LOVE YOUR BARTENDERS NOW MORE THAN EVER By Erica Smith

This pandemic has been challenging for every single member of this community. Hit especially hard, was our hospitality workers and bartending professionals. The future is still too uncertain for us to understand the support needed to rebuild this vital industry. Usually, we would be announcing the winners of Polk County's longest-running bartender contest. We launched this program with the first issue of Today & Tonight Magazine, and for seventeen years, the community has supported this noble endeav-

or. However, what is normal anymore? The pandemic has made us all come together in new ways, and as this nation has done for generations, we will emerge more robust than ever. What can you do to help? For one thing, keep voting as we are extending the voting period to account for the most recent statewide closure. Second, contribute to the grassroots efforts many bars have launched to help their employees during this time of need. Finally, once we can stabilize and reopen, be sure to visit and tip whatever you can. We are optimistic about the future and thank you for being a part of the Today & Tonight family. In recognition of our seventeenth year of the Beloved Bartender

edition, we are bringing you a blast from the past with highlights from our past contests. Enjoy some of our most exciting and colorful winners. The support from our advertisers and readers keeps our magazine thriving and contributing to this amazing community. What is the most rewarding aspect of a bartending career? “Bartending is always an adventure and something new happens with every shift. The job is most enjoyable when you meet new friends.” What is the secret to your bartending success? “I have been doing this for thirteen years and I have built a lot of relationships and friendships over the years. I think the secret is treating everyone equal and enjoying what you do.”

You might be surprised to know Christi is a two-time grandmother and loves spending as much time as possible babysitting. She is also becoming the queen of home improvement with a new backyard deck project when she is not enjoying a day at the beach. What is the most rewarding aspect of a bartending career? “Meeting all the different personalities and the friendships you make along the way. The people are phenomenal and I love to laugh – so bartending is the perfect fit.”

What is the secret to your bartending success? “I can’t imagine being stuck in an office all day with the same people. I have a very quirky sense of humor and that makes the day fun. I think being able to laugh is the most important part of my job.” Signature Drink: Caramel Apple Martini – Christi recommends saving the apples to scoop up the caramel at the bottom of the glass. If you were given one wish to make the world a better place what would it be? “I have a soft spot for kids so I would make sure every child had a hot meal every night. That is so important to their development.”

What is the secret to your bartending success? “Being laid back and a country girl at heart comes in handy. I get to work with my friends and I know every one of my customers. I also love being from Polk County and I don’t want to ever move. I have fun at work and that makes people have a better time in the bar.”

This fun-loving country girl started bartending in 2001 at Polk’s famed Country Rock and Beach Club. On her day off, you will need your boots to find Caala as she is probably enjoying Polk’s off-the-beaten-track mud holes and air boat hot spots. She is currently working towards her degree in Nursing and plans to continue her education as long as possible.

Signature Drink: Crazy Daisy – Caala’s special recipe mixes a typical girly drink with elements a guy can appreciate… Crown Royal, Peach Schnapps and Ginger Ale.

What is the most rewarding aspect of a bartending career? “As an eternal student, I like the freedom bartending gives me. I am always looking for something more…more education, more experience and more knowledge.”

If you were given one wish to make the world a better place what would it be? “I would make everyone remember what it is like to be kind to each other. It is pretty simple…all you need to do in life is be kind.”

