Buttermilk brined roast butterfly of turkey with orange and rosemary (Serves 6-8) • 5kg (11lb) butterfly turkey or breast (bone out) • 1 tbsp chopped fresh flat-leaf parsley • 1 tsp chopped fresh rosemary • 4 rindless smoked bacon rashers Citrus Harissa Butter • Zest of 1 orange • Zest of 1 lemon • 75g softened butter • 1 clove of garlic crushed • 2 tsp harissa paste • 1 tbsp chopped flat leaf parsley • 2 tsp chopped thyme Mix all the ingredients together in turkey bag for the buttermilk brine and add the turkey crown. Tie up the bag securely and place in the salad drawer at the bottom of the fridge, for up to 2 days is best but at least 24 hours.

To make the butter, beat the butter until soft and add in the harissa paste. Add in the zest of the lemon, orange zest, garlic, parsley and thyme. Beat until well combined and refrigerate until needed.

When ready to cook the turkey, reheat the oven to 190C (375F), Gas mark 5.

Prepare the turkey crown, remove the turkey crown from the brine and drain off any excess liquid, then pat the skin of the turkey dry with kitchen paper. Gently loosen the neck flap away from the breast, pack the harissa butter right under the skin, (this is best using gloves on your hands), rub into flesh of turkey well, then recover with skin and secure with a small skewer or sew with fine twine, then cover the top with the rashers.

Place the prepared turkey crown in the oven and calculate your time, 20 minutes per 450g (1lb) plus 20 minutes. The turkey crown will cook much quicker, so make sure to keep basting; you can cover with foil if it’s browning too quickly. When cooked cover with foil to rest and keep

Buttermilk Brine • 2 litres (3 ½ pints) buttermilk • 3 tbsp Maldon sea salt (or kosher) • 2 tsp freshly ground black pepper • 2 oranges, thinly sliced • 1 garlic bulb, separated into cloves and sliced • 15g fresh rosemary sprigs, roughly bruised For The Gravy • 2 tbsp plain flour • 1 small red onion, thinly sliced • 1 tsp fresh thyme leaves • 450ml turkey or chicken stock warm. Drain away all but three tablespoons of the cooking juices and reserve.

Skim all the fat from the cooking juices, then pour off all but three tablespoons juices from the roasting tin. Stir the flour into the pan residue and cook, stirring over a low heat until golden. Stir in the onion and thyme and then gradually pour in the stock, stirring all the time. Bring to the boil, and let bubble for 2-3 minutes until thickened and the onion has cooked through. Season to taste and then strain through a sieve and keep warm.

To serve, carve the turkey crown into slices and arrange on warmed plates with the roast potatoes and vegetables. Pour the gravy into a warmed gravy jug and hand around separately.

Maple glazed ham (Serves 10-12) • 5.25kg (11lb) leg of gammon • 4 celery sticks, roughly chopped • 2 onions, sliced • 1 bunch of fresh thyme • 1tbsp black peppercorns Glaze •200ml (7floz) Irish whiskey •200ml (7floz) maple syrup • 2tbsp redcurrant jelly • 2tbsp balsamic vinegar • 1tsp ground allspice • 1tsp whole cloves Place the gammon in a large pan and cover with cold water. Leave to soak for at least 6 hours or overnight is best, and then drain. Weigh the gammon joint and calculate the cooking time, allowing 20 minutes per 450g (1lb) plus 20 minutes – a 5.25kg (11lb) joint should take about 4 hours. Place in a large pan, cover with water and bring to the boil, skimming off any scum. Add the celery, onions, thyme and peppercorns and return to the boil, then cover, reduce the heat and simmer until completely tender, occasionally skimming off any scum that rises to the top. If you aren’t sure the gammon is properly cooked, check the bone end – it should come away freely from the gammon joint. Drain and leave until it’s cool enough to handle.

Preheat the oven to 180°C (350°F/gas mark 4). Carefully peel away the skin, leaving the layer of white fat intact.

Using a sharp knife, score the fat diagonally to make a diamond pattern, being careful not to cut into the meat.

Place the whiskey in a pan with the maple syrup, redcurrant jelly, balsamic vinegar and ground allspice. Bring to the boil and simmer for about 10 minutes, until slightly thickened. Stud the ham with the cloves and place in a large roasting tin with a little water to prevent the bottom from catching and burning. Brush a layer of the syrup all over the ham, reserving the remainder. Cook for 1 hour, brushing over another layer of the glaze every 15 minutes, until it’s all gone. Remove the cooked ham from the oven, transfer to a serving platter and leave to rest for 15 minutes.

