rentley Combrinck, 25, doesn’t play around — at least when it comes to rugby. While traveling through America with friends, the South African native met with a fellow countryman who was playing for the Louisville Rugby Football Club. After meeting with the club and players, Brentley moved to Louisville temporarily to play, then returned permanently two years ago. An employee at Rueff Sign Company, Brentley says the city has everything he wants, including a good game of rugby. Read more about him on page 26.

...Be more bike friendly. I saw a guy in a car intentionally hit a guy on a bike on Bardstown Road. That goes beyond general harassment. …Not change its small-town feel. I like going places and seeing people I know and stopping and talking.

A ‘99 black Jetta. I was stuck in water at 2nd and Broadway in the flood a couple of years ago. A guy from WHAS 84 radio and a homeless guy helped me out. The radio guy wanted an interview and the homeless guy wanted an Egg McMuffin.

That wasn’t coffee? I guess that would be art supplies.

Missed out on in childhood:

We lived in suburban New Albany. There weren’t any neighborhood kids to play with.

KEXP, out of Seattle. I listen to it on the internet. The radio in my car is stuck on NPR.

In the kitchen:

I make a mean wild mushroom omelet. We have a small sauce and salsa garden with tomatoes, peppers, onions, and eggplant. And we grow our own herbs. That has been life-changing.

Biggest issue facing America today:

Left and right. There is such a lack of rational discourse. We can’t even talk. Everything is black or white, so nothing happens. There is no place to start.

Survival Skills: The People Business

Daniel Dabney

I

n some ways, a church and a business are a lot alike. They both want to grow and expand the number of people involved, and they want to spread their message to anyone who will listen. Daniel Dabney, pastor at Southeast Christian Church, shares what he has learned about leadership as well as how a church’s growth is much different than a business’s, because, according to Daniel, “it’s not about us and what we do, but about the message we hold out — that there’s a way to know God. The church doesn’t belong to us.

We belong to the church.”

Rule #3: Rely On Others

Daniel believes the best thing he can do as a leader is invite his staff and the young adults they serve to take responsibility for the ministry.

“It’s surprisingly not hard to let go. We don’t want to be staff-driven,” he says.

“I can’t imagine not having people around me to speak with about things. If you fly an airplane one degree off for a while, you’ll end up way off.”

Daniel loves to see young adults take on leadership roles in the Post ministry, and he has a “high level of trust” in his staff to set their own schedules to get everything done. He is also intentional about getting the members involved with other ministries at Southeast. “(Young adults) are realizing for the first time that they can impact younger generations while looking forward to the next generation, so we kind of have our hands outstretched both ways.”

Rule #1: Meet People Where They Are

A business typically wants to draw talented, like-minded people for its benefit, but Daniel’s job is to leave the church to seek out people, no matter who they are or what they think of the church.

“For me, I have to make sure I’m outside the church walls,” he says. “Louisville has thousands of 20-somethings, and many of them don’t have a personal faith, much less a relationship with Jesus Christ. That should change the way we live.”

Daniel is pastor of the Post ministry, which is for college-age and 20-somethings, and Daniel says that age looks different for each person because one 24-year-old might be married with a child, one might still be in school, and one might be living in his parents’ basement and looking for a job.

Meeting young adults means that Daniel, aged 32, often isn’t in his office or even in a sanctuary, but rather is meeting students for coffee in the middle of the day, opening his home for Bible study in the evening, or even putting on carnivals and art festivals as the Post did this past summer in place of its regular worship services.

“Sometimes ‘having church’ could be playing Frisbee on the Waterfront or serving someone in need,” he says.

As much as ministry has changed the way Daniel lives, he cautions against letting his role as pastor define his sense of worth.

“One of the biggest challenges of my job is not finding my identity in it,” he says. “My identity is in Christ; and my family — my wife and my sons — is my first ministry. It’s easy to slip into trying to be fulfilled by ministry because you love what you do so much or feel the weight of it all or want to make a difference.”

Daniel acknowledges that it is a struggle for working people, especially men, to get wrapped up in the importance of their work and pour an unbalanced amount of time into it.

“It’s hard to find rest and solitude because most people would agree that ministry is a good thing, so it’s hard to say no,” he says. “There’s always something to do or someone to see. But Jesus disappeared on the mountain to pray sometimes, so it’s okay to push the pause button every once in a while.”

Rule #2: Your Job Is Not Your Identity

Although it’s disappointing for most companies to have a talented employee leave, Daniel loves to see others go on to new things.

“This age group is all over the map — where they live, what they’re doing, and what they’ve been through,” he says. “They’re on a quest. We see them grow and see doors open for them, and we celebrate sending them out.”

Daniel says that although God has called him to work for the church, he is excited to encourage people in school or the workforce to spread the message of God’s love and salvation.

“We’re all invited to be followers,” he says. “I’m not a follower of Jesus because I’m in ministry; I’m in ministry because I’m a follower of Jesus.”

James Markert knows about summer sun, sweat and sports — and he just learned more about making movies. He wrote the screenplay for Tan Lines, a comedy about a tennis pro who leads a team of misfits to victory.

This summer, the movie was shot mostly at the Louisville Jewish Community Center, and we can see it on screen in fall 2012.

James is a local author and a professional tennis coach.

e love having our photography studio at The Pointe! In finding our space, we also got to meet Aaron Tasman and his brother, Barrett, who are partners in Tasman Properties Group. They renovated The Pointe in Butchertown that was once a shoelace factory. It’s a creative space for 18 different businesses, including The Alley Theatre, and the brothers are even creating more retail space. Aaron has created a Butchertown economic boost as well as a home for creative professionals.

Women should be aware of the symptoms of ovarian cancer: pelvic and abdominal pain, bloating, difficulty eating, pre-menopausal bleeding between periods, post-menopausal bleeding, change in bowel habits, weight gain/loss, and urinary urgency or frequency.

When Brian Causey’s mother died only 27 days after being diagnosed with ovarian cancer, he channeled his anger and pain into spreading awareness about the aggressive, often overlooked disease. His book Please God, Not My Mother is a warning to women everywhere to listen to their bodies.

And, because of his over-the-top-crazy fan attitude, he won a sleek, black 2010 Volvo S60 from Volvo’s Biggest Fan of the Big East contest. Dale Benedict, owner and founder of the Training Studio in St. Matthews and downtown Louisville, practices the fit lifestyle that he preaches. He says that helping his clients meet their fitness goals is hands-down the best part of his job. And he has personally finished multiple halfmarathons, marathons, and Ironman competitions.

