Dear Reader,

First, let me introduce myself. I’m Em, the new Editor-in-Chief for Trending Northwest Magazine. I’ve spent the last decade working mostly in newsrooms, and am so happy to be bringing my life full circle, where the line between work and my everyday living is finally blurred. As a mom of four (well, five including our pup, Sven), it is a great reward to bring you content that inspires greater connection to ourselves and the community around us. It’s what I desire most.

After a season of isolation and navigating a tough divorce, I have emerged with a vitality and readiness that mirrors the heart behind our latest issue. Many spiritual traditions celebrate summer solstice and summer season as a time of vibrancy, when darkness is at bay for a while and our inner and outer world comes alive. I call it the season of the three C’s. More present this time of year than in other seasons (it seems) are: connection, creativity and compassion. In our latest issue, we touch on all three.

Connection. Summer is a time to get outside, to pause work and hit the road, to gather friends and family around the fireside. Each piece chosen for this issue has connection at its core. Whether it’s beautiful places to travel that inspire greater connection to ourselves and this planet, tips on how to piece together a summer dinner party for greater connection to the people we love most, or local, mindful purchases that make room for greater connection to the community we are embedded in. At the core of our entire mission at Trending Northwest is a desire to make our big world smaller, not via the phones in our hands, but by real-life interactions and exploration. Our latest issue inspires just that.

Creativity. There’s just something about the sun— am I right? When it hits your skin you feel reborn, energized, ready to do things you’ve had

in your mind to do for a while. May the experiences brought to you by Trending Northwest contributors cause you to remember the things you once loved, that you can love again, or give you the nudge you need to say “yes” to whatever thing your soul is reaching towards this summer. When you open the pages of one of our “Top Summer Reads” or book one of our “Top Northwest Stays,” we believe the creative energy will start flowing, because baby, the best is yet to come! And it requires getting outside of our comfort zones to see it.

Compassion. This “C” is less self-explanatory, so let me clarify— In this season, we must have compassion towards the things we cannot carry into our next. As we yield power from the sun and explore both inwardly and outwardly, we will become better connected to ourselves and the world around us. We must have compassion for the things that we need to put to rest— permanently, the things holding us back from a zeal for life expressed in this issue. As the summer begins to cool into fall, like us, we hope you’re self-reflecting and extending selfcompassion towards the things no longer serving you.

Here’s to the release of old patterns, to the bravery needed to embrace new possibilities, and to the full-color life we truly deserve. To us. To you.

Capturing The Value In Each Person

What They Love Most

I hadn’t met Tess Farnsworth before, but I knew the moment she walked in that she was the woman I was looking for. Dressed in high waisted, wide-legged denim and a tucked in red and white striped shirt, she looked as if she’d popped out of the early 1930’s when denim for women first appeared.

This was the same era Tess drew her inspiration from for Trending Northwest’s summer issue cover photo shoot. I told the model, “think Amelia Earhart with a modern flare,” Tess shared with me.

After ordering us coffee and pastries from Dear COCO, an adorably quaint spot on Main Street in Spokane that reminds me

more of the Manhattan café scene than what I would find in the Pacific Northwest, we snuggled into a corner to talk about the evolution of Tess Farnsworth photography.

“I have always been creative,” Tess told me. “I drew for a really long time when I was a kid and music has always been a really big part of my life.”

When a job suddenly ended for Tess, she decided to take a couple of months off, during which she traveled to visit her brother in Brooklyn, New York.

“I wanted a nice camera to go,” Tess shared. “I just bought a little point and shoot a little bit like a Canon PowerShot.” Tess’ brother, a videographer, taught her what he knew and it instantly sparked a love for photography in her. “Then, I just started teaching myself…It kind of became therapy for me,” Tess shared.

When approached to shoot our cover, Tess had the perfect backdrop in mind. For our fashion and travel issue, she borrowed a friend’s hanger and vintage Cessna 172 airplane. Tess called on local model, Suheyla Tanak, who she’s been shooting for a few years. She sent Suheyla the look for the shoot and the 21-year-old model already had everything on hand. “And then my black aviators… they just really sealed the deal,” Tess shared.

When I asked Tess where she sees her business going, she shared that she’d love to land in the branding and editorial side of photography. “I very much love the editorial, creative stock shoot,” Tess said. Tess is constantly learning and dissecting photos from other photographers to identify things like light source and what it is she likes about each

photo. Tess is a big fan of Anna-Lou Leibovitz, an American portrait photographer best known for her celebrity photos. “Her photos are so interesting,” Tess shared. “She only uses one light source.” But her favorite photographer of all time is Vivian Maier, an American street photographer whose work was discovered after her death.

For the last few years, Tess has been shooting a monochrome series. “Technically monochrome would be like black and white, but I've taken colors like red, green, orange, yellow, blue, black, white— I just did magenta— and everything my models are wearing is that color,” Tess said. “It’s just shades of the color. So it doesn't necessarily matter how things match or go together. It’s all about the color. That has been really fun, really amazing.”

Even though Tess is used to working with models who are naturally more comfortable in front of the camera, she still sees her position as a position of service, a position of empowerment. “Just like reminding them that they're beautiful, and that they have value. I bless them,” Tess shared with me.

“It’s so hard to be in front of a camera, especially as a woman. You’re immediately thinking about all of the things you don't like about yourself,” she said. “You have to work really hard as a photographer to get somebody out of that mind space, because that internal monologue… it does translate.You will see it in a photo.”

Tess’ favorite part of the industry is helping people breathe easier and grow comfortable with how they’ve been made. Model or not, branding or portraits, photography is a ministry to Tess that she plans to grow.

Whether you're looking for fun with friends, loved ones, or the whole family, here are some of the best places to go.

MULTNOMAH FALLS

Located right off of I84 near the Columbia River lies one of Oregon’s most treasured and soughtout adventures: Multnomah Falls. With so many different waterfalls and hiking trails, it’s hard to just pick one. Get ready to make the ¼ mile trek to the famous Benson Bridge, for the most incredible views of the Multnomah waterfall, known as a widely popular touristy spot and the perfect place to capture a sweet picture or two. For the more adventurous people, this park has a variety of different hikes all over, ranging from expert 5.6 mile long hikes, to the moderate 2.5 mile long hikes. Multnomah Falls Lodge is located at the main entrance and jam-packed with exciting opportunities such as fine dining and shopping. This place has all you need and more for the perfect family trip, complete with riveting views of different waterfalls, viewpoints, and nature at its finest.

