Chalgub’s family moved to Miami in 1972 when he was a teen, and by his early 20s Authenticity. It’s the name of the game at he was working as a manager and food Taste of Havana on Broad Ripple Avenue, supervisor for a restaurant company based and according to owner Jorge Chalgub, it’s out of Miami International Airport. The work been the key to the Cuban eatery’s success for occasionally took him through Indianapolis, the past four years. of which he grew increasingly fond.

A Cuban native, Chalgub grew up hanging around the family kitchen observing his mother as she brought her sandwich, soup and desert recipes — many of which are used today in the Taste of Havana kitchen — to life.

“I decided to get out of Miami when my kids were starting school, because I didn’t want to raise them down there,” he says. “I always liked Indianapolis when I would travel through here. I haven’t regretted a minute of it.”

“I was one of those kids that was always in the kitchen and my mom used to kick me out all the time,” Chalgub recalls. “Eventually, she just got tired of kicking me out and started showing me how to cook. So, a lot of the recipes at the restaurant are hers. We try to offer as much authentic Cuban food and ingredients as we can.”

When Chalgub began considering the idea of opening his own Cuban eatery, Broad Ripple Village struck him as the ideal setting for the venture, having reminded him of a distinctive Miami neighborhood he spent time in as a teen.

area called Coconut Grove that used to look a lot like Broad Ripple,” he says. “It was a very Bohemian place and very laid-back with little shops. The residential areas had a lot of older homes from the ‘20s and ‘30s. It felt right to open the restaurant in Broad Ripple.”

On August 15, 2013, Chalgub opened Taste of Havana to the public in a small space on the Broad Ripple commercial strip previously occupied by Fat Dan’s Deli. While modest in physical size, the establishment’s reputation for flavorful Cuban sandwiches, pastries and coffees soon grew large.

Chalgub says the classic El Cubano sandwich and black bean soup have been customer favorites from day one, although his own sandwich preference is the pan con lechon, which comes teeming with roasted pork, mayo and caramelized onions. A case on the front counter typically displays house-made flan and a variety of pastelitos, which are flaky pastries stuffed with assorted fillers like

guava, cream cheese, chocolate, coconut and even ground beef.

“I get a little frustrated with a lot of restaurants being real pretty, and the food being mediocre at best,” Chalgub says.

“We went in the other direction. I decided I’d make a nice-looking restaurant, but not spend all my money on that and then come up with very low-cost food and small portions. We make our own beans, we roast our own pork and turkey. We basically try to make everything from scratch that we can.”

This laser-focus on quality and authenticity has garnered Taste of Havana widespread recognition, including a consistent five-star TripAdvisor rating and a presence in Yelp’s “Best Coffee Shop in Every State” listing, released earlier this year.

Last year, on the third anniversary of Taste of Havana’s grand opening, Chalgub expanded his restaurant into an adjacent space formerly used by United Repair Service, a clothing alteration business whose owners retired.

Taste of Havana doubled its seating capacity, and Chalgub says the expansion had been long overdue given the establishment’s ongoing popularity.

“We used to be puny,” he says. “If you had 15 people in here we were already bursting. It was starting to hurt us because people didn’t have a place to sit at the busy times and they would sometimes leave.”

Don’t think for a moment, however, that the expansion has changed the emphasis on quality cuisine that remains vitally important to Chalgub and his small staff of four employees.

“We’re progressing, but we continue to make everything we can from scratch,” Chalgub says. “Even Cubans here say to me, ‘We can’t even get this kind of food in Miami.’ I just try to give the best service and the best quality food I can. It’s been baby steps, but so far that formula has worked.”

Plenty Lifestyle opened its doors in June, inviting customers to do much more than just browse offerings from the newest artisans.

The shop is filled with products for your home and lifestyle, like furniture and artwork, botanicals, apparel and jewelry and a wide array of gifts for living an abundant life. Walking in to the store, immediately your senses begin working overtime. Starting with the beautiful paintings on the wall, the scent of fragrant candles burning, soft music playing in the background and soft crocheted blankets to touch.

