Change. It’s what this year has been filled with. Although change can feel terrifying, it can also be glorious - especially to those around us. We may not see the outward differences right away, but others certainly watch the transformation with wonder. Currently, my focus is on the beautiful visible & physical changes surrounding us. Maybe it’s the vibrant colors of the leaves, slower pace of living, and shorter days… but there is always something that feels rare and precious about fall.
This particular season has been brimming with changes for me professionally, personally and internally. I’m discovering my own strength and resilience in ways I’ve never known, and it’s thrilling. It certainly didn’t feel that way one year ago today, as I was in the middle of a terrifying roller coaster ride of twists and turns I never could have anticipated. Through it all, steady and determined small steps forward made all the difference in the world. Sometimes, it’s all you can do. Keep moving forward.
All my love,
What a time. In my past 10 years working in the larger media landscape and in newsrooms, I’ve witnessed collective grief build among consumers as those in power pursue divisive headlines to drive revenue. Recently, though, I’ve watched consumers push back on this, giving in less often to the tale that our humanity is lost to our differences, and looking for outlier pieces and information to help them feel less alone. At Trending Northwest, we recognize that the remedy, is the place we call home.
What a season it’s been at the magazine, as we work as unifiers in a culture totally disembodied. Smack dab in the middle of an impossible and ignited election season, it is our goal at Trending Northwest to help you find pockets of joy in your own backyard, places you can put your money that will bring you pride and make you more aware of the community you are a part of, and of course, ways to support your wellbeing along the way.
We’ve found that it really is the little things that make us feel whole, like coffee in a cozy café, a walk with our kids along the river, picking something up from a local vendor on our way home. We were very intentional with our fall issue, because we understand how important it is right now to re-engage the things that matter most.
Family first. Next, our neighbors. Then,we are well enough for the world.
If you’ve encountered our team, you know that this is where our hearts lie at Trending Northwest. We feel so blessed to be catalysts in a movement back to local, back to home. Who knew that things like shared recipes, shared meals, a stop by the farmer’s market, 5-minute conversations with neighbors we have nothing in common with, would bring out so much hope. Here’s to healing for us all…in our everyday living.
Love,

‘I Want to Capture Love’
BY
Datwyler Photography was born nearly 10 years ago, after Hannah Datwyler fell in love with shooting in high school. The magic began with photos of the people she loved most, and quickly grew into a side hustle when Hannah started sharing her work online.
“I genuinely could not believe it,” Hannah shared with me, recounting what it felt like to start receiving inquiries.
“I started booking primarily Las Vegas chapel elopements,” she shared. Living there at the time, it was an easy career move, which she soon realized was an “absolute dream,” she said.
“Photography is my safe space, my creative outlet, and part of my identity,” Hannah shared. “I never want it to feel like a job and I’ve never been in this industry for money.”
Hannah’s biggest goal as a photographer is to continue to capture love. “I’m here to meet beautiful souls,” she said, and to capture precious memories as she makes some of her own.
As for Trending Northwest’s fall cover, it was pulled from a photoshoot Hannah did with the Ray family, who are new to the Spokane area and reached out to her to capture their love.
“The weather was just getting cool, the leaves beautiful hues of yellow and orange. My goal for this session, and any family session, was to capture them in their most genuine form,” Hannah shared.
As for what inspires
Hannah’s work? It is human emotion. Whether it’s joy, love, sadness or anger, nothing is more inspiring than capturing a genuine moment that isn’t fabricated to be picture perfect,” Hannah shared.
Hannah has two jobs that she so absolutely adores. Yes, she is an incredible photographer (I mean, just check out her page @datwylerphotography on IG), but she is also an Emergency Medical Technician (EMT) in Spokane County. “This is something I know my heart could never part with,” she shared.
You can browse Hannah’s work on her website at datwylerphotography.com and submit your own inquiry. You can also follow her on Instagram @datwylerphotography.

