The menu comprises Polish cuisine with the personal touch and interpretations of Chef Robert Skubisz. His creativity has been honored over the years with a range of prestigious awards. The á la carte menu, seasonally inspired, is based on the highest quality ingredients sourced as much locally as possible. Celebrity Chef & Restaurateur Magda Gessler
If one was ever in the need to suffuse romance into life, a visit to AleGloria would be very much in order! The bright interiors are the tasteful amalgamation of cream and strawberry, appeal of candle light, polished wood, and gleaming white laced table linen embellished with flowers. Famous restaurateur Magda Gessler is at the helm of affairs; her insights, her creativity, her culinary design, have made this place one of a kind where she has taken Polish cuisine to a new dimension. Tradition has been fused with modern ideas; the otherwise staple beetroot soup, barszcz, is elevated here multiple degrees with raspberry vinegar, black currant syrup, and served with white bean filled ravioli! With a vast selection of wine from its cellars, and an extensive selection of drinks, AleGloria is indeed Polish hospitality at its modern-day finest. An experience in a monumental setting!

BEEF PEPPER NAZWA 99 NAZWA RESTAURANT BEEF RESTAURACJI RESTAURACJI N’N’PEPPER & BAR
Beef N’ Pepper, located in the center of town, has quickly established itself as leading steakhouse in Warsaw. Mostly used here is the finest-quality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are all truly outstanding! Further completing the equation here menu-wise are appetizers such as tartar of seasoned beef tenderloin with dried yolks; shrimp in soy-oyster sauce with parsley oil, garlic and ginger; and octopus with mango salsa, fresh cucumber and balsamic caviar. The excellent dining experience at Beef and Pepper is significantly enhanced by its well-equipped bar, affording guests a rich array of interesting whiskeys, bourbons, wines and cocktails that combine exceedingly well with the menu. A top-grade place indeed!

When Biały Domek, or The White Manor, opened over a decade ago in the heart of Warsaw’s Old Mokotów, the motivating idea of its founders was to provide an unforgettable dining experience that is increasingly being lost to history. Located within a historic country manor with its beautiful interiors and a serene garden, dining here indeed imparts the feel of traditions that once were typical in a multigenerational Polish family home. With an inspiring menu that encompasses just the right breadth of Polish dishes, the sense of being immersed in an authentic setting is fully realized. A cozy interior, along with garden tables in the summer, makes the place an idyllic venue for a relaxed luncheon or a sumptuous dinner with friends and family, or of course for impressing visiting corporate colleagues. This is indeed a must-have experience in Warsaw!

Concept 13, located within VITKAC, the splendidly designed new shopping complex in Warsaw’s center is doing as much for culinary contentment as the entire premises is contributing to the world of fashion and style. The interior with dark gloss combined with rawness of wood defines its cutting-edge modern intention, and reflects on the culinary direction of the place—a modern international menu suffused with elements of tradition that makes the gastronomic idea well rounded and complete. With an open kitchen at its core, Concept 13 inspires with preparations such as the teppanyaki— a great form of Kitchen Theater, and an outstanding selection of other inspiring dishes. All this may be accompanied by a selection from an extensive wine list. Concept13 is indeed that special culinary idea which was once only imagined, and now has actually come to be!

D. PAWELEK BRASSERIE WARSZAWSKA
The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

BUTCHERY & WINE D. PAWELEK
Butchery & Wine Żurawia 22, Warsaw phone: +48 22 502 31 18 www.butcheryandwine.pl
Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides. Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla icecream. A comprehensive wine list, and friendly service make Butchery & Wine a top selection!
D. PAWELEK ROZBRAT 20
When Daniel Pawełek, one of the best regarded restaurateurs in town, gets behind an idea it is sure to win acclaim; an appreciation that is for the long haul. This track of success is what Rozbrat 20 is clearly on, enhancing the quality of life substantially in the trend-defining area of Powiśle. Here breakfast has been given top priority, at equal notching with lunch and dinner. An array of wines, freshbaked breads and pastries are highlighted in an interior that is elegantly simple. The main thrust is focus on quality and an emphasis on innovative creations — from eggs with avocado paste, to steaks and salads with ingredients sourced from local suppliers who are equally faithful to the idea of organic, seasonal, and fresh. With a dynamic menu that changes daily, the added service includes the option to purchase outstanding wines to take away or to sip on the spot!

