Growth Factors for Skincare

ANTIAGING IS A BUZZ WORD WE HEAR ALL THE TIME, BUT IT LIKELY REPRESENTS MORE OF A QUEST THAN REALITY.

Even though we have not been able to stop the aging process, there are options to substantially slow it down and even reverse some age-related and environmentally-induced changes in our skin.

Growth factors and peptides, are molecules which function as signals to turn on the body’s natural ability to repair cellular damage and promote production of collagen and elastin. e result is an improvement in skin quality and skin tone. ese growth factors exist in our skin naturally, but their abundance decreases over time. erefore, adding an external source topically can compensate for the natural decrease. Ruby has spent much of his adult life passing along what is now his own positive influence down through his employees to his guests. Raise your hand if you have more or less forgotten that the trim in your home – be it baseboards, chair railing or crown molding – even exists. These areas of our homes are easily relegated to the backs of our minds (until we spot a cobweb, at least.) But if you haven’t changed the appearance of these trims in a while, you’re missing an opportunity to add a ton of character to your home. Painting all of your home’s trims in the same color creates cohesion throughout the space and can serve as a clever border to your wall color. Matching crown molding or trim to the ceiling color creates the illusion of a lower ceiling, offering a cozier vibe. Matching trims to the wall color gives the walls a textured, subtle look.

While we love wallpapered rooms, the prospect of filling a space with a single pattern can be daunting for some. Many homes are now featuring smaller swaths of wallpaper to add visual interest without overwhelming the eye. GUEST BEDROOM

If you’re searching high and low for the floorspace to create a home office, we recommend taking a look at your guest bedroom.

In this guest bedroom revamp featured on The Inspired Room’s blog, the owner pushed the bed against the wall to make way for the desk. When they’re ready to host guests, the owner can easily move the chair to another room and scoot the bed away from the wall.

While many empty nesters balk at revamping their kids’ rooms, adding a desk to their room wouldn’t feel like a huge change. This small addition would be an easy way to use your square footage while still keeping the nest feathered for your children.

Remember that while you want to welcome family and friends into your home, they only come occasionally whereas you have to live there the rest of the year; you should enjoy it!

NARROW-MINDED

If you’re struggling to find a spot to situate a home office, consider that the space need only be wide enough to accommodate the depth of the desk as well as the chair, when in use. This mindset shift makes it possible to reimagine closets, old laundry rooms, basement areas, unused hallways, pantries, empty nooks and more as freshly-minted home offices.

This space, styled by IKEA, makes use of a hallway that the family hardly uses. With clever accessories and styling, it now serves as both a mudroom and a home office for two. The chairs slide under the desks when not in use to ensure that the hallway remains fully functional. But when in use, ample vertical storage, hanging hooks and a rolling cart ensure that this office is efficient and easy to use.

Have a built-in that’s just storing your favorite dust collectors? Simply removing the bottom shelf can often create a perfect home office space. Likewise, the unused end of a kitchen island could easily be revamped into a desk in many homes.

Making room for a home office takes a creative vision. Consulting with an interior designer or architect could undoubtedly turn up lots of possibilities you hadn’t ever considered. Don’t let your vision be too narrow!

Gen Z has declared that normal office chairs are offically “out.”

Task chairs that allow you to cross your legs have taken over TikTok. They’re armless and wider, allowing a number of options for sitting or kneeling while working. These can be more comfortable for many people and encourage more movement and stretching than typical office chairs. They also don’t look like office chairs, so they work in any space.

Ergonomics proponents want you to choose a chair that supports your spine, helps keep your knees and hips in alignment and allows you to keep your wrists straight and level (or below) your elbows. They suggest having your feet parallel to the floor, but circulation is what’s most important. So these chairs often pass the workplace comfort test! Just keep your posture upright and remember to take breaks throughout the day.

DOUBLE DUTY

Not all of us use our office spaces every single day. If you don’t need desk space very often, consider how your “office” might be utilized the rest of the time.

It’s no secret that we’re obsessed with Thibaut’s decorative vignettes. This office area offers a clever idea: rather than pinning the space down to one purpose, keep it fluid. A desk can be hard to utilize for other needs, but this square accent table works for a variety of purposes. With the option to sit on the ottoman or armchair, you can comfortably work your way. Remove your paperwork from the space and suddenly, it’s just a lovely sitting area.

Of course, the space doesn’t have to be purely decorative in its “off” time. Many people utilize their pantries or laundry rooms as home offices, and your work table could easily serve as a prep or folding station when you don’t have your laptop out. You wear “many hats” in your job, so why not make your office do the same?

If you know your office will have to be dualpurpose but don’t have a room to devote to it, consider a desk that can easily be disassembled (and reassembled) at a moment’s notice. A work surface on top of two sawhorses in your garage, toolshed, basement or utility closet can quickly be tucked away when not needed.

Using this space to stack coffee table books is a favorite trick of interior designers; using titles related to your industry will help provide you tons of inspiration in your downtime. You could also stash a small collection here, which shows off your personality and brings fun to the space. Putting well-organized office supplies here can be both beautiful and incredibly functional.

Other desks with open storage utilize this look with an acrylic or glass desktop, making it easy to display a desk calendar or artwork. Some designers add interesting fabrics here to provide tons of style – without interfering with your work.

Open shelving on desks can also be chic. Just avoid clutter; the pitfall of having everything exposed is that there’s no room for mess.

FOLD-DOWN DESKS

Designers are becoming much more aware that some of us don’t have a lot of extra, unused space in our homes that’s just waiting for a purpose. Small-space solutions make it possible to have a workspace just about anywhere.

This ingenious wall-mounted desk from Urban Outfitters offers a low-profile way to add a workspace wherever you need one. Like a Murphy bed, this style of desk folds up when not in use and looks like just another cabinet.