Justin explains that the mounted police unit’s main areas of responsibility are crowd control, detail on special events, and patrol of neighborhoods with high crime rates. The officers help out with children’s programs, including an event for the Kentucky School for the Blind. “It was very captivating to see how these children experienced horses,” says Justin.

“Fresh”

If there is one word to describe the fruits of Franklin Deutsch’s labor, this is it. Deutsch Farm, a four-generation family farm, provides its customers with the freshest fruits, vegetables, and baked goods at four local farmers markets. If you meet Franklin at one of these markets, look out for his grandma’s famous fruit pies. “People get a smile on their face when they find an 89-yearold woman is making pies and selling them for a mere $8 apiece,” he says with a laugh.

Despite what the band name Slithering Beast might sound like, Nick Dittmeier is neither slithering nor a beast. He’s a genuine and talented guy whose Louisville-based band has welcomed success throughout the Midwest, as well as a very close new band member — his dad. “We have a good time playing together,” Nick says.

We Found Outback Jack Remember the 2004 reality TV show Outback Jack? The winner of the Bachelor-style show was Louisville’s own Natalie Franzman, who won the heart of Aussie Vadim Dale. Since the couple married and moved to Louisville in 2005, Vadim’s taken to Kentucky like a wallaby to woods. He says he and Natalie were blessed to find each other, and they now have three daughters: Hunter, 4; Eden, 3; and Chloe, 1. And Vadim is now an officer for the Louisville Metro Police Department, which he says is the best thing to happen to him besides his wife and children.

ave Thrasher’s workdays are as colorful as the murals he’s painted all over downtown New Albany. “There is nothing typical about my work day,” he says. “One day you might find me trying to figure out how to stripe a light house, and the next I might be demonstrating to YMCA summer campers the process of making stencils. Sometimes you find me 80 feet in the air theming a water slide, and sometimes I’m reflecting in my studio.”

Dave has created art for the Louisville Zoo and is currently working on a mural in New Albany for Schmitt Furniture’s 75th anniversary.

Daniel Lowe, CEO and president of Blue River Services, thinks so. “I think exercise and making time for things that keep you healthy make you a better leader and CEO,” he says. Of course, he also mentions hard work, preparation, and being able to surround oneself with quality people.

Daniel makes time for working out twice a day if possible, and enjoys running through Seneca and Cherokee Parks with his running group. The group recently ran the Triple Crown and the Mini Marathon together. For Daniel, being a leader is about staying sharp mentally and physically.

With his developments such as The Mercantile Gallery Lofts, Cobalt MarketPlace, The 301 Building, Preston Pointe, and The Iron Quarter, Todd’s visionary goals led him to be one of the founders of the dialogue to build the downtown arena. He also participated as a board member of The Louisville Arena Authority.

Southern chic, elegant and relaxed…

Nick Valvano, a senior at the University of Louisville, plays ice hockey for the Louisville Cardinal Ice Hockey Club. He is working three jobs, including a bocce place where he bartends and teaches people to play bocce, but we were most intrigued by his training in cooking Italian food.

“I wish I could say I could cook some awesome Italian dishes, but I’m still kind of learning. I just learned how to cook “the sauce” from my 91-year-old grandmother — a right of passage for any Italian young man. It sure ain’t as good as hers, but it beats Prego!”

He’s among the best dressed in Louisville, but his creative energy extends far beyond his attire. Josh Merideth, acclaimed photographer, has several fashionable projects in the mix. Haberdash and Hound, his fine American bow tie company, is working on a new line of hand-crafted bow ties. Josh just ventured into the publishing world with the release of his book, Original Makers Club, featuring 50 top local businesses. “This is where you eat, where you shop,” he says.

e calls her the most compelling character in the world, and he’s loved her since he was very young. She is the ocean, and he’s dedicating his life to protect her.

Located about 250 miles south of Ensenada, Mexico, Guadalupe Island is considered one of the best sites in the world for finding great white sharks.

There was a time in Chris’s life when fishing meant catching the “big one.” As a competitive big game angler, Chris spent countless hours at sea, hoping to catch a fish bigger and badder than the last one. But that isn’t his life today.

With two seasons of the National Geographic Channel’s newest hit series Shark Men under his belt, Chris is no longer fishing for the big one. Today he fishes for science.

“The ocean is out of balance,” he says by phone from his Park City, Utah, home. “She needs our help. We want to use this show to pour the ocean into people’s homes, so they care and are aware of what is going on at sea.”

The most visible aspect of his life’s work is the NatGeo show that follows Chris, his team, and shark researcher Dr. Michael Domier as they catch live great white sharks, raise them from the sea on a platform called a cradle that was adapted for this task, collect data, outfit the sharks with tracking devices, and then set them free.

“We are doing this to give back to the ocean, not to have fun,” he says with an inspiring conviction. “Fishing for big game is fun. There’s no fear of your peers being killed. I cannot overstate how difficult and stressful this work is. This is not for adrenaline junkies. We take great care to ensure the shark’s safety, as well as the safety of our crew.”

Chris never dreamed of being a television star, and his work is much more than what you see on TV. “I spend 45 to 100 days at sea in a given year, but the rest of my time is spent leveraging the information we collect to advance science and have a positive impact on global policy.” Through his nonprofit organization, OCEARCH, Chris works for a balanced, science-based approach to rebuild, sustain, and conserve our living marine resources.

His first order of business is to educate audiences around the world about sharks so that they will come to understand what he has learned: Sharks are the fabric that keeps our oceans balanced and healthy. They control fish populations and do what they can to keep things clean (they cannot clean up after us, unfortunately).

But, of the roughly 400 species of sharks recognized today, more than 200 are listed as endangered, including the great white with an estimated worldwide population of about 3,500.

Orcas, or killer whales, are a natural threat to sharks, but the shark’s biggest threat is man.

Pop into a Taiwanese or Chinese restaurant anywhere in the U.S., even here in Louisville, and you can find shark fin soup on the menu. It may be a traditional delicacy, but acquiring those fins is a “grotesque practice,” says Chris. Each year between 70 and 100 million sharks are hunted, their fins hacked off with hot metal blades, and their helpless bodies thrown back into the sea where they slowly die.

