M

artha Wolfenberger was a cougar back when the only definition known for the word was “a large, wild cat.”

When Charley Cope first appeared on her front doorstep, Martha thought he was there to see her oldest daughter, Allison. It wasn’t long before the young man in his midtwenties

by Shirley King revealed that he was, Correspondent in fact, actually interested in the pretty, middle-aged school teacher with a twinkle in her eye and a dimple in her cheek.

It took some persuasion on Charley’s part, but Martha finally agreed to marry him. They set the date for Aug. 13, 1979. They have been together for over 38 years.

But as in any marriage, things didn’t always go smoothly. Charley, a brilliant man with a degree in physics from North Texas University, is a modern-day Thoreau. His efforts to simplify their lives weren’t always popular with the rest of the family.

While there were three teenagers still in the house, Charley took out the second bathroom. One summer, he turned off the hot water and drained the bathtub in the yard to water the grass. Whenever Charley did the grocery shopping, the family often found themselves unethusiastically eating canned

A Q&A with Gay Larson, our gardener of the month When did you start gardening?

I started my gardening as a little girl, planting sweet potato slips on our farm/ ranch in Hood County. Being the oldest of four, it was my job to place the slip into the hole that Daddy made with broom stick and cover with soil.

Why gardening?

It’s therapeutic, healthy, instantly satisfying, and creates the illusion of being younger.

What advice do you have for new gardeners?

Find you a gardening guru like Neil Sperry and a Master Gardener, then pick their brains for as much knowledge as possible.

Nominated Volunteer of the Year for City of Fort Worth for my years of gardening at the Mission.

Nominated as Master Gardener of the Year for Texas Master Gardener Association.

Honored with Gay Larson Day in town of Aledo.

Best Project Coordinator award for Tarrant and Parker County Master Gardener Associations.

I really love trees because I know they will be here for many years past my life.

Rhythm & Shoes Kloggers welcome new members without experience

The Klassy Kloggers meet weekly and perform at various events and venues throughout the Metroplex. A new beginner’s class starts on Monday, Jan. 8.

T

he origins of Weatherford’s Klassy Kloggers may be a little fuzzy, but the effect the group has on its current dancers is clear.

“We’re like a family. One of my only rules is that we make everyone feel welcome,” said director Shirley Anderson. “There’s been so many friendships formed from this group. That’s a big part of why it’s so much fun.”

Many people might find the idea of joining a dance troupe intimidating, but Anderson said it’s never too late to learn. Most of her dancers have no previous experience clogging. Anderson herself

didn’t even learn the craft until she was well into adulthood.

Clogging is sometimes described as tap dancing’s country cousin, with a rhythm well suited to guitar and banjo music. The taps are a little different, too – instead of a single piece of metal on the heels and toes of the shoes, as in tap dancing, each tap also has a plate that’s attached with tiny bolts loosely above them, creating the signature sound.

“I actually saw it on television after I got married,” Anderson said. “I told my husband, I’d love to try that if I could ever move my feet that fast.”

hometown of Breckenridge, when a man from New York began teaching lessons. It was an instant love affair for Anderson.

“I took to it like a fish to water,” she said. “I’ve always been very athletic. I taught aerobics and I have a black belt. Clogging was a love for me from the moment I tried it.”

Anderson is small, quick to smile and bursting with energy, exactly the kind of personality that works in a dance director. She started her first troupe – the Hotfooters – in Breckinridge, and around a decade ago, she began her involvement with Klassy Kloggers. The group had been in

existence for some time, but Anderson isn’t sure how they got their start.

“I’d seen them perform when we visited the area,” Anderson said. “I met them at a workshop in Waco and they invited me to visit. I came to class with them and I was hooked.”

When the director quit a few years ago, Anderson stepped up to take the job. She’s completely volunteer and does it for the love of dance, and her students. The group has grown to around 40 dancers since her watch, and performs all over the state “Shirley is an awesome teacher, and she’s so patient,” said assistant director Jewelletta Stovall.

When Stovall began with the group in 2006, she also had no previous dance experience. She was led to the Klassy Kloggers at a garage sale when she asked someone there how she stayed in shape.

“Her immediate reaction was, come and join us!” Stovall said. “It was really hard for me at first. But the other ladies stuck with me and worked with me. I wasn’t going to quit.”