If you’re in the market for a desk like this, look for something that offers additional storage rather than just the pull-down desktop. This allows you to tuck away a wireless mouse, headphones, notepads, pens and other items you’ll want to keep handy.

The downsides of this design? They must be mounted very carefully to ensure that you don’t accidentally pull it down while you’re working. You also have to keep a chair within easy reach and, most likely, you can forget about ergonomics of any sort.

That said, if you’re in need of a spot to do short bursts of work on a laptop, fold-down desks may just be the ticket. It certainly beats having to move everything off of your cluttered kitchen counter every time you need to check your email! •

Air Fry Pork Tdloin

WHY IT’S GREAT:

Looking for a quick and easy main dish that’s full of flavor? Look no further! Serve alongside mashed potatoes or steamed veggies.

1 1/2 lb. pork tenderloin

2 tsp. kosher salt

2 tsp. light brown sugar

1 tsp. pepper

1 tsp. dried thyme

1 tsp. paprika

1/2 tsp. garlic powder

1 T olive oil

Pat tenderloin dry with a paper towel and cut in half. In a bowl, combine salt, brown sugar, pepper, thyme, paprika and garlic powder. Rub the tenderloin down with the olive oil, then sprinkle with spice mixture all over; press lightly to adhere. Place tenderloin into basket of a 6-quart air fryer, leaving space between. Cook at 400°F for 10 minutes. Turn and cook at 350°F for 10 to 15 additional minutes, until the internal temperature in each piece reaches 145°F.

Transfer to a cutting board and let rest 5 minutes before cutting. (adapted from The Pioneer Woman)

Air Fry Sese Cod

WHY IT’S GREAT:

This incredibly easy recipe will make fish a weeknight staple for your family all spring and summer. The orange wedges offer lots of brightness to this already light dish!

4 5oz. cod fillets, thawed Salt

Pepper

3 T butter, melted

2 T sesame seeds

2 6oz. pkgs. snap peas

3 cloves garlic, thinly sliced

1 medium orange, cut into wedges

Spray air fryer basket with cooking spray. Preheat air fryer to 400°F.

Blot fish dry with paper towels, and sprinkle lightly with salt and pepper.

Combine butter and sesame seeds. Reserve 2 T of butter mixture.

Toss peas and garlic in remaining butter, then place in air fryer basket. Cook until tender, about 10 minutes. Remove from air fryer and keep warm.

Brush fish with half of reserved butter mixture. Place in fryer basket and cook for minutes; turn. Brush with remaining butter mixture and cook 5 to 6 minutes longer, or until fish flakes easily with a fork.

Serve on top of snap peas. Gently squeeze an orange wedge over each plate, then serve with a fresh orange wedge. (adapted from All Recipes)

Air Fry Fi “Fry”

1 lb. cod, cut into 4 strips

Kosher salt

Pepper

1/2 c. all-purpose flour

1 large egg, beaten

2 c. panko bread crumbs

1 tsp. Old Bay seasoning

WHY IT’S GREAT:

Fridays just became a whole lot simpler thanks to your handy dandy air fryer. Homemade “fried” fish will be a game-changer for your Lenten dinners... and we think it’ll be a staple year-round, as well!

Pat fish dry with a paper towel. Season both sides lightly with salt and pepper.

Place flour, egg and panko in three separate, shallow bowls. Add Old Bay to panko and gently stir to combine. Working one at a time, gently coat fish in flour, then egg, then panko mixture, ensuring that all surfaces are coated.

Working in batches if necessary, add fish to basket of air fryer, leaving space between. Cook at 400°F for 10 to 12 minutes, gently turning halfway through, until fish is golden and flakes easily with a fork. Serve with lemon wedges, tartar sauce, fries and hushpuppies, if desired. 1 pkg. Jiffy Mix

1/4 c. all-purpose flour

1/4 tsp. garlic powder

1/3 c. whole milk

1 egg

2 T onion, diced

1 T jalapeño pepper, diced

WHY IT’S GREAT:

Hushpuppies are hard to get right in an air fryer. While we wouldn’t ever stop you from going with pre-made frozen ones, this recipe is a little more customizeable. Add a pinch of cayenne pepper or a spinkle of Old Bay for more flavor.

Whisk together Jiffy Mix, flour and garlic powder. Add milk and egg, and stir to combine. Fold in the diced onions and pepper.

Preheat air fryer to 350°F while you let the dough rest for 5 minutes.

Lay down parchment paper rounds in the air fryer basket. Top with spoonfuls of dough. Cook for about 5 minutes, turn and cook for an additional 1-2 minutes until golden brown. (adapted from Everyday Family Cooking)

While these will be a little less crunchy than your favorite fast food fare, this fry recipe will offer a deep potato flavor that your whole family will love. If you make these part of your meal, you might go over 30 minutes total, but not by much!

Preheat air fryer to 380°F.

Cut potatoes into 1/4” wide sticks. Drizzle olive oil over potatoes, sprinkle with salt and toss to coat completely.

Working in batches, add potatoes to air fryer basket in a single layer so that the potatoes aren’t touching, if possible. Cook 12 to 15 minutes, flipping halfway, or until crispy and golden. (adapted from Love and Lemons)

Notes: Feel free to return fries to the air fryer for 1 minute just prior to serving to reheat if they start to cool off.

Lexingtoni Salad

WHY IT’S GREAT:

Looking for a quick and easy main dish that’s full of flavor? Look no further! Serve alongside mashed potatoes or steamed veggies.

16oz. container sour cream

1 pkg. Hidden Valley Ranch dip mix

1/8 tsp. dry mustard

2 c. mayonnaise

1/2 c. buttermilk

1/2 c. whole milk

4 slices bacon

2-3 c. Romaine and iceberg lettuce

1 1/2 oz. diced cherry tomatoes

Preheat oven to 400°F.