Owner Alyssa Norwalk originally considered offering her products online, but she admits there’s a reason why she chose to offer her products in a brick and mortar store instead.

“Our focus is on the sensory components, appealing to all of the senses,” Norwalk says. “We want you to come in, escape into the experience and visualize what you want in your home. We hope you leave feeling better than you did when you walked in.”

Norwalk’s new shop has been a way for her to pursue her passion and purpose after being away from the retail store environment for many years. Growing up in Indianapolis, she spent many hours working at her mother’s store, Tarkington Tweed. Later, Norwalk went on to run Gingko, a gift store which she ran with partners. After the store closed in 2008, she moved away from Indianapolis and the retail business.

But a recent divorce brought her back to Indy in the Zionsville community.

Suddenly a single mom with four kids, Norwalk was ready to reinvent herself. She never lost her passion or her dream. So, she dove in and pursued every avenue to make opening her store a reality.

Naming the store was part of the process.

She remembered a dream she had when she closed her shop in 2008. She dreamed she would open a new store one day and call it Plenty.

Opening the store meant more than fulfilling Norwalk’s dream. Something more important became the driving force.

“I did this for my kids,” she says. “I want to show them anything is possible. I just want to be the best mom I can be.” atBrip.com / JANUARY 2018 / BROAD RIPPLE MAGAZINE / 7

She succeeded in proving herself to be the best mom. After opening the store when Norwalk was fighting a debilitating battle with Hashimoto’s disease (a disease that affects the thyroid), her oldest daughter wrote a heartfelt letter to her mother in which she expressed her pride in her mother’s accomplishments and her gratitude for raising her to be fiercely independent. The letter meant so much to Norwalk, she called upon one of her artisans to enlarge it and frame it. It hangs in the back of the store, creating quite a conversation piece, evoking plenty of emotion.

Norwalk is doing more than filling her shop with conversation pieces and other cool gifts. She’s supporting local artisans, helping promote their work. Norwalk personally scouts the local artisans and becomes friends with them. Eighty percent of the products featured are from these local artisans. Some of them are just starting out.

“It’s a win-win. We’re helping each other succeed,” she says.

Scouting new artisans is just one of Norwalk’s talents. She has always had a talent for curating the perfect gift for any person and occasion.

“I’ve always been an intuitive gift giver,” Norwalk says. “I love to curate gifts.”

Her talent got noticed by a famous Shaman connected with many celebrities.

Norwalk’s Instagram posts caught the Shaman’s attention, and he sought her out to put together some special gifts.

Plenty proudly features the works of ArtMix, a charitable organization that enhances the lives of disabled children through the arts. Norwalk also supports the Hope Center, an organization devoted to ending human trafficking. The cause became very personal to Norwalk after traveling to India on a mission trip to support those affected by human trafficking.

Something else special to Norwalk and Plenty is charities.

Norwalk hosts events at Plenty every two weeks where current and new artisans can feature their items and customers can meet the artists in person. For some of the artisans, Plenty’s events are the first opportunity to show off their works.

One upcoming event will be specifically for ArtMix. The fundraiser will be held Thursday, Feb. 8 at Plenty. In addition to the events, Norwalk plans to host workshops and classes to inform and inspire people through art.

MARLIN JACKSON’S FIGHT FOR LIFE FOUNDATION IS MAKING A STRONG IMPACT IN THE LIVES OF YOUTH

Marlin Jackson grew up in the projects in Sharon, Pennsylvania to a mom who had addiction issues. Jackson did not grow up with a nurturing parent. He did not have positive social or emotional role models.

He was not presented with a solid example of how to love himself or other people, but he persevered.

At the University of Michigan, Jackson was an All-American as a freshman and as a sophomore. Jackson was postured to enter the NFL after his junior year. His football career came into jeopardy when he had been engaged in an altercation. While Jackson was at the University of Michigan, his psychology class volunteered in inner city Detroit schools. As Jackson listened to the stories of the students. He could relate, for he had lived their life.

When Jackson shared that he had the same

experiences, the kids didn’t believe him.

