My first CD single was All Saints ‘Never Ever’. It reminds me of when I first had my own money to spend, and makes me feel young.

I remember my Dad and I getting Michael Jackson's ‘Thriller’; it was the first CD I had ever had.

The first single I bought was INXS and it was a cassette tape. It reminds me of my summer after 6th Grade when I was really into trick biking.

I got my first CD at Christmas time. It was Bananarama, and it was the first present I opened. I always remember because I didn’t have anything to play it on - it turned out that a CD player was the next present that I opened.

Personal trainers Lynne Greig and Donna Petrie have achieved their perfect shape through a combined programme of exercise and nutrition – and they’re on hand to share their body beautiful secrets with David Lloyd Leisure members.

“We encourage them to keep a realistic diet diary, and we take account of their most and least favourite foods. Rather than a quick and temporary fix, these are tips that will help keep that new body for longer.”

Personal trainer Donna, who joined the team last month, explained: “The first step is to set yourself smart, achievable long-term goals in the gym. We encourage short, focussed work-outs with good intensity, including resistance training with weights and fat-burning interval training for the cardio.”

The results speak for themselves. A man who took part in a recent David Lloyd Leisure Aberdeen Lose ‘n’ Shape programme shed an astonishing 20 lbs in only two months. And by attending only two or three sessions a week and eating healthily, an Aberdeen woman recently lost a stone in just six weeks.

While exercise is an important contributor, nutrition accounts for a staggering 80 per cent of the average weight loss, as Lynne explained: “We advise members to eat five small meals a day which has the potential to burn 350 calories alone to increase metabolism. Include a high protein food in each, as well as fruit and veg. Cut down on high GI-carbs, breads, pasta, cereals and starchy foods, and drink plenty of water.

Perhaps a wine course could be the answer. My courses are informative, informal and packed full of information from grape growing and wine making to the wine growing regions of the world. Tasting is an integral part of any wine course and event. You can tell so much just from the appearance of the wine based on the intensity of the colour through to the legs (how the wine clings to the side of the glass could indicate higher levels of alcohol or sweetness). Swirling releases the aromas. Every grape has its own personality and aroma and flavour traits which are further influenced by the growing conditions, climate, soil and the skill and art of the wine maker. Taking a good slurp of the wine and swirling it around the mouth will emphasise different taste sensations such as acidity, tannin and body as well as bringing to the fore different flavours. 26

Crisp Sea bass Fillets

Ingredients: To feed 2 persons: Sauce Vierge 2 banana shallots 1 clove of garlic 16 coriander seeds 3 plum tomatoes 100ml L.B.V port Olive oil and lemon juice (preferred taste) Crushed Potatoes: 8 jersey royals Zest of 1 lemon Tablespoon of crème fraiche Teaspoon of fine herbs Seasoning (preferred taste) Fish: 4 Sea bass fillets (pin boned and scaled)

Salad: Coriander leaves Curly endive Rocket Method: Sweat coriander seeds, shallots and garlic. Reduce port with shallots until syrup consistency. Add peeled, de-seeded and diced plum tomato, add lemon juice and oil olive. Score Sea bass fillets and fry until crisp. Boil jersey royals and peel. Add lemon zest and crème fraiche to jersey royals. Crush jersey royals with a fork and add fine herbs. Place Sea bass fillets on top of potatoes. Dress with vierge and small coriander salad. Enjoy! 29

A Jewel in the Town Sinclair's Bistro Tucked away behind Sinclair’s Jewellers in Inverurie lies a true gem in fine dining. Sinclair’s Bistro opened recently and has, up to now, kept a low profile; consequently, a predominantly local clientele has been sampling its delights with huge success. A coffee shop/restaurant by day, it transforms into a sophisticated Bistro at night, offering a very different style of menu. We were greeted warmly by the Maitresse d’ Carmen Johnstone, who offered us a seat in the bar area, where we ordered drinks and perused the menu. Although not bamboozled by a huge range of courses, what is on offer has been 30

carefully thought out, with all ingredients freshly sourced, presenting you with a highly original menu. As well as choices of snacks to have whilst you wait, there are 3 choices of tapas and/or starters, followed by the main course and dessert. My friend and I ordered one of the tapas between us as our starter; it consisted of beef satay, fish cake and chicken with coriander kebabs.