Mix together sour cream, ranch mix, dry mustard, mayonnaise, buttermilk and whole milk. Refrigerate. Fan fold a sheet of aluminum foil to create a series standing triangles that fit in the bottom of a rimmed baking sheet. Drape bacon over the triangles. Bake until bacon reaches your preferred level of crispness, up to 30 minutes. Remove to paper towels to drain and then gently crumble using paper towels.

Toss lettuce mix, tomatoes, bacon crumbles and 4 oz. of the prepared ranch dressing together in a frozen bowl. Pepper to taste. (adapted from Beyond the Fence: A Culinary View of Lexington)

Sheet P Fajitas

WHY IT’S GREAT:

Sheet pan dinners make cooking and cleanup a snap. This is a fun meal that can be served “fix it yourself” style, which parents (and kids) will enjoy.

1 T chili powder

2 tsp. Kosher salt

1 tsp. pepper

1 lb. bell peppers, chopped

1 large yellow onion, sliced

2 T olive oil, divided

1 1/2 lb. boneless, skinless chicken breast

8 fajita-size tortillas, warmed Toppings

Preheat broiler to high. Line a rimmed baking sheet with foil.

Combine chili powder, salt and pepper. Spread peppers and onions evenly over baking sheet. Drizzle with 1 T olive oil and half the seasoning mixture. Broil until softened and starting to char, about 10 minutes.

Cut chicken into 1/4” thick slices. Add to a large bowl and toss with remaining spice mixture and 1 T olive oil.

Scatter chicken on top of peppers. Return baking sheet to oven until chicken is cooked through and browning, about 5 minutes. Serve with tortillas and toppings of your choice. (adapted from Food Network)

Notes: Topping ideas could include lime wedges, shredded cheese, guacamole, salsa, pico de gallo, sour cream, roasted corn, queso blanco, sliced avocado, sliced jalapeños and/or chopped cilantro.

One-Skillet Lon Glic Chick d Potatoes

WHY IT’S GREAT:

This simple recipe for 4 has the sides built right into the dish! It brings lots of flavor to the party and always looks like it took more effort than it actually did.

Kosher salt

Pepper

4 bone-in, skin-on chicken thighs

2 T butter

3/4 lb. small red potatoes, quartered

1 small lemon

1 c. water

4 cloves garlic, sliced

1/4 tsp. crushed red pepper flakes

2 T fresh parsley, chopped

4 c. baby arugula

Lightly salt and pepper both sides of chicken thighs.

In a large skillet over medium-high heat, melt butter. Add chicken skin-side down and cook until crispy and golden brown, about 6 minutes.

Reduce heat to medium and turn chicken. Add potatoes. Cut lemon into 1/4” thick slices, then halve the slices; add to skillet. Add water, red pepper flakes and 1/2 tsp. salt. Cover and cook until potatoes can be easily pierced with a fork, about 9 minutes.

Remove lid and continue to cook until liquid has evaporated and chicken is cooked through, about 10 minutes. An instant read thermometer inserted into the thickest part of the thigh should read 165°F and potatoes should be crispy. Sprinkle with parsley.

Divide arugula among four plates and top with chicken and potatoes. (adapted from Food Network)

Angel Hair Pasta with Sausage d Spina

WHY IT’S GREAT:

This is another dish that looks and feels like it requires way more effort. We recommend serving with slices of buttered, toasted Italian bread.

4 Italian sausage links, sliced

1 medium onion, chopped

2 cloves garlic, minced

2 tsp. olive oil

2 14.5oz. cans chicken broth

8 oz. uncooked angel hair pasta

18oz. fresh spinach, trimmed and chopped

2 T all-purpose flour

1/4 tsp. pepper

1/3 c. heavy whipping cream

In a Dutch oven, warm the oil over medium heat.

Add sausage and onion and cook until meat is no longer pink. Add garlic and cook until fragrant, about 1 minute. Drain.

Add broth and bring to a boil. Add pasta and cook for 3 minutes, stirring frequently.

Add spinach by the handful, stirring between each addition. Cook and stir until pasta is cooked and spinach is wilted, about 3 minutes.

In a bowl, whisk together flour, pepper and cream until just combined. Drizzle into the pasta mixture, stirring constantly. Allow mixture to come to a boil; cook, stirring often, until thickened, about 2 minutes.

Optional: finish each dish with freshly grated Parmesan, crushed red pepper flakes or chopped parsley.(adapted from Taste of Home)

ZA’ATAR

Za’atar is a Middle Eastern dried spice mix. It adds brightness and depth to dishes and snacks. Like all traditional spice blends, the composition of za’atar may change by region or even by household. We’ve included a simple recipe here so you can make your own, but you can also find this spice blend pre-packaged at your favorite grocer.

Za’atar is often added to yogurt, chickpeas, salad dressings and oil-dipped bread, but it’s wonderful on roasted chicken, hummus and eggs. A simple salad of sliced tomatoes, chopped Persian cucumbers and crumbled feta cheese, drizzled with olive oil and sprinkled with za’atar is a fantastic start to a meal or afternoon snack. There can be some confusion because the za’atar is also an herb, Origanum syriacum, and many za’atar spice blends include its namesake herb. However, it can be difficult to find on its own for American consumers. This herb is often replaced by oregano, which is more widely available.

Marjoram is a medicinal herb that is reminiscent of oregano. It’s included here because it is milder and sweeter, a great balance to the spiciness of the oregano. Thyme is an aromatic member of the mint family and it mimics the taste of Origanum syriacum in this spice blend.

Sumac adds a lemony brightness to the mixture. Sesame seeds add a mild nuttiness and wonderful texture. Some people add salt to their za’atar mixture, though we omitted it here; we prefer to salt the final dish to taste.

