Chef Wojciech Modest Amaro has done Poland proud receiving the nation’s first-ever Michelin Star in 2012. This top recognition is applause for his Nature Calendar, a unique approach that meshes acutely with each of the year’s 52 weeks. These, as Nature’s distinct episodes, are used by him to produce symphonic points of flavors. “Moments” is how he titles it— lunch comprises of 3 or 5 Moments, while more elaborate evenings consist of 6 or 9. “The ambassadorship of Polish cuisine is inscribed in this atelier’s essence” says Amaro, having garnered worldwide praise over the years. Polish liqueurs, vodkas, and mead, and of course a brilliant selection of wines, all meld with perfected service to bestow a magical experience. Designed by Agnieszka Amaro, the prestigious CovetED Magazine has included atelier Amaro to be amongst the most beautiful restaurants in the world. A destination well worth its own special trip!

If one was ever in the need to suffuse romance into life, a visit to AleGloria would be very much in order! The bright interiors are the tasteful amalgamation of cream and strawberry, candle light, polished wood, and gleaming white laced table linen embellished with flowers. Famous restaurateur Magda Gessler is at the helm having taken traditional Polish cuisine to new dimensions; her insights, her creativity, her culinary design, have all made this place one of a kind. Polish goose is a delicacy and Ms. Gessler specializes in dishes made with this healthy, delicious meat: the confit of goose leg with cherry and horseradish sauce; or goose stuffed with dried apricots and walnuts, are examples. With a vast selection of wine from its cellars, and an extensive selection of drinks, AleGloria is indeed Polish hospitality at its modern-day finest. A class experience in a monumental setting!

The elegant Restaurant Belvedere is considered to be a remarkable culinary spot in Warsaw. Its 150 year old architecture combines wondrously with interiors designed by Boris Kudlicka. Comprising the orangery of the Royal Lazienki Park, Belvedere’s gastronomic credentials are underscored by awardwinning Chef Sebastian Olma who brings his experience with Gordon Ramsey and Tom Aikens in the UK. His interpretations combine the best of traditional Polish with modern culinary art, and emphasize sophisticated presentation. Wine pairings by sommeliers Piotr Zieliński and Tomasz Marczak include selections from top Polish vineyards. Valued by those who know Belvedere for the culinary summit that it is, it is no surprise that Michelin has designated it as a 3 Fork & Spoon over the last many years. Corporate events for up to 300 guests can be organized here as well. A class act on all fronts!

NAZWA 99 NAZWA RESTAURANT BEEF RESTAURACJI RESTAURACJI N’BORPINCE PEPPER & BAR
Borpince, a Hungarian-inspired restaurant and wine cellar, is located in the heart of Warsaw. Owner and manager Beata TrónNowak’s Hungarian background makes this place an enclave of authenticity. This is evident as one descends the stairs into the bricks-and-arches basement, home to a selection of over a hundred stellar wines from top Hungarian wine producers. The menu is dynamic and seasonal, made with traditional recipes with many of the ingredients imported directly; the result is original flavors served with a modern bent. The goulash soup; the halaszle, a spicy river fish soup; the traditional pörkölt, a stew with boneless meat and vegetables; and pork mangalica with chestnut puree, are all outstanding. For dessert the Gundel pancake, made with ground walnuts, and served flambéed in a dark chocolate sauce, is an apt high-point to perfect dining!

Concept 13, located within VITKAC, the splendidly designed new shopping complex in Warsaw’s center is doing as much for culinary contentment as the entire premises is contributing to the world of fashion and style. The interior with dark gloss combined with rawness of wood defines its cutting-edge modern intention, and reflects on the culinary direction of the place—a modern international menu suffused with elements of tradition that makes the gastronomic idea well rounded and complete. With an open kitchen at its core, Concept 13 inspires with preparations such as the teppanyaki— a great form of Kitchen Theater, and an outstanding selection of other inspiring dishes. All this may be accompanied by a selection from an extensive wine list. Concept13 is indeed that special culinary idea which was once only imagined, and now has actually come to be!

