffee shop in mid-town Spokane. When I comment on the obvious, about Wake Up Call’s impossible-to-miss, giant old-school phone booth location being a good location for photoshoots, she instead points to the brightly colored yet unremarkable Italia storage container behind Wake Up Call. She then describes how she would use its backdrop and vibrant color to style a photoshoot, sharing how these types of industrial looks are trendy and monochromatic is in. It’s this unique approach to photography, this out-of-the-box thinking, that characterizes Dreamily Portraits - extraordinary and ethereal.

Inspired and encouraged by creative parents, Keeley received her first camera as a Christmas present at the age of 14, and, as they say, the rest is history. Except for a brief detour as a hair stylist, Keeley has consistently worked in the photography field, starting with Amanda Keeley Photography and now with Dreamily Portraits.

When asked about the inspiration for the cover photo, Keeley’s response shouldn’t have surprised me. Her response was a perfect example of the “community over competition” ethos that steadfastly characterizes most of the businesses in the Inland Northwest. Keeley shares that this photo shoot, in particular, was one she regularly coordinates - a photo shoot where she orchestrates the shoots, models, makeup - even

down to the props - and invites other photographers to come and shoot for as long as they need. “It’s a chance for us to learn from each other,” Keeley explains, saying that everyone gets something from the day-long shoot, including her. “It is a lot of work, but I learn from the photographers there,” improving her craft and sharing her knowledge as well.

Continual improvement is clearly a hallmark of Keeley’s work. While she began Amanda Keeley Photography first and continues to work shooting engagement photos, senior portraits, couples, family, and more, it’s clear Dreamily Portraits is her passion. Scrolling through Dreamily’s Instagram account is like going through a multi-faceted dreamscape, where you’ll encounter both fantastical scenes and the outskirts of nightmares. From Alice-in-Wonderland-esque photoshoots to hazy recreations of those terrifying girls from the horror movie The Purge, Keeley hones in on the dreamlike and unreal in her work. Inspired by photographers like Julia Trotti, Irene Rudnyk, Michael Betzner, and Marina Williams, Kelley has made Dreamily her own passion project, one she’s taken full-time by working with clients who have a similar vision.

It was no surprise to me that Keeley is as thoughtful with her words as she is with her photos. Keeley knows who she wants to work with (people who are “willing to get weird and unique”) and she focuses on dreamy, “feminine” shoots. After years in the photography industry, Keeley knows her style, acknowledging she’s inspired by movies and music, and finds it

“fun to play with complimentary colors or monochromatic,” which inspired our conversation about the Italia storage container. She continues to host content days, like the one that created our cover photo, and is planning for more high fashion photoshoots.

Next up for Keeley is getting her own studio. She mentions this casually, and when I ask her how far along in the process she is, I once again shouldn’t have been surprised that just because Keeley says she’s “looking” nonchalantly means she hasn’t done her research. She explains that she’s already identified her chosen location (downtown Spokane) and has begun to price out what she would want in the studio. Given Keeley’s planning and commitment to execution, I don’t even hesitate to think she won’t achieve her goal within her timeframe. Dreamily Portraits may focus on the “pleasantly unreal and dreamlike,” but Keeley’s goals for the future are anything but a dream.

It was no surprise to me that Keeley is as thoughtful with her words as she is with her photos.

Seattle's Top Day Hikes

Seattle, also known as the Emerald City, is a haven for outdoor enthusiasts. The city is renowned for its proximity to mountains and water, making it an excellent place for hiking. If you’re looking for excellent day hikes from Seattle, you won’t be disappointed!

The surrounding Seattle area features numerous hiking trails, including Rattlesnake Ledge, Mount Si, Little Si, Poo Poo Point, Snow Lake, and Mailbox Peak, all of which offer great views and a decent hike in just over an hour or two. From challenging hikes such as Mailbox Peak to shorter, popular hikes like Little Si, Seattle's hiking trails offer something for everyone.

EXPLORE THE EMERALD CITY'S SURROUNDINGS:

RATTLESNAKE LEDGE

Rattlesnake Ledge is arguably the most popular day hike from Seattle, and one that never disappoints, no matter the season. Don’t be intimidated by the ominous presence of the ledge, which you can see from the parking lot. It may look a long way away from there, and the 4-mile roundtrip climb is quite the workout, with 1,160 feet of elevation gain. However, the beautiful evergreen forest you hike through makes the (seemingly) neverending switchbacks pass with ease. In the end, you’re rewarded with sweeping views of Mount Washington, Mount Si, and Rattlesnake Lake.

The trailhead is located about 40 minutes from downtown off of I-90 and is very, very, popular, especially during the summer. If you plan to hike Rattlesnake between June and August, make sure to arrive early as the lot fills up. You can park along the road, although watch the signs so you don’t get a ticket. This is also a popular route for sunrise hikes, which are stellar, but again, even at 4 or 5 AM in August, the lot will be quite full.

NOTE: YOU WILL NOT NEED A DISCOVER PASS FOR RATTLESNAKE LEDGE, AS IT IS NOT A STATE PARK.

Also, no need to worry about snake bites, the ledge, and hike was misnomered by an early settler who heard what he believed were rattles, not realizing Western Washington is free of poisonous snakes.

MOUNT SI (BIG SI)

Close to Rattlesnake and off of I-90 lies Mount Si, one of the many peaks in the region. The mountain is known locally as “Big Si” as it’s taller (and thus a longer hike) compared to the neighboring peak, “Little Si.” Big Si is also known as the gateway to the Cascades, since it's where the range begins.

You’ll hike 8 miles through the Pacific Northwest forest and ascend approximately 3,150 feet, to be greeted at the top with an amazing view of the Snoqualmie Valley. The tough route doesn’t scare many away though, as it’s neck-and-neck with Rattlesnake as the most popular day hike from the city.

On your way up, consider bringing a picnic, as there’s a nice lunch spot near the top with views of Mount Rainier. This is where many may choose to turn around and end their day hike from Seattle. However, if you continue up stone steps from here, you’ll pass through a bit more forest to the final viewpoint — where you can see Seattle, the Olympics, and the Valley in the distance.

Note that in winter, there may be snow as you climb higher, and as this is a well-frequented hike, you’ll want to arrive early, especially on weekends. Trust us when we say this is one of the more popular day hikes from Seattle!

LITTLE SI

Just next door is Mount Si’s little brother, Little Si, which is a smaller peak that is even more popular than its companion hike, due to the shorter length. It’s also more accessible in the winter months as there’s rarely snow at the top.

Little Si is a short-but-steep climb, coming in at 3.7 miles and 1,300 feet of elevation gain. You’ll reach the top and, on a clear day, see other peaks as well as the valley.

MAILBOX PEAK

Just 40 minutes from Seattle is Mailbox Peak, a 9.4-mile climb with 4,000 feet of elevation gain known as one of the most difficult day hikes from Seattle. The current trail is quite new, as it was construct ed as an alternative to the old, even more intense option. It’s also much safer.

Even though the path is safer, it’s Mailbox Peak is full of switchbacks and bridges that make up the majority of the hike. At the summit, you’re rewarded with views of Mount Rainier and Middle Fork Valley. Don’t forget to check the mailbox at the top to see what other hikers have left behind — and leave your own memento if you remembered to bring one!

The trailhead is off of Middle Fork Road, which you can park along as the lot fills up quite quickly despite the difficulty of the hike, so be prepared to arrive early.

Seattle offers incredible opportunities for day hikes just outside the city. It’s no wonder hiking is one of the most popular activities in the Northwest - we’re blessed with so many places to go, with a variety of terrain, difficulty, and beautiful views.