Stovall said it took about three years before she had the “aha” moment and everything began to click.

“I love dancing and learning new steps,” she said. “All these women are like family. When I broke my arm, everyone showed up and brought food. They were so supportive.”

Anderson said she’s heard similar accounts from other members.

“We had a woman who saw us a church event and she started coming to classes,” Anderson said. “It turned out she had recently lost her husband and was battling depression. She told me later that clogging made a huge difference for her.

“Now she’s fighting some different health issues of her own, and we are all doing everything we can to help

her. I can’t wait until she’s well enough to come back to class. We all miss her very much.”

Anderson teaches two classes a week – a beginner session that begins in January of each year and a class for the established dancers, both of which meet on Monday nights at the Holland Lake Senior Center in Weatherford. She wants everyone to know that anyone interested is welcome anytime throughout the year for her beginner class, which starts at 6 p.m.

“The first class is always free,” she said. “It can be scary at first.

Everybody says they have no rhythm, but I’ve found it’s not as scary for them once they come and check out a class. It’s too fun to be scary.”

Anderson begins with the simple steps for her beginners, and the more experienced group knows dozens of routines set to classic artists like Elvis, as well as some newer tunes.

The group did a two hour show at the state fair of Texas every year with

Anderson credits her dancers as the reason for the wide repertoire.

“I do get up there lead them during the shows. They think they need a leader but they don’t,” she said. “They do a great job.”

New member Sharon Smoot, who “graduated” from the beginner class in Febuary, credits Anderson with helping her pick up the style quickly.

“When I was little I always wanted to dance, but I never had the opportunity,” Anderson said. “Shirley taught me the basics and it was just what I needed to get started. She didn’t make me feel awkward at all.”

Smoot said now that’s she gotten the hang of connecting the steps and learning the choreography, she’s having a great time.

“You can’t help but be happy, learning music and steps and laughing with this group,” she said. “I really enjoy the choreography but my favorite part is the friends I’ve made here.”

Anderson said it’s about much more than the dancing.

“I always say, no matter what you’re going through, dance is good for you mentally and physically. Come stay and spend some time with us. You’ll leave with your problems so much lighter.”

Quilter’s Guild sees record-breaking turnout at annual quilt auction The Quilter’s Guild of Parker County held their 11th annual Quilt Auction on Sept. 21 at North Side Baptist Church.

The auction had a record-breaking turnout and featured quilts made by guild members and others in the community. Guild president Marsha Corlley says the funds raised at the auction will support the guild’s educational programs and community service projects.

Recent community service projects include creating a special red, white and blue quilt for a 98-year-old WWII veteran right before Veterans Day. The quilting guild also recently delivered a dozen quilts to Grace House.

Late last month, the group was honored by Manna Storehouse for creating quilts for each Habitat For Humanity home.

The group holds monthly meetings on the third Thursday of each month at the North Side Baptist Church, 910 North Main Street in Weatherford.

Easy As Pie Homecooked meals don’t have to be time-consuming

A

s she worked her way around the kitchen, preparing pie crusts and stirring a pot of beans on the stove, Roberta Henry explained why some of her favorite recipes are quick and easy.

“I worked at a local bank for 20 years while raising three daughters,” she said, “so I was always looking for easy recipes.”

One of the more unusual recipes in her collection is for pinto bean pie.

“When we moved to Texas in 1986, I found this recipe for pinto bean pie in a free paper that was delivered to

our house,” she said. “I had a pan of leftover pinto beans in the refrigerator, so I made it that night to surprise my family when they got home from school and work.”

Henry still makes the pie regularly. “It’s like a little bit like a pecan pie without nuts,” she explained.

Henry, who retired from First Financial Bank in 2009, is now an empty nester, along with her husband Robert.

“I have more time to cook since I retired, but less people to cook for,” she shrugged, “so I still don’t like to spend a lot of time in the kitchen.”

Easy Chicken Pot Pie

“This recipe was given to me by a very dear friend,” said Henry. “It’s easy to make and can be made in a regular deep dish pie pan or you can double the recipe and make it in a 9x13 to serve a larger crowd.

Add a tossed salad and hot rolls for a delicious meal.”