Some of Seattle’s most beautiful features are located outside of the city, including Puget Sound. The large body of water that feeds into the Pacific Ocean is full of amazing islands, peninsulas, and harbor towns, all accessible by our most unique form of public transportation: ferry boats! Ferry boats are now famous worldwide thanks to “Grey’s Anatomy” opening scenes and b-roll, but they are also a great way to take trips and cut down on drive time. Many of the state’s most amazing destinations are often only accessible by boat. So, if you’re planning a trip to the area, consider these trips by ferry. You won’t regret it!
Kingston is an adorable town on the Sound you’ve probably never heard of. The small community is home to just under 3,000 residents and is made up primarily of a limited port and main street that starts right as you exit the ferry. The Kingston Ale House has amazing beers from all around the Pacific Northwest as well as some of the best food in town. J’aime Les Crêpes Crêperie is a longtime Kingston institution with the closest thing you’ll come to French crêpes this far west of the Atlantic. Finally, the Peninsula's homegrown favorite, Island Cool Ice Cream (formerly Mora Iced Creamery) is the perfect place to sample a local sweet treat on a hot day.
If you brought your car across the water, extend your adventure and explore all the Kitsap Peninsula has to offer! Port Gamble is an old mill town that is now a National Historic Landmark. Poulsbo is a historically Norwegian town. Then there’s Hansvill, known for its great beach and lighthouse.
There are two main ways to access Kingston. If you want to bring a vehicle, the only option is to
take the ferry from Edmonds. It’s about a 20-minute drive from downtown Seattle, depending on traffic, and is one of the most frequented routes in Washington. So, make sure to check the wait times between Memorial Day and Labor Day weekend. You can do so on the Washington State Department of Transportation website. The crossing takes about 20 minutes.
Alternatively, if you’re just looking for a fun day trip outside of the city, consider the new Kingston Fast Ferry. This new passenger and bike-only boat departs from Pier 50 in downtown Seattle. The Crossing takes about 40 minutes and there is no service on Sundays.
Bainbridge Island is a popular day trip from downtown Seattle and many islanders commute into the city via ferry regularly. The town is rich in history having changed much over the decades. What started as a farming and logging community (strawberry farms were huge here pre-WWII) has morphed into every Seattleite’s preferred weekend escape.
Downtown Winslow is a far cry from the small town it once was, but the charm is still there. If you’re hungry, check out Harbour Public House for craft beer and local PNW plates or the Coquette Bake Shop. In need of a pickme-up? Cups Espresso & Café has you covered with the best breakfast and espresso in town. There are also numerous shops, antiques stops, and wine-tasting options to keep you busy.
the camps closed, due to the tight-knit community.
On a more somber note, the Japanese American Exclusion Memorial is an important stop on any itinerary. Prior to World War II, the island had a large Japanese community that ran most of the old strawberry farms. It had one of the highest return rates in the country after
The Seattle-Bainbridge Island ferry takes about 30 minutes and takes motorized vehicles and passengers. Check wait times on the Washington State Department of Transportation website. It departs from Pier 52.
Yes, you can take a ferry to Canada! The beautiful British Columbian capital is a wonderful city that every traveler should visit at least once! The trip on the Victoria Clipper takes about 2 hours and 45 minutes and departs from Pier 69 in Seattle.
Along the way, enjoy unmatched views of Puget Sound’s mountains, beaches, and waterside homes. You’ll also pass by numerous destinations such as Whidbey Island, Port Townsend, and the San Juan Islands (a popular spot for whale watching). Alongside whales, keep an eye out for wildlife such as seals,
salmon, seagulls, and even deer– they are frequently spotted in the area!
Once you’ve reached Victoria, you’re spoilt for what to do. The old brick buildings and cobblestone streets will transport you to as close to Europe as you can get on the West Coast. Don’t miss high tea at the Empress Hotel, a chance to wander around the Butchart Gardens, or the opportunity to join an indulgent food tour. Additionally, the city offers excursions galore, there are plenty of paddle boarding, kayaking, and whale-watching opportunities.
The San Juans are a favorite vacation destination amongst Washingtonians. The mostly wild islands are full of lavender in the summer, have amazing beaches, and are great for hiking yearround. And while things tend to be quieter in winter, if you plan ahead, it can be a magical time to visit and enjoy the area without crowds.
Each island has something different to offer. San Juan Island is the largest and where most ferries stop first. It is home to Friday Harbor, the largest town amongst all the islands. You’ll find the most in terms of accommodation and activities here. Lopez Island is quieter and more local while Orcas is popular but not as much
Ah the Washington Coast, home to the wild crashing Pacific, old-growth rainforests, and some of the cleanest air you’ve ever inhaled. Washington’s northern coast is the relaxing getaway everyone needs to take this year. This is technically an extension of the two routes above, as the coast can be reached from either the Kitsap Peninsula or Bainbridge Island, depending on what you choose or where you start.
If you take the ferry to Kingston, you’ll drive through historic Port Gamble and lovely Port Angeles (make sure to visit Hurricane Ridge and the Olympic Mountains, even just for a brief drive and look). Stop along the way at the Hoh Rainforest before choosing from Ruby, Kalaloch, Rialto, or other numerous lovely spots along the coast. Camp or stay in Forks or Port Angeles.
Alternatively, you can drive from Bainbridge and take the same route. It will just be a bit longer of a drive.
as San Juan. Both have great campground options. April through October is whale watching season on the San Juans. You can browse available tours on the San Juan Islands Visitors Bureau’s website.
San Juan-bound ferries depart from Anacortes, about an hour and forty-five minutes northwest of Seattle. If you plan to bring your car, reserve at least a month in advance, especially June through September. You can also walk on to the boats and leave your car parked at the terminal. The crossing from Anacortes to Friday Harbor is about 90 minutes.
Ihave always loved hiking, so when I had kids, naturally I wanted to bring them with me to share in my hobby. But this meant I had to rethink hiking a bit. Since moving to Spokane from Sweden in 2021, I have been on the lookout for trails that work when you’re pushing a stroller. It’s been a lot of trial and error and I quickly found that not many trails work with one.
Our family started hiking regularly when our youngest daughter was about one-year-old and our oldest daughter, three, which meant bringing a stroller. We got a double stroller that seats two for this and that has worked really well for us. I’ve rounded up some of our favorite spots for those who desire to hit the trails with young kids in tow. Here are five great stroller-friendly hikes around Spokane.
5200 W Greenwood Rd
Spokane, WA. 99224
Offering a beautiful view of downtown Spokane, Rimrock Drive, part of Palisades Park, is a great hike for strollers. It’s a gravel trail, but very flat and wide, and not a looped trail, so you can feel out how far you want to go. There are free parking spots at both starting points. Since the trail is on top of a meandering ridge, you will have a good view of downtown, the Spokane River, and Mount Spokane in the distance.
1013 S. Fiske St, Spokane WA. 99202
Ben Burr Trail is another gem located on the South Hill stretching from Underhill Park to Liberty Park. It follows along the basalt rock wall that is typical for Spokane and offers some nice views of the city. It’s great for strollers because it’s paved all the way. Midway, you’ll cross a pedestrian bridge over South Altamont street, always fun for the kiddos. A cool thing about this trail is that the Liberty Park library and its playground is at one of the starting points, adding extra fun to the outing and a chance for the kids to let out some energy. Parking is free at both starting points.
2221 S Southeast Blvd
Spokane, WA. 99223
A more simple walk, but with great views plus a playground, is the Lincoln Park Loop on the South Hill. This park has two parts, an upper and a lower part. Start at the upper park where the free parking is. The upper loop has amazing views over Spokane. Then, you can take the trail ( all paved) leading down to the lower part of the park which has swings and a playground as well. Lincoln Park Loop truly checks all the boxes.
Turn left on West Charles Road off SR 291 at the Nine Mile Dam. Proceed south on Carlson Road, up the hill and turn right to the trailhead on the west side of the road.
The Centennial Trail is perfect for strollers— and its long!— stretching from Coeur d’Alene to Nine Mile Falls. There are so many beautiful stretches and it’s all paved, which makes it easy breezy with a stroller. I would say the best spots of this very long trail are the ones located in Riverside State Park where the path runs closer to nature. Walking on the hanging bridge by Bowl and Pitcher is definitely a must-see, though not as stroller friendly. If I had to choose one section to reign supreme, it would be the stretch from the Carlson Road trailhead close to Nine Mile Falls, as you walk south towards the Mclellan trailhead.
You will need a Discover pass for most trailheads along the Centennial trail. These can be purchased online or at several local licensed vendors. The trails meander along the Spokane River and this section is very lush with lots of trees and greenery. There is also a steel
bridge that you will pass over, which goes over the stream releasing from Deep Creek Canyon (another cool place but not so stroller friendly). My kids thought this bridge was really cool since you can go down to the water where there is a small beach perfect for rock skipping.
If you want a physical map of the trail, there are a few options, but I recommend getting one from The Friends of the Centennial Trail, the main non-profit caring for the Centennial trail. You can buy it online on their website or through one of their local partners in town.
stretches and it’s all paved, which makes it easy-breezy with a stroller.
Follow I-90 W and WA-902 W to 4th
St in Medical Lake and you will see your destination
Around the lake in Medial Lake there is a looped and paved trail perfect for strollers. You can park for free at the south end of the trail which also has a beach area and a playground making for an easier jog ahead. Being a looped trail, it follows the lake, which is gorgeous. At the northeast part of the trail you will have to walk through the town of Medical Lake a bit before the paved trail continues again and brings you back to the parking lot and beach area at the south end of the lake. I recommend taking a detour to stroll through town to check out some local shops. Last time we went, in late summer, the Blue Water Bluegrass Festival was in full-swing, which was awesome!