We do recommend you plan ahead and arrive early, especially during the summer and weekends, as some trails can be very crowded. Whether you're a Seattle local or visiting for the first time, make sure to take advantage of these top day hikes from Seattle and enjoy the beauty of the Emerald City's surroundings.

Once you board the ferry bound for Orcas Island, you can feel your stress evaporate into thin air, carried away by the strong winds on the deck. For those who haven’t taken advantage of Washington’s sophisticated ferry system, getting booked and loaded may feel overwhelming, but once you’ve made the leap, it is as easy as booking a flight. The alternate benefit, though, is that the journey is as epically beautiful as the destination.

GETTING TO ORCAS ISLAND

The San Juan Islands are a place that calls you from the moment you arrive until your next trip. From the friendly, laidback island attitude (being in the middle of the ocean makes you patient, I think) to the unadulterated majesty of every corner of these distinct destinations in Washington. In addition to the scenery's charm, Orcas Island inhabitants are mindful of the environment they have been entrusted with. Everyone I encountered seemed particularly geared toward sustainability, as everything they do has such a profound effect on their closed ecosystem.

From world-class dining to soaring virgin forests to endless miles of pristine coastline, Orcas Island really has hospitality and adventure dialed in.

PLACES TO STAY ON ORCAS ISLAND

I stayed at the Outlook Inn, which has a unique history on the island. Originally founded by early island settlers in 1888, it has been meticulously kept and beautifully renovated over its years of service to include indulgent and ultra-modern suites overlooking the ocean.

For rooms with a more sophisticated, modern polish (ideal for a romantic getaway), I recommend the exclusive Water’s Edge Suites that boast stunning views of Fishing Bay, Indian Island and have beach access. These gorgeous bayview rooms are designed to provide the ultimate relaxing experience, from the soft finishes to the luxurious amenities to the sounds and sights of the ocean below.

THINGS TO DO ON ORCAS ISLAND

There is no shortage of activities to do on Orcas Island in the summer. I’m a big fan of vacations where there is little planned and the itinerary leaves plenty of room for the imagination, and this trip was ideal for exploring.

Our list of things to do on Orcas Island included visiting local parks! We started our adventure by grabbing some snacks and freshly pressed juice to go at Wild Island, just up the road from the hotel in Eastsound, and tucked them away in the cooler.

According to every local, our priority destination needed to be Moran State Park, and I’m very glad we listened. I'll admit the drive was harrowing and longer than expected, but the resulting view was worth every twist and turn.

When you reach Mount Constitution's top, don’t miss the historic fort. Not only is it fascinating to tour and learn about the history of the island, but it’s also one of the most breathtaking views I have had the pleasure of seeing in the Northwest. Panoramic views of a vibrant gradient of blue ocean below framed by ancient pines and clouds make for a particularly memorable photo op–it’s something you’ll want to tuck away into your heart as well as your camera. The fire lookout and observation tower is a must-climb, too.

While on the road, we came across the Orcas Island Artworks Gallery, which houses a prolific number of local artists whose works are as varied as the individuals themselves. From impressionist-style paintings of the island to charming, detailed sculptures of sea otters to innovative ceramic vessels from scientists-turned-social-media-sensations Forest Ceramic Co. to hand-carved wood trays, mirrors, and bowls, there is something for everyone at this tucked-away destination that you shouldn’t miss, even if you’re just window shopping.

I couldn’t in good faith tell you about the adventures on Orcas Island without mentioning our favorite part of the trip, Orca watching with San Juan Excursions! Although you aren’t guaranteed to see whales on every trip, they guarantee that you get another trip for free if you don't.

I’d recommend reserving early in your stay just in case you miss out, but rest assured, the crew is very skilled in communicating with all of the boats nearby to get you in prime viewing locations for wildlife of the region, including the elusive whales. We lived our “Free Willy” dreams in real life, and it was worth every penny of the tour. We also saw sea lions, porpoises, and bald eagles on our four-hour trip.

WHERE TO EAT ON ORCAS ISLAND

This is a trip where you can look at a map, close your eyes, throw a dart, and find good food no matter where it lands. We had a series of delightful experiences, none of which were planned.

We saw a sign for oysters near the gallery, and I couldn’t resist stopping. It was one of the happiest accidents of our trip. Buck Bay Shellfish Farm has a casual atmosphere that is whimsically decorated with plentiful items rescued from the sea, and is a counter-service spot that locals and visitors alike adore. You can order the shellfish grown and harvested steps away from the restaurant and sink your teeth into house specialties like hot halibut sliders, Dungeness crab mac and cheese, and of course, oysters by the dozen or half-dozen served with a light, refreshing mignonette. Grab a beer or two and linger.

Another notable dinner spot is Kingfish, built in 1902 with gorgeous old-growth fir beams and accented by candlelight. It’s an experience you won’t soon forget, filled with thoughtful details from the beginning of the meal to the end, each course crafted with sensory delight in mind.

After spending just a couple of fleeting days on the island, it worked its way into the recesses of my weary soul, providing nostalgic experiences reminiscent of a long-past time. The Orcas Island residents have mastered the art of slow living, and I long to continue to learn from the experiences I am yet to have in this jewel on the crown of the San Juans.

ESCAPE TO PARADISE: DISCOVER OUTDOOR ADVENTURES IN

Palm Springs is a popular desert oasis that has long been known as a playground for Hollywood celebrities. Surrounded by four picturesque mountain ranges, Palm Springs has been a getaway for actors due to its proximity and the 1930s “two-hour rule” of film studios for reshoots. Its natural and architectural beauty, culinary, art, and entertainment hotspots attract visitors from around the world.

With 350 days of sunshine a year, Palm Springs offers a perfect escape from the cold temperatures of the northwest. I’ve traveled to Palm Springs a handful of times for spring

break getaways, where my trip consisted of lounging by the pool, shopping, and dining at fabulous restaurants. While that is a delightful vacation, it wasn’t until my November trip with Visit Greater Palm Springs that I realized my adventures reached far beyond my lounge chair.

I had never considered Palm Springs an outdoor enthusiast destination, and man, was I missing out! Now it’s my turn to return the favor and ensure you make the most of your trip to the desert! Special thanks to Visit Greater Palm Springs for their assistance on this article!

GETTING TO PALM SPRINGS

Palm Springs is easy to reach from the northwest. Fly directly into Palm Springs International Airport (PSP) in under three hours from Seattle. Alternatively, you can fly into Los Angeles (2 hour drive) or San Diego (2 hour and 15-minute drive) for a short road trip - depending on traffic!

Flying from Spokane typically means multiple layovers, but it’s not impossible! Depending on your carrier, you may fly into Seattle, Sacramento, or even Los Angeles International (LAX). We recommend the Sacramento route if you can, but Seattle is also preferable over LAX!

WHAT TO DO ON YOUR PALM SPRINGS ADVENTURE!

Remember to respect nature, stay on trails, pick up after yourself, and follow leave no trace principles for the outdoors. Always check weather and trail conditions before heading to an outdoor destination. The free app AllTrails is a great resource.

Indian Canyons on the Ancestral Land of Cahuilla Indians is a nature lover’s paradise. Sixty miles of trails are suitable for all levels at the base of the San Jacinto Mountains.

Don’t miss Andreas Canyon, an easy 1-mile loop along palm-lined Andreas Creek. Palm Canyon boasts a 15-mile-long trail, but visitors will find themselves in a lush palm canyon less than a mile from the parking lot. Mountain-fed springs make way for waterfalls in the winter, and wildflowers paint the canyon with splashes of color in the spring.

