Surrounded by incredible individuals, I’ve been reminded of the potency of human connection. It’s a force more compelling than any adversity, a truth that has become the cornerstone of our mission.

Spring is a time for growth, a season when everything begins to flourish and bloom. Here at Trending Northwest, we’re embracing this season of renewal with open arms. We’re on the cusp of exciting developments, ready to unfold in harmony with the world around us.

Trending Northwest is gearing up for a period of what I’m calling “good growth.” We’re expanding our roots and branching out in new directions, from growing our dedicated team to welcoming more contributors who bring fresh perspectives and stories. We’re also expanding our presence, reaching further across the northwest to bring you the diverse stories that make our region so unique.

On a personal note, I find myself in a season of positive change and growth as well. As we step into 2024, I am filled with a sense of anticipation and hope. Following a series of challenging years, this year is beginning to unfold like a well-tended garden, promising and lush. I’m genuinely excited for what’s to come and I hope to share this journey of growth and renewal with you.

In this spring edition of Trending Northwest magazine, we aim to inspire you to embrace your own journey of good growth. LEXI GARR is A Pacific Northwest native. Lexi was born on the west side, but was transplanted to Idaho at a young age. She spent her childhood years camping, hiking and enjoying the tranquility of her family’s cabin on the Selway River, cultivating an appreciation of nature and the art of being still. It was here that she learned to covet quiet moments with a good book, accompanied by the sound of a rushing river and birds twittering about. Now she can be found cramming reading into every stolen nook and cranny of time in her life.

MONIKA JACOBSON earned her Bachelor’s degree in Human Nutrition and Dietetics at Washington State University. She moved to the west side and worked as a Registered Dietitian Nutritionist in a myriad of settings–from luxury health clubs, to coaching athletes with sports nutrition, to home health clinical nutrition and various start-ups in Seattle-focused scientific wellness and genetics. The issue’s cover features a sweeping, romantic image by Brent from Looyenga Photography at the Historic Davenport Hotel that captured our hearts. The featured couple had a unique love story to share that will warm your heart as much as the image. In the world of whirlwind romances, where the tales of love often stretch over years, Josh and Solina Montgomery’s story is a refreshing reminder that love, when true and intentional, knows no bounds or timelines. Their journey, from their first meeting to saying “I do” at the stunning Historic Davenport Hotel, is a testament to the fact that when you know, you just know.

Their grand, old-world fairytale wedding was a dream long held in their hearts, brought to life through their vision, determination, and the invaluable help of their chosen vendors. Selecting the Historic Davenport Hotel as the backdrop for their wedding was no mere decision of convenience, but a reflection of their shared appreciation for the grandeur and old-world elegance that this classy venue embodies. Their Victorian-inspired wedding was a black-tie event straight out of a fairytale, meticulously planned to bring out the elegance and romance of the era. Josh and Solina’s romance blossomed rapidly, not from being caught up in the moment, but from a deep understanding of what they sought in a partner. This clarity and intentionality in their courtship meant they wasted no time; after almost a year, they were ready to embark on a lifetime together. Their foundation was strengthened by a dedication that saw them traversing the journey between Seattle and Spokane every weekend to grow their heartfelt bond. This was not a couple who took their vows lightly, but rather with clarity of purpose and an open heart.

A secret to the success of their big day was the dedication of their wedding planner, Sydney from A Piece of Harmony Events, LLC. Sydney was the maestro behind the scenes, orchestrating the event with such precision and grace that Josh and Solina were free to immerse themselves fully in their day. Her ability to bring their vision to fruition, coupled with her positive and encouraging demeanor, was nothing short of remarkable.

Equally noteworthy were the other vendors who played pivotal roles in making their day memorable. Brent from Looyenga Photography, with his talent for capturing spontaneous, in-the-moment photos, ensured that the essence of Josh and Solina’s love was immortalized. Matt Leon from Soundwave Entertainment transcended the traditional role of a DJ, paying meticulous attention to the finer details of the day, ensuring a seamless celebration. Their wedding cake, a magnificent five-tier masterpiece by Sweet Frostings Blissful Bakeshop, was a sight to behold with not a single piece remaining.

In a world where we’re often told to slow down or second-guess ourselves, Josh and Solina’s story is a breath of fresh air. snohomish uncovered: where to find the best outdoor Adventures

Most Washington State visitors and residents are well aware of the region’s breathtaking natural beauty. That’s often the main motivation for any trip or relocation to the area.

However, there is so much more to enjoy beyond the big names like Mount Rainier, the coastline, and the Olympics. Just a few miles north of Seattle city limits, Snohomish County is home to numerous recreation areas that make for perfect day or weekend trips. Here’s where to enjoy nature in Snohomish County from a local!

Deception Pass

Just under an hour and a half drive from Seattle is Deception Pass State Park, a beautiful place to hike, camp, or just enjoy being by the water. The park is split into two parts by the iconic Deception Pass State Bridge.

You can walk or drive across to either side and enjoy an amazing vantage point of the Strait of Juan de Fuca (the bane of boat drivers on foggy days) and 5-plus miles of hiking paths.

Follow the jagged cliffside along the water for views of Skagit Bay, Whidbey Island, and Fidalgo Island. On a sunny day, the water changes into electric shades of blue that rival the Caribbean, and the Olympics rise in the distance. There are numerous campsites for both tents and trailers, and it’s a good idea to reserve online to ensure a spot.

Additionally, there is a boat launch and docks for those water inclined. If you plan to fish or crab, make sure you’ve purchased a license through the Department of Fish and Wildlife ahead of time.