LIONHEAD NATURAL WATERSLIDES

Located in Bozeman Montana, the Museum of the Rockies covers a variety of historical treasures such as dinosaur fossils (including a full T-Rex skeleton!), a planetarium, and a rotating diverse range of different artifacts and topics throughout each year. With so much amusement and literature in one place, you will never get bored here. The museum offers a wide array of events and classes each month, too, so be sure to check back occasionally for more.

One of my personal favorite adventures here in Washington is the Northwest Trek, an experience that is unmatched from anything else. Get an up close and personal with over 40 different species of animals, from bears to birds, and all the buffalos and wolves in between. Take a walk through the park on self-guided paths, or hop in a car for a premiere tour with personal expert guidance and some extra special stops like the Elk bulging, or going off road to get up close to hear the bison bellow. When you're done? Grab a bite to eat at the Forest Cafe, and then go play on the Kids Trek playground! Within Kids Trek, children have the opportunity to engage with nature on their own terms, discovering its values and fostering an appreciation for nature through this enjoyable experience. Northwest Trek makes for the perfect family trip.

MICA MOON ZIP LINE

This adventure is so close to home, it's practically in our backyard! Discover the unparalleled thrill of exploring nature from an elevated perspective. Mica Moon Zip Line is located in Liberty Lake, where Washington and Idaho meet in the middle. When you visit Mica Moon, you enter an exhilarating experience that sends you soaring over vast forests and trees overlooking our gorgeous Inland Northwest. Let go of your worries and stress, and go explore this outdoor playground. With an aerial climbing park, bridges, climbing walls and tight ropes, there are so many options to choose from when it comes to creating your perfect quest. These zipline tours have over 9 zip lines and breathtaking views at the top. Mica Moon is the perfect outdoor adventure for date night or with friends.

HIKING IN GLACIER NATIONAL PARK

Going to the Sun Road

West Glacier, Montana

Okay this one should be on everyone’s bucket list of adventures, just look at these views! Glacier National Park is absolutely stunning and has some of the most breathtaking sights all over the park, even in parts you wouldn’t expect to find them. Whether you just go for a day hike, or you decide to backpack through the mountains to the campgrounds, Glacier National park has so much to see and explore. Hiking trails can range anywhere from easy, moderate, incredibly hard. There are flat trails, bumpy trails and strenuous inclined trails. Make your way to the very top, or make your way to the deep below. Anywhere you go in this park will spark a fire in your soul that is nothing compared to what you’ve felt before, and you will feel such a deep connection that will make it hard to ever want to leave. It’s difficult to find words to describe the beauty inside Glacier National park. You’ll just have to go see it for yourself.

STONEROSE FOSSILS

15 North Clark Avenue Republic, Washington

Are you looking for an adventure that is not only fun but also educational? Then this is perfect for you! While doing some research for a different project, I accidentally stumbled across this gem, and boy was I happy I did! Located in Republic, Washington is the Stonerose Fossil site, complete with a museum and information center where kids and families have the chance to dig for their own fossils and learn about structures from over 50 million years ago. The museum is free to the public and digging for fossils is impressively affordable, with a family day pass at only $35 for 4 people. Kids are suckers for getting down and dirty, especially when there’s “hidden treasures” to be found! When you're finished digging, take a tour in the museum to learn all about fossils, and swing through the gift shop to purchase goodies like handmade jewelry from Poland, specialty souvenirs, and fossils of all shapes and sizes. Take a day trip out to Republic and spend your afternoon at StoneRose Fossils, educating yourself on the importance of fossils, and how they came to be.

OREGON CAVES IN OREGON NATIONAL PRESERVE

19000 Caves Highway Cave Junction, Oregon

Another one of my favorite places to explore is the diverse and remnant caves deep inside the overgrown forests of the Oregon National Preserve. This park has three different hiking trails throughout the forest leading to the entrance of the caves, making for a day full of exploration. While free to enter and open all year round, you will need a reservation for a ranger-guided tour to enter the caves. But don't fret! There are so many different options listed online for cave tours. From kids and familyfriendly tours, to off-the-beaten-path tours, to adoring candlelight cave tours- there are so many exciting ways to see Mother Nature’s million-year-old dens. Learn all about these crazy formations and how they came to be, while also spending time with loved ones and bringing out your inner wanderer.

From the young at heart to the young in years, these are some of the most unforgettable adventures in the Inland Northwest, just waiting for you this summer season! Have an adventure, get active, and get ready to make lasting memories in our beautiful corner of the world.

The Best

Mountain Bike Rides

in Sun Valley, Idaho

Sun Valley and the surrounding Wood River Valley are home to over 400 miles of bike-accessible singletrack, making it a great destination for avid mountain bikers or just those looking to try something new!

Whether you’re into steep, technical rides or something a little more beginner-friendly, there’s a bounty of every type of trail for every experience of rider. You certainly won’t be able to tackle it all in one vacation—or even one lifetime—so we’ve assembled a list of the best mountain bike rides in Sun Valley, Idaho.

Beginner Mountain BikeRides in Sun Valley

What’s considered “beginner” in Sun Valley may be more intermediate in other areas, but these are certainly the easiest mountain bike rides this area has to offer. Newbies can’t go wrong starting at White Clouds. Located in the Sun Valley Resort proper, the White Clouds area offers three looping varieties on one trail, with the shortest being just under a mile and the longest 2.7 miles.

If White Clouds is feeling a little too easy, the next step up is Corral Creek, a great ride for bikers of all levels. Corral Creek starts at the Trail Creek Trailhead and is 2.7 miles each way for an out-and-back ride that winds through open sage and traverses dense trees.

The Adam’s Gulch area is located just north of town and accesses numerous trails, the easiest being Shadyside as an out-and-back ride. If you begin in the parking lot (rather than connecting to Adam’s through Wanderer’s Way or Lake Creek), the ride is just 1.6 miles each way, with limited climbing and great shade for hot days.

Intermediate Mountain Bike Rides

For those bikers who want to stay in town, the 32 miles of liftaccessed mountain bike trails on Bald Mountain are a great option. A day lift pass for children (3–12) and seniors (65+) starts at $35, while adult passes (13–64) starts at $50.

There are nine trail options once off the lift, all of which demand excellent control while speeding downhill—hence the “intermediate” rating. A pass is good all day, so if doing downhill laps is your thing, gear up! Try Mindbender, a 3.5-mile freeride trail with jumps and berms.

If pure downhill isn’t your game, there are lots of other options for the intermediate rider. North of Ketchum, try Fox Creek, a 6.8-mile (roundtrip) local favorite that offers beautiful views, pretty wildflowers, and a riverside section that follows the edge of Big

Wood River. Be aware, for mountain bikers, this ride is one-way, counter-clockwise.