COST: $12 ENTRANCE FEE PER PERSON

Journey through the heart of the San Andreas fault on a jeep tour with Desert Adventures Eco-Tours (also known as Red Jeep Tours). Since the fault is on private land, their tours with an expert naturalist guide are the only way to explore the area. Hike into a slot canyon on the fault line and tour a recreated Cahuilla Indian Village. My tip is to book a trip in the late afternoon to experience beautiful golden hour hues in the desert before sunset.

COST: $150 PER PERSON FOR A 3 HOUR TOUR

The Palm Springs Aerial Tramway is the world’s longest rotating tram car, traveling over two and a half miles along the breathtaking cliffs of Chino Canyon. Soak in the views at the top of Mountain Station from 8,516 feet, where you can enjoy observation decks, two restaurants, a natural history museum, two documentary theaters, and a gift shop. Explore over 50

miles of hiking trails in Mt. San Jacinto State Park, including Desert View Trail, an easy 1.5-mile loop with scenic views. This is where you can find snow in Palm Springs, so bring a warm jacket if you’re visiting in the late fall or winter!

In the heart of downtown Palm Springs, you’ll find hip LULU California Bistro. Eat a hearty or healthy meal (I opted for the roasted beet salad) and grab a drink at this vibey spot. For a fun nostalgic treat, order the cotton candy for dessert! Other trendy hot spots in Palm Springs that will spice up your Instagram feed and palette include Azúcar Restaurant and Bar - don’t miss their rooftop lounge, Farmcountry-chic farm-to-table fair, and Workshop Kitchen + Bar - a stylish eatery in a former movie house.

El Paseo, Palm Desert’s main palm tree-lined drive featuring nine blocks of shops and restaurants, has many mouthwatering meal options. Dine at Armando’s Dakota Bar and Grill for authentic Mexican food and strong margaritas. The corn tamales were incredible! The Fix on El Paseo has various menu options and a patio perfect for people-watching. For high-quality elevated fare in a trendy setting, dine at Lakspur Grill in Hotel Paseo, which hosts live music Wednesday through Saturday with a lively atmosphere. Everything I tried was exceptional, and I especially loved the bacon-wrapped local dates and prime hanger steak.

The area has endless hotel and rental options from Palm Springs to Palm Desert. You’ll definitely want to book a stay with a pool to relax after your outdoor adventures.

Hotel Paseo is perfectly located just steps away from El Paseo, known as the “Rodeo Drive of the Desert.” Lounge at the pool, play lawn games in front of their classic Airstream, and enjoy a drink by the firepits. The indoor and outdoor spaces are beautifully and luxuriously designed for the quintessential California vibe with palm trees, mood lighting, modern art, and bright pops of color.

SAGUARO HOTEL - PALM SPRINGS

Saguaro Hotel is Insta-famous for its colorful palette, which took years to receive approval. The bright color scheme was initially rejected, but after it was resubmitted and repitched, it was allowed to paint! The interior is colorful, complete with a Barbie display. Whether or not you’re staying at Saguaro Hotel, it’s worth checking out to snap some photos by the pool.

When you hear the phrase “wine country”, you may think of a touristy region in California that’s overrun to bursting for years, but I think of the charming corner of Washington known for its superior wines, exceptional food, thriving arts scene, and, best of all, some of the most friendly hometown-loving people. Meet Walla Walla. Washington is becoming known for its captivating wines in a relatively new craft for this part of the country, which is ideal for producing some righteously unique grapes and, as a result, wine. Walla Walla has been named America’s Best Wine Region for the second year in a row by USA Today, following a month-long nationwide public vote, and when you visit, it’s easy to see why.

PLANNING AHEAD

I was eager to dig further into local favorites and some new-and-yet-undiscovered places that would capture the imagination of visitors like myself. One of the best resources for my trip was the amazing crew at Discover Walla Walla, who gave me the inside scoop on the best places to check out during our weekend visit. One thing we learned quickly was to leave our expectations at the door because they filled this town with pleasant surprises around every corner.

WHERE TO STAY

For this trip, we picked a micro-hotel called The Wesley, which has developed a reputation as one of the best destinations for visitors to call home away from home in the city. After seeing it online while scouring my hotel options, I couldn’t get over the romantic details in the Victorian architecture on the exterior and the fabulously Instagrammable and funky modern interior with every last flourish carefully curated to inspire. The best part is that it is in the heart of downtown and within walking distance of dozens of eateries, tasting rooms, shops, and attractions that you can easily stroll to.

If the Wesley is booked–or if you have a more private retreat in mind–the Van Gogh Garden Suite at the Inn at Blackberry Creek is another great destination and has a completely different feel. Entry and exit are private through the side door, and check-in is seamless with a code provided via email that changes with each guest.We never saw another guest in the entire time we stayed in this suite, and we liked it that way. Premium linens, satellite television, a well-appointed sitting room, a view of the garden, and the absolutely enormous trees surrounding this stately historic home make for a true departure from the daily grind.

WINES WORTH TRYING

I had read that Rotie Cellars is a top Rhonestyle winemaker in the region, and I was excited to find out why. The wines at Rotie are unique and highly sought after around the globe.

Trust me, you won’t want to miss an opportunity to try the wines from this area, so plan a detour to one of the many reputable vineyards in this area and get a sense of the terroir as you taste. At Rotie, they craft northern and southern red and white blends, Grenache Blanc, Little G, Homage, Stonewall Rose, Tannat (which is a 100 percent Tannat varietal–a must-try) and a mix of special releases for specific times of the year.

Another Walla Walla wine legend, Dunham Cellars, is a must-experience winery. In the Airport District and situated inside an old WWII-era hanger, the knowledgeable team fills it with as many stories as glasses of wine they pour daily. I was excited to take a tour of the winery and learn about the process from vine to bottle.

Whether you are a seasoned wine aficionado or a casual sipper, seeing the process in real life is a great way to better appreciate what’s in your glass. From the giant tanks for fermenting to the de-stemmers to the bottling room, it provided unique insight into the art of winemaking.

If you want the ultimate luxury winery experience, make an appointment for a tasting at Abeja.They invited us to taste their wines at the beautifully restored, century-old farmstead in the foothills of the Blue Mountains that is just a few miles from downtown Walla Walla, though it feels as if it’s in the European countryside. From the gorgeous gates opening to a grand tree-lined driveway as you arrive to the care and attention given to every guest and the lovely architectural details of the property’s buildings, you can’t miss this.

EATS TO REMEMBER

After a long day of wine tasting, we returned to the hotel and were greeted by a technicolor sunset (which Walla Walla is known for). We enjoyed dinner at the Italian-focused Passatempo Taverna, a historically beloved local tavern that has turned into a bold explosion of global flavors with a seductive, cool atmosphere. Exceptional service is a hallmark here. Our server guided us through menu choices with deftness and helpful insight into each dish and cocktail. House-made pasta is the star here.

For casual dining and adventurous drinking, Hop Thief is king. A slick system for self-pouring craft beers, ciders, and even kombucha for those who don’t want a buzz with their meal makes trying new brews easy. You simply grab a card from the hostess, pick up a glass, swipe, and pour - it charges by the ounce. For the beer-lover, this is the ultimate way to try as many microbrews as your heart desires a drop at a time.

TMac’s is the ultimate in luxury dining in Walla Walla. From the refined finishes to the wine selection, it’s your quintessential special occasion destination. The staff treats every guest like royalty, and we didn’t have a single need that went unnoticed. The menu rotates seasonally and they pride themselves on only using the freshest and best ingredients available.

When it comes to shopping,Walla Walla is jampacked with quality retailers that can help you take home something truly special.

A must-visit is Bright’s Candy Store, which has been around since 1934 and makes you feel as though you’ve taken a trip back in time. The smell of the store alone is worth a visit. Using Guittard chocolate to create their confections, you won’t be able to resist picking out goodies to be boxed the old-fashioned way. You even get to pick the color of your ribbon.