e took to Polk’s “high seas” for our incredible 12th edition of Today & Tonight Magazine’s Beloved Bartenders Contest. For the first time ever, the cover was photographed completely on the water using two ski boats and the very talented photography skills of Mike Potthast from Potthast Studios. This amazing shot could not have been accomplished without two of Florida’s most talented skiers, Shaune Stoskopf and Howard MacCalla of the world famous Cypress Gardens Water Ski Team. The time honored tradition of Polk’s Beloved Bartender feature started with the very first edition of the magazine. Over the past decade, the magazine has collected more than 20,000 votes from dedicated readers wanting to give back to their favorite hospitality professionals. Bartending can often be a thankless job and this contest is one of the ways we are giving back to the men and women who work hard each day to provide superior customer service in their noble profession. Our readers are simply awesome when it comes to recognizing excellence and we thank you for taking the time to salute the best of best. To celebrate 2015, we presented The Class of 2015 Beloved Bartenders with 15 slightly offthe-wall questions designed to demonstrate their quirky sense of humor and unique life perspective. When it comes to discussing spirit animals and imaginary friends…these gifted professionals were great sports. However, through these wacky conversations, we were able to sketch a colorful portrait of their personalities, talents and aspirations. Polk County is so lucky to have such an exceptional group of hospitality professionals. #1 for the Second Year in a Row! • What was the highlight of your week? About two weeks ago my fiancé Jac and I bought our dream home on the Chain of Lakes. It is a “fixer-upper” that requires a lot of attention and we can’t wait to make it ours. The renovation is hard work and stressful at times, but the end result will be well worth the headache. • What personal passion project are you working on right now? This is the theme of my life right now. I only do the things that I love doing. I really enjoy waterskiing full-time at Legoland where I am the Show Director. I love spending my evenings at the wine bar where I have made many good friends, I’m in the process of moving into my dream home, and I’ve recently begun a venture designing and creating custom furniture in our home workshop. • What’s your biggest fear and why? Losing a loved one. Family is the most important thing in the world. • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? When I was a little kid, I wanted a monkey as a pet. I now realize that’s not feasible, but I still “kind of” want a pet monkey. I have never thought about this until now, but definitely a sea lion. They are intelligent, athletic, always seem to be playing, and perform in front of people. I also love the water, lake or ocean. • What was your best Halloween costume and describe why it is your favorite? My dad always made me the best Halloween costumes. I think my favorite was the upside down man. The legs were arms and the arms were legs and it actually looked like a person walking around the street on his hands. • What was the best birthday gift you ever received? A couple years ago, for my birthday, my family went on a cruise to the Bahamas. The cruise was great, but more importantly it was the first time I got an opportunity to spend time with my sister’s husband (boyfriend at the time) and get to know him. That meant a lot to me. • What is one thing you couldn’t live without? My beautiful fiancé, of course. • What memorable lesson did you learn from your parents? Two of the most important lessons are to be kind to everybody and to understand the value of hard work. If you’re going to do anything, whether it’s work or play, do it right. There is no sense in cutting corners. • If you could spend an hour doing anything, what would it be and why? Waterskiing…No question, it’s my favorite thing to do. • If you had an imaginary friend, what would his/her name be? This question has me completely stumped. I truly have no idea. Can I get back to you on that? • What is the craziest, most outrageous thing you want to achieve? I’d love to sail around the world in my own boat one day. • What smell brings back great memories and why? Sawdust. Whenever I’m woodworking or messing with something in the shop, it reminds me of the time I spent with my “Gramp” in his barn “building” things as a boy. Those are

1st great memories and great lessons. • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. A picnic. I love being outdoors any chance I can get. I am not a fancy restaurant kind of guy. • If you could learn the answer to one question about your future, what would the question be? All I want to know about my future is that I keep doing the things I love and don’t get caught up in life’s trivial things. • Describe Your Signature Drink? I like a big, bold Cabernet. My favorite staple drink at the wine bar is Woodwork Cabernet. We’ve such a great, diverse list of wines that it is difficult to choose, though!

My highlight of the week was spending time with my favorite person in the world…my dad on Father’s Day. • What personal passion project are you working on right now? My personal passion right now, and all the time, would be singing. I sing all the time, that’s why my nickname at Mojo’s is “Songbird.” I’ve been working on a couple of new songs that I have written. Mojo’s offers Karoke every Thursday night and I am the host and sing! • What’s your biggest fear and why? My biggest fear is heights. I’m so clumsy, so being up very high and knowing I could slip or fall. It’s horrible! • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? If I could have…and be…any animal in the world it would be a panda because they are so loveable and sweet. • What was your best Halloween costume and describe why it is your favorite? My favorite Halloween costume so far would have to be when I dressed up as a “cereal killer” and hot glued a bunch of mini cereal boxes to a shirt and stuck spoons in them. It was pretty funny!

• What was the best birthday gift you ever received? The best present I have ever received is a necklace that was my grandmother’s. • What is one thing you couldn’t live without? I couldn’t live without my family. • What memorable lesson did you learn from your parents? My dad has taught me several memorable lessons but one that stuck with me the most is “don’t worry, be happy.” He has said this phrase to me since I was little kid. Life is too short to be anything but happy. • If you could spend an hour doing anything, what would it be and why? I would be kayak fishing with my Dad! • If you had an imaginary friend, what would his/her name be? His name would be Bob! • What is the craziest, most outrageous thing you want to achieve? I want to become a famous country singer. • What smell brings back great memories and why? One smell that brings back memories is the smell of rain. It brings me back to when I was young and picking pecans with my Grandmother. • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. A picnic in the park because it is the little things that matter the most! • If you could learn the answer to one question about your future, what would the question be? I don’t want to know the answer to my future. Better to let life just play out. • Describe Your Signature Drink? I have a couple of signature drinks but my favorite is the Songbird. It is Malibu Rum, pineapple juice, sweet and sour mix with a splash of grenadine and lime juice. It is a perfect cocktail for some fun in the sun!

