• 1 lb. canned salmon, aked
• 1/2 cup gluten-free bread crumbs
• 1 egg, beaten
• 1 tbsp. Dijon mustard
• 1 tbsp. chopped dill
• 1/2 teaspoon sea salt
• 1/8 tsp. freshly ground black pepper
• 1 lemon, quartered, for garnish
1. Preheat oven to 375 F. Line a baking sheet with parchment paper, set aside.
2. In a large bowl, mix the salmon and bread crumbs.
3. In a small bowl, whisk together the egg, mustard, dill, salt, and pepper.
Fold into the salmon and bread crumbs.
4. Form into 4 patties, place them on the baking sheet.
5. Bake for 5 minutes, ip, and bake for 5 minutes more, until the patties are golden. Garnish with dill & lemon.
Guacamole Bacon Balls
• 1 Hardboiled Egg, diced
• ¼ Avocado
• 4 Tbsp Unsalted Butter
• 1 Tbsp Mayonnaise
• 1 Serrano Pepper seeded/diced
• 1 Tbsp Cilantro chopped
• Salt & Pepper to taste
• Juice of ¼ Lime
• 6 Bacon Slices, cooked/crumbled
In a large bowl, combine all the ingredients except bacon crumbles. Cover and place in the fridge 30 min, or until the mixture can form solid balls.
Using a spoon, scoop out 6 even-sized amounts of the mixture and form into balls. Add the balls to the bacon bits and roll around until completely covered. Serve chilled with veggies, bread or crackers.