“You’re lying, you’re Marlin Jackson, All-American,” said one of the students.

Jackson had opened their eyes to possibilities and these kids had opened his. The kids could dare to dream, and so could Jackson. It was in this inner-city school that Jackson knew he would start a program to help kids like these, kids like him. The Fight for Life Foundation is the program that Jackson needed when he was young.

When Jackson was drafted by the Colts, he listened to Coach Tony Dungy speak of faith, family and football, Jackson was surprised. It was the first time he heard a coach mention faith and family sequentially before football.

“The positivity that Dungy and Bill Polian spoke of was something that I’d never heard before,” Jackson says.

“They emphasized our role as a man in the community, our faith and our relationship with God. I was hungry for something that I didn’t know that I was starving for.”

In his second year in the NFL, Jackson created The Fight for Life Foundation.

As his football career was winding down due to injuries a few years later, he poured his passion into Fight for Life. Jackson made a commitment to himself and God and moved forward on his social entrepreneurial path.

Life. “It provides kids with a common language to express core concepts of accountability, integrity, self -worth and honesty. It also emphasizes the concept of volunteerism and being good citizens in their family, school and community. For many of these kids, these are concepts that they are not being exposed to at home.”

Implementation happens in the classroom with a comprehensive curriculum that is age appropriate. The programming may be implemented from Pre-K to 8th grade and is currently in six schools. A plan is in place to roll it statewide in the next year, with the ultimate goal of nationwide impact.

The first pilot for the program was adopted by Jackson’s alma mater,Musser Elementary. Early adopters in Indianapolis include Pike Township, Phalen Leadership Academy and IPS. “Fight for Life provides teachers with a program that allows students to feel seen, heard and valued every day,” Mitchell says.

“In today’s society, we must create treatment programs for the opioid surge, but more importantly: prevention,” adds State Senator Jim Merritt. “Marlin’s Fight for Life program is exactly what we are in need of because prevention is a much-needed part of the solution. With prevention programs like Fight for Life, we all benefit.”

For each $1 dollar spent on Social Emotional Learning programs, the return is $11 in total economic benefit to society.

wonderful. And in the home garden, where our small batches of food are grown, the organic path is easy to accomplish. Besides, who wants a GMO seed with Salmon DNA in your homegrown tomatoes? Yuck!

This is an excellent month to search seed catalogs and find the type of plants you would like to begin indoors in the month of February. In Indianapolis, we are in Zone 5b. Hoosiers begin ‘sowing’ (placing seeds under the soil) seeds indoors around February 15. You can begin with your ‘cold crops’ like Kale, Spinach, Kohlrabi, Cauliflower, Broccoli, Cabbage and more. These veggies are called cold crops because, you guessed it, they love the cold. Cool, fun fact, did you know Pansy flowers are in the Spinach family and are also edible? They are a cold crop too and you may begin sowing Pansy seeds really early.

Organization is the key to excellent seed germination and success. Keep a journal and a garden calendar. Note when you started and when you see the first leaves emerge. The back of your seed envelope will have all the instruction you need, so keep them for further seasonal instructions.

Add southern-inspired fried chicken establishment to Patachou Inc.’s diverse, growing list of restaurants and cafes throughout Central Indiana.

Throughout culinary school in Paris and an internship at a renowned restaurant in Copenhagen, David’s affinity for simple, savory fried chicken remained, and in 2016 he teamed up with Martha and the rest of the Patachou Inc. staff to develop the Crispy Bird menu and concept.

The Indianapolis-based company, which boasts six popular Café Patachou locations and was founded in 1989 by Martha Hoover, started formulating the idea for Crispy Bird, a casual, southernstyle restaurant concept, a few years after Hoover’s son David found himself trying to recreate the tasty fried chicken sandwiches he would pick up in Los Angeles, while

The eatery, located at 49th and Penn directly across from Patachou Inc.’s Napolese Pizzeria and flagship Café Patachou, officially opened to the public on December 7. The interior seats 56 and features a visual aesthetic that, much like the menu, is simple with a few interesting touches, including an abundance of blonde wood paneling complemented by black and white furniture.