• What was the highlight of your week? The highlight of my week is on Sundays. Sunday is the day that I get to unwind, relax, and spend some quality family time. I love it when my whole family is at home together…no matter what we are doing. We could be watching a movie or going to Busch Gardens or even just playing a board game, either way it’s all the same. We’re all together. • What personal passion project are you working on right now? I just started working out and eating right in order to get healthier. I’m only a beginner, so I can’t say I’ll be an Olympic lifter any time soon, but I’m making progress. • What’s your biggest fear and why? My biggest fear has to be sharks. Honestly, I don’t go to the beach as much as a true Floridian should and it’s all due to one experience. There was a time that I was “wade” fishing with a couple of friends, in chest high water, and noticed a fin between us and the shore. Of course, this may have very well have been a dolphin or something friendly, but I freakedout about it! Ever since, I am on high alert when at the beach. • Two Part Question…If you could have any animal as a pet, what animal would you choose? 2nd Part – What would be your spirit animal? You’re probably expecting me to give you an animal like a koala or a lion or something, but I would choose a dog. Dogs are my favorite animal, by far. If I were to have any spirit animal it would be a dog because they are fun to be with and they are very loyal. • What was your best Halloween costume and describe why it is your favorite? Weirdly enough, I never got into dressing up for Halloween but I love to joke around. One year, I did dress up as John Daly (a professional golfer). I stuffed my golf shirt with a pillow and walked around with a bottle of Jack Daniels.

• What is one thing you couldn’t live without? Well there is always the basic food, water, and air, but honestly i just can’t live without my family and their support. • What memorable lesson did you learn from your parents? The one lesson that has stuck with me throughout the years is to love everyone the same no matter what. • If you could spend an hour doing anything, what would it be and why? Spending time with my daughter Page because she’s just like me. When we are together we have the best of times no matter what we do or where we go. • If you had an imaginary friend, what would his/ her name be? It would be Cyrus. • What is the craziest, most outrageous thing you want to achieve? I would like to invent something that everyone loves to use and can’t live without but I have no clue what it would be. • What smell brings back great memories and why? The smell of the men’s cologne Drakkar Noir brings back great memories. That scent brings me back to my days of middle and high school. I had the best time! • Would you rather...go for a picnic in the park or a romantic dinner for two at a fancy restaurant? And explain why. I would rather go out for dinner. There is just something about dressing up with someone and going out to a nice fancy restaurant. • If you could learn the answer to one question about your future, what would the question be? I want to know if aliens will eventually come and take over the world! Seriously though…I would want to know how my family would do after I passed, or when flying cars will finally be mass produced. It’s a toss-up. • Describe Your Signature Drink? I love it when a person walks up and asks for a drink, but they don’t know what they want. I usually ask some questions to get an idea of what they will like. Most of the time, the mix is different for each person. I just make it up, as I go. That’s my signature.