D. PAWELEK BRASSERIE WARSZAWSKA
The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

BUTCHERY & WINE D. PAWELEK
BUTCHERY & WINE Żurawia 22, Warsaw phone: +48 22 502 31 18 www.butcheryandwine.pl
Butchery & Wine, considered one of Warsaw’s top restaurants, owes its success to a strict philosophy that emphasizes where its ingredients— mostly beef, seafood, and wine-are sourced from. Its eminence is highlighted by the fact that over the last 7 years it has continuously been awarded with Michelin’s Bib Gourmand, which implies both stellar quality and good value. Owner Daniel Pawelek remains clear with his vision, that this be known as a place where guests can enjoy outstanding dining from a tothe-point menu without distractions that take away from the full experience. Items such as the roast bone marrow; seared scallops with ”boudin noir”; Bavette steak with shallots, are all outstanding, perhaps to be followed by the spiced pear and apple crumble with vanilla ice-cream for dessert. A comprehensive wine list and an informed service staff make Butchery & Wine a top selection!
D. PAWELEK ROZBRAT 20
Rozbrat 20, with its modern Polish cuisine, is now widely considered to be a pillar of the contemporary fine dining trend. Its impressive culinary trajectory is the consequence of the energy and insights of two gastronomic visionaries owner Daniel Pawełek and Chef Bartosz Szymczak. Both of these individuals are driven professionals, inspiring each other to achieve the culinary heights so important for the both of them. Chef Bartosz’s emphasis is on being local, being seasonal, and above all being creative. The majority of the ingredients he uses are in fact sourced by him from local farmers within a radius of 50 km. around Warsaw and from personally known, reliable vendors. Rozbrat 20 is impressive indeed, serving within its relaxing and less formal atmosphere a modern Polish menu where the dishes are light, elegant, and full of flavor. A must-have dining experience in Warsaw!

KIELISZKI NA PRÓŻNEJ Próżna 12, Warsaw phone: +48 501 764 674 www.kieliszkinaproznej.pl
Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!
D. PAWELEK KIELISZKI NA HOZEJ
Kieliszki na Hożej is a continuation of Daniel Pawelek’s collaborative effort with star Polish sommelier Paweł Demianiuk. Chef Grzegorz Zięba heads the kitchen with a classic approach that is artisanal in its ethos. He pays strong attention to the seasons and on local products, extracts as much flavor as possible so that the dishes “simply allow nature to flow through.” Grzegorz rediscovers forgotten culinary methods, flavors, and traditions, updating these with modern, sophisticated, and practical forms. His culinary inspirations include potato with mackerel stock, yolk and spring onion; Polish lamb with broad beans, chanterelles, young cabbage and gooseberry; and Sękacz, or the traditional spit cake with blueberries and pudding for dessert. There are over 250 wines by the glass; the Sommelier’s deep knowledge of what goes best with what transforms this into a memorable dining experience!

D. PAWELEK KONESER GRILL
When acclaimed restaurateur Daniel Pawelek embarks on the creation of a new venue, gastronomic excitement unfolds! So it is with Koneser Grill, his recently opened venue that is sure to elevate the culinary quotient of the entire Plac Koneser complex! Here, Daniel has brought his natural excellence in wine and meat into an intelligent juxtaposition, such that his audience will view Koneser Grill as novel. With an open kitchen format and an emphasis on barbecue and grill, he has transformed what folks are somewhat familiar with, into a highquality, wine-paired experience! With meats of course of the highest caliber, even the fire itself has become a central ingredient, fired with seasoned oak and alder wood, its unpredictability tamed to the right dance of smoke and flame to create ultimate perfection! Daniel’s motto, “love what you eat”, is indeed easy to do for all who dine here!

Dining at Restaurant Halka always leaves one with a cherished experience. Here, traditional Polish comprises the menu, yet a modern flair adds a contemporary feel. The emphasis on carefully sourced ingredients from trusted local suppliers ensures that dishes emerge just perfect-flavor-filled, always finished to the last bite. And even though generous portions are a hallmark of the place, one is left with a hankering for even more! A serious passion for authentic cooking and focused service has won Halka several accolades over the years; it has been listed among Poland’s 100 Best Restaurants, as well as won the Golden Fork awards and the TripAdvisor Certificate of Excellence, over multiple years. The expansive restaurant spreads over two large rooms, a private room, a bar, and a flower-filled terrace, and yet feels intimate and cozy! Halka is indeed a must-have dining experience!

