WATERSMART Gardening Website Highlights Native and Low Water Use Plants Helping our customers with water conservation is an essential part of what we do at the Soquel Creek Water District. A lot of water savings can be achieved through changes inside our homes, but a significant amount of residential water consumption is related to outdoor water use. Big landscaping changes, however, can be both time consuming and expensive, so we are constantly working to provide our customers with rebates, information, and technical assistance that will help them make the transition to more water efficient landscaping.

Did you know that there is incredibly useful and inspirational website for choosing “water-smart” plants and getting inspired to garden with water in mind?

The “Water-Smart Gardening in Santa Cruz County” website, located at www.santacruz.watersavingplants.com, was customized in partnership with the Master Gardeners of Monterey Bay and the Water Conservation Coalition of Santa Cruz County (of which Soquel Creek Water District is a member). This tool is custom-built to provide information about plants, watering and resources for the Santa Cruz County environment.

This mobile friendly website has several key features: 1 Plant keyword search: You can type ‘salvia’ in the search box in the top menu and get a listing of all the salvias on the site.

2 Helpful Plant Lists: There are 30 popular plants lists including deer tolerant plants, lawn substitutes, California natives, low water perennials, and erosion control.

3 Guided Search: The guided search asks a series of questions about your desired plant to focus your list. The questions include plant type, height, color, bloom season, sun exposure, and soil type. At the end of the questions you will be provided with a focused photo list of plants that meet your garden’s needs. Clicking on each photo reveals the plant’s details. Plants that are California Natives are denoted with a California poppy icon over the photo.

What Came First, The Tomato or The Seed?

Planting Your Next Garden With Seeds.

Saving seeds from one year to plant the next is an age-old tradition, some families even pass down seeds by generation. Saving vegetable seeds can help preserve the particular variety you are growing ( for example if you are growing an heirloom variety). To save seed is to participate in the process of natural selection. If you save seed only from the biggest tomato of the bunch and replant them year after year, you’ll eventually end up with seeds that produce plants on which all the tomatoes are bigger.

The same holds true for almost any other trait. Want tomatoes that ripen earlier? Save seed from the first fruits to ripen each year. Want disease resistant plants? Then definitely don’t save seed from those that are disease-infested. You don’t need to get too scientific about it, but as a rule of thumb, only save seed from your healthiest, most robust, tastiest plants.

Saving seed involves three steps: selecting seeds from the most suitable plants, harvesting them at the right time, and storing them properly until you need to sow them.

HERE ARE SOME TIPS TO HELP YOU GET STARTED:

Tomato seeds: Allow the fruits to fully ripen on the plant and scoop out the seeds and pulp. Place in a jar of water and leave for a few days, swirling them in the water daily. After a few days, the seeds should have come free from the pulp and sunk to the bottom.

Pour the liquid away and rinse the seeds. Leave them to dry on a paper towel.

Pepper seeds: Harvest seeds from peppers after the fruit has fully ripened on the plant and started to wrinkle. Remove the seeds from the peppers and spread them out on paper towels to dry.

Peas and Beans: Allow the pods to ripen on the plant until they are dry and start to turn brown. Remove the pods from the plant and spread them out on a tray indoors, to dry. Leave them for at least two weeks before shelling the pods or wait until you are ready to sow the seeds the following spring Pumpkin Seeds: Remove the pulp and seeds from inside the pumpkin. Place this in a colander. Place the colander under running water. As the water runs over the pulp, start picking out the seeds from the pulp. Rinse them in the running water as you do. Do not let the pumpkin pulp sit in non-running water. There will be more seeds inside the pumpkin than you will ever be able to plant, so take the ones you don’t want to save and roast them in the oven with a little salt. A great snack!

Dried seed should be placed in paper envelopes or seed packets labeled with the name of the variety and the date it was harvested. To ensure longevity, keep the seed packets in a glass or plastic container in a cool dark place. Any seed stored this way should remain viable for at least a few years, though some crops may keep for a decade or more.

Time to plant! Germinating your seeds is an easy process and can be done using items from your household. For instance, instead of buying premade pots for germinating use a toilet paper roll. Cut it in half, make four cuts on the bottom and fold up like you would close a box. Fill it with potting soil, pack it down and add your seeds. Place your homemade pots in a watertight container and completely soak the paper roll. Keep it wet the whole time you are growing. Place your container in a clear plastic bag and seal it. You are creating a small greenhouse, trapping the moisture until the seeds sprout.