Don’t let the simple moniker and straightforward concept fool you – Crispy Bird certainly puts a unique twist on fast, casual, southern-inspired cuisine.

To achieve its distinctive fried chicken flavor and texture, Patachou Inc. is sourcing from LaGrange-based Gunthorp Farms for American Freedom Rouge chickens – a heritage breed that has not been raised in Indiana for 40 to 50 years, according to Barnas. As executive chef, David brines the GMO- and antibiotic-free chicken overnight and then fries it in duck fat, adding spicy aioli, coleslaw and pickles for his fried chicken sandwiches.

“We like to say it’s fried chicken with a

pedigree,” Barnas says. “It’s carefully raised and bred in the most natural and organic way possible.”

Mini pork tenderloin sandwiches, country ham, grilled chicken breast and whole cauliflower with lemon aioli are also available on the menu, and side items include salads, grits, mac and cheese, blackeyed peas and pommes purée (Frenchstyle mashed potatoes). Soft serve, Hoosier pie and an apple maple ice cream tart help round out the dessert options, while wine, craft beer and cocktails are also available.

“It’s all simple things that are southern inspired but have unique twists on them because of David’s classic training and

background,” Barnas adds. “They’re twists on southern classics, elevated a little bit.

And they’re all absolutely delicious, unlike anything I’ve ever tasted.”

Last year was one of considerable expansion for Patachou Inc., as 2017 also included ongoing construction of a second Public Greens location at the Fashion Mall at Keystone (expected to open in the spring), and the launch of One Fourteen, a luxury microbar and dining room adjacent to Napolese on 49th Street.

McDonald’s restaurant on Broad Ripple Avenue has taken the notions of customer convenience and prompt service to a level not seen in many fast-food establishments.

In November, the restaurant hosted a grand reopening celebration after the completion of building renovations and installation of self-service touch-screen stations that allow customers to order and pay for their food electronically. Governor Eric Holcomb and former Indy Mayor Greg Ballard were in attendance for the event.

Renovations began in the early summer of 2017, and Shift Manager Donovan Wilson says the changes to the restaurant are indicative of what most, if not all, McDonald’s locations will look like in the future.

“It’s something that, eventually, will go to more than just this one here in Broad Ripple,” Wilson says. “It’s a new look that McDonald’s wants to try everywhere. We’ve noticed business has picked up since we opened back up with the renovations. It’s nice on the inside, and we have flowers on the tables now and then. When you dine in it’s more like an actual restaurant now.

The self-service ordering process via touchscreen involves first choosing dine-in or takeaway, selecting a payment method as well as food and drink items, confirming the order and finally picking it up from an

employee.

Rather than causing a drop in demand for workers, Wilson says the self-service option allows for more customer volume, which has a twofold effect – creating the need for additional food preparers in the kitchen, while freeing up new opportunities for existing employees who previously worked the cash registers.

“That’s kind of the reason (self-service kiosks) were put in, to give different jobs to people who work here like doing tableside service,” he says. “And since we have more places for people to order now with the selfservice, more people are coming in, and we need more people in the back making food.

It’ll take time for customers to get used to it, but I just consider it like a self-checkout that more and more big stores have now. It makes McDonald’s a little bit fancier.”

Owner Reginald Jones said during the grand reopening event that the decision to implement self-service technology is part of his philosophy of generating new opportunities for employees to expand their 22 / BROAD RIPPLE MAGAZINE / JANUARY 2018 / atBRip.com

skill sets, thereby improving their chances for upward mobility and increased pay in the workplace.

“We try to partner with other people in the community and work with our employees to help them buy homes and help them become financially secure,” Jones said during the event.

Since 2015, several McDonald’s restaurants throughout the country have incorporated the self-service option, as well as mobile ordering via smartphone application, and Wilson says the renovations and new technology at the Broad Ripple location have been met with primarily positive feedback from patrons and employees alike.

“It’s a nice change,” he says. “I can see all the McDonald’s one day being full, actual dine-in restaurants.”