Howies a Decade of Delights Howies on Chapel Street first opened its doors in 2000 and quickly made a name for themselves thanks to their trademark blend of fine dining and affordable prices. To commemorate their 10th anniversary, Howies invited some of their most loyal customers for a complimentary evening to try a selection of dishes from their new spring menu. And so, on an unseasonably sunny April evening, we ventured down to see what they had to offer. The VIP treatment began from the minute we walked in the door. Glass of champagne in hand, we were shown around some smart private function rooms (available for business meetings and social gatherings) before being seated at our table.

Soon we were presented with a selection of canapés: Seared scallops with pea puree (delicious and perfectly cooked), Asparagus with lemon hollandaise (likewise) and Rare peppered Scottish lamb with redcurrant compote (our favourite, with the sweet redcurrant contrasting pleasingly with the spice of the thinly sliced lamb). After pausing to enjoy a refreshing Argentinian Chablis, it was time for the starter selection. The grilled goat’s cheese, red pepper & aubergine toast was pleasantly mellow, but we were won over by the surprisingly intense flavours of the warm salad of duck confit with chargrilled plum and baby spinach. For the main course, we chose Monkfish wrapped in Parma ham with caviar sauce. We loved the flavourful combination of

succulent, meaty fish and dry, salty ham. Admittedly, the sauce was a little scarce and the accompanying potato and herb pancake was perhaps a little uninspiring, but overall the dish was satisfying and filling. Finally, we were presented with a selection of desserts including a vanilla cheesecake with soft rhubarb compote, and a milk chocolate and espresso mousse. But, by now fit to burst, the highlight here was a refreshing (and light) duo of sorbet, complimented with a sweet and fragrant rosehip tea syrup. The modern décor and tasteful lighting created a relaxed and welcoming atmosphere, while the waiting staff were friendly and attentive. All in all it was a great evening out.

Tor-na-Coille is totally tempting The Tor-na-Coille Hotel has undergone a refurbishment under the guidance of the new owners, who also own Drumtochty Castle, known as one of Scotland's premier wedding venues. It’s apparent that the attention to detail, great service and wonderful food has been transferred to Banchory in a very successful manner. Tor-na-Coille is Gaelic for a small hill amongst the trees, and it is this location that affords the hotel stunning views over Lower Deeside and towards the river. The grounds offer a pleasant walk for visitors and diners alike. Inside, the lounge areas are stylishly understated but luxuriously comfortable. The atmosphere is the modern equivalent of an

Edwardian Gentleman’s club, unfussy and unpretentious, but immersed with relaxation, quality and a funky edge. The restaurant is shaping up as one of the best in Aberdeenshire, with a well deserved reputation for excellence based on a pool of well-sourced Scottish ingredients. Game, locally raised beef and seafood feature on the seasonally-led menu. Accompanying ingredients are modern without being intimidating and prepared by a chef whose main concern is taste. Desserts are to die for. The bar menu is also superb for an informal meal, with an array of tempting options including a plate of local smoked meats from the Dinnet Estate, Shetland salmon and free

range chicken. The Tor-na-Coille also caters for weddings and other functions with a great ballroom that seats eighty. Here too, the hotel’s commitment to putting the customer first is evident, as each event is unique, with none of the conveyerbelt approach that can make those special days seem slightly less special. Financial management team digs deep for charity The team from Russell Gibson Financial Management closed their Chattan Place office recently to spend the day volunteering at one of VSA’s care homes. Directors and employees devoted the day to restoring the residential home’s garden to give service users a pleasant area to enjoy in the summer. The range of VSA’s work was brought to the attention of Russell Gibson director Tom Hyslop, when he attended the 2009 VSA Ball. As well as donating materials, the Russell Gibson team extended the patio, laid border walls, cleared pathways, planted pots and secured small walls with mortar work. Alan Ball, Russell Gibson Financial Management director, said: “Having discovered quite how diverse VSA is and just how many people it helps

