Alkaline Water Company adds convenience stores The Alkaline Water Company Inc., which produces bottled alkaline drinking water as Alkaline88, added more than 1,100 convenience stores in the first four weeks of launching with E.A. Berg.

In January, the company formed an agreement with E.A. Berg to help expand the retail presence of Alkaline88 within the convenience store channel across Northern California, Southern California, and Houston, Austin, Dallas and San Antonio, in Texas. Customized vans prominently displaying the Alkaline88 logo cover more than 16,500 convenience stores in these areas.

Washington Federal’s Brown joins Care Fund board Washington Federal Arizona Regional President Mike Brown, of the Scottsdale Airpark area, has been appointed to the board of directors for Care Fund, a nonprofit that provides mortgage and rent assistance to Arizona families who are experiencing financial hardship due to their child’s unforeseen medical illness or injury.

“While we’ve always supported the mission and organization, in 2018 our Washington Federal Foundation approved a $15,000 grant to Care Fund, which gave me the chance to see firsthand the good works they are doing across Arizona,” Brown says.

“When the opportunity arose to join this group of fellow leaders as stewards and fundraisers for Care Fund, I jumped at the opportunity.

Barro’s, Pepsi donate proceeds to child cancer foundation Pepsi and family-owned Barro’s Pizza are teaming up for the fourth year this June to raise money for children and families affected by pediatric cancer.

In June, all Barro’s Pizza locations will donate proceeds up to $40,000 from the sale of any lunch special to the Arizona Cancer Foundation for Children (ACFC), an Airpark-based nonprofit whose mission is to help Arizona families with the high costs and challenging logistics while caring for their children during cancer treatment.

“Helping others in our community is paramount to our family and our business,” says Bruce Barro, owner of Barro’s Pizza.

“We are constantly looking for ways to make a difference in our community so, in June, we will donate all proceeds from the sales of any lunch special purchased to help

families that have children battling cancer.”

Arizona Cancer Foundation for Children was founded by Chrisie Funari after she lost her young daughter, Ava, to cancer.

Thunderbirds Charities, the charitable giving arm of The Thunderbirds—hosts of the Waste Management Phoenix Open— donated $1 million to Special Olympics Arizona.

The donation is the largest single gift handed out by Thunderbirds Charities since its inception in 1937, and the gift will help support the building of a new Special Olympics Arizona state office and distribution center adjacent to Perryville Prison in Goodyear.

Rotarians keep busy; meet weekly

T

he Rotary Club of Scottsdale has been prolific.

The club, along with the Paradise Valley Rotary Club, selected the four finalists and two alternates to receive fully paid trips to the Youth Salute Leadership Conference on October 19 to October 23 in St. Louis for the Town Meeting on Tomorrow.

Youth Salute is a recognition program for high school juniors who are outstanding leadership achievers. They must have at least a B grade point average, and have been elected to leadership positions by their peers, in their schools and or community organizations.

Fifty-three students applied as Youth Salute candidates from eight Scottsdale high schools. The finalists are Alexis Johnson, Chaparral High School; Eve Rennie, Saguaro High School; and McKenna Lane, and Leila Khan from Scottsdale Preparatory Academy.

Alternates are Kaylee Filandro from

Scottsdale Preparatory Academy and Leah Veneziano, Pinnacle High School.

The remaining seven semifinalists were Catriona Jung and Michelle Reingold from Desert Mountain High School; Kaitlyn Hohl, Scottsdale Preparatory Academy; Luhnyae Campbell and Grace Schlenker from Arcadia High School; Cannon Cook and Porter O’Doherty from Chaparral High School.

Airpark firm proposes film, TV campus in Peoria

aramount, Sony and NBCUniversal are just a few of the entertainment companies that could be coming to the West Valley, if all goes according to plan for a local group.

Ruben Arizpe, CEO and founder of East Scottsdale Consulting Inc., recently told Peoria Times he and his business partners are looking to develop a 130-acre film and TV studio campus called Diamond Sky Studio Complex at Loop 303 and Lone Mountain Road, near Peoria’s Vistancia community.

In addition to 24 stages, Arizpe says the plans incorporate a “city walk,” which would serve as a sort of entertainment and retail district comparable to Universal CityWalk.

“It’s giving people in Peoria a place to go in that area. It’s also attracting people from all over the city with the amenities,” Arizpe says. “It’s going to be an exciting place to be.”

And according to Arizpe, those three media companies are interested in his plans — plans he claims could bring $2.4 billion in revenue to the state per year, along with 1,500 jobs.

While one could say there’s much to be anticipated about, there’s a catch: the project is not yet set in stone with the city or state, and further negotiations have to be had.

Bringing Hollywood to the desert According to East Scottsdale Consulting Inc.’s website, it is “laying the groundwork to bring Hollywood to the desert.”

Arizpe’s “Hollywood,” he clarified, would serve as a rental facility. It will not producing its own works.

Initial plans called for 16 stages, but Arizpe felt it has to be upped to 24. And Sony Pictures would be involved in the design of the studios, he added.

Diamond Sky Studio Complex’s companion “city walk” area, as described by Arizpe, would have shops, bars, restaurants and theaters, like Universal CityWalk.

Additionally, he says, to accommodate children, plans call for an area called “Gamer’s Row.” It would feature a virtual reality/ arcade area on the first level, as well as space for fast-food eateries on the second level.

Children would wear wristbands paired with a credit or debit card for spending, and tracking capabilities would prevent them from wandering from the area unsupervised.

Other features of the “city walk,” Arizpe says, would be a small water park, a Ferris wheel and a hotel/office building. Arizpe says plans also call for a Bourbon Street-like area with Cajun restaurants and bars.

And where the entertainment and shopping district meets the production campus, he says, would be four stages to host game and talk shows.

Coming with experience Arizpe says he brings more than two decades of experience to the table. More specifically, he says he was a finance executive for Disney, Paramount and Sony.

“It’s not a very high-level position, but it taught me a lot,” he says with a laugh.

Arizpe’s business partner, Dan Sherkow, president of production for East Scottsdale Consulting Inc., also has several decades of experience. According to their company’s website, Sherkow worked stints with NBC Television and Time-Life Films, and was later vice president of East Coast production for Paramount and vice president of production for Tri-Star. He has also been involved in numerous film productions, among other business and film industry experience.

“We both have a lot of experience, and our contacts are solid,” Arizpe says.

“They’re very successful; they know what they’re doing,” he says. “Both my partner and I come from studio backgrounds. We know what we’re doing; we have the contacts.”

Moving forward Before the proposed campus can move forward, Arizpe and his partners are looking to get the city of Peoria and Gov. Doug Ducey officially on board.

