STAY HYDRATED Try to drink 2.5 to 3 litres of water per day and take a water bottle with you when exercising for more than 30 minutes.

REFUEL AFTER YOUR SESSION Aim to eat within 30 minutes post exercise to fuel your body’s repair and recovery system. STRETCH Make time to stretch regularly during your week and after exercising. I promise you will feel great!

TRY EVERYTHING IN MODERATION Don’t completely exclude anything from your diet, and allow space for treats.

ENJOY EXERCISING Try new types of exercise to keep interest and motivation. Sometimes you just need to find a form of exercise you really enjoy. There are new classes every season and lots of new facilities, so if you haven’t exercised for a while, now’s a good time to explore the options.

SLEEP Try to get 7 hours of sleep a night. This will improve your energy levels and general mood.

The Duchess of Rothesay Officially Opens The Aquatics Centre

This July, Her Royal Highness The Duchess of Rothesay officially opened Aberdeen Sports Village’s £22million world class Aquatics Centre. Since it opened to the public in May more than 40,000 visitors have been through ASV’s doors, with HRH The Duchess of Rothesay now added to this impressive list of supporters.

When Megan Camlin turned 18 the pretty vintage ring presented to her by her granny was just perfect. But three years on and having developed a more mature sense of style, the diamond cluster, lovely though it was, no longer suited her taste quite so well. For sentimental reasons she remained emotionally attached to the piece, though she was less inclined to wear it.

But rather than let it languish in her jewellery box, Megan discovered a way to reinvent the ring that not only preserves the memory of the original gift but marks another significant milestone - her 21st birthday. Whilst working as an intern at McCalls Highlandwear in Aberdeen, the fashion management student got the chance to learn about the jewellery arm of McCalls’ business. Sitting in on client meetings with the store’s designer, she began to appreciate the delight of owning bespoke piece. Then, during a session choosing gems from a stone dealer, she fell in love with a beautiful teardrop of burgundy rhodolite garnet. That sumptuous stone provided the inspiration for a remodelling of her pre-loved vintage ring.

McCalls’ designer then came up with a sketch to showcase the garnet and incorporate the essence of the original ring which, coincidentally, featured 21 small diamonds. Then the piece was cast in wax and fitted, to ensure it was just what Megan wanted, before being made up in precious metals. The end result, costing just over £400, is stunning and unique - a large magenta gem encircled in rose gold sits on a silver shank, its split shoulders set with the 21 sparklers. ‘It’s better than I imagined and I’m really happy,’ said Megan ‘My granny knows all about it and is so pleased to have been part of it too - best of all, it’s the perfect gift again.’

Banchory’s Tor-Na-Coille hotel has a reputation for outstanding food in a relaxed country house setting. We caught up with Colin Lyall to discuss the secrets of his success… HOW DID YOU DECIDE TO BECOME A CHEF? I did a kitchen work experience placement with my brother who is a chef and I enjoyed it so much I decided to follow suit. WHAT’S THE WORST MEAL YOU’VE EVER EATEN? Before I became a chef, I once ordered kidneys and liver. Let’s just say I wasn’t quite expecting it! 34

AND THE BEST MEAL? I’d go for Logan Browns in Wellington, New Zealand. This was my first fine dining meal and it was absolutely faultless - innovative and absolutely delicious. WHAT’S YOUR ESSENTIAL PIECE OF KITCHEN EQUIPMENT? The Thermomix. It does everything from chopping to kneading, blending to cooking. They’re expensive, but it saves having a host of other gadgets.

Chocolate Delice Start by making the coffee ice cream. Whisk 18 egg yolks and 340g sugar in a large bowl. In a large pan, combine the 850ml cream, 850ml milk and

boil 125g whipping cream and 125g milk together and pour onto the egg mixture. Return to the heat and cook until thickened. Whip 75g of whipping

240ml black coffee. Bring to the boil, remove from the heat and slowly pour into the eggs/sugar mix while whisking to combine. Return to the pan and cook until slightly thickened. Pass through a sieve and leave to chill. Churn in an ice cream maker and store in the freezer until ready to serve.

cream to soft peaks. Place the chocolate into a blender and blitz, slowly add the warm custard mix until all is incorporated and smooth. Pour the mix into a clean bowl. Allow to cool slightly before folding in the whipped cream. Fill the moulds up and place in the fridge to set.