Head mid-Valley (between Ketchum and Hailey) to Greenhorn Gulch to Cow Creek (4.1 miles roundtrip). Don’t be fooled by the short mileage: this trail is one of the lesser-used trails in the area due to its rocky nature. Mountain bikers should be adept at handling rough, technical terrain before riding this one. This trail is also great to combine with many others in the Greenhorn area to make for longer rides.

Head south to Hailey’s Croy Creek trail system, home to eleven trails, including Two Dog loop (7.3 miles roundtrip). This fun and flowy trail gives great views of the Pioneer Mountains and can easily be combined with other trails into a longer loop.

Advanced Mountain Bike Rides

In Sun Valley, there’s advanced mountain bikers and then there’s ADVANCED mountain bikers. Harper’s Trail is for those who fall in the former category. There are numerous ways to link up to this trail, but the simplest is to park at the Lake Creek trailhead and ride it as an out-and-back. Though it’s only 2.9 miles each way, the trail is entirely uphill and gains just over 1,000 feet of elevation.

Imperial Gulch is accessed mid-Valley from Greenhorn Gulch and gains 2,199 feet of elevation over six miles. It climbs steadily through rolling terrain along the north side of the Deer Creek divide and offers beautiful views of the Pioneer Mountains. There are a few moments in the trail’s climb that offer brief breaks—very brief—but this ride isn’t for the faint of heart.

Picnics in the Pacific Northwest? So dreamy!

At least they can be if you understand there’s an art to it. It takes more than a blanket and a basket to make your picnic in a park movie scene dreams come true.

Spokane, Coeur d’Alene and the surrounding areas have wonderful public parks for the picturesque backdrop you’re looking for, and both cloudy days and sunny skies make for a beautiful summer picnic.

The art of picnic-ing is the perfect hobby to take up now that the days are longer and the weather is warmer.

Audubon Park

Covered by pine trees, Audubon Park’s canopy creates the perfect shaded areas for picnic-ers and park goers to enjoy. Hosting a Memorable Dinner Party S U M M E R

There is no better feeling than food and drink set before you all in an act of love and friendship. Food, curated intentionally to look beautiful, spark hunger and bring nourishment in a setting that shows its guests they are deeply worth someone’s time and energy. It is quite special.

I don’t think anyone is immune to the lovely and lingering effects of a fantastic dinner party in an intimate setting at a table of good company. Though it takes a bit of a Joie de Vivre approach, hosting a dinner party like this is easier than it seems. Let me help you with these simple guidelines.

Forming Your Guest List

The guest list — consider its size by the dynamic you prefer. I recommend looking at your dining room table, or whatever table you’re wanting to host these humans around. The amount of people that can fit around your table comfortably is your guest list cap. Have some people in mind you’d invite as well if anyone from your guest list can’t make it.

Think dynamic. Choose who you're most enthusiastic to host. Whether it’s your innermost circle of close friends, couples, or the valiant choice of bringing interesting people in your life together that don’t yet know each-other. Once you’ve chosen the party dynamic you’re most excited about, you’ve got your most important decision dialed in. The people you choose to bring together at this table are the best and most valuable part of your dinner party. I regularly host my closest girlfriends for dinner. It is a beautiful way that I show them I love them.

Ambience Matters

Ambience — It’s the other best part. Important elements here are music and lighting. Low and flattering lighting is vital to creating an intimate setting where the best kinds of stories are told and people feel comfortable enough to ugly laugh, ya know? Think lamp lighting, dimmers, candles (love tapered ones for a table setting), patio string lights if you’re outside, even those battery operated small table lamps you can buy on Amazon are perfect. Even better, layer several of these lighting options for the best effect.

Music— make it easy. Choose a Spotify artist “station” that will give you a variety of similar songs on an endless playlist that sets the mood you love, all while keeping your specific guest list in mind. I’ll often put on Otis Redding Radio, Louis Armstrong Radio, or something classic like that. Grab a bluetooth speaker that’s small so you can put it anywhere. (Marshall makes a great one.) Charming music will fill any potential silence with continual enjoyment, and it won’t feel abrupt.

Setting your table with candles, florals, or even just greenery from your yard in low height arrangements does the trick! Invest over time in some vintage glassware, platters, candlesticks, or dinnerware you adore as well. Once you start collecting things, the prep will only get easier - and be more fun! That said, do not let your imperfect dining setup, low budget, or ongoing house projects stop you from hosting. On multiple occasions, I’ve used sawhorses or even Tupperware storage containers with plywood on top and a long linen tablecloth that drapes to the ground. I’ve decorated with my collection of vintage disco balls at times and confetti from previous events that I’ve thrown on the table between candles. Just go for it, Make it work simply from what you already have.

Choosing Your Menu

Choosing a menu that is dinner party-friendly is tough. My biggest tip here is choosing items that offer flexibility and forgiveness. Keep it simple, my friend. No individual steaks or finicky dishes. There are way too many stunning entrees and sides that don't require you stressing as your guests arrive. I once made mushroom and herb risotto for a dinner party and for the entire hour prior to serving, I was quite literally sweating and stirring that pot of risotto. I was barely able to talk to guests without sounding frantic. I couldn’t pour them wine or even put lipstick on before it was time to serve dinner. If you can think of anything you are truly comfortable making, choose that.

Choose a way to garnish each plate. You can use herbs or lemon zest, whatever you think is best, and have that ready to go in advance. Choose one appetizer that you make ahead of time as well, and then one that requires no effort (like marinated olives). For cocktails, my party trick is to premix the drink/cocktail and serve it in a pretty decanter, pitcher, or a drink dispenser without ice (and without liquor). Then, at your “bar,” have an ice bucket, the liquor(s) for your chosen cocktail and a garnish, if necessary. Each guest can mix a virgin drink, a single, or a real stiff drink at their leisure. It’s beautiful, easy, and lets you focus on socializing. Alternatively, wine— this is the easy button no one is ever upset you pushed.

In my experience, the dinner parties for the books have been the ones with informal food served in a beautiful way. Be inspired by your unique strengths as a host. Approach this evening knowing your home is special to you and to your guests, as are YOU. You are unique, and so is the food you choose to make, the drinks you choose to serve, the music you love to play and the setting you provide for these memories to be made. Keep those lights low baby, use the pretty tapered candles and let them drip on the table, create a beautiful setting, and invite them in— the people you love most. You’re just a few simple steps away from hosting an absolutely stunning summer of dopaminefilled dinner parties, my friend.

5 Beautiful Summer Hikes in Western Washington

As a born-and-raised Washingtonian, I’ve spent a decent chunk of my life trekking the region’s trails. In my work as a travel writer, I’ve visited 26 countries and can confidently say that the looming peaks, roaring waterfalls and verdant paths of the Pacific Northwest are some of the most beautiful in the world. One of my top tips for visitors

coming into the region is to pencil in a hike to see this natural beauty up close. And for those who are local and in need of some inspiration, I’ve got you covered, too. Here are the five most stunning hikes in western Washington for your summer enjoyment.