He says talks with Peoria officials have been ongoing for about a year and a half, but nothing formal has been agreed upon.

When contact by Peoria Times, city officials provided the following statement: “Mr. Arizpe has shared his plans with the city and it is our understanding that he is trying to pull together his project team and secure financing. While the city is always interested in projects that create high-quality jobs or bring in new industry, this project is in the very early stages and the city has not entered into any formal agreements.”

Arizpe, however, says partners in the realms of funding, construction and development are already secure, though investors are still being sought. And he says proof the project is legitimate and feasible is something Peoria officials have yet to see.

As of print, Arizpe says he and his partners are on the brink of reconnecting with Peoria officials to get plans moving forward.

And that includes the acquisition of land for the development.

Ducey’s support, on the other hand, could help create incentives for film and TV production within the state, according to Arizpe.

“We are pursuing some acknowledgement from the governor that they will step up and help us champion these incentives — not a guarantee of any kind, just that he will help,” Arizpe says. “We feel that we can offer the state not only a great campus but also an opportunity for incentives that actually benefit the state and create jobs.”

Even without the incentives, however, Arizpe says the industry needs something like Desert Sky Studio Complex.

“We don’t really need the incentives.

We’re taking studio overflow,” he says.

“Right now there’s a backlog of production across the United States because there is no qualified stage space. Now, qualified stage space means technically qualified; they have to have certain specifications to work for film and television. And, we have contacts at three major studios that will take the overflow on, so they can fill it as we build it.”

And lower taxes than some other states as well as Arizona being a right-to-work state make the Valley attractive to studios, he suggested.

If all goes according to plan, construction on the campus, Arizpe explained, would be divided into three phases, starting with six stages that could be filled as they’re built. Modeled after Universal’s designs, he explained, the stages would have offices attached.

In full, however, the 24-stage-plus-“city walk” campus would take 18 months to construct. And as soon as all involved parties come to an agreement, Arizpe says, he and his partners would be ready to commence construction in as little as a month.

Arizpe estimated the project’s cost is $200 million. The first two phases would cost $50 million each, while the final phase would cost $100 million.

And while Arizpe is hoping everything works accordingly with Peoria, should discussions falter he is considering other areas in Goodyear, Phoenix or Glendale, across from State Farm Stadium.

S

tatistics show there are 299 sunny days each year in Scottsdale. Joe Cunningham knows better.

As the co-founder of Sunny Energy, Cunningham sees 365 days of sun.

Cunningham’s journey to the Valley of the Sun – and Sunny – actually starts in Buffalo, New York. For those keeping score, Buffalo has 150 days of sun and averages 92 inches of snow each year.

“I was an avid road cyclist in my teens in Buffalo, and then I studied Civil Engineering at Cornell University in Ithaca, New York,” says Cunningham, who also rowed on the crew team while there, lettering all four years.

“Solar energy was a topic of study, and immediately fascinating. Given it was the 1970s,

however, the concept was still in its infancy.”

It was so new that Cunningham, who moved to the Valley in 1985, spent the next 20 years leading the charge for other technologies, including computers, cable television and wireless internet.

During this time, he helped develop advanced wireless technology and services, as well as industry standards, government regulations, hardware and software to increase wireless spectrum use efficiencies and performance. That may sound like Greek, but essentially he helped shape the wireless world as we know it today. So much so, in fact, Cunningham has been recognized by the Wireless Communications Association International as a “Wireless Pioneer” for outstanding contributions.

“By the mid-2000s, solar technology was

finally gaining steam. Inspired, I pivoted and started selling and installing solar systems, then connected with one of the largest producers of solar technology, Centrosolar, whose complete U.S. operations were based in Scottsdale,” Cunningham says.

Over the next several years, he managed operations for the North American markets from Scottsdale, overseeing logistics, system design, sourcing and purchasing, private label manufacturing and outsourcing, order fulfillment, a nationwide technical services network and online systems.

By 2014, Cunningham and Centrosolar colleague Chris Wood – similarly dedicated to propelling solar technology forward – began developing their venture. They partnered with long-time solar contractors, Terry Rials and Jacob Stainbrook to form Sunny Energy.

Their mission is to provide homeowners with the best option to produce their own clean and inexpensive energy.

“The business didn’t happen overnight, even given Arizona is a top option for solar in the country for obvious reasons. In fact, it wasn’t until 2016 that I fully left Centrosolar,” says Cunningham, who notes business has picked up because 2019 is the last year to take advantage of the federal 30% solar tax credit.

According to Cunningham, the state of Arizona also provides a 10% tax credit, up to a $1,000, to offset the installation cost.

And as if helping those who want to lower their carbon footprint doesn’t keep him busy enough, Cunningham recently is expanding the company to Northern California.

Cunningham is also focused on ensuring a new generation of engineers is prepared to continue the charge of creating sustainable solar solutions worldwide.

“For the past two years, I’ve been working with students in ASU’s professional science master’s degree program in solar energy engineering and commercialization, taking them beyond the classroom and into the real world to develop hands-on master’s degree projects that will drive our industry forward,” Cunningham says.

So, how does someone so busy unwind?

“In the sun, of course,” says Cunningham, who’s kept up with road cycling since his teens back in Buffalo.

In fact, he not only still averages 5,000 miles on his bike each year, but is a past Arizona State Road Racing champion for his age group. 

HANGAR GAMES Long the Airpark’s most elite event space, Hangar One is finally reaching out to the masses

n 2014, when Vanity Fair, in a rare cost-cutting measure, moved its A-list Oscars party from its usual location at Hollywood’s Sunset Tower to a specially built 12,000-foot temporary structure on Sunset Boulevard it called an “aerie,” the New York Times reported some of Tinsel Town’s uber-socialites complained it “felt like an airplane hangar.”

It didn’t take long, however, for upscale parties held in actual airplane hangars to catch on. By 2017, the cavernous hangar, with

In Scottsdale, the hottest hangar remains Hangar One, the 17,000-square-foot centerpiece of the $50 million complex built in 2003 by Bennett Dorrance, billionaire heir to the Campbell Soup fortune amassed by his grandfather, John T. Dorrance, a chemist who devised the formula for condensed soup.

Tucked away on a quiet street between the east side of the Scottsdale Airport runway and North Hayden Road, the facility sits across from a twin hangar (utilized to house the actual planes of club members), with the two buildings joined by a suspended arch topped with a distinctive 108-foot-long aluminum sculpture shaped like a giant paper airplane.

“It’s obviously very unique, very grand,” says Bethanni Gomez, the facility’s event coordinator. “Most people who come here say they’ve never seen anything like it in a hangar.”

Until recently, Hangar One never did any marketing for its event spaces — it hasn’t had to, as glowing word-of-mouth recommendations have kept event bookers on a waiting list.