Once your seeds reach the top, take off the plastic bag. They will need air circulation, otherwise, the toilet paper seed pots may mold. Once the seeds have sprouted and are hardened off, these toilet paper seed pots can be placed directly into the ground and will compost away. They are especially good for planting any kind of seed that does not like to have its roots disturbed.

individual sections. Of course, these can be planted directly in the ground.

You can make some fantastic biodegradable seed starter pots out of empty citrus peels, which you would have discarded anyways. Just cut a lemon, lime, or orange in half crosswise, hollow it out, drill a hole in the bottom to give extra water a way out, and fill the citrus halves with soil.

If you want to germinate your seeds outside, there are many ways to do that. Some household items are perfect for creating your own mini greenhouse.

Start your seeds in a recycled (make sure it is transparent) milk jug. Simply cut the top off, fill with soil, add your seeds and some water in the bottom, and replace the top. The jug will keep humidity in while allowing plenty of indirect light to grace your little seedlings.

Upcycle a rotisserie chicken container into a mini greenhouse by poking drainage holes in the bottom and air holes in the top and filling with soil. Plant and water seeds and place the top back on. Now just sit back, and soon you’ll be enjoying the fruits of your labor!

You can really go all the way and build a full-size greenhouse in your backyard!

Greenhouses made of plastic bottles are easy to make, very cheap, and definitely a great solution to having fresh produce from your own garden all year round. The plastic bottle greenhouse has many benefits besides minimal costs. It is selfwatering, as rainwater can penetrate through the gaps between the bottles, it raises the temperature by 10 degrees C, it gives you the opportunity to recycle bottles and keep them away from landfills in a very smart way, and it is super cheap to repair if ever needed.

Did you impulsively buy a load of old windows at the thrift store, but now have no idea what to do with them? They are perfect for a greenhouse! A greenhouse built with old windows is remarkably economical and is a great way to repurpose items.

You can even furnish it with used or recycled benches, shelves, doors, old planting containers, and other materials scavenged from throw away piles. There are plenty of places to scavenge old windows and such, check your local listings.

A hoop house might be the simplest type of DIY greenhouse out there. A hoop house is little more than polyethylene or plastic sheeting stretched over bent plastic or PVC tubes.

Depending on how handy you are or how many plants you’re growing, you can make your hoop house as simple or as complex as you’d like. For example, the simplest option is to stretch PVC pipes across a raised bed, secure the pipes into place on each side, then drape a sheet of plastic over the top. The plastic provides a layer of protection against freezing temperatures. Because it is translucent, light is still able to seep in.

If you are handy with a hammer and nails, you might try putting together your own lean-to greenhouse. A lean-to greenhouse only has three sides. The fourth side of the structure is the wall of another building, such as your home or a garden shed. There are a few benefits to making a lean-to greenhouse structure. One big advantage of the design is that there’s less for you to build since one wall already exists. Another advantage of the design is that the wall of your home or shed provides an extra layer of insulation to keep your greenhouse warm, without needing to crank up the heat. Heat from the house or shed wall can radiate into the greenhouse at night, keeping the temperature well above freezing.

Look at What’s in Season in Your Local Market or Garden!

ARTICHOKES Artichokes are fun to grow, and you can plant them in late fall. You can buy the starter plants at your local nursery. They grow quite tall so make sure when you plant your artichoke it has plenty of room surrounding it. When the artichokes have stopped appearing and the plant starts dying off, cut it back and it will come back next season!

BEETS The wonderful thing about beets is that although it is an annual, it can be planted year-round on the Central Coast and, with staggered planting, you can enjoy a continuous supply of both the delicious green tops and bulbous roots. It is delicious in salads, roasted, in sandwiches and, if you are energetic, pickled!

GARLIC Garlic is easy to grow and produces numerous bulbs after a long growing season.

It is frost tolerant. Beyond its intense flavor and culinary uses, “the stinking rose” is good in the garden as an insect repellent and has been used for centuries as a home remedy.