Whether it's a spontaneous day trip or a well-planned weekend getaway, travel is a love language around here, especially as the seasons turn and the leaves begin to change.

The holidays are upon us, and Canopy Credit Union is here to remind you that diving into shopping mode without proper planning can lead to impulsive and expensive overspending. However, thoughtful, intentional planning can help you both save money and reduce financial stress. In this guide, you will find five strategic tips for smarter shopping this season that will ensure satisfaction with your purchases, but also, your budget.
At Canopy Credit Union, they care about your financial wellness journey, from everyday spending to future savings goals. Serving the Inland Northwest since 1956, Canopy is on a mission to create a happier and healthier community through financial inclusion.
Before you shop, write down everything you currently need to purchase, along with items you anticipate needing in the future. Categorize them in a way that works for you (e.g., clothing, beauty, home, yard). Once you have a list, prioritize the items.
Compare your prioritized items to your budget and create a plan to save up for each item on your shopping list. Make sure to communicate and collaborate on your plan with your partner, family, or anyone else in your life involved in your finances.
Implementing multiple safeguards to steer clear of impulsive purchasing is a long-term plan for success. Here are some strategies to consider:
Your budget is full of needs, but there are also “wants.” For those purchases that fall under the want category, wait at least 24 hours before purchasing. Giving yourself time to think over a purchase could result in you changing your mind. Don’t just buy, shop!
Increasing the amount of time between when you first start looking for an item to when you actually purchase it will help you choose the right item (buyer’s remorse is the worst) and get the best deal. Try shopping in-person and online to get a full picture of what different businesses have to offer.
While it is sometimes helpful to know what deals are going on, oftentimes emails from your favorite stores result in browsing and unplanned purchases.
Disconnecting your credit or debit card from online shopping sites will make paying a hassle – and that is the point! By having to input your card information before each purchase, you will be forced to slow down and think about whether or not you actually want to make it.
Looking for a new outdoor umbrella for your summer patio? Or hoping to score a down jacket for winter? Pause on purchasing seasonal items during the season you typically use them. Instead, research the prices of items on your shopping list in their off season.
A retailer’s need to move inventory in the off-season can be your reward! With price tags substantially less than what they are during peak season, it is wise to put a hold on purchases that can wait. Additionally, hitting pause on purchasing these items will give you time to ensure they fit into your budget, and give you insight into whether or not you actually need them. Create a list of items that you don’t need quite yet, but may want next year.
Here are examples of seasonal items to keep an eye out for off-season:
Fall – Holiday decor, backpacks for the kids, electronics, and new furniture
Winter – Cold weather coats, skiing, snowboarding gear, snow blowers, space heaters, and winter tires
Spring – Greenhouses, lawnmowers, sandals, outdoor furniture, and vacuums
Summer – Outdoor grills, swimsuits, luggage, kayaks and paddle boards
Coupon Clipping: Take advantage of online coupons, promo codes, and free shipping offers. Websites dedicated to aggregating discounts and deals can serve as valuable resources for finding the best online bargains. But be sure to check reviews and verify the seller to be safe.
Leverage cash-back and rewards programs: Lots of credit cards and loyalty programs provide opportunities to earn points, cash back, or discounts on purchases. Taking advantage of these options when you shop or pay bills can offer savings and discounts on a huge variety of possible rewards.
NOTE: Be wary of store credit cards. Does this sound familiar? “If you sign up today, you will get 15% off your purchase!” Store credit cards tend to have higher interest rates, their rewards are often limited to just that store and they usually come with fees.
Tip 5: Meet With a Financial Coach
Canopy’s financial coaches can help you create a spending plan that works for you, one that keeps you on track with your financial goals. Meeting with a financial coach is always free and is available for everyone. Log on to canopycu.com/coach to sign up for an appointment today!

As someone over 50 and a senior living expert at Fairwood Retirement Village and Assisted Living, I’ve seen how social media is becoming an essential tool for older adults. Whether it’s connecting with family members, staying informed, or finding new ways to be entertained, social media platforms offer a world of possibilities for people in their later years. Gone are the days when these platforms were only for younger generations. Now, older adults are embracing social media for its many benefits.
For me, and for many others, social media has become a vital tool for building new relationships and more. Let’s explore how social media is enriching the lives of people over 50, who are engaging with the world around them in ways they never thought possible.
One of the most powerful aspects of social media for older adults is its ability to foster connections. Family dynamics often change as we age. Children move away, and it can become more difficult to maintain regular contact. Social media platforms like Facebook have stepped in to fill this gap, providing an easy way for seniors to stay connected with family members and loved ones, no matter the distance.
At Fairwood Retirement Village, while we don’t directly engage with our residents’ social media accounts, we see how their families use our Facebook page to stay in touch with what’s happening at the community. Family members from across the world engage with our posts, and it’s wonderful to see how connected they feel through the simple act of liking, commenting, and sharing our content.
For older adults, platforms like Facebook allow them to stay updated on their grandchildren’s milestones, share photos, and even join groups that align with their interests. I’ve seen many seniors find new friends and even rekindle old friendships through these virtual communities, enhancing their sense of connection and reducing feelings of isolation, so common to this demographic.
Learning shouldn’t stop as we age. One of the remarkable things about social media is the way it has made information so accessible. From educational videos on YouTube to insightful discussions on Twitter, older adults are finding new ways to expand their knowledge and stay informed about the world.
For example, platforms like YouTube offer endless opportunities for learning, from tutorials on everything from knitting to gardening to basic tech skills. Many seniors are discovering the joys of lifelong learning through these resources, which can help them stay engaged mentally and emotionally.
One of the remarkable things about social media is the way it has made information so accessible.
One standout example is of my friend Jordan Hunter, a dedicated advocate for the Walk to End Alzheimer’s. She has effectively used social media to share up-todate research, caregiving tips, and wellness information, helping older adults and caregivers navigate the complexities of Alzheimer’s and dementia. Through her thoughtful posts, Jordan is making valuable information easily accessible to seniors and their families in the Pacific Northwest.
This kind of online learning—whether it’s about health, hobbies, or personal interests—helps older adults stay mentally sharp and engaged in meaningful conversations.
Beyond connection and education, social media provides an endless source of entertainment for older adults. Whether it’s following travel bloggers, watching cooking demonstrations, or enjoying funny videos, there’s something for everyone. Platforms like TikTok, once known only for younger users, have attracted many older adults who like to share their experiences, humor, and life stories.
Instagram also offers rich visual content that appeals to seniors interested in photography, travel, and art. Many older adults enjoy following accounts that share beautiful imagery of places they’ve been or wish to visit, allowing them to experience the world through their screens.
Older adults are also discovering the joy of joining virtual communities where they can share their own experiences, whether through Instagram posts, Facebook groups, or even TikTok videos. These platforms give older adults the opportunity to create and share, not just consume content. It’s a wonderful way for seniors to stay creative, engaged, and entertained.
Scams, phishing attempts, and misinformation can pose real risks to older users if not cautious
While social media offers numerous benefits for older adults, it’s important to be aware of potential pitfalls. Scams, phishing attempts, and misinformation can pose real risks to older users if not cautious.
For older adults new to social media, it’s crucial to take steps to protect personal information. Simple measures like adjusting privacy settings and being selective about who you accept as friends or followers can help mitigate these risks. Additionally, it’s important to verify the sources of any news or health information shared on social media to avoid spreading or believing misinformation.
For families of seniors, helping them navigate social media
safely can be a great way to support their online experience. By educating them on how to avoid common scams and misleading content, we can ensure that older adults enjoy the benefits of social media while staying safe.
As someone who has embraced social media for both personal and professional reasons, I encourage anyone over 50 to explore the benefits of such platforms. You may be surprised by how much they have to offer—from rekindling friendships to discovering new passions, the digital world is full of possibilities for those willing to dive in.

