It’s worth checking out. Aberdeen and North-east Scotland is a great place to live, or visit, as this issue shows. A new report by think-tank Demos and PriceWaterhouseCoopers has rated the city the second most attractive place to live in the UK. This is partly down to the relatively buoyant economy in the region, offering high levels of income and skills, coupled with health, housing, transport and the environment. In fact just about the only category we come below average in is work-life balance. We work too hard and don’t make the most of our leisure opportunities. It’s a shortcoming many of us will seek to address with our New Year Resolutions and Trend is on hand to help! We like to think that Trend plays a part in making Aberdeen and the Shire a brighter, better place to enjoy life by sharing our latest discoveries with you. Even though the days are getting shorter and there’s a chill in the air, there’s no excuse to let life pass you by. Leave hibernation to the bears, we say. Eat somewhere different, try a new cocktail, buy a new outfit, get a new hair colour, and take up a new pastime. Go for it. Have a great Christmas and a very happy and prosperous New Year. We’re sure 2014 will be fabulous.

Ooh Carluccio’s Several years ago, on a visit to London, I was treated to breakfast at one of the many Carluccio’s restaurants dotted about the city. Since that day, every visit down South has meant a return to this elegant yet casual Italian café. Fortunately, I no longer have to travel to get my Carluccio’s fix because Aberdeen’s first branch has opened its doors in Union Square. Unlike so many Italian restaurants that bulk up their menus, and their customers, with pizza and pasta, Carluccio’s offers a varied menu that showcases the very best of Italian dining. From marinated olives and homemade breads to fresh bruschetta and cured meats, the starter menu alone is enough to get excited about. As a main course, you can choose from a medley of meats or a selection of seafood dishes, all accented with fresh Italian sauces. If pasta is more your preference, Carluccio’s offers a range of homemade pastas, but do not expect to find any run-of-the-mill choices here. When I visited for lunch, my penne was complemented with thinly sliced courgette and chilli pieces and topped with delicious fried spinach balls. If you manage to save room for dessert, it is impossible to make a bad selection. The plate-sized meringues are light and fluffy, the homemade gelato melts in your mouth and the tortes and tarts are a perfect match for the impossibly smooth cappuccino. Personally, I must confess a weakness for the Coffee Affogato – a tall glass of homemade vanilla ice cream with an espresso poured over the top. It is true that every new restaurant that appears in Union Square brings a certain excitement with it, but with the blue script of the Carluccio’s logo now firmly a part of the first floor scenery, it is difficult to imagine anything topping that in the near future. www.carluccios.com 01224 595 256

Curry Heaven There are times when only a curry will do. If it wasn’t for the fact that the restaurant is named after Bhiman, the character from the Hindu epic poem Mahabharata, best known for his prodigious appetite and cooking skills, we’d be prepared to believe Shri Bheema translates as Heaven for fans of Indian food. We’re not the only ones who think so, since Balamurali Balaji’s family run restaurant, which is a relative newcomer to the city, has already picked up a stack of awards including ‘Best Indian Restaurant in Aberdeen’ and ‘Chef of The Year 2013’. The décor is in a rich mix of bejewelled sari shades and the menu is no less appealing. Chef Haik Habibul’s extensive selection offers less familiar, but invariably delicious, South Indian delicacies and a great selection of old favourites. We perused the list of starters over some poppadoms and chutneys. Despite being tempted by the Ven Pongal and the Lamb Kothu Parotta, I plumped for the Chicken Pakora as a sure test of quality. This came beautifully presented and was simply the best I have ever tasted. My husband had the plain Dosa – huge, freshly cooked and crispy with chutney and lentil and chilli sambar. Our starters had raised our expectations for the main event to sky-high levels and we were not disappointed. My Chicken Patia was succulent and well-spiced and my husband declared a life-long affection for the Lamb Kadai. The accompanying Peshawari naan was bursting with fruit and coconut and the boiled rice was perfectly cooked. Impeccable service combined with an exceptional quality of food and authenticity, is the trademark at Shri Bheema’s Indian Restaurant. It’s a mark of their quality that they have already been able to open a second restaurant in Bridge of Don. Meet Bob Miller, head chef at the Milton Brasserie How did you decide to become a chef? I wanted to go to art school, but it fell through and I had to choose another career. It came down to a choice of training as a bricklayer or training as a chef. I went for the indoor option! How would you describe your style of cooking? I like to make dishes that everyone can enjoy, many of which are based on traditional dishes, but given a modern twist. If you could share a meal with anyone, who would it be and why? I’d have loved to have spent some time with the Clash’s Joe Strummer. To me, the man’s an icon. We’d probably discuss movies, music and world issues. He was a very intelligent man with a big heart. I think we’d opt for something informal, robust and traditional for dinner. We would probably have pie, mash and gravy and a pint or two of beer. Where do you get your inspiration for new dishes? Just about anything can be my starting point for something new. I might be sparked off by something from a blog or website, a book, something another chef has produced or a childhood memory. What do you dislike about modern restaurant cookery? Style should never triumph over substance. I think there’s too much molecular gastronomy about – people don’t want to be perplexed working out how to eat their meal, they just want to enjoy it. What do you think about the state of eating out in Aberdeen and Aberdeenshire? There are some great independently owned places to eat here, with good chefs, great food and an appealing atmosphere but I think Aberdeen has too many chain branded places serving pretty average, uninteresting food.