To make the caramel, place 250g sugar and 25ml water in a pan over a medium-high heat. Bring to a gentle boil without stirring, once the mixture turns a deep golden brown add 150g salted butter butter. Stir to combine. Reduce the heat, add 150ml cream and mix well. Remove from the heat and chill.

Make cocoa tuiles by creaming 75g butter and 180g sugar together in a large bowl, add 15g cocoa powder, 30g plain flour and 90 ml orange juice then allow to set in the fridge. The family run Dutch Mill has long been a favourite haunt of West End business people and locals alike, partly down to its location, but mainly because of the friendly staff and unpretentious, tasty bar food. The hotel has recently been refurbished, with nine super-swish designer bedrooms, but the welcoming atmosphere and hearty approach to the menu remains thankfully unchanged. If you’re after minimalist plates that faff about with foam, then this isn’t the place for you. If you want fresh, well-cooked bar food, using quality ingredients and great flavours, then you’re sure to find something that appeals. In our case, there were too many things that appealed. Deciding on starters, once we had taken our seats in the light and airy conservatory, took some time! Eventually, we decided to forego the home made paté and opted for some unctuous deep fried brie wedges and a plate of nachos that came generously topped with chilli beef and cheddar. Feeling quite full already, we asked for a slight break before the main course and sat back to enjoy a draught real ale from the bar and a glass of chilled white. We had toyed with the idea of having one of the Dutch Mill’s Big Mill burgers or perhaps the chargrilled Strathdon chicken in a creamy whisky and haggis sauce, but plumped for a tender beef stroganoff and some lemon sole. We made good decisions. The large strips of tender fillet of beef came enfolded in a double cream sauce spiked with brandy and both rice and a baked potato. The fish was perfectly cooked and came with lots of crispy chips, coleslaw and peas. For desert so we opted to share the hot caramel sundae. THE LAST DAYS OF

This has been an unusually kind summer for the Aberdeenshire gardener. Long sunny days brought out a wealth of colour in the borders and it’s easy to think that it’s all down hill from here. I was reminded that this couldn’t be further from the truth when a friend produced a bouquet of blooms that grow well here at this time of year. Better yet, you don’t need stately home sized flowerbeds to grow any of these plants. If you have a sheltered sunny spot, try Hydrangea macrophylla or paniculata which also tolerate partial shade. Lilies (Lilium) appreciate full sun and moist conditions and do well in pots. The blue monkshood (Aconitum Napellus) is spectacular and does well in full sun or partial shade. Ferns such as Polystichum Munitum love shady, moist conditions and can rescue a dank corner. For wonderful evening scent, plant Jasmine (Jasminum officinale) and Roses. Deadheading will prolong the flowering period of both and there are hundreds of wonderful roses to choose from, 48

including those cultivated locally at James Cocker and Sons. These can be set off by the hazy blue-green glauca colour of the eucalyptus tree. This grows quickly, so careful positioning is required. Personally, I love country cottage style bouquets, made up of Rosa ‘Albertine’, Buddleja davidii , Spirea ‘gold flame’, sea holly (Eryngium Oliverianum), lavender (my preference is Lavandula angustifolia ‘Munstead’), hardy geraniums such as endressii, ‘Wargrave Pink’ and blue catmint spikes (Nepeta Six Hills Giant). Perfect in a white china or enamel jug. When autumn begins, choose Michaelmas daisies (Asters), Verbena bonariensis, roses, Lavatera, phlox and Anemone huphensis, for flowers right up to the first frosts and stock up on spring flowering bulbs to plant now for a splash of colour next year. Start the process of putting the garden to bed for the winter, pruning the fading stems of perennials and clipping hedges whilst enjoying the last of the season’s flowers and the remaining days of heat in the sun. www.gardendesignscotland.com 49