One of my favorite fall activities is listening to an audiobook while walking my dog Dale in one of our engoldening Inland Northwest parks or forests. Audiobooks are a recent obsession of mine, spurred by dog-ownership and by the pandemic, the latter of which utterly changed my reading habits. I’m particular about my audiobook apps, though. I don’t use Audible. As a longtime indie bookseller, I can’t support buying books from Amazon, but I love Libro.fm, which supports our wonderful local independent bookstores like Auntie’s and Wishing Tree. And more often than not, I’m checking books out (for free!) on the Libby app, using my Spokane Public Library card. Head to the app store on your phone to download Libby at no cost to you, or check with your local library system to see what audiobook steaming service they use. Tips aside, I’d love to share six excellent audiobooks with you, just in time for your own autumnal adventures. Here they are, for your enjoyment.
By Nana Kwame Adjei-Brenyah,
Narrated by Shayna Small, Aaron Goodson, Michael Crouch & Lee Osorio
I just started listening to this novel on Libro.fm. I initially put it in my queue because it kept appearing on my “best of” audiobook lists. This novel reimagines the industrial prison complex as a gladiator-style murder machine, pitting one prisoner against another in physical altercations that draw a big and unethical profit. Adjei-Brenyah turns her keen, critical eye on our country’s penal system and entertainment sports franchises. This is a gripping, propulsive, futuristic read.
by Stephen Graham Jones, narrated by Cara Gee
“My Heart is a Chainsaw” is another great ghost story! If you’re a fan of slasher films, you’ll sink your fangs into this work of horror by Blackfeet Nation writer Stephen Graham Jones. The first in a series, the novel is set in a rural lake town in Idaho. It’s won both the Shirley Jackson Award and the Bram Stoker Award. Most awesomely, it centers on a horror-loving Blackfeet high schooler, Jade Daniels, who is surviving terror at home while also examining the terror in her community. As with Jones’ other books, this is smart, character-driven horror, psychologically thrilling, yes, but not without incisive social commentary.
by Miriam Toews, narrated by Miriam & Georgia Toews
If you were to ask me to choose my favorite audiobook of all time, “Fight Night” would be a serious contender. It’s narrated by the author with one small section narrated by the author’s sister. In “Fight Night,” a young girl, Swiv, tells the story of her terrific and strong-minded grandma, Elvira, and her fraught and pregnant mother. The voices of all three of these characters are a delight from start to finish. Toews is a fearless writer—you’ll know this if you read her opus about patriarchal violence, “Women Talking” (one of the deftest novels I’ve ever read), or her devastating book about suicide, “All My Puny Sorrows.” Within the uplifting bouquet of funny lines in “Fight Night” is vibrant pathos and a rooted understanding about all that women fight and survive. As Elvira tells Shiv, “To be alive means full body contact with the absurd. Still, we can be happy.” I laughed and cried at the dog park while listening to this book.
by Gabrielle Zevin, narrated by Jennifer Kim & Julian Cihi
This is one of my favorite recent audiobook experiences, a love letter to video games and to creative collaboration. What’s most beautiful about this book is the epic friendship and on-again/offagain platonic partnership between Sam Masur and Sadie Green, two game designers, the former a Korean American with a visible disability, the latter a Jewish woman determined to thrive in a highly sexist industry. As these two mature from hospital companions to college students to successful creatives, we root for them through triumphs and tragedies alike. What an immersive, expansive novel this is, and I found myself just as rapt by the video game descriptions as I was by the character’s vivid emotional landscapes.
by Toni Morrison, narrated by the author
Autumn is the season for ghosts, so there’s no better time to listen to the late, great Toni Morrison read “Beloved” to you, a novel that is inarguably one of the finest ghost stories ever penned. In it, a haunted mother, Sethe, and her daughter, Denver, are living in Cincinnati during Reconstruction and believe their home’s malevolent ghost has slipped into the flesh of a young woman named Beloved. The novel tackles the devastating intimate horrors of the Atlantic slave trade, the troubled aftermath of the Civil War, and how the lives and minds of an entire populace were shattered so a nation could profit. “Beloved” is unflinching in the mirror it holds up to our faces. Morrison is the GOAT (greatest of all time). Listening to her singular voice narrate “Beloved” will raise goosepimples on your forearms.
by Helen Phillips, narrated by Ariel Blake
I devoured this book in two days while on a recent San Juan Islands camping trip with my family. “Hum” shares the humor and incisive metaphorical qualities of Phillips’ earlier novels “The Beautiful Bureaucrat” and “The Need,” but it feels even sharper in its sympathies and warnings. The plot points here feel born of our society’s imminent future: A mother sells her countenance to a company researching facial identification; both adults and children isolate themselves at home in screen-addled pods called “wooms;” children wear devices known as “bunnies” on their wrists that perform the parental roles of protector, playmate, and confidant; and AI has become so advanced that it takes on a humanoid form in sleek robots known as Hums. Some of the best literary fiction blends with another genre, and this science fiction masterpiece is one such example.