Sticky Braised Pork Cheek and Belly with Black Pudding Stuffing and Apricot Purée (Serves 6)

Ingredients: > 1kg butterflied belly of pork, fat and bone off – ask your butcher > 500g black pudding, chopped up > 1 red onion (diced and peeled) > 2 green apples (diced and peeled) > Pinch of cayenne pepper > 6 pork cheeks > 2 pints of chicken stock, plus ½ pint > 150g dried apricots > 2 sprigs of tarragon > Teaspoonful of cinnamon > 1 carrot (diced) > 1 stalk of celery (diced) > 2 cloves of garlic (crushed)

Recipe: Boil the apricots in 1/2 pint chicken stock and tarragon. Blitz till smooth and season to taste, then leave aside. Heat the apples, onions and black pudding in a pan, then use it to stuff the belly. Roll and tie into a cylinder. Season the rolled pork belly and cheeks and seal off in a pan. Place it all casserole dish and braise with stock and root vegetables for between 2-3 hours. Remove the belly and cheek from stock, pour stock into pan and boil until reduced by half.

To plate up: Warm up the apricots puree and pull a line across the plate. Slice the pork belly and pan fry each portion in oil until golden brown and warm all the way through. Warm up the cheeks in the stock reduction and place both meats on the apricot puree, finish with some of the reduced stock.

Load up the car and head north for a day trip through Moray that’s packed with things to do, foodie treats and some special shopping. We’ve chosen a circular route that will take a full day, with a pick and mix itinerary depending on whether you fancy exploring, retail therapy or a bit of both…

tart out on the A96 heading towards Inverurie, Huntly and Keith. The Kellockbank Country Emporium, just north of Pitmachie, is a good spot for breakfast or a coffee to start the day as you head north. At Keith, head left onto the A95 through Mulben and Craigellachie. Whisky lovers will find plenty to please them in this small village, which is home to the Macallan, Craigellachie Distillery and the Speyside Cooperage, where traditional barrels are made by hand. If you have a couple of hours, the tours at the Macallan and the cooperage are worthwhile. Take the A941 through Rothes and into Elgin. The town is steeped in history, with the Cathedral being worth a visit, though inveterate shoppers will want to head to the Johnstons of Elgin factory shop in the hope of finding bargains in the softest cashmere. Perhaps now’s the time to pack the family off to the Moray Motor Museum, to allow you to shop in peace. Also worth exploring is whisky blender Gordon & MacPhail’s 60

emporium which is a shrine to the world’s rarest malts, combined with a great deli department. Sound and Vision is packed with musical instruments, DJ equipment and band t-shirts, and will make you nostalgic for Bruce Miller’s. Relax offers contemporary furnishings and the town’s Polish deli has a great range of breads, smoked meats and continental cakes.