Deception Pass

Whidbey Island

Take a 20-minute ferry ride from Mukilteo on the mainland and arrive in a whole new world!

Whidbey Island is long, 60 miles in length, and has so much to offer, whether you’re visiting for a day or a week!

You’ll arrive in either Clinton (if taking the Mukilteo ferry), Coupeville (if taking the passenger ferry from Port Townsend), or Deception Pass/Oak Harbor if driving on via the Deception Pass Bridge.

From any of the above entry points, you’re never far from a lovely walk, beach, or scenic drive. Ebey’s Landing is easily one of the most popular options on the island for amazing coastal views. Follow the trail from the parking lot to the fields above the beach.

Ebey’s Landing is a part of Ebey’s National Historical Reserve, which also houses Bluff and Kettle Trails as well as campgrounds.

Not far away lies Fort Casey, the former defense center of Puget Sound back in World War I and II. Today, you can wander through history and explore abandoned forts and cannons along the water. There is also camping space available.

Near Oak Harbor, Duagalla State Park is a lovely forest with plenty of trails. If you’re bringing four-legged friends, Double Bluff Beach and Greenbank Farm Trails are both great options for dog-friendly paths.

Camano Island

A convenient drive-on island to mainland Washington and a local favorite among Snohomish County residents. Follow State Route 532 from Stanwood, and in a few minutes, you’ll be on Camano Island.

The small spit of land is home to Cama Beach Historical Park and Camano Island State Park, both with numerous

trails, beach access, and campgrounds. There are also numerous private access trails and oceanfronts, should you want to stay longer than a day.

You can continue the fun by driving to Deception Pass after and then onto Whidbey Island for a full day or more adventure!

Mount Baker-Snoqualmie National Forest

Mount Baker’s snowy peak can be seen from numerous vantage points across Snohomish County. And while the mountain is a great place for skiing, snowshoeing, and hiking, the national forest of the same name just southeast of Baker has plenty of recreation opportunities. Hike Washington favorites such as Baker and Bagley Lakes, Lake Ann, and Artist Point.

Don’t miss Heybrook Lookout, where the snow clears earlier

than many other trails in the area, where views of other peaks and waterfalls are unmatched. If you’re water-inclined, fishing on the Nooksack River is a must, as is cooling off in it on a summer day.

If you have time to spare, check out one of the many campgrounds — although note many are first-comefirst-serve, so arrive early! Then, you can continue your Washington adventure along the Mountain Loop Scenic Byway.

Mount Pilchuck State Park

This area is best known for the short, but intense route to one of the most famous views in the state. However, there’s so much more to the park than the 5.5-mile (round-trip) hike with 2,300 feet of elevation gain that ends with panoramic views of both Mount Baker and Mount Rainier as well as the Olympics.

The historic fire lookout initially constructed in the early 1920s is now a landmark featured in every hiker’s photo album who summits the peak.

Heather Lake is a less demanding and shorter option, should Pilchuck sound a bit too advanced for you. It’s

located along the same road, just a bit before the Pilchuck trailhead. There’s also the lovely Lake 22 in the area and plenty of campgrounds.

Snohomish County offers an unparalleled outdoor experience that rivals even the most renowned natural attractions in Washington State. From the majestic Deception Pass State Park to the serene beauty of Whidbey Island and the rugged landscapes of Mount BakerSnoqualmie National Forest, this area is a treasure trove for nature lovers. Whether you’re seeking thrilling hikes, peaceful walks, or simply a place to relax by the water, Snohomish County has something for everyone.

Growing Greener Futures:

how Dryland Revival is transforming spokane landscapes

For Sam Kalk, owner of Dryland Revival, if it’s spring, it’s time to dig into the work.

Kalk opened Dryland Revival, a regenerative landscape company, in February 2022, after the human resources tech startup company he was working for folded during the COVID pandemic. When he thought about what was next up on his career agenda, he knew it had to involve landscaping and digging in the dirt. “That’s why I started the company, because I was

always outside pulling weeds and I was happiest when I was in the garden. I felt disconnected working inside an office,” Kalk says. “This makes me feel more grounded. I love, love, love what we do. It just feels right.”

to revive dryland ecosystems, one lawn at a time. Popular domestic landscaping wastes immense amounts of water and dumps toxic chemicals into fragile ecosystems, says Kalk.

At its core, regenerative landscaping is growing things in harmony with nature. It’s about using a style that nourishes people and the earth, with specific practices varying from grower to grower and from region to region. The holistic principles behind the philosophy are meant to restore soil and ecosystem health, address inequity, and leave the land, waters, and climate in better shape for future generations.

“If you’re taking care of the soil, there is less impact on the earth. Spokane and Palouse traditional farming methods don’t rebuild the soil and repair it,” Kalk says. “We work from the ground up, employing regenerative landscaping techniques to revitalize your soil and new plantings. By utilizing native and drought-tolerant plants and trees in our designs, we help our clients maximize the benefits of the plants available in our region through water conservation, and pollinator habitat.”

Dryland Revival services run from a full-remodel landscape design and a build-out that transforms a space to options for landscape designs, hardscape construction and an option for DIY landscape that includes a consultation and design of the space, a native plant list and map, as well as product and retailer recommendations for the design. The company also provides maintenance.

Kalk says response to the DIY option has been good. “After a consultation, people receive the design from us. Then we give them a native plant list,” he says. “We can do the heavy lifting and install all hard stuff – irrigations systems and pathways with hundreds of stones. It’s a lot of work.”

Most people get a full-remodel package, he says, although they encourage people to go for the DIY option. “We had 35 installs last year and only five to six were DIY. We want more people to take advantage of that.”