“We usually ask people to book events six to nine months out,” Gomez says. “Sometimes even a year out, if they’re looking to book around the holidays. In November and December, we’re often doing two events each weekend.”

its event spaces, in an effort to shake the “members only” distinction it’s garnered through its operations on the aircraft management side. While the facility offers storage space for about private aircraft (“five or six if we get all Gulfstreams,” Dorrance half-joked upon its groundbreaking), complete with “white-glove” aircraft maintenance and

other exclusive perks for dues-paying club members, Gomez says the company’s focus is on becoming a little more inclusive.

“We’re still membership-based here and our main core operation will always be taking care of our members,” she stresses. “But we do have these great spaces here that are specifically built for events, and we’d like to

be a little bit more open to the public. A lot of people still don’t know that we’re here.”

Going public From the start, Scottsdale’s Hangar One was, in the words of Arizona architect Vernon Swaback, the former Frank Lloyd Wright apprentice who co-designed the complex with preeminent New York interior designer Adam Tihany, “a fascinating project.”

The 124,000-square-foot complex, initially named Airmore Hangar One, took 15 months to complete and involved 54 subcontractors — about twice the number normally employed on a project of its size, according to Tempe’s Sundt Construction, the general contractor who oversaw the work. The “mind-boggling” array of custom fixtures, according to the data sheet on Sundt’s website, included “upholstered ceilings, exotic stone and terrazzo floorings, and a top-of-the-line automation and audio-visual system.”

Originally conceived as a private aircraft garage for Dorrance (a licensed pilot since 1965) and his wife, Jacquie, the couple gradually opened up Hangar One to an exclusive circle of friends and business colleagues — but even then Dorrance still considered it a “gated community,” in his words, welcoming only a select clientele. that inexplicably warps, Inception style, into a ceiling perforated with hundreds of Swiss cheese holes, was originally built just to house a collection of vintage cars.

That space is now the Red Room, rented to parties of approximately 300 people. “We do a lot of company parties, fundraising events and mitzvahs in here,” Gomez says.

“It’s great for events that don’t need the full

hangar space.”

The complex also offers Club 360, an intimate 75-person-capacity room that features a full bar and kitchen topped with a rooftop deck with an air traffic controller’s view of the adjacent Scottsdale Airport runway. The Dorrances initially used the space as a private clubhouse for entertaining friends, but today it’s rented out as a secretive party facility. 

K

aren May has an imagination and creativity that would make anyone envious.

As vice president of marketing for Scottsdale Private Event Venues, May turns hangars and event spaces into something truly magical.

She sees “Top Gun”-themed parties with a Tom Cruise look alike rappelling from a helicopter. “The Most Interesting Man in the World” arriving via helicopter. Hangars filled with classic cars and lights dimmed to mimic a drive-in theater.

“It’s a blank slate,” she says. “I can do whatever I want.”

For her work, May was given a 2019 Smart Women in Meetings Award in the Visionary category last month at the

Smart Woman Summit in Las Vegas. The prestigious awards platform honors women who are making significant impacts on the meetings industry and inspiring female meeting ambassadors worldwide. Her profile ran in the March issue of Smart Meetings magazine.

“I don’t know who nominated me,” says May of Phoenix.

“They don’t tell you. I went to the conference and it was crazy fun. These really neat women came from all over the world. The lady (Marin Bright) who runs the magazine is incredible.”

She’s a planner May has been planning events since she was 16, when she was working at the then-Scottsdale Country Club, and hasn’t left the industry.

“My dad got a job for me at the Scottsdale Country Club, which is now Starfire,” she says. “It was a Ramada then as well. It had 50 little guest rooms and a private club.

There was a wedding one day and the lady who was supposed to put the wedding on got in a car accident.

“She called me from the ambulance, telling me what to do. I grabbed her book and decorated the pool for a wedding.”

After years in the event industry, she founded Scottsdale Private Event Venues, a Scottsdale-based event production provider and exclusive venue rental agency that offers access to privately owned airplane hangars, equestrian ranches and amphitheaters for hosting private and corporate events to groups from 300 to 2,000. She’s thrown parties for Roger Riley; the White House deputy director; and Tiger Woods. May planned the Celebrity Game Night fundraiser in 2017 with Kurt Warner and Shane Doan at Ross Aviation.

“We had all the guys in the hangar with a sports theme,” May says about Celebrity Game Night. “We games and giant adult games. Archie Bradley stood next to me and Kurt launched a ball at him and he dropped it. I turned the other way.”

“I played every sport,” she says.

“It’s been a really interesting couple years,” she says. “I like to do the planning, but I don’t like to do the taxes and that.

I’d like to sell it in a couple years and stay working there or just run it. I like to keep my hands in it, with the linens from beginning to end.” 

hen Steve LeVine started his DJ career in college, he could hardly have known it would turn into an award-winning, all-encompassing events company.

“Working in a DJ company brought me into the entertainment realm,” LeVine explains. “From the DJ side I got into nightclub promotions and marketing and getting people to show up to events. In the ’90s there wasn’t a such thing as ‘promotors,’ so when we started it, we had no idea how big it would get.”

In 2007, after LeVine realized the market for corporate events and that DJ culture was going mainstream, he founded the Scottsdale Airpark-based Steve LeVine Entertainment. SLE has since garnered a reputation as one of the most innovative event and marketing companies in Scottsdale, and swept the industry awards for the past few years. In 2018 alone, it was rated in the top 10 of advertising, graphic design, internet marketing, PR and event planning; from Ranking Arizona it scored the top three slots for production, public relations and event planning. It has grown into a onestop-shop for just about any corporate (or if you have the dough, private) needs—event planning and execution, talent booking and management, marketing and promotions, design and media.

“Ultimately, we good at reaching people and getting people to come to the events for our clients or ourselves,” LeVine explains.

Take this past spring, for example, when SLE had its own version of March Madness, producing three massive events in just as many weeks. It was a whirlwind of some of the staple events of the year: the Chandler Ostrich Festival, the Pot of Gold Music Festival and Scottsdale Fashion Week.

“I grew up going to the Ostrich Festival with my family,” says his wife, Jamie LeVine, chief communications officer, who joined the team in 2001 and brought a public relations background, solidifying the PR element of SLE. “It’s interesting to see how the company evolves when you factor in where you’re at in life. To hear our kids look forward to it every year and say it’s better

than Legoland makes it that much more exciting to be a part of such a historic event.”

Steve adds, “As I grew, I always did events for the age range surrounding where I was, or slightly younger or older. It wasn’t until I had kids I realized there weren’t many events for kids that existed, so we’re starting to create more of those.”