Perhaps now’s the time to pack the family off to the Moray Motor Museum, to allow you to shop in peace. Back on the road, head through Forres, toward Inverness to visit Brodie Countryfare, which houses a food hall, gifts, interiors, clothing departments and a restaurant – think of it as a rustic version of John Lewis. Turn back onto the A98 heading towards Forres. Findhorn presents an intriguing diversion if you branch off to the left onto the B9011. The perfect spot for a stroll at the mouth of the bay, and the village’s New Age atmosphere means you’ll find some amazing eco-friendly architecture – like homes made from old whisky barrels - in the Findhorn


Foundation’s Ecovillage. It’s worth checking ahead for special events as the village often hosts performances and workshops. Travel back down towards Kinloss then take the B9089, B9013 and B9012 through the charming little seaside villages of Cummingstown and Hopeman before taking the road to Lossiemouth, then the B9013 towards Lhanbryde before heading left onto the A96 through Mosstodloch and into Fochabers. Fochabers’ high street has a great selection of quirky shops and the folk museum is pleasingly informative on the town’s history and heritage. Maple sells a range of fairtrade jewellery and gifts, while the gloriously named Frockabers offers recycled fashion. The WDCS Wildlife Centre at nearby Spey Bay is a prime spot for watching dolphins and ospreys. Just before you leave Fochabers, visit the Baxters Highland Village, which offers a variety of speciality shops, stocked with their own brand and an impressive selection of wines and whiskies, gourmet foods, clothing, cookware and gifts. The old grocery shop explores the history of Baxters and is a recreation of the original opened by George Baxter in 1868. The next stop is Cullen, which offers an irresistible mix of sweeping sandy beach, handsome Georgian frontages and perhaps the most famous soup ever to come out of Scotland - Cullen Skink. Pop in to the Rockpool Cafe to sample their version, then try the antiques shop next door for some interesting browsing. Pick up some international delicacies from Forsyth’s Deli or head to the town’s ice cream shop, reputed to sell the best ice cream in Scotland, before browsing the town’s great selection of little galleries, curio and crafts shops. The antiques centre, in a former church, houses everything from bits of ships and samurai armour to daleks, so you’re bound to find something to appeal. If you’d rather stretch your legs, climbing to the summit of Bin Hill will reward you with a panoramic view over the town. Another nearby option is the Deskford Garden Galleries, about 3 miles inland from Cullen, which combine antiques, art and a garden centre with a traditional tea room that’s worth a visit. There are lots of little cottages throughout the gardens which house antiques and collectibles, jewellery, books, vintage designer clothing and accessories. Head back to the coast and drive towards Banff. Before you reach the traditional coastal village of Sandend, a road to your left will take you to the ruins of Findlater Castle, 61


spectacularly perched on a rocky outcrop with a fifty foot drop to the sea. Parking is available, but it’s still a fair walk to the castle itself, so best for those with plenty of energy and decent walking shoes. Portsoy is the next stop on our meander through Moray. Best known for its popular Small Boat Festival each summer, it is worth exploring the Shorehead and harbour area for picturesque views and buildings that date back before 1700, at any time of year. Check out the Portsoy Marble Shop, which sells jewellery and other objects made from the local serpentine stone or pop into the Salmon Bothy, which now houses a museum. If you’re looking for a new fireplace or stove, Hutcheson’s of Portsoy have a huge selection and are definitely worth the detour, as is the Curiosity Shoppe, which stocks antiques, clocks and musical instruments. From Portsoy, it’s back to the A98 and into Banff. Banff is great for a bit of a wander, with its ancient closes and historic buildings. It’s an amazingly unspoilt townscape, with a good local museum and the National Gallery of Scotland at Duff House nearby. The early Georgian Duff House is filled with treasures and hosts an interesting programme of art exhibitions and events, as well as having a popular tea room and shop. I’m fortunate to have some great inspiration right on my doorstep. Joe Smernicki

Joe Smernicki has long drawn his artistic inspiration from the coast and rural scenery of Angus. After a career spent teaching art, he shares what he has learned as one of Scotland’s best-regarded landscape artists. “When I was at art school in at Dundee, I was lucky to study under some of the most important Scottish artists of the 20th century before starting a career teaching art in schools. Teaching never failed to interest or excite me,” Joe began. “The spirit of exploration and excitement my pupils and teachers brought to art still motivates me today. “Virtually all my paintings are landscapes or seascapes and I’m fortunate to have 70

some great inspiration right on my doorstep. The coastal and rural areas in this corner of Scotland change constantly as the seasons pass. “My work is based upon drawings and sketches made on location; I have piles of sketchbooks. I begin to develop ideas in the studio, undertaking lots of small trials before painting in oils on canvas. “My broad aim is not to recreate a view in realistic detail, rather I want seek out aspects of colour, shape, tone and line that interest me, then put these together to convey the essence of a place in time. One of the delights of being an artist is in the unexpected. Whether this is a particular