Season to taste and set aside to allow the flavours to develop. To serve, carve slices from one side of the ham, cutting diagonally to achieve an even thickness. When you reach the bone, insert the knife at a flatter angle and slice across the top of the bone. Turn over the leg to carve slices from the other sides. Arrange on serving plates with spoonfuls of pineapple salsa.

Spun sugar • 225g (8oz) caster sugar • 1 tbsp powdered glucose Place the sugar, glucose and 250ml (9fl oz) of water into a heavy-based pan.

Bring to the boil and then reduce the heat and simmer for 15-20 minutes until you have achieved a golden caramel colour. The sugar syrup should be a thick honey consistency but not too runny. It thickens a little as it cools so if it gets too thick, then simply heat it again and it will loosen fairly instantly.

Using a clean, small metal spoon and a knife-sharpening steel, dip the spoon into the caramel and lift it out again, then twist it around the steel to create some sugar curls, working very carefully as the caramel is extremely hot.

Cranberry & apple chutney • 200 ml apple juice • 50g brown sugar • 1 cinnamon stick • 4 tbsp red wine vinegar • 1 tsp allspice • 1 tbsp port • 1 eating apple, peeled and diced • ½ bag cranberries Put all the ingredients save the apple and cranberries in a stainless steel saucepan, bring to the boil and simmer for 15 minutes.

Add the apple and cook for a further minute until the apple is soft then add the cranberries and cook until they have burst and are cooked through. Pour into sterilised jars and allow to cool.

Pine nut, cranberry & apricot stuffing • 1 large onion, peeled and diced • 1 tbsp chopped parsley • 1 tsp chopped sage • 2oz pine nuts, toasted • 6oz fresh white breadcrumbs • 3oz butter • 1 tbsp chopped dried apricots • 1 tbsp dried cranberries Melt butter in pan and cook onions for a few minutes until they soften. Add the herbs, apricots, cranberries and pine nuts. Mix well, and stir the mixture into the white bread crumbs, again mixing well.

It’s now ready to use and stuff the turkey with or you can wrap in buttered tin foil, roll into a large sausage shape and place in the oven to cook for approximately 25 mins.

Mulled fruit trifle (Serves 4)

• 100ml cream • 250g (9oz) plain chocolate, broken into squares (at least 70% cocoa solids) • 25g butter • 4 tbsp Coole Swan • Zest of 1 orange For the coating: • 225g (8oz) plain chocolate, broken into squares (at least 70% cocoa solids) • Cocoa powder, for dusting • Pistachio nut crumb • Toasted desiccated coconut

• 50ml/¼ pint port • 75g/3oz caster sugar • 1 tsp ground mixed spice • 1 tsp vanilla extract • 1 x 500g bag frozen forest fruits • 200g/7oz Madeira cake broken into chunks • 500ml/½ pint whipping cream • Chocolate curls to garnish

Place the port, sugar, mixed spice and vanilla extract in a saucepan and bring to the boil. Reduce heat and simmer for five minutes until syrupy. Stir in the frozen forest fruits. Scatter the Madeira cake over the base of a 1.4 litre/2 ½ pint trifle bowl. Spoon over the forest fruits and syrup. Top with custard.

Whip the cream to form soft peaks. Place spoonfuls of cream on top of the custard. Chill for one hour before serving.

Place the cream in a pan, bring to the boil. Reduce the heat, then whisk in the chocolate and butter until smooth and melted. Stir in the Coole Swan and transfer to a bowl.

Leave to cool completely, whisking every 20 minutes so that the butter will be evenly distributed. Cover the bowl with cling-film and chill for 2–3 hours, until set firm, stirring occasionally to present a skin from forming.

When the mixture is cold and set, use a melon baller to scoop it into 1.75cm (3/4in) balls. Make sure to dip the melon baller in hot water to give the chocolate mixture a better shape. Arrange on a baking sheet lined with nonstick parchment paper.

To make the coating, melt the chocolate in a heatproof bowl set over a pan of simmering water or in the microwave. Leave to cool a little, then dip the truffles in the melted chocolate and quickly roll in the cocoa powder.

Place in the fridge to set.

To serve, arrange the truffles on a plate to hand around to guests while they are enjoying their coffee.

COOK AHEAD These truffles will keep well in the fridge for up to 1 week in an airtight container. They can also be frozen very successfully, but should always be left at room temperature to thaw out completely.

