One major change will be a bigger emphasis on making Bella Vita more family friendly.

The changes include a new owner, Jack Singh, and a new management team with Bensley and Jimmy Burgess, the new operations manager.

“We’re also looking forward to updated menu items and a brand new look for the bar,” Bensley says.

Burgess said customers will definitely enjoy the changes and new food items.

“The bar is being totally renovated,” Burgess said. "We thought it was time for a fresh look and a fresher feel.”

As for the menu?

“We will continue to offer the staples and popular signature dishes like the linguini fruiti di mare, romano crusted chicken and scallops risotto among others, but we‘re looking to add some more seafood options and a few lighter dishes as well," Burgess stressed.

Bensley added, “You always want to accentuate the positive as much as you can. Keep what works. Delicious food, the best view in the city and great service, but we can’t be afraid to try something new. We will still have a comfortable dining atmosphere with excellent food and service, but we want to move forward with a more modern feel, from the decor to the menu.”

Burgess noted that Bella Vita will still be going strong with great wine, various drinks and appetizers, the temperature-controlled waterfall, live music, catering and private events.

“A lot of our previous guests are very happy and satisfied with the way both the catering and the private events atGeist.com / JANUARY 2016 / GEIST MAGAZINE / 11

“We are still going to have the Summer Fun Days and parties with bands and clam bakes, but they will definitely be more family-friendly,” Bensley said. “This will still be a great date destination but simply more inviting with a family feel.”

Burgess and Bensley are both Ben Davis High School graduates but attended the westside Indianapolis school at different times. And they both have similar reasons for getting into the restaurant business.

Bensley is coming from Buffalo Wild Wings in Brownsburg where he was the service manager. “I got into this business because I love food, and I love people. I like to cook, and I like to talk,” he joked.

“I think you have to go with what you know. Keep it simple.”

Burgess primarily worked on the bar operation side before joining Bella Vita.

“I fell in love with what I was doing.

It helps when you have friendly staff wherever you work. I also think guests can really tell when you care. People want to know that you care about them more as individuals than as customers.”

Bensley completely agrees.

“You have to modernize the place to keep up with times but still have your own identity,” Bensley said. “It has taken a lot of planning. We want to emphasize what a beautiful view we have here.

Former Bella Vita owner Henri Najem will no longer be involved in the restaurant.

“He’s definitely been a valuable resource and a wealth of knowledge, but he’s passed the torch and has channeled his energy into his new restaurant, Flamme Burger, a fresh casual gourmet burger concept in the Fishers Nickel Plate District,” Bensley said.

A

fter years of hearing stories about Winston Knauss, it was time to debunk the myths that surround conversation of this man. These seemingly tall tales of flying a helicopter or an airplane under the Keystone Ave. bridge, pulling water skiers from a helicopter along the White River and building his own yachts behind his house seemed a bit far fetched.

Or were they? It turns out that all of these stories are true. In fact, Winston produced evidence to support most of his shenanigans.

It is true that Winston’s company imploded buildings with more efficiency than other demolition companies which enabled him to live a life that he wished to live.

At a young age, Knauss knew he was responsible for himself and his career. After leaving his parents’ home at the age of 18 and living out of his car, he worked fast and furiously to create a successful business.

In fact, Winston’s yachts reside all over the world in Shanghai, Mumbai, San Francisco, Marina Del Ray, Miami and five in New York City. Winston has sold all of them except for the two in Miami that he owns and the new one under construction in Green Cove Springs, Florida. The latest addition will be his 32nd yacht.

When Winston is faced with a challenge, he calls in expert assistance from his friends like when Liza Minelli and her entourage wished to charter his yacht in Fort Lauderdale. “Normally I was not in charge of food. There would be a caterer, and my job was to captain the boat,” says Winston.

“Liza’s assistant put me in charge of their food as well as the charter to show them the waterways. I called a buddy for advice.”

Winston’s friend that he reached out to was Jug’s Catering founder Charles “Jug” Eckert. Winston asked Jug for help. Eckert advised him to purchase stone crabs, buy the best of all the food he could find and shared with him what to charge. Confident with the advice, Winston went to work.

The end result was a repeat customer.

“Liza Minelli chartered our boat several times after that experience,” shares Winston.

During the Super Bowl when the Colts beat the Bears, Colts owner Jim Irsay chartered Winston’s yacht, hosting a capacity crowd.

One year for the Fort Lauderdale Winterfest Boat Parade, Ryan Hunter-Reay was the Grand Marshall aboard Winston’s yacht. Built for entertaining, the yacht is large enough to seat 240 passengers in one dining room and another 120 in an adjacent dining room.