The holidays are approaching, and we will soon be on the hunt for “the perfect” gift to hand to a loved one or colleague. Though the convenience of knocking it all out in a few clicks is tempting, the benefits of shopping local are hard to ignore for long. Supporting local shops keeps money in our community, creates work and supports families who have given their lives to what they create and sell. But shopping local also adds distinction to the place we call home, and connects us all a little more.
I’m sure you, like me, have your favorite nationally-recognized brands, and some are even on this list, but there are thoughtful touches to be added to these purchases that we can find while browsing the local shops in our city. More exist in River Park Square, Spokane’s largest mall, than you may realize.
Here they are, for your information and future support.

Whenbars closed a few years back and we were no longer able to go out and drink, many of us (including myself) stocked up on supplies to play mixologist at home. Though the world’s since opened back up, some still enjoy to stay in rather than go out. If that’s you, I have some leads on where you can find those special supplies to make for a great night.
Note for liquors: Some manufacturers have gone to an allocative model to keep supply flat and “in demand.” This keeps prices up and inventories low. Liquors like Chartreuse and many bourbons have not increased in production since the cocktail renaissance has been in full swing. This means the average home bartender needs to be either quick, order ahead, or have a relationship with their local purveyor. I highly recommend having a good working relationship with one or all of the retailers on this list. It makes it so much easier to find that Holy Grail bottle when you have someone to call.
A trick for cocktails: Since the 19th century when cocktail culture was born, bartenders have been using a fortified wine as part of their repertoire. Wine can be fortified with higher proof or sugar to increase its longevity, although in this day and age of preservation it is more of a well established style. You will find sherrys, vermouths, ports, and others in many of the recipes you love. Most of the local retailers will have a separate section for these wines away from your normal lower ABV wines. You can drink all of the fortified wines on their own, but what they bring to the party should be understood. Their strength lies in playing the support role in your cocktails.
Based on research I have done, here are the eight best liquors stores in Spokane. Let me help you track down those rare, dusty bottles so you can fill out your bar and get ready to host, as well as make delicious drinks for yourself.
Both the North Point location at 9980 N Newport HWY and the Valley location at 13802 E Indiana Ave are open 9 a.m. to 10 p.m. daily.
Afterthe voter passed initiative of the repeal of state owned liquor stores in 2012, Total Wine moved into the area to offer a large establishment encompassing beer, wine and hard liquor. With easily one of the most extensive selections of all three, you can find normal selections of vodka, gin, mezcals, whisk(e)y, and modifiers. They also carry many brands that are absent in your local corner grocery or liquor store.
The real gem though, is their tastings. They host monthly events where they feature different themes from all bourbon, to different styles of the same wine grape. This allows you, the buyer, to try things you have not had before, adding them to your collection. With their selection of bitters and mixers, Total Wine is your one stop shop for almost all of your cocktail building needs. Highlights for me include St. George Terroir Gin, Bib & Tucker Bourbon, and the Giffard brand of Liqueurs.
Located at 5612 S Perry St on Spokane South Hill, Egger’s Liquor Store is running 9 a.m. to 6 p.m. each day but Sunday, when they are closed.
Ifyou have lived in Spokane as long as I have, Egger’s is synonymous with quality. Their butcher counters have been open for more than 70 years, and they took that same drive to deliver high quality customer service and products to the liquor market. Nestled deep in the South Hill in the original meat building, Eggers has curated a very nice selection of liquor. Catering to the cocktail aficionado like me, they have a varied selection of aged liquors and fortified
wines to mix your favorite Manhattans with, and more. They have also hopped on the tasting train, and offer tastings monthly. Note that when you peruse their shelves, the pricing you read is the “out the door” price which already includes the WSLCCB assessed taxes. Highlights for me were available bottles of Chartreuse, Pierre Ferand cognac, and XXXX.
Egger’s is synonymous with
Bulldog Liquor & Wine is located at 1101 N Division St. Suite A and operates daily from 8 a.m. to 11 p.m. most nights. Friday and Saturday, Bulldog Liquor is open until midnight. On Sundays, they close at 10 p.m.
in an old WA State Liquor location on Division, Bulldog has quickly established itself as a destination for those rare gems in the liquor industry. Bottles of allocated bourbon and such line the shelves with those old copper colored nameplates that adorn the headers above the shelving. In addition, their special order program has been second to none. I find myself wandering the aisles pouring over the different bottles of whatever in every corner of the store.
They also have one of the best high quality top shelf selections in town behind their glass. If you are looking for that special bottle of Macallan 25 for the bargain price of $2499, they have you covered. They have also started a signature line working with specific distillers to develop a “Bulldog” version of some of your favorite hooch. Highlights for me include Eagle Rare SB “Bulldog,” Absolut Elyx vodka, and Singani 63.
Full Stop Grocery & Liquor is located at 4417 W. Wellesley Ave. in Spokane, WA and advertises as “always open.”
away in a former hardware store location, Full Stop is your normal C-Store with gas and snacks, but also offers a very wide selection of liquors that rival other establishments. They have the largest selection of Canadian Whiskey I have found south of the 49th parallel. In addition, they have large
selections of bourbon, rums, mezcals, and vodkas not necessarily found elsewhere. Their endcaps are usually filled with special offers and unique offerings that they may not have more of once they run out. Highlights for me were Old Overholt BIB, Cream of Kentucky Bourbon, and St George Absinthe.
Costco has two locations in Spokane. One at 12020 N Newport Highway and the other in the Valley at 5601 E. Sprague Ave. Store hours are 10 a.m. to 8:30 Monday through Friday and 10 a.m. to 6 p.m. on Saturday and Sunday.
list would be complete without Costco. Its selection is not the most robust, but if you are looking for the best price (or the largest size) on some of your favorites, there is no better place to go. Costco’s buying power allows them to negotiate with manufacturers to get sought after varietals or special releases that are hard to get
elsewhere. Bonus points for showing up on sample day where the aisles are lined with toothpick adorned items to stuff in your face. Note: the Kirkland Brand of some liquors could be a generic repackage of some of your favorite spirits at a deep discount.
Located in Kendall Yards at 1030 W Summit Pkwy, My Fresh Basket is open from 6 a.m. to 8 p.m. most days, except for Saturdays and Sundays when the store opens an hour later at 7 a.m.
WhenSpokane Produce decided to get into the retail space, they identified Kendall Yards as their first flagship location. While they have the widest selection of grocery items than any other location in this article, their liquor selection is purposefully curated. Rare bottles of allocated whiskey that I have a hard time finding in town are easily acquired once you get past the locked glass doors. They also carry some unique fortified wines I have not found in town elsewhere. If you are looking to outfit yourself for a night of entertaining, make this place your first stop for food and drink. Highlights for me were Lustau Vermouth and the Buffalo Trace bourbon.
Rocket Market at the corner of Scott and 43rd on Spokane’s South Hill houses a quaint little corner market where you can pick up dinner and a bottle of wine any day of the week before the place closes at 10 p.m.
Thismay seem like an unlikely place for unique alcoholic selections, but believe it or not, this place holds one of the widest selections of bitters (the “seasoning” in cocktails) along with fortified wines that you will find in the Inland Northwest, I believe. When you do a deep dive into cocktail building, you will notice bottles of orange bitters and Angostura at most locations on this list. However,
when you enter the deep end, you will find yourself looking for barrel aged, cherry, lemon, walnut, blood orange and many other flavors of highly seasoned high proof alcohols to add to your drinks, which can be found at Rocket. I spent an inordinate amount of time pouring over the different flavors and brands of bitters to complete my collection.
Idaho State Liquor Store is located in Post Falls at 7209 W Seltice Way serving the public from 11 a.m. to 7 p.m. each day but Sunday, when it is open from noon to 5 p.m.
If you live close enough to Idaho, you may find yourself swinging by to stock up your bar in Idaho instead of one of the above locations. Always friendly and well organized, you can find a good selection of your favorite liquors and mixers at any one of the Idaho State Liquor Store
locations. Be on the lookout for their “local spirit” section where they feature selections from local distilleries. One of the nice advantages to the Idaho system is that you can find their inventory list online with prices (for those of you who are looking for a deal).
That does it! This list is by no means exhaustive. If you have a favorite local retailer that does an exceptional job of stocking their liquor shelves, please let us know. We will be happy to check them out and add them in.

