As usual, we’ve been out and about checking out the best our bit of Scotland has to offer for this issue. When Trend started many people felt that we didn’t have much to do up here, with few decent places to eat or shop in this little corner of the country. We’ve certainly proved them wrong!

An Inverurie based lingerie boutique has embarked on a mission to help educate young girls in the North-east on getting the right fit of lingerie at a young age. It is crucial that women’s assets are given the best fit and support from the early stages of development, as studies show that more than 85% of women in the UK are not wearing the right lingerie for their shape, which proves that education needs to be implemented at a young age. Award-winning lingerie boutique, De-Zire, aims to do exactly this with the launch of it’s new summer campaign, Little Miss BOOBY. The campaign is being launched to coincide with the introduction of it’s new lingerie range, Banana Moon Intimates. The brand is fun, funky and youthful and is aimed at young developing girls and will be available exclusively to De-Zire from August. Boutique owner, Susan Evans, said: “It’s easy to pick up a bra from the high street and even supermarkets these days, however many are fashion bras which have under wiring which is not good for young breasts as they are tender and the wiring can hinder the development of the glands. Sometimes weâ€™re all too busy with work, friends and family to pay attention to our own needs and wellbeing, so we start to feel a little tired, a little sorer and a little slower than weâ€™d like. As well as being one of the greatest hotels and golf courses in the world, Gleneagles is also the home of the ESPA Life spa, which offers bespoke lifestyle programmes designed to restore your natural equilibrium and put a spring back in your step. Think of it as treatment, but still retaining the treat, since the fundamental ethos of ESPA Life is to restore or improve health and wellbeing, but without sacrificing luxury or pampering. If it offered a boot camp, the boots would be Louboutins, but miraculously comfortable. The total health and fitness programmes for 40+ men and women combine consultations and tests with wellness and spa treatments and personal training sessions. There are specialised packages for relaxation, detoxing, weight optimisation, improving sleep, enhancing fertility, easing menopause, and, this being Gleneagles, a package designed to get fit for golf. You can tailor make your own treatment regime after a consultation.

After a comprehensive and wide ranging conversation and iris examination with Louise, the ESPA Life Naturopath, I put myself in the alternative therapy team’s hands for two days. It’s amazing how quickly the team built up a level of trust; a reflection of their skills and depth of knowledge. There’s nothing New-Agey about their approach and all the therapists are happy to discuss the science behind their treatments. Osteopath Bradley examined my posture and checked my flexibility, before discussing areas of weakness and restricted movement, then ironing out a few kinks. In between sessions, you can relax in the spa’s darkened relaxation room, or lounge the bright courtyard or use the fitness room or spa facilities. The spa café is the perfect place to have a light lunch and keep up the good work. The afternoon was given over to a reflexology session, followed by one of ESPA’s blissful bespoke facials, from their extensive beauty treatments menu. Day two started with a session of Colonic Hydrotherapy, which, despite my apprehension, was neither painful nor embarrassing, thanks to Louise’s empathetic approach. It’s rather like cleaning out the cupboard under the stairs.

It’s filled with all sorts of rubbish that you have no idea how it got there and you really don’t have any use for. You might not do it all that often, but you’ll feel a lot better for having done it. My final consultation was with Ailsa, who discovered Traditional Chinese Medicine while studying oriental languages in Taiwan, before qualifying in TCM. She examined my tongue and pulses and tells me that in Chinese Medicine terms, I have a mild case of dampness, which I suspect is a Scottish thing. Over the next two hours she combines some painless acupuncture, with moxibustion and massage to strengthen my systems. I rounded the trip off with some relaxation in ESPA’s steam room, sauna and hydrotherapy pool. At the end of my visit, I came away with recommendations on eating, simple exercises to improve posture, shoulders with less tension, far more awareness of the nutritional and other needs of my body and a much improved outlook on my own health and wellbeing. There are no grey areas when it comes to this trendâ€Ś Take a step back in time to the 60s and rediscover the monochrome trend. Monochrome creations sashayed down many of the SS13 show runways, with Louis Vuitton showcasing the trend in checks whilst Marc Jacobs experimented with stripes. There are so many options to explore when it comes to monochrome; create a minimalistic look with block shapes and a big black clutch, or be spontaneous with ornately detailed patterns and geometric prints on dresses and trousers. The Broadstraik Inn has hosted many a celebration down the years but it’s never going to see another one like Adam Corbett Craigmile’s latest birthday bash. For he’s the only customer to share a unique, historic bond with the popular country pub – the place where he was born and where he returned 100 years later to toast becoming a centenarian. Established, in its current form, by his parents at the turn of the 20th century, it was previously known as the Old Way Inn and consisted of a farmhouse, farm building and lawn - a total of 65 acres. His parents decided to demolish the property and build a new hotel. They had just enjoyed a holiday cruising the Norfolk Broads where they hit upon the name Broad Straik. Work began in 1903 and was completed in 1905, at a cost of £1105. It opened in November of that year. Adam came into the world at the pub in the summer of 1913 by which time the hotel was well established, hosting 28