“The bottom line is that getting to know our native plants is really a fun exercise … walk on the bluff or any natural areas where there are lots of beautiful plants and the way they arrange themselves (in the wild) is where we get some of our

design inspiration. When we take our cues from nature, native plants use less water and maintenance. Some don’t even need pruning; they just evolve naturally. You can curate how you want things to grow. The sky’s the limit. You can be as involved as you want,” he says.

Last year, Kalk started using the SpokaneScape program – a water-efficient landscape designed specifically for Spokane residents; its focus is on the replacement of lawn with lowvolume irrigation and drought-tolerant plants. City of Spokane water customers can earn up to a $500 credit towards their utility bill after removing lawn and replacing it with water wise plants and mulch. Applications and how-to information for the program are available at SpokaneCity.org.

Dryland Revival will process applications as well, helping homeowners facilitate what can be an overwhelming project. Kalk says in 2023, the company processed 13 applications that were accepted by the program.

At the 2022 Garden Expo, Kalk gave a workshop on “Hügelkultur” (pronounced hyoo-gul-kulture), a German word that means mound culture or hill culture. A hügelkultur is a sloped and raised planting bed filled with topsoil, wood, and organic materials. German and European people have practiced it as a gardening method for hundreds of years. “You can mimic what the forest does. Most of our installs use a lot of compost mulch,” Kalk says.

Even if you’re not in the market for a complete redo of your property, there are things people can do to contribute to biodiversity, he adds. “One of the most impactful ways you can care for the earth is by planting native plants in your landscape.”

“Just plant a tree. Even doing a little bit by planting one native plant … the more you do, the better,” he says. “It doesn’t take that much to make a difference. Getting one or two native plants for our pollinators and bird species is investing in the beauty of our region.”

While arrowleaf balsamroot is Spokane’s signature springtime heartthrob, according to Kalk, there are a wide variety of other less-oft-discussed plants natives such as tufted phlox, wild onions, camas, and shrubby penstemons which “unashamedly put on equally astounding shows in meadows less visited by flora tourists,” he says. “Our region’s native and indigenous plants mark spring’s beginning, thrive in the summer, wave in the fall, and persist through winter.”

The company typically employs two crews of three or four during spring and summer. Prices vary depending on what homeowners are looking for and the square footage of the project, with “one job will cost around $5,000 and can be done in a day, while we’ve done others that total $100,000.

The average cost for homeowners in the last year was about $19,000 - $20,000.”

Several local nurseries and garden centers stock native plants Kalk says, including Yarrow, Idaho fescue and Rocky Mountain Juniper.

Heart attacks occur every 25 seconds, and strokes happen every 40 seconds. And if you think you're 'safe' because you're 'young', these devastating events are not solely happening to frail and sick older adults in their 80s. They are happening more and more to younger, seemingly healthy individuals of any gender.

In fact, heart disease, or cardiovascular disease, is the

number one killer of women, nearly ten-fold the rate that women die from breast cancer. While February is American Heart Month, people should be paying attention to their heart health every month.

So why is it the case that so many young people are enduring heart attacks and strokes? The current medical system is set up to help us once we are already sick, not with preventing disease in the first place.

In addition, women are often misled about the warning signs of a heart attack or stroke. They, therefore, are more likely to experience a life-altering or sometimes fatal stroke or heart attack. By the age of 45, 1 in 9 women will have a form of heart disease, and by 65, that risk increases to 1 in 3.

Phew - let that sink in for a moment.

Here in the Inland Northwest, Spokane is home to an extraordinary clinic called The Prevention Center for Heart and Brain Health, owned and operated by world-renowned cardiovascular specialist Amy Doneen, DNP, ARNP, a Spokane local. Dr. Doneen also cofounded the BaleDoneen Method with Dr. Bradley Bale and their book HealthyHeart, HealthyBrain:ThePersonalizedPathtoProtectYourMemory, Prevent Heart Attacks and Stroke and Avoid Chronic Disease recently received the prestigious 2023 Nautilus Book Award.

The lifesaving BaleDoneen method used at The Prevention Center, and explained in detail in the book, focuses on arterial health by reducing inflammation, which is a precursor for heart disease, diabetes, memory loss, and Alzheimer's disease. This clinic goes against conventional Western medicine's approach of treating you once you're already sick. They focus on heart attack and stroke prevention through a series of medical tests, including extensive blood lab markers, simple and low-cost imaging, genetic screening, and lifestyle assessments to ensure people are prescribed the appropriate medications and lifestyle interventions to support living a longer life full of vitality.

While many proactive approaches to preventative health are described in detail in Healthy Heart, Healthy Brain, we all need a place to start. Here are 6 things to start (and stick to) throughout the year:

Get moving.

It's no secret that the average American is sitting too much and not moving enough. This pattern correlates directly with the skyrocketing incidence of Type 2 diabetes, obesity, heart disease, and dementia, all of which are related to how much we MOVE regularly. The best form of exercise is the one that can be made into a regular habit. To reduce the likelihood

of heart disease and/or developing a stroke or heart attack, and strength or resistance training at least twice a week. This

like less of a "chore" and commit to it. This could be dancing, group fitness classes, brisk walking, or swimming. It all counts as long as your heart rate is up and you feel challenged to carry on a conversation. Diversity of exercise can also greatly support mobility and agility as we age.

Ditch the "diet" and find a sustainable way to eat.

