However, it is the trace of human presence that is frequently at the heart of his work. Ross Mitchell obtained Honours with First Class at Heriot-Watt University Edinburgh College of Art in 2003, and was awarded first place and overall winner of the Fuji-Film Student Photographer of The Year Awards 2003 for his social documentary work. www.rossmitchell.com

“How do you do smoky eyes?!” It’s one of the most frequently asked questions…and it’s actually not as hard to achieve as you think! Here’s how. Prep the eyelid with a good eyeshadow base. Apply kohl pencil as close to the eyelashes as possible, top and bottom, including the inner rim for a really intense look. Don’t worry about the eyeliner being too neat at this stage - just get it roughly symmetrical. Next - blend! Good blending is the key to smoky sophistication. Start with a grey or brown, and smudge over the eyeliner. This instantly softens the look, evens out any kinks in the liner, and the smoky effect starts to take shape.

From here, start to build up the intensity by adding a darker shade of the colour you started with, or go for it with a black! Remember, a little goes a long way and you probably don’t need as much product as you think.

Fluffy bathrobes were produced, and a relaxing coffee in the member’s lounge helped us to unwind before being whisked away to one of the newlydecorated treatment rooms. I had the E’SPA Salt and Body Scrub, followed by an Aromatherapy massage, and Sarah was treated to the Express facial and the neck and shoulder massage. Our treatments were fully explained to us and carried out with the utmost professionalism by the friendly, well-trained therapists. After lunch, we were given time to enjoy the Spa area before our manicures and pedicures. Eventually we had to leave, as normality beckoned, but we felt refreshed and content and would thoroughly recommend this little haven to anyone looking for a day of decadence and escapism. 11

I had the E’SPA Salt and Body Scrub, followed by an Aromatherapy massage, and Sarah was treated to the Express facial and the neck and shoulder massage. Our treatments were fully explained to us and carried out with the utmost professionalism by the friendly, well-trained therapists. After lunch, we were given time to enjoy the Spa area before our manicures and pedicures. Eventually we had to leave, as normality beckoned, but we felt refreshed and content and would thoroughly recommend this little haven to anyone looking for a day of decadence and escapism. 11

Your name and job title? Christian Recomio, executive chef at Fusion Bar and Bistro in North Silver Street, Aberdeen. Who are your fantasy dinner party guests? American writer Hunter S. Thompson, food writer Anthony Bourdain and acclaimed chef Ferran Adria. My fantasy almost came true, as Adria came into the restaurant just after we opened. He was in Aberdeen to receive an honorary degree from the university and I got to cook for him, which was amazing. What are your top three desert island ingredients? I couldn’t live without foie gras, brioche and Tanqueray No.10 gin. What is your food heaven and your food hell? I love eating tapas on the beach in Barcelona. I’ve been to the city seven times in the past two years and it is a big influence. Could happily live without McDonald’s. Which dish says ‘home’ to you? My dad is Mexican and my mum is from Aberdeen, so my family has a diverse approach to food, but the smell of a barbecue always makes me think of home. What’s always in your fridge at home? I don’t have a lot of time to eat as I’m always on the go. I have a lot of fruit at home, so I can always grab something on the way out.

Locally caught Halibut with Saffron Pepperonata Ingredients (serves 4)

Method:

4-6oz halibut fillets 1 red pepper 1 yellow pepper 1 cup of chopped shallots 1 clove of garlic 10 new potatoes, sliced 1 packet of fine green beans White wine vinegar Olive oil Cinnamon stick Fresh thyme Cumin Coriander Seed Saffron Garlic butter to season

1. Slice the onions finely and sweat in a pan until tender with garlic, thyme, cinnamon stick, cumin, coriander seed and saffron. 2. Meanwhile, thinly slice the red and yellow pepper and heat gently in a separate pan with a touch of white wine vinegar until soft. 3. Par-boil the new potatoes. Remove from heat and slice before sautéing in olive oil seasoned with smoked rock salt and freshly ground pepper. 4. Take the halibut fillet and pan fry in a little olive oil for 3 minutes each side. 5. Serve on a bed of sautéed potatoes, shallots and green beans and drizzle with garlic and herb butter.