One of those youth-oriented events includes the creation of the Kids Fashion Week. Last year SLE cast over 200 kids, the concept being that the kids are from all walks of life and shapes and sizes.

“The kids don’t have to have any experience or representation,” Jamie adds. “It’s a feel-good event and the community has really rallied around it.”

And SLE is about creating a culture of family and community. There is office laser tag and “SLE Bucks”—award “dollars” given to nominated exceptional employees.

They are then used when SLE has an auction to win tons of items like concert ticket, gift cards or days off. SLE works hard and plays hard.

They often envision the ideal event they want to attend, and create it for a select group of people. Like the private yacht party in Miami featuring Warren G a few years ago—originally a birthday party for Jamie—which turned into a regular event, featuring Snoop Dogg this past year, with plans for an East Coast version.

But the remainder of 2019 has an array of less lavish plans that Scottsdale residents can enjoy.

“Summertime is filled with pool parties, whether it’s at Maya, or an event for a cause, like the Leukemia and Lymphoma Society Night Walk,” he says. “We also have an event that we can’t announce quite yet, coming in the fall, that will also be a very family-oriented festival.”

Between the festivals, charity events and partnerships with some of Arizona’s biggest brands and sports teams, it’s inspiring to see that there is still room for improving the space for larger-scale kid events.

He says, “There’s something about starting people on our events through childhood all the way to the corporate world—it’s incredible.” 

S

terling K. Brown is dressed in an all-black suit and smiles widely when he is approached in IWC Schaffhausen, where he helped launch the watch company’s Spitfire Collection in Scottsdale Fashion Square.

The actor fell in love with the high-end watches as he prepared for award shows.

“I’ve been blessed enough to be honored by the Emmys and different sorts of awards programs,” says Brown, of “This is Us” and “Black Panther” fame.

“You find yourself on these red carpets and I’m very much from the other side of the tracks. I was looking at designers for shows and suits, etc. I thought IWC had a gorgeous product.”

So, he simply asked, and the Swiss watch company said yes.

“We started a relationship from that, and I’ve just fallen in love with the elegance of the watches. They’re sleek,” he says pointing to his wrist.

acting. Brown earned his Master of Fine Arts degree from New York University’s Tisch School of the Arts.

“After I graduated, I said to myself, ‘I spent a lot of money on this school,’” Brown says. “I knew a lot of people went to school and then subsequently found the other things they wanted to do or that the industry itself was just not their cup of tea.

“There’s a lot of rejection. I folded my hands, closed my eyes and said, ‘God, I want to just pay the bills doing what it is I love.’ And God said yes.

“Since I’ve been out of school, I haven’t waited tables. I haven’t done anything else other than what it is that I love to do, and may that continue in perpetuity.”

He’s been successful. In 2018, he became the first African-American actor to win a Golden Globe in the best actor in a TV drama category, for “This is Us.” The same year he became the first African-American actor to win a Screen Actors Guild Award in the outstanding performance by a male actor in a drama series category for the same TV show.

Brown says he’s been blessed to have had such highprofile roles. The 43-year-old has been acting since he was 25 so it’s about time he was recognized, he says with a smile.

“For a long time, I toiled in relative obscurity, but still being blessed to have played the roles I have,” says Brown, who gave the commencement address at Stanford University in 2018. “I’m a man of faith. I believe all things work for those who believe. ‘Luck’ isn’t the word because you make your own luck. I believe in preparation meets opportunity.”

He compares the fight to fame to a boxer.

“You just keep trying to get those little shots in until somebody drops their guard and try to him them,” he says with a laugh. “A few years ago, I had ‘The People vs. O.J.’ and then I was able to back it up with ‘This is Us.’ Then ‘Black Panther’ happened right on the heels of that. I’m enjoying this moment and I’m looking forward to what the universe has in store.” 

about Fat Entrepreneurial sisters bring CoolSculpting to the Airpark

espite working out and eating right, some still struggle with those notorious spots where stubborn fat makes its comfy home.

The hot trend in toning up those trouble areas is to freeze away the fat with CoolSculpting. And now Bodify, the No. 1 CoolSculptor in Arizona and No. 4 in the nation, is open in North Scottsdale.

Sisters Melissa Mickelson and Jessica Stellwagen opened their original CoolSculpting boutique in Phoenix four years ago.

More than 16,000 procedures later, the duo is excited to expand into Scottsdale.

Their co-business ambitions began around ages 5 and 3 with lemonade stands, but their interests never really collided until they discovered CoolSculpting.

Mickelson previously owned a plastic surgery recovery business in Southern California but fell out of love with the invasiveness and downtime from the procedures.

In the Valley, she ran a medical spa offering CoolSculpting. After trying the treatment herself, she was in a kickboxing class an hour later.

One key to their partnership success, and a surprising realization to Stellwagen, is how different the women are.

“Melissa and I are truly the exact opposite of each other in a lot of ways, and so we are able to handle different parts of the business and stay in our own lane very well,” she explains.

Stellwagen is on the sales side, and while she likes the client experience, she jokes, “If it were up to me, we’d do CoolSculpting in a shed, I don’t care.”

Luckily for clients, Mickelson designs the

procedure for most people, they’re able to do whatever they want and aren’t out of commission for several hours grimacing in pain,” Stellwagen says.

So, what does CoolSculpting feel like?

Mickelson describes tingling or stinging like from an ice pack as well as possible cramping or aching. The good news: After less than 10 minutes, you should go numb, and it becomes much more comfortable.

Treatments last 35 to 75 minutes but can go several hours if you’re targeting multiple areas.

When the applicator is removed, Mickelson says you may feel those same “numb, tingly, stingy, burning, crampy, achy sensations” as the tissue defrosts. After that, you can go right back to your daily activity with just some soreness the next couple of weeks.

It takes anywhere from three weeks to six months for your body to flush away the frozen fat cells, leaving a 20% decrease in fat from the treated area.

According to Stellwagen, one to two rounds should get where you want to be.

“One round is like it, and two rounds is love it,” she explains. “Anything beyond that is not necessary but is going to be a more dramatic reduction.”

To find the career success that Willis has achieved, she advises to be flexible and patient.

“You’re going to have positions that may not be exactly what you wanted but may be part of the growth,” she explains.

“Have patience and really be passionate about what you’re doing. If you put in that effort, it’s going to turn into something bigger and better.”

For Willis, that patience and flexibility was born during her three years in accounts payable. The laborious process of typing and manually entering 2,000 checks per month pushed her to make herself accessible to other areas of the business.

“I get bored easily,” she admits. “I’d get done with what I had to do and search out other things to occupy my time. I kept learning more and more about the business and other people’s positions.”

Her flexibility to take on more and the drive to learn got her noticed, and she was promoted to property supervisor over a portfolio of communities. As the company grew, she continued taking on responsibilities and was promoted to vice president, senior vice president and finally president of its property services department.