painting taking an unexpected direction or my whole career developing almost of its own accord, I will always go with that. “This coming year I plan to experiment more with mixed media, perhaps employing collage techniques and heavier paint. Now this may or may not come through to my finished work but I will enjoy the experimental process. In 2014 I will be exhibiting at Aberdeen’s Gallery Heinzel and the Tolquhon Gallery, near Tarves”. “I hope my paintings convey a sense of calm. Having Genesis guitarist Steve Hackett playing alongside you on a self-penned track is the material of dreams for most teenage boys, but former Hazlehead Academy student Finlay Morton is living that dream. Earlier in the summer while putting the finishing touches on his third album, Finlay’s record company passed a copy of the tracks on to one of their other artists for a listen - none other than Steve Hackett. “Steve came back to them and said ‘I would like to play on one of the tracks’,” revealed Finlay. “I couldn’t really believe it. I have been a fan of Genesis, and certainly the period in which he was a member of the band, for quite a long time. “It was quite difficult to find any time to get into the studio together as he was in the middle of a worldwide tour, but he made the time. He’s very laid back and he doesn’t have any of the ego that you would expect of a major artist. We worked well together and knew what we wanted to achieve.

“When you’re dealing with your own music you are focused entirely on that, and you just try to produce the best result that you can.” Banging out tunes on his guitar from the age of ten, Finlay began putting pen to paper back in 2004 to create his own music, with his first album Interpret This hitting the airwaves two years later. This was shortly followed by Back to Basics two years after that. “I hadn’t really played much guitar for ages, and then I started writing and a whole batch of tracks popped out. I did a demo tape, and I haven’t really looked back since then,” said Finlay. “We’re still finalising the details of a tour, but I would love to come back to Aberdeen as part of it.” Finlay’s third album Harvest the Wind and single Do you Believe in Ghosts featuring Steve Hackett is out now. www.finlaymorton.com

Local designer Helen Ruth takes her inspiration from the Alford countryside where she grew up to produce a stunning range of silk and wool scarves… Since graduating from Gray’s School of Art in 2008, Helen Ruth’s passion for textile design has taken her to Italy and back again to Aberdeen to set up her own label, producing luxury scarves. “I think of my scarves as being wearable artworks”, Helen enthused. “My designs are inspired by the wild Scottish landscape and creatures, as well as fairy tales and traditional folklore. Each scarf tells its own story – a well known and loved tale or a personal childhood memory, giving the wearer an emotional connection to the piece. I like to take the conventional ideas of beauty and incorporate some subtle sinister undertones, there is always more going on than meets the eye! The brand was launched in early 2010 when Helen was chosen to showcase her work at Notting Hill’s design concept store Wolf and Badger. Previously Helen had won the international Como/ Texprint scarf design competition and spent several months interning in Italy to design for a studio in the heart of Como’s silk printing industry, before moving to work in legendary designer Zhandra Rhodes’ studio.

“When I’m designing a new collection, I start with an idea in my head of what I want it to be about. For this season it was all about being in the Scottish woodlands in autumn, the rich colours and wildlife. Then I set about sketching either from life or photos I’ve taken while out and about. These illustrations are then converted into digital images which I colour and layer up to create digital 'collages'. Once I’m happy with colour and composition, the scarves are printed onto luxury wools and silks at the Centre for Advanced Textiles in Glasgow. I then finish the scarves by hand. “Print design and illustration are what I enjoy most, so scarves are a good fit for this, allowing me to be create a brand that is specifically recognised for its print. I like the versatility of scarves, and I think they are a relatively affordable luxury item. I’ve branched out recently to a small range of bow ties and handkerchiefs for men so the guys don’t feel left out! “I like to be around other creative people, that’s always inspiring and can bring up ideas you hadn’t thought about. Seeing people enjoying my designs and wearing them is always a good feeling and gives me a buzz”.