RECIPE:

2 T dried oregano

2 T sumac

2 T toasted sesame seeds

1 T dried marjoram

1 T dried ground thyme

THIS TIME OF YEAR

has everyone reaching for carrots. And while that particular root vegetable benefitted from some fantastic PR – from Bugs Bunny to the Easter bunny – we’re asking you to consider the carrot’s humbler, less flashy cousin: the parsnip.

Like carrots, parsnips grow down into the ground with a beautiful crown of parsley-like greenery. Parsnips have a nutty, peppery, earthy flavor, sometimes with a hint of licorice. They’re sweeter than carrots and only get sweeter as they are cooked. Parsnips are generally a pale off-white in color, leaning towards yellow.

These root veggies come with a host of health benefits. They are rich in vitamins and minerals, including vitamins K and C, as well as folate, antioxidants and more. They’re a great source of fiber and can help support your digestion, immune system and overall weight loss!

Large parsnips can have a woody center that can be tough. When you’re at the grocery store, look for smaller, straight parsnips. Treat them just as you would a carrot; cut the tops and bottoms off, give them a good scrub and peel them if you wish – though they’re more flavorful if you don’t. They’re great roasted, mashed, puréed, sautéed or braised. And just like carrots, they can be eaten raw in a salad or alone as a snack. by Amanda Harper

EASY CREAMY PARSNIP SOUP

1 T olive oil

1 onion, chopped

1 clove garlic, minced

1 1/5 lb. parsnips, cut into 1” chunks

1 1/2 c. milk

1 1/2 c. vegetable stock

3 bay leaves

Heat the oil in the bottom of a Dutch oven over medium heat. Add the onion and sauté until translucent. Add minced garlic and sauté for 30 seconds, until fragrant.

Add the parsnips, bay leaves, milk and stock; bring to a boil. Reduce heat and simmer gently until parsnips are soft.

Remove bay leaves. Drain off and reserve liquid.

Transfer solids to a blender. Blend, slowly adding reserved liquid until you reach a thick soup consistency.

Serve warm. If desired, drizzle lightly with a good quality olive oil and sprinkle with fresh or dried parsley. (adapted from BBC Good Food)

ORECCHIETTE PARSNIP PASTA

3/4 lb. orecchiette

1 T olive oil

3/4 lb. sweet Italian sausage

1 lb. parsnips

1 bunch Swiss chard, trimmed

1/2 c. grated Parmesan

Cook pasta according to package directions in a large pot. Reserve 1 c. pasta water; drain and return to pot.

Heat oil in a large skillet over medium-high heat. Remove casings from sausage, then add to skillet, breaking up with a wooden spoon; cook until browned, about 3 minutes. Using a slotted spoon, transfer sausage to pot.

Chop parsnips into 1/4” rounds – if parsnips are large, halve the rounds. Add to the skillet and sauté until softened and browned, about 5 minutes. Thinly slice the chard, then add to skillet and cook until wilted, about 2 minutes. Transfer mixture to pot and toss.

Add Parmesan and enough pasta water to create a light sauce. Serve with additional Parmesan and finish with salt and pepper, to taste. (adapted from Martha Stewart)

NEW ZEALAND LAMB SHANKS

4 lamb shanks (20 oz. each)

1 tsp. salt

3/4 tsp. pepper

1 T butter

1/2 c. white wine

3 medium parsnips, cut into 1” chunks

2 large carrots, cut into 1” chunks

2 medium turnips, cut into 1” chunks

2 large tomatoes, chopped

1 large onion, chopped

4 cloves garlic, minced

2 c. beef broth

10 oz. frozen peas, thawed 1/3 c. fresh parsley, chopped

2 T fresh rosemary, chopped

Rub lamb shanks with salt and pepper. Heat butter over medium-high heat in a large skillet. Brown the lamb shanks, then transfer to a 6 qt. slow cooker.

Add wine to skillet; cook 1 minute while using a wooden spoon to loosen any brown bits from the bottom of the skillet. Pour over lamb.

Add parsnips, carrots, turnips, tomatoes, onion, garlic and broth to slow cooker. Cook, covered on low 6-8 hours, or until meat is tender.

Remove lamb. Stir in peas, parsley and rosemary and heat through. Serve shanks atop vegetables with gravy (optional). (adapted from Taste of Home)

POT GRAVY

2 c. liquid from pot, divided 2 1/2 T cornstarch

Pour the pot liquid through a fine mesh strainer into a large skillet.

Remove around 3 T of liquid to a small bowl. Whisk in cornstarch. Set aside.

Bring the broth to a simmer. Whisk in the cornstarch mixture, and cook until thickened to your desired consistency.

Notes: If you can’t quite get 2 c. of liquid from the pot, substitute the rest with beef broth and add 1/4 tsp. chopped rosemary, plus salt and pepper to taste.

PARSNIP POTATO GRATIN

4 large potatoes, peeled and thinly sliced

4 medium onions, thinly sliced

3 large parsnips, thinly sliced

1 1/2 c. shredded Gruyere, divided

1 T all-purpose flour

3/4 tsp. salt

1/4 tsp. pepper

2 c. heavy cream

Preheat oven to 375°F.

In a greased 13x9” baking dish, layer potatoes, onions, parsnips and 3/4 c. cheese; set aside.

Combine flour, salt and pepper in a small saucepan; gently whisk in cream. Over medium heat, bring to a gentle boil, stirring occasionally. Pour over vegetables. Sprinkle remaining cheese over the top.