Talapus and Olallie Lakes

The most iconic and popular day hike from Seattle is Rattlesnake Ledge, but keep in mind – the trail is very crowded during warmer months. Another great route further east on I-90 in the Cascades is the Talapus and Olallie Lakes Trail. The 6.2-mile long hike makes the 1,220 foot gain in elevation a gradual climb.

You’ll reach Talapus Lake first, about 4.5 miles in. On some August mornings, fog can lay in to create a spooky scene. Take a snack break here or continue another mile and a half to Olallie Lake. Both benefit from fewer visitors and more

shade than other more-frequented hikes. At both lakes, the trail remains well above water in most spots. In order to access it, you’ll need to work your way down where there aren’t obvious clearings.

The one downside to this path is that once you exit the freeway, the road is windy and in some spots unpaved for a few miles. If you have a newer car or don’t enjoy uneven drives, you should keep that in mind.

Oyster Dome

Bellingham is a great weekend adventure in western Washington. For the best views in the area, hike Oyster Dome. Named for the historic oyster harvesting area it overlooks, the 5-mile (round-trip) trail only gains 1,050 feet, but in just 2.5 miles of climbing. And, a lot of that is done at the start.

However, your prize is a panoramic view of Lummi Island, the San Juans, Samish Bay, Vancouver Island and the Olympic Mountains further in the distance. The peak is a rocky flat overlay with steep edges, so keep kids and dogs close by if along on the hike. Be sure to check the weather before

you head out, too. There’s nothing worse than having views shrouded by clouds, which happens often in this corner of the state.

Additionally, keep in mind there are two access points to the hike. The Samish Overlook parking lot is the official route’s starting point. But, parking is limited and the road is rough in spots. If that doesn’t sound fun or if you’re worried about space, there’s an unofficial trailhead off Chuckanut Drive. Just look for cars parked on the side or search “Oyster Dome” in your go-to GPS app.

Diablo Lake

Commonly referred to as the “Caribbean of Washington,” this section of the North Cascades is blindingly beautiful. Gatorade-blue water fills the lakes which can be viewed at numerous points along the Diablo Lake trail. You’ll start from the North Cascades Institute parking lot and follow the trail through the forest. There are plenty of points to pull over,

Bridal Veil Falls

A lesser-frequented trail off Highway 2, this is a great day hike along the Mountain Loop Highway. The well-maintained forest trail has plenty of steps and foot ladders to help you even on the muddiest summer day. You’ll start on the same trail as Lake Serene (often the culprit for large numbers of cars in the parking lot), then 1.5 miles in, you’ll keep right at the fork.

At 7.6 miles long with 1,400 feet of elevation gain, it’s a great, challenging summer hike. And since portions of the North Cascades Highway close during the winter, this is the best time to visit the remote park.

Lake 22

If you’ve ever searched Instagram for outdoor and hiking inspo in the region, chances are you’ve come across Lake 22. The 5.4-mile long (round trip) hike starts under a lovely tree canopy that eventually reveals a stunning alpine lake. You’ll gain elevation gradually, but never too quickly except for the rocky portion right before you reach the lake, which can be slippery if foggy or rainy, not uncommon in this temperate rainforest. At the top, picnic before descending, or follow the

well-maintained loop that allows you to see the water from various vantage points.

Not only is it a trail best hiked during summer months, it’s often the only time you’ll be able to. This part of the Mount Baker-Snoqualmie National Forest has numerous avalanche warnings during the winter, so it’s recommended to avoid it during those months.

Onthe outside I project a sunny, smiley, agreeable persona, but this is all a ruse, a way of staying safe in a world I find inherently dangerous. Inside I’m a shadowy, gloomy, witchy swamp of a person. While the term “beach read” usually conjures up cheerful, light-hearted fare, you’ll likely find me splayed out on a towel clutching a horror novel or a dystopian fantasy. Amusingly, my summer reading descends—as it does all year—into despair. It’s what my interior witch needs, I guess.

Doing reader’s advisory at indie bookstores and the public libraries has shown me that everyone has their own version of an ideal beach read. I love the infinite variety of our reading tastes. No two people have the exact same pile of books next to their lounge chairs, and that’s pretty dang cool. The more stories told and devoured, the better.

With this in mind, here’s a summer reading list for a whole host of disparate readers, from those who love happy endings to those who prefer doom and gloom, and everything (almost everything) in between. The first in the series tells the story of an Orc Barbarian named Viv who decides to put down her warrior’s blade and open up a coffee shop instead.

Jo Segura’s “Raiders of the Lost Heart” Northwest author Jo Segura’s steamy romance novel, set in an archaeological site in Mexico, has been called a “thrilling adventure” by Entertainment Weekly. It is “Romancing the Stone” meets “Indiana Jones,” the digital magazine said, perfect for beachgoers who love an enemies-to-lovers tale.

For history buffs (and anyone who adores historical fiction)

“After Sappho” by Selby Wynn Schawrtz

I loved this novel, both for its unique form and its fascinating storytelling. It centers the history of iconic queer women (including Virginia Woolf, Isadora Duncan, Gertrude Stein, and many, many more), and how their lives intersect and converse. What a literary gem.

“The Heaven and Earth Grocery Store”

This larger-than-life novel is set in Pennsylvania in the 1930s. It details the struggles and compassion of the people in a neighborhood called “Chicken Hill,” home to Black, Jewish and immigrant communities. The story begins with the digging up of a skeleton in 1972, and then plunges into the past and the lives of its richly drawn characters.

“Yellowface” by R.F. Kuang

Maybe I loved this book because I’m a novelist, but this was definitely one of my favorite reads of 2023—a vicious takedown of the racist microaggressions (and macroaggressions) within the publishing industry. The narrator is an entitled, mistaken beast. It’s a blast to read her unreliable take on the literary heist she attempts, stealing the novel of a “friend,” a renowned Chinese American writer who chokes to death in front of her.

I’m currently reading this novel and am just wowed by it. Understanding the ins and outs of credit scores is a crucial step towards financial wellness. In this article, we break down everything you need to know about your credit score, from who decides your score, how to check it, what impacts your score and what steps you can take to boost it.

Why Does Having Good Credit Matter?

Many areas of life from lending to employment benefit from good credit. Having good credit improves access and lowers cost for borrowing, housing (renting and buying), transportation, insurance, and more. Applying for a loan or credit card to finance a purchase is essentially asking a lender to trust that you’re going to pay them back according to the terms you agree upon. Landlords, insurers and employers often use credit information to filter out applicants they may deem too risky. While it may not seem fair in some cases, lenders often see your credit score as a sign that the rest of your life is well managed and that you “take care of your business.”

