private parties thrown at the Speedway’s popular suites, as well as the facility’s pavilion and infield tent locations.
Each year when Central Indiana residents turn their calendars to the month of May, eagerly anticipating Memorial Day celebrations and the legendary Indy 500, there is perhaps no group of people working harder than the folks at Jug’s Catering.
“As the suites were added one at a time through the years, that caused us to grow, starting with the Turn 2 suites – that was the first time they needed a food service out there,” says Max Eckert, whose father, Jasper native Charles “Jug” Eckert, founded Jug’s 50 years ago. “The Hulman Terrace suites followed, then the Tower Terrace and the Gasoline Alley suites later. As they grew, we grew.”
Since the early 1970s Jug’s has been a fixture at the Speedway during the month of May as a caterer for the various corporate and

With 22 full-time employees and approximately 100 part-time staff members who join up for their busy season, Jug’s operates 12 mobile catering trucks with a brick-and-mortar headquarters on 65th Street in Indianapolis. The business has become known for its fried chicken, country biscuits and apple butter, but Max’s wife Connie, who works part-time for Jug’s, says the company also accommodates special requests. “Just because it’s not on our menu doesn’t mean we don’t do it,” she says. “At the Speedway we have beef tenderloins, kabobs and our
giant pork chops. We can do most anything the client wants. We have to be versatile for the amount of business we do at the Speedway.” And that amount is fairly staggering. Max says Jug’s fried up 96,000 pieces of fried chicken this May at the Speedway, along with hundreds of pounds of apple butter for their fresh biscuits. The Jug’s team loads up four of their 12 catering trucks for race weekend and begins prepping mountains of fresh, hot food for tens of thousands of hungry race-goers at 4 a.m.

“The busiest days for us are the qualifications day, then Carb Day on the Friday before the race, and race day,” Max says. “On Carb Day in the pavilion area alone, we did a party for 3,000 people. Those are long days and it’s very fast-paced from cooking to serving. It all happens very swiftly because there are so many people there that want to eat.” Max says the biggest challenge after so many years at the Speedway remains time management, and making sure the entrees and side items for each and every party are fresh and hot at just the right time. “With something like baked beans, you can stick that in the oven, get it hot, and you don’t have to worry about it,” he says. “But with fried chicken, I want that to be nice and fresh, so you can’t do that at eight in the morning. You have to be careful about overcooking tenderloin or pork chops. You have to stay on track, and any little hiccup can throw you off.” Max says the Jug’s staff has seen their share of celebrities at the track, recounting a chance meeting between a group of his
employees and a certain pop singer. “As the race was finishing up last year, Lady Gaga happened to get onto an elevator with a couple of our girls who were bringing a leftover cart full of food back to the kitchen,” he recalls. “She must’ve been really hungry, probably from walking around all day and meeting people, and she started eating right off of the cart. That was pretty refreshing to hear that someone of her status wouldn’t think that was beneath her.” Connie says her greatest enjoyment after 25 years with Jug’s is still helping to make parties, weddings and other events special across the state. “It doesn’t matter where you go, I’ve realized people in Indiana are nice people,” she says. “They’re fun loving, and it’s pretty neat to be a part of their celebrations, no matter what we’re catering.” For more information on Jug’s Catering, including catering menus and pricing, call 317-842-5879 or visit jugscatering.com.

We all remember “that kid” from the neighborhood. The one who was always in trouble on the bus, getting suspended from school or dropping out of school. They’re the one you look back on and wonder, ‘what ever happened to so – and – so? I wonder if they ever figured it out.’
Some people say, “Not all who wander are lost”. This couldn’t be truer for Wall. He spent most of his 20s and 30s, not lost but trying to figure out where “home” was. He moved from Indy to Louisville, California, Denver, Chicago and then returned to Indianapolis when his father was battling cancer. Along the way, he’s hiked at Garden R.J. He held a variety of positions from busing and bartending to waiting tables and eventually running the front of the house. He’s a self-taught wine and liquor connoisseur and full-fledged foodie who cultivated his love of food and beverage into a flourishing business. After being on the road for years, R.J. knew Indy was where he wanted to call home. Few immortalize being a Hoosier like R.J. who has the state of Indiana, corn stalks, a mail pouch tobacco barn and Indy 500 flags tattooed on him as well as “American” across his knuckles. Moving back to Indy after traveling around the United States and taking in different culinary locales, he saw an opportunity in Indiana and seized it. Upon returning to Indianapolis, Chef ’s Night Off “CNO” was born.

“Chefs Night Off started in Chicago with Graham Stein, former Sous Chef of Fat Rice and Jay Schroeder, a beverage wizard in Chicago,” Wall says. “When I moved back to Indy our restaurant and bar scene was really starting to get some legs, and I wanted to facilitate that growth.” CNO is a “pirate dinner” where sous chefs and line cooks from locally owned restaurants and bars can highlight their culinary brain children at pop-up dinners all over Indianapolis focusing on slow food.

