Fajita Chicken pasta bake

Ingredients

• 1 large courgette, roughly chopped

• 1 large yellow pepper, deseeded and roughly chopped

• Low-calorie cooking spray

• 160g cherry tomatoes

• 1 large onion, finely chopped

• 2 large garlic cloves, crushed

• 3 tbsp tomato purée

• 400g can chopped tomatoes

• ½ chicken stock cube

• Small handful of fresh basil, finely chopped

• 2 tsp dried oregano

• 5 tbsp fat-free natural Greek yogurt

• 400g dried rigatoni (or other pasta shape)

• 500g skinless and boneless chicken breasts, cut into thin strips.

Method

Preheat your oven to 220°C/fan 200°C/gas 7. Put the courgette and pepper in a roasting tin, spray with low-calorie cooking spray, season lightly and toss well. Roast for 20 minutes, turning halfway and adding the tomatoes 5 minutes before the end of cooking.

Meanwhile, spray a large non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the onion and fry for 10 minutes, adding a little water if it starts to stick. Stir in the garlic, tomato purée, canned tomatoes, stock cube, basil, oregano and 250ml water. Simmer for 10-15 minutes, or until the sauce has thickened. Take the pan o the heat, stir in the yogurt and season lightly. While the sauce is simmering, cook the pasta according to the pack instructions.

Spray a non-stick griddle pan with low-calorie cooking spray and place over a medium-high heat. When it's hot, add the chicken strips and fry for 2-3 minutes each side, or until cooked through. Set aside and keep warm.

Drain the pasta and return to the saucepan, reserving a little of the cooking water. Stir through the tomato sauce, roasted vegetables and chicken plus a couple of tablespoons of the cooking water if needed. Season lightly and serve hot with your favourite salad. Starting in

Kerry and Cork Winners Shine at O’Donoghue Ring Collection Best Dressed Day

The O’Donoghue Ring Collection lit up the Killarney Races as proud sponsor of the “Best Dressed Day,” blending high fashion with festival excitement. With Killarney’s iconic hotels, bars, and restaurants at its heart, the Collection added sparkle to the August Racing Festival, where over 3,000 stylish racegoers competed for the coveted titles.

Judges James Patrice and Lisa Jordan brought glamour and expertise, narrowing the field to twenty finalists before crowning two standout winners.

Local favourite Bláthnaid Leen from Killarney stole the show in a sculptural Acler two-piece, while Sean O’Donovan of Ballincollig, Co.

Cork impressed in a bold pink suit, complete with a sentimental brooch from his grandmother.

Both winners received a luxury three-night stay at the Killarney Plaza Hotel & Spa, presented by Group General Manager Brian Lawlor. Trackside, Café du Parc’s Veuve Clicquot and Cinco Patricio’s cocktail

bar added sparkle, while the lively afterparty at Café du Parc closed the day with music, energy, and celebration.

Vintage Charm Rolls Into Ballyroe Lodge

Ballyroe Lodge was proud to welcome the Kingdom Veteran Vintage Classic Car Club (KVVCCC) on Sunday, 24th August 2025, for its annual Secretary’s Scramble event. The day began with cars and coffee at the hotel, where members gathered to showcase their vehicles before setting off on a scenic spin along the North Kerry coast.

Dozens of beautifully maintained vintage and classic cars lined the lower car park, creating a vibrant showcase of motoring heritage that filled the grounds with colour and character. From gleaming bonnets to polished chrome, the scene was a cheerful celebration of history, style, and community.

The event was organised by Club

Secretary, Garrett Foley, and proved to be another great success for the KVVCCC, highlighting the passion and dedication of its members.

It was a particularly special day for Jennifer Brosnan, General Manager of Ballyroe Lodge, who is herself a proud member of the club. She was delighted to see the hotel come alive with a striking display and

to welcome fellow enthusiasts to Ballyroe.

With vintage cars sparkling in the summer sun, the aroma of coffee, and the promise of a coastal drive ahead, the Secretary’s Scramble was a memorable occasion that reflected both the community spirit of the club and the hospitality of Ballyroe Lodge.

Irish Drift Series Finale Set for High -Speed Showdown in Kilflynn

The Irish Drift Series returns to 360 Motorsports Park, Kilflynn on Saturday 6th and Sunday 7th September 2025 for its season finale, promising two days of high-octane action and family entertainment in North Kerry. This will be the third time Kerry has hosted the finale, reinforcing 360 Motorsports Park’s status as one of Ireland’s premier motorsport venues. Built on the site of the former Kilflynn hot rod circuit, the purposebuilt drift track has quickly become a key stop on the national motorsport calendar.

The event, known as the Final Fight, will feature Ireland’s top professional drivers, with fierce rivalries expected between Northern Ireland’s Duane McKeever and Harry Kerr. Japanese star Ryusei Akiba could spring a

surprise, while Kerry’s own Colin O’Sullivan (18) and Jack Mullvihill will give local fans plenty to cheer for. Off the track, the weekend offers family-friendly attractions, including a showcase of Japanese car culture, food trucks, trade stands, and free admission for children under seven. On-site and shuttle-bus parking will ensure easy access.