For tons of wines all in one place, I always hit up The Thief, which is centrally located and has wines from every top spot in Walla Walla and even more selections from around the world. Their staff is impeccably well-versed in wine matchmaking and will help guide you to the best selections for what you are sure to love.

For either the kids in your life or the kid-atheart, Inland Octopus is the toy store that dreams are made of. Beautifully curated toys are packed floor to ceiling and you will easily get lost in dreaming of the time you spent wandering toy stores when you were little, too.

A visit to Walla Walla promises to be a memorable and enriching experience, combining exceptional wines, delectable cuisine, unique shopping, and warm hospitality. It's a charming place worth exploring in the vast world of wine country.

Nichole’s vision for UNCOVERED began in 2018, and despite the challenges presented by the COVID-19 pandemic, she remains steadfast in her pursuit of giving people a voice and their stories a beautiful, transformative medium.

After graduating with a degree in broadcast journalism from Gonzaga University, Nichole embarked on a career in news, working at the NBC affiliate station KHQ. While the job offered many fulfilling experiences, Nichole always sensed that news stories were not the ones she was destined to tell. In November 2017, Nichole was invited to participate in a live storytelling event called PIVOT, where individuals share their true stories with a live audience. The experience inspired Mischke to create UNCOVERED, a platform that shares stories of the secrets shame tells us to hide - stories that often unveil the common threads of humanity, reminding us we're not alone and that we're not so different from each other.

UNCOVERED has produced 12 short documentaries and a feature-length film, delving into topics such as addiction, trauma, mental health struggles, domestic violence, and identity. Nichole aspires to "continue to share stories that inspire us all to be more ourselves, and the only way I know how to do that (the way it worked for me) is to uncover and face our shame, because shame ultimately is the fear that we're not good enough."

Trends come and go faster than you can blink an eye, but you know what always stays in style?

Things you love and that have meaning.

I thought about trends and then about my own home. The style in my home is very eclectic and has a lot of vintage and antique touches that are timeless, but my style may be different from yours. In researching for this article, I looked at what’s ‘in style’ and trendy for this year.

The list was long: bold colors, natural wood, natural stone finishes, mixed metal finishes, statement lighting, 60’s, 70’s decor, and so on. I thought to myself, who do I know has a home that I find welcoming, cozy, and tranquil in their space? I know many people with amazing homes that hit all those points, but one house stood out in my mind: my good friend Olivia!

I met with Olivia in her adorable and unique house built by her husband, an

amazing artist, woodworker, and designer. This house has it all! Great light, unique vintage and antique pieces, local art, special touches, and one-of-a-kind items make this home a cozy paradise.

I had a conversation with Olivia, and she graciously allowed me to share her age, which is 86 years young! I was interested in hearing Olivia's perspective on the everchanging trends she has witnessed since the 1950s. I asked her about her favorite trends and eras that stood out to her.

One key takeaway from my conversation with Olivia? Follow your own tastes and style. As Olivia told me, “I don’t like things that match; looking back at interior design in the 60’s, everything had to match up, and I just found that really boring.” I asked

Olivia what her vision was when they built their house and what she would call her style. Olivia said, “rustic and natural. Plants. Rocks and shells. It’s nice when your home is an extension of yourself. I like to sit in my living room and look at things that make me remember a time or just enjoy its art.”

I inquired about Olivia's source for home decor, and she mentioned that she finds them at local vintage stores. When I asked about her preferred color palette, she said she was fond of green because it creates a sense of bringing the outdoors inside. Curious about her stance on trends, Olivia shared that she embraces them if she can incorporate them into her existing belongings and if she personally finds them appealing.

Olivia pointed to the chair I was sitting on and said, “The chair you’re sitting on belonged to a neighbor of mine, and it was her mother’s chair. She had to go to a rest home, and she said that was my mother’s chair and if I gave it to you would you take care of it? It was in pretty bad shape, but I like it just the way it is because it’s worn, and a woman probably sat there and crocheted and such. I made a pillow and a back to give it a little spice.”

I love Olivia’s take on her connection with memories of vintage items and making your home about you. Making your home feel like your happy place is our take on what’s trending, whether that be lots of plants and neutral tones or bright colors with antiques. Plus, trends produce more

waste from the constant “what’s hot now” we see every season. The EPA estimates that 9 million tons of furniture are tossed out yearly, and it's usually new furniture tossed. I always encourage anyone, whether you’re looking for furniture, décor or clothing, to check out your local vintage/antique shops first before purchasing new.

Cambium Spa at Schweitzer

The Cambium Spa may be part of the Schweitzer Ski Resort, but it stands on its own as a reason to drive up the winding mountain road from Sandpoint, Idaho. Since the doors opened in February of this year, Spa Manager Sabrina Wright and her wellness experts have been filling a void in the spa and wellness industries and reshaping how we all think of the spa experience. Instead of merely pampering visitors, the Cambium team aims to enhance long-term health and well-being, support athletic performance and recovery, and impart self-care skills to be used consistently at home.

I started my experience with a goblet of water with freshsqueezed lime in the sound lounger. As I gazed out the window at the mountains, I felt the sound frequencies and healing vibrations relax my mind and body. After about 20 minutes, my massage therapist ushered me to a treatment room with an equally breathtaking view for the Signature Forest Air Massage. I finished my morning of wellness and pampering with time in the Halo IR Sauna, which combines infrared sauna with dry salt therapy. I left feeling renewed, slept better than ever that night, and am already planning my next visit.

The Coeur d’Alene Resort Spa

The lake and mountain views at the Coeur d’Alene Resort Spa alone are enough to keep me coming back, but the staff at this iconic institution does not rest on its laurels. “Above and beyond” are the words that continually come to mind when I reflect on my recent visit. I spent a little time in the infrared sauna, then enjoyed some refreshing spa water in the meditation room before being ushered to the first of my three treatments.

I started with a mineral soak, which I hadn’t experienced before but will now add to every visit. The dim lights, gently flowing water, and minerals finished the job that the sauna started, leaving me feeling softer, lighter, and ready to dive into treatment.

I was then ushered to a second room for the Rain Fusion Treatment, basically a massage on steroids that leaves you feeling like a completely new person. The treatment started with a full body scrub. I then experienced the most relaxing waterfall massage. The combination of the waterfall during the massage put me at ease and allowed my usually tight muscles to relax more than usual. We ended the 75-minute massage with the most heavenly scalp massage.

My final treatment of the morning was the Natural Elements Shower. I chose the settings based on my height, goals, and comfort level. I then felt the water relax and relieve any tension that might have been left in my body. A lunch overlooking the lake is the perfect way to end a morning of pampering, and the menu offered at the Coeur d’Alene resort will please even the pickiest of eaters.

The Historic Davenport Hotel Spa &

Nestled below the Historic Davenport Hotel, the Davenport Spa brings old-world luxury to the heart of downtown Spokane. Throughout my entire experience, the Davenport facilities, services, and staff made it clear that they deserve their Forbes Four-Star Spa status.

I was greeted by a friendly desk attendant who immediately knew my name and listed the services I would enjoy that day. As I was ushered down a deliciously dim hallway, lit only by elegant sconces, I felt my to-do list fading, my racing thoughts slowing, and any concerns shrinking. After changing into a perfectly fluffy robe and slides, I settled into an equally fluffy arm chair with a cup of tea near a fireplace. Beyond the typical spa offerings of infused water, coffee, tea, and champagne, there were even individual packs of trail mix to much on!