business meetings in private rooms and farmers discussing the problems of the day. Its six bedrooms catered mainly for travellers who did business with local blacksmiths, ironmongers and shopkeepers. Horsedrawn carriages brought customers from miles around to attend weddings, funerals and birthday parties - all that’s changed today is the mode of transport. Adam, one of a family of 10, started work at the Broadstraik Inn Farm at 14 and used to drive his livestock on foot to Aberdeen Mart. He moved away when his father sold the Broadstraik Inn in 1927 but has lived nearby since his 70s and been a regular customer maintaining, along with his son, grandchildren and great grandchildren, the Broadstraik’s Craigmile connection.

Babies and toddlers are having a smashing time at Aberdeen based photographer Susan Renée’s Cake Smash portrait sessions which involve a beautifully decorated birthday cake, a small child and an awful lot of mayhem.

Susan was one of the first photographers in the UK to offer the sessions. ‘I came across cake smashes on Pinterest and thought they were a fantastic and fun way to celebrate little ones’ special birthdays,’ explained Susan, who was recently highly commended in the Trend Life with Style Awards. ‘It’s amazing how the informal sessions bring out the true character and personality of each child,’ Susan continued, ‘Cake smashes are fairly short sessions because once the cake is smashed, well, it’s smashed!’ ‘Little boys look great in blue jeans with bare tummies and little girls look sweet in tutus or party dresses. We take some shots of the birthday boy or girl before the cake is introduced, then we just sit tight and see what happens with mummy or daddy right on hand to support and help make the session fun. Afterwards, a cosy bath is run to make sure plastic covers don’t have to go on the car seats for the journey home, because it’s often a gloriously messy experience!’ 30

The new Olympic standard Aquatics Centre, at Aberdeen Sports Village, has reached a major milestone in its construction with the pool area now fully wind and watertight. One of the most famous faces in British swimming, Hannah Miley recently visited the site for the first time to witness the progress that has been made so far. During the visit, the 23 year old swimmer was shown the recently fitted roof and glazing in the pool area, putting the Aquatics Centre on track for its scheduled opening in early 2014. The Centre is set to become Scotland’s second Olympic-standard swimming pool with the help of a £1million donation from Saltire Energy, which will create a 10 lane, 50 metre pool and a 25 metre pool with full international diving facilities. David Beattie, Chief Executive at Aberdeen Sports Village said ‘This is a significant stage in the development of the Aquatics Centre. From the outset, we wanted to create a world-class, Olympic standard facility and this wouldn’t have been possible without the funding support we have received from the University of Aberdeen and Aberdeen City Council and private businesses, including Saltire Energy.’ ‘The funding provided by Saltire Energy has enabled us to create high quality training facilities for elite swimmers to train for national and international competitions.’

Mike Loggie, Chief Executive of Saltire Energy said: ‘We are delighted to support the Aquatics Centre and help them achieve their aim of creating an Olympic standard facility. It will be a real asset to the people of Aberdeen and the North East and it will enable the whole community to enjoy an extended programme of sports, in a world class environment.’

The Aquatics Centre will create a further 50 jobs in the north east and provide sporting stars like Hannah, with world-class facilities to train for major competitions.