What is a Good Credit Score?

Credit scores range from 300-850. This is the breakdown:

Excellent (780-850)

Good (660-779)

Fair (600-659)

Unfavorable (500-599)

Deficient (300-499)

Aim for a credit score in the Excellent or Good categories. The better your score is, the more access you will have to lending opportunities and the less you will end up paying in interest. If your score is not looking too sunny, don’t fret. Keep reading for helpful tips on how to boost your score.

Who Decides my Credit Score?

In the United States, there are three credit reporting agencies: Experian, Equifax and TransUnion. Each reports and calculates your score differently. Financial institutions like credit unions and banks each use one of those reporting agencies and sometimes their own scoring models.

Over 200 credit report factors may be considered when calculating

a score, and each model may weigh credit factors differently, so no scoring model is identical. This means, two different financial institutions could give you a different score. Or, if you go to two different websites to check your credit score, you could get slightly varied answers.

How to Check Your Credit Score

One of the easiest ways to check your credit score is by going online through one of the credit bureaus: Equifax, Experian and TransUnion. There are other free websites that will check your score (CreditKarma for example). Just be wary of who you give your personal information to. Pro-tip: if a website is asking you to pay to find out your credit score, opt for other options as there are so many free ways to find out.

What’s the Difference Between a Credit Score and a Credit Report?

While searching for your updated credit score, you might find information on your credit report. Your credit score is a numerical rating based off of the findings of your credit report which is a detailed record of your entire credit history as compiled by the credit bureaus. This report includes information about your credit accounts, payment history, credit inquiries and public records. Your credit report is used when lenders are evaluating applications for credit. Each year, you are entitled to a free copy of your credit report through annualcreditreport.com. It is wise to review your credit reports each year to make sure everything is correct.

What Makes up a Credit Score?

Your credit score is calculated by the credit reporting agencies with five factors. Each factor is weighed differently between the bureaus

to make up the total score, with some factors mattering much more than others. The percentage breakdown below reflects the credit scoring model that Canopy Credit Union uses from TransUnion.

Payment history – 40% of your score. Your history of on-time payments is the most important factor that makes up your credit score. Don’t be late. Don’t miss payments. Setting up automatic payments can help with making sure you are always on time.

Credit usage – 23% of your score. Credit utilization is based on the overall amount of money you’ve spent on your credit cards or accounts that have credit limits. In order to look “less risky” to lenders, don’t use more than 30% of your total available credit across all your accounts. Doing so may indicate that you’re dependent on borrowing or simply overspending based on your income and ability to pay back. Pay down balances as much as possible each month. To keep within under 30% utilization, pay off cards multiple times a month or spread payments out on a variety of cards.

Example: Alex has three credit cards. The first card has a limit of $1,000, the second a limit of $2,000 and the third a limit of $5,000. Together, her available credit is $8,000. To make sure she stays under a 30% utilization for her $8,000, Alex pays off her cards if she gets close to or above $2,400 in combined purchases across her cards.

Credit age – 21% of your score. The longer your credit history, the more data is available to show creditors that you’re a good risk and you’ve proven it over time. Keep any credit cards you have active by making a purchase on each one every few months. Inactive accounts might be closed by the lender, which can reduce your average credit age and lower your credit score.

Account mix – 11% of your score. Maybe you’re paying a mortgage, have paid off an auto loan and pay off your credit card balance each month. The ability to manage a variety of types of credit adds points to your score.

Inquires – 5% of your score. Creditors checking your credit before making a lending decision can hurt your scores. It’s usually temporary but can cause your score to fall a few points. Wait at least 6 months between hard credit inquiries. Soft credit pulls (like checking your credit score on a free website) does not affect your credit score as it is more of a guess rather than a precise number.

How to Boost Your Credit Score

Now that you know what all goes into a credit score, it is smart to evaluate your own and see where you can improve. Run through these tips to make sure your credit report is squared away.

Set a reminder to check your credit score frequently. It’s a great place to start. Knowing where you stand can help you create a game plan.

Make sure to recognize any trends with the amount of credit you utilize so you can adjust your habits. After large purchases that put you over the suggested 30% utilization rate, make a point to pay off your card quickly.

Keep up with payments. It’s the most important factor, and it will help your credit score see upward growth.

Only apply for new accounts as needed. Opening up too many accounts at once can hurt your credit score.

Maintaining a healthy credit score can mean better access to the credit you need, when you need it. Taking smart steps to improve your credit will put you on track to financial wellness.

Sean Astin the hobbit with a heart of Gold

In episode 100 of the Trending Northwest podcast, we had the privilege of interviewing actor Sean Astin, a true cinematic icon known for his roles in beloved films such as "The Lord of the Rings," "The Goonies," and "Rudy."

Beyond his impressive filmography, Sean's genuine dedication to humanitarian causes and mental health advocacy showcases the depth of his character, earning him the moniker "Hobbit with a Heart of Gold."

Sean's charitable endeavors are deeply inspired by his mother, the legendary actress Patty Duke. He has continued her legacy by actively supporting organizations like the Women Helping Women Fund in Spokane, which aims to empower and support women in the community. During our conversation, Sean revealed how eastern Washington served as a sanctuary for his mother amid the pressures of Hollywood.

“My mom was an outspoken advocate and activist for mental illness," Sean shared. "She was all about de-stigmatizing mental illness and promoting mental health." He noted that his mother’s openness about her condition, bipolar disorder, inspired many, and that he has taken up the mantle to continue spreading awareness and support.

Sean Will Continue to Work With Organizations Associated With His Mother

Throughout the interview, Sean’s passion for mental health awareness shone through as he candidly discussed his own experiences and the importance of breaking the stigma surrounding mental illness. Sean’s involvement with various mental health organizations across the country is a testament to his dedication to this crucial issue, and to his mother. “There are many organizations around the country that are asking me to come where my mom spoke,” he explained. “I’m meeting all these people who’ve interacted with her, and they show me pictures and talk about her experience there.”

For over 32 years, the Women Helping Women Fund has grown from a simple fundraising luncheon into a powerful collective giving organization. 2024 we’re loving for (on any budget) Fashion Trends

I’ve got to be honest, as a plus-sized woman, summer fashion used to be a bit of a struggle for me. Tis’ the season for short shorts and tank tops and in the plus size fashion world: florals galore. Don’t get me wrong, I will happily rock a beautiful floral, but I was pumped to see what’s trending this summer season. Not only are so many of these fashion trends styles I already love, they are easily executed with many finds for every body and any budget.

