Rachel Priddy loved the vibe of coffee shops so much that following the birth of her second baby, she decided to quit her corporate sales job and open a café.

She quickly found her dream location on 146th Street in Carmel that included a back patio and drive-thru. Unfortunately, lease negotiations took a long time to work out so, as she waited, she and her husband bought a coffee/food truck and opened Rose & Lois, named after their daughters’ middle names.

Priddy works with several local roasters.

For instance, Blue Mind Roasting in Broad Ripple roasts their espresso, they sell drip coffee from Dark Side Roasters in Cicero, and Julian Coffee in Zionsville does their cold brew.

“They won America’s best cold brew at Indy’s Coffee Fest last year,” Priddy says.

“People rave about it.”

Priddy also partners with Aahaa Chai,

Unplug Soy Candles, Big T (selling their tea), and Taylor’s Bakery (selling their coffee cake). Customers appreciate the creative menu items like the trendy Dalgona whipped coffee and the pistachio latte. New fan Katie describes herself as more of a tea drinker, so she loves that Rose & Lois uses Aahaa Chai in chai tea lattes and iced tea blends, and that they have refreshers in tasty flavors like blood orange coconut.

“After Instagram stalking Rose & Lois for weeks, I finally experienced it for myself.

And let’s just say, I see many more return visits in my future,” Katie says. “Rose & Lois is knocking it out of the park.”

“A lot of people in the area don’t realize we have food, but we are the only food option in our plaza right now with lots of great lunch options,” says Priddy, who is constantly tweaking the menu to make it better. For instance, she and her staff have been working on getting kids’ sandwiches and little charcuterie cups to go. They also offer a kids’ caffeine-free line of fruit tea.

“I thrive on doing marketing and product development because that’s in my wheelhouse,” Priddy says. “I’ve thrown myself into this new world and have been drinking from the fire hose, but I’ve been learning so much.”

A self-proclaimed extrovert who loves connecting with people on a daily basis, Priddy admits that running a small business can be challenging. For her, the most difficult thing has been learning that she can’t please everybody.

Priddy sold her first cup of coffee last May at the Noblesville Farmer’s Market and was looking forward to opening her brick and mortar store this spring but then life happened.

“We got our certificate of occupancy on March 19, the same day the governor issued the closing of dine-in restaurants,” Priddy says. Though she was discouraged, she shifted her perspective and opened the café’s drive-thru only.

“I love that they have been serving customers despite the circumstances [of the pandemic],” Katie says. “The owner and staff are so sweet and taking all the necessary safety precautions during these strange times. It’s easy to go through the drive-thru for a no-contact experience.”

“Developing a thick skin can be hard because you pour everything you have into it,” she says.

She’s not complaining, however, as feedback has been overwhelmingly positive. “I’ve been surprised by how many people tell us regularly that our drinks taste better than Starbucks,” she adds.

Loyal customer Heather first got hooked on Rose & Lois when she tasted their coffee at the 2019 Noblesville Farmer’s Market. As she’s gotten to know Priddy and her staff, she’s become an even bigger fan.

“Rachel and her staff are beyond friendly.

They feel like friends,” says Heather, who also loves the fact that Priddy is rooted in the community and supports local roasters.

“When I was researching opening a café, what I read over and over again was that doing so wasn’t going to make me rich but it would make an impact on my lifestyle,” Priddy says. “That’s what I wanted — to have a place to be involved in our community at a greater level.”

And she certainly has been. Throughout the spring, even when her store wasn’t yet open, Priddy and her staff connected with Feed the Frontlines Carmel, the Rotary Club of Carmel, to deliver meals to frontline workers at St. Vincent. Each meal was sponsored by a local business. In addition, several customers have bought meals for Priddy to donate to the cause.

“It’s been wonderful,” Priddy says.

With ice cream of course! Enjoy this cold, delicious treat with friends and family. Head to your local ice cream shop and grab a scoop! Maybe even try a few different and unique flavors before you settle on your tried and true favorite!

You could also host a fun ice cream themed party. Have an “I Scream for Ice Cream” bar where everyone can make their own amazing concoction!. Make sure to have plenty of toppings including things like pretzels, M&M’S, fruits, sprinkles and nuts!

You can also provide all different types of cones and even cute little bowls for your guests to create in. Maybe even offer fun decorations like wands, cupcake toppers and mini umbrellas. Think outside the box and take photos of everyone’s custom treats.

Then have prizes for most creative, best looking and most daring. Your guests are sure to enjoy this fun event!

Or, if you are feeling ambitious, try your hand at making your own ice cream. Here’s a really easy recipe you can make at home in a bag. All you need is half & half (1 cup), sugar (2 tbsp), vanilla extract (½ tsp), ice (3 cups), salt (⅓ cup), and two plastic bags (one large and one small). Put the cream, sugar, and flavor inside the smaller bag and push out all the extra air. Put the ice and salt in the bigger bag and then add the small bag with ingredients. Lock well and shake for 7-10 minutes until the ingredients have hardened. Once it’s done, you can let it set a little more in the freezer while you make homemade chocolate chip cookies to create your own homemade ice cream sandwiches!