50ml milk 100ml cream 3 egg yolks A few drops of vanilla essence or a vanilla pod Level tablespoon cornflour 25g sugar

Place the milk and cream in a heavy-based pan. Heat gently until almost boiling. While the milk is heating whisk together the egg yolks, cornflour, sugar and vanilla essence in a large heatproof bowl until thick and pale.

Pour the hot milk and cream mixture onto the egg mixture whisking well until smooth. Return to the pan and heat gently stirring until thickened. Leave to cool. Stir occasionally to prevent a skin forming on top.

Host of Spectacular Events for Mullingar Arts Centre Mullingar Arts Centre has a host of spectacular events lined up over Christmas to keep everyone entertained.

To coincide with ABBA’s 40th anniversary of their launch on to the world stage at the Eurovision Song contest, tribute act ‘ABBA Forever’ are coming back to the centre to celebrate with a dazzling, fantastic performance including their most iconic hits, Mamma Mia, S.O.S, Money, Money Money, The Winner Takes All, Gimme Gimme, Gimme and many more!

Celebrate Christmas with New voucher scheme Mullingar Choral Society! from Mullingar 6 CHRISTMAS IN WESTMEATH

It’s beginning to look a lot like Christmas and in Mullingar, one of the surest signs that the festive season is nigh is Mullingar Choral Society’s Christmas concert, which this year will take place in the Cathedral of Christ the King on Sunday, 13 December at 7pm.

The choir will once again team up with Mullingar Town Band for what will be a fabulous night of magical music and festive fun. This year they are also joined by a stellar line-up of special guests including local soprano, Sarah Brady, Tullamorebased cellist, Adele O’Dwyer as well as the angelic voices of the Presentation Senior School Choir.

Rehearsals for the concert have been in full swing for some time, amidst a busy year for Mullingar Choral Society. The choir made their inaugural appearance at this year’s Culture Night celebrations in September, performing at Mullingar’s anchor event in the Atrium of County Buildings, an experience that was thoroughly enjoyed by choir and audience members alike. Featuring a full line-up of soloist and music from Tchaikovsky, Barber and Irish composer, Aloys Fleishmann, culminat-

ing in the wonderful “The Armed Man: A Mass for Peace” by Karl Jenkins, this really promises to be a night to remember.

The scheme is called the Small Benefits Exemption Scheme and allows company directors and employees to receive a noncash bonus of up to €500 in value on a completely tax free basis each year.

The current limit was set at €250 and Finance Minster Michael Noonan’s increase to €500 was expected to take effect from 2016 onwards however the Department of Finance has implemented the changes in time for Christmas.

“I would be telling everyone that would be considering giving a gift of money to friends and family at Christmas to consider multiplying the amount by four for Mullingar by buying our Shopping Voucher,” said President of Mullingar Chamber of Commerce, Brigid Manly.

“When you use these vouchers you are keeping money circulating among your

own community. These next few weeks are when a lot of businesses, especially in the retail sector to the majority of their trading and it is vital we support them by working as hard as we can to promote shopping.

So while the employers giving staff bonuses have a huge impact so does every twenty euro voucher that is going in a thank you card, or a Christmas Card to friends, neighbours and family."

Mullingar Chamber Shopping Vouchers come in €10, €20 and €50 denominations and are valid for two years. There are over 140 participating local businesses including hair salons, restaurants, toy shops, food and drink, travel agents and there is no commission on this voucher – €100 is worth €100 and costs €100.

Christmas Craft Fair at The Barn, Tyrrellspass CHRISTMAS gift ideas made simple, if that is on your list this year, then Tyrrellspass is the place to be on Sunday, 13 December.

On that day, the local crafts people will be holding their annual Christmas Craft Fair in The Barn in the village.

Local crafts and food will be on sale as well as some lovely entertainment from students of St. Josephs Rochfortbridge.

The Barn will be chock full of the best Christmas fare, from original gift ideas, to floristry, home produce, crafts, table ware.

Christmas decorating and much more besides.

Christmas Carols, lights and fun in Rochfortbridge Rochfortbridge will be a busy place in the lead up to Christmas and there will be plenty for people to enjoy throughout the Festive Season.

The Christmas lights have looked really impressive in recent years and the plan is to have them switched on in plenty of time for the season. Local electrician Liam Lynam will be the main man behind the project again and there will be an important fundraising table quiz in Bagnall’s, Rochfortbridge on Friday, 11 December.