Fringe

The classic flapper-style tassels are back, and they are beautiful! Whether you’re a Nordstrom girlie or a thrift store babe, you’re bound to find something you will love. Fringe brings movement to your outfit and can make that everyday tank top or pair of shorts so much more exciting. My first favorite find for the season is a maxi dress from Torrid (pictured). I paired it with another item that I’m thrilled is also trending this summer season.

Racer Jackets

While I normally reach for a lightweight denim jacket in the summer and am honestly married to my moto jackets, I am never upset at a different jacket style trending. As seen on Victoria Beckam, Kendall Jenner and Jacob Elordi (just to name a few), these fun pops of color bring in the summer vibes. This trend will easily last into the fall, which is a double win in my book.

High Rise Trousers

Classic pieces and styling is the trend I’m seeing most reported this season and this one is perfect for every budget. From high end to the thrift store, you’re sure to find this classic piece around town. My favorite way to style my high rise trousers is with a graphic tee for a more fun casual twist.

Bold Graphic Prints

As a fan of 90’s fashion, I’ve been on this vibe for a minute. Checker prints and smiley faces are some of my favorite prints at the moment. If you think this trend might be for you, I highly recommend checking out Dressed In LaLa (available at Nordstrom and on the store’s website up to a 3X.) From two piece sets to the cutest oversized cardigans, I know this trend will be everywhere next fall as well, and I think it’s my favorite.

Roses and Bows

Roses seem to be popping up left and right this spring (no pun intended) and will continue through the summer on the clothes we wear. This trend is so versatile. You can rock it loudly or with subtle detail. And bows? They’re still everywhere this year, too, and I just love them! Both of these options add a pop of feminine flare and can be as simple as a hair clip or ribbon.

While these are just a few of my personal favorite upcoming trends, there are also themes of all white outfits, short shorts and mesh everything to look forward to this summer. Don’t be afraid to mix and match what feels right for you and wear your best outfit to Target on a Tuesday because life is too short. You deserve to be the main character babe!

Most don’t know that Vancouver Fashion Week is the second largest show in North America. When we think fashion, our minds normally go straight to New York or Los Angeles. After our team’s impeccable experience with the cuttingedge, inclusive designers of Vancouver Fashion Week (VFW) in April, our minds now travel to our neighbors in the north.

Trending Northwest was honored to be invited to attend the Fall/ Winter show. Our team was blown away by the quality, diversity and

accessibility of each piece. We connected with beautiful, creative minds and left the event inspired and changed for the better. From our perspective, it’s easy to see why Vancouver Fashion Week is second only to New York’s and is the fastest growing fashion week in the world.

VFW was launched in 2001 by Jamal Abdourahman and has since grown to include a Kid’s Fashion Week, two magazines and the Global Fashion Collective which produces shows at New York Fashion Week, Paris Fashion Week and Tokyo Fashion Week.

Diversity, Accessibility and Inclusion at Vancouver Fashion Week

The designers showcased Canadian natives, but also talent from across the globe. Our team loved seeing labels in their infancy stand toe-to-toe with well-established brands. There was a veritable feast of everything from street wear to haute couture and avantgarde.

Like Trending Northwest, VFW is founded by a team passionate about inclusion. This manifested itself in a wide range of styles, body types, skin colors, heights, genders, and even price ranges. We were pleasantly surprised to learn that the beautiful pieces we saw traveling down the runway in all of their glory were available in just about any size and could fit into just about any budget.

If you’re wondering if the laudable principles and high standards extend beyond the flashing lights and sound bites, you can thank Jordy Jones, our resident journalist, for securing the inside scoop. Jones chatted with one of the models after the show to ask about the behind-thescenes experience at Vancouver Fashion Week. Without hesitation, she shared that “the energy backstage” and the cast were “really supportive.”

Fall 2024 Fashion Trends

So, what fashion trends can we expect to see this fall and winter? What do the fashion gods have in store?

Well, we noticed some clear trends on the runways, but they weren’t what we expected. We ascertained that green is continuing to have a moment and that knitted and crocheted items are experiencing a renaissance. However, we were taken aback by some very bold, very socially-driven trends.

Gone are the days of a clear divide between the ready-towear and the high-fashion elite. Vancouver’s runways were full of beautiful contradictions that dismissed boundaries dividing gender and socioeconomic status and lifestyle.

Although diversity was the name of the game, and the designers each brought their unique style to the table, all seemed to find unity in their commitment to flexibility, accessibility and practicality as a means of avoiding fast fashion. If VFW is any indicator (and we believe it is), we see a future where consumers like us are not forced to support fast fashion, where the average person can curate a

collection of high-quality pieces without mortgaging their futures.

We saw an abundance of beautiful, androgynous pieces and concluded that this is yet another way that inclusion is bringing practicality to the fashion world. Even in the haute couture lines, we saw pieces with wide application and accessible pricing.

embodied the themes, trends and spirit of the show. De La Croix explained to Jones that this collection “was a juxtaposition between abstract geometry and wearable” and that “a lot of it was inspired by art and design.” Thus the line married abstract pieces with the realistic. De La Croix described their ideal client as a powerful, contemporary traveler, noting that, as a Mexican immigrant, making folks feel comfortable and powerful is of utmost importance.

Our new favorite Canadian influencer Deniz Sinaki summed up our team’s experience perfectly: “Fashion Week is really where people can express themselves–their true selves.”

It goes without saying, but I’ll say it anyway: Vancouver has earned its place as a fashion capital, and Trending Northwest cannot wait for the next show!

The external standard of beauty changes constantly. In my lifetime, I’ve seen the standard swing from extreme to extreme while the human form hasn’t changed. There was a time I thought beauty meant long, bleach blonde hair, a tan and (trigger warning) a thigh gap.

Then, thanks to JLo, Beyonce and the Kardashian clan, we all wanted thigh meat, a booty and a waist-long brown mane. In rebellion against an ever-evolving and never realistic external standard of beauty, some of us abandoned all attempts to keep up, viewing those efforts as acts of self-abandonment. And I’m so glad we did.

The older I get, and the more progress I make in my healing journey, the more I refine my understanding of beauty. Where beauty and its pursuit once felt like a violent battle, it now feels more like gentle acts of self-love. I now view beauty as a manifestation of love, and a sign that my body is functioning so optimally that it has extra energy for things like hair and skin.

When I care for my organs and my brain, I feel beautiful. When I pay attention to what goes into my body and ensure that my body has plenty of good fuel, I feel beautiful. When I grant myself rest and quiet, I feel beautiful.