HOZA opened in 2013, remains as one of the city’s top Argentinean steakhouses. Located in the city’s heart in a building from 1900 which miraculously survived the War, the ambience here is lifted by exposed brick walls, industrial period lamps, and matching artwork. The historical aspects of the city thus combine here with meaningful dining, the Argentinean thrust amplified with the sound of Latin jazz! Kanapa, ensconced majestically in a grand, pre-war villa in Mokotów, has furthered immensely the image of contemporary Ukraine. This here is European dining at its finest, brought to life by an exhilirating menu and an inspired staff, mostly Ukrainian of course, that is so enthusiastic to share the best from their culture. Dmytro Borysov, Kiev’s ace restaurateur, has brought Kanapa to Warsaw to showcase his ‘New Ukrainian Cuisine’, wherein the best seasonal products are combined with innovative techniques to produce flavor-packed dishes that are a visual thrill to behold as well. Items such as the black dumplings; guinea fowl liver paté; mussels on the rocks; and oyster cream mousse, are simply outstanding; and each dish can be paired with the appropriate wine to enhance the experience. The candle on one’s table, made of fresh butter, lights a positive emotion within, another sure sign that Kanapa is the new star in Warsaw’s culinary firmament!

Kuchnia Warszawska, offers the finest Polish culinary traditions in an atmosphere enhanced by its location in the Old Town Market Square. Here rediscovered traditional recipes blend with modern interpretation at the hands of a passionate and experienced kitchen team. “Varsovian” cuisine is influenced by various cultures and incorporates several culinary traditions -- from the tables of Polish aristocracy, from faraway lands, from Jewish merchants, and from the culinary ingenuity of poorer workers as well. This extraordinary range is apparent in dishes such as the trout marinated in vinegar; Żurek, or the rye soup with boiled egg and white sausage; the Bryzol or the fried beef served with baked potatoes and candied beetroot; and the simply delicious cheesecake with chocolate sauce for dessert. LA BRASSERIE MODERNE
Located in the center of Warsaw, La Brasserie Moderne is well considered a culinary landmark. It is indeed a contemporary interpretation of a classic French brasserie, offering an enticingly rich menu based on the finest seasonal products. Chef Maciej Majewski’s culinary passion flows through in a menu which in essence is French with both a modern and a Polish twist. His culinary spectrum allows one to savor a refined palette of flavors, a resultant of the freshness of ingredients and creativity, served up in tempting, aromatic, delightful compositions. Star Chef Jacek Grochowina has named his culinary venture Nolita based on Manhattan’s inspiring neighborhood where traditions and modernity have come together to make it the new epicenter of culinary landmarks. So is it with Warsaw’s Nolita, a culinary juggernaut in the making with Grochowina commanding the kitchen’s course. Having worked at the Ritz in London, this internationally awarded chef has, in the opening of this Warsaw culinary hotspot, decided to carve out his own amazing niche. What one finds in this new, modern setting, is a menu that surpasses with creativity, which makes fine dining, much higher than merely fine! Examples that define the culinary genius one is apt to find here include Black Angus with carrot, tomato, cucumber; wild Sea Bass with prawns herbs; grilled octopus, with teriyaki, wasabi; and the tuna tartare with kohlrabi and yuzu. SIGNATURE Poznańska 15, Warsaw phone: +48 22 553 87 55 www. signaturerestaurant.pl firstname.lastname@example.org
Signature Restaurant, located within the H15 Boutique hotel, has achieved multiple awards; two “spoon and fork” by Michelin; 2 toques by Gault Millau; Forbes; and recently the award by the Polish Academy of Gastronomy, and the audience award at the Wine & Food Noble Night competition. Executive Chef Wojciech Kilian’s modern creations emphasize Polish accents, eco-crops, and seasonal products. This was once the Soviet embassy, today the restored sickles and hammer combine with modern design. Restored 1950’s Oswald chairs, genuine Serge Mueller and Tom Dixon lighting, as well as French hand-painted wallpapers with floral motifs, are the interior’s highlights. Events held in conjunction with celebrities (such as Borys Szyc, Małgosia Socha, Anita Sokołowska, Anita Lipnicka and Marek Gray to name a few), result in “autographed” signature dishes. Indeed, one of Warsaw’s top culinary venues!
The name, Mood, aptly conveys the vision of this restaurant’s creators-- to transport every guest that dines here into a joyous state of mind! Nowy Świat, which is where Mood is located, was once Warsaw’s old Royal Route, and considered today to be the city’s principal street. Restaurants and cafes abound, most are tourist traps and none excel from a culinary standpoint. Yet, Mood stands heads apart, towering above most with a serious approach to modern cuisine. Recommended by Gault Millau, Chef Marcin Przytuła’s inspired menu is based on high-quality, Slow Food products and is replete with unique flavors and original creations. Enriching the overall dining experience are careful drink pairings advised on by the sommelier. Mood’s bar makes it a perfect pre- or post-dinner meeting place as well. An outstanding choice, especially if a visit to Nowy Świat is on the agenda!