Breast of wood pigeon was wonderfully complemented by chocolate and passion fruit and the following course of king scallops and Stornoway black pudding with peas and corn brought the best of land and sea together in one delicious plate.

It was a beautiful summer evening when we visited Ardoe House, the former home of soap magnate Alexander “Soapy” Ogston, in order to visit the re-vamped Blairs Restaurant. The hotel is undergoing refurbishment and from the bits we saw, it’s looking tastefully splendid. We were greeted and seated effortlessly in comfortable surroundings. We decided on the Tasting Menu, as opposed to the à la carte option, in order to experience a wider selection of dishes from Head Chef Richard Yearnshire’s new menu. Like the refurbishment, the menu has a modern Scottish feel. We started with a trio of oven-warm anchovy, bloomer and pumpkin seed breads with a selection of dipping oils and butter, followed swiftly by a delicious veloute of Arbroath smoked haddock with curry froth. What a great start!

The meat dish was a mouth-wateringly tender loin of lamb with gently braised neck fillet, peas, apricot and gem lettuce which all fused nicely. Alix from Tallinn, our excellent waitress, then surprised us with a violet delight - sorbet, jelly and candied Parma violets infused with the essence of Parma which looked beautiful and tasted amazing. The final act was a fruity raspberry souffle and sorbet dessert. Blairs has a well thought-out wine list with a good selection of wines by the glass or bottle. During the meal we tasted a Californian Pinot Noir, a Marlborough Sauvignon Blanc, an Argentinian Malbec and a Blackstone Merlot from the USA, only one glass of each shared you understand! Blairs is serious cooking with a sense of fun and is a welcome addition to the gastronomy of Aberdeen. A chilled evening dinner at the Carmelite was just the ticket after a long working week. Located in the Merchant Quarter hub of the city centre and only a short walk from the train and bus stations, the Carmelite is the perfect destination for weary travellers arriving in the city for the weekend, or a favourite of many local haunts in the city for us city dwellers. As the days began to grow longer, the twilight setting of the sun provided a soft glow through the windows of the Carmelite. In anticipation we arrived early, and indulged in a small tipple in the cosy atmosphere of the bar, soaking in the elegance of the surroundings and soft jazz music. Once we were at our table we browsed the menu for the perfect bottle of red wine, to accompany the endless selection of traditional and contemporary tastes available. The restaurant seemed like the ideal venue for a chilled Friday evening, as couples and weekend enthusiasts who were clearly influenced by the rare sight of the sun joined

us. We began with the starter, a delicious bowl of haggis and black pudding bonbons served with a sweet chilli mayonnaise. The warm bites of the bonbons were perfectly accompanied by the cool and spicy mayonnaise. For the main course the broad bean and pesto risotto was an obvious choice for me, the light fluffy risotto with smoked haddock, bacon lardons, and topped with a poached egg combining a delicious array of flavours and textures, which complimented the wine beautifully. With no room left for dessert, despite being tempted by the choices of the table next to us, we finished up with a drink in the bar, where the late night musician had already begun. It was as if we were lured in by the soothing melodies played on the baby grand. A bustling crowd had gathered in the bar beside us in what felt like the most intimate music show Iâ€™ve ever been to, providing the perfect end to an enchanting evening at the Carmelite.

How did you become a chef? Even as a boy I was interested in cooking. I loved the idea of combining cooking and travel, so doing that as a career has been great. I’m now pretty settled in Scotland with its wonderful larder. How would you describe your style of cooking? My dishes are fresh, uncomplicated and seasonal. I’d say they were classical French for the important basics with a modern twist. The Bistro lets the great seasonal produce be the main attraction. If you could invite anyone famous to dinner, who would it be and what would you serve? He’s maybe not famous, but I’d bring back my favourite Scotsman, Murdoch MacPherson. Murdoch happens to be my father in law and I would cook him roast rib of scotch beef, double reduced gravy with Yorkshire puddings, followed by a couple of malts and a good old chat. What do you draw on to create new dishes? My old French cooking “bibles” Escoffier & Larousse, drawing from my travel experiences and of course the fantastic range of produce we are lucky to have on our doorstep here in the north east. What do you think the main problems with today’s cooking is? I have to admit I am not a fan of molecular gastronomy. Also, a lot of chefs serve dishes with too many frills and ingredients, which don’t always work well together. More time should be spent on mastering the basics of cooking, good stocks, sauces etc. which serve you so well throughout your career. What do you think of the restaurant scene in Aberdeen? It has improved greatly since I came to Aberdeen, much more to choose from now. I think people generally have more interest in food and eating out is more popular. This has helped raise the standards and made good food more commonplace. Dining out is also more relaxed now, good food doesn’t need to be in stuffy surroundings. There are however too many chain/branded restaurants, a few more restaurants with some individuality would be great to see.