In early June, Chris posted to the Shark Men Facebook some “devastating” news: he’d received a report of a great white that was caught in the Sea of Cortez, finned, and sold for meat. He worried it was one of the sharks the crew tagged several years ago.

“Amy” was believed to be pregnant and likely went to the Sea of Cortez to deliver her pups.

It turned out that the shark in question was not Amy, and days later Chris posted news that Mexico had agreed to halt shark fishing between May and August — when birthing season is in full swing.

Misinformation about these ocean giants and lack of visibility of their plight make it difficult for people like Chris to get support for this issue. “It’s out of sight, out of mind,” he says. “There are shark carcasses littering the ocean floor. But people don’t see it. We can’t allow a few countries to steal the world’s sharks for soup.”

Because shark “finning” can be profitable (in 2009, a pound of shark fins could fetch $300 in the retail market), commercial fishermen generally pay no regard to the species, age, or size of sharks caught.

At-risk species continue to be hunted, wiping out entire populations in some regions, putting our entire ocean into jeopardy. And it’s oftentimes wasteful. Sharks can provide a valuable protein source, but the practice of finning leaves 95 percent of the shark behind. Last year, Hawaii became the first state to outlaw possession, sale, trade, and distribution of shark fins.

“If this was happening to a terrestrial creature, people would be in an uproar. Imagine if this was happening to birds. Let’s say bird wing soup was a delicacy and wingless bodies were left

His love for the water and its inhabitants was born here in Louisville. The youngest of five children born to George and Mary Lee Fischer (and brother of our Mayor Greg Fischer), Chris grew up along Kentucky’s waterways.

Each year the family visited Marco Island, Florida, on the Gulf of Mexico. Chris fondly remembers fishing with his family from dusk to dawn. Eventually he would make a name for himself as a competitive fisherman and host of ESPN’s Outdoor Adventures — a show that took viewers deep sea fishing and was a little bit travel show, a little bit documentary, and allowed Chris to talk about his real passion: marine conservation.

With his own show airing in more than 200 countries and translated into 24 languages, Fischer’s ultimate goal is to be the next Jacques Cousteau — a household name that can literally change the world.

“It takes a higher level of mental toughness to really excel during a match,” says Alex McLaughlin. Alex, who has been playing for 10 years, lifts weights or bikes for 20 miles daily to keep his body in good condition for the sport.

For some of these guys, the sport carries greater significance. Brentley Combrinck became interested in the sport when his native country of South Africa competed in the 1995 Rugby World Cup for the first time. “We were banned from competing internationally due to apartheid.” He adds, “Being a young boy at the time, I didn’t know much about apartheid, but knew that being able to play and win the world cup that year was a big deal for our country and its people in its rebuilding process, and that put a kind of golden aura about the game for me.”

The team, which competes in the Midwest Rugby Union, has their home matches at the rugby/frisbee field at Cherokee Park but also play in Ohio and Indiana. They have eight games during the season including playoffs based on their number of wins. The cost is $35 per year to register with USA Rugby. Block, cut, alligator, chill: This is some of the common slang shared among those who play Ultimate Frisbee. But the true communication starts on the field. Playing the game is about more than merely tossing the disk through the air. You need to understand the direction of the wind, have excellent coordination and speed to reach the end zone.

Teammates of Louisville Ultimate Frisbee Association say they are attracted to the fun and liveliness of the sport. Roger Buch, summer league coordinator of Louisville Ultimate Frisbee has been playing for 33 years without skipping a beat. “It is such a laid-back sport, because it is self-officiated.”

However, teammates are expected to show good sportsmanship at all times. “You can get a foul called on you for exhibiting a bad spirit of the game if you spike the disk or taunt someone,” says Buch. The league has a 20-game, 10-night season scheduled for the summer and sponsor a traveling men’s team called LouEVIL. All of their leagues end with a tournament. Jim found his passion when he was a nuclear reactor operator in Seattle where he and his wife lived. “I started going to the American Opal Society Show (no longer in existence), as well as other gem shows and buying vials of rough opals.”

13 Things That Inspire Jim Jackson: 1. Making people happy. This is my main motivation. 2. Unusual stones and designs. For instance, the pave dome Paraiba tourmaline ring. This is the first gemstone found to be colored by copper. Nothing rivals any stone found in the Paraiba mine in intensity and color. This stone is exceptionally rare! Regarding an unusual design, a necklace designed

by Elizabeth Taylor, for House of Taylor, uses pastel stones like blue topaz, aqua marine, rose quartz, and diamonds. 3. Santa Claus. We call him “the boss.” Most of our year is spent gearing up for the Christmas season, our busiest time of year. 4. Learning new techniques. I was told early on to work on the technique I liked the least till I got good at it. The reasoning was that as you got better, you grow to like it, because usually you like the things you’re good at. As you go on to other techniques, you end up liking them all...then you look forward to finding things you’re not good at or have never done before. 5. Using tools and machines like CAD (Computer Aided Design). Using CAD, we can design jewelry on the computer and see a clear picture of it. Then we use the milling machine to cut a wax model of the piece. This is much faster and precise, opposed to carving a piece by hand. Changes can be made with much more ease. The computer-designed piece comes out perfectly. 6. Very simple patterns...like this round diamond ring with cabochon sapphires.

Sometimes the simplest things are the hardest to set well. You can see the imperfections more, so it has to be more perfect. If a piece has a lot of embellishments, you can hide the imperfections. If you want to display the stone, make it simple. 7. Very intricate patterns such as this antique pin. It is filigree platinum with rubies, emeralds, diamonds, and yellow and blue sapphires. It is a lot of work! Instead of displaying the stones, this design is more about the intricate patterns, finishes, and techniques. This pin is exquisite work rarely seen in this nice combination art deco piece.

8. Harvey Joiner Paintings. I like them because they are serene, draw you in, and are almost mystical. Joiner is my favorite Kentucky artist, although he is deceased. 9. Cooking inspires me because I like to experiment and I like to make people happy. I cook for myself, my wife, and my dogs. I will work on a recipe till I’ve got it down. I have a chicken soup for sick people and one for well people. 10. Opals are one of the stones you don’t have to do anything to it to make it beautiful. I started with opals. 11. Cashews.

I started putting cashews out on the counter, and it became a tradition.