North of Scotland Cancer charity, CLAN, is looking for participants to take part in the CLAN Landmark Walk. It’s the perfect excuse to get fit and raise money for a great organisation. I’m not the first, as various members of the Royal Family I’m sure will agree, nor will I be the last, to succumb to the delights of this part of the world. Heading out from Aberdeen on the A93, you officially leave the ‘Deen behind at Peterculter (Culter) where a large wooden statue representing Rob Roy MacGregor stands proudly on the steep rock above the Culter Burn. Not far from here walkers can join the Deeside Way at the site of the old railway station. Cults and Culter are home to some nice independent shops including Cocoa Ooze and Lilly Pink, as well as some truly special eateries. High on my list are Terroir, a French-style café with superb lunches and baking in deli surroundings, and Café Bombay, a tapas style Indian restaurant and takeaway, which is creating a storm on Tripadvisor right now. Between Culter and Banchory are two National Trust of Scotland castles which are a must-visit at this time of year. Drum has just opened a state of the art playground for kids, and also has a beautiful traditional rose garden and nature trails. Crathes’ gardens are famous for their flower borders and offer acres of woodland to roam around, not to mention centuries of history with which to improve your minds. Across the road from Crathes Castle you will find a railway station, lovingly restored by Royal Deeside Railway, from which steam trains run in the summer.

If you choose the alternate route out of town on the South Deeside road, Maryculter House Hotel is worth a visit, both for its stunning setting beside the River Dee and its connections to the Knights Templar. The hotel also boasts its very own Scandinavian ghillie, Mads Pederson, so if you’ve ever fancied learning to fish on the fly... Banchory is the next town on the way up Deeside, in the centre of which are two lovely parks, often filled with people escaping the city. Head to the Falls of Feugh where you can see salmon leaping the steep rocks and fast-flowing currents; nearby is the delightful restaurant and café overlooking the falls. The High Street is still home to many independent shops and lovely cafes, I recommend a visit to Amy and Cameron in the Birdhouse Café - you won’t regret it, but your waistline might! Continental Cream is a traditional ice cream and sweetie shop on Dee Street, perfect for a 99 to accompany your stroll around Banchory. Just before entering Banchory you will find Woodend Barn Arts Centre which has a full programme of arts events including current cinema releases, workshops for all, and live streaming of opera, ballet and theatre from the likes of Covent Garden, perfect for a summer evening. Adjacent to the Barn is Buchanan’s Bistro where AA recommended.

begin to feel as if you are miles from anywhere. Dinnet has an antiques shop and Loch Kinord Hotel, owned by Andrew and Jenny Cox, who are extremely welcoming hosts and will gladly tell you the story of the wooden soldier who stands at the front of the hotel. Turn off here for the Burn O’Vat Visitor Centre, a splendid rock formation and some beautiful walks.

From Banchory you can head west to Kincardine O’Neil, the oldest village on Deeside, where the delectable Dee’s Teas nestles in the quaint main street, accompanied by several other delightful local shops, including the Wool Shop, Angels Shop and Treasures - a tiny shop jam-packed with gems and very knowledgeable owners. Alternatively, you can head slightly north to the larger village of Torphins where a weekly market is held every Wednesday by Platform 22, a café and art gallery owned by the Pattullos. You are guaranteed a warm welcome and a fine piece here any day of the week! Or go south to the tiny hamlet of Finzean where the hidden delights of the Finzean Farm Shop are locally renowned.

Ballater is a pretty village set amongst forested hills, and home to lots of shops and cafes. Rocksalt and Snails have a branch here, which also opens as a wine bar in the evening. Byzantium, Atholl Countrywear and Deeside Books are all worth a look, as are the Dee Valley Confectioners a business established in 1965 and still selling aniseed clips and granny sookers as if it were yesterday! I have only touched on the delights and distractions of Deeside, but hopefully enough to whet your appetite for a wee run oot!