“I’ve been fortunate that my tenacity, hard work, attention to detail, passions— all of those buzz words—worked for me,” she says of her climb up the ladder.

“You’ve got to work hard.

You’ve got to make yourself visible. You’ve got to know your subject matter so you can come across confidently.”

Confidence is what Willis feels earns trust and wins p e o p l e o v e r, a n d w h e n paired with vulnerability, is a winning combination for a successful executive.

“You need to be confidently vulnerable. Understand who you are and who you’re not and what you can and cannot contribute,” she advises. “The things that I’m good at, I know I’m damn good at. I’m not afraid to admit I’ve made mistakes. I’m not afraid to give a project to someone else because I think that they would be better equipped to handle it.”

When it comes to balancing life with

work and avoiding burn out, Willis’ tips are to plan and stay organized. Constantly work on better communication, more efficiencies, better staffing and improving every aspect of the business, so you can walk away and take the break you need.

“I know that if I walk away for a day or a week, I’ve got processes and people in place that will keep it running,” Willis says.

When the busy executive does take that

chance to walk away, she enjoys relaxing with loved ones and enjoying the outdoors on getaways to Pinetop, Rocky Point, and annual summer visits—never winter—to South Dakota and the beautiful, serenity of the Black Hills.

At home, Willis relinquishes the leadership role to her 9-pound, long-haired chihuahua, Milo, and admits, “He rules the roost, as all small dogs do.” 

n a 5,000-square-foot warehouse in the Scottsdale Airpark, Scottsdale resident Kenric Hwang sets down a stack of “thank-you” letters and cards on a gray cart.

One card—from Los Angeles-based shelter Wags & Walks—has a handwritten note that reads: “With the help of Max and Neo, we’ve saved 1,100+ dogs this year! We are looking forward to saving even more at-risk pups in 2019 with Max and Neo by our side!”

Hwang unfolded another letter stamped with the Our English Setter Rescue logo in the upper left-hand corner.

“Our setters many times come with nothing or a chain or belt around their necks now have a new, very own collar,” the note from the Ohio-based rescue read.

“Our volunteers carry bags in their cars with collars, leashes, bowls, water bottles, and we are so very thankful.”

The seemingly endless stack of kind words is what Hwang says is the most rewarding part of Max and Neo, a philanthropic business he started in 2015.

Hwang founded the business in 2015 after the passing of his two dogs, Max, a doberman, and Neo, a German shepherd.

Because Hwang was traveling so much, he couldn’t adopt another dog; so, he began fostering them through Saving Paws Animal Rescue in Glendale and has since fostered 35 dogs.

During this time as a foster dog parent, he realized how important collars and leashes were to shelters.

“When I first started, I wondered, ‘Why does a rescue need one hundred leashes in a month? It just seems excessive.’ But if you

really think about it, when somebody comes to adopt a dog, they don’t give them the dog without a collar or a leash. At a minimum, they have a collar on,” Hwang says.

Determined to help and provide more long-term support, Hwang started Max and Neo. Max and Neo manufactures high-quality dog products, including collars, leashes, harnesses, supplements, treats and CBD oil, and sells them at the same or lower prices than retail stores charge.

Martingale collars, for example, start at $11.99 and have features one wouldn’t

find on most collars, like a lock and a loop specifically for dog tags.

“When (shelters) see that we put that much work into just the collar, they know that we’re not going to go out and source anything that wouldn’t be good,” he says.

For every product purchased, an item is donated to a shelter—one for one.

Max and Neo donates 150 boxes a week to shelters across the country, each box containing about $400 worth of items.

Since its inception, Hwang has donated over 230,000 dog products to more than 3,000 rescues across the country—including 75 in the metropolitan Phoenix area—totaling about $3.5 million worth of dog gear.

This past Christmas, Max and Neo donated $800,000 in products to more than 2,000 rescues.

“This company was built to donate; it exists for this reason only. So, giving back is in its culture,” Hwang says. “Our dog rescue list is growing at an incredible rate, so we just need to keep our sales rate up to match it.”

When Hwang started Max and Neo, he considered sending donations solely to local rescues.

“But then after a few months, we were giving them too much,” he says, adding that’s when he decided to open up the list to shelters out of state.

What sets Max and Neo apart from other organizations who give back to shelters and rescues is the amount they donate and how frequently they donate.

“The thing about these donations is there is a sense of urgency in donating. If I wait until the end of the year to see what I’m going to donate, there are dogs that needed it from January to now,” Hwang says.

Max and Neo accepts virtually all rescues that apply on its website.

“We don’t discriminate; we send to everybody, and everybody gets the same amount of stuff,” Hwang says. “The only time we don’t take a rescue is if we go to their Facebook page and they have really bad reviews; but we also understand that that happens to good rescues.”

“They give us their address, they tell us what style box they want, and they can go in and change it anytime,” Hwang said, adding:

“It’s really manual because no software can do it, and every rescue wants something different,” he says. “We wanted it to be a little bit more personalized, but we can’t make it too personalized. It’s a balancing act.”

Shelters on the list receive one box every four or five months. Hwang’s goal is to send a box every three months.

“Our goals aren’t based on how many sales we make. It’s based on how many donations we make,” he says, adding that eventually, he’d like to get to the point where dog rescues spend no money on leashes or collars ever again.

“When you put the label on (the box), you see the name of the rescue and where it’s going and it just feels good; just donating in general feels good,” Hwang said.

A WAR of WORDS John Paul White stresses the need for meaningful lyrics and music

F

ormer Civil Wars singer John Paul White has played the Musical Instrument Museum three times.

Still, he doesn’t think he’s quite grasped the North Phoenix landmark.

“I’m a dork,” White says. “I read all the cards and watch all the videos. But more than that, the staff is the palate cleanser we need.

“We’ve been playing rock clubs and dive bars with terrible green rooms. They don’t give us what we asked on the rider, which is necessary to make our lives comfortable and livable while we’re away from home.”

The MIM, he says, goes above and beyond.

“They cater food,” White says. “The sound guys are incredibly professional and great at their job. There’s a built-in crowd who’s very respectful of the music and the musicians. This isn’t just hyperbole. I mean it.”

White returns to the MIM on Monday, June 10. This time around, White will have a full band so the shows will reflect the musicality on his third solo collection, “The Hurting Kind,” and previous solo records.

“The last time, it was just me and

a guitar,” he says. “I have a band I’m incredibly proud of. The new members are really geling. This record is a lot more orchestrated, with fiddle and pedal steel guitar. I wanted to re-create that live.”

Leading up to the sessions for The Hurting Kind, White asked classic writers like Whisperin’ Bill Anderson and Bobby Braddock to work with him.