Cover with aluminum foil and bake for 30 minutes. Uncover, then return to oven for 25 minutes longer, or until top is golden brown and vegetables are tender. Let rest 15 minutes before cutting. (adapted from Taste of Home)

ORANGE BRAISED CARROTS & PARSNIPS

1 lb. carrots

1 lb. parsnips

1/3 c. shallots, diced

2 tsp. orange zest

1 1/4 c. orange juice, divided

1/3 c. olive oil

6 sprigs thyme, tied

1/4 tsp. red pepper flakes

2 tsp. salt

Preheat oven to 275°F.

Trim and peel, if desired, carrots and parsnips; cut parsnips to be roughly the same size as carrots. Add to a Dutch oven along with shallots, orange zest, 3/4 c. orange juice, olive oil, thyme, pepper flakes and salt. Bring to a boil over medium heat.

Cover with lid and transfer to the oven; cook 1 1/2 hours, or until the carrots and parsnips are very tender. Remove thyme bundle. Sprinkle with remaining 1/2 c. orange juice; season to taste and serve hot. (adapted from Barefoot Contessa)

PARSNIP FRIES

1 3/4 lbs. parsnips

2 T olive oil

1 tsp. kosher salt

1/2 tsp. pepper

Preheat air fryer to 375°F.

Peel parsnips and cut into thick matchsticks. Toss with olive oil, salt and pepper.

Cook in air fryer in two batches until tender and golden, around 15-20 minutes, tossing halfway through. (adapted from Food Network)

Notes: Works for a regular oven, as well: add parsnips to a parchment paper-lined baking sheet and bake at 375°F for around 35 minutes.

Notes: It’s best to select smaller, thin carrots and parsnips for this recipe. Freshlysqueezed orange juice is also preferred.

While the entirety of March is deemed women’s history month, we’re highlighting The Lexington Women for Good Group who supports females and community grounded giving all year round.

The uplifting group is a giving circle that interacts through a page called Grapevine. This outlet invites women in Kentucky from all walks of life to network, donate, and learn about local nonprofits with one another. The online atmosphere is warm, casual, and uplifting. Upon joining, the page introduces new members who can share topics that interest them like education, social justice, nutrition, etc. Users also have the option to display their roles in the community underneath their names or connect with each other individually. Currently, the growing group encompasses 77 female leaders in the greater Lexington area and beyond and is continuing to welcome new members.

For each round of funding, every member is encouraged to nominate and advocate for a charity dear to them or one they are even directly associated with. The page’s leaders will then randomly select three of the nominated charities, where everyone gets a chance to vote. Last year, Lexington Women for Good donated $13,500 that benefited local nonprofits like Kentucky Pink Connection, FoodChain, and Believing in Forever Inc.

The group meets in person once a quarter for their “Grant and Gather” event, not only to discuss bettering the community, but also to network and enrich each other’s personal lives and careers. Members have enjoyed brunch at Bear and the Butcher, festive holiday parties, and gatherings at Kentucky Native Cafe with talks led by representatives from local charities.

The Lexington Women for Good emphasizes that giving and networking can be so much more than writing a check. This modern and forward-thinking giving space allows women to educate and be educated on organizations to not only keep Kentucky’s future flourishing, but also female

Ginny Ramsey

“Selfless” is the spontaneous word that Father Richard Watson, pastor of the downtown Historic St. Paul’s Catholic Church offers when asked to describe Ginny Ramsey, the director and co-founder of the Catholic Action Center, and in the next minute adds, “she’s a person who lives the gospel seriously, in that taking care of our brothers and sisters she is doing the work of Christ.”

For Ginny, the journey from being a wife, mother and tax accountant to the full-time job of running The Catholic Action Center, home to well over one hundred of Lexington’s unhoused and marginalized inhabitants, was one she never anticipated.

Growing up she showed horses, played golf and swam at the Country Club—far away from the nitty gritty world of inner-city Lexington. “It wasn’t until I was in my early 50’s that I ever drove down 5th Street,” she said.

The journey began in the 1990’s when Ginny started a Peace and Justice Committee for Christ the King Cathedral. “It made no sense to me that there wasn’t such a thing, as these are the principles at the core of Catholic social teachings,” she said.

Around this same time President Bill Clinton introduced the Welfare to Work Program which created a real paradigm shift in the way people in poverty were going to qualify for benefits, especially food stamps. Pam Miller, the then Mayor of Lexington, anticipated this program’s adverse impact and asked Ginny to consider leading a faith and community task force on welfare reform. Out of the 421 faith communities invited, Ginny managed to get 228 of them to come together to discuss ways they could combine services and provide a safety net to meet the needs of those in Lexington who would no longer qualify for federal assistance.

Five committees were formed to meet the basics: transportation; fi nancial literacy; feeding the hungry; mentoring and childcare. Finding common ground with the local churches wasn’t hard. “Where else but within the faith community are people called to help the poor and stand with their brothers and sisters?” said Ginny.

It was through the ‘feed the hungry’ program and working alongside The Salvation Army that Ginny met the people on the street. It became obvious to her that they needed to do much more to help.

In June 2000 Ginny and friend Judy McLaughlin co-founded the Catholic Action Center (CAC). It was based on the Catholic Worker Movement started by Dorothy Day in the early part of the 20th Century and founded on the premise that we as people are responsible for each other and can make a difference in each other’s lives. CAC is a faith-based outreach of volunteers who are dedicated to providing a safe space where the poor, hungry and unhoused can be fed and given shelter with dignity. Their services fi ll in the social gaps and do not look to duplicate efforts provided by other agencies.

“In the beginning we thought we were going to open this nice place from 8:00–5:00pm Monday through Friday, take care of problems and then go home,” said Ginny. “Well, it became obvious very quickly that these people simply had nowhere to go after 5:00pm. Great that we were giving them food, a place to use the bathroom and telephone and receive their mail, but when we locked the doors, they would have to leave. It was natural that the Center evolved into a 24/7 facility,” she said.