INGREDIENTS • 200 - 250g good quality linguine • 125g fresh white crab meat • 8 large king scallops • 250ml double cream • 25g butter • 250ml good vegetable or fish stock • 1 medium finely diced onion • 2 cloves diced garlic • 1 hot chilli finely diced with seeds • Half red pepper diced • 2/3 spring onions • Fresh parmesan • Rocket METHOD Sauté onions, garlic and chillies in butter, then add red peppers until soft. Add cream & stock, cook for 4 minutes. Add crab meat and spring onions, simmer for 2 minutes then set aside. In the meantime cook the linguine. Remove coral from scallops and slice in half, then dust with flour. Heat sauce and add to the linguine. Arrange on plate then on very high heat char-grill or griddle scallops 10 seconds each side. Serve with linguine, sprinkle with parmesan and garnish with rocket leaves.

When you approach Stonehaven from Aberdeen, it is easy to feel like you are driving right into a postcard of Scotland. At just two hours flying time from Glasgow, Reyjavik offers the perfect package for a long weekend. It’s a vibrantly creative city set against a spectacular natural backdrop of mountains, glaciers, fjords, hot springs and volcanoes. The people are welcoming and there’s so much to see and do, whether you want to get back to nature or prefer an upmarket urban experience. Reyjavik isn’t cheap, so the best option is to buy a ready-made hotel and flight package and add on your excursions in one go. This can save around a third and there’s a huge choice available – try glacier climbing, looking for the Northern Lights, snorkelling, snowboarding, all-terrain exploring, horse riding, or exploring inside a volcano.

We luxuriated at the Hilton Reykjavik Nordica, which boasts picture postcard views over the city, sea and mountains beyond, as well as huge rooms, excellent service, great food and its own spa. Their free bus pass makes getting round the city simple and saves taking a second mortgage to pay for taxis.

Don’t miss the opportunity to try whale watching with eco-friendly operators Elding, who’ll kit you out in an insulated sailing suit for an aquatic adventure spotting whales, dolphins and a host of sea birds. Icelanders seem to live in their hot spring spas. The Blue Lagoon is a popular choice, but if you’d rather not share your thermal pool with a bunch of grubby backpackers, head for the immaculate Laugarvatn Fontana Spa on the pristine shores of Lake Laugarvatn. You can visit it on Reykjavik Excursion’s Golden Circle tour which also takes in the spectacular Gullfoss waterfall and Geysir.

Back in Reykjavik, the main shopping streets are packed with fascinating little boutiques and galleries filled with locally made jewellery, art and crafts as well as foodie souvenirs, knitwear and hides. Skolasvordustigur, which leads up to the towering Hallgrimskirka church and Laugavegur are good places to start. Unless you own a bank, keep a ready reckoner to hand, as prices are often exorbitant and it’s easy to lose track.

Despite my reluctance to leave the changing rooms since it was raining and 4oC outside, the Laugarvatn Fontana was an unexpected highlight of the trip. Unwind in the hot tub and geothermal pools overlooking the spectacular fjord or detox in the steam cabins or sauna and discover why Icelanders all glow with well-being. If it’s just too healthy, retox with a beer in the pool, or some superb chocolate cake in the cafe. They’ll even show you how locals bake rye bread in the hot beach sand.