“The Hurting Kind” was recorded at Sun Drop Sound, White’s new home studio he converted from a turn-of-the-century home in the historic district of Florence, Alabama, and at legendary Fame Studios in Muscle Shoals, Alabama. Lee Ann Womack, Erin Rae and The Secret Sisters lent their vocals.

With “The Hurting Kind,” White draws on the lush, orchestrated music made in Nashville in the early 1960s, writing about overwhelming love, unraveling relationships and the fading memory of a loved one.

“It was challenging, but I knew that going in,” White says. “I intended to write a record that was challenging, more complex, more adult and more mature. I didn’t want to make another record that had all those keywords—‘raw,’ ‘organic’ and ‘live.’ That’s all the stuff people say.

“I’ve made those records and I love those kinds of records. I really set out to go for something like those old country records.

That raises the difficulty level when I try to pull it off live. It’s a challenge and I wanted these guys and gals—I have three guys and two women in the band—and they just crush it.”

White grew up in Loretto, Tennessee, and has cultivated his career in Nashville for two decades, first as a songwriter for a major publisher, then as half of The Civil Wars, who won four Grammys before disbanding in 2012.

White is also a partner in Single Lock Records, an independent record label based in Florence, Alabama, that released his album. Looking back on his catalog, he’s really enjoying “The Hurting King.”

“It’s become a stereotype to say, ‘This is my favorite record,’ ‘My most personal record.’ I do the same, but I roll my eyes.

As an artist, usually your last song is your favorite song. It’s where you’re head’s at and what’s giving you chill bumps at that moment.

“I hope I’m always so self aware that I know whether my craft is sliding and I’m making a record that doesn’t thrill me. I’m proud because it’s the first time I made a record 100% on my own terms. I was able to ask myself what I wanted to do and what I wanted to sound like.”

His last song is the title track of “The Hurting Kind,” which surprised him.

“I have an affinity for that one,” White says. “It’s different in that when I sat down to write it, most of the record was done. I didn’t intend to write another song. The song title popped in my head. I didn’t know what it meant.

“It’s a song about abuse; not a particular one. Just someone who’s in a very harmful relationship. As I went along, things rhymed and felt correct. It’s from a female’s perspective. I don’t normally choose to tell the listener what the song is about. I purposely don’t put a pronoun in there. When listeners hear a song, I them to imagine themselves in it. I do not apologize that my songs are sometimes vague.” 

The event benefited Playworks Arizona to ensure safe and inclusive play for 55,000 students daily. lag Day on June 14 is often overlooked and underobserved.

However, Scottsdale has a proud history of flag waving, flag honoring and flag philanthropy.

Hoist these facts up the flagpole:  The Continental Congress adopted the Stars and Stripes as the official U.S. flag on June 14, 1777.  A photo taken on Washington’s birthday 1906 shows early Scottsdale settlers dressed in their finest and holding the 46-star U.S. flag (Arizona and New Mexico were still territories, as were Hawaii and Alaska).  A Civil War veteran and patriot, Chaplain

Winfield Scott continuously honored the U.S. flag. During this tenure as an Arizona Territorial legislator, he introduced 16 bills, one of which was to purchase a case to house the battle flag of the Rough Riders, Arizona’s Spanish-American War heroes.

Scott also bought a flagpole for the 1896vintage Scottsdale wooden schoolhouse; the flagpole was dedicated on July 4, 1899. Following his death in October 1910, Scottsdale schoolchildren wrote tributes to their beloved “city father”—including one that simply said: “Chaplain loved our flag.”  Helen Scott, a teacher, Baptist leader and wife of wounded U.S. Army veteran Winfield Scott, published “Half Mast and

Other Poems.” In her verse “Our Flag’s Birthday,” Mrs. Scott begins: “Unfurl our flag with joy today, O’er hill and vale and plain! Shout ‘Freedom’s Glory Song’ the way, From ocean main to main!”  On Feb. 14, 1912, Arizona became the 48th state, and the U.S. flag then bore 48 stars (New Mexico had become a state January 6, 1912). A 49th star was added January 3, 1959, with Alaska’s statehood, and the 50th star added to the U.S. flag in 1960 (with Hawaii’s statehood on August 21, 1959).  Since its founding in 1935, Post 44, American Legion has provided honors to deceased veterans and at community events. retirement of flags at a ceremony on or near Flag Day.  On Veterans Day (November 11) 1955, Scottsdale’s American Legion and Veterans of Foreign Wars (VFW) posts dedicated a 50-foot flag staff on the grounds of the Community Center (the former Adobe House, now site of the parking garage between the Civic Center Library and Scottsdale Stadium). The pole honored “all Americans who have given their lives for this great country of ours, and in doing so they served under the United States flag, the greatest symbol of liberty and freedom in the world,” stated a new article in the November 18, 1955, Scottsdale Progress.  Scottsdale hosted its inaugural spring training game, at which the home team Baltimore Orioles beat the visiting Chicago Cubs on March 9, 1956. Scottsdale’s VFW Post 3515 presented a U.S. flag that would be flown during all games at the new ballpark.  As Scottsdale civic, service, veterans and youth organizations expanded along with the community’s growth in the 1960s, many joined forces to honor the flag on patriotic holidays. In 1960, the Boys Club of Scottsdale, the VFW and the Scottsdale Chamber of Commerce hung American flags throughout the Town of Scottsdale on Lincoln’s Birthday, Arizona Admissions Day, Washington’s Birthday, Armed Forces

In later years, the Scottsdale Sertoma Club decorated downtown Scottsdale with countless U.S. flags on six national holidays as one of its signature community service projects.  In July 1961, the Scottsdale Progress carried a photo, captioned: “The flag

which has flown over Scottsdale since its incorporation (June 25, 1951) was formally retired Monday in ceremonies preceding the Fourth of July fireworks show, staged by the Sipe-Peterson Post American Legion, which presented a new 50-star flag to Mayor Mort E. Kimsey.”  In June 1962, Scottsdale’s Elks Lodge again hosted a community Flag Day observance. The flag ceremony featured historic U.S. flags, presented by Boy Scout flagbearers. The Our Lady of Perpetual Help church choir provided music and Dr. R. P. Timmons delivered an address entitled “Americanism,” according to the June 16, 1962, Scottsdale Progress.  Flag Day 1968 occurred shortly after the assassination death of Presidential candidate Robert F. Kennedy. A June 10 Scottsdale Progress front-page photo showed a local tribute, with the caption: “Billy Young, 9, and his brother Jimmy, 6, decided they needed a flag to fly at half staff this weekend in respect for Sen. Robert Kennedy, so they fashioned one of their own. The boys used crayons to color U.S. and Arizona flags, raised a flagpole in front of their home… and lowered them to half staff.”  In 1969, the city of Scottsdale sponsored a family Flag Day concert at the Community Center Park on Second Street, co-sponsored by the Local 586 of the American Federation

Flag Day celebrations during the 1960s were also held at Eldorado Park, often featuring the Luke AFB band, Job’s Daughters drill team, U.S. Marine Corps color guard and fireworks.  During an era of anti-war protests and civil unrest, the Scottsdale Progress ran a Flag Day editorial in the June 12, 1970, edition: “Sunday is Flag Day. For some among us it has little significance. To other people it is a day with deep meaning. In recent years we have seen the American flag spat upon, burned and torn in protest against injustice, real and imagined. Such displays are juvenile and thoughtless. The flag should be a symbol of unity and pride.