Ingredients 1 boiled fryer (or two large cans of cooked chicken breast) 1 can Veg-All, drained 1 can cream of chicken soup 1/2 cup chicken broth 2 deep dish pie crusts Set the oven to 350 degrees.

Cook chicken until tender and pull meat from bone.

Mix all ingredients in a bowl and pour mixture into one pie crust.

Use second crust as a top crust.

Pinch edges together. Bake until golden brown -- about an hour.

Mashed cooked pinto beans and set aside. Beat eggs in a mixing bowl, then add sugar, butter, vanilla and beans. Mix well.

Ladies bowling group seeks new members

T

he Parker County Women’s and Newcomers’ Club knows how to have fun.

Not only does the group meet once a month for lunch, entertainment and shopping opportunities, members can also participate in various club activities throughout the month.

They’ve got something for everyone, including those interested in card games, movies, weekly lunches, reading, and even bowling.

The club’s bowling league meets each Thursday at Film Alley, and they are currently seeking additional members to insure that each team has competition on Thursday.

League coordinator Mollie Cravey said women of all ages are invited to join The Women’s and Newcomers’

Club. “If you like to stay busy and have fun, join our club!”

Cravey says anyone wanting to see what the club is all about may visit their monthly luncheon the first time as guest. If you enjoy yourself, club dues are only $35 annually.

The monthly catered luncheon takes place at the First United Methodist Church, Family Life Center, 301 S. Main Street, in Weatherford, on the second Friday of each month.

Social time begins at 9:30 a.m., followed by a short business meeting at 10:30, then a guest speaker or live entertainment. The buffet lunch starts at noon.

The club currently has over 180 members.

Aledo Church of Christ leader Kenton Harvey celebrates 80 years

Kenton Harvey, a longtime elder at Aledo Church of Christ, celebrated his 80th birthday on Oct. 15 with a reception hosted by the church.

According to the church website, Harvey is originally from the Azle area and is an Azle High School graduate.

He was married to his wife Shelia for 51 years before she passed. The couple had two children.

The Harveys were dairy farmers in the Azle area for many years and were often recognized for their achievements.

Mrs. Harvey was selected president of the Young Homemakers of Texas

and also named Outstanding Young Homemaker of Parker County. Mr. Harvey was State President of Texas FFA and State President of Young Farmers of Texas.

In 1968, the couple was named Outstanding Young Farm Family of Parker County.

Harvey has served the Aledo church for 31 years. He has also worked with churches in Justin, Briar, Poolville and Nacogdoches for a total of 50 years of service.

Harvey is a big sports fan and also enjoys spending time with his seven grandchildren.

T

he “Big Holiday Eating Season” is upon us and that means food. Heaps and heaps of food, including special dishes we often have only at this time of year. Comparing it to a football game, I’d sum up the forthcoming Big Holiday Eating Season like this: Thanksgiving weekend is the kickoff and we hit the ground running.

The kickoff is followed by the three steady quarters Christmas, Hanukkah and the entire month of December when we plod along steadily stuffing calories in our mouths for days in row.

The fourth quarter frenzy takes place over New Year’s because it’s our “last chance” before we have to diet.

Then, the game‘s over. We collapse and start getting ourselves back in shape by starving until the Super Bowl. The process repeats itself every year.

As the Big Holiday Eating Season approached the year I was president of the National Speakers Association, I sent each of my 18 board members what thought was the perfect gift from a Southern humorist — slices of country ham. Real country ham. Country ham trimmed with enough fat to make red—eye gravy.

My gift card proclaimed, “It‘s the Holidays! Time to eat! Enjoy Southern ham from a Southern ham.”

It seemed clever to me. The Southern board members raved. Well, of course. Receiving real country ham is like finding gold for the Southerner any time of the year. But heaven help me, the responses of speakers from “somewhere else” revealed that they had no idea what to do with real country ham.

her country ham during Thanksgiving weekend and cooked her slices in the oven for hours. When she finally took a bite, a cap came off her tooth.

A motivational speaker in California saved his ham for Christmas, mainly because he didn’t know what to do with it. Then, he beat it with mallet and cooked it in the microwave until it was inedible.