You might think your waiter is slipping you his mobile number rather than the bill, given the number of digits involved. Expect to pay £80-£100 for a mid range dinner for two, with a couple of main meals and a beer. We liked the Cafe de Paris and Slippbarinn at the quirky Icelandair Hotel Reykjavik Marina Hotel. Svarta Kaffi’s bread bowls filled with homemade soup will seem a lunchtime bargain at around £20 for two! Taking the kids to Iceland is relatively inexpensive. The Flybus and several of Reyjavik Excursions are free for under elevens, and most restaurants and attractions welcome children with similarly deep discounts.

The city has a vibrant nightlife with Friday and Saturday evenings given over to a good-natured pub-crawl party though the bars and clubs round the centre of town. Locals head to Reykjavik’s harbour at the weekends for a wander round the unpretentious fleamarket, which is packed with stalls selling everything from local delicacies to the contents of grandma’s attic. Reykjavik’s compact size, perfect setting and great selection of shops and places to eat make it an ideal city break destination. Most portrait artists work in oil paint or acrylics, but Claire Hamilton brings her subjects to life in graphite and coloured pencil. Here, she shares her passion and her delicate drawings... ‘From an early age I would spend hours painting and drawing. My art teacher at primary school was hugely inspiring and I attended Aberdeen College studying Graphic Design, before becoming a studio manager. I started to draw again after having my first child... portraits made great gifts for the nannies. Before long I was producing portraits for friends, then I started to be offered commissions. As well as portraits, I draw a lot of birds, which I’ve loved ever since visiting the Falconry Centre in Huntly in my teens.’ ‘Most of my work is produced from multiple photographs supplied by the client. Each piece is slowly made up layer after layer of shading or colour. It’s a time-consuming process, especially when fur or feathers are involved. I like to be as precise as I can, creating a true likeness. I also like to try to capture texture and feel though different fabrics, fur and hair which give great depth to a finished piece. For me, the eyes are the most important part of a portrait, giving it life.’ ‘I think that portraits capture a feeling and a memory of a moment in time bringing you closer to the subject. Portraiture is very much making a comeback with new trends in how faces are viewed and new techniques. “In the future, I want to work on larger pieces, perhaps illustrate a children’s book and I’d love a commission for a royal baby portrait!’ Claire’s work can be seen at the Kellockbank Country Emporium near Insch and she will be exhibiting with the Garioch Art Group on the 10 – 17th August in Inverurie Town Hall. Ross Farren may only be seventeen, but he’s already making a name for himself on the local music scene. ‘I’ve had a passion for music since I was five years old, learning piano, guitar and drums’ Ross began, ’ but I’d never really sang in public until about two years ago. My friends persuaded me to enter a school talent show and I discovered that I really enjoyed performing. I then appeared at Kintore Festival with my piano teacher, Ruby Mackay accompanying me.’ ‘Now my friends try to convince me that I should enter X Factor or Britain’s Got Talent. I wouldn’t rule it out absolutely, but for now I’m concentrating on becoming an accomplished songwriter and polishing my performance.’ ‘When on stage, I perform a mixture of covers, complimented with my own material blended in depending on the event I’m performing at and the people attending. I appeared at the Marcliffe at Pitfodels during Trend Magazine’s Afternoon Garden Party in April and also at Milton of Crathes restaurant where I play background piano and sing. This summer I’ve performed in local bars in Indonesia and Malaysia, whilst visiting family. I’m thinking of it as my first international tour!’ ‘My family are very supportive and have helped me follow my dreams of being a performer. They always come to watch me on stage, so I know who’s leading the clapping!’ ‘I’m hoping to appear at a wide range of events. I just want to share my music with people and make sure that they have a great time. Eventually, I’m hoping to record my own material and bring out an album. ‘I have had an interest in creating things. As a little girl, my dolls house was constantly being redecorated, with hand drawn wallpaper, individual felt carpets and adorable mini accessories. I’ve had a love of interior décor from childhood!’ Julia enthused.