Spokane’s burgeoning food scene is finally forging its own identity in the Pacific Northwest, and for Trending Northwest Restaurant Month, we wanted to celebrate it in style. Every year, there are waves of new restaurants bringing fresh flavors to town. There are also long-established restaurants that are maintaining popularity by adapting with the times, being inventive and keeping diners hungry for more.
Spokane’s culinary scene is diverse and impressive, offering a range of restaurants that can satisfy even the pickiest of eaters. With numerous eateries, from Wild Sage Bistro to Italia Trattoria, scattered throughout the city, it can be overwhelming to choose which to visit. And when it comes to food, everyone has an opinion. That’s what makes it one of the most commonly searched topics in our local area, and
our three top articles are all related to local restaurants! It can be hard to find the best options with just a simple search either online or on social media, and because we are out in the community all the time, we have a lot of knowledge about the spots that you don’t want to miss. (You’ll want to bookmark this one.)
With all of the challenges they’ve faced in the last five years, some of our most beloved spots have been struggling more than ever. When the team thought about how we could help local restaurants get a much-needed and well-deserved boost, we came up with a plan together – why not give them free coverage for our very own Trending Northwest Restaurant Month? So, we came up with a list of 30 can’tmiss restaurants that we think offer some of the best experiences in town on any occasion.
This was the perfect fit for our founder, Erin Peterson’s birthday, since she loves to give back to celebrate.
September was a whirlwind as we dove into developing and sharing about Restaurant Month at Trending Northwest, spotlighting a new local gem every day with HUGE giveaways that would give extra awareness to these special places that make our local culinary scene stand out. From cozy cafes to elegant dining spots, we dove into a variety of cuisines and dining styles to create a list that would be the ultimate foodie tour in Spokane and Coeur d’Alene. It is not a comprehensive list, but a collection of some of our very favorite places to take family and friends to enjoy a delicious, chef-driven meal at a variety of price points.
Without further ado, here is our list of the best restaurants and
Our friends at Canopy Credit Union offered to help make it a reality and are the title sponsors for the work that went into this promotion. We are deeply grateful for their partnership and care for our community through mindful banking.

With the arrival of Gander and Ryegrass, chef and owner Peter Froese brought back a muchneeded style of dining to Spokane’s food scene: Tasting menus. Visitors can always look forward to house-made pastas, bread and Italian-inspired fare, but the dishes themselves change rapidly, sometimes daily, based on the season or the chef’s discretion.
One of the tasting options is a three-course service where guests can choose their own dishes.
If one truly wants the full experience that Gander has to offer, then the Marathon dinner is the way to go. The six-course presentation is chosen entirely by the chef. Those participating are sure to be pleased as they receive dishes ranging from bite-sized starters to plates of pasta.
A tasting is also available during daytime hours with the Chef’s Leisurely Prix-Fixe menu. For guests wanting a more classic dining experience, the lunch menu has several small plates, pasta and entrée selections.
Located only a block from the Spokane Convention Center and Riverfront Park, Gander and Ryegrass is the place to go for special occasions, date nights or to simply enjoy an exquisite meal.

Durkin’s Liquor Bar is located in the heart of downtown. It is owned by long-time Spokane restauranter Deb Green and her children, Ben Poffenroth and Megan VanStone.
The street front is welcoming with floor-toceiling windows, and the inside has a vintage aesthetic that appeals to the masses. The upstairs features one wall lined with leather booths and on the opposite side is a long bar that expands past the drink station to the kitchen. Guests seated at the barstools have front row seats to watch food being cooked and prepared.
Downstairs is the basement bar with more booths and tables, couches and an intimate, speakeasy vibe. A hallmark on the menu is arguably the best burger in Spokane. The Durkin’s Famous Double brags two ground chuck patties, American cheese, shaved pickles, red onion and dill mayo, on the house bun with a side of house cut fries.
However, Durkin’s serves much more than the usual gastropub fare and also features lavish dishes like Mussels Escabeche or the hand-chopped NY Steak Tartare with cured yolk. New executive chef Jarrott Moonitz works wonders with seafood, so be sure to find out what the rotating market fish is when coming in for a visit! Finally, even though this is a review about the best restaurants in Spokane, I would be remiss to ignore the full-service bar Durkin’s offers. Get what you want, or choose from the wide range of cocktails, you can’t go wrong either way!

Outsider is one of the best restaurants in Spokane right now, and for good reason. Chef Ian Wingate is a Spokane legend, and this stunning spot is tucked away on an unassuming corner across from the Spokane Arena (which is super convenient if you’re going to a concert or a show). Their pizza is made with a three day fermented dough with a sourdough-eque tang, and with some cheeky toppings like pickles that totally work. The menu is eclectic as can be, but well thought out. Since opening in 2014, Ruins has been a Spokane staple. The restaurant has been featured on Food Network and Chef Owner, Tony Brown, is a 2023 semi-finalist for James Beard’s Best Chef: Northwest and Pacific.
Ruins currently offers two services: lunch and dinner. The fast, casual-lunch service features an array of salads and sandwiches that have been popular since even before the days of Ruins when Brown ran a sandwich shop (RIP Stella’s).
The sandwiches are classics, but have original twists that help them stand out, like the meatloaf sandwich with a spicy ketchup and shallot aioli, or the curried egg salad sandwich. The dinner menu is always rotating, but is certain to feature a creative and eclectic mix of dishes.
An enticing pan-seared cod with smoked tomato and salsa verde is offered alongside vegetarian and gluten-free plates – like the smoked chickpeas with Yukon gold potatoes and vadouvan curry.
If you are looking for a variety of options, Ruins is a safe bet with delicious food!