During each service, my robe was placed into a warmer so that I experienced that out-of-the-dryer coziness when I slipped it back on to move to my next stop. Everything from the luxurious atmosphere to the kind staff and the well-thought-out details added up to an experience as close to perfection as I have experienced in this lifetime.

The Davenport offers curated treatments for each season. I had the privilege of experiencing the Honey Magnolia Facial and Massage, both featuring Farmhouse Fresh products. I’m on a healing journey and am extremely careful about what I put in and on my body, and I am extremely sensitive to any fragrance. I felt more than comfortable with the products, had no adverse reactions, and even bought the berry toner Jacqueline, the talented esthetician, suggested. I left feeling like the most satisfied noodle.

The Highlands Day Spa

I had the pleasure of visiting the Highlands Day Spa’s new downtown Coeur d’Alene location, and it maintains the downto-earth, community-oriented mentality of the Highlands original location in Post Falls, Idaho, with a fresh, modern atmosphere. The Highlands team is quirky and relateable, and with each high-quality service I experienced, I made a new friend and enjoyed plenty of funny anecdotes. I spent 5 hours being positively spoiled and barely scratched the surface of the offerings at the Highlands. It is a one-stop shop providing everything from massage, body scrubs, mud masks, and facials to pedicures and hair services.

My afternoon began with a facial that left me glowing for days. I then spent several hours being scrubbed, wrapped in mud, and massaged. I can’t recommend this service enough for those with dry skin like me! I rounded out my experience with the most thorough pedicure I’ve ever experienced. I left so relaxed and so soft all over that I wondered if I was safe to drive. If you’re looking for excellence in service at the right price and a convenient location downtown Coeur d’Alene, the Highlands Day Spa will quickly become your go-to spot!

La Rive Spa at Northern Quest

La Rive Spa means “riverbank” and pays homage to the Kalispel tribe’s reverence for water’s healing powers. The entire experience at La Rive stays true to its name. From the moment I passed the ethereal chandelier and descended the winding staircase to the spa floor covered in river rock, I felt grounded and cared for. It feels worlds away from the bustling Northern Quest Resort and Casino.

After I changed into a properly fluffy robe and slides, I sank into the couch version of a robe and sipped some cucumber-infused water until Elizabeth, my new favorite massage therapist, came to usher me to the most beautiful treatment room I’ve experienced yet. I was solo, but this room, complete with an oversized hot tub and fireplace, is the ideal setting for couples’ massages. Elizabeth found just the right amount of pressure for my Goldilocks-like sensibility, and the La Rive Signature Massage lived up to the hype. I then spent time in one of the zero-gravity chairs in the Himalayan Salt Room before floating home on a high of pure relaxation. If you have time, make sure to stay and enjoy the pool!

XOXO — YOUR FAVORITE LATE BLOOMER

BEYOND DRINKS & DANCING N Y N E

Walking into the open space at nYne Bar and Bistro, the first thing I feel is a spaciousness and full-body sense of relief.

The welcoming capaciousness is a luxury—for many queer people, walking into a bar can include a tightness, watching out for glaring eyes, assessing the situation. But here, I immediately relax into all of that room. Rainbow flags hug the wall, small groups of people chatter at tables.

There is a 40th birthday party happening at one table— rainbow balloons sway above the party sipping drinks and laughing easily. Staff move about, stacking napkins, prepping the bar. It’s not busy yet—it’s early evening, I’ve dropped by for a drink. But in a few hours, this room will be packed with dancing people and queer folks across the gender spectrum, enjoying a drag performance by some of the Inland Northwest’s best drag performers.

Even before I get to the bar to order a drink, I see familiar faces with big smiles, welcoming me. I’ve been coming here since the bar opened in 2010, and I know some of the people behind the scenes. Back then, I was a new transplant to Spokane and graduate student, trying hard to find queer community. I was not a drinker then, but I came to this bar regularly anyway, for drag shows, dancing, music performances, and even on a first date or two. I did find queer community here. It’s a great place to come for a drink, but, more than that—it’s a great place to be who you are.

Nyne Bar and Bistro has served Spokane for thirteen years and counting. Owned by Kitty Kane, the bar is located in a historic building downtown on Sprague Avenue that was once a public service automobile garage, Bear Frame and Axle, built in 1930. Exposed brick lines the west wall, and a

window-paned garage door along the street opens in the warm weather to outdoor seating. The back of the room features a large stage, with capacity for dancing, karaoke, and live bands.

Creating and preserving safer spaces for all LGBTQIA+ people matters. Gay bars have a long history of being refuges for queer people. They began as underground spaces, and, for decades, their existence spread by word of mouth. They were places where LGBTQIA+ community could gather and find support, friendship, and love—they were places where queer people go to feel less threatened.

But even inside of gay bars, the risk of violence and oppression lingered. For much of American history, LGBTQIA+ people faced government persecution, and, in the pre-Stonewall era, police regularly raided bars that were suspected of being gay-friendly. It was not unusual for people at those bars to be arrested during raids, and instances of police brutality, assault, and violence were common.

Still, queer people kept gathering, despite the risks. Seeking community and understanding are a human need, and, even in the era of legal police raids, queer people needed each other. The Stonewall Riots, which are remembered every year in annual Pride celebrations in June, were a direct response to ongoing, systemic police violence, homophobia, and transphobia.

Now, in 2023, it is no longer illegal to dress in drag or to dance with someone of the same sex; however, violence against the LGBTQIA+ community continues in many ways. Transgender women of color face the greatest risk, with an astounding disproportionate number facing fatal violence each year. Queer youth face alarming rates of bullying, parental abuse, insecure housing, and suicide rates. Recent mass shootings, like the one at Club Q in Colorado Springs and the horrific Pulse Nightclub massacre remind us that, even in post-Stonewall U.S., hatred, homophobia, and transphobia still run deep.

Making nYne an inclusive, safe space matters to Kane. Inclusivity for all LGBTQIA+ people is part of what keeps her passionate about running the space. Nyne is welcoming to everyone—women, men, nonbinary folks, lesbians, gay men, bisexual people, transgender people, and all queer identities.

It is notable that nYne is a woman-owned bar. Women still receive far less financial support and investment in business ownership than men, and the pandemic years have disproportionately affected women entrepreneurs. For sure, the pandemic years have not been easy on nYne. The sudden closures and shut-down times have made profits slow. Still, Kane looks forward to the future, and she is actively making plans to keep nYne going strong and expanding access to safer queer spaces. The building space east of nYne, beloved former music venue The Bartlett, closed in late 2019, and Kane saw an opportunity. So she leased the space, and she is now making plans to create another queer venue in the neighboring spot.

Kane envisions a quieter room connected to nYne, where people who want to be in queer community but who don’t want to be immersed in the throngs of people and pumping dance party bass can gather in a gentler spot. She says she wants to make it cozy, like a lounge vibe. There will be a full bar there, too, and she envisions an expanded kitchen, where people can order food and take it into either spot.

When I asked her when she thought the new space might open, she said enthusiastically that she hopes for it to be open by June of 2023—by Pride.

For many LGBTQIA+ people, gay bars represent a place to find community, to explore love, to feel free and celebrated. I remember being a young bisexual woman in college in Minnesota and looking forward to Friday nights at a St. Paul Frogtown district bar called Lucy’s, a queer bar that featured cheap drinks and packed dance floors. I met my first girlfriend there, a professional football player for the Minnesota Vixen, who asked if I wanted to dance, gave me her number, and swaggered away with my heart. I had learned early on that being anywhere on the queer spectrum—even for a cisgender, white, femme-presenting woman like me—meant sometimes encountering homophobia, but far less of that happened inside of the gay bars. They felt like a refuge and a space of freedom. For people who face even more marginalization and violence in the outside world—queer people of color, transgender and gender non-conforming people—having access to spaces of refuge and community like gay bars can be life-saving.