across the North-east, we were keen to assist in any way we could.” The residential care home provides accommodation and support to eight people with mental illness, giving them the opportunity to re-establish themselves in the community. Bergen nestles cosily round the harbour encircled by seven mountains which are dotted with envy-inspiring individually designed houses. It’s an intensely civilised city, ideal for anyone who values good food, pleasant surroundings, excellent shopping, incredible views, a wide range of cultural and entertainment options and comfortable hotels. Everything is immaculate and well thought out. Highlights include the Hanseatic wooden wharf area which is well preserved and hides a cluster of small designer artisan stores, offering everything from interiors to jumpers and the choice of a cable car or funicular railway to the mountain tops. It’s also a great city for aimless wandering, with something of interest around every corner.

hiking and biking all on offer. The wooden houses are picture-book perfect, the waters clear, and the landscape looks like a geography teacher’s wet dream. Fjord Norway offers a clean, green and serene break that lets you reconnect with nature and rebalance yourself. It’s a concentrated form of tranquillity that no amount of yoga classes and CDs of whale song can replicate. If you’re feeling stressed out, I’d recommend it. Stay at the Walaker Hotell which has been open since 1630, and is owned by the ninth generation of the same family. They’ve had a while to perfect their combination of luxurious accommodation, mouth-watering food, attentive staff and an on-site art gallery – and you can’t beat lying in the bath looking out over the water.

Further down the fjord, the Torvik Hotell offers a funky, relaxed take on tradition which makes an ideal base for hunting and fishing. The chef’s so good that grown men professed an unreciprocated desire to hug him. There’s no denying that Norway is expensive- think Prada rather than Primark, but it’s worth the extra when you’ll be coming home refreshed, well-fed and glowing with well-being. It’s an ideal choice for a summer or autumn trip and they are also keen to encourage more winter visitors. Sample snow sports or stay indoors and follow Walaker owner Ole-Henrik’s advice – “drink wine and make babies...”

Combine your city break with a thirty minute flight and spend some time in Fjord Norway. Keen outdoor types will be spoilt for choice, with hunting, fishing, sailing, ice-climbing, riding,

Self-confessed ‘girlie girl’ Helen calls on her treasured childhood memories of dolls, toys and ice cream colours as the inspiration behind her exquisite collection of hand-rolled hem scarves. > words by niKi TEnnAnT

A 2008 Gray’s School of Art first class honours graduate, Helen (24) grew up on the outskirts of Alford. While her boisterous brothers indulged in rough ‘n’ tumble, she turned her attention to the preening of her beloved dolls. The porcelain faces of those dolls are influential in so many of her intricate hand drawings, which are digitally printed at Glasgow and Gray’s Schools of Art on to the highest quality silk and satin fabrics. She won the Como TexPrint Scarf Design competition shortly after graduating, which led to a week’s symposium in Italy and a subsequent spell of work experience in a Como print studio. Dream-like ‘Alice in Wonderland’ themes dominate her scarf designs. And although they can be said to transport the owner back to childhood, there’s a curious, mature sophistication about Helen’s highly imaginative creations.

With designs inspired by everyone from Matroshka Dolls in Red Square, to Marie Antoinette and even Mary Poppins, Helen Ruth’s signature scarves can’t fail to make a statement. What a fabulous magazine! My son picked up my first copy of Trend at Kings Links Golf Centre after a lesson. It's great to find a magazine featuring local people and events with fantastic competitions (I've entered them all!). I particularly enjoyed the fact that you used the local area for your fashion shoot - Johnstone Gardens, and who would have thought that Aberdeen Airport could look so cosmopolitan!

I have now made good my prize of the Garden Design I won in Trend Magazine at the end of last year. The session with Kirsty McLean was very helpful and she came up with some good ideas and advice. It was such a delight to meet Kirsty and the time passed so quickly, I was so delighted to be picked me as the winner. I used the session in my sister's garden as she recently had some building work done and was at a loss to what to do with the garden. The weather has improved so it is great to get out in the garden again.