If you're considering a trendy diet, think again. Most diets fail and cost money, leaving you feeling restricted and defeated when they prove unsustainable. Instead, work on eating less processed and pro-inflammatory foods such as excessive sugar, saturated fat, and alcohol. Also, incorporate a variety of colorful plants for natural antioxidants and anti-inflammatory properties, heart-healthy fats like salmon, avocados, and olive oil, and lean protein like fish, soy, skinless poultry, and beans/legumes, to name a few options. recommendations can also be personalized depending on health conditions, an individual's goals, genetics, and many other factors. If you need clarification on the best way to fuel your body, speak with a Registered Dietitian Nutritionist who can support your unique goals.

Sleep well.

Poor sleep is widely accepted as a risk factor for many chronic diseases. Do you wake feeling rested? How many hours of sleep do you get each night? Optimal sleep for heart health is 7-8 hours. Sleep can be influenced by numerous factors, including disruptions at home (kids, pets, noise, snoring partners), changing hormones (hello perimenopause!), and even more serious but common conditions like obstructive sleep apnea. If you suspect your sleep has been suffering, it may be worthwhile to get a sleep study completed at home to rule out sleep apnea since this is a treatable condition linked to increased risk for heart attacks and strokes. There are also numerous ways to assess sleep quality and incorporate non-invasive tools to support a good night's rest.

Reduce emotional stress and build in social connections.

It's not just poor diet and lack of exercise that contribute to elevated risk for heart disease; it's how we manage our stress. Life stressors are inevitable, and how we decide to manage the stressors is key. Now is a perfect time to sift through your stressors. Can something go? Can you work

less? Do you need a break from certain stressful triggers? Do you need more fun in your day-to-day life? Take that break. Finding ways to regularly calm our nervous systems, even with simple deep breathing exercises, breaks outside in nature, or meditation, can be hugely beneficial. And now more than ever, it's important to find healthy ways to optimize our mental health and seek out professional help as needed. Aside from stress management, people who maintain social connections are shown to live longer, healthier lives. Phone a friend, schedule a coffee date, and keep up the conversations with those loved ones in your life. If your social meter is running low, where can you plug in? Seek out a group of people with similar interests and prioritize social time for your health's sake.

Don't neglect your oral health.

What do oral health and hygiene have to do with heart attack and stroke prevention? Quite a bit! The mouth is home to many different bacteria, some of which can cause periodontal (gum) disease, infect the brain, or inflame the arteries. Ensure you get dental cleanings and exams at least twice per year and practice regular brushing and flossing. It's not just for a pretty smile and good breath but also for your heart and brain health.

While it may feel daunting to educate your kids on such an important topic, there are multiple ways to integrate financial education conversations into day-to-day life.

11 and Under Visualizing money

Starting as young as preschool-aged, practice counting money! Use a variety of coins and bills to help kids understand the value of money. At the kitchen table, lay out 100 pennies and explain how together they equal one dollar. Then take 10 one-dollar bills and compare them to a tendollar bill. By allowing kids to practice handling money and counting it, they will gain more understanding of money’s value.

Allowance

As early as five years old, implementing an allowance can be a fantastic way to give kids the opportunity to manage money. Starting with $5 a week, have conversations with your kids about what they can do with their money: save, spend, or give.

Open a savings account

Most financial institutions offer kid-specific accounts that come with special perks. At Canopy Credit Union, kids 11

Allowing kids the agency to spend their own money will give them the opportunity to prioritize what they want. Have conversations about what are needs and what are wants. As their parent, you likely have covered most of their needs (toothpaste is essential). Teaching kids to think through their wants and allowing

Giving money

This lesson can also be taught by modeling giving for yourself! As a family, come together and talk about giving to an organization that matters to you through a donation drive.

Lessons at the grocery store

When shopping at the grocery store, explain to your kids your thought process. For example, if a brand of milk that you don’t usually buy is on sale, explain how you will save money. Make it a game by teaching kids to look for “sale tags” and count up all the discounted grocery items that make it into your cart.

Teens (12-16)

Basics of budgeting

As your kids reach their teenage years, their relationships with you, the world around them, and money change as well. These years are crucial for instilling the basics of budgeting. As teenagers gain more independence, it is your job to provide them with money management tools to help them. Encourage them to track how much money they earn from allowances and part-time jobs as well as how much money they spend.

Coach your kids to not spend more than they earn, so they learn how to live within their means. Together, come up with saving and spending goals that make sense for them and come with an incentive at the end. For example, some families may offer to pay half of their teenager’s first car if they save the other half.

Saving for the future

Teaching about the difference between short-term and long-term savings goals is essential.A short-term goal is a smaller dollar amount and takes less than five years to save up for things like a phone, car or vacation. These years are crucial for instilling the basics of budgeting.

Give your kid an exciting opportunity to plan a day out for the whole family. Provide them a set budget (say $100) to pay for an activity or two that everyone in your family will enjoy. While their original idea may be to go roller skating, get lunch, go to the movies, and get ice cream, they will quickly realize how far $100 will actually go. With the independence to tackle this challenge, your child will learn how to navigate a budget while still coming up with creative ways to have fun! In general, inviting kids into the process of financial decision-making will help them understand better and make it easier when you need to say no sometimes.

Digital literacy - financial edition

For better or for worse, your kids are also learning financial education from the internet. Have a conversation with your kids about discerning what is accurate information and what they should disregard. Social media ads are a place where most people can get tripped up. Encourage your kids to research sketchy websites before purchasing from them.A good rule of thumb that will cultivate healthy financial habits is to veer away from instant gratification by waiting at least 24 hours after seeing something online before purchasing it. A day later, your kid may realize that the coolest new water bottle isn’t worth their hard earned money and their old water bottle works just great.

Instead of focusing on persuading them to completely get rid of certain wants, ask insightful questions to help them come to a thoughtful conclusion.