Beauty products are no longer bandaids or means of correcting flaws. They are tools for self love and all-over health. What we put on our skin and hair and nails affects our internal organs and our microbiomes and our community and our planet. Finding gentle, non-toxic products that work for us and our goals, that also support our local economy, is vital to true beauty and true health.

Luckily, we have a wealth of resources here in Spokane. I’ve compiled a list of my favorites for you to explore. These five brands define beauty in ways that support well-being, and never take from it. I’ve highlighted some products for you to try and enjoy as well as documented some of my interview time with each.

Bee You Organics

When I walked into the Bee You Organics headquarters from the bustling street of Spokane’s Perry District, I gasped. I knew I was in for a treat when I pulled up and saw a garden out front, but I was ill-prepared for the grandeur of the retail space. The high ceilings and open space make it feel so sacred, so I wasn’t surprised to learn that the building is owned by the temple next door.

I floated between the beautiful displays asking questions and soaking up the wisdom of Tiffany, the story manager, who is one of the most knowledgeable and earnest people I’ve ever met. If you’re even a little crunchy or even a little into beauty or skincare, you’ll need substantial time to check out each product and learn of the consideration that goes into the creation and packaging. (I love that they are almost plastic-free!)

I was blown away by the quality, smell, and how everything FELT on my skin.

Tiffany listened to my needs and goals and helped me pick out a smorgasbord of products catering to my skin type. I was most interested in their makeup. I’ve tried natural makeup products in the past and found them to be lacking in actual impact. I went home with the lip and cheek stain, the BB cream and the mascara, and I was blown away by the quality and effect.

The mascara applied easily without flaking or clumping and I don’t have to worry about my eyes burning when I wear it. The cheek and lip stain gives a beautiful glow, and the BB cream blended into my skin perfectly for the light coverage I was going for. I also snagged some cuticle oil, which smells and feels heavenly, and some eye cream. Tiffany even sent me home with their Zinc Oxide Organic Sunscreen and the Mountain Man Shampoo and Body Bar for Blake, my husband, to try. Every product I sampled was luxurious and effective. I was blown away by the quality, smell, and how everything FELT on my skin.

Who is your target customer?

“If you look at your current skincare and makeup, you'll probably notice that water is the first ingredient. When water is used in products, it means about 97% of it will be water and artificial/ synthetic ingredients, many of which are known skin irritants. Only about 3% will be the ingredient they sold you on. This is because water and oil don't mix and water breeds life (bacteria).”

Bee You Organics makes all of its products from

scratch, in small batches by hand in shop to ensure freshness, and with only USDA Certified Organic food grade (known) ingredients.

What do you wish folks knew about your products?

“A little bit goes a long way,” Warren told me. “Because of this, your product will last longer and you won’t need to purchase as often.”

Warren’s journey started 28 years ago after she was hit by a drunk driver and thrown through the windshield of her car resulting in permanent scarring on her face. Even though she was raised to avoid harmful products, she needed something for her scars and cystic acne, but they only made her skin worse.

“I went home that day and read the ingredients on the labels in drawers full of products I’d been using and threw them all away. I started researching, testing and developing skincare that would help clear up my acne and heal my scars,” Warren shared.

Warren’s family and friends began to notice a difference, so she began developing products to treat specific needs for each of them.

“After about 10 years of creating custom formulas, I started Bee You Organics. I opened an Etsy shop on a dare from my husband that ‘no one cared

as much about ingredients as I did.’ My Organic BB Cream quickly became a bestseller and put us on the map. I opened my store in the South Perry District in 2019,” Warren shared.

What do you wish folks knew about beauty products in general?

“It’s predicted skincare and makeup will be completely waterless by 2050, due to the current and upcoming water shortages,” Warren said.

“There is a tremendous amount of disinformation out there and lying by omission in the beauty industry. The beauty industry is completely unregulated and ingredients don't need to be disclosed on ingredient lists under the guise of ‘trade secrets,’ so many ingredients have never even been tested for safety,” she said.

Because companies prey on costumer’s insecurities, so many people have been wearing toxic chemicals since very young, Warren explained.

“[We had] no true understanding of how it's impacting our bodies and health,” Warren said. “Our skin is our largest organ. We need to honor and protect it. What we put on our body is also going in.”

Dermazen Skincare

I credit Dermazen Skincare with transforming my scalp and skin. I am no stranger to sharing the not-so-cute aspects of my health journey, and here I make no exception. I have struggled with flaky skin on my scalp and face for most of my life. I’ve tried everything I could think of, but nothing fully ridded me of dry, flaky scalp and weird breakouts (that sometimes presented as eczema but responded to none of the typical treatments). The efficacy of our products begins there, with the brilliance of farmers who tend to the health of their soil before they plant.”

What do you wish folks knew about your products?

“I've had many people email me over the years that they'd been watching from a distance but never purchased for

Inner Joy Shop

I met Jessica Lopez, the founder and genius behind Inner Joy Shop, at a small business pop up in Spokane and immediately felt drawn to her. I knew that I could trust her. She possesses a quiet strength that communicates that she doesn’t need to be heard but that you would be wise to pay attention to her.

Her products reflect this quality as well. I tried her Amor Facial Mask and Exfoliant and was blown away by the immediate results. With regular use, I’ve noticed that my skin feels exfoliated, soft and clean without the redness and irritation that I normally experience with other forms of exfoliation. I also tried out her Serenity Facial Serum, and it officially has a permanent place in my morning and evening skincare routine. Here’s some of what I learned in my interview with Jessica Lopez.

I am a sucker for a good body scrub, and the Mountain Mocha Coffee Scrub by Wild June Co. based in Spokane, is my new favorite. It smells divine and leaves my usually dry skin soft and moisturized. It doesn’t feel too aggressive and doesn’t leave me feeling oily. I follow with the Solstice Body Oil (which also smells DIVINE), focusing on my elbows, knees and knuckles, and feel like an absolute glowing goddess.

Our products are locally handcrafted in Spokane, WA with natural and organic ingredients,” Miller shared. “Each of the products are inspired by the outdoors. We find that nature provides all that we need to take care of our skin!” Miller said. “And

we really focus on quality over quantity and strive to formulate products that not only smell great, but are effective and make your skin look and feel amazing.”

What do you wish folks knew about your products?

“Our products are very PNW themed, which is super fun and unique!” Miller shared. “But as mentioned above, I personally scrutinize every ingredient we put into each product. My philosophy is that if it’s not beneficial to the skin or the effectiveness of the formulation, it has no place in our skincare.”

What do you wish folks knew about beauty products in general?

“Beauty and personal care products do not need to be overly complicated with tons of ingredients in order to be effective, in fact it’s usually the opposite,” Miller shared. “Consumers may be

tempted to purchase products with an impressive ingredient list, but what they don’t realize is that the more ingredients a product contains, the smaller amount of each ingredient it will have. This makes the product much less effective than a simple formulation with just a few star ingredients.”