Touched by Scotland in Oyne is well known as an outstanding crafts gallery with a great restaurant that serves some of the yummiest lunches and snacks in Aberdeenshire. It’s less well known that Robin and Jan, the owners, are keen to encourage people to try crafts for themselves. They have several studio spaces where they offer a range of one day courses in different subjects, from quilting to spinning and from felting to making jewellery from found objects, so there’s sure to be something that sparks your creativity. Complete beginners are welcome and everyone ends up with something interesting to take home. Unusually, I’m being trusted with sharp objects so I’m learning how to make stained glass in a day. The choice of glass colours and textures is amazing. We practice scoring the glass in straight lines and in curves. You need to put a surprising amount of pressure on the glass to cut it, before breaking it with pliers. Then it’s off to the grinder to roughen the edges of each piece so the foil will adhere

properly. Being one of life’s multitaskers, I manage to acquire an interesting new manicure and do a bit of exfoliation at the same time. Applying the adhesive copper foil to the edges is a bit fiddly, but it’s easy to develop a rhythm. After all the pieces are foiled, a liquid flux is applied and then we melt and apply a solder. Watching the solder flow along the joins is strangely satisfying and one by one the class all finish their pieces. Other than mine, few look like they’re first attempts.

I admit I’d never heard of JJ Bull when I received his email promoting ‘Ou Sont Les Elephants’. He explained that he’d spent 18 months working on the album, that he was proud of it, that he would appreciate any exposure... Curious, I clicked on the download link. I’m glad I did. ‘Ou Sont Les Elephants’ is an unexpected gem: an excellent folk/indie debut that proves JJ Bull to be a talented singer, musician and songwriter. He sings and plays all instruments on the album (aside from drums and violin) and has a knack for catchy melodies and playful, observant lyrics. Anyone in a new relationship might get a smile from a line in ‘Duck Soup’: "I've been trying to find/what makes you tick, tick, tick/and what makes you explode". When I meet JJ to talk about his album, he’s (rightly) full of praise for producer Ian MacPherson, also based in Aberdeen, who was also behind last year’s excellent Little Kicks debut. “The album wouldn’t be the same without him” says JJ. “He’s one of a kind - a real producer.” Songwriting aside, the most striking constant throughout the album is its production value. Each track seems to impress more than the last, with an eclectic range of instruments, choral harmonies, percussion and electronica combining in various forms, lending atmosphere and depth to his songs without drowning them in unnecessary frills. Take ‘Capital City’ for example, which suddenly explodes in a cheery mess of handclaps, strings and glockenspiel. Or ‘Tokyo’, which builds from intimate vocal-and-acoustic guitar, to a rousing string-laden crescendo assisted by all manner of shakers, triangle, guitar and electronic beats. Fittingly for an occasional busker, most of his vocals are upfront and unashamed, with little studio trickery smoothing the edges. And for those of us sickened by the ubiquity of ‘auto-tuned’ vocals (see: Glee) it’s a refreshing break from what has become a maddening norm in modern mainstream music.

Water Babe it’s ironic that Aberdeen-born Tennille de Freitas chose Everyday People initiating Change (E.P.i.C.) as the name of the charity she jointly founded. you see, Tennille’s far from everyday. in fact, she’s quite remarkable. A former pupil of Cults Academy, talented Tennille Amor followed her dream by auditioning at the American Musical and Dramatic Academy in New York at the age of 19. She was accepted and soon found herself as an extra in a movie, and an act on MTV. Her singing, acting, dancing and modelling talents saw her completing the two-year course in only 18 months. “I felt that if I was fortunate enough to pursue a career in performing arts, I wanted to do something positive along the way. Then I met friend Alexi Panos, who shared a similar vision: you don’t need money, power or fame to make a difference to the world,” explained Tennille, who lives in New York.