A sales trainer in Minnesota boiled his ham for New Year’s to the point where even his dog wouldn’t eat it.

In general, most thought the ham had spoiled in shipping. So sad. So very sad. But I could sympathize. I regretted wasting good country ham on the undeserving, but I definitely understood.

I “took after” my grandmother, who didn’t cook, rather than the one who did. My husband Jerry, a.k.a. “Left Brain,” loves eggs, country ham, grits, biscuits and that most southern of traditions – red-eye gravy.

I like these dishes too, but prefer to order them in restaurants. I know to ask, “Do you have real country ham or just city ham?” (I save my breath if the restaurant is out of the South.)

The first year we were married, I asked Left Brain what he wanted for breakfast during Thanksgiving weekend. It was the last year he had a choice. He chose a big Southern breakfast, like the one outlined above, and placed special emphasis on the red-

eye gravy. He even added something like, “Do you know how to make it?”

“Of course,” assured him, and immediately telephoned my “cooking grandmother” in Luveme, Alabama.

Babies in Alabama are given directions for cooking red-eye gravy when they leave the hospital. Unfortunately, I wasn’t born there.

She shared her directions with me.

“Leave the fat on the slices of ham and fry them in your black cast iron skillet until the ham is brown on both sides.

You do have a black cast iron skillet, don’t you?”

“Yes, ma‘am,” answered and jotted down, “Buy black cast iron skillet.”

“Good,” she said. “When the ham is brown, cut off some of the fat and take the ham out of the skillet and put it on a warm plate. Leave the browned drippings and fat in the pan. Add several tablespoons of coffee to the drippings in the skillet and maybe a little water.

Cook it down until it starts smoking and pour it in bowl. In few minutes, you’ll see a difference in color. That’s the red eye in red-eye gravy.”

It certainly sounded simple, although her words “maybe add a little water” made me nervous. And what was “cook it down?” But it was the word she didn’t use that caused the problem.

If you read back over her directions, you’ll notice she didn’t say a word about first brewing the coffee. I bought sure ‘nuff black cast iron skillet. (We now keep it under the bed to knock out intruders. It’s the heaviest thing we can pick up and still swing.)

I fried the ham until it was plenty

brown and put it on a warm plate.

Then, as instructed, I measured out several heaping tablespoons of ground coffee and dumped them amongst the drippings in the skillet.

I threw in a little water and started “cooking it down.” I still wasn’t positive what I was looking for, so just waited for it to start smoking. When it did, scraped the gritty concoction out of the black skillet into bowl.

I sure didn’t see any red eye. It looked like dirty grease. That said, I was right proud of myself that Thanksgiving weekend when I plopped it all down in front of Left Brain and watched him heap gravy onto his grits, eggs and biscuits.

I’ll say one thing for him. He tried.

He truly tried to eat whatever it was that was all over his food. But he didn’t rave, so soon I said, “Well?”

He chewed slowly several times and then held up finger to signal, “Gimme minute.” Next he took a big swallow of milk, chewed some more and finally proclaimed, “It’s different.”

“Different how?”

“I’m not sure,” he mumbled, working his tongue around in his mouth. “But it’s the first time I’ve ever had red-eye gravy stuck between my teeth.”

Suit up! The Big Holiday Eating Season is upon us. Enjoy! But don’t eat your way into overtime.

ill Kloster never studied marketing. The words goals, objectives, strategies and tactics weren’t part of his vocabulary.

He didn’t promote his product from a textbook; he did it from his heart — a concept that would have left marketing gurus cringing. Except that it worked.

Bill Kloster operated on instinct that was so on target that his tiny Dr Pepper franchise was continuously among the top 10 producers in per capita consumption.

Bill knew his business. He started at the bottling plant when he was 14 years old.

For 67 years, including the day he died, he put in long, hands-on hours, focusing on quality control, community involvement and his own unique style of sometimes blustery, sometimes covert public relations.

Bill emphasized those same values he had learned as a young man. He held on to the original drink formula, the antiquated bottling equipment, and a massive assortment of Dr Pepper collectibles, which became his passion. Through the years, he used those elements to develop a successful enterprise and a popular tourist attraction. And most important, he

built a fiercely loyal following around the world.