KIELISZKI NA PROZNEJ D. PAWELEK
Kieliszki na Próżnej Próżna 12, Warsaw phone: +48 501 764 674 www.kieliszkinaproznej.pl
Daniel Pawelek, the talent behind stellar restaurants Butchery & Wine, Brasserie Warsaw, and Rozbrat 20, teamed up with Paul Demianiuk, one of the country’s finest sommeliers, to create Kieliszki na Próżnej. Located on Próżna, once the center of the Warsaw Ghetto, and now ironically Warsaw’s culinary cutting edge, Kieliszki is where wine plays first fiddle to what’s on one’s plate. The creative Polish menu here is traditional yet modernized and served with a “tapas attitude.” The creative fervor leads with an impressive wine portfolio from known producers, and whilst mainly from Europe the dominant source is the various wine regions in Italy. The main wall is adorned with a mural by Mariusz Tarkawian and is titled “Lexicon of 2015”---quite clearly a reflection of the fact that the vocabulary here is one of wine, and how it should converse with food. A remarkably refreshing place indeed!
D. PAWELEK KIELISZKI NA HOZEJ
When success occurs, it behooves that creative force to replicate! This is the reason behind Kieliszki’s expansion to a second location on Hoza Street. Kieliszki na Hożej brings its own incremental dose of magic to this culinary hotspot in Warsaw. Daniel Pawelek, has extended his collaborative effort with star Polish sommelier Paweł Demianiuk from Kieliszki na Próżnej (see opp. page), to add this fifth venue to his accomplishments. This is a “wine kitchen” as well, where “sipping” leads the “eating, where the goal is the delicate balance between what’s in the glass with what’s on the plate. Kieliszki’s impressive wine portfolio derives from the team’s relationships with leading small and medium Italy producers, and the menu here remains close to Polish traditions, with fresh creativity pervading right through from the main courses to the smaller snack plates that all follow the right wine!

Daniel Wasilewski’s Dekant Wine Bar & Restaurant combines the dual ideas of a wine bar and restaurant so completely that this place stands out as an example of how this union must be achieved! Food and wine are in complete step –a wine selection of almost 300 has brought repeat awards by Wine Spectator. The kitchen which emphasizes above all a strict adherence to quality of ingredients and a focus on organic and native sources, emanates a refreshing Slow-Food menu that ascribes to seasonality and freshness. The inspiration for Dekant may well lie in places such as New York, yet the place feels very much of its own breed, inviting and complete. Each Saturday there is live music, unique wine tastings, and ongoing wine and cooking workshops as well. A fine menu and a wide wine choice advised on by sommeliers at hand, makes Dekant an absolute joyous experience!

Resto & Winobar Private Room & Parking Cafe & Whisky bar Enoteka
Warsaw’s culinary trajectory was definitely lifted with the opening in 2013 of HOZA, the city’s first real Argentine Steakhouse with famous chef Michal Mizak at its helm. Located in the city’s heart in a building built in 1900 and which miraculously survived the War, the ambience here is encouraged by exposed brick walls, industrial period lamps, and befitting artwork. The historical bearings of the city thus combine with young, casual trends, and the sound of Latin jazz! Of course what’s truly special are the Argentinestyle steaks and super-fresh seafood complemented by a collection of over 150 wine labels stocked in its cellar. Spread over four rooms, the bar here has over 40 whiskeys, a club room, and a delightful private room for up to 10 guests; the place also has its own garden and parking in the inner courtyard. This is an outstanding venue where positive energy and friendly service makes it all so delightful!