Tucked away in the up-and-coming Hillyard neighborhood is a gem of a restaurant named Kismet. The unassuming building hosts a cozy dining room with a large, brightly-painted mural on the wall and an open kitchen. In the summer, there is extra seating on the petfriendly patio. This is by far one of the best restaurants in Spokane if you’re looking for a new spot to visit!
Chef Dan Gonzalez has been a familiar face around Spokane for years. He has worked for several restaurants, including the popular Eat Good Group. Since he opened Kismet in 2021, he has delighted diners with his Latin-inspired menu. Gonzalez serves mouth-watering, traditional items such as tacos, arepa cakes, tostadas and ceviche.
There are also fusion dishes where he creatively flexes his toolbox of techniques, like the house-made pasta with braised pork cheeks, ricotta cilantro pesto and harissaroasted fall vegetables. Or try the crispy, confit duck leg with mole caramel, heirloom bean cassoulet, house-made chorizo, and roasted vegetables. These creative dishes are perfect for the adventurous foodie!

Fan favorites include the caesar salad with croutons fried to order, the Tavern Burger that has all the right fixings (super tasty with the house-made veggie patty, too), and the sweet-sausage-and-cheese-stuffed Hungarian peppers that are still so popular, they often sell out!

earning I had celiac disease at 19 felt like a foodie’s worst nightmare. The diagnosis was devastating. I felt like I'd never again enjoy my favorite dishes, and for several years that was the case. The gluten-free diet seemed incredibly restrictive to me, a girl who had spent her whole life eating whatever she wanted. Learning how to advocate for myself and my health has been a journey, one that I am still on today.
I was first diagnosed in 2011. Fast forward 13 years, and
Spokane has changed dramatically in dietary awareness. Those who are gluten-free can dine out almost anywhere now and find something to eat (thank goodness!). Whether you're newly diagnosed with celiac disease, simply have an intolerance to gluten, or have a loved one whose journey you are trying to support, this roundup is for you!
Here’s my list of seven restaurants with incredible options for gluten-freers in Spokane. Let’s make sure everyone has a seat at the table in our city.
1406 W Third Avenue
3011 E Diamond Avenue
Red Dragon has two locations in our city that serve all areas of Spokane. Chinese food has always been my favorite food growing up. My family celebrated every single birthday I had from age 10 to 18 with Chinese cuisine. When I made the celiac-switch at 19, I didn’t know where to find gluten-free Chinese food. I was so relieved when I stumbled upon Red Dragon. It changed everything for me. The same day I found this gem of a restaurant, my husband and I found a babysitter and hit the town. We had a great time chatting with our server who was so friendly and the décor was beautiful and unique. This place is perfect for a date night or for the entire family to enjoy.

Cole’s Bakery & Café is a staple for all passengers on the gluten-free train. This restaurant is totally glutenfree, perfect for those who are very sensitive or have celiac disease like me. Cole’s is not just a bakery and café, it also serves breakfast, lunch, dinner and dessert. And here is the best part (in my opinion), they have completely safe fried food, foods that you will have a hard time finding anywhere else, like: chicken fried steak, onion rings, mozzarella sticks, fish and chips, and much more. It is my personal conviction that Cole’s Bakery & Café has reached legendary status in the gluten-free dining scene of Spokane.

Long-gone are the days of avoiding sandwich shops.
Zozo’s Sandwich House makes it possible for us to keep our tummies safe while enjoying the foods we love. Have you seen Zozo’s menu? The combinations are so creative. All of the flavors work together so perfectly. Zozo’s Sandwich House’s owners are very accommodating and the service is FAST! They’re even attentive to how the textures of their food work together, which can be an issue for some gluten-free eaters. This sandwich shop will blow all of your expectations of a gluten-free sandwich out of the water. Go check them out!

Versalia Pizza in Kendall Yards was a pleasant surprise. I visited to have a relaxing hang out with my sister, but wasn’t prepared for how great the place is for gluten-free diners like me! The menu has so many options that can easily be made gluten-free. I now have a fierce pizza-loyalty for Versalia, located right on the Spokane River, which is reason enough to drop in. They even have gluten-free beer, too, something hard to find at any restaurant.

Snuggled into Spokane’s South Hill, My hubby and I have dubbed Manito Tap House our date night go-to. I love the décor in the restaurant and the upscale-casual pub vibe. The servers are always knowledgeable about what is okay for me to eat and there are so many options. This is also one of those rare locations that serves glutenfree beer, so it’s a great place to meet friends for a drink if you’re gluten-free. It’s the little things that count, you know? Inclusion is everything.

Thai Bamboo is one of the safest places to eat since a huge portion of its menu is naturally gluten-free. What isn’t gluten-free is clearly marked as such and gluten-free options are highlighted, making the menu easy to navigate for those with food allergies. Serving Spokane with four locations, Thai Bamboo makes Thai food more enjoyable for gluten-free eaters, as it removes all worry over getting sick. I love taking my kids there, too, who love looking at the beautiful high ceilings that change color. It keeps them mesmerized, which gives my husband and I more space to focus on each other.

