Welcome to Trend’s 40th issue! We’re looking pretty good for forty, even if we say so ourselves.

We’d just like to thank everyone who has made Trend such a success - our contributors, behind the scenes

When we started Trend, people used to say there was nothing to do in Aberdeen, no decent shops in the

staff, our advertisers and most of all our readers, without whom, we’d never have become the magazine we are today.

North-east and that we’d soon run out of things to put in the magazine. It turns out they were wrong.

Very, very wrong. As this issue proves, there’s always something new to experience – whether it’s some new music, visiting a different restaurant, cruising the Caribbean, giving your home or wardrobe a pastel makeover, finding out about a local designer or even just taking in the sights and shops down a street you haven’t been down in ages, there’s a whole world out there just waiting for you. Go out and explore!

As you’ll see from this issue, we’re not the only people celebrating being forty - Peacock Visual Arts will be forty this year, and so will Country Ways, the country clothing and equestrian outfitters. The enduring success of both organisations proves quality, innovation and a fresh approach never goes out of style. We hope we’ll be around to celebrate our own 40th birthday in a few decades time.

She first realised she had a passion for photography after completing an art course at Aberdeen College and went on to do the HND in photography in 2011. Her work mainly revolves around fashion and portraiture, working closely with some of Scotland's top agencies. She splits her time between Aberdeen and Glasgow, mainly working on fashion editorials or with agencies. Her work has been featured in numerous international magazines in both print and online, spanning from Australia to Canada. Having been awarded the UK’s number one Independent Take-away Award last year it comes as no surprise that Stonehaven’s The Bay Fish and Chip Shop is still a local favourite. > WORDS BY RYAN SWINNEY

Without a shred of guilt, we decided to treat ourselves to a fish supper on a Friday evening.

Eagerly anticipating our dinner we foolishly left for Stonehaven during rush hour, with nothing but the radio and an occasional stomach grumble to keep us going. We eventually made it to the coastal town, and into The Bay we went, where we were hit with the awe-inspiring array of choices.

shop worthy of a review somewhere warm and exotic, but with our suppers on our laps and the car heater turned up to the max - it was almost the same. All ingredients are locally sourced and fried right in the shop. The fresh fish was tender, yet crisp, while the chips also deserve a mention – they were soft and fluffy and just had to be drenched in the classic vinegar and salt.

The Bay provides a choice for anyone, ranging from the traditional fish supper to burgers and hot dogs.

We decided to indulge in a haddock supper each, as well as a ‘carry out’ for a friend; fortunately no-one batted an eyelid at the size of our order!

No faults could be found with our experience at The Bay, and our Friday night treats were well worth the wait, and the drive. However, the gruelling Saturday morning on the treadmill was another story!

The two fish suppers proved too tempting for us to even consider not eating them there and then.

The Silver Darling Restaurant - an old nickname for the herring - has been perched above Aberdeen harbour since Frenchman Didier Dejean elevated fish based cuisine to fine dining back in 1984. > WORDS BY CLARE FINDLAY

The restaurant conservatory offers panoramic views of vessels from all over the world as they come and go from the port. Basking seals and playful dolphins and porpoises add to the maritime atmosphere - you almost feel as though you are eating at sea.

The menu is predominantly based on the freshest of fish, so it changes according to best of the day’s catch. There’s generally an intriguing choice of around seven dishes including a daily special. I decided on the scrumptiously flaky potted smoked and fresh salmon rillettes with pickled cucumber and mixed leaves, served with crunchy Melba toast. My colleague opted for the caramelised, full-flavoured, sweet roast

tomato and shallot tarte tartin, which proved that great cooking can lift everyday ingredients to something very special.

My main course of haddock in a golden crispy beer batter, with chunky hand cut pommes frites, garden pea puree and greens was cooked to perfection.

The fish almost melted in my mouth.

My colleague happily devoured a very generous portion of heavenly seafood pie, which was bursting with smoked haddock, monkfish and mussels under a crispy manchego cheese and bread topping.