GINNY’S COMMITMENT IS TO TAKE CARE OF THOSE WHO NEED WHAT SHE CALLS “COMMUNITY” AND TO WALK WITH THEM. OVER THE COURSE OF THE LAST 24 YEARS OF SUPPORT THE CATHOLIC ACTION CENTER HAS PROVIDED 2.3 MILLION NIGHTS OF SHELTER, AND 9.4 MILLION MEALS. “GOD ONLY KNOWS HOW MUCH LAUNDRY WE’VE DONE AND HOW MANY TIMES THE TOILETS HAVE BEEN FLUSHED, BUT THE BIG DEAL IS THAT ALL OF THIS IS PROVIDED BY VOLUNTEERS AND CONTRIBUTIONS. WE ARE NOT A GOVERNMENT AGENCY, AND WE DON’T TAKE GOVERNMENT FUNDING. WE RELY ON PEOPLE’S CHARITY, AND YES, PEOPLE CAN MAKE A DIFFERENCE,” SHE EMPHATICALLY SAID.

In these times when hearts are still hardened towards the poor, and there is legislative talk of criminalizing those who are on the streets, Ginny Ramsey is out there fighting and advocating every day for the group she calls “our peeps” and giving hope to the hopeless.

Laura Babbage, Chaplain, and CAC Board Member says, “Ginny reminds us we have a responsibility to care for our neighbor… She inspires, she motivates, she encourages and loves people. Perhaps that is why she gets the incredible results she does. Our community is better because of her.”

Reed Sheppard’s remarkable freshman season at Kentucky has been a bit of a surprise to his parents, Stacey and Jeff Sheppard, but not a total shock to the two former UK stars. “We knew Reed’s game but were not sure it would translate at this level so quickly,” said Stacey Reed Sheppard. “We knew he would have to fight and compete for minutes on a very talented team.”

However, they also heard the chatter before Reed Sheppard signed with Kentucky that he might not be good enough even though he was Kentucky’s Mr. Basketball and Gatorade Player of the Year along with a McDonald’s AllAmerican. That talk stopped almost immediately when Reed showed not only that he could play but was one of the team’s most valuable players.

“Everything has gone so fast this season,” Stacey said. “Watching Reed out there is still surreal sometimes. We have been enjoying the ride but it is also so stressful to watch. Now that we don’t have drives home with him after games we have not been as critical. We try to encourage him. If he is struggling or we see something, we try to point that out. But we don’t coach him because we don’t know what he is being told and don’t want to say anything to go against what the coaches are saying. We just try to speak positively and love on him no matter what.”

Reed’s success has put plenty of attention on his parents. Jeff was the 1998 Final Four Most Outstanding Player and was on two national championship teams. Stacey won two state championships at Laurel County High School (1987, 1991). She remains UK’s all-time leader in steals per game (2.7), fourth in assists per game (3.9), and seventh in 3-pointers made (175). She scored 1,482 points, still among the top 15 best totals at Kentucky.

Cameras from every television network have focused on her and that has helped focus more attention on women’s basketball. “I have no idea the effect it might be having on women’s basketball but I know it has defi nitely catapulted me into the limelight with Kentucky fans,” Stacey said. “If I had a small part in building what the women’s game has become today I am thrilled.”

Kentucky women’s basketball coach Kyra Elzy appreciates the attention Stacey Reed has received. “I need more TV shots of Stacey in the stands! Her spirit and enthusiasm are so energizing and relatable, but not only that, they tell a story of the significance of leaving a legacy,” Elzy said.

“SHE WAS SOMEONE WHO PLAYED WITH SO MUCH GRIT AND TOUGHNESS, A KENTUCKY GIRL WHO ALSO EMPTIED HER TANK FOR THE NAME ON THE FRONT OF HER JERSEY, AND NOW SHE AND JEFF HAVE THE SPECIAL OPPORTUNITY TO GET TO WATCH REED BLEED BLUE.”

Madison Sheppard Wigginton knows her parents are proud of what her “little” brother has done but she also knows her mother “doesn’t love the attention” on her. “She really wishes it would stop. She is happy to talk about Reed and her and my dad being at Kentucky. But at the end of the day she just wants to watch her little boy play,” Madison said. “Everybody knows who they are and Reed is who he is. She just wishes they would move along because they just want to watch Reed and support him and his

Q: Is it really okay to have a “work wife/hubby?”

Yes. No. Maybe?

For the uninitiated, a “work spouse” is someone of your preferred romantic gender who you’re very close to. You’re just friends, but they become your emotional support in the workplace. They likely share your sense of humor. You know they’re always on your team, so to speak. They also get the nuances of your intra-office politics, which can be hard to convey to others in your life. They get you.

The terms “work wife” and “work husband” can be pretty bothersome to our real partners, however – and even coworkers; it certainly connotes a romantic connection. Opinions seem to be mixed. A 2023 Newsweek poll found that 21% of folks said it’s A-Okay to have a work spouse… but 45% said it was totally inappropriate. Yikes.

While there’s no official research on the topic, advice columns the world over seem to suggest that lines can easily be blurred among work spouses. Some really buy into the sitcom-esque will they/won’t they, friends-to-lovers fantasy. Even if one of you is only indulging in the idea – even in theory – someone might get hurt. So we say... why open yourself up to that?

Instead, we’re fully in support of having a “work bestie;” someone who is there for you through gossip, successes and all the drama… and someone who is truly just a friend, in name and deed.

Q: Is a “good work/life balance” just a myth?

Someone once said, “You have the same number of hours in your day as Beyoncé.”

What they failed to mention is that Bey has a whole legion of people, from nannies to personal assistants, devoted to ensuring her 24 hours is used well.