“Dahlia Presents was an accident,” Wall says. “I was running HiFi (a concert and special events venue) and wanted a reason to partner with 3 Floyds, so I did a tap takeover the day before Winterfest and 3 Floyds equals metal, so it was an easy marriage. Because the HiFi had such a reputation for sounding awesome, all the best bands in town were easy to get to play there. After 2 to 3 sold out metal shows, Jason King, longtime friend and talent buyer at The Vogue, and Dan Kemer, at Live Nation, brought me under their wing to fill a promotional void left in the Indy metal scene. I am extremely lucky to work with the people I do”.
When asked about his success with CNO and Dahlia Presents, Wall says success is a journey you rarely take alone. “I’ve worked with Josh at The Vollrath, Monolith Festival at Red Rocks, at The HiFi and as well as a few other things, and he brings the infrastructure, support and a multitude of other benefits to our partnership,” Wall says. “I’ve learned a great deal over the years from him and continue to do so. I share this success with Indy. If it were not for the support of Hoosiers, we could not do it.”

In an industry as challenging and unforgiving as the restaurant business, Indianapolis-based Cunningham Restaurant Group (CRG) is still thriving after two decades, with an ever-expanding selection of successful restaurant concepts including Mesh, Boulder Creek Dining Company, Vida and BRU Burger Bar in Indianapolis, Cincinnati, Louisville and Lexington. Founder, CEO and company visionary, Mike Cunningham, says a thorough understanding of day-to-day restaurant logistics, as well as an innate sense for customer hospitality, are crucial to stay successful in such a difficult field with so many competitors. And he should know because his understanding began when he was in the third grade.
State Technical and Community College, he had worked his way up to assistant manager with the Ground Round Grill & Bar burger chain. Cunningham’s foray into entrepreneurship came at age 22 when Ed Sahm, one of his Ground Round colleagues, decided to open his own independent restaurant and pub – Sahm’s on 116th Street in Fishers – and needed a manager. A few years later, Cunningham was debuting his own concept – a frozen yogurt and café shop called the Big Chill - which would expand to five locations beginning in the mid-1980s.

CRG was off and running. “The challenge then, and what the challenge will always be, is finding good people that want to take care of others and have that hospitality gene,” he says. “To make guests feel like they’re home when they’re in your restaurant, that’s what sets you apart.” Avon-based, Italy-inspired Charbonos followed a few years after the opening of Boulder Creek, and CRG continued to gain momentum, steadily expanding and adding new establishments to its portfolio including six Stone Creek Dining Company locations in Indiana and Ohio and Moerlein Lager House in Cincinnati. Cunningham has continued to sharpen his command of all things culinary and currently oversees 21 restaurants in four cities, with two new Indy eateries scheduled to open this fall in the Ironworks Hotel on East 86th Street – Rize, a health-conscious breakfast and lunch spot that will offer catering, and Provision, an upscale lunch and dinner concept. “It was a slow, methodical growth over 20 years, and it used to be one (restaurant)

Adaptation has played a key role in Cunningham’s winning formula, and he says CRG has responded to the rise in customer demand for unique, locally sourced ingredients.