It’s not often you come across a hotel where the restaurant is so good that around two-thirds of the diners aren’t even staying there, but the Malmaison in Queen’s Road has never been like other hotels.

Few top-flight hotels manage to combine a relaxed quirky vibe, dramatic décor, great food and an atmosphere in which both staff and guests all seem to be having a great time, but the Mal manages to make it look effortless.

Head Chef John Burns has just been honoured as the Malmaison’s Chef of the Year across their entire hotel chain, a mark of the Aberdeen hotel’s excellent reputation for great food and great service. To Mal fans, the award isn’t that surprising, as few chefs have the same level of passion about the provenance and pedigree of their ingredients as John demonstrates.

The Malmaison Brasserie is also a great choice for vegetarians, those with food allergies or intolerances, or people who can’t resist making substitutions on the menu, since the staff are keen to make sure every customer enjoys their meal.

It’s not just the menu that’s packed with foodie treats. The brasserie offers private dining at the Chef’s Table for up to ten people in a well-appointed glass room that overlooks the kitchens. You can even flick a switch and listen to what’s going on as the kitchen brigade plates up orders as well as watching on CCTV. The brasserie restaurant menu features French-influenced favourites such as a silky Lobster Bisque, spiked with a chilli crème fraiche, the freshest Yellowfin Ahi tuna tartare this side of Tokyo and a recherché selection of shrimp, prawn and lobster cocktails that are best enjoyed as a trio.

John’s latest find is USDA New York Black Angus Strip steak, specially imported from the US, where the cattle is maize fed and raised similarly to Wagyu beef making the succulent steaks a carnivore’s dream.

Downstairs, the hotel offers wine tastings round their high tech La Roche wine table, where groups of up to ten people can sample the best of the Malmaison cellars.

Wine tastings can also be arranged as part of a dinner evening or for up to 30 people in the hotel’s private Rubislaw suite.

If you’re more into malts, then the Malmaison’s collection of over 350 whiskies from around the world is at your disposal. Themed tastings can be arranged for one to thirty guests, allowing you to explore the peaty island malts, sip your way round Speyside’s finest or sample the amber jewels of Japan’s distilleries.

One of the latest additions to the Mal’s menu of great food, great service and great staff is Food and Beverage Manager Sean Robertson. Sean has joined the team after more than a decade working on cruise ships, but is now making sure everything is shipshape on Queen’s Road.

At the end of the week, the Mal shrugs off the suit and celebrates with Bubbletime on Fridays from five till seven.

There are special offers on champagne, complimentary canapés and mini-sliders, and the bar staff are armed with bubble guns. Sunday mornings are given over to a decadent brunch, starting with Bloody Marys, then a never-ending parade of enticing charcuterie, cheeses, omelettes, before a selection of main courses and mouth-watering desserts. At £22.95, it’s excellent value and will probably fill you up till Tuesday!

Soft boiled egg crushed with butter on toast- I would eat it all the time if I could.

• 100g Black Pudding

• 15ml Vegetable Oil

• 1 litre Chicken Stock

• Egg Wash & Breadcrumbs

• 15g Butter

• 200g Carrots

• 50ml Chicken Gravy

• Malden Sea Salt

• ¼ Head of Celery

• 1 x Handdived Orkney

• 300g White Onion

• 500ml White Wine

• ¼ Lemon (Juiced)

• 100ml Chicken Stock

• 5g Malden Salt

• 15g Butter

• 10g Castor Sugar

• 2g Dried Chilli Flakes

METHOD Take the skinned and trimmed pork belly and season with the spice mix. Rub in well then place in the fridge to marinade over night or for a minimum of 12 hours. After this time, wash thoroughly and pat dry. Place a tray onto the stove and add the chunky carrots, celery, onions. Add the belly, the wine, the aromatics and the stock then gently bring to the boil before placing into the oven 150oc for approximately 2.5 hours or until tender.