12. Spaghetti carbonara from Vincenzo’s Italian Restaurant. It’s hard to get it right. Vincenzo’s does a good job of it, and that is very inspiring to me. It started as a breakfast dish made for the Italian army. You should also try Vincenzo’s ricotta cheesecake and their chocolate mousse torte.

13. My dogs Teddy, Winston, and Shadow. They are Pomeranians, and they like my cooking. I cook breakfast and dinner for them. Usually I cook Laura’s Lean Beef and mix it with their dog food. Or sometime I cook them chicken breast, or all beef bologna and mix that with their dog food.

The Men in the Wedding

Andrew was the first friend of my fiancé Mike’s that I met. They were living together in an apartment — a gross, cluttered apartment. Anyway, Andrew was stand-offish, sarcastic, and kind of a jerk. It’s not that Andrew has changed, but over the years, I have grown to understand and love Andrew for who he is. He’s a Virgo, like me, and he has a great curiosity for the world around him. After my experience with Andrew, the other relationships with Mike’s friends (now groomsmen) came easy. In my opinion, romantic relationships are between more than the two people in them, and the effort to make the exterior people a part of your life is a significant part of maintaining a relationship.

With groomsmen, I think of three things: tuxes, the bachelor party, and food. Instead of the typical black tux attire, I chose gray suits for the men to wear. While the suits are still formal, they bring a casual undertone to the wedding. As for the bachelor party, I wish I could say, but it is a surprise that my fiancé’s brother Brian has been planning for months. These groomsmen love to eat, so food has been a high priority as I plan my wedding. The challenge is to find quality food in abundance for a reasonable cost.

Men Who Cook: We Wish They Lived With Us

One man cooks in Kentucky’s only AAA Five Diamond Awarded Restaurant, another has brought Latin food to a new level in his own restaurant, and the third man cooks and then delivers. Could we have found more perfect men to live with?

Although it’s a given that the above list would be among the food in the kitchen of a fine dining restaurant such as The Oakroom at the Seelbach Hilton Hotel, you might not expect to see the selections tattooed on the arm of the restaurant’s chef de cuisine Bobby Benjamin.

The revelation occurred innocently enough at the tail end of my recent phone interview with Benjamin after I’d spontaneously asked if he, like his wife Hanna Dozier-Benjamin, had any prominent tattoos.

Today’s Woman readers will recall that Benjamin’s lovely wife graced the cover of our April 2011 Derby issue, sporting a multicolored floral-themed tattoo on her right shoulder which actually runs partway down her right arm.

“What’s still missing apart from the food that I just mentioned?” replies a very friendly Benjamin with a laugh.

“Ohhhh, I’ve still got 40 more vegetables” — that’s right, he said 40 — “that are coming on my arm,” he says matter-of-factly. “I’m putting everything on there at some point…like full-bloomed squash blossoms on top of my shoulder that will wrap around my arm,” Benjamin’s voice now taking on a somewhat dreamy tone as he describes his future body art.

Benjamin’s unforgettable answer brought to an end an interview begun 30 minutes earlier with my asking how, of all the culinary schools in the United States, the now 31-year-old Rhode Island native ended up going to Louisville’s Sullivan University.

“I’d heard great things about Sullivan, which is ranked third in the nation,” Benjamin began, “and I graduated early from the 18-month culinary arts program because I took more hours than required.”

Upon Benjamin’s graduation, he moved to Los Angeles for a little over a year, where his career took off full-throttle after being employed by not one, but two well-known restaurants at the same time: La Terza, run by Chef Gino Angolini (“where every ticket was printed in Italian!” Benjamin mentions) and Wolfgang Puck’s Spago.

“I was the only American in the kitchen at La Terza, and it was where I learned how to make fresh pastas and sauces,” he recalls.

“It was a great experience working under Chef Gino Angolini. I also didn’t have a vehicle at the time, so Wolfgang’s chauffeur would pick me up from La Terza and take me to Spago,” he continues. “I worked six days a week, and on my day off I went to as many restaurants and farmers’ markets as possible.”

Both La Terza and Spago did “high volume,” Benjamin adds, “La Terza’s kitchen being smaller and Spago’s being the size of a football end zone.” As to what else he learned during his time with the two restaurants, Benjamin answers: “Professionalism.

For example, we had to be clean-shaven, and also had to take our apron and chef coat off if we left the kitchen or went to the restroom.”

As to the changes Benjamin brought to The Oakroom since becoming its chef de cuisine just before Derby week 2009, he explains: “Knowing where the ingredients come from is very important to me. I buy local when possible, but I do a lot of research to ensure I’m using the best products possible. I’ve also changed prices to ensure we are comparable to other steakhouses in the city. And I’ve reorganized the kitchen to make it more efficient so that guests would get their food in a timely manner and the back of the house would run smoothly.”

Speaking of “organization,” when I wonder aloud if the atmosphere in The Oakroom’s kitchen for Benjamin and his staff of three is controlled chaos or something similar, he chuckles to himself, then declares: “When you walk into my kitchen, the first thing you notice is that everything is extremely organized!

(she’s the office manager at Merkley Kendrick Jewelers in St. Matthews) in that they both happen to have the same days off.

During the week, he admits, the two rarely see one another.

“She leaves for work before I get up and is asleep when I get home most nights,” he says. “We both love food, so on our days off we love going out to eat, like brunch with a mimosa at Wild Eggs. And Anthony Lamas’ Seviche is a great date night! We also like to go to BBC for some beers and relaxing. There are just so many great restaurants in Louisville with talented chefs, although unfortunately a lot are closed on our days off.” The couple’s days off might include watching a movie at home “cuddled up with our fur baby, Bella the Bulldog,” he adds.

Finally, just before Benjamin’s interview turns to the segment about his tattoos, I ask him to reveal the number one bit of information he’d share with someone who’s considering embarking upon a career as a chef — information that can’t be taught in a classroom.

His answer results in my audibly groaning, as I know it’s only the tip of the iceberg of what Benjamin’s career entails.

“In one word: perseverance,” he replies. “You will work a million hours and give 110 percent all day, every day.”

To give you some idea of how anal I am, we keep all our spices in alphabetical order on the shelves. And even though the four of us laugh a lot, we are also extremely serious about what we do. One of my cooks, Jonas — he and I rub off one another personalitywise very, very well.

“If I get very tense about something because I’m suddenly feeling the pressure, Jonas will crack a joke, which causes all of us to laugh.”