Thompson, food writer Anthony Bourdain and acclaimed chef Ferran Adria. My fantasy almost came true, as Adria came into the restaurant just after we opened. He was in Aberdeen to receive an honorary degree from the university and I got to cook for him, which was amazing. What are your top three desert island ingredients? I couldn’t live without foie gras, brioche and Tanqueray No.10 gin. What is your food heaven and your food hell? I love eating tapas on the beach in Barcelona. I’ve been to the city seven times in the past two years and it is a big influence. Could happily live without McDonald’s. Which dish says ‘home’ to you? My dad is Mexican and my mum is from Aberdeen, so my family has a diverse approach to food, but the smell of a barbecue always makes me think of home. What’s always in your fridge at home? I don’t have a lot of time to eat as I’m always on the go. I have a lot of fruit at home, so I can always grab something on the way out.

I worked for Paco Guzman in Barcelona last year, which was great, and I’ve also learned a lot from my mum as she has been in the catering industry for 30 years. Locally caught Halibut with Saffron Pepperonata Ingredients (serves 4)

Method:

4-6oz halibut fillets 1 red pepper 1 yellow pepper 1 cup of chopped shallots 1 clove of garlic 10 new potatoes, sliced 1 packet of fine green beans White wine vinegar Olive oil Cinnamon stick Fresh thyme Cumin Coriander Seed Saffron Garlic butter to season

1. Slice the onions finely and sweat in a pan until tender with garlic, thyme, cinnamon stick, cumin, coriander seed and saffron. 2. Meanwhile, thinly slice the red and yellow pepper and heat gently in a separate pan with a touch of white wine vinegar until soft. 3. Par-boil the new potatoes. Remove from heat and slice before sautéing in olive oil seasoned with smoked rock salt and freshly ground pepper. 4. Take the halibut fillet and pan fry in a little olive oil for 3 minutes each side. 5. Serve on a bed of sautéed potatoes, shallots and green beans and drizzle with garlic and herb butter.

Lunch Review: Café Boheme Restaurant Unable to recall when I last dined in a French restaurant outside of France, Café Boheme on Windmill Brae has been on my ‘must visit’ list for a while. The split-level wood panelled restaurant has bags of character. This being lunch time, I had planned to be restrained and opt for the express lunch menu, but willpower went out of the window when faced with the reasonably-priced Table D’Hote menu. (£9.95 1 course/ £12.95 2 courses/£14.95 3 courses.) As usual I couldn’t make up my mind, but I was helped by our attentive waiter who described the two dishes I favoured – the ‘plat du jour’ (wood pigeon wrapped

A few were available by the glass, and I enjoyed a soft, dark berry-fruited Cotes du Duras from South West France.

Although we didn’t indulge in desserts, the ones which arrived at the next table looked very inviting. We concluded with a coffee, and departed relaxed. drew me to the sirloin steak. Cooked medium as requested, it sat atop an abundant sauté of wild mushrooms with vine roasted tomatoes, and had its own jug of a fiery peppercorn sauce (£12.95). It was well put together, classic bistro fare and sat nicely against a glass of structure, berry-fruited Sicilian Nero D’Avola. My other half chose a generous and flavoursome bowl of linguini with chicken and pesto sauce (£8.50). The children were happy with their stone-baked pizza (£7.50), topped according to their strict specifications! We shared an amaretto and pear cheesecake, and helped the kids with their refreshing pear and lemon sorbets. Pear Sazerac 25ml Buffalo Trace Bourbon 25ml Xante Pear Cognac 18.75ml La Fee Parisian absinthe 12.5ml Demerara sugar syrup Quarter of a Bartlett pear 3 dashes of Peychaud’s Bitters In a brandy glass, add the absinthe, some ice and top with water. Leave to chill. Muddle a quarter of a pear in a Boston glass, then add the bourbon, cognac, sugar syrup and bitters. Top with ice, add the steel tin and shake for 10 seconds. Proprietor Anne-Marie Bain has drawn her inspiration for this Rose Street coffee shop from the culinary creations she sampled and appreciated during her world travels. Although she has successfully imported the best examples to her native Aberdeen, her admirable commitment to supporting local suppliers and promoting organic produce is the hallmark of the Food Story brand.

Now, the Aberdeenshire schoolgirl is gliding along the catwalk to fame as one of the UK’s most promising young models. “When I was aged 14, my brother heard about the Elite Model Look competition and suggested I enter. That’s when my big break arrived,” recalls Morven from Newmachar.

When father and son Chic and Jason Henderson first creaked open the door of the 19th century Knock Castle in Crieff, their three-year search for a Scottish home for their longharboured business dream was finally called off.