Living within their means

With their first “adult” job, a more sizable paycheck hitting their bank account will cause some excitement. Learning to steward this money well while making sure that all the other “adult” bills get taken care of is essential. The 50-30-20 budgeting rule is a great place to start. 50% of their income goes to needs, 30% to wants and 30% to savings. This ratio is just a starting place, though, and can be altered to fit the life of the individual. Encouraging your young adult to utilize a budgeting app or tracking system will help them know where their money is going and stay within their means.

Managing credit

At 18 years old, young adults can begin to build their credit. Starting with smart financial moves when young will lead to building a higher credit score because of the length of their credit history. Credit cards are likely the first place young adults

Finding the perfect vintage wedding dress for you or someone you love can be tricky - how many of us are regularly searching for vintage wedding dresses, after all?

However, some of the tried-and-true recommendations for vintage shopping also hold true for vintage wedding dress shopping.

First, you must try and narrow your search by style and era. Sometimes when we think about vintage wedding dresses, we think of the not so flattering time of the 80s with huge shoulders and frilly over the top details. Don’t get me wrong, there were some amazing dresses, but the 80s have a bad rep. I’m thinking more about the early 1900s cotton and lace Edwardian lawn dress, or a glamorous and dramatic gown from the 1930s, perhaps? An elegant 1950s mid length cupcake dress, mod 60s, or perhaps a boho 1970s bridesmaid dress? There is a vintage style for every taste and budget.

Once you have done your research, how can you find these special pieces? The best way is to start locally first. There are many vintage clothing shops in the PNW that carry beautiful vintage dresses that would be perfect for a bride or bridesmaid.

After your local search, you can start looking on online platforms. I would suggest having your measurements on hand so you can be more precise in your search and leave time in case you need alterations. And don’t forget - wearing a vintage dress also fulfills the “something old” tradition! Most importantly, have fun with your vintage search and enjoy the experience.

A dress is not the only thing you can buy vintage. There are many amazing and intricate veils, headpieces, vintage jewelry, and even wedding rings. Vintage and antique jewelry are almost impossible to replicate, crafted by skilled artisans with a meticulous attention to detail. My husband bought my 1920’s white gold filigree wedding ring from Pounder’s Jewelry, where they have a beautiful selection of estate jewelry.

Many vintage stores in Spokane have an extensive selection of vintage jewelry from art deco to a stunning pair of pearls. You could even find a vintage necklace with blue sapphires for your “something blue.” Plus, this is a beautiful way to celebrate a cherished family heirloom. Imagine passing down your vintage jewelry to future generations; your child, grandchild or maybe a niece might wear it one day, creating a beautiful lineage of love, memories and connect generations.

Though it may be small, the town of Sun Valley, Idaho, competes with cities on many levels: art galleries, concerts, events—and food. The Sun Valley area encompasses the towns of Sun Valley, Ketchum, and Hailey, and all three are home to a variety of cuisine, much of which is vegetarian- and vegan-friendly. There are even entirely plant-based dining spots! Whether you’re craving a heart veggie burger, a fresh salad, or a vegan slice of cake, these are the restaurants and cafes that are sure to satisfy.

Breakfast

The breakfast spot with the biggest plant-based selection is certainly the Konditorei, located in Sun Valley proper. An Austrian-inspired breakfast and lunch spot, the Konditorei has an entire section of its menu dedicated to plant-based fare. Try their vegan omelet or upscale avocado toast. For those who eat dairy, there’s an entire case of fresh-baked pastries as well as crepes, waffles, and egg-based dishes. For some simple coffee and avocado toast, there are several options in town. Head to Maude’s in Ketchum for some strong espresso and one of the five toasts from their menu (as well as locally made pastries and goods). Another Ketchum mainstay is Java (with a location in Hailey as well), which serves up a wide variety of veg-friendly breakfast options like poached eggs and toast, granola with yogurt, or simple avocado toast. For those who are more inclined to drink their breakfast, head to Ginger Sweet in downtown Ketchum for one of their many cold-pressed juices or smoothies.

Lunch

While you could easily stick around at any of the aforementioned breakfast spots to try their lunch menus as well, let’s head into new territory, shall we? If you’re someone who likes to eat whole, plant-based foods (rather than fake meats and processed foods), no visit to Sun Valley is complete without visiting Glow Live Food & Café. This entirely plant-based and mostly raw breakfast and lunch spot is in downtown Ketchum and serves up a variety of wraps, salads, bowls, smoothies, and more. If you’re short on time, grab something to go from their deli case, full of readymade options and desserts. Another whole food, plant-based spot is the Wylde Beet, a food truck transitioning into a brick-and-mortar restaurant this winter. A relative newcomer to the area, the Wylde Beet has already made a splash with delicious veggie burgers, curries, flow bowls, tacos, and desserts.

For those looking to eat at a sit-down restaurant, try Rasberry’s, a lunch-only spot serving up local, organic, fresh dishes Monday through Friday. While items on the menu often change seasonally, there are always a large rotation of vegetarian and vegan soups, Mexican dishes, sandwiches, and salads. Most dishes can be modified to be completely vegan and there are plenty of vegetarian options available as is. The bistro also features a large deli case of to-go items and a small store of breads, desserts, homemade spices, and more.

For a simple, inexpensive lunch, you can’t go wrong with Wrap City. A local staple, Wrap City serves a variety of one-of-a-kind wraps, many of which are vegan or vegetarian. Try the Chinese Tofu wrap: baked tofu, napa cabbage, peanuts, green onions, cilantro, crunchy rice sticks, jasmine rice, and sesame dressing in a large flour tortilla (also available as a salad).