Throughout the contest’s history, the magazine has collected more than 30,000 votes from dedicated readers wanting to give back to their favorite hospitality professionals. Bartending can often be a thankless job and this contest is one of the ways we are giving back to the men and women who work hard each day to provide superior customer service in this noble profession. Our readers are amazing in their recognition of excellence and we thank you for taking the time to share your nominations. WOW is the word we are using to describe this year’s Beloved Bartenders Reader’s Contest. This edition is always a favorite for both the Today & Tonight Magazine’s staff and our readers. This year over 2,000 votes were collected and the results were tabulated several times as one vote made the difference for several of our contest winners, and for the first time ever there were several ties. We are adding many new names to our roster of winners this year and we are glad to welcome them to our growing list of talented professionals. Don’t forget to also check out the “honorable mentions” page for a list of others that were nominated as well. The time-honored tradition of Polk’s Beloved Bartender feature started with the very first edition of the magazine and we added the voting component a few years later. Throughout the contest’s history, the magazine has collected more than 32,000 votes from dedicated readers wanting to give back to their favorite hospitality professionals. Bartending can often be a thankless job and this contest is one of the ways we are giving back to the men and women who work hard each day to provide superior customer service in this noble profession. So many of them have become lifelong friends! I enjoy being a bartender because I get to meet and talk to so many people. I have talked to kids on their 21st birthday and told them to be safe and responsible. I have listened to stories of 81 year-olds who have lived life to the fullest or if they could go back and change things they would. I try to learn a little from all of my customers. In my job, you need patience and know when to slow down. I have learned to know when to take a leap of faith even when you don’t know where you will land. 2. Why do you think you were nominated and what makes you a beloved bartender? I just try to make everyone who comes to my bar feel at home and more like a friend then a customer. 3. Are you a cat or a dog person? I am more of a dog person. Cats are too unpredictable for me! I have a Great Dane named Chief and a Pug named Carter. 4. If you could only eat one thing for the rest of your life, what would it be and why? Pizza. Not because it’s my favorite thing in the whole world but I could always change up the toppings so it wouldn’t be eating the exact same thing. You can make breakfast pizza, dessert pizza or whatever you need to change it up! 5. If you won the lottery tomorrow, what’s the first thing you’d buy and why? Wow this is a hard one. My first big investment would be

a big piece of property or a new car. But the first thing is actually spending money on would be an awesome meal at some fancy restaurant with a few drinks! 6. What is your most bizarre or useless talent? No talent is useless! But maybe the fact I can bend my thumb down to touch my arm if I had to choose one. 7. What is your favorite childhood memory? My favorite memories from my childhood would be the ones with my Nan in them. She passed away when I was a teenager but was a wonderful and special woman I wished that I would of had more time with and my children would have been able to meet. 8. If you could only keep five possessions, what would they be? My children and family are the most important things in the world to me. They matter most. Having my house, car, and everything else is second to them but would be what I would like to have to make life easier for us. 9. If you were president, what is the first thing you would do? I would want to help those who really need it. There are so many children and adults in our country who don’t know where their next meal will come from or even when. I can’t imagine what that would be like and I believe all children deserve to have a full tummy every day. 10. What is your favorite quote and who is the author? One of my favorites is by Edward Bok, “Make you the world a bit better or more beautiful because you have lived in it”. I love this quote because it can apply to nature but also to how we treat others and to always make a positive impact in their lives. 11. What was your favorite toy growing up? Probably my mom or my dogs. If I was playing, it was with all or one of them. 12. Would you rather win an Olympic medal, an Academy Award or the Nobel Peace prize and why? A Nobel Peace Prize because I would have made a big difference in the world! 13. What is the best piece of advice you’ve received? To treat others as you want to be treated. You never know

I want to say my personality and my “outgoing self” got me nominated. 3. Are you a cat or a dog person? I am a dog person! I have a little dog named Biscuit, and a huge puppy named Roxy. 4. But mostly I just try to be as real as possible; I think people appreciate that sentiment. 4What was one of the best days of your life? There have been four… each of the days my children were born. 4How long would you last in a zombie apocalypse? Ha ha, hopefully I would last for a while. Give me a machete and I’ll be good to go! I’m a mom of four! 4If you could ask advice from any historical figure, who would it be? What would you ask them? Maybe Leonardo da Vinci. I want to know all his secrets. But honestly, for some reason I’d probably pick Elvis and ask him what I should put on my bucket list! 4If you had a theme song, what would it be? That’s hard! I love music - all music. If I am alone in the car with the volume turned up, it would have to be Love The Lonely Out Of You by Brothers Osborne. When at work or getting ready for the day, I will listen to Maroon 5’s She Will Be Loved. I listen to both artists every day. 4If you could write one new law that citizens had to obey, what law would you create? Explain why. Don’t be an a**! Life is too short to be rude and mean. 4When you have 30 minutes of free time, how do you pass the time? Eat something! When I’m bored I eat. 4If you were given one thousand acres of land, what would you do with it? I’d build a huge house with a wrap around porch and live my life with my family. 4What was your favorite fairy tale or epic fantasy growing up? I didn’t have a fairy tale or fantasy. I wanted to be a marine biologist but now you couldn’t pay me to go in dark water. 4What is the most hilarious childhood memory you can think of? The things that are hilarious now, I am pretty sure led to being traumatized as a child. My dad used to scare the crap out of us kids and I

HATED it, and for the record I still hate it! However, I do it to my kids now (just not as bad). I guess the apple doesn’t fall far from the tree. 4If you had one day left to live on the Earth, what would you do? I’d invite everyone I love to the house and hang out all day reminiscing. I would want to spend my last day remembering all the happy moments I have experienced. 4Tell us about your signature cocktail. I’ve been told I make a kick butt Bloody Mary! And I love turning people on to Italian margaritas. 4Any final thoughts? Just that the owner of Grape Expectations (Randy) is a great boss! We all love him. He is a wonderful person to work for and I am grateful!