Smaki Warszawy, located in the city center, translates to “Flavors of Warsaw.” The name however implies much more; it aims to connect to a pre-war Warsaw where different ethnicities contributed to the culinary richness of the city. Today, as a metaphor to that ideal, Smaki Warszawy fuses a contemporary Polish and European restaurant with a café and patisserie that makes cakes, desserts, and ice-cream the old fashioned way; with butter, cream, and true, natural ingredients. The kitchen’s creative team emphasizes the use of seasonal local products; dishes such as the herring with beetroot leaves, compressed apple and rhubarb mousse; or chanterelles in a wine and butter emulsion, reflect that with their superb flavors. The stellar wine selection, as well as the café with its award-winning pastries adds an exclamation point to the overall experience, a sincere approach to dining that is so well delivered!

Newly re-opened Restaurant Świętoszek Tartuffe enjoys a historical connection to the Polish cultural scene; established in 1986 by the Theater Guild as a place where Polish performers once mingled. Today with Chef Stanisław Nowogródzki at the helm, it once again sits atop Warsaw’s culinary map. He brings his 30 year experience notably from the Marriott, a recipient of several awards and a judge of culinary contests; he blends his zeal for Polish cuisine with his own fusion of sublime flavors and aesthetics that are a joy to behold. The pork chop with boletus mushroom and thyme sauce, and the restaurant’s original-recipe Kajmak cake, comprises a memorable dining example. Located diagonally across from the Presidential Palace Giovanni Rubino has become an Italian institution in its own right. Having celebrated its 25th birthday in 2016, this outstanding place is where modern Mediterranean fare rooted in traditional Italian has been created by Chef Piotr Rybicki who has been at the helm of culinary affairs since it opened in 1991. This long unfaltering collaboration over the years between owner and chef has resulted in interesting variations such as Pizza Pizzaiolo with Parma ham and arugula, spaghetti with mussels, and the much-in-demand pork fillet with mushroom sauce. With a well-appointed bar which leads to a chic, semi-private chamber, great homemade desserts, a committed and friendly staff, and an endearing value-for-money ethos, Giovanni is where everyone wants to come back to over and over again! Ristorante San Lorenzo, ever since opening its doors in 2000, has become the standard bearer of fine Tuscan cuisine in the city. Spread over two majestic floors with tables dressed in crisp white and frescoes adorning the walls, the image here conveys the place’s seriousness. Chef Luca Dolfi, a Tuscan native, has for over 15 years brought his creative experience to bear with remarkable consistency; this comes alive in a menu that is close to traditions, one that uses the finest ingredients, and which is then served with stateliness. The culinary celebration here is evident in items such as the salad with steamed shrimp and fresh arugula; the ravioli with sea bass stuffing; and the grilled Steak Florentine, served with baked potatoes, and flavored with rosemary. IN WARSAW HOTEL WARSZAWA
When history and an inspiring vision for the future converge, great things emerge and are born. This can surely be said about the newly opened Hotel Warszawa, once the tallest building in the land when it came to be in 1934, known then as The Prudential. Its rebirth borders on the spiritual, the reincarnation of a monument’s soul into a higher form, now as a superluxurious hotel for the world to admire. Vision and labor has melded marble, with bright chromes and warm wood, with original concrete ceilings in harmony with the new, all coming together to create a sense of unique elegance. The emphasis here is on relaxation and renewal; topnotch restaurants, a spa with treatments, a fitness centre, and a pool all make Hotel Warszawa stand taller than the rest!