Another local staple for all manner of eater is KB’s, a casual Mexican eatery with locations in Ketchum, Hailey, and beyond (though the first was in Ketchum; KB’s stands for “Ketchum Burritos”). Their menu of burritos, tacos, quesadillas, and salads has many listed vegetarian and vegan options but there are also build-yourown options for those who want to get even more specific!

Dinner

While there are certainly veg options at every restaurant in the Sun Valley area, some are more veg-friendly than others. First is IdaThai, your standard Thai restaurant serving up all manner of Thai dishes in Ketchum with tofu as an optional protein. For those staying in Hailey or willing to drive, Dang’s and A Taste of Thai also offer Thai food with lots of tofu options. For more upscale Asian food, try Ketchum spot Rickshaw, which serves a variety of Asian dishes from Thai to Chinese to Indian. Sharing is encouraged at Rickshaw and many plates are small, so do yourself a favor and try a number of plates, particularly their vegetable-forward dishes, of which there are many. Vegetarian and vegan options are clearly marked on their menu. If sushi is your game, head to Sushi on Second in Ketchum for some fresh rolls, many of which are vegetarian or vegan or can be customized to be so. Lastly, for something non-Asian, try Sawtooth Brewery. This eatery serves upscale pub fare from a killer Beyond burger to soft pretzels to kale ceasar and falafel.

Their most popular item is their frybread, which is prepared using a recipe from Jenny’s mother. They use it as a base for their NdN tacos, of which the Hunter is a customer favorite. This NdN taco consists of ground bison, house blended sage-forward seasoning, black beans, lettuce, pickled jalapeno, tomatillo salsa, and drizzled with sour cream. If you have a sweet tooth, they also serve frybread with powdered sugar and a side of housemade huckleberry sauce.

While this is not traditional in the sense of what pre-colonial Indigenous people may have eaten, Jenny said it is food that she grew up with and had at family gatherings and powwows.

“This makes it special, and is relatable to many other Native and and non-Native alike,” she said.

Not only that, the staff love serving their customers and getting to see them experience their menu for the first time or maybe after not having it for several years.

“Comfort food brings nostalgia and connection to culture, for which our customers are thankful, and in turn, our team gets to form relationships with our customers,” Jenny said.

Since opening, the restaurant has experienced great success. The Slagles have already opened a second location in River Park Square and recently placed fourth in USA Today’s 10 Best New Restaurant Awards! How awesome is that?

For those on the west side of Washington state looking to try Indigenous food, there’s Ryan’s REZ-ipes food truck, which you can find around Marysville and Tulalip, Washington. Started by citizen of the Tulalip Tribes and former police officer Ryan Gobin in 2016, this food truck offers a variety of burgers, along with smoked pork tacos and totchos (tater tot nachos).

Like Indigenous Eats, the best-selling item on their menu is their sweet and fluffy frybread. Ryan’s frybread gives customers their choice of raspberry and strawberry jam, cinnamon and sugar, and other sauces. Gobin recently added an option where customers can order an Indigenous taco topped with any of his menu items.

“I was handed down a recipe from my grandma, many years ago. But, I couldn’t get it perfect like hers,” Gobin said. “So, I made my own recipe and it took me over a year to perfect it. Last year, we sold over 9,600 frybreads!”

Aside from frybread, other things that make their food stand out are their flavors, freshness, quality and portions. For their burgers, they use 6oz wagyu blend burger patties and Gobin makes all of his own sauces and seasonings. For an additional burst of flavor and crunch, they place a crusted cheese skirt under each burger patty. Also, their freshly-made pork is smoked 17 hours every day, with the smoking process starting the night before.

“Food brings us all together and one thing I was taught from a young boy was to always cook with good intentions, happy thoughts and just have fun doing it. If you cook when you’re sad or having a horrible day, your food’s taste will reflect on that,” Gobin said. He said the business wouldn’t be what it is today without the support of all its customers, his team and his family. His kids have all worked in the truck, his mom was the cashier, and his wife has always been his backbone and support who does a ton of behind-the-scenes work and continues to push him to thrive each day.

Pow’Waw Food Truck

Washington state isn’t the only place in the Northwest that serves Indigenous food. In Coeur d’Alene, Idaho, there’s Pow’Waw Food Truck, which offers pre-colonial Native American cuisine while also using frybread and giving it a modern twist.

Shane is Turtle Mountain Chippewa and Megan is Coeur d’Alene Tribe, and they take pride in preparing their food from scratch. Because their food is pre-colonial, it does not use beef, chicken, dairy or cane sugar.

And, you probably guessed it, their most popular menu item is their frybread, particularly their Pow’Waw Frybread. This dish is topped with braised bison and cold smoked salmon, three sisters medley (consisting of corn, beans and squash), sauce flight (avocado spruce, wojapi and honey maple), and garnished with pumpkin seeds, mint and sage.

Other items on their menu include turkey, salad, baby corn, and manoomin (wild rice). You can find Pow’Waw Food Truck at the Silver Lake Mall in Coeur d’Alene.

The two said they aim to bridge Native American culture with others through food. Food is a big part of any culture, but for Native Americans, they said clean, seasonal and locally-sourced food was big for them. Food is medicine in Indigenous cultures, and the less processed it is, the better it is for people’s bodies.

The owners hope to one day have a restaurant someday and expand into other foods and beverages. Right now, they are working on a soda line!

These places not only offer you a chance to try a variety of different food, but also give you an opportunity to learn about the cultures and history of this country you may not have known about. When you eat Indigenous food, you’re not just experiencing great flavor, you’re also experiencing the history and culture of people who have been here long before the U.S. was even founded.