Bartending never really feels like work because all of our regulars are so much fun. They have become family. 4What was one of the best days of your life? Oh, this is a tough one. I would have to say either the day I got my perfect dog, Sam or the day I spent in the Ubud Monkey Forest in Bali. 4How long would you last in a zombie apocalypse? I would last a long as my dog does, because he would definitely protect me. I’m not a very good runner so I would be pretty dependent on him. I would definitely be on the lookout for a guy with a motorcycle and crossbow, too! 4If you could ask advice from any historical figure, who would it be? What would you ask them? I would ask Mahatma Ghandi how he found the strength and perseverance to fight non-violently on the political stage. We could all use some advice from him. 4If you had a theme song, what would it be? Don’t Stop Believing by Journey! 4If you could write one new law that everyone had to obey, what law would you create? Explain why. Men and women should be paid equally. I think that is self-explanatory.

4When you have 30 minutes of free time, how do you pass the time? Either taking a walk with my dog or watching a show on Bravo with my dog. 4If you were given one thousand acres of land, what would you do with it? I would have a dog rescue! I have always been a dog lover and it breaks my heart to know that there are so many dogs out there that need loving homes. I would love to provide shelter for them. 4What was your favorite fairy tale or epic fantasy growing up? Beauty and the Beast! It is still a personal favorite. 4What is the most hilarious childhood memory you can think of? It would have to be when my mom had some friends over and I ran into a sliding glass door that I thought was open. It is surprising I did not break glass with how hard I hit the door! It was really my Mom’s fault. She kept such a clean house and it was hard to tell if the door was open or closed! 4If you had one day left to live on the Earth, what would you do? I would spend it with my dog and my loved ones. Preferably in Bali on Echo beach! 4Tell us about your signature cocktail. As I work at a wine bar, I do not have a signature cocktail. However, my favorite wine served at Grape Expectations is our Rodney Strong Sauvignon Blanc. 4Any final thoughts? I am so incredibly thankful for this honor! I know this is a tad bit strange but I really loved Hansel and Gretel. 4What is the most hilarious childhood memory you can think of? Finally, the drink is topped with a splash of our Jarritos’ Orange Soda to keep the Latin vibe! If you weren’t a mojito fan before, you will be! Any final comments? I enjoy the environment at work and I enjoy mixing up yummy cocktails. What is the most beautiful place you have ever visited? It would honestly be a toss-up between cliff jumping into the waters of Jamaica and standing 152 floors up in the Empire State Building overlooking NYC at Christmas. Where is the one place in the world you want to visit? I cannot pick just one, so I would say; I would love to ride a camel in Dubai, or hula dance on the beach in Maui. What was your favorite toy growing up? My outside swing set. It was my slide, my swing, my monkey bars, basically my own personal kid workout station. Ha ha. What has been your most courageous act? I conquered one of my biggest fears while accomplishing one of my scariest goals. Sky Diving! What is the one food you can never bring yourself to eat and why? COOKED CARROTS! Carrots should only be served cold and dipped in Ranch dressing never cooked as a hot food item. If you could meet a fictional character who would it be and why? Phoebe from Friends! To spend a day in her head would not be far