Benjamin says The Oakroom’s most popular menu selections are “the pecan pie, which is a popular start. And the diver scallops and the prime rib-eye are both popular entrees.”

And ‘Teaching!’ was his enthusiastic response when asked the favorite part of his day-to-day Tuesday through Saturday work schedule.

“I love to see people growing and progressing. I teach them proper techniques such as giving them an ingredient and using 100 percent of it, not throwing anything away, and doing at least 12 different things with one ingredient,” he explains. “I also teach business because you can cook the best food in the world, but it doesn’t matter if you’re not making money. This is a business, and food costs, labor, etc., matter.”

“Hanna jokes that she married me because she can’t even boil water. She’s passionate about food, but not cooking. Sometimes I cook at home, and Hanna did attempt it for a while. “It’s a dream having my own restaurant. When I was a kid working in restaurants whenever an article would come out about my boss I would cut it out and save it, telling my mother how proud I was about it. And now to see myself in articles, my mother says, ‘look, son, now I have these (articles) to cut out and save about you!’ ” ­— Anthony Lamas, sitting in the lounge area of his restaurant, Seviche.

Anthony Lamas of Seviche: Hot…Hot…Hot! When You’re Hot, You’re Hot! is the title of a 1971 hit song by the late country music singer/songwriter Jerry Reed. And in case you’re wondering whether I’m exaggerating by utilizing Reed’s song to describe Seviche restaurant’s chef/owner Anthony Lamas’ career at the moment, consider the following: To date, Lamas has created five dinners for The James Beard House in New York City.

The producer of Sara Moulton’s Sara’s Secrets show on the Food Network (who was a guest at one of Lamas’ James Beard House dinners) enjoyed his meal so much that Lamas was immediately booked to create a Latina Fiesta dinner on Moulton’s show.

In 2010 and again in 2011 Lamas was a James Beard House “Best Chef Southeast” semifinalist.

Airing August 11 at 10 p.m., Lamas is one of three chefs com­ peting on the Wild Wedding Cook Off episode of the new Food Network show Extreme Chef — which, according to the Food Network, “pushes (chefs) to their physical and mental limits by testing their wits, adaptability, and artistry in extreme conditions.”

“It’s like the Grammy Awards of the culinary world,” the high-energy and very friendly Lamas explains at the top of his phone interview, after asked to put in simple terms what being associated with The James Beard House means to a chef’s career.

Somewhere on the walls within the Manhattan-located James Beard House, Lamas adds, “is a quote from the late Julia Child, which reads ‘The James Beard House is like having Beethoven’s house as a center for musicians. Because Beard’s house is as important to food people as Beethoven was to the music world.’”

Lamas, whose father is Puerto Rican and mother is Mexican, grew up in California cooking in the kitchen alongside his grandparents and uncle in the family’s Spanish restaurant.

“And when I moved here in 1992, Louisville was just starting to make some noise in the culinary world, and we started making a difference as a city known for its restaurants,” recalls the chef/ restaurateur. Seviche is going into its sixth year and is also in the same building as Lamas’ previous restaurant — Jicama Grill (20002005.) At the time of Lamas’ interview, Seviche had just reopened after extensive renovations.

“Six months ago when the record store (earXtacy) that was connected to us moved out, we took over half of their 8,000 square feet,” he says excitedly. “Renovations include a new private dining room that seats up to 60 people, and a new lounge. Now the look of Seviche is a ‘wow’ factor and matches the food!” he declares.

It was “true love” that relocated a 24-year-old Lamas from San Diego to Louisville in ’92, after having met and fallen in love with Louisvillian Samantha Gaddie. When Gaddie returned home, Lamas followed — having already apprenticed with some of the top names in the culinary world, including his mentor, Jeff Tunks of the Loews Coronado Bay Resort. Under the tutelage of Tunks, Lamas began exploring West Coast flavors while developing his own Pacific Rim recipes.

He mentions: “What really helped me publicity-wise since Seviche opened was that a lot of food critics’ write-ups about my food contained the remark: ‘Nuevo Latino-style is not just a New York thing. Anthony Lamas brought ceviche to Louisville, Ky.‘” “But I didn’t invent ceviche cuisine,” he adds, describing it as a cold dish of Latin American-style cuisine. “It’s kind of like a seafood salsa. You take a fresh fish, or lobster, or shrimp, etc. and marinate it in lime. We have about 12 different ceviche selections at the restaurant.”

As to spelling his restaurant’s name with an “s” rather than a “c,” he explains: “I decided it looked nicer on a restaurant sign spelled that way, and the word is spelled with an ‘s’ in South America.”

Lamas laughs when describing his typical work week as “a labor of love,” since the restaurant is open seven days a week. “I didn’t go to culinary school to become a chef,” he continues.

“I didn’t do any of that. My lifestyle just took hold of me. I was self-trained. But I try to take Sundays off to be home with my wife, Samantha, and our three sons, 2-yearold Ian Cruz, 8-year-old Ethan Diego, and 17-year-old Nicolas Anthony.”

When Lamas is told that the women reading this article will want to know who does the cooking in the Lamas household, his unintentionally deadpan and rapidfire-pace “mywifedoesnotcookverymuch” response causes me to laugh as it sounds like one very long word.

“Samantha’s mom said that she was lucky to have married a chef,” he continues, without a hint of sarcasm in his voice, “because she did not do a lot of cooking growing up.”

As to what meals Lamas prepares for his family, he says: “I cook soooo not what I cook at my restaurant! I cook corn beef and cabbage, pot roast, meatball soups…one pot meals, which my family can eat on for days, because I’m always at work.”

With food like that at home, then why isn’t Lamas massively overweight?

He sighs. “My metabolism is slowing down in the last year since I turned 42.

I’ve got a bit of a belly now. But I do try to exercise as much as I can. But I do eat everything,” he admits. “I love pork belly, love bacon. But I’m on my feet a lot — always running around the restaurant doing something. I’m also very hyper. People who know me comment on how much energy I have. And although I’m 42, most people think I’m 32.”

Lamas says his restaurant’s patrons range “from 25 to 65 years old. And when you walk in, you almost forget you’re in Louisville…rather, Miami or Puerto Rico instead. The restaurant is a total expression of me,” he continues, mentioning that the Latin mood is enhanced by recorded music by such legendary Latin artists as Tito Puentes and Sergio Mendes. “To me, having my own restaurant is like having people over to my home.”