The plan is to replace some of the ordinary lights in the area with L.E.D (light-emitting diode) bulbs as well as ensuring Rochfortbridge is fully lit for the Christmas season. The new group, Let’s Connect, which includes the areas of Dalystown and Milltownpass, will be getting behind the project.

As usual, there is plenty happening with the local schools.

Rochfortbridge National School will stage their Christmas Carol Service on December 18 in the local

church at 1pm and it promises to be a lovely occasion. On the previous evening, 17 December, there are two Christmas plays being staged by the fifth and sixth class pupils.

The Rochfortbridge Tidy Towns Committee will be busy during the Festive Season as they fundraise for next year. They will hold their draw in Lyster’s on Saturday, 19 December. A raffle for the Rochfortbridge Ladies GAA Club will take place on Sunday, 13 December in Lyster’s.

Alan Fitzgerald will hold the usual Christmas lighting event at The Sycamores on Saturday next, 5 December and this year it is in aid of Epilepsy Ireland. This has proven a big attraction in recent years and it’s all for a very good cause, so come along and get into the Christmas spirit.

Milltownpass’ star will shine brightly this Christmas In Milltownpass, the beautiful lighting and crib at the church will be the focal point once again this Festive Season.

The crib, put together by Leo Wright a number of years ago, always looks beautiful and the star at the top of the bell tower will shine brightly once again.

The Christmas lights are traditionally switched on a week before Christmas and it marks the start of the annual festival commemorating the birth of Jesus.

St Joseph’s National School, Milltownpass will be busy in the buildup to Christmas and their school concert is always a popular event.

PLENTY PLANNED FOR BALLYNACARGY THIS FESTIVE SEASON In Ballynacargy, there’s plenty of Christmas activity to enjoy this year, from concerts by the local National School children, to music, fun and entertainment in the different hostelries.

The much improved Christmas lights were one of the big attractions last year and they will soon be switched on to bring an added seasonal feel to the village once again. The crib outside the Church of The Nativity adds another lovely touch to the area at Christmas time. Santa’s Grotto is also a major attraction and once more the St Patrick’s Community Employment Project (C.E.P) will be hosting it this year. The grotto will be open on Wednesday, 16 and Thursday, 17 December at the Parochial House.

The C.E.P held a table quiz last Friday night also and are grateful to everyone who has supported them. All funds raised will be used to upgrade equipment. Last year the money went towards the Christmas lights in the village, while the previous year it was used to fund the new playground behind

the Parochial Hall, which is a big attraction for young people. Supervisor, Valerie O’Brien has thanked everyone for their continued support.

CHRISTMAS CONCERT St Brigid’s National School traditionally have a Christmas celebration and this is usually one of the highlights of the Festive Season locally. This year’s event is planned for Thursday, 17 December, with a special Christmas Mass in The Church of the Nativity, Ballynacargy at 11am to get the celebration underway.

Principal, Karl Dermody and all at the school are very grateful to all families who supported the Shoebox Appeal, which proved a good success.

COMHALTAS BRANCH One of the big success stories in

Ballynacargy is the Comhaltas Branch and they will be active throughout the Festive Season and into the new year. They enjoyed a great night of music on Sunday, 22 November in the new Teach Ceoil, officially opened this year by Labhrás Ó Murchú, Director General of Comhaltas Ceoltóirí Éireann and presentations were held to honour Áine Ní Raghallaigh and Sharon Gorman, who have done terrific work with the under 12 and under 15 Banna Cheoil groups.

Sunday evening sessions are in full swing and there will be a big one on Sunday next, 6 December when everyone returns home from Parnell Park where they will be supporting the Milltown Ladies team in the All-Ireland Intermediate final.

Classes are up and running, with over 100 people now learning music. The sign will be erected over the Teach Cheoil in the coming weeks and handrails will be put in place at the steps at the entrance. Further work is planned for 2016 as the branch will tarmac

the outside yard, making it an ideal place for outdoor music sessions.

The annual table quiz is planned for Friday, 22 January, with quiz master, Ken Eades setting a wide range of questions as always.

Keeping it local for a prosperous Christmas in Delvin and Clonmellon The bleak outlook for Irish country life in general has been well documented for many years now. However the tight-knit local communities of Delvin and Clonmellon are certainly playing their part in the survival of their local villages.

And while the seemingly unrelenting onset of the Lidl and Aldi retail culture in the larger towns has reduced many rural communities and villages to no more that a church and school in many cases, that is certainly not the case in North Westmeath where many businesses, both established and new, are battling valiantly to remain profitable or at the very least viable.