Carrying on along the A93, you can turn off to several excellent family entertainment venues including the Deeside Activity Park, where the fun ranges from quad biking and kart racing to archery and off road driving, with an excellent café and farm shop for the less adventurous. Belwade Farm (World Horse Welfare) is also worth a visit. Aboyne has several excellent eateries, including the Sign of the Black Faced Sheep, Royal Kashmir and the newly refurbished Boat Inn. Strachan’s of Deeside is definitely worth a visit, a proper country emporium selling everything from waders and fireguards to buckets and spades! During the summer Aboyne hosts a Highland Games and an Arts Festival, both of which are very popular. Next stop, and perfect for a cup of tea from that flask you packed, is the car park at Dinnet Gliding 71

If you were asked to describe the quintessential Highland village, you would likely mention imposing mountains, rolling green hills, meandering rivers, majestic forests and a population that is fiercely proud of its Scottish heritage. Essentially, you would describe Braemar.

Nestled in the Dee Valley, Braemar has a history as old as Scotland itself. As far back as the 8th Century when the King of the Picts built the first stronghold in the area, Braemar has been a seat of nobility as much for its strategic geographic location as for its singular beauty. Castles have been erected and knocked down, earldoms have been granted and taken away, religious and family rivalries have brought turmoil and destruction, but through it all Braemar has survived with its character intact.

Of course, no recounting of Braemar and its past would be complete without touching on the one event that it is most famous for - the Braemar Gathering. These Highland Games, which are held on the first Saturday in September each year, date back over 900 years and have long been a favourite of the monarchy, with members of the Royal Family attending regularly from their nearby summer Estate at Balmoral.

Fortunately, the colourful history of this intriguing village is on display at the Braemar Highland Heritage Centre. Located in the centre of town, the Heritage Centre presents all that is great about Braemar as it is today and as it was in the past.

No matter how determined we are to improve our fitness, the greatest challenge always seems to be finding an exercise routine that is simultaneously challenging and enjoyable. This year I decided to try something new - Bootcamp fitness. As its name suggests, Bootcamp fitness is designed to push its participants to their limits using a combination of strength and interval training. Sessions are aimed at groups and, to add to the realism, are often held outside in public places. For my own induction to this military movement, I enlisted with Stix Body Blitz run by Terri Forbes and located within private grounds on the Keithhall Estate in Inverurie. Bounded by an impossibly tall brick wall and even taller trees beyond

that, there can be no better, or more private, setting for such an activity. When the weather is fine, classes are run on the expansive lawn but there is also a fully kitted-out studio that ensures no one can use bad weather as an excuse. Sixty minutes flew past while myself and 20 fellow recruits were put through our paces in a rapidly changing endurance test that included squats, lunges, planks, punches, crunches, jumps, sprints and more press-ups than I have done in the past decade. And though my limbs were

decidedly wobbly by the end, I refused to give up because the group resolve does not allow it. Like the military, the success of the individual is intrinsically linked to the success of the group and that is the power of Bootcamp. To say I could feel the pain the next day is an understatement but it must be good pain because I have already been back – twice. Once you have mastered Bootcamp, Stix also offers Boxercise and TRX Suspension Training classes. Terri, an avid obstacle racer, has even built her own assault course where she readies competitors for gruelling events like the Spartan Race. Trend catches up with videographer Darren Campbell Darren Campbell of Eternal Video may be best known for his wedding and corporate work, but he’s also developing projects to take to the big screen. 'I’ve had a really keen interest in film, music and art for as long as I can remember,' Darren explained. 'As a teenager, I pestered my folks for a cheap camcorder for Christmas. My friends and I creating lots of short films which was great fun and led to me getting my film diploma, while I worked part time to fund my start-up kit.' Darren continued, 'I really enjoy creating corporate videos as it’s effectively a collaboration. Each time you work with a new client, you find about their passion and their goals and you are the key to helping them get to their next step.' 'Wedding shots can be pretty intense, it’s taken me a few years

'I’m always looking for ways to make things easier for the viewer. I’ve pioneered a tool that allows wedding guests to log on to our site www.shareitforever.com and download the video to their phones and tablets so they can watch it on the go. I even put a trailer of the wedding video up with in 48 hours so all the guests see it while there is still a buzz around the event.'