Tucked away in an unassuming strip mall on a quiet stretch of Spokane St. (306 N. Spokane St. Ste E, to be exact) in Post Falls, lies a magical land that is sure to be ANY omnivore’s meat and cheese happy place: Kitty G’s Fine Meats and Cheese. All of our Spokane Valley/Northern Idaho readers who yearn for a charcuterie and cheese shop that isn’t up north or downtown can now rejoice.

The case displays are a turophile’s delight, from artisanal Capicola and Salami to a rich assortment of all manners of fromagerie, all the way through to the DELICIOUSLY cheesecentric grab-and-go case filled with sandwiches, various noshery and nibbles, and charcuterie boards.

Just down the road is Q’melin Park, and it certainly doesn’t take a stretch of the imagination to envision all the happy parkgoers enjoying the many offerings of the new Post Falls gem this summer.

On any given day, when you walk in, you’re greeted by Johnny and Ashley Wyatt, the proprietors, and their welcoming, beaming smiles. Not sure what to get? Feel free to browse, ask questions, and have a sample or two, as Ashley is a long-time food industry veteran, is SUPER passionate about good food, and is more than happy to chat with and guide you. Need an idea of how to use one of her tasty products? Ashley possesses a vast knowledge of fine meats and cheese from her time working at a high end grocer in the Seattle area, and is an extremely talented chef!

Kitty G’s was born out of Ashley’s never-ending love affair with entrepreneurialism and culinary ventures galore. Ashley calls herself a “lifelong serial entrepreneur”, having owned her

own massage practice in Hawaii, and a vegan muffin batter take-and-bake company called ‘Kitchen Goddess’ in Seattle, with the latter being the inspiration for the name of her brand new Kitty G’s Fine Meats and Cheese.

Ashley brings all the good vibes and a wealth of knowledge along with her to her newest endeavor, which, as I mentioned, is a family affair. Her husband, Johnny, can often be found behind the cheese counter offering samples, running the slicer, and sharing laughter with the customers as they come through. Having felt as though his years of working in construction started to catch up with him, they knew it was time to gamble on themselves. They decided to bring the delicacies of Ashley’s time in the Seattle area to their home in Post Falls.

And while Ashley is the cheese-and-meat connoisseur, Johnny did his fair share of work on Kitty G’s himself, too!

Johnny is super talented in his own right, having built the shelving and interior of the shop, as well as some of the beautiful charcuterie serving boards sold in their shop.

Kitty G’s Fine Meats and Cheese is the perfect place to wander around when you’re feeling uninspired and walk out completely inspired by all of the delicious offerings—which is precisely what I did.

In this edition, I’m sharing a couple of mouthwatering recipes I absolutely adore and will be eating far more often now that I, as a Spokane Valley dweller, have easier access to all things charcuterie. Thank you for supporting my cheese habit, Ashley!

Anthony Bourdain’s Favorite Sandwich

With Provolone and Mortadella

Anthony Bourdain is a chef and total legend. His experiences and struggles were relatable to many restaurant veterans and non-industry individuals alike. That’s certainly why he and his story resonate with me and why I am such a fan of him, his cultural curiosity, and his food philosophy.

“Good food is often, if not most often, simple food.”

Now, let me be clear. I know this is “just a sandwich.” However, Anthony Bourdain’s Mortadella sandwich is one of the best sandwiches I’ve ever had. With simple ingredients such as crispy, pan-fried Mortadella, melty Provolone cheese, and a buttery, chewy sourdough or Kaiser roll foundation, this sandwich is simple but absolutely divine.

Step 1: Obtain delicious Mortadella and Provolone from Kitty G’s Fine Meats and Cheese (this step is crucial, it won’t be the same without meat and cheese from Kitty G’s!)

Step 2: Preheat your toaster or oven broiler to low. Heat a large skillet over medium heat and add a COPIOUS amount of butter to melt. Grill your bread or roll to crispy, buttery perfection. Set aside.

Step 3: Spread as much mayonnaise and mustard as you like on your grilled bread. Next, add cheese. I put 6 slices on each sandwich, but we love cheese, so you do you. Bake those under your broiler or in your toaster oven until melty.

had me covered in getting my hands on the beautifully rich Mortadella (with pistachios), and the melty, slightly smoky, buttery Provolone to make this dreamy sandwich a reality on my plate.

Sandwich:

Sliced sourdough bread or Kaiser rolls

Butter to grill the bread

½ lb. THINLY sliced Mortadella per sandwich

1 lb. sliced Provolone or white American cheese (They’re both excellent!)

Good quality mayonnaise

Whatever mustard you have available, I had stone ground, so I used stone ground.

Step 4: Place little mounds of Mortadella into the pan. Crisp up the Mortadella on both sides to a crispy golden brown. Place the crisped Mortadella atop the now melty cheese and bread.

Step 5: Put the two sides of the sandwich together, slice, and enjoy with abandon. It’s the way Tony would want it.

Cheesy Fried Polenta with Amatriciana

With Pecorino Romano and Guanciale

Step 1: Line a 9x9 baking dish with parchment paper and set aside. Add 3 Tablespoons of avocado oil to a saucepan and begin to lightly saute the prepared garlic over medium heat, being careful not to let it burn.

Step 2: Once garlic becomes fragrant, add a generous pinch of salt, and prepare the polenta according to package instructions.

Step 3: When polenta has finished cooking, whisk in the butter and Pecorino Romano, and taste for seasoning. Add salt and pepper to taste, and spread the polenta evenly

Polenta

Polenta (I use Bob’s Red Mill Organic)

4 cloves garlic, peeled and smashed

½ cup Pecorino Romano, shredded

Salt and pepper to taste

2 TBSP butter

Avocado oil for sautéing

I LOVE to serve this with a simple, fresh arugula salad, dressed simply in lemon juice, extra virgin olive oil, sea salt, and pepper.