No matter your situation, you can always strike a better work/life balance by setting boundaries with your time and mental space, even if it’s just determining when you will answer work texts and emails.

If your office culture is a little lopsided regarding personal time, be a leader. Communicate openly with fellow coworkers about your boundaries and encourage them to follow suit. Work together to share the workload fairly.

Q: I’m starving. Can I eat this unlabeled chili in the work fridge?

So you didn’t bring lunch with you, got too lazy to go out to lunch and now you’re contemplating eating a coworker’s lunch?

You know that’s not communal property. You know that if you eat it, you’re depriving someone else of lunch. You also know that the answer is NO, you MAY NOT eat that, but yet you’re still asking. Has anyone ever called you a jerk? Selfish? Heartless, cruel, self-centered, narcissistic or just plain rude? Have you done any selfreflection on whether that might possibly be definitely true? No?

Okay. Put the Tupperware back in the fridge and talk to DoorDash about your problems, you selfish, rude jerk.

Q: I want a day off. Can I call in “sick?”

First thing’s first: your PTO is yours to use as you see fit. We always advise using it wisely, but most importantly, use it. (Just stay off social media so you don’t accidentally tell on yourself.)

That said... What would you be skipping out on?

If you’re behind on work that someone else is waiting on, consider whether calling in is putting them in a bind.

If you have a set meeting that would have to be rescheduled, think about how that inconveniences the attendees.

If you are on a very important deadline, take a minute to acknowledge how your absence will negatively impact the team.

Use your best judgment. •

Q: Fifteen minutes early is ON TIME!

No it’s not. On time – and prepared – is on time. Now, the “and prepared” is where this argument should really hinge. If you’re setting up a presentation, Zoom call or other A/V situation, yeah, give yourself fifteen minutes for any technical glitches. But if you’re all just showing up to talk? Five to ten minutes is probably more than enough to settle in, get a water and get in the zone.

We get that being early is never a bad thing. But we would ask if sitting around, waiting for a meeting to start is really the best use of anyone’s time?

Okay, you know what, we’re not going to leave that rhetorical: you’re wasting time and money by sitting around, shooting the breeze about your weekend.

Q: My coworkers LOVE all of my music, perfumes, air fresheners, speakerphone conversations and... Do they, though?

Everything we do in an office is happening in a communal space. At the best of times, these extraneous sensory stimuli are something we tolerate comfortably. At the worst of times, they’re a grating annoyance that distracts from our work. While you’re within your rights to make yourself comfortable, do a gut-check as to whether something you’re doing might be invasive. And even if people seem okay with it... that doesn’t necessarily mean that they are.

It is important to nurture our hearts and educate ourselves on the symptoms of heart disease. Heart Disease runs rampant in my family. I have lost two brothers to heart disease along with my Mother having five bypass surgery. My Dad was planting his tomatoes and suffered a massive heart attack and passed away. My own diagnosis of POTS and mitral valve prolapse could mean that my next accessory might be a pacemaker. Thank God for the American Heart Association and all of their work they do to ensure that everyone can have a healthy heart and keep them beating strong.

Is it just us, or does it feel like Easter is happening incredibly early this year? If you’re running behind on your planning, we’re here to help! From tips for a simple, semi-homemade brunch to tasty recipes, you’ll be hopping to a happy Easter in no time.

Easy East Brun

Brunch can be a supremely easy meal to pull together. Here’s what to buy premade from a store or restaurant, what to make at home and what to assemble from a mixture of homemade and premade ingredients.

What to Buy Premade (and How to Zhush it Up):

• Pastries from a local bakery - Arrange these neatly on tiered trays on a sideboard or bar for guests to nosh on at their leisure.

• Quiche - Cut some fresh herbs to scatter on top. If you like, transfer the quiche to your own pie plate.

• Hot cross buns - Serve these warm in a basket.

What to Make Yourself:

• Deviled eggs - While you could buy these, homemade is always going to make a big difference in texture and enjoyment. Plus, these are incredibly easy to customize. We’ll talk more about that later!

• Glazed carrots - This dish always looks like it took more work than it actually did.

• Ham - Ham is a Choose Your Own Adventure journey. You can score the skin, coat it in a homemade glaze and dress it up to your heart’s content… or you could just stick that bad boy in the oven and let it go.

• Eggs benedict - The hardest part is the eggs, as the Canadian bacon and English muffins can come from a store. You can make hollandaise yourself or use a mix; we won’t tell!

• Casserole - Whether it’s hashbrown casserole, overnight French toast or a covered veggie dish, have one hot casserole to accompany your brunch.

“Semi-Homemade”:

• Fruit tray - Feel free to buy some fruit precut, such as pineapple and cantaloupe. But grabbing fresh fruit that doesn’t require much work – think grapes, blueberries, strawberries and raspberries –allows you to make a tailored spread that looks like it took a lot of work.

• Drinks - Choose cocktails and other drinks that utilize premade mixes or juices that you can quickly whip up or batch.

Recipe: Roasted Crots

2 lbs. medium carrots

1 1/2 T olive oil

2 T honey

1 tsp. thyme leaves, chopped

2 T parsley leaves, chopped

1 1/2 T butter, cubed

Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.

Place carrots in a single layer on the baking sheet. Drizzle olive oil over carrots; gently toss to combine. Bake for 20-25 minutes, or until carrots are just fork tender.

Drizzle honey and sprinkle thyme over carrots. Return to oven for an additional 5 minutes.

Sprinkle with parsley and cubes of butter; let rest until butter is completely melted. Season with salt and pepper, to taste. (adapted from Damn Delicious)

Notes: If you can get carrots with stems on, it adds a beautiful, rustic charm to your table. Just trim the stems down to ~2”. No need to peel or trim the carrots unless that’s your preference.