If it’s captured and put together well, it will bring back the feeling of the day over and over again. Some brides I’ve worked with say they never noticed me on the day and that’s great because I observe and capture from a distance. I use the best possible compact camera so I blend in with the guests and no one is self-conscious. When I’m working, I’m right in the zone and absolutely love it.'

'I’ve always been a huge film buff, unfortunately it’s hard to get a chance to enjoy films these days, with work. As well as growing my business, I’d like to be able to finance one of my film ideas in the future. While, I’d love to direct and work alongside some really talented actors and make something with meaning, I’d always want to work on corporate and wedding videos too because I love the work so much.'

'Editing is most time consuming stage, but also the most creative, since it brings the project to life. It can take around a week, but it’s great to be able to watch the final cut and say, 'Yeah I’m proud of that and the client will be too.' 'Whether it’s a wedding or corporate shoot, I really put everything in to it. I turn up early and leave late to make sure that I can make something extra special. I always meet a client a few times before I shoot, it means I can find out who they are and what they need 74

but also how I can go the extra mile for them and always have something to surprise them with.'

'I really appreciate every genre of cinema, I think everything that comes out is amazing, because it’s always someone’s greatest vision with hundreds of people behind the scenes. It’s always a shame when a film gets bad reviews because I honestly think it’s just a case of the viewer not getting the directors vision, but that’s just life.' The talented Gray’s graduate juggles several part-time jobs with work on her latest collection, so she can finance her growing brand. We caught up with her as she launched her latest collection... ‘Even as a child, I was really into creative work, especially illustration, photography

and making things with my hands. I studied textiles at Harlaw Academy and then graduated in Fashion Design. In school I made a few tops and a dress - looking back it’s really interesting to see how my design style has evolved’, Aymee smiled.

I design for customers who want to feel feminine but still dress comfortably. My garments are often oversized and made so they will drape well on the body. They will look different on every body shape’, Aymee continued.

‘My current collection is inspired by the typical French maid, but not in the Ooh La La sense! I’m using muted colours with bold hints of red. I wanted to look at the working woman’s lifestyle. I’m influenced by minimalist designers like Issey Miyake, Yohji Yamamoto and Margiela but my overall favourite designer is Russian designer Vika Gazinskaya. I just love the silhouettes she creates!' 76

Family friendly Mediation: Bringing solutions to the table

When a relationship breaks down, there are numerous options available when deciding how to resolve the financial and child related issues which arise. Many couples wish to resolve matters amicably, whilst retaining control of the process and the decisions made. Family Mediation is one form of resolving disputes which allows for this. The process involves the couple working with a trained mediator to resolve any issues. Firstly, an initial meeting is held where the mediator would meet with each party individually in order to ascertain their concerns and what needs to be addressed. All future discussions then take place with both parties present. The role of the mediator is to assist the couple to make the right decisions for them and any children in the relationship. It is the responsibility of the couple to produce all the information which is requested by the mediator, who will then guide them through the range of possible settlement options so an agreement can be reached. The mediator’s role is very different to that of a conventional solicitor. For example, he or she does not represent either party and instead encourages the clients to obtain independent legal advice.

TREND SOCIETY: ADELPHI KITCHEN OPENING Chris and Carolina welcomed guests to one of four VIP launch nights for the eagerly anticipated new addition to Beetroot Restaurants ‘The Adelphi Kitchen’. A champagne arrival was followed by a selection of craft beer, wine, fish house and elderflower champagne punch cocktails to start the evening off with a bang! Mini tasters from the menu ranging from dirty cooked steak, hog mac and cheese, smoked pork and ribs, oysters and a further selection of seafood were served during the night. A highly successful lunch entitled "Meet The Women On The Front Line" was held at the Marcliffe Hotel and Spa recently to raise funds for The ABF The Soldiers Charity. Organised and hosted by Catherine Robertson-Ross MBE, and sponsored by Oilwell Varco, Nexen, Bread PR, and the Stewart Group the lunch raised an amazing ÂŁ18,022.