from my own. I mean who does not love Phoebe! What terrible movie do you love? Or what is your favorite movie and why? Once again, I am torn. Notting Hill because who does not love Julia Roberts who falls for Hugh Grant’s English accent! OR, Gone in 60 seconds! Nicholas Cage paired with Angelina Jolie and those sexy cars – that is a “to die for” combination! As a child, what did you want to become when you grew up? Honestly, growing up numbers have caught my attention since I learned how to count. Becoming an accountant has always been my dream. If you were given only one week left to live, what would you do? I would smile. I’d smile because I am every bit happy with my life and how it’s formed. I’d take my last week, gather all my loved ones and travel. We would stroll down our memory lanes together, smile, and laugh. Are you a cat or dog person? Tell us about your pet or any favorite pet from your life. Dogs!!! I am and have always been a sucker for rescue dogs. My Dalmatians along with my current dog were rescues. They become your best friend. You cannot go wrong with a good pup. He is not with us anymore, though. I do have a dog now, and he is my sweet baby! I did not think I could ever love a dog this much until he came along! What is your signature cocktail? A Bloody Mary. Five Great Things About America The Fourth of July is supposed to be a momentous occasion where we celebrate everything great about America. However, with many events being canceled or postponed due to COVID-19, many Americans aren’t feeling very “patriotic” this year. Even then, our country still has many great things worth celebrating. Here’s five of them: #1: IMMIGRATION. What do Google, eBay, and Tesla have in common? They’re all some of the biggest companies in America. They were also started by immigrants. No surprise that a country built on immigration has an economy built by immigrants. About 45 percent of the U.S.

Fortune 500 companies were founded by immigrants or their children, amassing a total of $6.1 trillion in annual revenue, as reported by Newsweek. Far from “stealing” jobs, not only do immigrants create jobs, but they also start businesses at a higher rate than American-born residents. Asian and Hispanic entrepreneurs especially generate millions of jobs and bring in nearly a trillion dollars in revenue, according to the Immigration Forum. As the hit Hamilton song goes, “Immigrants get the job done!” #2: DIVERSITY. As the “Great American Melting Pot”, diversity is our strength, and multi-culturalism is our culture. Many “American”

products such as blue jeans, hot dogs, and apple pie were created in other countries, while food we consider “foreign” like German chocolate cake, fortune cookies, and tortilla chips were made here in America. Even our National Anthem based its tune on an old British song. With 44 million immigrants, more than any other country in the world, the immigrant share of our population is nearing a record high; and with other ethnic groups growing in population, America is becoming more diverse and is expected to become a “majority-minority” country by 2050, according to Pew Research. #3: EDUCATION. When you think of higher education, Harvard is undoubtedly the first university that comes to mind. That’s because the school is one of the highest-ranking globally. Of the top ten best universities in the world, eight are located in America, including Princeton, Stanford, Yale, MIT, and Columbia. These universities offer a prestigious education and produce valuable research. American research universities account for “about 75 percent of the top 50 institutions and about 60 percent of the top 100,” The Atlantic reports. With so many world-class universities, it’s no surprise America draws in over a million international students annually.

#4: SCIENCE. What do the light bulb, telephone, and airplane have in common? They’re all inventions that were made in the U.S.A. From curing smallpox to landing on the moon, many great scientific and technological developments were achieved in America. Even today, our country leads the world in scientific research, as we spend $543 billion on research and development, representing around 2.8 percent of GDP, according to Investopedia. Such an emphasis on scientific research has allowed the United States to produce the most Nobel Prize winners with 336 winners overall. #5: ENVIRONMENT. While America isn’t the “cleanest country” on earth (we only rank as the 12th least polluted country, according to the World Air Quality Report), the country has been moving closer towards cleaner energy. The U.S. ranks second in wind energy production and fifth in solar energy. Renewable energy is the fastest-growing energy source, making up more than 17 percent of net U.S. electricity generation, according to the Center for Climate and Energy Solutions. In fact, according to projections by the U.S. Energy Information Administration, renewable energy is projected “to surpass nuclear, coal and natural gas sources as the leading source of power generation in the United States after 2045.”

Got To Carry On! I’m not a writer by trade, and to be honest sometimes it’s really hard to put words to (virtual) paper especially when you’ve done it consistently for so many years. Much respect goes out to the many writers that pour out their words on a daily basis for all to enjoy or not, depending upon your views. But regardless, we put words out into the world for enjoyment and entertainment, for encouragement and advise, for political and activism movements or just to vent… Lately, due to the current pandemic, it’s gotten harder to put down the words for enjoyment, entertainment and encouragement…I hate having the same topics shoved down people’s throats because I feel that we all get numb to them. Same message, same speech, same problems…blah, blah, blah! I’m getting so tired of this dark cloud hoovering. The year 2020 was going to be so great, so much fun. Everyone was playing off the “roaring twenties” themes left and right with the parties and the clothes and the good feelings. BAM! Dark cloud rolled in and is sitting like a mushroom cloud from a nuclear blast. People struggling financially, businesses barely hanging on, feelings of being trapped in your house, feelings of anger, depression and uncertainty. If there was ever a time that Sheldon Cooper and his brainy band of mis-fits invented that time machine, this would be it…talk about a reset button or “do-over” moment. I’ll bet there are a few over the past few months that we’d like to erase… From being at community events and social activities several times a week to (still) unpacking boxes, organizing and downsizing my new life, I often times think “THIS SUCKS!” But on the other hand, I feel very fortunate for opportunities being given, small and large. I also realize that I am not in this boat alone, as I hear life stories from new neighbors that I am getting know. Brief conversations at a fence line

