Prajna Hallstrom

Prajna first discovered chanting as a spiritual path while living in an ashram in the 1970’s. Finding it the medicine she had been looking for, she completed a PhD in Hinduism at Harvard in 1995, publishing a book on the great Hindu woman saint, Anandamayi Ma, entitled Mother of Bliss. Later, she would found the Lincoln Kirtan, based at St. Anne’s Church in Lincoln, MA, and inspire the formation of other monthly kirtan gatherings in New England, including Kitchari Kirtan. In December 2015, Prajna decided to retire from the monthly Kirtans, though the Lincoln Kirtan Band reunites to play together to the delight of many. shaktimata.com

Kitchari Kirtan ~ Kitchari Recipe (Prep 25 min. - Cook Time 70-90min.)

Ingredients: 2 lbs whole green Moong beans (soaked overnight) - the amount you soak depends on how much Kitchari you want to make. They will expand about 3x their size, so about 2 lbs of beans will serve 30 people. It’s ok if they are in the water for longer than 12 hrs, they will cook faster. We usually double this recipe for our event. 2 cups rice (basmati is best and traditional, but any rice works. Jasmine is another favorite.) One whole cauliflower 1 16 oz bag frozen peas One can coconut milk 3 Tbs coconut oil, ghee or favorite oil (optional) ½ to 1 entire white onion (for Vegan, substitute coconut oil, Earth Balance for ghee/butter; for Ayurveda, substitute asafoetida for onion.) 2 Tbs black mustard seeds 1/3 cup cumin seeds 4-inch chunk of ginger root 1 tsp garham masala 1 tsp coriander powder 1/8 cup turmeric powder 1 -2 Tbs salt (to taste) (optional) one Tbs of vegetarian bouillon paste or a large bouillon cube (optional but delicious garnish): sesame seeds, cilantro (fresh finely chopped), avocado, cashews, mint of coriander chutney, Indian pickles

44.

Recipe: 1. After soaking beans, rinse and place in a large soup pot and cover with water (5 cups of water for every 1 cup of uncooked beans and 1 cup of uncooked rice). Bring to boil and cook about 15 minutes per pound of beans. 2. While the beans are cooking, chop the cauliflower into bite-size florets. Wash the cilantro to remove the sand. If using the onion, dice it into small pieces. Peel and chop the ginger finely (We sometimes use the food processor to mince the ginger.) 3. Spoon off the foam from the beans while they are cooking. After about 20 minutes, add the rice, ginger, and bouillon — bring to boil again. Turn down the heat and continue cooking. 4. Once the rice is almost cooked (you might need to empty some water from the top — a thick Kitchari broth which can be saved and reused later if needed.) 5. Add cauliflower and the frozen peas. Turn down the heat, simmer and stir carefully so that rice does not stick. 6. In a non-stick skillet on medium heat, melt oil, or ghee. Add the mustard seeds and wait until you hear them pop then add cumin seeds and stir for another minute, then add the rest of the spices: turmeric, garham masala, coriander powder and cook them together (make sure they don't burn.) Pour the ingredients from the skillet into the soup pot. (If you are using onion, either sauté with a small amount of oil/ghee before the spices and add to the soup pot or sauté in the bottom of the soup pot at the beginning before you add the rinsed beans) 7. Add coconut milk and salt, and stir simmering for about 15 minutes to taste. Serve hot and garnish with your choice of cilantro, sesame seeds, mint or coriander chutney, Indian pickles, cashews, or avocado.