LA BRASSERIE MODERNE
Located in the center of Warsaw, La Brasserie Moderne is well considered a culinary landmark. It is indeed a contemporary interpretation of a classic French brasserie, offering an enticingly rich menu based on the finest seasonal products. Chef Maciej Majewski’s culinary passion flows through in a menu which in essence is French with both a modern and a Polish twist. His culinary spectrum allows one to savor a refined palette of flavors, a resultant of the freshness of ingredients and creativity, served up in tempting, aromatic, delightful compositions. While the idea of this place may be based upon that a brasserie, the kitchen and its innovations are more in line with authored culinary creativity. With a wide selection of wines priced reasonably, and an interior designed by world-class architect Didier Gomez, this place is indeed a culinary standout in the city.

La Rotisserie is located within an architectural gem, the elegant Mamaison Hotel Le Régina in a magical part of Warsaw’s Old Town. Its standing as an established star in the city’s culinary firmament is due to Chef Piotr Szulc, known for traditional French cuisine combined with modern trends. Alongside him, Sommelier Andrzej Strzelczyk ensures that wine selections are paired perfectly with what is ordered. During the summer the Patio, full of flowers and a roaring fountain, becomes an incredible setting to a light, refreshing, seasonal menu. Items such as the quick pan-fried turbot, served with cauliflower, purée au Comté, salsify, orange oil and creamy bisque; or the Scottish lamb with baby turnip, Pommes Anna with bone marow, are both clear indications of culinary creativity. A romantic oasis, Café Zielnik is located in the mansion-dotted Warsaw quarter of Mokotów. It offers pure class in its warm, inviting interiors; Zielnik could very well be the lavender swept country cottage, or the idyllic culinary getaway tucked away in the South of France. Here elements of Polish cuisine meld with subtle Mediterranean accents, enhanced by the emphasis on fresh ingredients, meats and produce, and on the liberal use of fresh, green herbs. Specialties include dishes such as the beef tartar; venison; wild boar; grilled fish; roast duck; and a variety of homemade pasta which are brimful with wholesome flavor. Casa Ristoranti, located in the city center, is best defined by the word “casa” --here it takes on a special meaning to reflect the flavors, the warmth and hospitality of what one expects in a home. This is truly authentic Italian cuisine, and what helps is the fact that ingredients are brought in directly from Italy! The menu is simple yet comprehensive, with methods of preparation identical to what they would be in a kitchen in Italy. The emphasis is on a variety of fresh vegetables, and the abundant use of oregano, basil, thyme, rosemary, parmesan cheese and olive oil—the foundations of the kitchen. Dishes on the menu such as the fish and seafood soup; the tagliatelle with squid ink, shrimp, cherry tomatoes, garlic, chili, olive oil, and white wine; and the chicken pizza with mozzarella, spinach, pesto, and sundried tomatoes, are all satisfying. Indeed a top Italian experience!

Owner Jan Smereczyński with Chef Piotr Rybicki
Located diagonally across from the Presidential Palace Giovanni Rubino has become an Italian institution in its own right. Having celebrated its 25th birthday in 2016, this outstanding place is where modern Mediterranean fare rooted in traditional Italian has been created by Chef Piotr Rybicki who has been at the helm of culinary affairs since it opened in 1991. This long unfaltering collaboration over the years between owner and chef has resulted in interesting variations such as Pizza Pizzaiolo with Parma ham and arugula, spaghetti with mussels, and the much-indemand pork fillet with mushroom sauce. With a well-appointed bar which leads to a chic, semi-private chamber, great homemade desserts, a committed and friendly staff, and an endearing value-for-money ethos, Giovanni is where everyone wants to come back to over and over again! Ristorante San Lorenzo, ever since opening its doors in 2000, has become the standard bearer of fine Tuscan cuisine in the city. Spread over two majestic floors with tables dressed in crisp white and frescoes adorning the walls, the image here conveys the place’s seriousness. Chef Luca Dolfi, a Tuscan native, has for over 15 years brought his creative experience to bear with remarkable consistency; this comes alive in a menu that is close to traditions, one that uses the finest ingredients, and which is then served with stateliness. The culinary celebration here is evident in items such as the salad with steamed shrimp and fresh arugula; the ravioli with sea bass stuffing; and the grilled Steak Florentine, served with baked potatoes, and flavored with rosemary. Outstanding desserts and an extensive wine list complete the equation, ensuring San Lorenzo’s place amongst the top in fine dining!