with a common thread: everyone is just trying to survive; families and friends are coming together to help each other, and many relying on their faith to help pull them through. We must all move forward whatever that means for each of us. COVID-19 isn’t making me gain weight, be in a bad head space or feel weak and lazy. It’s my fault for letting this “crazy time” affect me so negatively so it’s time for the cloud to be lifted – at least for me personally. As I’m writing today, this song popped into my head. From 1972, Bill Withers has the right words for us all:

Spotty is a four month old puppy. Spotty loves to play and go for walks. Spotty will make an excellent addition to your family.

Paul is a sweetie pie. He is around three months old and gets along well with other cats and people of all ages. Paul loves to sleep in this little bed but is very playful too!

TOW TRUCK

Tow Truck is a tan and black male Black Mouth Cur mix. He is approximately 2 years old and has been neutered. He is a sweet but hyper dog that loves attention. Tow Truck also loves getting treats and enjoys being petted and loved on. He was hit by a car and had to have his front right leg amputated so he is a tripod dog.

TOP MARTINIS Whether Shaken or Stirred!

Martinis are always on trend from the traditional served with Gin to a slightly dirty Vodka martini, a tart treat such as the Key Lime Pie or the decadent dessert drink…the Chocolate Martini. Here’s our top picks sure to be a crowd pleaser:

DRY MARTINI

You could stumble down a very deep, very dark rabbit hole trying to determine who mixed the world’s first Martini. Was it a California prospector during the 1849 Gold Rush or the barman at a flossy New York City hotel 50 years later? Both stories hold water. Neither will leave you feeling as blissful and content as a well-made Dry Martini. Ingredients 2 1/2 oz Gin 1/2 oz Dry vermouth 1 dash Orange bitters Garnish: Lemon twist Steps Add all the ingredients into a mixing glass with ice and stir until very cold. Strain into a chilled cocktail glass. Garnish with a lemon twist.

GIBSON MARTINI

The Martini's savory second cousin, the Gibson, uses a pickled cocktail onion in place of the typical briny olive to add an umami undertone to the classic cocktail. The Gibson is believed to have been created by San Francisco businessman Walter D.K. Gibson in the late 1800s, who thought that eating onions prevented colds, hence the addition of the mini allium. Ingredients 2 1/2 oz Gin or vodka 1/2 oz Dry vermouth Garnish: Cocktail onion Steps Add the ingredients into a 24

DIRTY MARTINI

In 1901, New York bartender John O'Connor found inspiration

for the Dirty Martini in the classic Martini's famous olive garnish. First made by muddling the olive into the drink, and later by adding a splash of olive brine, the Dirty Martini took decades to reach a wide fan base. Today, it’s the go-to sipper for salt-craving drinkers.

Ingredients 2 1/2 ounces gin or vodka 1/2 ounce dry vermouth 1/2 ounce olive brine Garnish: 2 to 4 olives Steps Add all the ingredients into a mixing glass with ice and stir. Strain into a chilled cocktail glass. Garnish with 2 to 4 olives, skewered.

The Vesper first appeared in his book “Casino Royale,” which was published in 1953 and gets its name from fictional double agent Vesper Lynd. When Bond orders the Vesper, it comes with strict instructions that must be followed by any who make it: “Three measures of Gordon’s, one of vodka, half a measure of Kina Lillet. Shake it very well until it’s ice-cold, then add a large thin slice of lemon peel. Got it?” With respect to 007, shaking a Vesper can result in an overly diluted drink. The golden rule is to always stir a spirit-only drink. And we see no reason to change that here.