Chef Jason and his father have invested more than £1 million in the sympathetic refurbishment of the former baronial home of shipping magnate Lady McBrayne, which proudly presides over three-and-a-half acres of stunning woodlands. We were guided up the sweeping staircase to the majestic Drummond Room. Adorned in soothing eggshell and soft golden hues, the centrepiece of the generously proportioned room is a grand four-poster bed whose pillows are embossed with the Knock Castle name in fine golden threads. In the 12-roomed spa, I sampled the heavenly ‘Take Thai-M-Out’ treatment, during which the body is stimulated by boluses containing sea salt crystals and lavender in one of the best massages I have ever experienced. It was followed by a luxury facial. It sent me floating in to dinner, where Yvonne seated us in ‘the alcove’ – an intimate private moon-shaped dining space overlooking the castle entrance. 42

When father and son Chic and Jason Henderson first creaked open the door of the 19th century Knock Castle in Crieff, their three-year search for a Scottish home for their longharboured business dream was finally called off.

Chef Jason and his father have invested more than £1 million in the sympathetic refurbishment of the former baronial home of shipping magnate Lady McBrayne, which proudly presides over three-and-a-half acres of stunning woodlands. We were guided up the sweeping staircase to the majestic Drummond Room. Adorned in soothing eggshell and soft golden hues, the centrepiece of the generously proportioned room is a grand four-poster bed whose pillows are embossed with the Knock Castle name in fine golden threads. In the 12-roomed spa, I sampled the heavenly ‘Take Thai-M-Out’ treatment, during which the body is stimulated by boluses containing sea salt crystals and lavender in one of the best massages I have ever experienced. It was followed by a luxury facial. It sent me floating in to dinner, where Yvonne seated us in ‘the alcove’ – an intimate private moon-shaped dining space overlooking the castle entrance. 42

It’s hard to believe that the 5-star Loch Ness Lodge retreat with its five luxury holiday cottages are a new addition to the Highland landscape as they blend into the wooded hillside so naturally. Just nine miles from Inverness and set in 18 acres overlooking the water, Loch Ness Lodge is a seven bed-roomed luxury haven which was unveiled in February by Scott Sutherland and sister Iona. Striking an amiable balance of the traditional and the contemporary, the team at the Lodge engaged Edinburghbased Luma Interiors to create a timeless elegance with a modern day twist. Everything has been carefully selected, from the original art work – some of which is for sale - to the fresh flowers. All seven bedrooms in the Lodge have been individually styled to an extremely high standard, with breathtaking views over Loch Ness. Our room, Affric, incorporates the grand turret of the Lodge and boasts panoramic views. The bathroom has a double-ended jacuzzi bath, a walk-in shower and luxurious Penhaligon toiletries. We were invited to join Scott and Iona for afternoon tea, homemade biscuits and chocolate cake, during which he shared with us his passion for the Lodge, and his experience in the premium hospitality sector at Boath House and Kinnaird Estate. Says Scott: “We aim to create a memorable experience for guests where they can relax, feel comfortable and at home, as if part of the family. They can enjoy the great food prepared by our talented young chef, Ross Fraser, who was trained at Skibo and under the watchful

eye of Marco Pierre White, and leave feeling totally spoiled and content.” That ethos was clearly evident in the dining room, where we were welcomed to dinner by our hostess for the evening, Katie. The aroma of freshly baked bread rolls whetted our appetite for a fivecourse fare. Ross had created a menu which blended easily from one course to the next at a perfect pace. Our table overlooked the dramatic scenery of the darkening Loch Ness and the excellent wine topped it off. Our visit to the Highlands ended all too quickly, but not before the full Scottish breakfast along with freshly squeezed orange juice to set us up for the day ahead. My only disappointment was that I did not have time to sample the beautiful spa area with hot tub and sauna which we peeped into before leaving. Aberdeen artist, Bob Harper’s greatest hope is that one of his rock ’n’ roll heroes, Keith Richards, will live well into his 80s. After all, he muses, just think what that face will look like then… Bob has combined his love of rock ‘n’ roll with his passion for portrait painting. The words that form the emotive lyrics to his subjects’ most captivating songs are etched into the lines of the face in his paintings. The effect creates an atmospheric portrait that not only tells the story of the subject, but also of the painter who clearly wants to leave for posterity his appreciation of the greatest rock ‘n’ roll legends of all time. Bob Harper is a man fascinated by faces. “There are six billion of us on the planet and we all look different,” says the former teacher. “My work combines my wonder of