Winston’s shipyard company, located along the St. John’s River in Florida, just started the framework on his latest ship. It will measure 132’ in length and six stories high above the waterline. The ship will accommodate 575 guests for dinner, and 30 crew members will have living quarters on board. Guests enjoy four hour charters.

“One time, years ago, we took the kids on vacation to visit Winston in Florida,” shares Brigitt’s husband Philip. “He picks us up and all of our luggage in an Excalibur Roadster.

With four kids and the luggage piled on that convertible, we looked like the Beverly Hillbillies!”

Six years ago, Winston, along with his wife Diane, and a flight instructor were involved in a helicopter accident at the Fort Lauderdale Executive Airport.

The only sustained injury was to Winston’s left eye. Due to this injury, Winston no longer flies his aircraft nor steers the yachts.

For the record, the FAA accident investigation concluded the accident occurred due a faulty part on the helicopter.

While Winston may not be behind the wheel of his yachts, he certainly enjoys the ride, and everyone on board is guaranteed to have a good time!

When asked about the current trends that he sees prevalent in the culinary world today, Allen responded, “There is a trend in good cooking that is not confined to metropolitan areas like New York City or San Francisco. You can get a great organic burger in more local places, like Noblesville, Indiana. I can remember when it was difficult to find quality ingredients and even olive oil in this area.

Republican candidate Ben Carson’s poignant message has now become the mission of Geist resident and Hoosier native Carrie Petty, the newly appointed State Director for Dr. Ben Carson’s 2016 Presidential Campaign. Geist Magazine caught up with Petty on her first day on the job at a recent campaign rally in Fort Wayne.

After serving as the former Executive Director for the Indiana Republican Party, she was appointed to the position by Chairman Jeff Cardwell earlier this year. Petty wasn’t looking for a new job. But then Dr. Carson’s

team came to Indiana for the Fall Dinner and other events, and “they plucked me out. I heard his name, and I had to go,” Petty says. “I’m just so humbled to be aligned with such a great leader. I’ve known a lot of great leaders in work that I’ve done in the past with Habitat for Humanity and Gleaners Food Bank of Indiana, but Dr. Carson is unlike anyone I’ve ever met before,” Petty says.

Bruce Pfaff, Midwest Field Director for Carson’s campaign, is looking forward to working with Petty in his efforts across the Midwest. He says, “Carrie knows folks all over the state, and I think it’s going to be exciting to have her involved. We’re excited that she’s joined our team.”

Aside from her vast experience in philanthropy (Petty holds a degree from the Lilly School of Philanthropy), Petty’s simple motivations make her a great pick for the job. “I’m a fifth generation Hoosier, and I love this state. I love these people. I love everything Indiana’s about!” Petty says.

Petty’s main job is the grassroots effort to get Dr. Carson on the ballot and get him elected for the state of Indiana and the Midwest.

Pfaff explains how Dr. Carson’s campaign began as a grassroots movement by outsiders who heard him speak at a prayer breakfast. The group began petitioning thousands of people to support Carson in his bid for President.

Carson thought about it, prayed about it and decided he had to do it to try and help the country. “Our message is heal, inspire and revive. We want to work hard to elect Dr. Carson because he’s got the message to make this country great,” Pfaff says.

Petty will pass on her grassroots spirit on to her volunteers. “This is a wonderful state for volunteers, so we have a great group of 80,000 volunteers already in the database, some of whom showed up for the Fort Wayne rally,” Petty says.

Carson’s Hoosier hometown hero and her volunteers have a big job ahead of them in the coming year. Indiana’s Primary election takes place May 3, 2016.

After launching her own catering business in 2009, Chef Suzanne Rockwell has experienced a lot of success. From being the private chef for the Colts and the Pacers to doing cooking segments for Channel 13, Rockwell has been able to share her talents and skill with Indianapolis.

The competition will require the chefs to make a dish out of a list of items that they will only have a limited time to collect from a grocery store.

“I did not apply to be on the show. They actually found me from just a Google search,” said Rockwell. “I am completely self-taught too, so when the Food Network calls, it is pretty exciting!”

Rockwell has already made the final cuts and has completed multiple interviews. Now it is left up to the show’s producers to decide who will make it onto the show. If Rockwell makes it, she will fly out to Los Angeles in March 2016 and compete for the chance to win $20,000.

But instead of pocketing the money, Rockwell says that she would donate all of it to charities including Harrison Hill Elementary and local food pantries.
