TOM COUGHLIN JAY FUND WINE TASTING GALA PRESENTED BY
I am so proud to say that the Wine Tasting Gala is BACK! For over 25 years, the Tom Coughlin Jay Fund Foundation has provided critical financial, emotional, and practical support to our Jacksonville families tackling childhood cancer, and we could not have done it without YOU! When a child is diagnosed with cancer, the whole family is impacted. The Tom Coughlin Jay Fund provides support for the whole family moms, dads, caregivers, siblings, and the patients. Your generosity ensures our families have a roof over their heads, food on their tables, and the lights on in their homes as they face the unthinkable. Together, we’ve provided over $16 million to over 5,000 families. We want to extend our sincere gratitude to Byron Hayes and the staff of Southern Glazer’s Wine & Spirits, as well as all the wineries, restaurants, sponsors, and volunteers who made this event happen. Thank you! Thank you for embracing our mission with your compassion and your generosity. Tonight, let’s raise a glass to helping families tackling childhood cancer.
Tom Coughlin President at The Tom Coughlin Jay Fund Foundation
Southern Glazer’s Wine & Spirits of Florida is proud to partner with the Tom Coughlin Jay Fund to host the Wine Tasting Gala. We would like to express our deepest appreciation to the restaurateurs, wineries, vendors, and sponsors who join hands with the Tom Coughlin Jay Fund Foundation to make this annual event such a great success. We hope you will seek out and patronize these gracious partners as they continue to support the mission of this great organization. We would also like to thank you, our guests. We hope you will enjoy your evening of great wines, food, celebrity guests, and the marvelous array of silent auction items. Southern Glazer’s Wine & Spirits is honored to help BE THERE in the lives of so many children and families here in North Florida.
Byron Hayes Vice President at Southern Glazer's Wine & Spirits
IN HONOR OF
JAY
The Tom Coughlin Jay Fund Foundation is named for Jay McGillis, one of Coach Coughlin’s players from his time at Boston College. McGillis was a strong side safety at BC in the early 1990s and the red-headed kid impressed Coach Coughlin with his work ethic and intense play. It was during a game against Syracuse that McGillis felt something was wrong. What was thought to be a case of mononucleosis would end up being diagnosed as Leukemia. Jay died eight months later on July 3, 1992. He was 22. “The shocking news went through our entire team. Jay became a very, very sick young man, and the disease was ravaging. We had an opportunity to see the courage and devotion of the McGillis family. We watched and observed, seeing everyone drop what they were doing to care for Jay. Both Judy and I knew if we ever had a chance to give back, it would be in the spirit and in the name of Jay McGillis.” Following Jay’s funeral, Coughlin continued to stay in touch with the McGillis family. When the Jacksonville Jaguars hired Coughlin in 1995, he decided he was in a position to make good on his promise. He picked up the phone and dialed Jay’s mother, Pat McGillis. “I was just elated when he called,” Mrs. McGillis said. “He said, ‘I’m going to establish the Jay Fund in memory of Jay. And we’re going to help children with cancer. We’re going to do all we can to be there for these families.’”
2021 BY THE NUMBERS IN THE JAX AREA
ALL IN THE FAMILY
Photos by Corinna Hoffman Ja’Myla was just five years old when she was diagnosed with cancer. Her initial surgery was deemed a success and the tumor removed. However, life would not return to normal, at least not yet. Six months of chemotherapy and medical check-ups would follow, and trips to the hospital and doctor’s office continue to this day. While Ja’Myla was in the hospital or undergoing treatments, there were still five other children at home needing care. Plus, there were the normal bills to pay and additional expenses they never expected. Lotoya, Ja’Myla’s mom, admits the last two years have been a difficult time for the whole family. Ja’Myla’s cancer made navigating the pandemic all the more stressful. Yet, the family proved to be a great source of strength. “My kids took it all so well. I tell people I’ve been training them for times like this, times when we’re all going to need each other. We need all hands on deck,” says Lotoya. “I also have the Jay Fund and a lot of friends and family. They wouldn’t let me break down.” “Ja’Myla’s diagnosis interrupted the normal flow of daily life in the way of additional road trips to the hospital, time off from work, new medicine routines and a shift in responsibilities as it relates to our other children,” says Lotoya. Today, Ja’Myla is doing well. She’s a happy seven-year-old, celebrating her latest birthday this past January. “You can’t help look around and count your blessings. Good can come out of something that can seem so bad,” says Lotoya. “Miracles do happen.”