“People want to eat locally grown, healthy food, which is a greener approach for everyone even the restaurants because you’re not trucking your produce from California or your meat from Arkansas or wherever,” he says. “And it keeps those jobs in the state.” Never one to ignore industry trends, Cunningham has gone further than just sourcing local produce from Hoosier growers. Sarah Reuter,
founder and owner of Artisan Picnic, came up with the idea while vacationing in Paris, France a year ago. She began thinking about some of the local cheese shops and markets right in her neighborhood, realizing that there were so many local butcher shops and bread makers popping up. Reuter realized this was a viable idea as she recalled all the amazing local food artisans and how it might help their businesses. too. Their gourmet picnics include a wide selection of fresh artisanal foods with three choices, “The Frenchie”, “The Italiano” and “The Veggie”. “The Frenchie and The Italiano menu options are similar to the traditional styles of French and Italian Charcuterie (cured meats) and cheese boards,” she says. “Each of the options consists of local artisanal bread, cheeses,
charcuterie, sweet and savory spreads, something pickled and something sweet. The Veggie menu simply leaves out the meat and adds in a variety of fresh local seasonal vegetables and fruits.� Reuter is partnering currently with the Indianapolis Symphony Orchestra on their lunch break series in June and three coming up in July where she will be onsite to offer the picnics so you can enjoy the concert without having to worry about getting lunch beforehand. Artisan Picnic is also partnering with the Indianapolis Museum of Art, Fishers Farmers Markets, The Original Farmers Market downtown Indy and is working to expand with more vendors at popular events around the city. W
ith a line down the street, a live DJ, a New Zealand artist spray painting a mural on the side of the building and people outside playing cornhole, walking into Broad Ripple’s new restaurant, BurgerFuel, felt like walking into a fun block party.
Open windows facing the street, cool modern industrial art and light fixtures and a former parking lot turned into patio space for outside games, the BurgerFuel’s recent launch party on May 25 was bringing the fun and most importantly, gourmet burgers. The New Zealand chain has lots of locations around the world, but are excited to break ground in the United States for the first time. Alexis Lam, marketing manager for BurgerFuel, explained why they chose Indiana for their first-ever America location. “One of the things we really liked about Indiana, and especially Broad Ripple, is that Broad Ripple is a lot like Auckland, New Zealand where we opened our first store,” Lam says. “Its really nice to come all the way across to the other side of the world and find a place where people are nice and neighborly.” The new BurgerFuel space takes over a car leasing shop, which includes a parking garage out back and a fenced in patio, perfect for outside events. While the former car leasing shop has been transformed on the inside, with an easy view into the fast-paced kitchen and a covered outside
seating area, BurgerFuel brought new life to the building outside with new murals by New Zealand artist, Haser. The space has a unique modern feel with the exposed brick and industrial décor. The murals on the building are fun, vibrant and all include the signature BurgerFuel purple color scheme. Haser has also put up murals all around Broad Ripple, including the Alley Cat and the Monon Trail. “One of the things we like to do is to come into a community and talk to the locals and find walls that have been neglected and turn them into murals,” Lam says. “We’re painting the town purple.”
The menu still has recipes inspired by the New Zealand originals at home but with an American twist. The beef is 100 percent grass fed, they have free-range chicken and also vegan and vegetarian burger options. Instead of the American tradition of ketchup, they use a highly recommended homemade tomato relish on most of their burgers. Another popular condiment is their variety of aoilis, which comes with all their fries. One of their popular gourmet sides are the Motobites, which are fried morsels made with pumpkin, carrot and chickpeas. Pair that with a local Indiana beer, or an organic soda, and you’re night is off to a good start.

We love cars, music and street art, and these are things we like to enjoy and we hope you enjoy them as well.” According to their website, they have a mission to transform the burger with a kiwi makeover, which includes high quality, healthier ingredients.
“Part of the ‘fuel for the human engine’ is that understanding that people who want to be active and have fun have certain lifestyles they want to live, and we want to support that,” Lam says. Lam also thinks the diversity of BurgerFuel’s menu can give people more choices when they go out to eat. BurgerFuel is now open to the public. Kent Henry and his partner, Stan Wellman lived in Key West for the past 30 years. They owned and operated retail stores in Key West, Boston and Cape Cod. Both Kent and Stan grew up in Indiana. Last year they decided it was time to come back home. “We wanted to come back and create
something new for Indianapolis, bring our life experience and our heritage to a store here in the city that reflects our shared heritage of people who were born and raised in Indiana,” Henry says. Wellman explained why they chose the location for the shop. “The location is great, there is free parking and shops are owner occupied,” he says. “This area has a creative vibe, and that’s 32 / BROAD RIPPLE MAGAZINE / JULY 2017 / atBRip.com
very attractive to us. Once we were able to connect with the space and the people involved in this area, we knew instantly that this was it.” They recently finished renovating a store front space and opened Heritage Clothier and Home, located in the shops at 54th St. and the Monon. The shop offers a collection of men’s clothing that is designed for an active, contemporary lifestyle. Another unique feature of the store is an eclectic
mix of home décor and gift items that focus on made-in-Indiana and made-in-the-U.S. products. “Women purchase 61 percent of all men’s apparel,” Henry says. “So we have something for everybody. It’s not uncommon for a woman to come in and buy two shirts for her husband and buy a wine glass for herself.” Kent and Stan have had the good fortune of working with many heritage labels, companies that have been in business for a very long time and are well-known like Penguin, which has been in business since 1955 and Levi Strauss, which has been in business since 1853. The creative team includes Items of their own design too — a new SoBro shirt, an Indianapolis skyline shirt and even marble coasters. They also plan to work with local artists and designers that don’t have an opportunity to be exposed in retail. Giving back to the community is a high priority for them as well. Fashion shows and fundraisers are events that will be showcased. “To survive in retail, you’ve got to be creative and invested in your community,” Henry says. “I see it as three Cs — creativity, community and customer service. All three of them have to be fulfilled to the highest objectives. “Each neighborhood in Indy has its own identity, this area is no exception, and that’s fun,” he adds. “It’s growing, evolving, changing and all in a very healthy way.
