1½ Swips per serving
35 minutes plus 1 hour marinating Serves 4

Ingredients
• 2 level tbsp gochujang paste
• 2 tbsp rice wine vinegar
• ½ level tsp sugar
• 1cm piece fresh root ginger, peeled and grated
• 1 garlic clove, crushed
• 600g skinless and boneless chicken thighs, visible fat removed, each cut lengthways into 3 pieces
• 2 level tsp sesame seeds
Method
Put the gochujang paste, vinegar, sugar, ginger, garlic and a little seasoning in a wide bowl and mix well. Add the chicken pieces, toss to coat and set aside to marinate – ideally 1 hour in the fridge, but even 10 minutes is worth it. Heat your oven to 180°C/fan 160°C/gas 4.
Line a large baking tray with kitchen foil and arrange the chicken on the tray, spaced apart as much as possible. Scatter with the sesame seeds and roast for 20-25 minutes or until cooked through.
Transfer the chicken to a plate and serve with rice and lots of Speed vegetables or a crisp, finely chopped salad.

A powerful new chapter in inclusive sport has begun in Tralee with the launch of Tralee Little Dolphins Swimming Club, a nonprofit organisation dedicated to supporting children and individuals on the autism spectrum and those with physical disabilities.
Co-founded by Brian Casey and Shane Lee, the club has been established with a shared vision — to create meaningful, inclusive sporting opportunities for families in Tralee and the surrounding areas.
As a newly formed organisation, the club is now actively seeking sponsorship and community backing to help build a sustainable and accessible programme for years to come.
At the heart of Tralee Little Dolphins is a strong commitment to inclusion, safety and opportunity. The club was created to ensure that children and
individuals with additional needs can access structured, supportive swimming lessons in an environment built on understanding and respect. While teaching swimming skills is central, the club’s wider goal is to promote water safety, build confidence, and encourage independence and social interaction.
Each session is carefully designed to help swimmers progress at their own pace in a calm, welcoming setting where they feel secure and valued. High standards of coaching and volunteer support are a priority. Specialised training will ensure instructors are fully equipped to meet the diverse needs of participants. By investing in awareness and education, the club also hopes to strengthen community understanding of the physical, emotional and social benefits of inclusive sport.
Operating as a non-profit, any surplus funds will be reinvested


directly into expanding access, improving resources and keeping participation affordable.
The club is preparing to host its first Open Day Swim, offering families an opportunity to experience an inclusive swimming environment firsthand. The event promises a relaxed, positive atmosphere filled with fun activities, games and introductions to coaches and volunteers.
For many parents, it will be their first chance to see their children enjoying the water in a setting tailored specifically to their needs. The focus will be firmly on participation, encouragement and smiles — creating a safe space where every
child feels included and supported.
A Community Effort
The launch of Tralee Little Dolphins has been made possible through strong local support. The club extends sincere thanks to Tralee Sports Complex and Manager Finbarr for facilitating the Open Day Swim, particularly following recent storm-related challenges.
Gratitude is also expressed to Kerry Sports Partnership, EF Signs, Meadowlands Hotel, Tralee Advertiser and Trophy World, along with local TDs Pa Daly and Michael Healy-Rae.

Minister for Children, Disability, Equality and Kerry TD Norma Foley has welcomed confirmation of over €65 million in national roads funding for Kerry.
The exchequer capital funding will be provided to Kerry County Council for repairing and upgrading existing national and regional roads and delivering new road projects.
Minister Foley confirmed that Kerry would be getting €33.6 million in national roads funding and €31.3 million in regional roads funding.
The funding includes €6 million for the N86 Ballynasare & Ballygarret, €6 million for the development of the Farranfore to Killarney bypass and €4.5 milllion for N70 Blackwater Bridge to Sneem.
Minister Foley said:
“Improving the road network and infrastructure through county Kerry is a priority for me as Minister. I am delighted to confirm that Kerry is to receive funding of €65 million for national and regional roads in the county.”

Kerry Library is proud to join libraries across Ireland in celebrating Ireland Reads, a national campaign to get the whole country reading during February, culminating with Ireland Reads Day on Saturday, 28 February.

The campaign, part of the government Healthy Ireland programme, celebrates and promotes the many benefits of reading for wellbeing and enjoyment. The theme for 2026 is ‘Get lost in a good Book’ and Kerry Library is inviting people across county Kerry to take part.
If you have never been to a library or have not visited one for a while, take time on Saturday, 28 February to call into any of the nine Kerry libraries. If you cannot visit in person, Kerry Library provides e-books, e-audio, e-newspapers, e-magazines, e-learning courses and e-languages on its website www. kerrylibrary.ie
Libraries will also host a number of activities for children on the day. Local author of Shipwreck, Deirdre Laide, will visit Killorglin and Killarney libraries to tell the story of some of the world’s most famous sunken ships and their underwater discoveries (booking required and suitable for 7 to 11 years of age). Storytime sessions will also take place in Kenmare, Listowel and Tralee libraries along with regular lego and construction playtime sessions in Castleisland, Caherciveen and Dingle libraries. A Will is a legal document setting out how you wish your money, property and possessions to be distributed after your death. By making a Will, you decide who benefits from your estate, whether that is family members, friends or charitable organisations. A properly drafted Will can also help prevent disputes and reduce delays or complications during the administration of your estate. If you have children under 18, your Will allows you to appoint guardians
to care for them in the event of your death. This ensures your wishes regarding their upbringing are clearly recorded.
Under the Succession Act 1965, a spouse or civil partner has a “legal right share” in an estate, regardless of the terms of a Will. If there are no children, the legal right share is one half of the estate. If there are children, it is one third. If a person dies without making a valid Will, they die intestate. In such cases, the estate is distributed according to strict legal rules. A surviving spouse or civil partner inherits the entire estate if there are no children. If there are children, the spouse or civil partner receives two thirds, with one third divided equally
among the children. If there is no spouse or children, the estate passes to parents, and if they are deceased, to siblings.
Strict legal requirements apply to making a valid Will, including mental capacity and freedom from undue influence. It is advisable to consult a solicitor to ensure your Will reflects your wishes and is legally enforceable.

Catriona Cantillon, Manager, Zero Gravity Sports Performance & Fitness Studio, highlights the latest research on High-Intensity Interval Training (HIIT) and how it can transform your fitness journey.
A recent Cyprus study found that HIIT is incredibly effective at reducing visceral fat, the harmful belly fat linked to hormonal imbalances, clogged organs, and type 2 diabetes.
Researchers compared two groups:
• One group followed traditional gym workouts four times a week.
• The other did two gym workouts + two HIIT sessions (Les Mills GRIT).
After eight weeks, both groups lost fat, but the HIIT group saw superior results:
• 2.2 cm reduction in waist size
• 2.2% decrease in visceral fat
Plus, HIIT participants experienced better cardiovascular fitness, sprint speed, and arm strength.