When bottom line indicated the tiny Dublin plant should give up pure cane sugar in exchange for less expensive corn sweeteners, Bill wouldn’t budge. He continued to subscribe to the country theory of “dancin’ with who brung ya,” refusing to change the recipe that always gave his local product its unique taste.

Bill always spent long hours at the Dr Pepper plant. But in 1995, following the death of his wife, he dedicated himself to the expansion of the museum collection and the promotion of the soda shop.

Bill died suddenly on Sept. 27, 1999, after a full day at the bottling plant. He is gone only in the physical sense; the echo of his chuckle and the shadow of the wide grin that accompanied his favorite Dr Pepper stories will always be felt.

Dublin Bottling Works, located at 105 E. Elm in Dublin, is open TuesdaySaturday from 10 a.m. to 5 p.m. and Sunday 1pm - 5pm. Tours begin at 10:15 a.m. and run every 45 minutes until final tour at 4:15 p.m. Seniors can take the tour at a discounted rate of $4. A variety of sandwiches and chips are available during the lunch hour.

Kathy Cunning wins Artist of the Month for October

he Weatherford Art Association named Kathy Cunning as October’s Artist of the Month.

Cunning’s winning watercolor, titled “Let Me In,” will be displayed at the Doss Cultural & Heritage Center this month.

Cunning has been a part of the local art scene for decades and taught art classes for Weatherford ISD from 1985 to 2011.

“When I retired, I decided to do one thing instead of a little of everything,” she said, “and that was watercolor.”

“Let Me In” features a vintage car and was inspired by her interest in reflections, particularly

those in chrome.

“Newer cars don’t have that,” she pointed out.

Although Cunning spends much of her time on watercolor, she’s also part-owner of a quilting business with her sisters in Kansas called Seven and a Half Sisters.

“I do a lot of sewing for them,” she said. “I do the puppets, activity dolls and doll clothes.”

Cunning says she tries to make time for painting twice a week with groups at Willow Park Baptist Church and Hobby Lobby.

“I’m one of those people who needs to stay busy,” she said.

Second place in the art association’s monthly contest went to Linda Whitehouse for her oil painting titled “Shop.” It will be displayed at the First National Bank in Weatherford.

Third place went to Jerry Shidal for his acrylic “Summer Bliss.” It will be displayed at the Community Credit Union.

Got a camper? Ready to serve the Lord? Let’s plan a trip.

his spring, Marsha and I began thinking about what we’d like to do with some of our time now that our son Adam is married and out of the house.

We thought about how Grady and Linda Buck go up to the northern part of the USA in the summer, driving their RV and assisting in church construction projects.

I told Marsha we could work with North America Mission Board or another organization and do some other things as well to share Christ’s love and serve Him by serving others.

We agreed we’d both like to do that as well as just go camping with family and friends.

So, in July we bought a small camper that’s just right for us. I soon learned of others at North Side Baptist Church who have campers,

In the July publication of Mature Living Magazine, an article titled, “Campers on Mission,” by Deb Dearmond caught my eye. As I read it, I thought this is for The Boomers at North Side.

“Let’s pack our campers, our gear and take The Great Commandment and The Great Commission to the great outdoors.”

We could adopt Willie Nelson’s theme song, “On the Road Again” as we go serving others and sharing Jesus, wherever we go and whatever we do, while enjoying the fellowship

of our brothers and sisters in Christ singing in this great land.

In the article, I learned that Campers on Mission (COM) is a national fellowship of evangelical Christian campers who seek to share their faith and the love of Jesus through their participation in mission activities while camping.

As I began to think about this, I thought of Gatlinburg, Tennessee, where those rogue fires last year burned homes, took lives, and destroyed parks and wildlife areas. I’d like to see that part of Tennessee! Let’s check with the State Parks and Recreation and see if we could help in some cleanup.

I also thought about the Hot Air Balloon Fest in New Mexico. I want to go and see that! We could work with a new church planting opportunity,

VBS in Pioneer Missions, disaster relief, music counseling – the possibilities are endless.

You see, as our season of life changes, new opportunities open up, although health may be a factor as to what you can do or how long you can do it each day or week.

This past summer, Roger and Teresa Smith took family and friends to work on a church up in the mountains of New Mexico. They told me about what a blessing it was to their family.