But there is still more to do, Lamas declares. “There’s still more to reach, like maybe having multiple restaurants, or maybe one in a different city like Nashville or St. Louis. But close-by enough, because I am a very hands-on chef. I like challenges and loooove what I do,” he says passionately. “I get a natural high out of it. Ian Ritchie of SoupBycycle:

The Long and Winding Road

Ever ask yourself the following question: “How can I create a hot dog cart business minus the hot dogs — and on my own bicycle?”

Well, Cincinnati-native Ian Ritchie, who’s lived in Louisville since 2000, “revisited that idea just last year,” he says, and SoupBycycle was his answer. “My wife and I came up with the SoupBycycle title during a brainstorming session,” begins the very affable 38-year-old Ritchie by phone. “For 20 years, I’d worked in somebody else’s kitchen and always wanted my own kitchen, so I’m getting closer!”

Why Go to the Doctor?

ey, guys! “If your wife told you she intended to drive her car many miles every day, but that she didn’t think she needed to change the oil, rotate the tires, or even take notice of what type of fuel she was putting in the tank, what would you say to her?” That’s the question Dr. J. Brent Benton asks his male patients. Benton is a family practice physician at Baptist Medical Associates. Benton said, “I tell them their body is a car and they don’t have the option of buying a new model, so they need to take care of the one they’ve got.”

When we asked our Today’s Woman of Wellness Health Advisory Group about the men in their lives, many responded that Rarely it’s hard to get guys to take care of themselves.

Dr. Benton’s advice Pay attention to belly fat. “It’s a very serious issue and is linked with high risk of diabetes and heart disease. Men need to walk for 30 minutes a day and should probably shoot for at least five days a week.”

Lighten up on the carbs. “I’m not advocating the Atkins diet, but men tend to do better with higher protein diets with lots of fruits and vegetables and as little in the way of starches as possible.”

Don’t skip breakfast. “Eat a healthy lunch and as little as possible for dinner. The bedtime snack is out of the question. You’re just getting ready to go to sleep and all your body is going to be able to do is turn it to fat, and it’s going to trigger an insulin response. Also if you have reflux disease, it will make that worse.”

Don’t Take Iron Supplements unless prescribed by a doctor. “Men should never take iron supplements unless they are diagnosed with a deficiency by a doctor.

Our diets are stocked with iron and men who take iron supplements can actually build up to toxic levels of iron that are damaging to the liver.”

Have an annual physical. “Prostate problems are very common, and addressing these is part of the yearly physical that a man’s primary care physician should be doing each year.”

Paul Schulz, MD, system epidemiologist and medical director of infection control at Norton Healthcare provided the following information for recommended health screenings for men, which can be found with more detail at the U.S. Preventative Services Task Force website.

• Men ages 45 to 79 (and women ages 55 to 79) should take aspirin for primary prevention of cardiovascular events when benefits outweigh harm.

• Men with average risk for cardiovascular disease should undergo screening for hyperlipidemia (high blood cholesterol and triglycerides) beginning at age 35 or age 20 for increased risk (for men and women).

• Adults with hyperlipidemia or other risk factors for cardiovascular disease (smoking, diabetes, and hypertension) should undergo intense behavioral dietary counseling.

• All adults should be screened for alcohol misuse, depression, and obesity.

• All adults with a blood pressure higher than 135/80 should be screened for type 2 diabetes.

• All adults should be screened for tobacco use and smoking cessation interventions should be utilized in tobacco users. Male tobacco users age 65 to 75 should undergo screening (typically an ultrasound) for abdominal aortic aneurysm.

• All adults ages 50 to 75 should undergo screening for colorectal cancer (typically colonoscopy). This may be indicated at an earlier age if there is a family history of colon or other cancers.

• Non African-American men should discuss prostate cancer screening with their primary care physician at age 50 and African-American men at age 40.

LET’S TALK ABOUT SEX If you watch a lot of television, you may be under the impression that as a man ages, sexual dysfunction goes with the territory. But Dr. Benton says, “Sexual dysfunction shouldn’t be considered normal at any age for men or women. In a young man (not taking a lot of medicine) it usually is psychological. In most older men, it’s physiological and a problem with the plumbing that includes damage to the blood vessels. A study a few years back showed that erectile dysfunction is a better predictor of blockages in heart arteries than chest pain.

“The ironic thing is that if men paid more attention to diet, exercise, and a healthy lifestyle; if they saw their doctor once a year and actually took his or her advice; if they didn’t abuse caffeine, alcohol, or nicotine; if they got treated early and aggressively for any hypertension, elevated cholesterol, and elevated blood sugars, then most really wouldn’t have any sexual problems to worry about in the first place. The medicines work for some men, but prevention really is the best medicine and a lot cheaper than Viagra.”

While sex is a very important part of life, Dr. Paul Schulz, system epidemiologist and medical director of infection control at Norton Healthcare, says, “The biggest infectious disease issue for young healthy men is sexually transmitted diseases (STDs).” He adds that monogamous people are not considered at high risk for these diseases, but those who are not monogamous may be at risk and should have behavioral counseling to prevent STDs and undergo screening for HIV and syphilis.

The Sensitive Man

Most people remember Cyrano de Bergerac as the brooding poet and musician who believes his oversized nose will keep him from the love of the beautiful Roxane. As Roxane leans on her balcony, Cyrano whispers his confession of love to the handsome Christian, who repeats Cyrano’s words to win Roxane’s heart. What most people don’t remember about Cyrano, however, is the fact that he was also a talented swordsman and dedicated soldier — a man’s man detail oft forgotten among his more artistic exploits.

We found three modern-day Cyranos right here in Louisville who bring a soldier’s confidence when it comes to advancing their craft and an artist’s sensitivity when it comes to making their work beautiful. And (unlike Cyrano) these men need no Christian to help them share their art with our city.

Is It Just an Act? Brantley Dunaway is self-described as “the guy who bridges the gap” between business and art. As both producer and actor, Brantley’s goal has always been to make a living as an artist, but he decided in graduate school that he wanted to be in the position to make his own art rather than depend on other people’s yeses. And in his role as producing artistic director and CEO of Kentucky Shakespeare, he’s getting to do just that.

“I spend equal parts of my day explaining business acumen and accounting to artists and explaining the creative process and esotericism to executives,” Brantley says.