Have you gone to a non-gluten-free bakery in Spokane and seen Boots Bakery’s cookies on the counter? If you’re celiac like me or avoiding gluten for any reason, then you know what a welcoming feeling that is. Boots has made it possible for so many people like me to pop into various places around town and find a gluten-free treat waiting there, safe to consume. Boots has its own bakery and lounge located downtown with a full menu alongside its baked goods. One of my first experiences with the company was when it catered my friend’s wedding. I was so happy to learn I could eat whatever I wanted, from the main dish to the side dishes, and all the cake I could consume! I love going to Boots Bakery where
I know that everything is gluten-free, totally safe, and undeniably delicious.
Note: Some of these restaurants do not have a dedicated glutenfree kitchen, so cross-contamination can occur. I will leave that up to your discretion. Navigating a gluten-free lifestyle is challenging, but with so many great options in our area, it doesn’t have to be.
Whether you’re new to your gluten-free journey, helping a loved one, or are a seasoned pro, these restaurants make the gluten-free lifestyle much more enjoyable.

is in full swing. After a few months off enjoying the summer sun and good company, life has been refocused around the school year. The back-to-school season takes serious organization, especially if you parent more than one school-age child. If you’re in search of how best to set yourself up for success, you aren’t alone. Megan VanStone, also known as Honey Housewife, a Spokane-based home and lifestyle blogger, shared with Trending Northwest how she’s prepared to face this thing head on. With three kids of her own, she offers tips on how to handle this busy season.
Here’s how to prepare your kids (and their lunchboxes) for a successful school year.
Rather than stressing over the date circled on the calendar, Megan strives to slowly make purchases and meet needs as the school years begins. “We put so much pressure on ourselves as moms. Do they need to start with a new backpack and fresh kicks? No absolutely not!” Megan shared. “I find that taking that load off and just trying to soak up days we have together fills everyone’s cup way more the monogrammed lunch box. (But don’t get me wrong, there will be a monogrammed lunch box),” said Megan.
Preparation is key! Honey Housewife shared how not everyone in the family is a morning person, so prepping for the next day the night prior can help alleviate stress in the morning. “Whatever I can do to set up us for success the night before is huge. I like to set out
backpacks and water bottles so they are ready to go. We always lay out what the kids are going to wear the night before so they can get dressed without any fuss.”
She even says that she will meal prep extra over the weekend so her kids have something to reheat in the morning. “My kids love a big breakfast on Saturday morning so I will often make a double batch of whatever I’m making for the kiddos to warm up before school. That way I know they are getting something good for them to start their day,” Megan shared.
While trying to fuel kiddos in the morning, it can be helpful to have your breakfast pre-prepped! “One of our go to breakfast is overnight oats. My kids actually love to make them themselves which is a double win. They are easy to grab and eat on the go. In the fall, my kids have early morning cross country practice, so they can take them to school and eat them after they run. It’s really a life-saver.
“It’s fun for them to also be able to mix it up and have fun with the things they add into them. When I take these extra steps it allows us to enjoy the morning, turn on some music, and have a little kitchen dance party to start the day in a positive environment instead of a rushed and stressed one,” Megan shared.
On top of overnight oats, another easy meal prep, according to Honey Housewife, are copycat Starbucks egg bites. “My kids can throw down some Starbies egg bites. I found a great little mold on Amazon and will prep a bunch to heat in the morning before school starts,” Megan said.
Hot lunch or homemade? It’s an age old question that keeps parents up at night. Megan says don’t overthink it or stress too much over the time spent throwing a lunch together. “Sandwiches in the shape of flowers and dinosaurs, who has time for that?!” Megan shared. “Let’s be honest, I’m 40. My skincare routine is a full time job! Fancy lunches are not on my priority list,” Megan joked.
Megan often makes homemade chicken salad for her kids. “One of our go-to meals is making a big batch of chicken salad. It’s so easy to add to a left over croissant. (Yes I’m a baker and I’m lucky enough to bring these home often. I love Trader Joe’s bake from frozen croissants, too. We bake them often and they make great little sandwiches for the babes.) Or, we use crackers and veggies to dip. I love knowing they are getting some good fiber and protein to get through their day. It also helps this mama remember to eat in the afternoon because who can resist some chicken salad!” said Megan.
Another fan favorite in her family is homemade charcuteries for lunch. “Another of my go-to lunches is just that, a little meat, a little cheese, some crackers, grapes, almonds and maybe a hunk of left over baguette. It does not have to be fancy. Use what you’ve got and let them snack. One of my girlfriends calls it a French lunch. I mean look at these fancy cultured little babes we are raising.”
“When it comes to dinner I like to keep it simple,” Megan shared.
“I got a fancy big girl all clad crock pot for my birthday a few years ago, and she’s my best friend. I think the key to a successful school week is trying to plan ahead,” Megan said. “I try to map out my week and plan my meals so come dinnertime, I’m ready to go. Now don’t get me wrong, some nights you just have to punt and order take out or as one of my good friends calls it: a fend for yourself dinner. I think it’s taking the pressure off by knowing that not every night needs to be a 3-course meal on the good china. It’s about balance,” said Megan.
“One of my favorite shows growing up was ‘Semi-Homemade,’ on the Food Network,” Megan shared. “I loved the way she (Sandra Lee) would take something store bought and pair or add to it with something made from scratch. For example: store-bought pesto meatballs paired with fresh peas and arugula and a homemade white wine sauce. It’s fast but still feels special and thought out. Smoke and mirrors baby,” Megan added.
“I think the key to a successful school week is trying to plan ahead.”
You will need:
1/2 cup rolled oats
1 cup milk of choice
1 teaspoon vanilla
2 teaspoons sweetener
(my kids go back and forth between maple syrup or honey)
1 tablespoon flax meal
1 teaspoon chia seeds
make:
Then this is where it gets fun, Megan shared: the add-ins! “I like a little raspberry jam, peanut butter and a little granola. My daughter loves mini chocolate chips. My son likes frozen blueberries (because it makes it purple) and a scoop of vanilla yogurt. The options are endless! I add the ingredients into a mason jar, pop the lid on, and give it a good shake. You want the consistency to be a little runny so feel free to add a little more milk if needed. Let it sit overnight and you are ready to go in the morning!”
You will need:
1 whole rotisserie chicken (meat removed from the bone and finely chopped)
4 celery stocks finely chopped
1 red bell pepper finely chopped
1 1/2 teaspoon old bay seasoning
Salt and pepper to taste
1 tablespoon red wine vinegar
1 cup mayo or 1/2 cup greek yogurt
To make:
Add all ingredients to a bowl and stir to combine. You can store it in your fridge for up to 10 days.
10 eggs cracked into a bowl
1/2 cup half & half
Salt and pepper
1/2 teaspoon dry mustard powder
Whisk up the mixture and add in your favorite cheese and toppings! “My kids like bacon and cheddar,” Megan shared. “I’ll cook 5-6 strips of bacon and add 1/3 cup shredded cheddar.”
Whisk it up and add to a greased mold. “My mold is round so I use a cake pan filled with 1/2 inch water to make a water bath for the egg bites,” Megan shared. “This will help prevent them from drying out.
Place the mold in the cake pan filled with water for baking.”
Bake for 12-20 minutes at 350 degrees until the eggs bites are firm to the touch. “I prefer 12 egg whites or 2 1/2 cup precracked egg whites, 1/2 cup half & half and finely diced bell pepper and green onion with 1/3 cup shredded pepper jack for a little kick,” Megan shared.
NOTE: These will last in the fridge for up to 10 days. (As if they will even make it that long.)