ESPRESSO MARTINI

If you’re looking for a pickme-up post-dinner, the Espresso Martini is here to jolt you awake with its boozy magical powers. The cold coffee-flavored cocktail mixes vodka with espresso coffee, coffee liqueur (usually Kahlúa) and simple syrup. Garnish with a few coffee beans, and it’s picture perfect. British bartender Dick Bradsell invented this now-classic drink, a.k.a. the Vodka Espresso, at Fred’s Club in London in the late ’80s. Legend has it that Kate Moss asked for a drink that would “wake me up and then mess me up” at the same time, and the Espresso Martini was the result. LEMON DROP MARTINI

The Lemon Drop first squeezed to life in San Francisco sometime during the 1970s. Its inventor, Norman Jay Hobday, an outof-work Vietnam vet turned saloon owner, is also credited with opening the country’s first fern bar, a concept that mixed house plants and Tiffany lamps with throngs of upwardly mobile urbanites. Both were an instant hit. And for two-plus decades, the Lemon Drop dominated cocktail menus from North Beach to Bangkok, hooking a generation of bargoers on its boozy-tart-sweet melange of vodka, citrus and sugar. Oprah famously served one to Rachel Ray on her show. Some mislabel the Lemon Drop a Martini. But the drink’s closest cocktail kin is the Crusta, a New Orleans invention that dates back to the 1850s and, like the Lemon Drop, is distinguished by its sugared rim. It’s tempting, while whipping up a batch of Lemon Drops, to skip this important step. Don’t. That first saccharine brush against the lips before the onrush of orange, lime and booze fill your mouth is the Lemon Drop’s calling card. If you don’t believe us, just ask Oprah. APPLE MARTINI

Originally called Adam’s Apple Martini, the Appletini became a crowd pleaser from the day it was invented at L.A. restaurant Lola’s in 1996. The original recipe simply used vodka and green apple schnapps, but we updated the modern classic with calvados and fresh Granny Smith apple juice.

Ingredients 1 1/4 oz Vodka 1 oz Calvados 1 1/4 oz Fresh Granny Smith apple juice 1/4 oz Fresh lemon juice 1/4 oz Simple syrup Garnish: Brandied cherry Garnish: Granny Smith apple slices Steps Add crushed ice to a cocktail glass and set aside to chill. Add all the ingredients into a shaker with cubed ice, and shake for about 10 seconds. Empty the ice from the cocktail glass, and double-strain the mixture into it. Garnish with a skewered brandied cherry and 3 Granny Smith apple slices.

CHOCOLATE MARTINI

A great dessert cocktail shouldn’t include any added sugar or artificial flavors. Simply mix chocolate cream liqueur and vodka for an elegant and mouthwatering take on the classic Chocolate Martini. Ingredients 3 oz chocolate cream liqueur 2 oz vodka Steps Add all ingredients into a shaker with ice and shake well.

Strain into a cocktail glass.

FRENCH MARTINI

The French Martini is the drink that helped to kick off the flavored Martini craze of the ’90s. The cocktail was brought to prominence in NYC restauranteur Keith McNally’s Balthazar, where it appeared on the menu after being placed on the menu in one of his other establishments. It’s sweet and creamy due to the pineapple juice and Chambord black raspberry liqueur. The primary spirit is vodka, though sometimes rum is used instead. This recipe was created by venerable bartender Allen Katz and uses crème de cassis liqueur in lieu of Chambord. This imparts a deeper flavor from the currants that are a bit less sweet than raspberries. So this French Martini tends to be a little more spiritforward and complex. Ingredients 2 ounces vodka 1 3/4 ounces pineapple juice 1/4 ounce crème de cassis liqueur Steps Add all the ingredients into a shaker with ice and shake. Fine-strain into a chilled cocktail glass. I have seen this request linked to words like tyranny, freedom, and fear. Let me be frank; wearing a

Along the way, we have better defined these ideals through war, legislation, and, most importantly, evolving social change. Our nation was built upon challenging tyranny to make a country that could offer opportunities and freedom. Wearing a mask to assist with a global health emergency does not fit into this scenario. The mask debate is silly. The argument boils down to the question of “Would you instead want someone to sneeze into a person’s face or use a tissue?” Unless you enjoy getting a slime bath with a potentially fatal virus or being the slime-er, wearing a facemask is another level of prevention. It is a barrier between you, contagion, and others. Is it fail-safe, well no, but is it better than nothing, so a resounding yes! We can be better neighbors and citizens with a straightforward act, but instead, many are choosing to use this precaution as a means of division. Facemasks are uncomfortable, hot, and awkward for many to wear; however, this may be our moment to shine, to show strength, stability, and solidarity as well as kindness, compassion and respect for humankind.