faces with my love of calligraphy and song lyrics, which all too often go unheard.” His first rock ‘n’ roll portrait was of Bob Dylan, followed by John Lennon, whose face and hair are mapped with the lyrics of no fewer than 17 songs. He plays the songs over and over during each work’s construction, allowing the lyrics to form the expression on the face. Around 50 portraits are on sale on-line, although most of his work is commissioned. One face that tested the artist’s tenacity was that of Cliff Richard. “I just couldn’t

get it. It wouldn’t flow,” he admitted. The Music Club is Aberdeen’s newest and most interesting venue for laid back tunes and food. The venue is on Langstane Place, just opposite Dusk and Eljo’s and has been designed to make music accessible to anyone from seasoned performers to those interested in picking up an instrument.

You can pick up the what’s-on guide at the venue or join the mailing list. Spontaneous jams throw up unexpected combinations. The atmosphere is very welcoming and supportive, and there’s always something going on. The Music Club is rapidly staking a claim to be the musical heart of the city.

Gordon Middler and Mark Ockendon worked for almost a year to strip the building out and design the new café bar and performance areas, and it has clearly been a labour of love. “Over the years, I had been teaching music, performing, working as a session musician and going to see a lot of live bands, and I thought it would be great if you could do all that in one place and grab something to eat with your friends at the same time,” explains Gordon, “and that’s where the Music Club came from.”

“People have commented on the energy and how different it feels - a great time with no pressure,” enthuses Gordon.

The programme of performances is very diverse, so there’s something for everyone.

The café bar and performance areas are already up and running and the venue also offers rooms for hire. Plans are in place for workshops, tuition, and an after school club early next year. Mark and Gordon hope that they can replicate the Music Club’s success in other cities over time, but for now this comfortable, entertaining venue is a one-off. Gordon calls it a fresh vibe with fresh coffee – I’d call it just what Aberdeen needs.

It was marketed as a cheap and practical town car, measuring just 9ft.9” long and powered by a 479cc, air-cooled engine – this truly was one of the first city cars. By the time it ceased production in 1975, the 500 brand had sold a staggering 3.6 million cars. So no pressure then for the new 500, which was launched again in March 2007, exactly 50 years after the launch of the Cinquecento. After driving the new 500, similarities between the new VW Beetle and the BMW Mini become apparent. They are all striving to become the new icon of the Noughties. If it was on price alone, the Fiat would win hands

down because the price of this car starts at £8,100. There are three engines available: a 1.2 litre 8v unit, the 75 bhp 1.3 litre multijet common-rail turbo diesel and a 85 bhp 1.4 litre 16v engine, coupled to a 6-speed manual gearbox. Later this year will come the Fiat 500 Arbarth which will have a 1.4 litre engine with a variable geometry turbo charger; this will produce 135 bhp and 180 nm of torque. My impression of the 500 is that it is well built, and has a neutral handling chassis which I liked – the engine does need to be revved quite hard, which really is no hardship, and I can imagine crazy Italian drivers whisking through the streets of Milan. The car pictured is in Funky White I can well understand why Fiat picked that name to describe the colour. This little 500 must be a contender for Urban Car of the Year, but whether it can knock the original Cinquecento off its pedestal, only time will tell. 57

Signing off with. . . .

Commonwealth gold medallist David Carry recently returned from Beijing Olympics having succeeded in breaking four British records. With plans to add to his medal collection, it was straight back to his gruelling training regime. The young swimmer, whose family run, Jamison & Carry, spared a few minutes to chat to Trend. what makes David Carry tick? Both in and out of the pool, I set goals and have ambitions about almost everything I do. I want to get that medal in London in 2012, but first I need to concentrate on the Commonwealth Games in Delhi in 2010. what do you like most about living in Aberdeen? The people: The number of well wishers who take a genuine interest in my swimming career is amazing. what would be your ideal holiday? I love the Greek Islands. The flight is not too long and it is almost guaranteed great weather. what’s your ideal Aberdeen night out? When I came home after winning in the Commonwealth Games, most of my friends were there and it was a wonderful celebration. what would be your ideal weekend? Relaxing after a hard week’s training. I spend most weekends with my girlfriend, who follows a similar training regime (but claims hers is harder!) Sunday lunch is always the highlight! 59