Nyne has regular, weekly events like Taco Tuesdays and Trivia Thursdays. There’s Karaoke on Thursdays, too, and there are Queer Comedy Nights on Tuesdays and Open Mic with Matty on Wednesdays, where local musician Matthew Danielson backlines the stage and you can sing your own songs with a live band. There is a monthly Retro Rockin’ Ladies Night, and nearly every weekend, there is a phenomenal drag show and dance party. The space is all-ages until 9:00 pm—an important note, since safe spaces for queer youth are both lacking and lifesaving.

Featuring a full menu with a rotating weekly fresh sheet and weekly Taco Tuesdays, nYne can be a dinner spot or a great place for a bar snack. You can grab a beer on tap or enjoy a cocktail from nYne’s cocktail list. Feeling naughty? Try the nYne drink, with Kinky pink liqueur, lemon vodka, soda, Sierra Mist, and lime.

There is a wide variety of appetizers like nachos, pretzel bites, and edamame. The menu includes a spectrum of salads to a hearty list of handhelds, including tacos, burgers, and classic cheese on brioche. There are plenty of vegetarian options, like a black bean burger or a veggie wrap. Plus—bonus— since Kane is a co-owner of Halletts Chocolates, there are frequently chocolate and chocolate-inspired desserts on the menu, too.

Find Your Perfect Summer Look with These Trending Swimsuit Styles

Swimsuits can be an incredibly difficult item of clothing to shop for! I know I personally struggle with buying swimsuits that look good on my midsize body and make me feel confident.

Finding the right swimsuit for your body, one that’s trendy and makes you feel and look good, can be quite the challenge, but there are several trends this year that look good on all bodies and focus more on specific colors and textures as opposed to cuts of swimsuits.

I’ll share a few options that may not be the most flattering on everyone, but the key is to wear something that makes you feel your best, and it doesn’t matter as much if you don’t look like the beauty standard in the garment.

THE ONLY STANDARD YOU SHOULD FOCUS ON IS WEARING SOMETHING THAT MAKES YOU SMILE IN THE MIRROR AND CARRY YOURSELF IN A POSITIVE WAY.

NEON GREEN

This year is all about neon green! I see it in loungewear, tops, and of course, swimwear. It’s such a bold color to wear but evokes the brightness of the season. If you are trying this trend out, I would get it at a lower-budget store because I think it’s a color of 2023 and may not have as much staying power as some other choices.

Regardless, a neon green swimsuit will add a punch to any outfit, and it compliments both tanned and very light skin tones. The best places to wear this trend will be pool parties, bachelorette parties, and to beach clubs. It has a hint of rave energy since it tends to be so bright and is oftentimes found on smaller swimsuits.

TIE DETAILS

I love a good tie detail for spring! Current swimsuits are no exception, and they are certainly coming back on swim tops. I’m noticing them on bandeaus and on strapped tops. This is a great find for tops in particular because they can really snatch in your bust and make you look your absolute best. Plus, the little bit of fabric is a fun detail and can give even the most simplistic swim bottom a bit of flair.

TEXTURED FABRICS

Another fun trend I’m seeing everywhere has been textured fabrics! In particular, a popcorn-like material is trending, as well as ribbed materials. While smooth fabrics will always be around, it can be fun to mix up your swim wardrobe with a texture. They are great for camouflage, especially if you have stretch marks or cellulite, because the texture of the material oftentimes hides any textures on your person.

LOW BACK ONE PIECES

I will always advocate for one-piece swimsuits, especially when they have low backs! This year I am noticing a distance from various cutouts on one pieces, and instead, higher necklines with low backs are being favored. These styles of swimsuits are again great for styling with streetwear and almost double as a bodysuit when traveling. Not only this, but low back one piece swimsuits are incredibly flattering on curvier bodies, and when you opt for a low-back option you veer from looking matronly and instead still look young and trendy.

Another popular color for spring this year has been light purple and lavender. It’s such a seasonal shade and looks gorgeous on a whole host of skin tones.

When shopping for a light purple swimsuit, maybe try a bikini or one piece in the shade. It’s easy for making a statement, and I think it would style nicely with light blue denim shorts or under a coverup. I also styled mine with black cowboy boots, and the contrast made for a cool girl outfit that screamed coastal cowgirl, my current fashion obsession. It’s a fun mix of beach wear with western accessories that create an entire vibe and aesthetic that plays well with multiple springtime trends.

PRETTY FLORALS

I don’t think you could ever go wrong with florals for spring and on swimsuits. Again when you opt for a print, you are able to camouflage insecurities better, and it feels seasonally appropriate.

When looking for floral prints, opt for either small-sized flowers or florals that echo Grecian design. There has been a recent Greek revival with white and blue floral prints on swimsuits and dresses, the former working quite well with simple cover-ups and sandals.

Florals will be a statement, so style them with simple swimsuits that aren’t totally high coverage. Balance will certainly be key in this scenario!

CROSS HIGH WAIST

Another trend I’m seeing a lot these days is crossed high-waisted swim bottoms. For those of us with a bit of a belly that you may want to hide, try high-waisted bikini bottoms! On one hand, a high waisted swimsuit can feel a bit too high coverage though, so to combat this, find a pair that crosses over top.

This is a new trend for denim as well as we see a favoring of asymmetrical waistlines compared to the tried and true standard. The key to the most flattering silhouette will be to find something that covers your belly button. You will thank me later!

PINUP TOP

Finally, we are seeing a lot more pinup-inspired swim tops, which are swim tops that almost look like bras. Pinup top swimsuits will oftentimes be sized like a bra and will offer support to larger busted women.

I personally love pinup top suits for their retro feel, and when styled with a high-waisted bottom, you will look like you just came out of a 1950s ad! I think it’s darling and will be a practical choice if you plan to do a lot of swimming this summer.

I hope these trends inspired your summer swimsuit shopping plans! Remember to always have fun with swimsuits - they are just fabric. There is no need to talk negatively about yourself when you are in them, you are beautiful as you are, and as long as you have a body, you have a bikini body!

However, before we head out on our journey around the West side of Washington, it’s time to review the one mission-critical rule of wine trips. Here it comes: put an insulated cooler in the back of your car before you leave home! And maybe a couple of cold packs as well. Why is that? Wine is easily ruined by heat. Start by downloading the Woodinville Wine County app and charting your plan. This is truly the place where our wine tour begins. Woodinville offers an array of “day pass” options for guests who want to drill into a particular style of wine or vibe.

And if you really want to amp it up, time your visit with one of the concerts at Chateau Ste. Michelle. This year’s summer line-up includes Rodrigo y Gabriela (definitely my top choice), Elvis Costello, and Kelsea Ballerini. Woodinville has definitely got it all.

And now for something completely different, our next stop takes us to the Yakima Valley. Why there, you ask? Well, 40 years ago, the Yakima Valley became the first American Viticultural Area (AVA) in the Pacific Northwest. That’s a big deal!

In this country, AVAs are used to denote unique geographic or climatic features that define wine. What you taste in every bottle of wine is really an expression of its AVA. That’s why a bottle of Washington Grenache differs so gloriously from a bottle of French Grenache.

Anyway, back to the Yakima Valley and all it has waiting for you. Get your bearings by downloading the Washington State AVA map.

As opposed to Woodinville, you’ll need to cover more territory between each winery.

The word “iconic” is often used when describing various aspects of the resort town of Sun Valley, Idaho. The home of the nation’s first chairlift, the ski resort has drawn icons ranging from Marilyn Monroe (her movie Bus Stop was filmed here) to Ernest Hemingway to Jamie Lee Curtis. And just as the beautiful mountains and the small-town pace of life are a draw to those icons, so too are some of the favorite dishes served up only in Sun Valley.