The misty train journey through to Glasgow made an atmospheric start to my trip to the city’s King’s Theatre to see a matinee performance of Bruce Joel Rubin’s GHOST. Backstage, a full sized coffin and hospital gurney jostle for position with subway seats and a fully furnished office wall. We heard that many of the effects are created by video and LED walls, controlled by 17 computers, making GHOST one of most technically complex productions ever to tour the UK. Technology aside, the wardrobe was our next stop and crammed into backstage are 58 wigs, 217 costumes and 112 pairs of shoes, ranging from full-on African robes for Oda Mae to a set of dip-dyed ghost outfits.

Unlike a filmset, everything on stage has to be instant. Audiences are much more difficult to wow these days, but GHOST definitely does that. HISTORY

Tucked away to the North of Aberdeen city centre lies Old Aberdeen – a once influential independent burgh where bishops predominantly occupied the seat of power and presided over decisions about church and state. Today, Old Aberdeen serves primarily as the main campus of the University of Aberdeen but if you can find time for a walk around its hallowed paths, it also serves as a window into the history of this great city. With so much architectural diversity on display in Old Aberdeen, it is difficult to know where to begin, but St. Machar’s Cathedral will definitely not disappoint. With its medieval twin towers and heraldic ceiling, this building is a monument to the long line of bishops responsible for its construction. Many of the bishops are now entombed within the building and legend even says that one quarter of William Wallace is buried within the Cathedral walls. At the heart of Old Aberdeen is King’s College, founded in 1495 by the then Bishop of Aberdeen William Elphinstone, which served as the first University in Aberdeen and only the third in Scotland. Forming a 76

Old Aberdeen is the Old Town House, a restored Georgian building that has served as everything from a masonic lodge to a police headquarters. At the South end you will find the Powis Gates, an impressive duo of minaret towers erected by Hugh Fraser Leslie in 1834. The "Dreams Come True" Ball held its seventh annual ball at the Marcliffe. The ball organised by Louise Mitchell was this year glamorously themed to reflect the sporting endeavours of many of the charity supporters in this year's 'Chicago Marathon.' Over the last seven years some £450,000 has been raised for DCT and the other partner charities based locally in the North-east. Aberdeen PA’s annual Winter Showcase took place at the larger AECC venue for the first time. The event has expanded to include more local, national & international exhibitors. PA Members met suppliers of corporate gifts, events, catering, activities, hotels, spas, & more. Venues from London and overseas were represented. Trend Weddings held its annual exhibition at Ardoe House Hotel. All of the exhibitors attended and were delighted with the whole day and the response by people attending the show. The guests were able to have, Afternoon Tea in the Champagne area, watch live demonstrations and a fabulous fashion show. Meeting Aberdeen Football Club chief executive Duncan Fraser on the lush green turf of Pittodrie, it takes a nano-second to realise he is no dry accountant. No, no, the 49-year-old Aberdonian, who grew up in England, is consumed with a passion for the 110-year-old club and has a hunger for it to enjoy more success. We are speaking on the 30th anniversary of the Dons’ first leg UEFA Supercup game against Hamburg in Germany which ended goalless and was followed by a 2-0 triumph at home on December 20, 1983. That win capped a remarkable year for the club which had earlier lifted the European Cup-Winners’ Cup in Gothenburg, defeating the mighty senors from Real Madrid 3-2 after extra time. “I was taking an honours degree in business studies at Robert Gordon’s Institute of Technology at the time of all this success under manager Alex Ferguson,” said Duncan. “I love it when Aberdeen win and those European triumphs continue to be an inspiration to all of us at Pittodrie. I signed up to work here 11 years ago as company secretary when Keith Wyness was my boss and I have been blessed to work with wonderful people who all have a passion for the club and are desperate for more success. “There is a feel good factor about the place and that can only be good for the city and outlying parts from where we get tremendous support.“ The long wait to add fresh silverware to the trophy cabinet at Pittodrie resumes in the new year when the Dons meet St Johnstone at Tynecastle in Edinburgh on February 1 in the semi-final of the Scottish League Cup. Duncan can’t wait and nor can the 12,000 fans expected to be in the Capital that day shouting on their heroes. “We can make it feel like a home game,” he added, “as we will have about 75% of the crowd that day.” A win would take Aberdeen to a cup final at Hampden and a win there would mean so much. Said Duncan: “It would get the monkey off our backs that we have starved our fans of success and that would be a massive boost.” Meanwhile, the sports-mad chief executive, who is married with a son of 16, will continue to live up to the words on the sign on the wall behind his desk: Keep calm and carry on. 90