Mrs Robertson-Ross was delighted to welcome Medic Katie Nesbit, who is only one of two women in the history of the armed forces to receive a Military Cross from Her Majesty The Queen for her gallantry in Afghanistan. Guests enjoyed an inspirational speech and had a lovely 3 course lunch after raising the fabulous amount from the auction.

TREND SOCIETY: ISABELLE RANDALL 10TH ANNIVERSARY Couture Designer isabelleRANDALL is very proud to be celebrating 10 years in business after launching her own designer label back in 2004. To celebrate this milestone she arranged a drinks reception in her shop for past, present and future clients including friends and family. A ’10 years in business’ competition had been launched late last year and the winners were revealed at the party. Everyone was welcome to look at Isabelle’s Collections as well as speak to her in depth about a made-to-measure commission and her alteration service. The Craft Beer Kitchen is the latest innovation from Stewart Brewing, widely acknowledged as one of Scotland’s best boutique brewers since being founded in 2004 by Steve and Jo Stewart. Last year, Stewarts moved to a custom built brewery at Loanhead, near Edinburgh - a stainless steel cathedral to the patron saint of beer. They have brewery tours, a shop and a very impressive sampling wall with 18 taps showcasing their latest limited editions. The Craft Beer Kitchen is right next to the main brewery, so you’re in the heart of the action. It’s great fun, aided by hugely enthusiastic staff. The brewers use the craft beer kitchen to invent new recipes for the company, so you have the best kit and all the help you could need to hand.

The visit is in two parts, the first session involves choosing a recipe or discussing your ideas, weighing the ingredients, boiling the beer, pitching the yeast and transferring your brew into a fermenter. Some people bring their own ingredients to add to the brew. Stewart’s brewers will look after your brew to ensure that it conditions properly, before you return to bottle and custom label your creation. A fair bit of sampling goes on too, so it’s best to use public transport for the first trip and a car to transport to take your beer home. Peter Mitchell became a valued Trend columnist nearly six years ago after 37 years on the Press and Journal, latterly as a Diary writer. For Trend, he has interviewed lots of prominent people including TV's Angela Rippon. He is also much in demand as an amusing MC and after-dinner speaker.

I had the good fortune to meet with Mike Loggie recently, to find out about the high level of community work he spearheads in his role as Chief Executive of Saltire Energy Group. It’s heartening to meet with an Aberdeen businessman who is so focused on ensuring his company does its utmost for the local communities in which it operates, but who is also so intent on encouraging other businesses to do their bit for young disadvantaged people. We met at Aberdeen’s Mariner Hotel on Great Western Road - a fine establishment which the philanthropist has owned since 1996. 'I was born in Aberdeen and began my career in the city in the 1970s through the tourism industry before gradually moving into the oil and gas industry,' Mike began. His company, a leading supplier of drilling tools to the offshore oil and gas industry, began in 1986 and is dedicated to supporting local community initiatives. It has invested considerably in projects, both locally but also internationally, through the company’s Saltire in the Community programme. 'We strongly believe in providing potentially life-changing opportunities for disadvantaged young people in the community. As the company has grown, so too has the range of work being carried out to benefit thousands of young people. Our focus is all about giving the young people opportunities to allow them to take control of their future choices.'

Currently, Saltire Energy is involved in a variety of initiatives including a substantial donation to the Aquatics Centre, and ensuring thousands of local primary pupils from disadvantaged areas benefit from the Saltire Energy Sports for Schools Project. His company launched the project in 2009 to encourage youngsters to stay active, and enable them to engage in activities which they might not normally have experienced. Just last year an exceptionally generous donation of £1million was made to local children’s charity, Befriend a Child. Mike was determined to make sure the young people on the charity’s waiting list received the much-needed support and friendship provided by Befriend a Child. Mike was made honorary patron of the charity in recognition of his long-standing affiliation and ongoing support. 'Seeing the young people benefit is what keeps my company doing whatever we can to help. Businesses within the oil and gas industry are in a prime position to be doing what they can to better the futures of our next generation.'