Remove from the oven and allow to cool slightly before placing into a lined gastro tray. Place into the fridge and top with a weighted gastro tray, overnight. Next day remove from the tray, trim and portion.

Place the portioned pork belly into a hot frying pan containing hot oil and caramelise on all sides. Cook until a core temperature of 82oc has been achieved. Remove from the pan and keep warm. Whilst there is still heat in the pan add the cleaned and prepared scallop. Caramelise well then turn over for 20 seconds before adding a squeeze of lemon juice. Removing from the pan and season with Malden sea salt.

Deep fry the black pudding beingets until golden brown and a core temperature of 82oc has been achieved. Plate as per picture with the pea puree, apple puree and crisp crackling.

CURLING INITIATIVE EXPERIENCES INCREASED POPULARITY FOLLOWING SOCHI SUCCESS Following the success of local Team GB curler and manager at Curl Aberdeen, Tom Brewster, at the Sochi 2013 Winter Olympics, the centre has experienced an increase in demand from schools interested in curling sessions.

Saltire Energy, a supplier of drilling tools to the offshore oil and gas industry, has committed £24,000 to the Curl Aberdeen Initiative, Curling for Schools, which aims to provide 500 school children from across Aberdeen City and Aberdeenshire with free curling sessions each year.

Saltire Energy’s three year sponsorship is being used to transport the pupils to the sessions at Curl Aberdeen.

So, we thought we’d try a bit of urban hiking and take a closer look at Holburn Street, which has recently become much more fashionable now that Trend’s office is located at number 192! The street is about a mile and a half long if you go all the way from Union Street to Bridge of Dee, so you can either take it as a three mile round trip walk, or stop midway down or return up the other side of the road.

We all know that a bit of exercise is good for you and cheerfully admit that Scotland’s scenery has its merits. Those majestic snow-capped mountains make a jolly pretty screensaver, for instance.

The trouble with the great outdoors is that few hills have really good shoe shops at the top, mountains tend to lack the perfect spot for a quick coffee and the wilderness is a just a wee bit wet, windy and wild for Trend’s taste.

If it’s been a while since you last took a walk in the city centre, you’re in for a few surprises, since Holburn Street now boasts a remarkable selection of galleries, informal restaurants, watering holes and some of the most interesting independent shops in the North-east.

Park at the multi-story on Chapel Street and head for the church on the corner. This is the Scottish Episcopal Church of St James the Less, who seems to have been one of the more obscure apostles.

If the church happens to be open, the war memorial and the stained glass windows are worth a look.

Between the church and the Glentanar Bar on the corner, you’ll find a few charity shops. Run For It offer great advice on finding the right fitness footwear and long-time Aberdeen favourite Blue Moon is one of the city’s best appreciated curry houses, while Josephine’s, on the other side of the road, has excellent pizza and tapas and encourages you to bring your own bottle.

As you cross over Justice Mill Lane, there’s a strange Art Nouveaux painted tower in the middle of the road. This is a snazzy ventilation shaft from an old cable railway that ran from Holburn Street to the old Central Post Office on Crown Street and then down to the tram sheds on Millburn Street.

If you’re already exhausted, try The Foundry for a pick me up, otherwise take a tour round Rosie’s, Turning Point Scotland’s craft and gift gallery. Some of the textile products are really lovely and the artwork is always worth a look.

Heading down, cross the road for Nature’s Larder, which is packed full of health foods, supplements, delicacies, herbs and spices.

The staff are always friendly and happy to help, too. Alpine Bikes sits on the corner and is superb for specialist bikes, children’s cycles or getting kitted out if you’re brave enough to take to the city’s cycle lanes or ride off-road. If you have a cycling mishap, Aberdeen’s Spiritual Healing Centre is just a few doors away, next to a Chinese Medicine Centre and a chemist, giving you a full range of recovery options.

The Malt Mill has long held a reputation as one of the best venues for live music in the city and even hosts a monthly burlesque art night!