Although Brantley has been in Louisville for only a year, he has taken up Kentucky Shakespeare’s 62-year-old mantle of enriching the community through performances and education. Brantley helps plan the school visits that reach 75,000 children each year, travels the country auditioning 3,500 actors for the summer’s Shakespeare in Central Park performances, and this past summer directed The Complete Works of William Shakespeare (Abridged).

Although Brantley has had his hands in TV, movies, music, and the stage, his philosophy about good acting is constant.

“An artist stimulates some sort of emotional response,” Brantley says. “Acting is a craft first and foremost. Especially in Shakespeare with the heightened language, it takes a lot of ability to project romance or dominance or deception and also inspire introspection and emotion from the audience.”

When asked how sensitivity factors into being a good artist, Brantley says: “I don’t think I’m any more sensitive than a heavy machinery operator. The only difference is that I’ve been taught and trained to express my emotions and reactions on stage. In fact, I think people in theater have to have thick skin because they’re told no a lot and don’t get paid much. You have to have a certain fortitude to live that kind of life.”

Brantley has been involved in the production of 50 national commercials, live music such as the Dave Matthews Band and Alanis Morissette, several dozen motion pictures (including Love in the Time of Cholera), and hundreds of productions on Broadway and in London and Vancouver (and Louisville, of course). But Brantley prefers the feeling of being in a theater — no matter how big or small — over any award or accolade he might receive.

“I would rather have those quiet moments when the curtain hasn’t gone up yet — when it’s still dark and everyone’s getting settled and people are getting ready to commune over a production together. That’s the witching hour for me. I’d take that over any giant hoorah.”

o Macho and Sensitive Our second Cyrano cites the old saying “no one wants to see how sausage is made” when it comes to the magic of how a radio station operates. But if Toto were to pull back the wizard’s curtain at WFPK, you’d see Kyle Meredith, music director and host of the Weekly Feed. Kyle is the man pulling the strings behind what makes the show to the airwaves, and with 73,000 songs (that’s 210 days worth of music) on his iTunes and dozens of CDs being mailed to him each week, he’s got more than one trick up his sleeves.

Even before Kyle had control of the radio dial, he remembers listening to his mom’s Tina Turner and Bruce Springsteen hits and hungering for the chance to make his own mixes and discover the next great song.

“I used to be the kid who would bug my friends and say ‘you’ve got to listen to this,’” Kyle says. “Now people come to me to ask my opinion.”

Although some of Kyle’s personal favorites include Pearl Jam, Fiona Apple, and Morrissey, most of his day is filled with listening to new tracks that will fit WFPK’s adult album alternative format. Kyle has no formal musical training and plays little himself, but he was born with an ear and what he calls “a strong need to listen to and discover music.”

“Finding the right song comes easy for me,” Kyle says. “Some people can look at the back of a baseball card and memorize all the stats instantly. I can sift through 100 bad songs to find something that blows my mind.”

Kyle’s criteria for “mind-blowing” cannot be distilled too finely, but if he had to pick out two things that usually mark a good song, his two priorities would be rhythm and melody.

“If a song has those two things, people are going to like it,” Kyle says. “There are great songs in every genre. You can go from ACDC to Hank Williams in three moves; you just have to know what to put in the middle.”

One of Kyle’s favorite memories of working in radio is having 10,000 people sing “Happy Birthday” to him at an outdoor concert he was a part of. His heartfelt response was, in turn, to moon the entire crowd from the stage. (Don’t get too excited, ladies; he kept his boxers on.)

And as for Kyle’s sensitive side? Like Cyrano, he thinks masculinity and sensitivity can go hand in hand.

“There are certain men throughout history who were artists and also known for being macho. Hemingway was known for being macho, but he brought out the sensitive side to a lot of things. People serious about music have to be more open-minded and ‘in touch with yourself,’ which is associated with being more sensitive.”

Today’s Woman

It’s About the Soul Lee Wade makes a living bringing beauty out of the mundane and even, on occasion, the unpleasant. Armed with a bachelor’s degree in industrial technology and an associate degree in technical illustration, Lee is a freelance illustrator and graphic designer who works primarily with medical illustration and medical legal drawings. “My specialty is drawing the weird stuff,” he says of his work, which sometimes calls for him to illustrate a blown-out aorta or an irregularly shaped organ for cases brought against physicians.

“The jury gets grossed out by medical pictures, and they don’t want to look at them, but the attorneys like me because I don’t make things too gross; I try to make it look pretty.”

Lee’s artistic vision extends beyond medical illustration as well. Lee says that he wanted to be an artist ever since he saw ads for art school in the cartoon section of the paper, but he was always too afraid to delve into the competitive world of commercial art. One drawing class in college, though, was enough to make his teacher ask him why he wasn’t pursuing commercial art, and later on, a few lessons at Schrodt Art Studio was enough to spark his interest in fine art.

“When I did my first oil painting, I knew I was going to be an artist,” Lee says. “It came so easy to me. The second piece I ever did was on commission.”

Lee goes about his artwork a little differently than most artists. Instead of rendering an image on a small scale first, Lee goes straight to the full-size version and then backtracks to figure out any problems.

He also prefers to paint with airbrush or oil first and then do touch-ups on the computer “so it still has my look to it,” he says.

Regardless of what he’s creating, though, Lee always wants his work to be both realistic and pleasing to the viewer.

“I see art in everything, even a perfectly rendered showerhead,” he says. “Art is what evokes emotion — but I want it to be a pleasant emotion. If I want to see a political statement, I’ll turn on the news.”

Although Lee says it’s tough work to make it as a freelancer, he has to embrace his sensitive side to make his art stand apart.

“I would define myself as a sensitive man,” Lee says. “I don’t know that you could put your heart and soul into something if you’re not sensitive. You have to put a little bit of yourself in things, even my medical stuff. You can tell when it’s technically good but you haven’t put your soul into it. If you can’t put your finger on what’s wrong, it’s because the artist’s soul wasn’t in it.” www.iamtodayswoman.com

Men’s Hairpiece Real

or

Fake?

Men with male-pattern baldness have the choice of using either invasive or non-invasive hair restoration methods for the look of fuller hair.