Schooner from Grumpy’s

Visiting Sun Valley and not getting a schooner from Grumpy’s is considered somewhat sacrilege, so do yourself a favor and order up this burger joint’s famous 32-ounce goblet known as the schooner. Fill it with your choice of beer for only $7 and enjoy it either outside on the patio in the sun or inside, where you can let your eyes wander over the various ski- and beer-related paraphernalia lining the walls.

If you’re not a beer fan, you can also get a mimosa schooner for $11; be orewarned, the mimosa schooner is almost a whole bottle of Cook’s champagne, so you’ll be feeling it for sure. Get it “Grumpy’s style,” with a floater of orange soda.

Morel Sauce from Michel’s Christiania

Another famed, long-standing restaurant in Sun Valley’s history, Michel’s is said to be where Hemingway ate his last meal. The French restaurant, run by the eponymous Michel Rudigoz, features classic French dishes with an Idaho twist, the most famous of which is the restaurant’s morel cream sauce. Available on either chicken breast or filet mignon (if you’re feeling decadent), the morel sauce is on the menu year-round, featuring locally sourced morels.

Fondue at the Roundhouse

While this dish isn’t available year-round, it’s certainly worth trying if you find yourself in Sun Valley in the winter. Located halfway up Bald Mountain, the Roundhouse serves lunch and dinner throughout the winter in Austrian ski chalet–inspired digs. It’s the perfect spot to stop in the middle of the ski day with friends and get the restaurant’s most iconic dish: fondue.

Fondue for two starts at $44 and comes with artisan bread, grapes, fuji apples, and gherkins for dipping. It’s $20 for each additional person, and for an additional charge, you can add beef tenderloin, pork belly, boar salami, or winter vegetables to your fondue.

Baked Potato at Pioneer Saloon

Located on Main Street in Ketchum (Ketchum is synonymous with Sun Valley) is the Pioneer Saloon, a favorite establishment since it opened up shop in 1972 (though the space was home to several casinos prior). Meals at the “Pio,” as it’s referred to locally, are quintessential Western fare of steak and potatoes.

Eating a baked potato in the Potato State is a must, but the potatoes at the Pio are in a league all their own. A football-sized baked potato (most potatoes at the Pio are around 20 ounces) with all the fixings will only set you back $5.95 a la carte, or $3.95 to include with your dinner. Go for the local favorite, a Jim Spud, a baked potato topped with teriyaki prime rib, grilled onions, and cheese.

Hammtini from Casino

While this “dish” isn’t a meal, it’s certainly a good stop on your tour of Sun Valley icons. The Casino is the area’s local dive bar a la Cheers—it’s where everyone knows your name. Hemingway and Hunter S. Thompson are just a few who have bellied up to this bar where cash is still preferred, birthday celebrators are made to chug Smirnoff Ices on a knee, and the lack of windows keeps the sun from reminding you of what time it is.

The signature drink of the Casino is known as the “Hammtini,” which makes it sound fancier than it is: a Hamm’s beer with a chunk of lime on top that’ll only set you back $2.

These delicious pastries were served at the establishment, along with their While the Warm Springs restaurant has been closed now for many years, the scones live on in their new incarnation is run by former Warm Springs Ranch managers Bob and Jolie Dunn, who brought over the famous recipe and now serve them as popovers, along with the classic honey butter, alongside entrees. The Grill serves up innovative American northwest cuisine with a menu that rotates seasonally, but no matter the changes, always there are popovers.

Sun Valley, Idaho, is not just a haven for winter sports enthusiasts, but also a culinary destination with iconic dishes that have been drawing famous names for decades. From the famous schooner at Grumpy's to the Pio’s giant potato, the food in Sun Valley reflects the town's Western roots while also incorporating unique Idaho twists.

The Pioneer Saloon's baked potatoes and the Grill at Knob Hill's popovers pay homage to the area's rich culinary history, while the fondue at the Roundhouse offers a taste of Austrian-inspired cuisine in the heart of the ski resort. And, of course, the Hammtini at the Casino is a must-try for those looking to experience a piece of Sun Valley's quirky dive bar culture. With such an array of culinary delights to choose from, it's no wonder Sun Valley continues to draw visitors from far and wide.

3 Simple and Satisfying Salads

Salads do NOT need to be boring. I repeat, salads SHOULD NOT be boring. If you’re anything like me, spending a long time making a new lunch salad every day isn’t realistic when you’re working, running a household, and the to-do list is never-ending.

BUT WITH A LITTLE EFFORT TO DO SOME MEAL PREPPING, YOU CAN SET YOURSELF UP FOR NUTRITION SUCCESS.

Another huge bonus with each of these meal prep-friendly salads is the nutritional balance. They all contain fiber-rich carbs, lean protein, and heart-healthy unsaturated fats. When we eat carbs, protein and fat all in one meal (or snack), we support healthy blood sugar control and optimize satiety, so these salads actually fill us up.

Have you ever had a salad at lunch and felt hungry an hour later? You likely needed a little more nutritional “oomph” with more fiber, protein, or fat.

Each of these salads contains ten or fewer ingredients, are focused on seasonal produce, and can be sourced locally. Remember to check out the local farmers' markets and keep the small farmers going! They need our support. Happy Spring and Summer with these delightful and easy salads.

Beet, Honey, Pistachio & Goat Cheese Salad

SERVES: 4-5

Ingredients:

1 lb.cooked beets,sliced into ¼ inch circles

4 oz.goat cheese

¼ cup toasted and coarsely chopped pistachios

2 teaspoons honey

2 tablespoons olive oil

2 teaspoons freshly squeezed lemon juice

1 tablespoon chopped fresh thyme

coarse sea salt & fresh ground pepper

Instructions:

STEP 1: Layer cooked sliced beets on a large plate. Top with crumbled goat cheese.

STEP 2: Drizzle honey, olive oil, lemon juice over the beets.

STEP 3: Sprinkle with thyme, salt and pepper. Store, covered in the fridge for up to 4 days.

Elote Shrimp & Kale Salad

SERVES: 4

Ingredients:

SALAD

6 cups of shredded kale

2 ears of corn,cooked or grilled (or about 2 cups)

1 lb.cooked shrimp or prawns

1 cup garbanzo beans

1 cup chopped fresh tomatoes

1 whole carrot,chopped into small pieces or 1 cup shredded carrots

1/2 cup chopped cilantro

DRESSING

1/3 cup olive oil

¼ cup fresh lime juice

zest from 1 lime generous pinch of salt

2 teaspoons elote seasoning (find atTrader Joe’s or make your own)

Instructions:

STEP 1: Place all the salad ingredients in a large bowl. Mix to combine.

STEP 2: Add the dressing ingredients, one at a time, into a small bowl. Stir everything together and taste. You may need to adjust the flavors with more elote seasoning, more salt or even add a touch of cayenne for an extra kick.

STEP 3: Dress the salad ingredients as you like. Cover the salad and store in the refrigerator. Will keep well for about 4 days. Enjoy!

Broccoli, Edamame & Peanut Salad

SERVES: 5-6

Ingredients:

SALAD

5 or 6 cups chopped broccoli

1 cup shelled edamame

1/2 cup roasted and salted peanuts,coarsely chopped

DRESSING

1/2 cup natural peanut butter (just peanuts + salt)

2Tbsp.soy sauce (or sub coconut aminos for GF)

1Tbsp.sesame oil

juice from 1 lime

2Tbsp.honey or maple syrup

2Tbsp.rice vinegar

Instructions:

STEP 1: In a large mixing bowl, combine chopped broccoli, edamame, and peanuts.