Event manager Niall Gunn said the finale would be one of Kerry’s sporting highlights of 2025: “This is a safe, family-friendly event with something for everyone. The action on track is spectacular, but there’s also plenty off the track to enjoy.”

Drifting is one of Ireland’s fastestgrowing motorsports, regularly drawing over 15,000 fans at larger venues. While Kilflynn offers a more intimate setting, organisers promise

an atmosphere just as electric. This year’s finale also marks the 21st anniversary of the Irish Drift Series, celebrating more than two decades of homegrown and international

“Foley Secures Major Boost for Kerry Flood Defences”

Minister for Children, Disability & Equality and Kerry T.D. Norma Foley has welcomed confirmation of increased funding supports for flood risk and coastal change management under the OPW Minor Works Scheme. She thanked Minister of State for the OPW, Kevin “Boxer” Moran, for delivering the expanded support.

“We are all conscious of the impact of serious flooding and coastal erosion following recent weather events in Kerry. This substantial increase in funding will give greater flexibility to Kerry County Council, enabling localised flood relief and coastal protection works,” said Minister Foley.

She highlighted ongoing concerns in Listowel and the Killocrim/

Gortnaminch areas, noting that mitigation plans for Listowel are being finalised. “I have no doubt this funding will assist in delivering the necessary works,” she added.

Key changes under the updated scheme include:

• The funding threshold per project rises from €750,000 to €2 million.

• A €3 million allocation for projects removing river blockages posing flood risks.

• Approval in principle for maintenance of completed capital works.

• Consideration of interim measures and individual property protection ahead of full flood relief schemes.

talent.

The Irish Drift Series Final takes place September 6–7, 10am–5pm daily at 360 Motorsports Park, Kilflynn.

Minister Foley stressed that the increased support will play a vital role in protecting homes, businesses

and

and communities in Kerry from the growing risks of flooding
coastal erosion.

WHY IS SOLAR POWER BECOMING SO POPULAR IN IRELAND?

Keith from Green Energy Ireland answers some of the

questions he gets asked, whilst out and about helping transform homes, schools and businesses by using green energy.

FREQUENTLY ASKED QUESTIONS – SOLAR POWER IN IRELAND

Q: Why is solar power becoming so popular in Ireland?

A: With electricity prices on the rise, solar panels help households and businesses cut costs. Government grants make them more affordable, while climate goals and environmental awareness are pushing people toward clean energy. Newer panels are also more efficient, boosting property value and reducing reliance on fossil fuels.

Q: How long do solar panels last?

Q: Do I need planning permission?

Q: Can I sell extra energy to the grid?

Q: How many solar panels will I need?

Q: Do I need a battery with my solar panels? Still have questions? To read up on the

Sales Manager, Green Energy Ireland

“We had an excellent experience with Green Energy Ireland for our solar PV installation. From start to finish, the entire process was smooth, professional, and hassle-free. We dealt with Keith, the actual sales manager, who was incredibly helpful throughout the project — always available to answer questions, provide clear explanations, and keep us updated at every stage. His knowledge and support made a big difference, and we couldn’t be happier with the results. Highly recommended (and we have! )

5 STARS All the way!”

Pauline & Moira, Croom, County Limerick

I had Green Energy Ireland install 14 panels in September 2024. It has generated 4.5MWs to date and I have not had a debit electricity bill since installation, generating even on the dullest of days. Keith and all the Green Energy Ireland staff gave superb and excellent service.

High standards and delivery on time.

I highly recommend Green Energy Ireland for solar panel installation...Definitely 5 Star service! Paul, Castleisland

We installed 16 panels (10 south and 6 East facing), in late Jan of this year and despite a slow start, we have enjoyed a dream year so far. We've generated over 3.5 MWatts so far, and looking forward to being in credit for electricity for a lot of the rest of the year!

Couldn't praise Keith and all the staff highly enough. Everything done to a great standard, and all on the day as promised.

Really neat job and looking forward to many electricity bill free months for years to come!

CAO Round One: Record Applications Offset Grade Deflation... Billy Ryle

CAO Round One offers confirmed that grade deflation in this year’s Leaving Cert was outweighed by record applicant numbers. Despite the post-marking adjustment lowering 2025 grades, over 19,000 applicants still held inflated results from the past five years, giving them an edge. The surge to 89,347 applications, up 7% on last year, created intense competition for places.

Kerry’s 1,701 candidates fared

strongly, with most securing offers, though not all achieved their top course. Nationally, points rose in around half of Level 8 courses and random selection decided entry to 25 high-demand programmes, leaving even 625-point students without their first choice.