In times of turmoil and dissent, however, it also becomes a symbol of hatred for those who would tear down our society. While we do not believe in pseudo-patriotic flag waving for any and all occasions, we do believe that the flag has a valid meaning and deserves to be honored even by those who dissent. The Stars and Stripes are a reminder of a proud history. They stand for a nation which is dedicated to freedom and equality for all. To those who say, ‘We have failed,’

flags by Mayor Bud Tims.  In October 1974, U.S. Marine Corps Reserve Company D, 6th Engineer Battalion dedicated a plaque and the flagpole at the McCormick-Stillman Railroad Park “to the men…who fell during the Korean Conflict when the company was called to

the colors and to those who contributed their labor to complete this railroad park for the benefit of children of all ages.” The plaque and flagpole still stand in front of Stillman Station at the railroad park.  Flag raisings have long been an important dedication event in Scottsdale.

For example, when the then-Scottsdale Foundation for the Handicapped (now STARS) opened in the former Little School building (near Loloma School on Second Street) in 1977, clients, staff and board members joined to raise the U.S. flag, donated by U.S. Congressman John Rhodes. The Scottsdale Historical Society dedicated a flagpole to at the Little Red Schoolhouse, years before it became the society’s museum. Eagle Scouts dedicated a flagpole at the Gateway to the McDowell Sonoran Preserve.  More recently, who can forget the proliferation of American flags as a show of unity after the tragic events of September 11, 2001.

Scouts, Knights of Columbus, Disabled American Veterans, American Legion, VFW, school groups, the Scottsdale Police Department, the Scottsdale Fire Department, auxiliaries of veterans groups, businesses, civic organizations and so many more have dedicated thousands of volunteer hours to help Scottsdale honor the U.S. flag—on Flag Day and throughout the year. Times and ways may have changed, but our respect for the Stars and Stripes has never wavered. 

Lush Burger serves up gourmet eats with neighborhood appeal

ith a name like Lush Burger, you have to go with a theme.

“Make it sexy” adorns the waitstaff ’s hats and the menu has quippy remarks throughout, showing the restaurant doesn’t take things too seriously. Add in a large outdoor patio in the DC Ranch area of North Scottsdale, good happy hour specials and tasty hamburgers and it’s the perfect neighborhood spot to sit back and relax.

Rhode Island natives Michelle and Jay Hoff purchased Lush Burger about three years ago. After vacationing in Scottsdale, the couple decided they’d had enough of the snow and cold winters and made the move to Scottsdale.

“There was a foot of snow and we couldn’t get into the driveway,” Michelle says. “So, we sold two of our restaurants and came out here.”

The Hoffs aren’t new to the restaurant business. Jay got his start by opening Chili’s restaurants across the country. In Rhode Island, the couple owned three restaurants, including The Abbey, a neighborhood pub that’s been around for 19 years. It’s the only restaurant in Rhode Island the couple still owns.

Making the move with them was Sam Panice, Lush Burger ’s manager.

“He’s like family,” Michelle says.

Panice interned for Jay in another business more than 13 years ago, as a freshman in college. He worked with the Hoffs in

their Rhode Island restaurants, too. He saw the move as a way to be closer to his family in Las Vegas, where he grew up.

“When we came across Lush Burger, it was a natural fit,” Panice says. “It just made sense to bring our East Coast flair to the Phoenix area.”

The Hoffs are Lush Burger ’s third owners in eight years. After buying the restaurant, they changed the menu and improved the quality of the meat and produce, Panice says. Now, everything is fresh and locally sourced when able.

“We know burgers,” Michelle says.

“The Abbey won best burger in the state of Rhode Island three years in a row. We also loved the location of Lush Burger and the neighborhood. And the patio is just gorgeous.”

The restaurant serves up half-pound, 100%, never-frozen, black angus beef gourmet hamburgers. The Infusion Burger

is the restaurant’s most popular burger, with Wisconsin pepper jack cheese, diced and roasted hatch green chilis, housemade chipotle mayo, lettuce and tomato all piled high on a brioche bun.

Another customer favorite that’s not on the “official” menu…yet, is the Roadhouse Burger featuring Wisconsin gruyere cheese, frizzled and caramelized onions, thick-cut applewood bacon and housemade garlic aioli on an onion roll.

In addition to burgers, the restaurant has a variety of sandwiches and salads.

The restaurant has a full bar, extensive wine list and specialty craft cocktails.

Its happy hour is a popular draw, not just for the patio atmosphere, but for the low prices as well. Drink specials usually run 3 p.m. to close Monday thru Friday and all day Saturday and Sunday.

In the next few months, Lush Burger plans to make menu changes, Panice says.

Flatbread pizzas will be removed, making way for new quinoa bowls with choices of protein like salmon, turkey, chicken, veggie and ahi tuna. The Roadhouse Burger, along with others, will go on the menu.

“We want to also be known for having that healthy option in addition to our burgers,” Panice says. “We’ll be able to accommodate everyone.”

Menu changes, quality ingredients, even the restaurant’s atmosphere are all about making the customers—and neighborhood—happy.

“At the end of the day, we’re really trying to be that destination burger joint, for all of Phoenix, of course, but really the local neighborhood,” Panice says. “One of my favorite parts of the job is seeing our regular customers and their kids.”  Lush Burger 18251 N. LemonShark Poke owners finding success in Airpark

fter nearly 20 years in “Corporate America,” Bethanie Mercer wanted to be her own boss.

With the July 2018 opening of LemonShark Poke at 7325 E. Frank Lloyd Wright Boulevard, Suite, 103, she is not only working for herself, but she’s fulfilling a life-long dream of owning a restaurant.

Poke has become a nationwide craze in healthy eating, and Mercer wanted to be part of the Asian dishes.

At LemonShark Poke, customers start with a base—including white rice, mixed greens and soba noodles—and then add the poke, which is fish, chicken or tofu. Guests can finish it off with sauce and crunch options. A regular bowl starts at $11.95.