Designer Julia Nicolson, of the Blue Lily Scotland marries her love of ceramics and interiors to produce the perfect finishing touches. Here she shares her approach…

‘I graduated from Aberdeen’s Grays School of Art in three dimensional design, specialising in ceramics. I was drawn to the natural tactile properties and satisfaction of making something by hand. I then worked in a design studio which led me to incorporate the two passions, ceramic art and interior design and set up The Blue Lily Scotland as a result.’ ‘I am drawn to the quality and attention to detail that some contemporary products can be lacking. I like making things that harmonize with their natural surroundings but stop you in your tracks,’ Julia continued. ‘As a designer I like to have a diverse product range, from giftware and trinkets for the home, to large sculptures for the garden and ceramic wall art. My latest collection of console table ware, the bowl collection, can also be commissioned as a bespoke piece to co-ordinate with an interior.’ ‘It is such a privilege to be allowed to influence the look of someone’s home or business. For commissions, we start by discussing the client’s ideas, the setting

and the occasion and recipient if appropriate. We look at a range of areas to get inspiration, from an anniversary year, a holiday destination, personal interests and art they have admired. I then draw the ideas out of the client to create something that captures these ideas within the design.’ ‘Once I am locked away in my studio I start from scratch with the wet clay, and have a variety of techniques available to produce the perfect design, the work is dried, and put in the kiln, then glazed and sent back to the kiln. The final pieces are then lovingly wrapped and in general hand delivered. An exciting part of my job is seeing the delight on a clients face when they unwrap their creation, the end result being a real collaboration.’ ‘In a society where we are all so busy and have less free time, a gift that has been hand created for someone, and has had hours and hours of time invested in it from idea conception to creation shows love and thought in a way even an expensive high street gift rarely can.’ ‘I am really enjoying the diversity of running The Blue Lilly Scotland. We have just designed the Alice in Wonder Land theme interior for Cups, the popular new cafe and I recently qualified in curtain and soft furnishing production, meaning that the interior design aspect of the business can also develop in house, ensuring the high level of quality and detail we are now known for.’ ‘We’re always happy to undertake commissions whether it’s for a ceramic piece or an interior. We want to provide the opportunity to create items that can reflect our customers’ personalities and style all the way from your interiors down to the smallest accessories. Over 200 guests joined the cast of ‘The Kist’ in Fiona Kennedy’s third charity production of the ‘Nae Ordinary Burns Supper’ at The Marcliffe Pitfodels, raising over £18,000. Mr Spence of The Marcliffe commenting that “it was the best ever Burns Supper and the best from ‘The Kist’”. Sponsors had so much fun they have already committed to 2014’s supper at the Beach Ballroom. Fiona is eager to build upon the continuing success in 2014, supporting her chosen charities VSA, F.R.O.M Scotland and Easter Anguston Farm.’

I owe my cuddly contours to master chefs such as Craig Wilson who has run the much vaunted Eat on the Green restaurant in the picture postcard village of Udny Green for nearly a decade. For example, the Insch-born 41-year-old summoned me to address the haggis well out of the Burns season for an international party enjoying private dining. The skirl of the pipes also added to the Scottish flavour of the evening to the delight of the beef-eating visitors. ‘They loved the whole ambience,’ says Craig, whose philosophy is simple: ‘I want to make any visit to Eat on the Green extra special every time. That is why we have a Chef’s Table where diners can watch the food being prepared. That is why we have just teamed up with champagne house Laurent Perrier to open a members-only Salon Vert conservatory looking out on our back garden. That is why we only use the best of Scottish produce.’ Craig has high praise for his wife Lindsay, mum of their three-year-old boy Jay, for the huge part she has played in seeing through various initiatives. ‘She is a wizard at project management,’ says the former pupil of the Gordon Schools, Huntly, who is also father to Zak, 13, and Yasmin, 11. However, it’s not all about the restaurant. To their credit - and aided by an army of helpers - Craig and Lindsay have raised about £100,000 for cancer charities. Craig’s mum Sheila survived the illness but his dad, George, was not so fortunate and died last year. Dad helped out in the restaurant for five years and is a big miss. ‘We are holding a fundraiser in his memory on November 2 for Insch Hospital where he died,’ says Craig. ‘I’m celebrating 25 years in the business since I started as a trainee chef at the Strathburn Hotel in Inverurie,’ he adds. ‘It’s been a rollercoaster ride so who knows where the next 25 years will take me.’ Contact Eat on the Green on 01651 842337.