STEP 2: In a separate small bowl, mix all dressing ingredients together with a whisk. Thin the dressing with 1-3 tablespoon water (or more) until you reach the desired consistency.

STEP 3: Add the dressing to the bowl of broccoli, edamame and peanuts and stir to evenly coat everything.

STEP 4: Garnish with sesame seeds and enjoy! Will keep in fridge for about 4 days.

*If opposed to eating raw broccoli, feel free to lightly steam or roast the broccoli in advance of preparing the salad.

FROM CABIN TO LAKESIDE IRRESISTIBLE SUMMERTIME SALADS

Hi friends! Welcome back to Whatcheescooking, the culinary klatch, where I share my favorite recipes, tips, tricks, and products to bring restaurant-quality meals to your table! In this edition, we’re talking lakeside grub, particularly summertime salads.

Don't underestimate the power of salads at the lake! With the scorching hot days, being in the

water is much more enjoyable than being in front of a stove. That's why I've been experimenting with meals that require minimal cooking and can be prepped in advance.

Salads, specifically these three options, are perfect for a complete meal that can be enjoyed as a main dish or as sides or snacks. Bonus? You'll have more quality time to spend with your family outdoors!

BITE

Dill Pickle Pasta Salad

WITH CREAMY DILL DRESSING

Ingredients:

FOR THE DRESSING

¼ cup pickle brine, plus 3 tablespoons additional topping

1/2 cup plain greek yogurt

1/2 cup mayonnaise

1/2 cup fresh baby dill, chopped

1/2 tsp. smoked paprika

1/2 tsp. onion powder

1/2 tsp. garlic powder salt & pepper to taste

FOR THE SALAD

1 lb pasta of choice, cooked and cooled cooled completely in fridge — I LOVE using shells, so that they scoop and hold all of the dressing and toppings!

3 scallions, cleaned and chopped

2/3 cup cooked, diced bacon or turkey bacon

2 ribs celery, cleaned and diced finely

2 cups dill pickles of choice, chopped finely

1 cup of shredded sharp cheddar cheese

Instructions:

STEP 1: Combine all dressing ingredients in a medium mixing bowl. Refrigerate in an airtight container until ready to dress your salad. The dressing will keep in the refrigerator for 7-10 days.

STEP 2: Once all of your ingredients are prepped and assembled, it's time to mix them together in a large mixing bowl. I've found it's easier to mix the ingredients first for even distribution of the dressing on them.

STEP 3: Add dressing as you like, and toss well to ensure everything is evenly coated. Pop into the fridge to chill. Once ready to serve your POSITIVELY scrumptious salad, drizzle the reserved pickle brine over the top and stir.

IF THERE IS ANYTHING TO KNOW ABOUT ME, IT’S THAT I REALLY DO LOVE MY PICKLED VEGGIES. LIKE A LOT…ON THE DAILY A LOT. SO THEY NATURALLY COME TO THE LAKE WITH ME SO I CAN GET MY PICKELY, VINEGARY FIX. THIS SALAD IS PERFECT AS A SIDE FOR BURGERS, HOT DOGS, SANDWICHES, OR AS A STAND-ALONE LIL’ NOSH. SUMMER DAYS AT THE LAKE ARE FOR SNACKING IN THE SUNSHINE, AFTER ALL!

Thai Inspired Noodle Salad

WITH MISO GINGER VINAIGRETTE

Ingredients: FOR THE SALAD

*rinse all produce thoroughly...food safety is no joke, folks!*

1 lb. shrimp, deveined with shells removed OR

1/2 rotisserie chicken, shredded OR

1 pkg. firm, pressed tofu — I like to sear it off with soy sauce and Maui Wowie for this recipe. SO GOOD.

1 head romaine lettuce, chopped

1/4 head purple cabbage, shredded

1/2 pkg. bean sprouts, rinsed well

1 medium carrot, julienned (or snag one of those pre-cut matchstick carrot packs from the produce section, and use half the bag)

1 english cucumber, deseeded and sliced into strips

1 small red bell pepper, deseeded and sliced into strips

4 scallions, chopped

1/2 bunch of cilantro, rinsed and rough chopped

1/2 pkg. rice vermicelli noodles, prepared to package instructions and chopped into 2"-ish pieces

1 cup toasted chopped peanuts

FOR THE VINAIGRETTE

3 tbsp. white miso paste

2 tbsp. honey

1 tbsp. rice wine vinegar

1 tsp. fish sauce

1 clove of garlic, smashed into paste

1 tbsp. ginger paste or fresh grated ginger

1 tbsp. toasted sesame oil

juice of 1 lime

salt and pepper to taste

Instructions:

STEP 1: Prepare all ingredients for the salad. Once prepped, just toss them all (minus the toasted peanuts) into a large bowl to hang out while we prepare our protein of choice.

STEP 2: Season the shrimp with salt and pepper (I LOVE Spiceology’s Maui Wowie Seasoning!) Heat a saucepan to medium and add 2 Tablespoons avocado oil. Once oil is hot, begin to sauté the shrimp on both sides, taking care not to overcook them. Remove from heat and place into the refrigerator to cool completely.

STEP 3: Once the shrimp have cooled completely, slice them in half lengthwise and add to the large bowl with the other ingredients. Add the desired amount of dressing into the salad and toss well to coat all ingredients with that RIDICULOUSLY delicious vinaigrette.

STEP 4: Top with the reserved toasted peanuts, a couple of extra wedges of lime, and DEVOUR this fresh, perfectly summery salad lakeside, beachside, or right at home!

Whatcheescooking Twisted Chicken Caesar Salad

WITH CREAMY GARLIC DRESSING

Ingredients:

FOR THE DRESSING

5-6 cloves of garlic, peeled and smashed into a paste (or just however much garlic your heart wants)

2 tbsp. anchovy paste — I buy mine in the fish aisle of the grocery store

1/2 tbsp. freshly cracked black pepper

1 tsp. dijon mustard

3 tbsp. worcestershire sauce

1 cup good quality mayonnaise

2 tbsp. extra virgin olive oil

1/2 cup parmesan cheese, grated finely juice of 1 medium lemon

FOR THE SALAD

1-2 heads of romaine lettuce, rinsed well and chopped into about 1" pieces (you want it to be roughly the same size as the shape of pasta you are using for a uniform bite)

1 ⁄2 lb. pasta of your choice, cooked and cooled completely in the refrigerator

2 chicken breasts, cooked and diced

1 ⁄2 cup parmesan cheese

additional lemon wedges

Instructions:

DRESSING

STEP 1: Add all prepped ingredients in a medium mixing bowl and whisk together until well combined. Taste and adjust seasoning to your specific liking.

STEP 2: Pour into an airtight container and refrigerate until ready to use. This one never lasts long in our house, but it’s good for 7-10 days in the refrigerator.

BUILDING THE SALAD

STEP 1: Once the dressing is made/ingredients are prepped, mix romaine lettuce, chicken, and pasta to mix well.

STEP 2: Dress your salad well, as the pasta will soak up quite a bit of that dressing, and toss with Parmesan cheese. I love to serve it with buffalo sauce, extra black pepper, and lemon wedges!

I DON’T KNOW IF THERE’S A MORE POPULAR SALAD IN MY SUMMER LINEUP AT THE LAKE THAN THIS ONE. THIS IS THE SALAD MY MOTHER AND FATHER-IN-LAW REQUEST ME TO BRING TO FAMILY FUNCTIONS, THE SALAD MY HUSBAND AND KIDS DEVOUR EVERY TIME, AND I CERTAINLY DON’T MIND HAVING IT MULTIPLE DAYS IN A ROW!