A couple of doors along is Oil and Glass, the Life With Style Award winning studio and gallery which has recently located from Torry. They often have interesting workshops as well as work from local and emerging artists. Opposite this block, you’ll find the Holburn Gallery, which carries a well-curated selection of original

contemporary Scottish art, limited edition prints and some quality sculptural pieces.

Ace of Blades provides a traditional Turkish cut throat razor shave, complete with flaming wads of alcohol soaked cotton to singe ear and nose hair off. Ladies and the more circumspect of our male readers should pop round the corner to The House on Great Western Road for some great day spa treatments and head to toe pampering.

This section of Holburn Street is buttressed by two scions of Aberdeen’s retail scene, Archibald’s on the corner of Great Western Road is a tardis-like building with a huge selection of traditional and modern furnishings and finishing touches. On the other side of the street, Country Ways has been in business for forty years, selling well-cut country clothing and equestrian supplies. It’s the retail equivalent of Country Life Magazine. They have an unexpectedly good choice of gifts and accessories too.

Caffe Crema is perfect if you’re feeling peckish. The hearty home made soup is always delicious and the cakes are sublime.

Naturally, it’s also the home of great coffee.

They’re really passionate about using quality ingredients and they also love kids, so the atmosphere is really relaxed.

Make sure you’ve wiped the remains of your treat from your hands before exploring the Dress Agency. Many of the North-east’s high profile socialites consign their evening and event wear here, sometimes unworn, meaning there are bargains to be found, as well as unusual labels and finishing touches from hats to heels.

Pranzo is another Trend lunchtime fave, big on fresh ingredients and robust flavours as well as generous portions. They’ve recently won a Healthy Eating award and we like the make-your-own salad option and the fresh soups. The chicken wraps are recommended by at least one Trend staffer.

Like many people, I thought cruising was only for posh octogenarians or, conversely, that it’d be like Butlins at sea.

I’m happy to report I was completely wrong on both counts.

Cruising is simply a brilliant way to explore new places, without the normal hassles associated with travelling. Passengers are younger than you might expect, always willing to share tips and universally affable. Solo travellers and those with mobility problems are exceptionally well catered for too.

We joined the cruise halfway through the itinerary, flying in to Saint Maarten and heading straight to P&O’s Ventura. Our balcony cabin was equipped to 4-star standards, with a proper bathroom, chilled champagne and plenty of wardrobe space. You can choose to unplug yourself from the daily grind and relax, or design a trip filled with excursions and on-board experiences.

The next morning, we were greeted by the lush green slopes of Tortola as we headed to port. Road Town is popular with well-heeled yachties and cruise passengers alike. The school was established in 2000, and has since earned a reputation as one of the most important teaching centres in Scotland, which suited us just fine! Neil took us to the teaching bay where he set up the camera to film us, and after about ten minutes we viewed our progress on the video. He gently pointed out what we could do to improve our game, and we then headed back to make corrections. Having been advised by Neil that the best way to improve is to actually tackle the

Since this is the 40th issue of Trend, we thought we’d dedicate our art feature to Peacock Visual Arts, the city’s printmaking headquarters which has a world-wide reputation for outstanding work. We caught up with Peacock’s Kirsty Young to find out what’s new…

'We have two large printmaking workshops at Castle Street, with facilities for screenprinting, etching, lithography, woodcut, linocut and bespoke framing.

The workshops are available for members of the public to use at a nominal cost and there’s a real sense of community there, with our regular users and in printmaking and bookbinding classes.'

'We also have a photography dark room, an edit suite and recently started MAKE aberdeen which has digital fabrication tools such as a 3D printer, laser cutter and embroidery machine, based at the Seventeen site on Belmont Street.'

Couture fashion designer Isabelle Randall with her wealth of experience is definitely good news for the discerning North-east dresser.

Having cut her teeth at the Batley School of Art followed by a BA at Leeds University, she was then one of only ten people to secure a place to do a Masters Degree at the Royal College of Art in London.