Mercer says one of her favorite aspects of the LemonShark menu is its variety.

“All the options are great,” Mercer says.

“You can be as healthy as you want, or as decadent as you want, and kind of everywhere in between. You can pretty much always come in and get something new.”

Mercer says LemonShark was the perfect franchise to buy into as she and her husband frequently ate poke. They appreciated the food, but the friendliness of the franchise made LemonShark an easy choice. LemonShark Poke flew the couple to the corporate office in Redlands, California, for an all-encompassing twoweek rigorous training course.

Fro those 14 days, they learned the ins and outs of poke preparation, as well as the culture LemonShark hopes to provide at all its U.S. restaurants.

“We really went in green, and they were so helpful. From the front to the back of the store, we learned so much and felt like they welcomed us in,” Mercer says.

An Arizona native, Mercer felt like Scottsdale Airpark would be a perfect spot for a poke restaurant, with the bustling business and activities.

Her office faces Frank Lloyd Wright Boulevard, and she can see the action happening at a constant pace. Customers who have come in the last 11 months have given great feedback as well.

“We hear that we’re one of people’s favorite poke bowls in the area. The atmosphere, food and customer service, I think, help us stand out,” Mercer says.

Now, the goal is to grow the restaurant’s

customer base. The LemonShark staff has been handing out menus to businesses around the Airpark, and Mercer says she is open to cross-promotion with her neighbors. She believes in the food and drinks and thinks others will, too, if they make their way into the shop.

‘Big’ News Matt Pool is bringing his breakfast joint to North Scottsdale

F

or the last year, Matt Pool was looking for a location for his next Matt’s Big Breakfast.

He found it near the Scottsdale Airpark.

This fall, the brunch-and-breakfast spot will open at the southwest corner of Scottsdale and Thunderbird roads.

“I’ve been getting a ton of requests to open one in Scottsdale since the day we opened,” Pool says.

“I’ve had customers from McDowell Mountain Ranch, Carefree and Cave Creek, for example, driving downtown to eat at my restaurant.

“I wanted the new one to be far enough away from our other restaurants, but still within a nice neighborhood. I like that area. You have people around you for 360 degrees.”

“I think my wife and I have always tried to be consistent since the day we started,” he says. “We’re focused on having the best ingredients we can buy.

Kettle Chip Beef Tenderloin with Mango Avocado Salsa

I

t’s a special occasion dinner, a fabulous Sunday supper, a Father ’s Day feast or just a delicious weeknight meal. Beef tenderloin is always a favorite, and I often get requests for different ways to prepare it.

Cooked correctly, this cut of beef can be so tender it will melt in your mouth. In fact, beef tenderloin is widely regarded as the tenderest of all cuts. (After all, you’re getting a filet as a bonus!)

I’m sharing a recipe that requires only a few ingredients including a Dijon mustard and butter slather that keeps the tenderloin sealed for a succulent outcome. The spices are blended with delicious savory crushed potato chips, and the combination is all you need to bring out the best in this tenderloin!

A refreshing, bright mango avocado salsa is the perfect side for this meal.

Kettle Chip Beef Tenderloin with Mango Avocado Salsa (Serves 4) Ingredients: 1 (3 pounds) beef tenderloin 1/4 cup spice blend for rub (See directions below for recommendations) 1 cup (crushed) Kettle Brand Salt and Fresh Ground Pepper Potato Chips 1/2 cup unsalted butter, softened 1/2 cup Dijon mustard Directions: Heat oven to 400 degrees. Crush potato chips with mini food prep or place chips in a zippered plastic bag and crush with rolling pin. In a bowl, combine spice blend with crushed potato chips, mixing well. (For the spice blend, I recommend: 1 tablespoon of McCormick Grill Mates, 1 tablespoon McCormick roasted garlic powder, 1 teaspoon smoked paprika, 1 teaspoon salt, 1 teaspoon pepper and 1 teaspoon Italian seasoning blend. Or, you can use any of your favorite beef barbecue or rub spices.)

In another bowl, combine softened butter and Dijon mustard, whisking until smooth.

Place beef tenderloin on a baking sheet. With a pastry brush, completely coat the top and sides of the tenderloin.

Sprinkle the crushed potato chip and beef spice combination over entire beef tenderloin, patting gently to adhere to mustard. Place in 400-degree oven for

about 45 minutes or internal temperature is 130 degrees for rare, 140 degrees for medium rare, and 155 degrees for well done. (Jan’s Note: I cooked the tenderloin to 140 degrees.) Meanwhile, make mango avocado salsa and when done, refrigerate until ready to serve.

When beef tenderloin is done, remove from oven and let rest for at least 10 minutes before slicing. When ready to serve, slice tenderloin in thin slices and plate with spoonfuls of mango avocado salsa.

Mango Avocado Salsa: (Serves 4) Ingredients: 1 large ripe avocado, diced 1 large ripe Mango, diced 1 Serrano chili pepper, minced 1 medium large tomato, diced 2 tablespoons red onion, minced 1 tablespoon cilantro, chopped fine 1 large lime, juiced Pinch of salt Directions: In a medium bowl, combine diced avocado, diced mango, Serrano pepper, tomato, red onion, cilantro and the juice of one large lime. Gently stir to combine.

Add a pinch of salt if needed. Refrigerate until ready to serve.

Sharing Stories Scottsdale is set to have a robust tourist season

T

his is an exciting time for Scottsdale’s tourism industry. Hotels and resorts throughout the area experienced one of our strongest years since the Great Recession, and all indications point to another healthy year ahead for the Scottsdale area.

Last year, Scottsdale-area hotels and resorts saw their highest occupancy levels since 2006. By filling more hotel rooms, our properties generated more revenue than years prior—helping generate more important visitor-paid tax dollars for the city.

Current industry forecasts predict Scottsdale should see another uptick in revenue in 2019.

But this success isn’t limited to hotels and resorts. Scottsdale-area golf courses saw revenue increase 7% in 2018. And our retail giant, Scottsdale Fashion Square, saw sales per square foot increase 52% over the year prior. Plus, our signature events are experiencing more foot traffic. In fact, attendance for the most recent Canal Convergence was up more than 700%.

It’s important that we, as an industry and as a community, celebrate these successes as they come. After all, tourism is cyclical, and we face some uncertainty—just as the entire economy faces uncertainty—as we move into 2020 and 2021.

But the strength of our local tourism industry is largely due to the strength of our destination brand. If you go to New

York, Chicago, Toronto, London or beyond, people recognize the Scottsdale brand. We are a mid-size, suburban city on the outskirts of a much larger metropolis. I have been privileged to serve on Experience Scottsdale’s board of directors for four years.