“I also wish more people realized that just because a product costs more or is sold by a certain company or an MLM, it doesn't mean that it’s worth the price they pay for it, nor does it mean it’s an effective product,” Miller said. “I’ve seen such simple formulations being sold for outrageous prices, and I’ve also seen very expensive diluted, toxin-filled products that do more harm than good. When it comes to beauty and personal care products, the consumer really needs to read labels and do their research to find out exactly what they’re paying for.”

Summer Pantry Salads

It’s finally warming up here in the beautiful Inland Northwest.

With warmer weather brings lazier days spent outdoors and the need for a quick and easy, light, nourishing meal that doesn’t break the bank. This month, we’re highlighting the unsung heroes of your pantry, the humble canned bean and the mighty grain. Both are nutritional and budgetary powerhouses and are often forgotten.

Quinoa has long been a staple crop of the Andean region of South America, where it has been consumed for thousands of years. The Incas even considered quinoa their most sacred food, and named it La Chisiya Mama, or “Mother Grain” as they believed it to have spiritually enhancing qualities. While it is actually a seed, it is classified as a whole grain, so it’s nutritious and quite delicious!

Farro is an ancient grain with a nice, nutty flavor. It’s said to have originated in Egypt’s Fertile Crescent, where it has been found in many tombs of Egyptian pharaohs and has been cultivated and eaten in Italy for generations. Whole grains often get a bad rap, as most

“healthy” foods do, but both types used in this article are incredibly versatile not just in cooked grain form, but also ground down into flour for baking.

We are so fortunate to have fresh, affordable, locally grown fruits and vegetables available this time of year through our wonderful farmers markets and amazing local community supported agriculture (CSA) programs. Some of my favorite farms to support through CSA programs are Courage to Grow, Lilac City Harvest, and of course, LINC subscription boxes! Buying locally from family owned and operated farms also supports the amazing human beings who work hard to keep all of their (and our) families fed. Thank you, farmers!

By combining the power of the pantry with some thoughtfully purchased seasonal fruits and veggies, you can keep the following seriously delicious summertime salads on hand. These three baddies are perfect for desk or beachside lunches as they only get better with time in the fridge, and they’re also pocketbook friendly, which means more money for all of your summertime fun.

Roasted Asparagus and Cannellini Quinoa Salad

With Artichoke, Spring Onion, Feta and Dill

To make the salad, you will need:

-1 cup of quinoa, prepared to package instructions and chilled

-4 finely sliced spring onions, whites and greens kept separate

-1 pound of asparagus, cleaned

-1 can of cannellini beans, drained and rinsed

-1 ½ cups of artichoke hearts, drained and roughly chopped

-¼ cup each of fresh baby dill and parsley, cleaned and finely chopped

-1 healthy handful of arugula, rinsed

-1/3 cup of feta cheese

To make the dressing, you will need:

Juice of 1 lemon

¼ cup of good quality olive oil

Sea salt and cracked pepper

3 cloves of garlic, finely minced

Step 1: Toss the asparagus in the cooking oil of your choice and add sea salt and pepper. Roast the asparagus in your oven or airfryer at 375° until al dente and remove. Allow it to cool in the fridge.

Step 2: In a large bowl, combine the prepared (and cooled) quinoa, cannellini beans, whites of the spring onions and herbs. Add the juice of the lemon, salt and pepper and olive oil. Gently stir to combine.

Step 3: Mix in the feta cheese and arugula. Taste for seasoning and adjust as needed. Garnish with green onion tops and enjoy!

Note: You can add some grilled chicken, tuna, or a soft boiled egg for protein. Remember, beans are the unsung heroes of your pantry and can be used as a base for a variety of un-salads to keep your weekday lunches and dinners easy, affordable, and anything but boring!

Farro Salad

With Apple, Kale, Sharp White Cheddar, Pecan and a Honey Mustard Vinaigrette

To make the salad, you will need:

-2 cups of farro, prepared to package instructions and chilled

-1.5 cups of kale, washed and finely chopped

-1 large carrot, peeled and shredded

-1 Cosmic Crisp apple (Go Cougs!) chopped into small pieces

-1 cup-ish of Cougar Gold or your sharp cheddar of choice, diced small

-3 green onions, washed and finely chopped

-1 cup of diced bacon

-1 cup of toasted pecans, roughly chopped

-1/3 cup of chopped, dried figs

To make the dressing, you will need:

-1.5 Tablespoons of stone ground or dijon mustard

-2 Tablespoons of honey

-1/3 cup of red wine vinegar

-½ a shallot, minced

-2 cloves of garlic, minced

-2/3 cup of extra virgin olive oil

-Salt and pepper to taste

Step 1: Add all of your ingredients for the dressing into a small Mason jar, close the lid nice and tight and shake until the dressing is emulsified well. Let it chill in the refrigerator while you assemble the salad.

Step 2: In a large mixing bowl, combine your prepared ingredients and dress your salad. I start with a little and then

add in more if needed. If you end up with extra vinaigrette, it makes a delicious marinade for chicken, fish or shrimp!

Step 3: Taste and adjust seasoning as needed prior to serving. Store in an airtight container in the refrigerator for up to a week.

Southwest Chicken Quinoa Salad

With a Chili Lime Vinaigrette

Step 1: Combine the dressing ingredients in the same way we did in the last recipe, and in a Mason jar. I love that the mixing container is also the storage container for any leftover vinaigrette.

Step 2: In a large mixing bowl, combine the ingredients (minus the romaine and Juanita’s), and add dressing a little bit at a time.

To make the salad, you will need:

-1 pound of ground chicken, seasoned well with taco seasoning of choice, cooked and cooled

-2 cups of quinoa, prepared to package instructions and cooled

-1 can of black or pinto beans, drained

-2 cups of shredded romaine

-½ cup each, diced: red bell pepper, pickled jalapeños, tomato, white onion and cilantro

-Juanita’s Tortilla Chips for serving (because they’re the best!)

To make the dressing, you will need:

-Juice of 3 limes

-1 Tablespoon of chili powder

-1 ½ teaspoons of ground cumin

-1-2 teaspoons each of garlic and onion powder

-1 Tablespoon of agave or honey

-1/3 cup of salad oil of choice (I love a good quality extra virgin olive oil)

-Salt and pepper to taste

Step 3: Once the salad is dressed and seasoned to your liking, add shredded romaine to the bottom of your personal bowls and top with the salad mix. Toss it all together and dig in.

I love to scoop the salad out with Juanita’s chips versus mixing them in, for that extra crunch!