PAINTING WITH A PURPOSE This evening we are featuring unique works of art created by local patient artists to celebrate each child’s imagination and favorite things. The pieces are each available in tonight’s silent auction.
“KUNG-FOOD PANDA” PLATE ARTIST: Camilla AGE: 7 DIAGNOSIS: Acute Myeloid Leukemia Camilla is a creative, sweet 7-year-old. She was diagnosed with Acute Myeloid Leukemia, a blood cancer, in April 2019. Even after a relapse, Camille has never let treatment slow her down. She enjoys the arts – painting, crafting, and music. Camilla said pandas were the inspiration for her piece because they are her favorite animal. When asked if she wants to be an artist when she grows up, Camilla said “I don’t know yet. I am keeping my options open.”
“TAIL-GATOR” DISH ARTIST: Noel AGE: 8 DIAGNOSIS: Acute Lymphoblastic Leukemia Noel recently turned 8 and he is currently being treated for Acute Lymphoblastic Leukemia, a blood cancer, that he was diagnosed with less than 4 months ago. Noel is very outgoing, laid back, and just likes to have fun with his older siblings. Most of all, he loves watching football and his favorite team, the Florida Gators, which inspired his art piece.
“FOXY FOODIE” ARTIST: Valerie AGE: 7 DIAGNOSIS: Osteosarcoma Valarie is 7 years old, adventurous, and loves all things animals. A little over a year ago, she was diagnosed with Osteosarcoma, a type of bone cancer. She is “mom” to her Boxer mixes, her Doberman, and her four cats. Once she finishes treatment, she is looking forward to learning to ride horses and wants to be an animal doctor when she grows up. In honor of her future veterinarian goals, Valarie painted a fox on the platter because she really, really loves foxes.

TASTING TIPS The pandemic forced people out of the restaurants and bars where the Sommelier, Bartender, or Server would confidently steer us towards that new and unique featured wine. Instead, we were in the retail space where most of us make choices based on what we know, often returning to the comfort wine we are most familiar with. Having a favorite is always nice, but the world of wine is too big and wide to be left unexplored. The Tom Coughlin Jay Fund Wine Tasting Gala allows patrons a chance to try wines from all around the world. Don’t be stuck in a rut of always drinking the same range of popular varietals such as Cabernet Sauvignon and Chardonnay. This night out is a chance to experiment, perhaps enjoying the trend toward blends which are among the tastiest and most foodfriendly wines available. Remember, enjoying wine is an experience full of tastes, smells, and sights. Keep it simple and keep it fun. As a reminder, here are the six things to keep in mind while tasting:
SIGHT
SIP
Study the color and clarity of the wine. Wine should be clear and not cloudy. As wine ages it changes color.
After swirling again, take a sip. The idea is to hold the wine in your mouth, swish it around, chew it. You want the wine to come in contact with all the flavor receptors on your tongue and sides of your mouth. Some people draw in air into their mouths over the wine, this further aerates the wine, unlocking flavors.
SWIRL This allows oxygen into the wine which releases the components that make up the wine. Swirling also forces the aroma of the wine up and out of the glass.
SMELL This is the most important step. Immediately after swirling, get your nose in the glass and smell the wine.
SAVOR Identify and describe what you are tasting. Different areas of your tongue and mouth are designed to perceive 4 tastes: salty, sweet, sour, and bitter. But with wine, we only deal with the latter three.
SPIT / SWALLOW Alcohol dulls the senses, and after tasting a number of wines without spitting, they all start to taste the same. The last impression of a wine is its aftertaste or finish.