In 2005, the feisty friends launched E.P.I.C. – a non-profit-making organisation dedicated to bringing safe, clean drinking water to developing countries. The pair enlisted with a voluntary organisation to visit Tanzania. Only 10 residents in the urban slum had running water, but it was unclean. The rest depended on a standpipe. Tennille and Alexi joined locals in the four-times daily 3.4 mile walk to a river, from which African girls as young as eight would carry up to 20 litres of water back to their families. Tennille continued: “Because we’re asking people to donate, we need to know exactly where that money is going: 100% to the drilling of wells.”

E.P.I.C. teamed up with the new Quiksilver Women's line, who donate 3% of their graphic T-shirt sales to the drilling of E.P.I.C.'s clean water wells. Shirlaws in Aberdeen invited me to come and view their new Triumph Thunderbird. I did not know quite what to expect - the word on the street is that Triumph intends to take on the mighty Harley Davidson. That is no mean feat; it would be akin to Iron Bru taking on Coca Cola. However, after spending a day with the “T Bird”, I do believe that they have succeeded in their endeavours. 74

It was 60 years ago when Triumph built their original Thunderbird. The new “T Bird” is a 1600cc, twin cylinder cruiser which delivers an authentic riding experience coupled with a unique Triumph package. The engine has 85 bhp and 146 Nm, which is more than plenty for most people. If you do, however, want more, Triumph is offering a 1700 cc dealer-fit big bore kit to boost power to 100 bhp and 165 Nm which takes the engine into a whole new world of performance.

One of the most important features that cruiser buyers look at is the seating position, and once again Triumph has got it just right. The handle bar greets the hands a bit further forward, putting the rider in a very comfortable position. I particularly liked the quality of the paint finish – the silver paint had a lot of metallic which made it sparkle in the sunlight. To really appreciate this bike, you have to see it in the flesh and ride it for it to seduce you. It all bodes well for the British Motorcycle Industry.

JDRF BALL There was an outburst of “blinging in the rain” when guests arrived for the charity Mumbai Ball at the Marcliffe Hotel. The evening was organised to raise funds for JDRF and successfully raised £43,000 for this very worthwhile cause. The creative committee arranged for guests to receive Bindi’s and Bombay Sapphire cocktails on arrival, the entertainment was provide by Slinky and an authentic Indian dancer. The auction saw Ian Taylor of Taylor’s Auction Rooms, Montrose, delight the crowd with his usual banter…

Biyoni Big Hair Show More than 200 people gathered at Aberdeen's Copthorne Hotel for the first ever Biyoni Big Hair Show. The sell-out event, organised by the team at Biyoni Creative Hairdressing, raised around ÂŁ4,500 for the Aberdeen Children's Hospital, through the Archie Foundation.

The last word with...

For a stand-up comedian, Scots broadcaster Fred MacAulay never seems to sit still. One minute, the 53-year-old is making light of his years by kayaking up the Caledonian Canal for Sport Relief, the next he is staging his 2010 touring one-man show in places as diverse as Aberdeen, Kirkwall, Stornoway and Perth. All this feverish activity is fitted round his topical radio show with BBC Scotland in Glasgow where he lives with his wife of 25 years, Aileen. The couple have a daughter Kara and sons Jack and Iain, but the MacAulay household goes barking mad thanks to mum and dad’s 82

great obsession, breeding black Labrador dogs. “We just love it! Although they can cause chaos, as I recount in my stage shows,” said Fred. For good measure, Action Man is a 15-handicap golfer and no mean skier. In a previous life, Fred qualified as an accountant after graduating from Dundee University in 1978 and worked for a time for the Cairngorm Chairlift Company. Born in Perth, he is the son of a policeman, also Fred, and the family were shunted around the police houses of Perthshire as was the custom. Said Fred: “I attended Killin and Rattray

primary schools and had a year and a bit at Blairgowrie High School before finally attending Perth Academy.” All this time, Fred senior was climbing the promotion ladder and reached the rank of inspector. Young Fred abandoned number-crunching for a full-time showbiz career in 1993 and has never looked back, appearing all over the world from London to Montreal and from Los Angeles to Melbourne. So is showbiz beckoning for any of the MacAulay progeny? Not a bit of it. Sons Jack and Iain are studying, yes, accountancy. Fred is delighted. “That’s two more brains to do my tax return.”