KALE For a fall harvest, young kale plants can be set out 6 to 8 weeks before the first fall frost. Kale is delicious in salads, quiches, and soups! To make kale chips remove the ribs and toss in olive oil or lightly spray and sprinkle with a combination of cumin, curry powder, chili powder, roasted red pepper flakes or garlic powder.

Bake at 275°F for 15–30 minutes to desired crispness.

KOHLRABI Plant Kohlrabi seeds outside after danger of a hard frost: sow in midsummer for a fall crop, or in fall for a winter crop. Before cooking, trim and peel it very thoroughly (the skin is quite tough and indigestible). Slice, julienne or grate it into your salad or slaw for a great crunch and a fresh but slightly spicy flavor. It also can be cooked — boiled, steamed, sauteed, roasted or fried.

LEEKS Sow leek seeds indoors 8-10 weeks before the last frost date. It should take about 5-7 days to germinate. Seedlings can be transplanted outside as soon as the risk of hard frost has passed. When transplanting leeks into your garden, space them 6 inches apart. Leeks can be used in many recipes that call for onions. Use leeks in soups, stews, and other simmered dishes.

ONIONS Onions are a good choice for late summer and early fall planting. The size of an onion depends a lot on how much sunlight it gets. Green onions that don’t need to develop bulbs are a good pick to plant all year long as long as the temperatures don’t reach freezing.

POTATOES Potatoes love cool weather. They can tolerate temperatures upwards of 80 degrees but won’t produce as many tubers in hot weather. Plant them as a winter crop and you will reap the rewards. Dig a trench at least six inches deep and toss in a few potatoes, about six to eight inches apart.

SQUASH The time to plant winter squash is after the last frost is over. Just plant seeds directly into the ground and they will grow until the ground warms up. Getting the seeds into the ground first thing after the last frost is imperative since it takes so long for them to ripen. A few of the most common and delicious are Butternut, Acorn, and Spaghetti.

SWISS CHARD To enjoy a fall harvest of Swiss Chard it should be planted about 40 days before the first fall frost date. Chard can be used in salads to add color, in smoothies, in soups and stews, on pizzas, in sandwiches in place of lettuce, and quiches. If you are not a fan of Kale, use spinach instead!

BAKED ARTICHOKE 1 artichoke ½ lemon 2 tablespoons olive oil Salt and pepper to taste 1 tablespoon garlic, minced 2 tablespoons fresh parsley ½ cup parmesan cheese

Remove the stem of the artichoke. Cut about 1 inch off the top of the artichoke. Take a pair of kitchen scissors and snip off the thorns on the tip of the artichoke petals. Use half a lemon and rub lemon juice over the cut portion of the artichoke to prevent it from browning. Drizzle with olive oil and season with salt and pepper. Spread open the petals and rub minced garlic all over. Add the parsley and Parmesan; make sure to get it in between the petals. Top with more pepper if desired. Wrap the artichoke in aluminum foil. Bake at 425°F (220°C) for 1 hour and 20 minutes. fall-winter 2021-22

2 tablespoons olive oil for roasting vegetables 3 tablespoons olive oil for soup base 1 medium onion - diced 2 tablespoons all-purpose flour 4 cups vegetable broth 2 medium russet potatoes - peeled and diced. You can use Yukon Gold--they don’t need to be peeled!)

4-5 fresh thyme sprigs 1 cup milk (Any type works, you can use Unsweetened Almond Milk if you like) Salt and Pepper to Taste

A thick and hearty soup with delicious winter vegetables. Serve with a crusty loaf of bread for a delicious winter dinner.

Serves 6 Heat oven to 400 degrees Fahrenheit.

In a large bowl, toss the butternut squash, parsnips, sweet potatoes, carrots, and fennel with 2 tablespoons olive oil and 1/2 teaspoon coarse salt. Spread in a single layer on a large baking sheet and roast until tender and browned in places, about 40 minutes, turning a couple of times while roasting.

While the veggies are roasting, prepare the base of the soup. To a large saucepan over low heat, add 3 tablespoons olive oil. Add the onion along with a pinch of salt and a bit of pepper, then cook, stirring occasionally, until soft, about 10 minutes.

Stir in the flour and cook for 3 minutes, stirring constantly.