In total, 59,201 applicants received at least one of 86,098 offers. Encouragingly, 51% of Level 8 applicants secured their first preference, while 80% got one of

their top three. For Level 7/6, 90% landed their first preference and 99% one of their top three. With strong demand from schoolleavers, mature students, and PLC graduates, CAO continues to provide opportunities — but resolving grade deflation remains a pressing priority.

Minister for Children, Disability & Equality and Kerry T.D. Norma Foley confirms additional Gardai for Kerry

“Delighted that 5 new Gardai graduating from Templemore this week are en route to Kerry with 3 to be deployed to Tralee and 2 new Gardai for Killarney.

I want to acknowledge the great work of An Garda Siochana throughout County Kerry and I am confident these additional Gardai will support the work of the force on the ground.

A further 201 Garda recruits are entering the Garda College this week whilst another graduation of new Gardai will take place in November. Safer communities will be delivered by this strengthening of An Garda Siochana.”

Tralee Chamber Warns of Jobs at Risk Without Budget 2026

Tralee Chamber has issued its PreBudget 2026 Submission, urging Government to act swiftly to protect jobs and ease cost pressures facing businesses in Tralee and across Kerry.

CEO Colette O’Connor said rising employment costs, combined with housing shortages and infrastructure gaps, are pushing SMEs, retailers, and hospitality operators—who employ almost one in five Kerry workers—to the brink.

Chamber research shows 68% of local SMEs now rank labour costs as their biggest concern, with nearly half considering reduced hiring or shorter opening hours in 2026. “Without targeted supports, the cumulative impact of higher labour costs, pension auto-enrolment, and extended sick pay will force many small businesses to cut

back or close,” Ms. O’Connor warned. “If they fail, our towns and communities will feel the impact.”

The Chamber is calling for urgent action in four key areas:

• Reform of Employer PRSI and social charges.

• Enhanced wage subsidy and SME supports.

• Investment in apprenticeships, training, and upskilling.

• Greater focus on housing, town-centre regeneration, and infrastructure.

“Kerry has always shown resilience and innovation,” Ms. O’Connor added. “With the right policies, we can safeguard jobs, attract investment, and ensure long-term growth.”

John Mulhern Bids Farewell After Six Transformative Years at Kerry Airport

John Mulhern has stepped aside as CEO of Kerry Airport Ireland after six remarkable years at the helm.

Widely praised for his vision and leadership, Mulhern oversaw major infrastructure improvements and expanded the range of destinations, firmly putting Kerry Airport on the map. Reflecting on his tenure, he described the journey as “transformational” and credited the dedicated airport team for its success.

With 2025 already shaping up to be a record year, Mulhern leaves the airport in its strongest position yet — “the greatest little regional airport,” as he proudly called it.

Kerry Coastlines Show Big Improvement in National Litter Survey

Kerry’s beaches and harbours have recorded encouraging progress in the latest Irish Business Against Litter (IBAL) coastal survey, which found cleaner shorelines nationwide and fewer areas falling into poor categories.

Of the 33 coastal and waterway locations inspected by An Taisce during June and July, 17 were judged “clean,” a 50% improvement on the previous survey. Only three areas were rated “littered,” with none placed in the lowest “heavily littered” category.

Locally, Ballybunion and Portmagee were deemed “moderately littered,” while Dingle slipped to “littered.” Yet inspectors praised each location for strong presentation, colourful public spaces and facilities, noting that much of the remaining litter was marine-related or caught in hard-toreach areas. Small accumulations of cigarette butts, coffee cups and food wrappers were the most common finds.

IBAL’s Conor Horgan described the results as “by far the most favourable in eight years of surveys,” crediting

community volunteers, council investment and new initiatives such as the Deposit Return Scheme, which cut plastic bottles and cans by 30%.

With September’s Big Beach Clean expected to mobilise 600 groups nationwide, Kerry communities are being encouraged to build on this momentum and push their coastlines to “clean” status in the year ahead.

8 IMRO National Radio Award Nominations for Radio Kerry

Radio Kerry has been shortlisted in eight categories for the 2025 IMRO National Radio Awards. The station’s work is recognised across music, news, features, sport, and speech programming, with nominations for JJ O’Shea, Niamh

Daly, Elaine Kinsella, Deirdre Walsh, Tim Moynihan, and newcomer Yuliia Riabova, as well as for its coverage of the disappearance of Michael Gaine. Congratulating all nominees, General Manager Fiona Stack expressed pride in the station’s output, noting

that the recognition reflects the hard work and creativity of everyone involved, not just those shortlisted. She highlighted the consistent quality across Radio Kerry’s programming and acknowledged the efforts of all staff and contributors

who submitted entries this year.

Radio Kerry has a strong record at the IMROs, with 148 nominations and 77 wins over the past 18 years. The 2025 ceremony takes place at Lyrath Estate, Kilkenny, on Friday, October 3rd, where 41 awards will be presented. Organisers said this year saw an unprecedented number of entries, reflecting the passion and innovation driving Irish radio.