Isabelle then worked in some of the best known couture fashion houses in London, rubbing shoulders with Naomi Campbell

and learning her craft with the likes of Roland Klein in Kings Road and Bella Freud. However despite this extremely prestigious-sounding start to her career, Isabelle was not interested in HE at school and still thinks of herself as predominantly a designer, rather than a seamstress.

Many of the practices she employs are traditional crafts in their own right, pattern drawing, fabric cutting, tailoring and garment altering. Isabelle passes on some of these skills at the evening classes she teaches at Gray’s School of Art, starting by teaching students to cut a pattern and finishing with an exhibition.

Isabelle opened her shop at 693 George Street two and a half years ago, although she has been in the bridalwear business for 10 years. She has an innate love of fabric and a natural talent for customer service, preferring the personal approach to the 'pile ‘em high and sell ’em cheap' school of economics.

Isabelle takes time to get to know each customer, drafts all patterns from scratch and the resulting garment is testimony to her dedication. As she says, 'I want the finished item to capture the essence of the client, to showcase their personality, as well as being fit for purpose'.

Most garments are made to measure, but Isabelle has put together a Bridal Collection so that a bride visiting the shop has a springboard for her imagination. Because she makes and designs every piece, Isabelle is able to mix and match according to size, shape and preference so that no-one has to settle for second-best. Her current designs include the statement pieces Black Swan which features

a skirt made of feathers, and the sumptuous Stewart Rose which encapsulates highland wedding glamour.

When asked about trends and fashions, Isabelle is clear that her style is very much her own, and influenced by the glamour and style she sees around her. Major influences recently have been the State Rooms in Buckingham Palace, Fred Astaire & Ginger Rogers and the Degas ballerinas – bygone glamour with a contemporary stamp. Isabelle adds, 'I’ve always loved glamour, I’m just so glad it’s back in fashion!'

As early as the 1400s, Scotch Whisky was being distilled under the name Uisge Beatha, or ‘Water of Life.’ The exact origins of the drink are not known, though it is believed that monks passed down the art of distillation, which had been used by Middle Eastern doctors to produce medicines.

The original liquid would not be palatable to the modern-day connoisseur, but this early version was the building block for what has become a beloved and honoured tipple for millions of people the world over.

Though it began life as a cottage industry, modern whisky production is strictly regulated and only whiskies that adhere to stringent licensing guidelines may call themselves Scotch Whisky. By definition, Scotch Whisky must be produced at a distillery in Scotland and must be aged there in oak casks for a minimum of three years – rules that ensure that Scotland keeps hold of this trade, which pours over £3 billion per year into its economy.

How do you get a high flier to come down to earth long enough to speak to you?

In the case of Aberdonian Carol Benzie, the busy, busy managing director of Aberdeen International Airport, you wait patiently until she touches down at base from her travels to see you.

Even then, as with the occasional flight, there can be delays and I had six hours to fill in as the mum-of-two fulfilled her public duty and did jury service on the day of our appointment. She checked in for our brief chat in the check-in area of an airport which is undergoing massive changes before your very eyes.

Quite refreshingly, Carol admits: 'We are addressing our shortcomings; we have listened to our customers and users.'

Big bucks in the region of £15million are being spent as you read this, so expect to see something new and different happening over the next three years. Were you one of the record 3.5million people who used the airport last year?

When she is not buzzing about, Carol enjoys nothing better than relaxing at home near Newmachar Golf Club with husband Roger, a project cost engineer with BP. She lists her hobbies as golfing, playing the guitar, going to concerts and walking the dogs.

The couple have a daughter Hazel, 22, who is completing a law degree at Robert Gordon University and hopes to become a contracts lawyer, and a son Greig, 20, who is a bit of a high flier in his own right.

At 18, he became the youngest male graduate of the Royal Ballet School in London and is already making a big impression with the Vienna State Ballet.