There are lots of fun ways to celebrate this month, but, if in the end, you’d rather just try a different kind of ice cream each day of the month of July, we get it. Because remember, we all scream for ice cream!

coffees and teas. The establishment sells beverages from Four Barrel Coffee, which is considered a top-ten national roaster, as well as SerendipiTea, one of the most successful importers of high-quality teas in the world.

Hanes plans to eventually publish a brunch cookbook. He is a big believer in not trying to create a restaurant that is the right fit for everybody.

arry Hanes, owner and chef at Eggshell Bistro, is a jack of all trades - a man who has flourished in numerous careers, but doesn’t view them as separate because he blends each experience to make him the creatordesigner-artist extraordinaire that he is today.

“It all feels like the same design path - just a different medium,” Hanes says.

Having worked as a chemical engineer, designer, art director, painter, writer, illustrator, and photographer, Hanes switched gears in 2011 and opened Eggshell Bistro. The restaurant has been listed in Indianapolis Monthly’s top ten best new restaurants, and named best brunch in Indiana by the website Livingly.com. It might not come as a surprise that Hanes also holds a world record in juggling.

“You’ve got to juggle a lot of things in the restaurant world, and I’m really good at that,” says Hanes, who describes his personal life as pleasant and peaceful, and full of reading, gardening and traveling.

Eggshell Bistro is open Wednesdays through Sundays, and Hanes closes the restaurant on Mondays and Tuesdays to give his staff a full two days off. It’s all part of adhering to his cherished motto: “We shouldn’t live to work. We should work to live.”

Opening Eggshell Bistro was a dream that came to fruition for Hanes after he spent time munching on breakfast with fellow

art directors - many of whom shared a similar vision of owning their own food establishment. Hanes wanted to open a place that specializes in brunch because he embraces the optimism that mornings bring.

“In the morning everything is possible because no barriers have gotten in our way at that point,” Hanes says. “Morning symbolizes rebirth of a new day. It’s just a beautiful time period.”

Hanes thinks of Eggshell Bistro as an evolution, meaning that he strives to continually improve the eatery.

“When you do that, it’s like adding too much water to Kool-Aid,” he says. “It dilutes the experience.”

Though Eggshell has regulars, Hanes is proud that the restaurant attracts a great deal of diversity.

“I love getting to know everybody and talking food with them,” says Hanes, always the eager learner. “I like hearing about people’s travels. They teach me a lot.”

When Hanes travels, he gets excited when stumbling upon new food-related ideas.

“I say, ‘I can’t believe I didn’t know about this, but I’m so happy I found out about it,’” Hanes says. “Then I come home and connect it to something I grew up with, and a new idea is born.”

But according to regular customer Laura Conder, one needn’t venture out of Carmel to experience the taste of world travel.

“Visiting Larry at Eggshell is like taking an exotic vacation without leaving Carmel,” Conder says. “He has blended art, design, music, and of course food, to create an experience - much more than just a meal.”

Blake Epperson, franchise owner for Freddy’s Frozen Custard & Steakburgers in Carmel, says he and his staff have received a warm welcome from the Carmel and Zionsville communities.

“The number of positive responses we’ve received from guests in the area has been very encouraging,” says Epperson, adding that the 146th Street Carmel Freddy’s location opened in 2016, and the North Michigan Road Carmel store opened last year. “Guests have been thrilled we’ve expanded in Carmel, giving residents in the community another convenient location to visit.”

“We think Freddy’s differentiates itself in several areas starting with our freshly churned, frozen custard treats, cooked-toorder, 100-percent ground beef steakburgers, and Vienna Beef hot dogs,” he says. “We strive to bring more than just another place to eat in the community, by making an effort to become familiar with our guests and their stories.”

The delicious food has been a big hit locally.

“We have two popular specialty orders, the Freddy’s Original Double and the Signature Turtle Sundae,” Epperson says.

“The Signature Turtle Sundae is a fan favorite that combines hot fudge and hot caramel, atop vanilla custard with salted pecans and, of course, whipped cream and a cherry. The Freddy’s Original Double is made with two thinly pressed steakburger patties topped with cheese, mustard, pickle planks and onion slices.”

Epperson says he can’t wait to meet new friends at the new Carmel location.

“We’ve truly enjoyed being a part of the Carmel community, serving fantastic food and custard, and also hosting fundraising nights for local schools and other nonprofit organizations,” he says. “With the opening of a second restaurant, we’re prepared to serve guests in the southwest part of town with the same friendly service and great taste they’ve come to love at our 146th Street location.”

An Eye for Style New Beauty + Grace Owner Amber Rae Brings Unique Flair to Fashion & Photography Owner Amber Rae

Senior year in high school is filled with many milestones. It is a year of firsts, lasts and moments worth remembering, including senior portraits. A new central Indiana photographer is redefining photography for high school seniors by focusing on each senior’s individual personality, and providing styling to ensure that this important milestone is a positive experience for all.