I also LOVE to slather these cheesy polenta cakes copious amounts of smoky, spicy, and rich Amatriciana and more Pecorino Romano.

into the prepared baking dish. Refrigerate until completely cooled.

Step 4: In a shallow pan, heat enough avocado oil to cover the bottom of your pan evenly over medium heat. While the oil is getting nice and hot, remove the polenta from the refrigerator and slice into desired size. For uniformity's sake, I used a small cookie cutter to cut mine out.

Step 5: Begin frying polenta in batches until golden brown on both sides. Place on a clean cooling rack or a couple of paper towels to remove excess oil.

Amatriciana Sauce:

1 ½ cups of Guanciale, outer dark parts removed, and sliced into small strips (lardons).

(Guanciale: a type of cured pork made from the cheeks of a pig.)

6 cloves of garlic, peeled and smashed

1 28 ounce can of peeled tomatoes

1 teaspoon of crushed red pepper flakes

⅓ cup white wine

Salt and pepper to taste

⅓ cup shredded Pecorino Romano

Cooking oil of choice

Step 1: In a large saucepan, begin to render off the Guanciale lardons slowly over low to medium heat.

Step 2: Once the fat of the Guanciale has melted and the lardons are crispy, add the garlic, and the white wine. Simmer until the liquid is reduced by about half.

Step 3: Add the tomatoes, breaking them up with a wooden spoon or spatula. Add the red pepper flakes. Cover and simmer on low heat for 30 minutes.

Step 4: Stir in half of the Pecorino Romano cheese and allow it to melt into the sauce, stirring occasionally. Taste for seasoning and adjust as needed.

3 for Effortless Meal Prep and Healthy Eating Salads &

Simple Satisfying

Salads do NOT need to be boring. I repeat, salads SHOULD NOT be boring. If you’re anything like me, spending a long time making a new lunch salad every day isn’t realistic when you’re working, running a household, and the to-do list is never-ending. But with a little effort to do some meal prepping, you can set yourself up for nutrition success.

These three recipes are what I call “fridge salads.” This means they can hold up in the fridge for a few days without getting soggy. No one likes soggy salads!

Another huge bonus with each of these meal prep-friendly salads is the nutritional balance. They all contain fiber-rich carbs, lean protein, and heart-healthy unsaturated fats. When we eat carbs, protein and fat all in one meal (or snack), we support healthy blood sugar control and optimize satiety, so these salads actually fill us up.

Have you ever had a salad at lunch and felt hungry an hour later? You likely needed a little more nutritional “oomph” with more fiber, protein, or fat.

Each of these salads contains ten or fewer ingredients, are focused on seasonal produce, and can be sourced locally.

Broccoli, Edamame & Peanut Salad

Serves: 5-6

Ingredients:

Salad

-5 or 6 cups chopped broccoli

-1 cup shelled edamame

-1/2 cup roasted and salted peanuts, coarsely chopped

Dressing

-1/2 cup natural peanut butter (just peanuts + salt)

-2 Tbsp. soy sauce (or sub coconut aminos for GF)

-1 Tbsp. sesame oil

-juice from 1 lime

-2 Tbsp. honey or maple syrup

-2 Tbsp. rice vinegar

Directions:

In a large mixing bowl, combine chopped broccoli, edamame, and peanuts.

In a separate small bowl, mix all dressing ingredients together with a whisk. Thin the dressing with 1-3 tablespoon water (or more) until you reach the desired consistency.

Add the dressing to the bowl of broccoli, edamame and peanuts and stir to evenly coat everything.

Garnish with sesame seeds and enjoy!

*Will keep in fridge for about 4 days. If opposed to eating raw broccoli, feel free to lightly steam or roast the broccoli in advance of preparing the salad.

Beet, Honey, Pistachio & Goat Cheese Salad

Serves: 4-5

Ingredients:

-1 lb. cooked beets, sliced into ¼ inch circles

-4 oz. goat cheese

-1/4 cup toasted and coarsely chopped pistachios

-2 teaspoons honey

-2 tablespoons olive oil

-2 teaspoons freshly squeezed lemon juice

-1 tablespoon chopped fresh thyme

-coarse sea salt & fresh ground pepper

Directions:

Layer cooked sliced beets on a large plate. Top with crumbled goat cheese.

Drizzle honey, olive oil, lemon juice over the beets.

Sprinkle with thyme, salt and pepper. Store, covered in the fridge for up to 4 days.

Elote Shrimp & Kale Salad

Directions:

Place all the salad ingredients in a large bowl. Mix to combine.

Add the dressing ingredients, one at a time, into a small bowl. Stir everything together and taste. You may need to adjust the flavors with more elote seasoning, more salt or even add a touch of cayenne for an extra kick.

Dress the salad ingredients as you like. Cover the salad and store in the refrigerator. Will keep well for about 4 days. Enjoy!

Serves: 4 Ingredients

Salad:

-6 cups of shredded kale

-2 ears of corn, cooked or grilled (or about 2 cups)

-1 lb. cooked shrimp or prawns

-1 cup garbanzo beans

-1 cup chopped fresh tomatoes

-1 whole carrot, chopped into small pieces or 1 cup shredded carrots

-1/2 cup chopped cilantro

Dressing:

-1/3 cup olive oil

-1/4 cup fresh lime juice

-zest from 1 lime

-generous pinch of salt

-2 teaspoons elote seasoning (find at Trader Joe’s or make your own)