Recipe: Aspagus Salad

2 bunches asparagus

1/3 c. olive oil

1 c. walnuts, chopped

1 T garlic, minced

1 c. Parmesan, shaved

1 lemon

Bring a pot of salted water to a boil. Fill a large bowl with ice water. Trim and peel asparagus, then cut into 2” diagonals.

Boil asparagus until just tender, about 2 minutes. Drain and quickly transfer to the bowl of ice water to stop cooking. Once cool, drain and pat dry with paper towels. Add to a medium heat-proof bowl.

In a small saucepan over medium heat, warm the oil. Add nuts and garlic; cook, stirring occasionally, until nuts are just golden, about 2 minutes. Pour over asparagus and toss to combine.

Transfer to a platter and scatter with Parmesan cheese. Squeeze the lemon over the asparagus and serve immediately. (adapted from Food Network)

Note: This makes a great side. If you need to keep it warm, after tossing the asparagus with the nuts, place it in a warm oven. Add Parmesan and lemon just prior to serving.

Fcy Deviled Eggs

Recipe: Pink Eggs

2 15-ounce cans sliced beets

12 hard-boiled eggs, peeled

1 c. sugar

1 c. water

1 c. vinegar

Deviled eggs are the “must-have” Easter dish, period. It’s just not a springtime celebration without these tasty little appetizers. While we would never turn down a classic devilved egg, we are always super impressed when we’re served one that’s been gussied up just a bit. Here are some easy ways to make your deviled eggs extra special this year.

Drain beets (see notes), reserving 1 cup of juice. Place beets and eggs in a large glass jar.

Bring reserved beet juice, sugar, water and vinegar to a boil. Let cool slightly, then pour over beets and eggs in jar. Cover tightly. Refrigerate.

Note: if you want to scale this recipe to do more eggs at once, don’t worry about sourcing more cans of beets; just reserve more juice.

For a delicate pink edge, soak the eggs overnight. For egg whites that are completely pink, let sit for up to a week before the big meal.

These are great as-is, or prepare as you normally would for deviled eggs. If you’re a big fan of beets, feel free to chop up some of the beets from the jar and add to your deviled egg mixture!

Recipe: Guacole Eggs

6 hard-boiled eggs, peeled and halved

2 ripe avocados

1 T lime juice

1 T sour cream

1 T chopped cilantro

Pinch freshly ground pepper

In a bowl, combine scooped out avocado flesh and 2-4 yolks; mash with a fork. Stir in lime juice, sour cream, cilantro and pepper. Scoop or pipe into halved egg whites.

Garnish with chopped chilies, chives or cilantro. Little slices of radish will add some texture and festive color. Note: Feel free to stir in other ingredients you typically enjoy in your gaucamole, such as minced onion, tomato or chilies. If you like a little spice, a shake of hot sauce, such as Cholula or Valentina, can bring the heat.

Recipe: Salmon Eggs

8 extra-large eggs

1/2 c. sour cream

2 oz. cream cheese, softened

1 T lemon juice

2 T chives, minced

4 oz. smoked salmon, minced

1 tsp. kosher salt

1/2 tsp. black pepper

2 oz. salmon roe

Boil eggs and halve once cool. Place yolks in a bowl along with sour cream, cream cheese, mayonnaise, lemon juice, chives, salmon, salt and pepper. Beat on medium speed until fluffy.

Fill egg white halves with mixture. Refrigerate for at least 30 minutes. Prior to serving, top with salmon roe. (adapted from Food Network)

Recipe: Pimto Eggs

12 large eggs

8 oz. sharp Cheddar, grated

1/2 c. sour cream

1/4 c. cream cheese, softened

1/4 c. mayonnaise

2 tsp. Creole mustard

2 tsp. sweet pickle relish

4 oz. jar pimentos, drained

Boil and halve eggs once cool. Combine yolks, cheddar, sour cream, cream cheese, mayonnaise, mustard and relish in a food processor; blend until smooth. Fold in pimentos and pipe into egg while halves. (adapted from Food Network)

Notes: Garnish with chopped green onions, additional pimentos, paprika and/or crushed butter crackers. If you like, add a dash or two of hot sauce, either to the mixture before processing or at the end.

Let your decorations be inspired by Easter baskets! So many seasonal sweet treats easily double as festive décor. Chocolate bunnies, candy eggs, Peeps, molded chocolates and more can add a fun – and edible – element to your tablescapes. But don’t stop there! Also let Easter candy inspire your dessert toppings. These cute cupcakes feature piped icing, shaved chocolate and candy-coated chocolate eggs. When arranged around a white chocolate bunny, this is a cravable dessert spread that looks effortlessly adorable. Super simple, yet completely charming!

Think about how other items from Easter baskets could be incorporated into your home décor. Ribbon, Easter basket grass, eggs and even the baskets themselves lend themselves to cute, sweet, festive tablescapes.

Recipe: Bett Box Mix Cupakes

1 box cake mix, any flavor

1 c. milk

2/3 c. butter, melted and cooled slightly 5 eggs

Preheat oven according to package instructions.

Add ingredients to a large bowl. Stir until moistened, then follow box instructions on mixing times; usually, this is mixing on low or medium speed for around 2 minutes. Pour into a prepared cupcake tin, either greased or lined with cups. Bake according to package instructions for cupcakes. Generally, this is 350°F for around 16 minutes until a toothpick inserted into the center comes out clean. Once completely cool, frost and decorate.

Notes: Typically yields 2 dozen cupcakes

Pipele C ned Frosting

Add an entire can of frosting to a large bowl. Add 1 tablespoon of confectioner’s sugar and a pinch of salt, then beat with a mixer on high speed until mixed. Add additional tablespoons of confectioner’s sugar, one at a time, until it’s a bit thicker and peaks hold more consistently.