Last year Amber Rae became the owner of Beauty + Grace, the existing fashion store at Carmel City Center. Her plan was to introduce a fashion and photography concept that she perfected at her first store in Michigan. Beauty + Grace is an extension of this concept, which she hopes will provide Hoosiers with a window into the soul of her

art, fashion and photography. Amber opened the boutique to create a space for spending time getting to know her clients, helping them find their unique style, and helping them put it all together for fun photography sessions that capture their personalities.

Amber spent much of her career working in the fashion industry, managing retail stores and working as a buyer for retail giant Guess.

As she studied photography, Amber didn’t think she wanted a career working in the photography business.

“At the time I would take photos of family and friends, but it was just not on my radar as a career,” she says. “I loved fashion more.”

As fate would have it, Amber met a photographer who offered to take her under his wing if she would help him revamp his atCarmel.com / JULY 2020 / CARMEL MAGAZINE / 19

business in exchange. She embarked on a mentoring journey while managing her retail store, and simultaneously helped her mentor with his wedding business for several years. Amber began to receive her own photography requests, which she referred to her mentor out of respect. Eventually that mentor encouraged her to begin photography full time.

Amber was grateful for the training but found herself hesitant.

“Even though he taught me the art of lighting and angling to perfection, I knew that if I was going to pursue it, it had to be on my terms,” she says. “I wanted to make a difference and I knew that I wanted to add that element of fashion to it. I wanted to add that avant-garde that I admired so much.”

And with that, Amber’s high-end fashion photography business, Amber Lights Photography, was launched in Milford, Michigan. Referrals began pouring in for her unique photo art. Ultimately she became known as the top wedding photographer in the greater Detroit area. Her career was thriving and her calendar was full.

However, when her bridal clients began referring their siblings to her for senior pictures, she hesitated.

“Senior photos were not quite as evolved as they are now,” Amber says.

Her uncertainty prompted her to evaluate what she could bring to this client group.

“I knew that if I was going to consider it, I didn’t want to do it the typical way,” she says.

“What is most important is their experience, and how they feel. So I tell them to bring in everything that they own. We mix it with what we have, and then we help them out.”

What Amber found is that when she styles her seniors, or any of her clients, they are able to relax and enjoy the experience knowing they look their best. She eventually became the top high school senior photographer in the Detroit area.

“As a professional stylist and a designer, I see things differently,” Amber says. “I know what fits on someone’s body, and what will bring out their personality to showcase their confidence.”

Pet Wellness Clinics has brought its special brand of unique and compassionate care to Carmel. Opened in July at 13080 Grand Blvd., the full-service clinic offers every pet health need from preventative care to any medical procedures. The goal of owner Dr. Mike Graves is to provide affordable and convenient care with a focus on prevention.

“I always wanted to be in the medical field and I debated between being a human doctor or a pet doctor,” Dr. Graves says.

“Pets make life so much better and sick humans can be cranky, so I chose to do something that puts a smile on my face every day. It’s just fun. I feel my job is to speak for pets to their owners. The animals can’t talk so I have to figure out what’s going on with them and communicate that to their owners.

"We actually have been looking in Carmel for a while to find a spot to have a clinic.

I felt pet care was underserved in the community. People shouldn’t have to put their pet in the car and have to drive several miles to get quality care. We are in a new building with plenty of easy parking and it's conveniently located between east and west Carmel."

The Carmel location is offering new clients a complimentary veterinary exam for their pet. It boasts the same amenities as the eight other full-service veterinary facilities in the Pet Wellness Clinics family. Each offers complete veterinary care, including vaccinations, dental cleanings, digital X-rays and surgery.

One aspect that sets Pet Wellness Clinics apart from other veterinary offices is their

Pet Prime™ Membership program. Clients pay a yearly fee of $39.95 per month for unlimited office visits, vaccines and medication for fleas, ticks and heartworms.

Instead of having to pay for important preventative care all at once, clients are able to budget for their pets’ health needs.

Special pricing for some procedures is also included in the membership.

“We are really client-focused,” Dr. Graves adds. “After we did a survey of our clients, we found that only 60% of them were giving their pets preventative medicines. They felt it was cost-prohibitive to buy a six-month supply of medicine a couple times a year.

Some might have been purchasing flea or heartworm medicine from a big box store, but our medication is much safer and is 99.9% effective.

“Also, because of being hit with the cost all at once, clients weren’t getting all the vaccines their pet needed. They might choose just to get a rabies shot because it was too expensive to pay for all the vaccines at once. As an effort to keep clients safe and comfortable amidst the COVID-19 pandemic, Pet Wellness Clinics has put accommodating procedures in place. One option is Telemedicine. Easily accessed from a smartphone, this app allows pets and their owners to have a virtual veterinary visit. Participants in the Pet Prime Membership program are granted unlimited Telemedicine appointments. Also available are curbside services for pet grooming dropoffs as well as office visits. If desired, clients can still enter the lobby as long as social distances procedures are observed.

“The new location is bright, airy. It makes people smile and dogs wag their tails when they walk in. We want our clients and their pets to have a ‘Wow’ experience when they visit us,” Dr. Graves says.