IF YOU Get a Hair Transplant Frank Pontrich hadn’t been concerned about his thinning hair until he saw photos of himself. “I thought, ‘Oh my goodness, my hair is gone.’” Frank’s hair had been thinning in the front and top of his head, but rather than wear a hairpiece, he opted for hair transplant surgery after meeting with Dr. William Parsley of the Waldman-Parsley Hair Center (310 E. Broadway, Suite 100, 502.585.5249). “What got me was when he showed me the before and after photos of his patients.

They looked just like me before they had the surgery.”

Dr. Parsley removed a horizontal strip of hair, usually half an inch wide and between 5 to 10 inches long, from the back of Frank’s head, then stitched up the area. The strip, says Dr. Parsley, was surgically dissected into multiple units of hair which were inserted into small incisions made on Frank’s scalp.

Dr. Parsley usually completes the procedure in two sessions. Patients return for sessions every eight to 10 years but can wait up until 16 years or longer. Hair growth begins at four months with full results seen in 12 months. Healing takes from one to two weeks and discomfort is minimal. Frank, who had the surgery 20 years ago, says the seamless procedure leaves no obvious traces of scarring. “You would never know I had a hair transplant.” He adds, “My hair never thins or falls out.”

IF YOU wear a topper Recently, Matt Porter began wearing a topper after his stylist Jackie Sturgeon, owner of Blades Salon & Spa (132 Chenoweth Lane, 502.893.0431), suggested one as a good option for camouflaging his thinning hair on the front and top of his head. “I love it, and it makes me look about 10 years younger.” Toppers, says Jackie, vary in size and are available in different shapes to fit the area that needs to be covered.

They can either be clipped into the hair like Matt’s or double-sided tape can be applied to the bottom of the topper to keep it in place for as long as desired. Both methods of attachment enable the piece to be put on and taken off at any time. To wear it permanently, an adhesive must be applied to the bottom of the hair piece. The topper would need to be removed every 23-25 days. It can be slept in, shampooed, and styled.

IF YOU have your own hair Every two to three weeks, Rod Snyder goes to his daughter, Angela Jones, master stylist at Fritz’s Salon & Spa (164 N. Hurstbourne Parkway 502.412.3748) to get his hair cut. “I keep it shorter because it’s easier to maintain. I wash it at night, comb it and I am done.” Since aging hair usually becomes courser, Angela uses a Rescue moisturizing shampoo and conditioner by J Beverly Hills on Rod’s hair to keep it hydrated and healthy.

Q:

I have an 11-year-old son who is academically brilliant. My 9-year-old son struggles academically but is athletically inclined. Their dad, also an athlete, takes up most of his free time with the 9-year-old either coaching him in sports or the two of them watching some game on TV. My oldest son doesn’t complain, but the hurt and longing in his eyes is telltale. I have talked with my husband, but judging from his demeanor, he thinks I’m blowing it out of proportion. Should I be concerned about the imbalance in the attention from their dad or just leave well enough alone?

Joyce: The damage that is occurring to your 11-year-old may soon be irreversible. The disparity in attention could potentially affect the relationship between him and his dad for the rest of their lives. I have seen many families experience this sort of parent-child and grandparent-child favoritism. What makes the situation even more tragic is when the “mature” adult is in denial about their behavior.

Not being familiar with your husband’s demeanor, I hesitate to cast judgment on his truest intentions. I would surmise, however, that it is easier for him to relate to his “own kind” in that they share the same interests and abilities.

It could be, also, that your husband is reliving his bygone days through the athletic son. Regardless of the ease in the relationship and/or his youthful recommencement, his obligation and responsibility lie with both of his sons.

Here are a few suggestions: • Spend some time taking pictures and/or videotaping the interaction between the two “athletes” as well as Dad and the academic son.

You may be surprised yourself if time is actually balanced. It may well be beneficial for one if not both of you.

• Once you have a good month’s worth of “proof” of the disparity, should it exist, then you can choose a quiet moment when you have his undivided attention. It will need to be a delicate approach so that he won’t bolt and refuse to listen. What you want to avoid is a tiff between the two of you, as well as predisposing him to distance himself from the other son any further.

• Be prepared to validate the fact that you made sure you videoed each interaction. If he is in denial now, he is certain to suggest that you were not always around when the interaction took place. It will have to be an intense effort on your part to ensure you do everyone concerned justice in this endeavor. I would also suggest that you never reveal to the boys the notion behind this “experiment.”

•O nce you have tendered your argument verbally and visually to him, ask him to give it some thought. Talk with him and attempt to get him to understand the emotional damage that could be occurring with the non-athletic child. Encourage him to spend one-on-one time with him at the library, a museum, or some point of interest.

• I t will be important that you have your argument well laid out. Being tender and non-accusatory will be crucial in reaching your husband regarding this issue. If you fail to tug at his heartstrings, he might immediately revert to his usual conduct. If he’s a loving dad, your words will fall on his heart, and eventually will take root.

• I n the meantime, be the encourager for the academic son. If your husband was weak in academics in school, this could be another reason he is shying away from engaging with the studious child. It could pose a real threat to the dad, so be cognizant and sensitive to that fact. But, you must step in and make sure this son is not left “alone in his world.”

•P erhaps there is a family member or friend who could step in and provide the male exposure which is so necessary to this child’s development. While that may encroach on his dad’s territory, it should be a win-win situation.

Dad may very well step up to the plate and make amends.

• I would be remiss if I did not suggest that you pray about this situation. These sorts of issues in family can damage its strong legacy.

Every child is precious. They are quite precocious creatures. Their emotional security is fragile. It’s important they feel loved, special, and appreciated for their individual gifts, and they need this affirmation from their parents.

There is only a little window of time parents have to shape healthy emotional stability in children.

It’s an accountability no parent wants to look back on with regret.

Try this: Don’t angry text. Sometimes it’s hard to really get what you are trying to say across clearly in a text. Talking on the phone or in person can settle an argument much more effectively than texting can.

Try this: Turn your phone off for a few hours. It is so liberating to not have to look at your phone and worry about what the outside world is doing. Maybe you can even work up to a half a day or an entire day with your phone off…now that would be something. Worry about yourself, and have some “you time” without your cell phone in your hand.

Try this: Don’t post your life story on social networking sites. If you have something angry to say, write it down on a piece of paper. Don’t put it online for everyone to see. It just creates more drama for yourself.

You never know who may be looking at your page, so don’t post anything you wouldn’t want your grandmother to see.

Technology definitely makes our lives easier, so easy that it is almost addictive! We have to realize that sometimes it’s time to put it down and be in the moment.