Stir in the vegetable broth. Add the potatoes and thyme. Bring to a boil over medium heat then reduce heat to low. Simmer uncovered for 15 minutes or until potatoes are soft. Remove from heat. Pick out the thyme stems and discard.

Stir in the roasted vegetables. Carefully transfer about 3 cups of the chowder to the pitcher of a blender or a bowl if you have an immersion blender. Puree until smooth. Return the pureed mixture to the pot and stir to combine. This will make the soup thick and creamy.

Stir in the milk. Place the pot back on the burner, and, with the heat on medium-low, return to a simmer, stirring often to prevent burning.

Taste and add additional salt and pepper if desired.

“I find their flavor and crunch irresistible and I love the color,” said L.A.-based chef Silverton. “It’s really easy to add pistachios to almost anything you make. Their flavor enhances other ingredients so well, but they can also be the star of a dish.”

“The great thing about pistachios is they are just the right size, and they add flavor, color and texture to your dish, on top of all the nutritional benefits,” said Yan. Long a popular snack, the trend of using pistachios for cooking appears to be spreading beyond California.

American Pistachio Growers, the trade organization of pistachio farmers in the western United States, reports the sale of pistachio kernels, or unshelled nuts, domestically has risen 14%, and represents 22% of all pistachio sales. Representatives cite the reason as a combination of the increase in people preparing meals at home since the outbreak of COVID-19, and the desire for healthy ingredients.

Pistachios are nutrient-dense and high in protein. Earlier this year, pistachios earned the status of being a “complete protein,” making them popular among people following a plant-based diet. In July, a university study underscored the importance of pistachios as part of weight-loss programs.

With the world’s top chefs adding more pistachio-inspired dishes to their menus, the little green nut is suddenly red hot. But don’t worry about there being a shortage. This year’s American pistachio harvest yielded a record-setting one billion pounds.

WOLFGANG PUCK’S ROASTED RACK OF LAMB WITH PISTACHIO SATE SAUCE Yield: 6 to 8 servings PISTACHIO SATE SAUCE: 1 cup coconut milk, • 1/4 cup lime juice, freshly squeezed 1/4 cup pistachio butter* • 1 tbsp. soy sauce • 1/4 cup cilantro 1/4 cup green onions, minced • 2 tsp. Aleppo chiles, or another mild citrussy chile METHOD: In a small saucepan combine coconut milk and lime juice.

Heat over medium heat, whisking constantly until coconut milk is hot and aromatic. Transfer to a blender and add remaining ingredients. Adjust seasonings to taste and set aside.

RACK OF LAMB: 2 each lamb racks, frenched Olive oil, as neededKosher salt, as neededBlack pepper, freshly ground, as needed 1/2 cup / 170 g pomegranate syrup METHOD: Rub all sides of lamb racks with olive oil, salt and pepper. Place on a baking sheet and drizzle pomegranate syrup across the top of each rack and even out across surface with a pastry brush.

Roast in a preheated 450°F (232°C) oven for 15 to 20 minutes for rare/medium rare, or longer depending on preferred doneness. Remove from oven and let rest for 10 to 15 minutes.

ASSEMBLY: Cut lamb racks between the bones into individual chops. You can plate the lamb on individual plates or a platter. Using your own presentation style, fan sweet potatoes or other vegetable on both sides of plates or platter, arrange 2 chops per person, drizzle Pistachio Sate onto plate, drizzle pomegranate syrup on top of the vegetable and sprinkle with a generous amount of pistachios, finish with a few sprigs of fresh cilantro. *PISTACHIO BUTTER: 2 cups pistachios, roasted • 1/4 to 1/2 cup grapeseed oil 1/4 tsp. sea salt, optional METHOD: Scoop pistachios into a food processor and run for 60 to 90 seconds. Open the processor and scrape the sides. Run for another 60 to 90 seconds. Scrape down the sides and continue processing. Slowly drizzle oil as needed into the butter as it’s processing until you achieve the texture and consistency you prefer. Add optional sea salt and pulse to combine.

Transfer butter to a container with a snap-on lid. Refrigerate if holding the butter for more than a few days.

Equipment Needed: Blender, baking sheets, small saucepan, whisk and pastry brush.
