Risalamande with Uganda vanilla

A Whisper of Christmas Magic.

On Christmas Eve, when the feast is done and candlelight flickers low, a bowl of ris à la mande appears — soft, sweet, and laced with vanilla.

Hidden inside, a single whole almond waits in silence. The one who finds it wins a gift, but the real joy lies in the guessing, the giggles, and the spoonfuls shared.

More than a dessert, it is a memory, a little bit of magic — passed down with love, year after year.

The Elements In the Making

150 g porridge rice

750 ml whole milk

250 ml whipping cream

75 g sugar

1 Uganda vanilla pod

1 tsp salt

125 g coarsely chopped almonds

300 ml whipping cream (for folding in later)

In the Making

The Rice

Place the rice in a saucepan with cold water and bring to a boil. Let it cook for 1 minute, then drain the water. Repeat this process twice.

Cook the Porridge

Return the rice to the pot. Add the milk, 250 ml whipping cream, sugar, and the whole vanilla pod (split lengthwise). Bring to a gentle boil, then reduce the heat and let it simmer uncovered for 45–60 minutes. Stir regularly to prevent the milk from sticking or burning.

Cool and Rest

Once the porridge is thick but still slightly loose (it will firm up as it cools), remove it from the heat. Stir in the salt. Let the porridge cool completely — ideally overnight. Remove the vanilla pod and scrape out the seeds.

Finish the Dessert

Whip the remaining 300 ml of cream until soft peaks form. Gently fold the whipped cream into the cooled rice along with the chopped almonds and the vanilla seeds. You can mix the seeds with a little sugar first to help distribute them evenly. Taste and adjust seasoning if needed. Chill until ready to serve.

Serve Magic

Serve cold, topped with a generous spoonful of cherry sauce.