Topic paid a visit to a number of these businesses ahead of Christmas 2015 and discovered that even without the presence of a departmental store or giant supermarket between Mullingar and Kells there is still plenty of scope for

Christmas shopping in the local shops and especially in the important category of gift-buying.

It starts at Killucan GAA and it goes around and there is a footpath the whole way around the route."

The festive season kicks off in earnest this coming Sunday, 6th of December when the Christmas lights will be turned on in The Square. Santa is once again expected to make a very special appearance and if the children are good this year he may even provide them with a small treat.

The turning on of the Christmas lights is always a special time in Castlepollard and this year promises to be extra special as we have been promised “new and even better lights’’ on the large Christmas tree.

Of course you can’t have Christmas without Christmas Carols and the pupils from Castlepollard National School and from Castlepollard Parochial School will provide the beautiful carol singing.

There is always great anticipation and excitement before Santa arrives, but even if it is cold or raining or snowing, it is always worth the wait to meet the ‘Big man with the white beard and the Red suit’!

Not alone will the lights be turned on, on the large tree, outside St Michael’s Church on The Square, but the town itself will be aglow and radiant with the special LED lights that adorn all the trees around the square, providing a great Christmas atmosphere for people of all ages in north Westmeath.

Apart from visiting Castlepollard, Santa will also visit the village of Fore on Sunday 13 December from 3pm-6pm. As always the children look forward to Santa making a visit on his tractor!

Also in Fore on Sunday 13 December there will be a Craft Fair at Fore Coffee Shop from early in the day with items of interest for all the family.

Tullynally Castle is always a great place to visit at Christmas time and in the lead up to Christmas a Christmas Market will be held in Tullynally Castle on Saturday 5 December and Sunday 6

December. There will be many stalls available with jewellery, wood crafts, candles, home baking, embroidery, knitting and lots more, including a Grand Christmas Draw and Face Painting for kids, while Santa is also expected to pay a visit.

The Coole Older People’s Christmas Choir will join up with pupils from the local school and perform for some of their friends and neighbours who are in the local Nursing Homes, while the blessing of the Coole Christmas crib is also a very special occasion.

PRIZES TO BE WON IN ANNUAL PARISH DRAW The Annual Parish Draw for Castlepollard, Castletown and Finea will take place this year on Wednesday, 16 December. Once again there are lots of spot prizes worth winning including a first prize of €250 and second prize of €100 plus, numerous other prizes.

In Ringtown a Christmas Fair will be held on Sunday, 13 December where Santa is expected to arrive at 11am, with plenty of surprises in store for all, while Whitehall National School will host a ‘Nativity Play’ and ‘Cinderella Rockafella’ in Ringtown GAA complex on Friday, 18 December, with all welcome to attend.

Castlepollard National School will also hold their annual Christmas play and this year their play, The Lion King’, will take place in Castlepollard Community College on Tuesday, 15 December.

CHRISTMAS CRIB It wouldn’t be Christmas without a crib and the Crib will be erected in Castlepollard Square in the lead up to Christmas, when pupils from both local national schools will sing carols at the blessing of the crib. This crib is unique to Castlepollard and brings a special meaning of Christmas to everyone as they enter Castlepollard Square.

Also in the lead up to Christmas well-known comedian Pat Shortt will bring lots of laughter to the Hotel Castlepollard on Saturday, 19 December, with tickets on sale on the door.

Once again Hotel Castlepollard will provide great entertainment over the Christmas period with plenty of music and dancing.

Then on New Year’s Eve, Thursday, 31st of December there will be a New Year’s Eve party with music

by White Diamond. Can you think of a better way to ring in the New Year!

Early in the New Year don’t forget that Castlepollard Community College will be holding their Annual Show, and this year’s show is entitled ‘Oaklahoma’ and will be staged in the Mullingar Arts Centre on Thursday, 7 January, Friday, 8 January and Saturday, 9 January.

Don’t forget that when Christmas is over and you have eaten too much turkey, cakes, pies and sweets then what better way to run off that excess Christmas weight than by taking part in the Coole Christmas Run on Sunday, 27 December at 2.00pm.

The run will start in Castlepollard and will finish in Coole. Participants will have the option of running, jogging or walking and can take part in the 10K run or the 5K run for €15 or for €10 respectively with all proceeds going to the very worthy cause of the Carers Association in Westmeath.

So there is plenty there to whet you appetite for Christmas, so remember to try and at all times shop local and to enjoy all the fun and festive cheer on offer in Castlepollard and north Westmeath this Christmas!
